A 100% column distilled spirit , this is matured in American oak casks (x Jim Beam, Jack Daniels and Buffalo Trace) and blended from material aged 10-12 years. Named after Lord George Rodney, the man responsible for vanquishing the French fleet at the battle of Saints on April the 12th 1782 .Tasting note: Bright copper colour gleams in the glass. Some minor sediment evident. Evokes aromas of café-crème, molasses-drizzled pancakes, dried mango, cinnamon and vanilla. Silky and graceful on the palate; a delicious harmony of honey and grated chocolate flavours delivered with a flourish of cinnamon warmth. Finishes gently spicy, vanilla-heavy yet not overly sweet. Classic Cocktail: The Knickerbocker45 ml Appleton 12 Year Old Rum
This cocktail was adapted from Jerry Thomas's How to Mix Drinks, or The Bon Vivant's Companion (1862).
10 ml Curacao Dry Orange
10 ml Framboise (Raspberry) Liqueur
20 ml Lemon Juice
1 Lemon Wedge
Method: Assemble all the ingredients in a mixing glass with ice, squeeze the lemon wedge and drop it in, shake well and strain into a chilled cocktail glass. Note: This can also be serve over crushed ice with berries as a garnish. Variation: When raspberries are in season, omit the raspberry syrup and muddle 6 to 8 raspberries with the lemon juice and curacao in the bottom of the mixing glass. Add remaining ingredients and shake well with ice.

Appleton Estate is the oldest and perhaps most famous of all of Jamaica's sugarcane estates. It is nestled in the fertile Nassau Valley on either side of the Black River in the Southwest of Jamaica. The origins of Appleton Estate date back to 1655 when the English captured Jamaica from the Spaniards. Frances Dickinson, whose grandsons Caleb and Ezekiel were the earliest known owners of the Appleton Estate, took part in that conquest of Jamaica, and it is believed that Appleton Estate was part of the land grant that Dickinson received as reward for his services. After many generations of ownership by the Dickinson family, the Appleton Estate was sold out of the family in 1845. From then on, it was owned by a procession of prominent Jamaican families, each of whom helped to increase the size and potential of the Appleton Estate by purchasing additional acreage of land planted with sugarcane. During these years, the Appleton Estate was producing several different pot still rums, and it began to gain a reputation as a reliable source for quality rum, a reputation that continues to this day. Bottlings include Wray & Nephew White Overproof Rum, Coruba Jamaica Rum, Appleton Special Jamaica Rum and the prestigious portfolio of Appleton Estate Jamaica Rums: V/X, Extra and 21 Year Old. Bayou hails from Louisiana in the USA where they've been producing copper pot distilled rums since 2013. 'Select' is a blend aged up to three years in x bourbon barrels, made from a signature ‘sugarhouse’ recipe (unrefined Louisiana sugarcane and molasses). As a result, in some markets, like the EU, this can't actually be classified as as a rum. Other reviews… Copper color. Fruity aromas of Jamaican sweet plantains, coconut cooking oil, luxury cigarette shop, and chocolate fudge with a satiny, crisp, dry-yet-fruity medium body and an interesting, medium-long caramelized mango, leather strap, cigarillo, and dried pineapple and vanilla finish. Bristol Spirits Limited specialise in seeking out small parcels of Caribbean's finest rums including single barrels, single estate or even a single still to show rum in its true unblended form. Ageing takes place at the distillery and/or in the UK. Minimum filtration allows the natural characteristics of each rum to shine. Distilled in 1996 and bottled in 2011, the Caroni Estate Distillery (est. 1918), closed in 2003 and is now sadly, demolished. It was built on the site of an old sugar factory and for a period supplied rums to the British Navy. At the time, there were some eight to ten other sugar factories operating, each producing different types (and qualities) of rums, bought up by merchants and sold to rum shops all over the island. A classic British Navy style, inspired by the recipe used to produce the tot given to sailors as their daily ration until Black Tot Day, 31 July 1970. The reference to Gunpowder Proof is explained by the following history snippet: Prior to the invention of the hydrometer, the Royal Navy ship’s “Pusser” shutdown claims of watering down sailors’ daily tots by dousing a bit of gunpowder in the rum and attempting to light it. If the mixture ignited, the rum was “at proof.” If it didn’t, the Pusser might find himself tossed to sea. Amongst x-seamen, the consensus is that Pusser's is about as close to the authentic British Royal Navy edition as you can get. A true sailor's delight! 54.5% Alc./Vol.

Using the ingenuity that Aussies are famous for, the Bundaberg distilling team have created an incredibly smooth rum, using a unique red gum filtration process. The rum goes through a similar double distillation and aging process as standard Bundy UP, but then goes through three separate filtration processes which create an incredibly smooth profile. This process removes some of the stronger flavour compounds which exist in the regular Bundaberg UP, and allows some of the more subtle flavours to shine through. 37% Alc./Vol.

Two versions were released on November 23rd, 2013: a 125ml version set in a striking cherry wood frame, along with this exquisite 700ml crystal decanter, paired with two stunning crystal tumblers and a handcrafted walnut wooden casing. This listing will also include a second presentation case made available exclusively for retail outlets (Ref. third image). The liquid inside is rumoured to contain rum up to 35 years old.
