Compagnie des Indes Compass Overproof White Rum (700ml)

Bottled in France without filtration, we're informed that this is the result of two cane juice rums, the first a lighter style from a short fermentation, the second, and more full-bodied from a prolonged fermentation of fifteen days. The style is similar to Compagnie des Indes 'White Shark' edition, only the ABV is significantly higher. It's like going from a standard strength to a Navy Strength gin, especially in terms of the fuller, richer texture that works to integrate the spirit heat. Flavours almost feel secondary, slowly building definition in a tropical crescendo of papaya, unripe banana, dried mango, white pepper and grassy freshness. More accessible than other white rums in the overproof category, this retains enough power to cut through Tiki builds, Daiquiris and punches where a standard white rum can get lost.
