
2010 Depaz Rhum Agricole Rum (700ml)
Depaz agricultural rhums are produced exclusively from super-fresh canes selected for their capacity to provide a rich, fruity aroma. Harvest starts in February when the cane fields are covered in white “feathers” (the cane sugar flowers, known as “flech’kann”, indicating that the plant is perfectly ripe and saturated with sugar). Freshness is fundamental. As one creole expression goes: “the cane should have it’s feet in the fields and it’s head in the mill”. In other words, once cut, the cane should be ground immediately to capture the most expressive juice. That freshness can be preserved even when the rums are oak-aged. This vintage-dated bottling combines eleven carefully selected barrels containing rums from the 2010 harvest. First matured for more than 10 years in American oak, a secondary maturation followed in 350 litre French oak barrels for 18 to 24 months. The rum ends up with a warming overlay of almond paste and mandarin confit aromas and flavours. These styles can take a while to open up, so it's recommended served after five or minutes of air contact. 45% Alc./Vol.
