A delicate bouquet of crisp Bosc pear, peony blossom, and crushed stone leaps from the glass with a vibrant, almost electric intensity. The palate is sleek and precise, powered by zippy acidity that pushes a saline minerality to the forefront, while citrus pith and fresh apple skins give it a tangy, mouthwatering edge. There's just enough texture here to keep things grounded, but it's the energy and focus that drive this wine forward. It's undeniably delicious now, but with a little patience, this one will reward you through 2030+.

2025 Bannockburn ChardonnayGeelong, Victoria, AUSTRALIA$69. 99Bottle$839.88 DozenCellar: Drink now - 6 Years (2026-2032)ABV: 13.5%Closure: StelvinRich, concentrated and texturally enveloping yet energetic and fresh.

The fruit was pressed as whole bunches and fermented naturally in a mixture of French hogsheads and puncheons (25% new). This year, 70% of the blend went through malolactic fermentation, and the wine spent 10 months maturing on lees with no stirring.

There are yellow stone fruits characters here, and an array of sweet spice notes, but it’s the flesh, the rush and the juice of grapefruit and ripe pear flavours that both dominate and seduce. This wine really does make you dive quickly in for more. There’s a subtle smokiness, some tonic and mineral-like notes, and an especially noticeable (extra) linger to the finish. This is one of those wines where the acidity itself feels flushed with flavour. The aftertaste then adds some pebble-stone characters, just because it can. What a wine. Drink 2026-2034+

The Lloyd brothers do savoury, light- to mid-weight reds ridiculously well. Here, three varieties with no historical connection – negroamaro, mataro and touriga in roughly equal proportions – picked and fermented together; old oak for six months. It’s a Dune staple, and this is my favourite thus far. Sour black cherry, tapenade, chinotto/sarsaparilla, wild red fruits and bitter herbs, cinchona, ground cassia, black pepper and brown cardamom. It’s floral, too, in a reserved way. Pressed violets and iris. And there’s a maritime quality, iodine, kelp, surf-lashed rocks. It’s got authoritative, natural tannin, carrying the refined, sinewy, just-medium-weight fruit. Like many wines here, there’s an Italian accent, or for me at least. Such a smart offering, such a good food wine, and such stupidly good value. Drink by 2029.

Philip Rich - James Halliday’s Australian Wine CompanionThe first word that came to mind was unsweet. I’m not even sure that’s a word. This is a particularly earthen Pinot Noir with root vegetable characters running through black cherry, chicory, woodsmoke and fistfuls of roasted spices. I’m tempted to call this Pinot Noir for grown-ups but that’s a silly phrase so I’ll refrain. We get beautiful, fine-meshed, grapey tannin here, and sinewy characters, and a genuine, savoury push of flavour through the finish. I’m as certain as I can be that this wine will mature well. High in the antioxidant vitamin C and the essential mineral potassium, the lychee is a sub tropical fruit originating in Southern China where it's famed as the "King of Fruits". Growing to approximately 3-4 centimetres in size, oval to rounded-heart shaped with a bumpy skin that's red in colour, the crisp juicy flesh is white or pinkish, translucent and glossy with the consistency of a grape. At Vedrenne, the stones and skins are removed before distillation. The result is an intensely tropically-scented liqueur that's very fruity, powerful and elegant. Typically enjoyed on its own or mixed simply with soda water and a twist of lime, it can also be combined with other fruit liqueurs (like raspberry) for an elevated fruit sensation. Its signature cocktail is, arguably, the Lychee Martini. 15% Alc./Vol.

Gabriel Boudier macerate whole sloe berries in their house gin for five weeks. All the flavours and the colour of the flesh and pit of the sloe dissolve into the spirit to which a judicious dose of sugar is finally added. Typically enjoyed neat over ice, you can also mix it with tonic water or use it to elevate your cocktails. 29% Alc./Vol.

- Gabriel Boudier Apricot Brandy Liqueur (500ml)Burgundy, FRANCE$49. 99Bottle$599.88 DozenABV: 24%
Apricot Brandy can refer to two different types of drinks: a sweet, fruit-flavoured liqueur, typically with a relatively low ABV, or an unsweetened fruit eau-de-vie, essentially a brandy in the proper sense of the spirit. This example is of the former type. Gabriel Boudier macerate whole ripe apricots mixed with wine eau-de-vie, then give the infusion a judicious dose of sugar. The resulting liqueur captures the taste of fine apricots, picked at the height of summer. Besides culinary uses and being enjoyed neat, it pairs with vodka to make an Apricot Sour, and is key in the creation of the Hotel Nacional and Charlie Chaplin cocktails. 24% Alc./Vol.
- Gabriel Boudier Liqueur de Maracuja (Passionfruit) Liqueur (700ml)Burgundy, FRANCE$57. 99Bottle$695.88 Dozen
The passionfruit originates from Brazil. Its 'discovery' by the Spanish in the late 16th century lead to its further cultivation in tropical zones and abroad. In order to capture the essence of the fruit, Gabriel Boudier perform a maceration in Williams Pear eau-de-vie. A touch of lemon juice balances the whole, along with a careful dose of sugar, dissolved directly into the alcohol base. Considered one of the more compelling references in the company's range, this indulgent liqueur is for lovers of exotic fruits. The profile transports you to tropical jungles and warm summer beaches with scents of ripe, wild fruit and a fullness on the palate with a perfect balance of sweet and tart notes. Enjoy with ice or in iconic cocktails, such as the "Pornstar Martini". Also excellent alongside desserts (Pear Belle-Hélène, pear tart) or enjoyed neat. 20% Alc./Vol.

Cabernet sauvignon from the deep clay over limestone of the **** vineyard, matured in French oak for 30 months. Deep crimson with rich aromas of blackberry, blackcurrant, cassis and black cherry, hints of star anise, bay leaf, clove, pastis, crushed herbs, cedar, tobacco, pan juices, a touch of leather, black olive, briar and earth. Full bodied and graceful in its travel, with a core of rich black fruits, superfine, powdery tannin and a blackcurrant pastille edge to the acidity. Cellaring upside here, for sure. Drink by 2046.

Dave Brookes - James Halliday’s Australian Wine CompanionStands to reason that a vintage like 2021 should be ideally suited to Barossa Cabernet, a variety that continually shows how well it can perform in good years. This one is such a powerhouse, loaded with opulent fruit, and yet it delivers with poise and that Cabernet structure that you’re looking for. Aromas of blackberry and dark ripe plum, with a little spice and roasted character evident. It’s rich and opulent, but with a velvety mouthfeel. Lots to like here. Drink 2025-2040.

A classic blend of Cabernet Sauvignon and Shiraz first produced in 1962, Yalumba’s Signature pays homage each vintage to an individual who has made a significant contribution to the culture and traditions of Yalumba. The 2023 vintage’s signatory is Yalumba’s trade marketing manager, Peter Sawrey who has been responsible for writing the last 32 Signature back labels. This year’s release marks the 52nd vintage of Yalumba The Signature.
From vines with an average age of 23 years the 2023 Signature is a blend of 55% Cabernet Sauvignon and 45% Shiraz with maturation taking place in a combination of French barriques and Hungarian hogsheads (22% of which was new oak) for a period of 19 months. Yalumba's iconic blend sees 55/45% cabernet sauvignon/shiraz with the '23 release. Again, the release impresses with its fruit purity, elegance and cellaring potential. Deep blackberry, satsuma plum and black cherry fruit with underlying layers of brown spice, cedar, tobacco, pencil case, roast meats, dried herbs and black olive tapenade. Beautifully composed on the palate with a firm yet kinetic, fine-grained tannin structure, lacy acidity and a finish that sails on gracefully for ages. A cracking release. Drink by 2055.

Dave Brookes - James Halliday’s Australian Wine CompanionWe might be yet to learn who is to be honoured with the 2023 Signature, but whomsoever it is should be well pleased. This is a cracking release, one of their best. An opaque centre with a dark maroon rim, there is still vanillin oak evident on the nose, but it is integrating well. The aromas include notes of dried herbs, black fruits, graphite, licorice, mocha, chocolate, plums and cassis. This is balanced, youthful, offering real persistence and coiled power. The palate sees the move to gorgeous chocolate notes. A wine with serious length, there is much to love here.

Gabriel Boudier Suro Elderflower Liqueur (700ml)Burgundy, FRANCE$64. 99Bottle$779.88 DozenABV: 20%With packaging inspired by the Parisian Art Deco movement, Gabriel Boudier have launched a new brand to tap into demand for premium low-alcohol specialties. 'Sureau' is elderflower in French. Its floral and often fruity flavour seems to be a love-it-or-hate-it affair. If you're one of the lovers, this is reported to be a new high point for the category, with nearly a thousand wild blossoms going into the making of every bottle. Elderflowers are hand-harvested at the peak of spring-time bloom and gently macerated for five weeks to coax out their delicate aromatics. They're then blended with a lemongrass and blackcurrant bud distillate before the whole is carefully balanced with beet sugar to reveal the finest possible expression of the flower. The resulting liqueur opens with fresh white blossoms, pear and grapefruit zest, then unfolds into a soft floral palate with hints of lemongrass and honeysuckle. Bright and elegant, but ever syrupy! Recommended in a Spritz, in cocktails or over ice. 20% Alc./Vol.
Other reviews... This pale gold liqueur has a scent that suggests juicy fresh-cut pear. The well-balanced palate is sweet, not too viscous, and gently fruity, with a mild white-floral exhale. Mix into Hugo Spritzes, lighten with bubbles, or sip with dessert. 97 points - wineenthusiast.com

Multiple picks from the single site lend complexity to the wine. Medium weight, silky textured and highly perfumed red wine with a pleasing, savoury bent. Red cherry, a touch of cola, some green olive, game meat, dusty spices, mint and pepper. Lithe and fresh feeling with a light dusting of grippy tannin that falls in a web over the wine. A sense of elegance, and a distinct 'syrah-like' sensibility to this wine. It's not trying too hard, but effortlessly makes the (high) grade. Drink by 2035.

Mike Bennie - James Halliday’s Australian Wine CompanionIntensely pigmented – magenta almost. This is young, but so expressive. A core of black fruit, brambles and wild blueberry spice is layered with baked salt, milk chocolate toast, charcoal and plenty of savoury, terracotta dust. A wild, iodine, ferrous note compels. The palate is vivid, with a mouth-filling energy that draws a long line of fruit, hung taut with fine, lacy, yet firm acidity. This is so vibrant and concentrated that it’s like a new palette of gouache paints, vivid and pure and filled with excitement for what is to come from it. Whole bunch spice squeezes the palate, and the almost chalky tannins are structural without bulk. This feels like an expression of the vineyard, there is no oak or overworked winemaking to get in the way of the expression. A wonderful union of people and place. Drink 2025-2039.

Boudier's Nori liqueur was the winning entry created by Matthew Cusworth from Hoot the Redeemer in Edinburgh during the Wizard Competition 2020/2021. The bartender competition challenges participants to create the best and most original liqueurs of the year. Production employs nori and dulse seaweed, dried for flavour preservation, macerated, filtered to remove residues, then finally rounded off by a very small addition of sugar to balance the flavours. The unique taste experience adds a saline and umami note to drinks. It can also be used in cooking to bring a marine touch to certain dishes (such as marinades, sauces or desserts). 22% Alc./Vol.
