    Located 70km south of Normandy, Manoir du Kinkiz produce cider from twenty one varieties of apples grown on 30ha of orchards just outside Quimper, a commune in Brittany. This is a fantastic introduction to 'serious' cider, as it displays the characteristics that distinguish traditional, quality French cider from Australian commercial cider while remaining approachable. The style is semi-sweet, somewhat astringent, and some find it has a 'funky' character comparable to some blue cheese. 5% Alc./Vol.

A beautiful clear amber color, this pearling bubbly beaut from Manoir Kinkiz is footy on the nose with notes of barnyard and wet hay, but it’s also full of overripe apple and leather aromas. The front is a wave of juicy apple sweetness and gushing effervescence. This gives way to the more leathery flavors, which lead to the delicate soft tannic finish. This is a superb cider, another prime example of the quality of AOC/AOP French Cidres. - ciderexpert.com

    Food matches: Norman gastronomes have long known cider works brilliantly with a surprising variety of dishes. Consider the classic match of roast pork with crackling and apple sauce, braised pork or rabbit deglazed with cider or roast duck served with red cabbage and apples. Goats cheeses, especially chevre styles work particularly well with cider. Slightly sweeter styles of cider, such as those produced from pears will accompany desserts like apple pie, tarte tartin, or quince flavoured ice cream.

    Sourced from a first-fill Oloroso sherry butt and released in celebration of Signatory`s 35th birthday, this 32-year-old promises an HP of a very high standard, balanced and complex, combining delicate oranges and dark chocolate complementing the sooty peat. One taster commented, "It's unbelievable how much smoke a Highland Park can still have after so long in the barrel. I would have blindly put it on Islay. Impressive dram!" (whiskybase.com). Pay nearly twice the price for the official 30 year old! The yield was 557 bottles at 53.4% Alc./vol. Non chill filtered. Extremely limited.

    Other reviews... To my generation of whisky enthusiasts, so the youngsters, right, Signatory was and remains a very seminal bottler. The whisky world would be completely different without Signatory, perhaps still full of caramel and heavily cold-filtered uisge beatha. We owe a lot to Andrew and Signatory. Colour: deep gold. Nose: starts with a little cider or Sauternes-sulphur, with some hops, leaves, walnut skins, some gunpowder, then we have oil paint, clay, mushrooms, mustard à l'ancienne, pickled gherkins… I have to say this is a little intriguing and rather very Andalusian. Let's see how it evolves… With water:  cigars, cedarwood, figs and forgotten vegetable gratin. Parsnip, swede, cardoon… Mouth (neat): walnuts roasted in honey sauce and quite some gunpowder again. Chocolate, white truffles, touch of pointed cabbage and bok choy. Some demerara sugar. With water: awesome salted praline and nougat, earth, walnut liqueur, amaro… Finish: long and rather all on walnut wine. A little mustard, grapefruit, roasted chestnuts and pecans in the aftertaste. Comment: there is a commendable ruggedness in this old Highland Park. It seems like a real sherry cask, which held actual sherry, actually intended for human consumption.     This family cidery was established in 1943 and is now run by third generation family members. Using organically grown, fresh local apples, their 'Dry' style is described as having a nice roundness, nice acidity and slight bitterness. Refreshing on its own or match it with savoury dishes such as meats and savoury pancakes. Silver medalist in 2009 and Gold Medal in 2010 and 2011 at the general Agricole de Paris competition. 4.5% Alc./Vol.

    For those new to French cider or just looking for something different from the sweeter, mass-produced ciders common in Australia, Manoir Kinkiz 'Fouesnant' is the place to start. Older apple varieties are harvested from orchards located in Pays Fousnantais. Pressing is done when the fruit is fully ripe, from late September to December. Fermentation is slow, ending with natural fermentation in the bottle for about two and a half months, infusing a fine bubble. Recognised for its pleasant bitterness, roundness and persistent aromas of fresh apple, fresh butter and hazelnut, this 'semi-dry' expression is most commonly enjoyed as an aperitif or with light snacks. 5% Alc./Vol.

Ripe black cherry, dark plum and liquorice aromas are married to toasty vanillin oak, earthy fennel and spicy pepper notes. Rich and plush, the full bodied palate is awash with dark plum, liquorice and black cherry fruits. Excellent concentration with notions of toasty vanillin oak, earthy fennel and pepper lying underneath. Velvety tannins with a long juicy finish that has ample freshness.

    This is the other wine in the new range of Old Vines and what a cracker it is. After gentle basket pressing, this wine went to American oak barrels for a year and a half. It has given the final wine a sleek, plush and generous nature which works wonderfully well. A deep red hue, there is real concentration here. We have notes of raspberries, truffles, plums, black fruits, leather and cocoa powder. A wine of power, focus and concentration, this really needs a few years in the cellar before opening (not that you won’t enjoy it earlier if patience is not your thing). After that, it will drink beautifully for the following ten to twelve years. A very long finish with fine, silky tannins, the palate sees the emergence of notes of soy and beef stock. Terrific stuff and in comparison, with some prestige releases from the region, brilliant value.

    The cider market in Australia is dominated by large-volume brands produced on an industrial scale by multinational beer companies. All that is changing as quality European examples reach our shores. Few realise what a wonderful history cider has in many European cultures. Texts mention events such as Louis XI's ban on the production of beer, to use the barley to ease a famine stricken population. Farmers subsequently looked for alternative palliatives, and so a passion for cider was born. The Normans popularised cider after their conquest of England in 1066, and Spaniard Guillaume Dusus brought new apple varieties to Normandy in the 16th Century. With him, improvements in fermentation techniques led to better quality. Later, to curb the dominance of imported brandy, cider was distilled, transforming into the divine spirit we know as Calvados! (Apple Brandy).

    European cider frequently distinguishes those producers at the high end of the passion scale. The ciders of Leon Despiches et Fils are a case in point, being wonderful expressions from Saint Desir, just outside Lisieux in the heart of Pays d'Auge. Organically grown pears are sourced from trees between seventy five and one hundred years old and include 35% Poire Verte de Manerbe, 35% Poire de Blanc and 30% Poire de Grise. Lightly filtered with a fine natural bubble, the style is described as semi-sweet with lovely freshness and finesse making an excellent match with seafood. 4% Alc./Vol.

    Made from a blend of sweet and sour pears from the Domfrontais appellation, Fournier's pear cider is lower in alcohol than most Australian equivalents. Summed up as sweet and smooth tasting, it was awarded a Silver Medal in 2011 at the Concours Agricole de Paris. 2% Alc./Vol.

Moderately sweet aroma of fresh pears, apple skins, and faint honey. Medium body, lively carbonation. Sweet and tart pears on the palate at first... Finishes dry with lemon, very faint funk (hay) and faint pears, the latter spilling into the aftertaste, which stays sour and vinegary. Very low bitterness.     Since 1965 Bacardi rum has been produced at the Bacardi & Company Limited distillery on New Providence. Bacardi rum is the only rum produced locally in the Bahamas and was the first major product to be exported from the Bahamas. Bacardi currently exports the equivalent of seven million standard cases of rum to Europe per year. The distillery houses five distilling columns and has a total production capacity of 27 million litres of distilled spirit per year. Once the rum is distilled, it is put into charred oak barrels and placed in one of seven warehouses for aging. The aging process is an essential part of Bacardi’s rum production, since it helps to produce the smooth and rich flavour that has made Bacardi rum famous.

    A beautifully pure expression of the Boongarrie vineyard from the cracking 2021 Eden Valley vintage. It sits bright magenta-splashed crimson in the glass with lifted aromas of macerated satsuma plum, boysenberry and crunchy blueberry fruits cut with hints of spice, citrus blossom, licorice, chocolate, berry flan, olive tapenade and earth. It sports excellent fruit purity and detail, a mineral-laden acid cadence and a powdery tannin architecture with a real sense of harmony and verve. In my eyes, it's the best release yet from this vineyard. Drink by 2033.

    Pecorino is creating a bit of a buzz in wine circles. It’s been catching the eye of drinkers and winemakers alike for its richer mouthfeel and flavour nicely countered by bright acidity. The Little Wine Company saw the potential early on, this is its fourth release. Spring flowers and summer stone fruits, citrus, apple and pear are busy and fresh and clean and delicious. The grape’s natural enlivening acidity does the job so well, teasing the tastebuds and finishing dry.

    Distilled in a multi-column still at the Epris Distillery, this blend of molasses and cane juice-based rums was summed up by Compagnie des Indes as "sweet and savoury with notes of BBQ sauce & Xérès vinegar." Zero sugar has been added. From a 30ml sample, the aromas need coaxing to get beyond basic scents like balsa wood and hints of molasses. On the palate, the sugars are matched by tingling spices, closing acidic, lean with nipping alcohol. Some sweetness recovers late in the aftertaste, but the lack of definition makes this odd-ball rum feel more like an oak-charged, cask strength Armagnac. 53.2% Alc./vol. Non-chill filtered. 293 bottles produced.

    Notes from the bottlers... Nose: rich and powerful, with notes of toffee, fudge and macadamia nuts with strong whiffs of molasses. Mouth: first a salty flavour (salted butter caramel), then grilled meat and dark chocolate. Finish: a sweet bitterness remains all along the tasting right until the end.

    Richly fruited, full and fleshy textured.

    Veneto, Italy’s north-eastern region with Venice its capital, is home to the Pinot Grigio grape variety. Each year, since the 10th century, The Carnival of Venice is celebrated in the San Marco Square, with people dancing and feasting behind elaborate and exotic masks which is where this wine takes it’s name - La Maschera (the mask). Protected from the harsh northern European climate by the Alps, these cooler climes are somewhat similar to the coastal maritime regions of the Limestone Coast where the grapes for this wine were harvested.
    A consistently excellent Pinot Grigio, the juice for this wine was wild fermented on full solids in old French oak where it remained on lees for 6 months to enhance the texture. A small amount of Viognier was also included in this years release.
    Brilliant very pale straw colour with a faint tinge of green around the edges and a watery hue. Pear and Jonathan apple aromas are followed by some delicate honeysuckle, musk and ginger notes. Richly fruited, full and fleshy textured, the palate is awash with ripe pear, apple and honeysuckle flavours. Subtle musk and ginger elements also chime in. Lively acidity with the long, concentrated finish carrying plenty of volume.

The colour here is an opaque black/maroon. The nose has aromas of aniseed, florals, blackcurrants, chocolate and earth all swirling around. Leather, cloves and soy as well. This is rich, powerful and concentrated with good length through to sleek tannins. The palate sees notes of coffee beans and mocha emerging too.
