Handcrafted and distilled in France using their vodka as a base, Fair macerate high quality juniper berries and spices for a week before distilling everything once in a stupfler alembic. The juniper berries are sourced from a nature reserve in Uzbekistan, Central Asia. Other botanicals include cardamom, coriander, calamus roots and Grains of Paradise. Agriculture is the chief source of income for Uzbekistan's mainly rural population, but many farmers live below the poverty line. Fairtrade spices are sourced in the Kerala region of South West India. This cooperative of nearly 3050 farmers has three main objectives: to increase production, develop the social environment and promote and develop organic production. Tasting note: Crystal clear. Perfumed, bright and fresh white pepper and juniper-driven aroma with later inhalations finding cardamom to the fore. Vibrant and concentrated delivery offers piney juniper, lemon peel and a peppery, tingly mouthfeel. Looking like small grapefruits, the Asian Yuzu fruit has been the inspiration for several Japanese gins, aiming to retain its delicious sweet, sour and bitter flavours in harmony with the freshness of juniper. This is not the first time Four Pillars have experimented with the fruit. A limited edition collaborative bottling was launched in 2017. It was followed in 2019 with the Distiller Series 'Changing Seasons Gin' made with help from Japan's Kyoto Distillery. As of 2022, Four Pillars are including 'Fresh Yuzu Gin' as a permanent addition to their core range.
Mountain Yuzu, from the nearby Ovens Valley supply the Healesville-based distillery with fresh yuzus. Describing the flavour of the new gin, Co-founder and Distiller Cam Mackenzie comments, “Yuzu brings amazing aromatics that are a mix of lemon, mandarin, cumquat and grapefruit – all bright and fresh citrus notes – while the addition of finger lime adds some deeper citrus character. We’ve also learnt a lot (from the best) in our adventures making gin with Japanese friends, so in our take on Yuzu gin, we’ve used ginger, turmeric and sencha genmaicha, a Japanese green tea with roasted brown rice, for depth of flavour. A canvas of strong pine-needle juniper and a bit of lemon myrtle add a touch of lemon curd.”
Drink it however you like to drink your favourite gin, but it’s at its best in a Highball with plenty of ice, soda or light tonic and any kind of citrus garnish (best of all would be fresh yuzu, if you can find it!) 41.8% Alc./Vol.
- Four Pillars Olive Leaf Gin (700ml)Yarra Valley, Victoria, AUSTRALIA$89. 99Bottle$1079.88 DozenABV: 43.8%Four Pillars first new addition to the core range since 2015 was realised after a visit to Cobram Estate in Northern Victoria. During harvest, Cam McKenzie recognised that olive oil could work as a botanical. Experimentation led to olive tree leaves as well as around a litre of fresh Cobram Estate olive oil being added to the still. The oil is not what you'd purchase from the supermarket shelves. It's sourced from two Spanish Olive varieties – 'Picual' & 'Hojiblanca'- and one Italian – 'Coratina'. 250gm of local bay leaf and rosemary are also included, plus there's more coriander and much more juniper than Rare Dry. Other botanicals include lemon myrtle, fresh local lemons, macadamia and grapefruit. The gin is savoury, textural and bright.

Four Pillars Bloody Shiraz Gin (700ml)Yarra Valley, Victoria, AUSTRALIA$85. 99Bottle$1031.88 DozenABV: 37.8%As close as a Gin comes to a cult following! Yet another 'vintage' of this novel Aussie release has been made by steeping Yarra Valley Shiraz grapes in gin for eight weeks. The fruit was de-stemmed but kept mainly as whole berries, and the tanks were kept cold and stirred daily. After eight weeks the fruit was pressed before blending with more Gin. The final product was bottled unfiltered and is expected to develop secondary fruit characters beyond two years, but should be best consumed within two years of vintage. Notes from Four Pillars... (2017 release) The beauty of Bloody Shiraz Gin being a product of vintage means that it will never be the same. Our 2017 release has an incredibly vibrant ruby colour, which turns iridescent pink when mixed with tonic or soda. Aromatically the gin has fresh pine needles and incredible spice, and a clear peppery, dense raspberry character. The palate is lovely and sweet, with long juniper and spice characters to finish. This release is slightly lighter in colour than last year's, due to a cool vintage in the Yarra Valley with a moderate ripening period. Unlike Sloe Gin, the alcohol is 37.8% (rather than <30%) so it packs a punch and is ideal in a range of cocktails. 2016 release tasted... Deep purple with mauve edges. Berry tart, stewed plum and light pepper/paprika aromas over background juniper and grapefruit. Medium bodied with soft, silky, off-dry, juicy plum and raspberry tart flavours and a delicate grapefruit, cinnamon, white pepper, piney-juniper finish. Four Pillars Spiced Negroni Gin (700ml)Yarra Valley, Victoria, AUSTRALIA$89. 99Bottle$1079.88 DozenABV: 43.8%Four Pillars wanted to create a gin specifically for the Negroni - something to cut through the Campari and vermouth. And as the Negroni has always been a favourite at Four Pillars, distiller, Cameron MacKenzie jumped at the chance to make the first collaboration in their "Bartender Series" - a tribute to the very definition of a perfectly balanced cocktail.
First, they took their base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then they added an exotic West African spice called Grains of Paradise. This is one of the most unusual spices in the world, with clove and sichuan characters. But although very powerful, the spice tends to glow rather than become hot.
They also decided to use organic blood oranges in the botanical basket, as well as some ginger.
Tasting note: Crystal clear. Intense orange sorbet opening develops pith and peel freshness followed by hints of jaffa, white pepper and cut ginger. Creamy, soft textured delivery features early orange peel and later subtle hints of juniper. Excellent balance and freshness. Cough lozenge-like warmth and light jaffa in the fade. 43.8% Alc./Vol.

Four Pillars worked with QANTAS and the Rockpool mixology team to create an Asian-inspired Modern Australian style. The bartenders were aiming for a gin with nice spicy complexity and mixability – something to create a tasty G&T, or classic dry martini. Plus, with all that spice it also makes a spot-on Red Snapper. Red and green Szechuan give it a lovely warm mouthfeel while the macadamia nuts give it softness and an almost creamy palate. Fresh Rose Glow apples, tangelos, grapefruit peel and dry native quandong add fruity notes. Tasting note: Clear. Spicy feel to the bouquet offering lifted scents of peppercorn and coriander seed over fresh juniper and citrus. A full bodied, creamy, oily textured gin suggesting flavours of green cardamom, juniper and liquorice root with intensifying peppers towards the finish. Ends, dry, warming, vibrant, vaguely herbal with hints of anise, lemon peel and orris root through the aftertaste. Will make great Bloody Marys. 45% Alc./Vol. -

Their first spirit is a modern Australian Gin; possessing an equal mix of local and exotic botanicals including Juniper Berries, Coriander Seeds, Cardamom Pods, Tasmanian Pepperberry Leaf, Cinnamon, Lavender, Angelica, Star Anise, Lemon Myrtle and Fresh Oranges.
The distiller's state, "In terms of our ambition for our first gin, we didn't want a London Dry Gin but we couldn't ignore juniper. The way we have approached it is that the juniper is the canvas and the other botanicals paint the picture. The Tassie pepper is brilliant on the palate, giving us warmth rather than heat. Lemon myrtle is a beautiful, complex and unique alternative to lemon peel. Perhaps most interesting is our use of whole oranges. It’s unusual to use fresh produce in gin but Australian citrus is highly aromatic and supports the spicier botanicals like coriander, cardamom and star anise.Tasting notes: [BATCH No.2 tasted] Clear. Vibrant, lifted aroma is citrus focussed with its distinct lemon peel top note hovering over peppery, woody, piney, juniper notes. Second pass sees the aroma turn creamy and more lemon-meringue like. Hints of eucalyptus emerge in the final inspection to round off a very appealing gin bouquet. An unassuming entry leads into a concentrated, creamy yet spicy, medium dry profile featuring citrus peel, juniper and pepper. Excellent balance. Lemon / lime / spice aftertaste concludes with a dry, chalky fade. Consider adding this to your Gin repertoire over summer. Recommended. 41.8% Alc./Vol.
- Four Pillars Sherry Cask Gin (500ml)Yarra Valley, Victoria, AUSTRALIA$94. 99Bottle$1139.88 DozenABV: 43.8%
This represents a very limited parcel of barrel aged gin from Four Pillars' sherry cask solera. Composed of 42 ex-sherry barrels, stacked three rows high in an arrangement behind the stills, these vary in age from 15 to 35 years old. The barrels were filled more than a year ago, and this is the first solera release taken only from the bottom row of barrels. True to a traditional solera system, the barrels are never emptied - a small portion from each barrel is taken out, which is then replenished from the row above. Fresh gin is only ever put into the top row of barrels.
This is a rich, intense and layered barrel aged gin. Once again, the botanical oils have developed and changed in barrel. The juniper/ pine oil character underpins some amazing complexity. The residual sherry character has integrated beautifully with the deeper cassia and star anise flavours. Think dried fruits and nuts. The addition of a tiny bit of Spanish Amontillado sherry has added some length and sweetness to the final gin.
Four Pillars decided to bottle this in a 500mL format as in their experience, people tend to go through barrel aged gins a bit slower, as they're more of a sipping product. Try it neat over ice, or try it in a Tuxedo, a classic cocktail made with gin, Sherry and orange bitters.

Four Pillars Navy Strength Gin (700ml)Yarra Valley, Victoria, AUSTRALIA$104. 99Bottle$1259.88 DozenABV: 58.8%One of Australia's latest distilling ventures is located in the Yarra Valley and it's going gangbusters. Regular readers will remember the standard ABV release from several months back. This limited edition ups the ante in an extraordinary way. It's also recently being awarded a prestigious double gold medal at the San Francisco World Spirits Competition. 92 gins were assessed this year, with only nine scoring the double gold award. Here's the distiller explaining how they pulled it off:
"After experimenting with some exclusive batches for the Gin Palace (a Melbournian Gin institution) we decided to add fresh Byron Bay finger limes to the distillation, along with our beautiful organic oranges. This means we undertake a frenzy of distilling when these beauties are in season, and release just one edition of the Navy Strength each year.
The finger limes highlight the Asian spices like coriander and star anise, and are complemented by the addition of fresh ginger. Finally, fresh turmeric adds a fresh but earthy quality.
The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character which pulls the spices together. The palate is intense - sweet and juicy - but it is still very clean. The turmeric has added weight and earthiness to the palate with a freshness not unlike dill or cucumber." - Notes sourced from Four PIllars.
Tasting note: Brilliant rainwater clear with a bright silvery blush. Sensational intensity with lifted lemon verbena / lime cough lozenge notes in the opening pass. Further air contact shifts the accent towards juniper and orange peel over suggestions of turmeric, dried curry leaf and white pepper. A crisp, dry, juniper focussed entry preludes a powerful yet poised, creamy textured mid-palate attack with juicy orange / lime zest and vibrant peppers. Finish features lemon meringue, lime gelato and a drying turmeric-like texture followed by a medley of citrus flavours, all carried by the lively spices in a finale that seemingly never ends. G'Vine Nouaison employs nine botanicals including nutmeg, cubeb berries, ginger roots, liquorice, lime, juniper berries, corriander, cassia bark and green grape flower. The botanicals are infused over a two to five day process and distilled in the grape neutral spirit. Small liquor stills are utilized to insure the best quintessence. A fifth and final distillation: the green grape flowers essence, the Ugni Blanc neutral spirit and the botanical spirits are blended in perfect proportion and copper pot distilled one last time for a complete marriage.
Nouaison is one of two aromatic gins available from G'vine. This version approaches a London-Dry style with Juniper becoming a prominant feature along with a higher ABV at 43.9%.
Other reviews: Clear. Intense aromas of cinnamon bark, candied lemon peels, almond bark, and floral juniper follow through on a round, silky entry to a bold dry-yet-fruity medium-full body with with menthol, pine resin, anise, and mineral oil flourishes. A charming, exotic panoply of flavors make this a must try gin for innovative cocktails.

Gabriel Boudier Saffron Gin (700ml)Dijon, FRANCE$94. 99Bottle$1139.88 DozenABV: 40%Saffron Gin is a unique recipe discovered in the archives of France's colonial past when England and France both claimed India as their jewel, and Gins rich in exotic botanicals were fashionable. Apart from Saffron which gives this Gin a delicately spicy character, seven other fresh botanicals are used including Juniper, Coriander, Lemon, Orange peel, Angelica seeds, Iris and Fennel. Saffron Gin is only produced in small batches using a traditional pot still, so at this stage availability is limited.
Tasting note: Brilliant deep orange/gold appearance. Semi sweet scents are of orange and mandarine peel over more subtle juniper notes. Delicate spices emerge after time in the glass with suggestions of saffron. A mild entry leads into a light to medium bodied palate that repeats the citrus peel-over-juniper theme. Soft, gently spicy mouth feel. Concludes refreshingly dry followed by a delicate juniper and spice aftertaste. If there’s saffron evident it comes through very late (more texturally than taste wise) and in such a subtle way that if you weren’t looking at the bottle, it wouldn’t enter the flavour equation. Would integrate well into citrus based cocktails but this is definitely not a gin that works well with tonic. 40% Alc./Vol.
Other reviews... The bright orange/new copper appearance is the result I assume in part, of FD&C Yellow #5 coloring agent as stated on the label; no sediment seen; since this gin contains saffron, why artificially bring the color to such an outlandish orange degree? A potential turn-off aspect to bartenders who pay attention and like natural products. Opening sniffs detect plenty of juniper and mild herbal notes upfront; further aeration time doesn’t stimulate more in the way of ginny aromas. Entry is strikingly sweet and seed-like; midpalate focuses on the herbal bittersweet and piney/juniper components but little else. Ends on a pleasant note of coriander, juniper and barely perceptible fennel. The high level of sweetness and the phony looking color might present mixing problems. Garden Grown Gin (700ml)New South Wales, AUSTRALIA$94. 99Bottle$1139.88 DozenABV: 42%Note: the title of this product has changed from 'Distillery Botanica' to 'Garden Grown Gin'. It's the same liquid, produced in the same way, to the same recipe, by the same people. Garden Grown Gin is produced at Distillery Botanica and employs a process known as enfleurage, a thousand-year-old technique. Traditionally it applies to flower petals - these are placed on glass trays containing a wax or animal fat called a 'corps'. This corps which is highly purified with no odour or water remaining absorbs the flavour and fragrance from the flowers. Every 24 hours the petals are removed from the tray and replaced with fresh ones. This may be repeated dozens of times per tray. The trays are stacked so that the tray on the top can trap the rising fragrance from the flowers on the tray below. Once saturated with aromatics, the corps is referred to as the "pomade" (the most highly saturated pomade is called "pomade No. 36" because the frames have been charged with fresh flowers 36 times, the maximum during enfleurage). The next step is to break up the pomade in the presence of high strength neutral spirit which takes up the natural flower oils and leaves the spent fat behind. At Garden Grown Gin, the aim is to extract the purest perfume from their chief botanical, Murraya, without the use of heat. This makes the delicate flower come alive with cues of jasmine, honeysuckle and orange blossom. Distiller, Phillip Moore adds, "the gin also includes a rose enfleurage using an old fashioned Tea Rose from our garden. It is known as the Duchess de Brabant. Our garden also supplies Chamomile flowers which when distilled immediately on picking have a delicious apple character with a delightful bitter finish. To carry on the perfume allusion of enfleurage we also use orris root which is used in Chanel No 5. In perfume and gin orris is a fixative which creates harmony and also slows down the evaporation of the more volatile aromas. Orris has its own violet aroma. It enters the palate very sweetly and adds a richness and viscosity all over. On the finish it contributes a high quality bitter and an earthiness which is almost pastry like". Tasting note: Crystal clear, shows good viscosity. Pure and ultra fresh with a juniper and black pepper base overlaid by sweet floral top notes. Aeration offers suggestions of orange blossom, rose petal and muted lavender and later hints of incense candles. Creamy yet vibrant entry with a seamless integration of juniper / herbal / floral / wax-like notes. Concludes tongue tingling, peppery, fresh, long. Delicate and multi-layered. The colour is translucent ruby red. The aroma starts subdued but gains definition with citrus and ripe lime before keenly accenting pink grapefruit. Citrus and pepper lead on the palate, the finish highlighting fresh grapefruit and pepper while also being drying and finely tannic. At the time, excavation works were taking place in Alsace where a site with antique valuables was found. Amongst them was a gold pot still. After these objects were deemed to have no historical value, they were put on sale. One of the buyers was an amateur distiller, a man who immediately fell in love with the still. He spent years of his life looking for the perfect spirit, finally creating a gin with tangerine and hints of vanilla and almonds. He named this special spirit Gold 999.9 as he considered it to be his liquid gold. Botanicals include juniper, almond, vanilla, cassia bark, gentian violet, poppy, tangerine, coriander, violet flowers and angelica root. The colour is bright gold with pale straw edges. On the nose there's big citrus input; think orange cake or tangerine peel and possibly hints of chamomile. Given more time in the glass and it essentially smells like triple-sec. The entry is light following through to a medium dry, juicy orange cake / citrus peel profile that finishes dry, delicate and gently warming. Call it contemporary, 999.9 is undeniably very orange dominant - to the point of being hard to classify as gin. 40% Alc./Vol.

Old Tom Gin is the last remaining example of the original lightly sweetened Gins that were so popular in 18th and 19th century England. The name comes from what may be the first example of a beverage vending machine. In the 1700's some pubs in England would have a wooden plaque shaped like a black cat (an 'Old Tom') mounted on the outside wall. Thirsty passersby would deposit a penny in the cat's mouth and place their lips around a small tube between the cat's paws. The bartender inside would then pour a shot of Gin through the tube and into the customer's waiting mouth. Until fairly recently limited quantities of Old Tom-style Gin were still being made by a few British distillers, but they were, at best, curiosity items. Hayman's Old Tom Gin is an exception.
The original company of Hayman Distillers was founded in the 1800’s by James Burrough, the great Grandfather of the current Chairman, Christopher Hayman. James Burrough created the world renowned Beefeater Gin. Although Beefeater Gin and James Burrough Limited were sold to Whitbread in 1987, the Hayman family retained part of the business and continued the tradition of distilling and blending Gin and other white spirits.Following the 18th Century tradition, Hayman's Old Tom Gin is a botanically-intensive and lightly sweetened style of gin distilled from 100% grain. In comparison to London Dry Gin, the Old Tom style delivers a more rounded taste experience with depth. The collection would not be complete without a traditional English Sloe gin made by infusing Sloe berries, a type of wild plum from the Blackthorn Tree. Apart from traditional Gin ingredients such as juniper berries, coriander and citrus peel, the unusual distillation process combined with an oddly delicious set of infusions (including cucumbers and rose petals) yields a one-of-a-kind gin that is passionately loved by a tiny yet growing handful of individuals all over the world.
Our tasting revealed impressive intensity in the opening sniff which is gently peppery and floral with restrained juniper and sweet earthy, herbaceous scents. The aromas lead into a mid-weight, creamy textured and well-integrated amalgam of citrus peel / juniper / pepper; along with hints of dried flowers and cucumber towards the finish. It's an event that has fast become one of the most respected and high profile trade competitions in the industry, attracting many entries from leading brands all over the world. This year 49 gins participated.It all started in 1999. Jon Hillgren went to London together with a few friends to start working as bartenders. He discovered gin. During the years that followed the discovery evolved in to an interest in gin crafting. After tasting about one hundred gins, academic studies and subsequent visits to distilleries around the world, Jon finally founded Herno Distillery in 2011.
Situated in the village of Dala just outside the City of Härnösand in Ångermanland, Sweden, it is the country's first dedicated gin distillery and the world's northernmost. Production employs only organic ingredients and none of the gins are chill filtered.
Botanicals include juniper berries from Hungary, Coriander seeds from Bulgaria, hand peeled lemon, Lingon berries from Sweden, Meadowsweet from the United Kingdom, Black Pepper from India, Cassia from Indonesia and fresh Vanilla from Madagascar. This is essentially the same gin as Hernö's standard issue which employs eight botanicals, except Old Tom has extra British Meadowsweet added during the distillation. Following dilution a touch of honey is also included. Sweetening tends to lift the floral notes, releasing the juniper and making for an even smoother mouth feel.Since its release in September 2014, Herno Old Tom has received a total of four Master medals at the Global Gin Masters and also a Gold / Outstanding at the International Wine and Spirits Competition (IWSC) 2015.
Tasting note: [Batch 33 tasted] Clear. Intensely aromatic with no shortage of pepper through the juniper, vanilla and floral citrus. Cinnamon too. Air contact emphasises lemon peel and coriander freshness. A creamy, gently tingling delivery featuring elderflower gelato, marzipan, trace vanilla and juicy juniper to finish. Yet, for most, the star of the show are the 'Butterfly pea flowers' (often used as a colourant in Southeast Asian cooking), which have resulted in an eye-catching bluish/violet coloured gin. The flowers have an incredibly sensitive pH balance, meaning even the slightest shift in acidity can turn a beverage from deep blue, to a pink blush, i.e. Tonic!
The distillery has also produced an Australian Agricole (sugar cane) styled Rum and cane spirit, both of which are outstanding.
Tasting notes: Striking translucent French blue colour with mauve edges. Aromas of piney juniper, lemon gelato, thyme, sweet oregano and white pepper, follow through with bright and zesty flavours of lemon gelato, late juniper, white pepper and pleasing spirit warmth.
