    Totally opaque sienna brown black colour with a deep walnut brown olive green hue. Such is its viscosity that it clings to the side of the glass like paint. Knockout aromatics of toffee, honey and raisins are laced with perfectly integrated spirit. Nuances of marmalade, Christmas cake and spice are also apparent in this very complex sniff. Prodigiously rich with a syrupy like texture, so thick that you could almost eat it with a spoon, the palate is completely saturated with a concentrate of raisin, honey, toffee and maple syrup flavours over traces of marmalade, well integrated spirit and spice. Exceptionally long conclusion of honey, raisins, toffee, marmalade, finely integrated spirit, maple syrup and spice. Pure decadence in a bottle. Alc 17.3%

    Other reviews.... The colour is an astounding density. A myriad of dried fruit panettone, lapsang, five-spice, hoisin and roasted walnut doused in espresso and bitter chocolate, reel from a core of thoroughbred intensity. An immense wine that dichotomously, despite its sheer weight, almost evaporates from the tip of the tongue and surfaces of the cheeks, while lingering endlessly.

    Almost incomprehensible concentration here. This has a deeply aged, toasty and dark nutty edge on the nose. Roasted honey, dark chocolate, coffee and roasted malt, too. The palate has implausibly concentrated flavors that follow the same threads shown on the nose, all swooningly sweet and rich. Yet, somehow it extrudes and balances to the point of lightness, leaving a trail of long, dark and toasted flavors of almonds. Extremely impressive and complex. Drink now. Screw cap.

    Produced in batches as small as fifteen bottles at a time, this super smooth vodka is created from the discarded whey left over from the cheese-making process. It undergoes two complex fermentations before the liquid is distilled. The resulting vodka has little heat and plenty of character, and is designed to be enjoyed straight at room temperature in a large aromatic glass. Says Angus Burton, the vodka’s distributor, “On its own, expect to find tropical fruit and vanilla-butterscotch aromas and flavours, but the highlight is the pure, cream-like texture of the spirit. Dryish bouquet captivates with intriguing fruity aromas reminiscent of Maraschino cherries, fresh prunes, rhubarb tart or semi-ripe nashi pear. Second pass ups the vibrancy and introduces citrus peel, pine needle, sap and balsa-wood like notes. Feather light on entry, developing with a medium bodied, restrained piney / sappy profile and a powerful lemon cough lozenge surge that surprises for this ABV. Ends poised and lively with suggestions of liquorice root, lemon grass, eucalyptus oil and late Vapo-rub in the aftertaste. Exceptionally long.     Other reviews... While there have been several gins to utilise ants as botanicals, few within the already niche category are as unique as requiring and researching the pheromones of said ants. Accompanied by a set of botanicals grown and conserved on the remote Wooleen Station in Western Australia, this gin seeks to encapsulate the flavours of this extraordinary, arid area. The gin presents an abundant creamy, butter-like texture through the palate, which plays into some dry wood with almost dessicated hazelnut notes. The botanicals themselves draw in more floral, citrus profiles, individually subtle, but together creating an undertow of complexity. There are hues of fruity, dried berries throughout, a little elusive, but adding to the mystique of the spirit. Punchy lemon oil and eucalyptus race through the gin, creating a cord between the different botanicals, unifying them. 91 points - Jess Clayfield, winecompanion.com

    "If you haven't tried Fireball Cinnamon Whisky yet, just imagine what it would be like to get a Chuck Norris roundhouse kick to the face if his legs were on fire and tasted like cinnamon. Like it, love it, shoot it-- your dad's whisky never tasted so smooth. What happens next is up to you... So goes the rather colourful introduction to this new arrival.

    Rumor has it that the original Fireball Whisky recipe was forged sometime in the mid-1980s during the coldest winter Canada had ever seen, when a mixologist turned mad scientist accidentally created a permanent solution to frostbite. The concoction slowly and quietly made its way around North America for a few years, a sort of secret handshake between veteran bartenders. "Word got out", say the producers, "and now we are just trying to make it fast enough to keep the fire burnin’."

    Tasting note: Smells of candied cinnamon stick or cinnamon doughnuts. Time in the glass brings out hints of ginger and clove. Silky, sweet and viscous; opens with cinnamon strudel and finishes with a warming cinnamon and pepper kick. Heat lingers. The label doesn't lie- Hot stuff! 33% Alc./Vol.

    Other reviews... Pale amber color. Bold cinnamon red hot and pine cone aroma with a lightly syrupy sweet medium body and a pure honey and hot cinnamon and root beer candy finish. Cinnamon delivered as promised, but where's the whisky.

    By the end of the 18th century, doctor Pierre Ordinaire, native of the Doubs, but exiled in the canton of Neuchatel in Switzerland, invented the absinthe elixir, composed of aromatic plants from which he claimed had curative powers. At his death, he bequeathed the secret of this elixir to his housekeeper who was supposed to have sold it to the Henriot sisters at Couvet. Those women cultivated by themselves the plants that they distilled in a little still; the liqueur was then distributed by hawkers. Not managing to keep up with demand, they sold the recipe in 1797 to Major Dubied, who, with his son, settled the first absinthe distillery in Couvet. From a once medicinal potion, absinthe was soon being consumed for pleasure. Since its growing success, a second distillery was created and absinthe soon became known through the whole of France thanks to commercial travellers. At this time, around 1825, other distilleries were founded in Haute-Saône and in Doubs, and later, in the South of France, as well as in the region of Paris. One such distillery was Lemerciers. Before 1800, the Lemerciers were an important farming family, living in Grand-Fahys, a hamlet in the district of Fougerolles. In addition to their farm land, they also owned several orchards from which they produced Kirsch and Plum Brandy. However, little by little, their production of brandies greatly exceeded their personal requirements and they became professional distillers.

    Only relatively recently has the Lemercier company commenced commercial production of Absinthe, a spirit containing wormwood plants. This sugarless aperitive is obtained thanks to a traditional process, and still follows the same recipe which was used by the Lemercier’s ancestors. Numerous plants enter in its composition: wormwood (big absinthe), green anise, star anise, fennel, gentian and armoise amongst others. After a maceration of several hours in alcohol, the seeds and plants are distilled, followed by an infusion of plants which are added to create colour. Then a maturation of nine months is necessary to make the aromas of the various plants and seeds develop. The essential oil of the big wormwood (absinthe) contains more than fourty components. The thujone is the main element incriminated in the toxicity of absinthe. (Thujone is also found in other plants such as salvia, some varieties of lavender, and “achillée millefeuilles”.)The thujone levels in absinthe are too small to be of any real risk, as with other beverages which also contain thujone such as vermouths, “génépi” liqueurs and the famous “Chartreuse”.

    In 1988, a directive from the European Council lay down the content to be respected regarding the different products which are used in the making of food products. The thujone content to be respected is 10 mg/kg for alcoholic beverages titrating more than 25 % proof in volume and 35 mg/kg for specific alcoholic beverages.     Unmistakable in its unique long tapered bottle, Galliano liqueur is named after Major Giuseppe Galliano, a member of the Italian Expeditionary Corps in the Italian-Abyssinian conflict of 1895-6, as a tribute to his heroic stand at the fort of Enda Jesus where he held out for forty four days before being ordered to surrender.

    Galliano was traditionally made at Salara, fifteen miles north of Milan, however, recently other countries have begun producing it under license. Forty herbs, roots, flowers and other botanicals, including key ingredients like vanilla and anise comprise the recipe. Seven infusions, seven distillations, two blending stages and a six month marrying period are involved in the production. Galliano is standard stock for any serious bar around the world.

    Other reviews... Vibrant, electric yellow with a faint, greenish hue. Rich anisette cookie, candied citrus peel, vanilla bean, and herb aromas. A round, silky entry leads to a lightly sweet medium-bodied palate with delicate star anise, vanilla cake frosting, and peppery herbs. Finishes with a long palate cleansing fade. Beautifully balanced with great texture and flavor. 30% alc/vol.

    A logical extension to the outstanding Maidenii range comes in this Quinquina aperitif. Produced from Heathcote Viognier grapes as well as fragrant botanicals and citrus, rounded off with the bitter edge of cinchona bark. Pouring a pale straw colour, it offers lovely lifted notes of grapefruit, thyme, cool mint and delicate quinine. A fresh and breezy entry is followed by racy flavours of semi-ripe apricot, pink grapefruit and a delicately bitter, vibrant dried herb / quinine / mint finish that's remarkably long for the genre. Very appetising, this should mix brilliantly. 17.5% Alc./Vol.

    The Balvenie Tun 1509 follows in the footsteps of the legendary Tun 1401 series, which collectively set the whisky world alight by intriguing both anorak and collector.  This was no mere blending exercise of varying cask types as many expressions have, and continue to achieve today. Its significance lied within its make-up, with the now retired David Stewart, selecting dominant cask types - many quite possibly outstanding in their own right - of both ex-sherry & ex-bourbon from decades past (60's, 70's, 80's etc) , to marry . To highlight the substance behind one of these creations; Batch 1 of Tun 1401 was a six cask vatting of - a 1973 Sherry Butt, a 1972 Sherry Hogshead and American casks from 1966, 1974, 1978 and 1988.

    After almost manic demand worldwide the '1401' series ceased after 9 batches which were spread across world markets. In 2014, Tun 1509 was then commissioned, quadrupling 1401's 2,000L capacity, to combat global demand and to finally produce a worldwide release. Balvenie's Global Brand Ambassador; Sam Simmons had maintained the new tun will be capable of producing a similar recipe to that used for Tun 1401, just on a larger scale.

    This first instalment of Balvenie Tun 1509 comprised of 42 casks, including 35 American oak barrels and seven European oak Sherry butts. As with 'Tun 1401', all the casks have been allowed to marry together for a period of several months. This release has otherwise sold out globally. Only 1 bottle available.

    Other reviews... This newbie from Balvenie is the worldwide replacement for the market-specific Tun 1401. A larger volume vat (8,000 liters) is now being filled with an equally eclectic mix of casks (42 casks ranging from 1970 to 1992). Deep amber; this has substance but being Balvenie, it’s gentle: orange blossom/Manuka honey edged with spice, marmalade, scented woods, and a little frangipane. The palate shows a supple, rippling power with some apricot, cinnamon, and root ginger. Awfully good.

    Toasted marshmallow and spicy oak aromas develop with lifted pepper notes. There's more honey and cocoa than the number 8, both on the nose and the palate, which is also plusher, fuller and rounder with flavours of candied peach, cocoa and nicely balanced sweet oak turning lightly smokey at the finish. Full flavoured, easy drinking Tennessee that's priced right. 45% Alc./Vol.

    Other reviews...The most brooding of the three. Not as polished as the Barrel Select, but certainly very entertaining. Shows more depth that the No. 8, with more dry oak intensity and more heft. Notes of dried spices, dark chocolate, cocoa, and charcoal balance the citrus, currant, caramel, and vanilla. A very good sipping whisky. 89 points - whiskyadvocate.com

    Aged 8 to 9 years on average. Dickel blends in older stock to the No. 12 version of its whiskey, and ups the alcohol to 90 proof. Good call on both fronts: No. 12 is a touch smoky like the No. 8, but the body comes across as deeper in the way it pulls the spiciness out of the grain used in the mashbill. Still a modest amount of sweetness in the finish, but whiskey fans looking for a more frontier-like experience will probably veer toward No. 12. - drinkhacker.com

    Produced from a blend of 62% Pinot Noir, 24% Chardonnay, 14% Meunier with only 5-6% red wine added. Over 85% coming from Grand and Premiers Cru vineyards.

    A pillowy mousse slowly subsides to reveal a salmon pink coloured base that has a nibble stream of bubbles flowing through to the surface. Delightful strawberry, cherry, baked bread and yeast lees aromas fill the nostrils with hints of blood orange, toast and brioche also evident. Rich and full flavoured yet wonderfully finessed, the palate is engulfed with strawberry, cherry, yeast lees and brioche characters which are complimented by some delicate toast and chalky elements. Creamy textured it finishes dry with invigorating acidity and a long airy aftertaste. A wonderful Rose Champagne to savour through the summer months.

    Very attractive aromas of strawberry pie with the crust nicely crispy. Copper and iron too. Medium-bodied with real pinot noir character as well as salted butter, hints of barrel and a juicy finish. 64% barrel-fermented pinot noir (5% still red wine), 28% chardonnay and the rest pinot meunier. Rosé just keeps getting better. Drink now.

    First released in 2008, the NV Champagne Brut Rosé is the release based around the 2021 vintage. A medium salmon hue (only 5% red wine is added to the blend), the nose is beautiful and has a lovely touch of opulence in its notes of preserved Amarena cherries, ripe red fruit, toasted brioche, and fresh roses. The palate offers a luxurious feel, with power and elegance that suggest decadence, but it’s not sweet. It has a refined mousse, with a chalky and pithy, orange-tinged structure, wonderful length, and a good core that will easily age another 10 or more years.

    The latest release of Bollinger's NV Brut Rosé is showing especially well, offering up complex aromas of sweet stone fruit, honeycomb, freshly baked bread and orange oil, followed by a medium to full-bodied, pillowy and vinous palate. Layered and concentrated, with a pretty pinpoint mousse and ripe but racy acids, it concludes with a long, expansive finish.

    Bakery Hill is a new Australian venture into the generally exclusive world of Whisky production. We say exclusive, because few distillers outside of Scotland have yet managed to create a whisky that approximates to the quality or style of the Scottish original, or when they have, the whisky has usually relied upon the importation of key ingredients from the ‘homeland’. Bakery Hill’s Single Malts, despite their youth, are very promising initial efforts, and as the spirits spend longer in barrel, one can anticipate some very interesting results.
    As with classic malts, Bakery Hill uses only malted barley [from Tasmania], yeast and water to achieve its flavour and aroma. No caramel is added in order to enhance the appearance. Barrelling at Bakery Hill is done using select second fill American Oak Bourbon barrels. French Oak casks are also used for the production of the classic double wood style.

    This, the first release in the new Beam Distillers Collector's series, commemorates Jacob Beam, a Kentucky farmer, who operated a grain mill and ground grist for locals - a portion of which was always reserved for the families private use - to make whiskey. It was in 1795 that Jacob finally began commercial production, however it was not under the Beam Label. Consistency of style has been maintained by using the same yeast cultures for over 60 years, derived from an original culture made by Jim Beam himself on his back porch. Beam Bourbon is the product of six generations of distillers with only one enforced break in production between 1920 and 1933 when prohibition was introduced to the U.S. It was following prohibition, (during which time the distillery had been shut and sold to the U.S. government) that the bourbon was named "Jim Beam" after the head of the Beam family.     During colonial times, shrubs were extremely common – vinegar-based refreshers, many times combined with alcohol or allowed to ferment so they had a bit of a kick. One of the classic flavours during the tenement era was Dr. Brown’s Cel-Ray Soda, a celery soda so popular during the ’30s, it was nicknamed the Jewish Champagne. Though the only flavour that was declared was celery seed, it's likely there was a bit of ginger and apple added in too.

    In this latest effort, Bitterman's have taken all of these ideas and run with them. Brine, celery, apples and vinegar - all dedicated to Orchard Street, home of the Lower East Side Tenement Museum. In conclusion they comment, "Funny that something that we made to honor the Eastern European immigrant experience works so damned well with Scandinavian Aquavit!"

    Each new Octomore generates a degree of anticipation and excitement from malt devotees and collectors who have an appreciation for whisky at the extremes. The seventh edition of this cult whisky continues its precedent as one of world's most heavily peated drams. It is also something of a landmark release as it represents the last Octomore created under the influence of Master Distiller, Jim McKewan. Having carried on the role since 2001, McKewan announced his retirement from the company in June. This Octomore release was actually held back in order to coincide with his departure. He will continue acting as a consultant for the Islay distillery.

    Once again the Bruichladdich maltsters faced a challenge with the barley harvest destined for Octomore - to try and coax as many phenols into the grain as they can. This is a delicate, inexact art rather than science, the results varying according to a complex suite of factors. It's part of what makes each edition unique, limited, finite.

    7.1 employs barley exclusively sourced from the Scottish mainland, peated to 208ppm. After five years in American oak it was bottled all natural, at a cask strength of 59.5% Alc./Vol.

    Jim McKewan describes the nose as: “Like sea spray and caramel, lemon balm and pipe tobacco. Slowly, the peat rises from the glass, gentle but strong, lifting vanilla, mint, toffee, golden syrup and almond.” On the palate, he finds: “Smoothness, sweetness and then smoke. A texture like no other, satin soft and devilishly warming. The American oak influence is in perfect tune with the smoke and soft fruits that have been delicately coaxed from the still during an exceptionally slow distillation.” He adds, "This dram will transport you to Islay, to watch the sun setting over the sea while breathing in the peat smoke hanging in the air."

    Paul John ‘Brilliance’ is the first in the range. An un-peated malt matured in ex-bourbon casks. The second is ‘Edited’ with about 20% of the malt being peated Scottish, and again, matured in ex-bourbon American oak casks. Both are non chill-filtered.

    Tasting note: Polished copper. Offers up fruity malt, hints of ginger bread, light cinnamon and vanilla. Similar in many ways to "Edited" but with the oak adding firmness and drying the mid-palate.     Other reviews... Paul John is taking its entry into the world of single malt very seriously, and very slowly but surely. After two single cask offerings to find its range, Brilliance and Edited are its first general releases.     ‘La Gritona’ is Spanish for ‘The Screamer’ - an appropriate name seeing that one of the people behind this outstanding tequila is LA-based punk guitarist Andy Coronado. The other significant player is the renowned tequilero Melly Cárdenas, who fashions La Gritona at her small distillery in Valle de Guadalupe in the highlands of Jalisco. One of Mexico’s few female master distillers, the fiercely independent Cárdenas—who has 20 years of quality tequila production under her belt—shares Coronado’s love of the exceptional and unconventional, and leads a team staffed by only local women.

    In a market dominated by major companies like Herradura, Patrón and Fortaleza, the duo set out to create a rocking, pared-down Reposado that would stand out by staying true to the region’s heritage. For a Reposado, La Gritona is light on colour and sweetness—Coronado and Cárdenas want none of the flavours that mask many commercial Reposados like vanilla, chocolate and dulce de leche. Instead this is packed with delicious, honest and savoury, roasted agave flavor, reminiscent of the old-style ‘rested’ tequila, before the mass market took hold: “It’s tequila like our grandparents drank,” says Cárdenas.

    Working with 9- to 10-year-old, mature Blue Weber agave grown in the iron-rich red soil of the Jalisco highlands, every step of production after harvest takes place under Cárdenas’ own roof and with an attention to detail that the big boys, or those outsourcing distillation, cannot hope to replicate. The agave is steam-cooked in a single, thick-walled earthen oven for 24 hours and then allowed to rest for another 24 hours before crushing. The collected liquid is naturally fermented (no additives are used to push things along) in open steel vats at a rate dictated by the ambient air temperature and the wild yeasts, usually lasting between six to nine days. The double distillation takes place in small steel stills. Those bespoke bottles by the way are made from recycled Mexican glass, hand-blown just an hour’s drive from the distillery. Coronado uses any recycled clear glass he can find (mostly old Coke bottles) then chips in a few Dos Equis bottles for the green tint!

    The distilled blanco is then rested in reused American whiskey barrels for eight months before bottling. These low-impact second- or third-fill barrels are given only the lightest char which allows for the refreshing, sappy notes of the agave to shine through, resulting in a tequila that sips and mixes perfectly in equal measure - it’s crisp, clean and elegant and kills it in a Tommy’s Margarita. Tasted uncut, the bouquet offers stunningly pure and keenly fresh scents of brine, dill pickles, capsicum, black pepper and pine sap; Five minutes stirs up sweeter scents of grilled pineapple, vanilla and coconut butter. The silky, medium bodied delivery is gently sweet and wonderfully elegant; Capsicum, green pine and white pepper feature while sappy agave flavours finish the profile with admirable balance.     The Cardrona Distillery is a family-owned and managed distillery nestled high in the Cardrona Valley between Wanaka and Queenstown. Their gin is produced from both copper pot and column distillation and employs local Cardrona botanicals including juniper, coriander seed, angelica root, lemon and orange zest. Seasonal rose hip, first brought to the district by the Chinese, is also used.

    Tasting note: [Batch 0002 tasted] Brilliant clarity. Penetrating aromas excite the senses with intense juniper, menthol and crushed eucalyptus leaf freshness followed by white pepper, coriander seed and lemon peel. Five minutes air contact accents celery leaf and subtle cardamom. Neutral entry builds to a concentrated, medium-dry, peppery, lemon sorbet attack.     First released in 2014, Craigellachie's 13 year old is a perfect introduction to the distillery's heavy distillate, partly the result of short fermentations but also due to enormous stills with straight lyne arms adding reflux. Even from a 30ml sample, it's a whisky with terrific depth. Fruity, almost floral aromas hint at lucerne mulch and new leather, slowly giving way to ripe orchard fruits - especially green apples. The palate sports delicious, buttery-malt and spicy pear flavours with more pepper, late fruitiness and lingering spices. Some tasters also note a slightly sulphury / smokey edge (think spent matches). This style won't be for everyone, but it is undeniably one of the more distinctive malts in its price bracket. 46% Alc./Vol.

    Other reviews... Light amber. The initial impression is one of bulk. There are heavy florals — think lilies and stewed white fruit, and just-overripe banana — but this is given a mysterious extra heft by an underpinning of a light meatiness, accompanied by a tiny lift of (good) sulfur. The palate is, unsurprisingly, thick and creamy with huge fruit that fills the mouth. A highly physical, old-style Speyside dram with classic distillery character.     ...You couldn’t make a label look more ‘retro’, could you! Unless you start using hieroglyphs or cuneiform alphabet. Colour: straw. Nose: it is a milder, rounder and sweeter version of the 2003, but the background is similar. Wee touches of mezcal again, a little earth, a little sulphur (spirit sulphur) that borders almondiness (what?), plenty of apples and then a few raisins and a touch of vanilla. It’s got a style, and that’s just great, even if it does nose a little young, almost as much so as the DL. Mouth: a few burnt notes in the attack, notes of distillation, cooked sugar and herbs… But it gets then cleaner, maltier and slightly smoky, with a bitterish edge. May lack a part of the DL’s vibrancy (as the pros say.) Finish: rather long, between candy sugar and this bitter side. Grapefruit skin. Comments: mixed feelings here. On the one hand, I find the honesty and the nakedness fantastic, it’s not botoxed whisky at all. On the other hand, I find it a little raw and bitter.     Bouvet Ladubay is regarded by many wine lovers as the finest expression of sparkling wine from the Loire Valley. The house was founded in 1851 by Etienne Bouvet, the son of a vigneron-sommelier who encouraged the young Bouvet in the wine trade. Recognizing the Loire's terroir to be extremely well-suited to the production of sparkling wines, he settled on the bank of the Loire River just outside the town of Saumur. Ms. Ladubay, Etienne’s accountant, soon became his wife, and the firm was christened “Bouvet-Ladubay”.

    After many years of ownership by Champagne Taittinger, Bouvet Ladubay is once again fully owned by the Monmousseau family who have continuously run the business since their purchase in 1932. Bouvet Ladubay employs precisely the same wine making process as Grand Marque Champagne, delivering French sophistication at an everyday price. The grapes for the Bouvet 'Blanc' methode champenoise are predominantly Chenin Blanc, a varietal which has been grown in the Loire Valley prior to the Roman conquest of France. Bouvet source their grapes from 120 properties around Saumur - spread over an area of 15 x 30 kilometres. The notion of using such a diversity of vineyard sites is to provide complexity to the base wines. Domaine Chandon in the Yarra Valley employ a similar process. These 120 micro climates each provide the wine maker with base material that when blended together will create the sensation of considerable complexity. The art of blending is critical and at Bouvet the third generation of blenders from the same family are in charge - in fact they have been creating the blend for the last 60 years. State of the art, temperature controlled stainless-steel fermentation tanks, computer-regulated 'gyropallets,' or riddling machines, highly advanced freezing and disgorging equipment and micro-wave cork heaters have brought Bouvet’s vinification facility to the technical forefront. The winery itself, however, remains an impressive monument to the region’s history with the wines spending their final maturation period within freestone cellars built by Saint Florent monks around 1040. These tunnels cover some 2.6 hectares with eight kilometres of subterranean cellars - storage capacity for some 7,000,000 bottles!

    Vedrenne distill the whole fruit of this subtropical citrus in a steam heated Charenteis still, which seems to work in capturing its pleasantly tart character. Bottled at a relatively low 15%, this is also surprisingly light and dry for a creme, offering a snappy burst of delightfully zesty pink grapefruit flavours with a mildly bitter, acidic finish. A fresh, Summery liqueur that's true to the fruit.

    Sweet, plum-like, brambly aromas with dark chocolate and earthy characters developing. Tightly-packed, plummy, cedary flavours on the palate combined with lovely ripe but firm tannins and length give this wine both elegance and power.     The wines of Moulin Touchais begin reaching their peak after twenty years, and many of the great vintages will take much longer. Vintages such as the 1953, 1959, 1964, 1969 are still maturing. The 1945, 1947 and 1949 have become classics. Moulin Touchais are the only winemakers in the world who give a century long guarantee on the longevity of their wines (subject to being kept under optimal cellar conditions). Bottles may show some sediment or deposit. One should understand this is due to the traditional filtration process, the main aim being to protect the colour, the bouquet and the depth of flavour of the wine.

    Brilliant pale gold colour with deeper tones of gold to the edges. The bouquet has surprising freshness to it featuring intense aromatics of pear, baked apple, apricot and orange marmalade followed by lighter honey notes (than the 2005 & 2007), a hint of quince and spice. Rich, gorgeously textured and possessing terrific purity of fruit, vibrant fresh acidity then chimes in to give some cut on the finish. Honey coated apricot flavours are to the fore with ripe pear, subtle quince, pineapple, marmalade and spice ensuing. Concludes with a long, layered aftertaste that has abundant freshness.

    The distillery is nestled on the fertile foothills of Mt. Uncle from where it claims its name from. The mountain was named after the Uncle of the founding pioneer John Atherton, very original! Yes there is also a Mt. Aunty beside him as well so the big guy doesn’t get lonely. Set in landscaped gardens on a Banana, Avocado and Macadamia plantation Mt. Uncle Distillery is as a pleasant visit upon your eyes as it is your taste buds.

    Apart from the juniper, this gin employs a full repertoire of native Australian botanicals (14 in total). The Lemon Scented gum (citriodora) makes a particularly strong contribution. Smelling this evoked memories of planting an avenue of saplings. The species has soft furry leaves prior to maturity. Rubbing the leaves between your fingers releases the oils along with a delightfully fresh lemon/eucalyptus aroma. Other notable ingredients include native Wattle Seed, Lilly Pilly, Lemon Myrtle, native ginger and Finger Limes.

    Tasting note: Crystal clear. Wow! Captivates from the get go with its individualistic bouquet - an alluring combination of lime juice, crushed citriodora leaf and subtle liquoricey notes - juniper takes back seat. A light entry builds to a concentrated, beautifully balanced and wonderfully fresh citriodora leaf and lime peel mid palate with hints of juniper and anise, finishing pleasantly peppery with excellent persistence. A highly idiosyncratic and genuinely Australian rendition that succeeds on all levels but is best left alone. 40% Alc./Vol.

You know I am passionate about Aussie gins (I’ve even created a lovely event for you to try some) so when I came across Botanic Australis gin at Top Shelf Boutique Drinks Festival today (expect a round-up later) I couldn’t wait to write about it! It was definitely my ‘Gin of the day’. Where to start? It’s craft-distilled in North Queensland at the Mt. Uncle Distillery (there is a Mt. Aunty too!), contains no fewer than 14 native botanicals, (including three types of myrtle, finger limes and lilly pilly), and is both distinctive and delicious. The gentleman serving me described it as “very herbaceous”. And so it is. A hint of juniper, a mouthful of warmth and then the botanicals play a fandango (look it up) in your mouth. Herb, grass, mint and citrus flavours, all at once. I also detected ginger and pepper after notes too. It was love at first taste and I swiftly purchased a bottle.     The Kyoya Shuzo distillery have taken their highly-regarded shochu distilling expertise and successfully stepped into the world of gin. One of two offerings, their 'Hinata' offers an abundance of flavour, made with generous amounts of juniper. To complement the piney flavour and give this gin its signature warmth, botanical extracts of kumquat, hebess citrus and hyuganatsu citrus from the sunny Miyazaki prefecture have been added.     The Barbancourt family is of French origin, hence the spelling 'Rhum' on the label. Their sugar cane is hand cut between November and June, then thrice milled, then fermented for about 72 hours with a proprietary yeast strain. Aging for four years in white Limousin oak, this is enjoyable on the rocks or will lend itself to cocktails. 40% Alc./Vol.

    Formally branded ARTEMIS, Anther's single-estate/seasonal limited edition is a take on the traditional Sloe style. Cherries are sourced from Simon Spreyton of Spreyton's orchards, a small family owned farm in Northern Tasmania. Their fruit is highly sought after in Asian markets where it commands a premium. Cherry season is between mid-December and mid-January, hence this release is annual. Production remains true to this distillery's garagiste approach - 200kg of cherries are stoned by hand (that's about 12,000 cherries!) then placed in holding tanks to macerate in gin. The vivid red liquid is then strained, diluted and a little sugar is added before bottling.

    Tasting note: [27% ABV/Vol. tasted] Slightly cloudy ruby red. Retains a piney, cool mint, lemony freshness through the cherry glace, blackcurrant and dried cranberry notes making for an enticing combination. Creamy cherry nectar and cranberry juice flavours over hints of black pepper and pine with late citrus and herbal tea notes lifting the finish. Nicely done; would love to see it at higher. Expect a light sediment.

    A cider apple eau-de-vie from Normandy in which juniper berries, ginger, vanilla, lemon, cardamom, cinnamon, rose petals and almonds have been macerated.

    Tasting note: Crystal clear with a silvery blush. Shows considerable viscosity. Appealing and atypical gin aromas of green apple peel and chamomile tea over subtle juniper, vanilla and cardamom. Several minutes of air contact sees the apply / cidery note emphasised along with fresher pine and woody juniper scents. Mildly viscous on entry followed by creamy-yet-dry flavours of pine needle, chamomile, mint chocolate and peppermint tea in the aftertaste. A delicious and novel expression that should pop in G&Ts. 42% Alc./Vol.

    Tuaca is from Northern Tuscany, and is made using aged brandy and local fruit essences. Vanilla and orange flavours dominate the blend which possesses a trademark smoothness that has made it highly accessible and extremely popular as a mixer. The origins of the drink are a little unclear, however the original recipe is said to date back to the Renaissance. One story has it that the liqueur was created for Lorenzo the Magnificent the then ruler of Florence, who was a patron to the great artists, Michelangelo and Botticelli. During World War II, American servicemen stationed in Livorno, Italy (a seaside resort city on Tuscany's Mediterranian Coast), discovered Tuaca. They searched for the brand upon their return to America, but were unable to find it until the late 1950's, when an astute importer brought Tuaca across the ocean. First a favorite in Northern California, Tuaca began gathering a following on the West Coast. Grass roots momentum fueled the brand's popularity, as well as locally created drinks such as the Tuaca Hot Apple Pie and the Tuaca Lemon Drop. Its one-of-a-kind flavour also led people to use it not only as a chilled, straight shooter, but also as a highly versatile mixer. The product is still crafted today by the Tuoni family in Livorno.

    Pour all ingredients into a shaker with ice, add a squeeze of lime. Shake and strain into a martini glass. Garnish with a lemon twist.

    Tuaca Pink Lemon Drop Martini

    45 ml. Tuaca Liqueur
    45 ml. Triple Sec
    30 ml. Cranberry Juice
    30 ml. Sweet & Sour
    1 Lemon Wedge, squeezed
    Mix ingredients, including the squeezed lemon wedge, in a shaker filled with ice. Shake vigorously and strain into a sugar-rimmed shot glass. Garnish with a cherry.

    Tuaca Hot Apple Pie

    200 - 300 ml. Warm Apple cider
    Pour all ingredients into a coffee mug. Garnish with whipped cream and a cinnamon stick.

    Black as night featuring an impenetrable core and a very deep dark red black hue. Potent ripe blackberry, liquorice and black cherry aromas overlay toasty vanillin oak, hints of dark chocolate, earth and spicy pepper. Bold and lavish the palate features a dynamic core of rich blackberry, liquorice and dark plum fruit which has a dense gutsy feel. Vanillin oak, traces of fennel, subtle scorched earth and spice sit comfortably beneath. Ripe chewy tannins provide ample structure. Magnificent concentration and power concluding with a very long opulently textured aftertaste.
