    Glenfarclas has recently upped the ante when it comes to paying a premium for their ultra matured whiskies. Yet the latest 40 year old expression remains a relative value in rare Scotch malt. It's not just the age statement that distinguishes this whisky. In a world where big maturation means bigger dollars and often even greater disappointment, this independent distillery delivers on balance, depth and richness with a sherry matured classic.

    Retasted May 2017: Deep burnished copper. Seductive opening wafts of date cake, walnut fudge and shortbread. Ten minutes exposure amplifies the dried fruit aspect adding orange zest, muscat-like sugars and rancio. Quite stunning length as this expands across the tongue. A slow motion saturation of orange cake, fig slice, aged muscat, rancio and late oak delivering cognac-like finesse and vitality in reserve. One expects it could easily take another decade. Remains a high point in the range. 46% Alc./Vol.

    First tasted 2011: Pours a deep copper / mahogany colour. The Sherry influenced aroma offers profound depth and includes scents of dried fruits, roasted nuts and cocoa along side flashes of confectionary and brown sugar that are not dissimilar to very old rum. The palate offers a perfect bitter/sweet juxtaposition delivering mouthfilling flavours of honeyed malt, dried fruit and rancio supported by fine, drying tannins and a spicy warmth. A faint sulphury note emerges on the finish. Concludes long and dry with cocoa and delicate spices persisting. Vibrant and exciting even at this extraordinary age. 95 points

    Other reviews... Glenfarclas has a proven track record for aging very well. I’ve enjoyed some amazing 25 and 30 year old expressions, in addition to some older vintage offerings. Does this new 40 year old follow suit? Absolutely! It’s complex and well-rounded, with great depth and no excessive oak. Lush, candied citrus (especially orange), old pot still rum, maple syrup, fig, roasted nuts, and polished leather, with hints of mocha, candied ginger, and tobacco. A bit oily in texture (which I find soothing) with good tannic grip on the finish. A classic, well-matured Glenfarclas — and a very good value for its age. (Editor's Choice)

    ...This is the rather fairly priced (when compared to other 40yo officials by other distillers) new wonder! Colour: dark amber with red hues. Nose: ultra-typical old sherried Glenfarclas, full of chocolate, raisins, prunes and then touches of mint, liquorice and varnish/pine resin. Also hints of blackcurrant buds, blackberry jam and finally a little coffee, smoked ham and toasted bread. Also a little walnut stain and maybe poppy seeds. In short, a classic. Mouth: excellent attack, with a flavourful oakiness (black pepper sauce alike) and various liqueur-filled chocolates. Chocolate-covered prunes. Goes on with fresh and clean notes of blood oranges, raspberry liqueur and just a few herbal notes that may hint at well-aged chartreuse. Hints of cough syrup. Finish: long, more on fruit skins and jams. Very pleasant fruity and resinous bitterness. Faint tannicity and liquorice in the aftertaste. Comments: I think it’s a good example of an old malt where an obvious oakiness brings more substance and complexity.     The grandfather in the Tesseron collection with the oldest component hitting 70 years.

    A blend of Grande Champagne cognacs distilled in the 1920s along with 5% from 1905 and 30% from 1906 with both Colombard and Folle Blanche in the mix. In terms of sheer finesse, effortless delivery and depth, Lot 29 is a high point in the Tesseron collection. The age of the material is on full show in a complex medley of dried fruits, honey, dark chocolate, liquorice, pipe tobacco and cigar box, rounded off in a super-fine, medium-long finish of hazelnut dark chocolate, saffron and feathery tannins. The alcohol is barely discernible. It may lack the power and length of its siblings, but this is easily Tesseron's most feminine and seamlessly integrated cognac - also one of the rarest. It's reported that only a few more years of production remain. Tasted from a 50ml sample. 40% Alc./Vol.

    ...Aged by three generations, they say. But is this a 1929 indeed? What's sure is that Lot N°53 had already been quite sublime two or three weeks ago (WF 90). And never mind those 40% ABV, which are really out of fashion and have become quite devalued. Colour: deep gold. Nose: it's probably a little difficult after the Valleins, we're actually closer to some very old calvados here, it rather whispers and sighs, being a little herbal beyond some ripe apples and peaches that, having said that, keep expressing themselves after so many years. Affabile and con tenerezza. Mouth: more action than I had thought, but we remain far from the others – and far from Tesseron Lot N°53. Some sweetness, syrups, Nescafé (I know), a little pancake sauce, mead… Finish: shortish, on herbal teas, chamomile, stewed peaches… Some candy sugar in the aftertaste. Comments: I know I tend to be rather kind towards very old spirits, and of course, this cognac from the roaring twenties remains as nostalgic as an old Bugatti, but I believe that here the engine has lost a little horsepower.     ..."This sits in the 'classic range' but is called 'Exception' because 'this is where Grande Champagne really soars'. Distilled in the 1920s and contains some colombard and folle blanche. 'This is pretty much what I consider my grandfather's Cognac, 1920s distilled but with a portion from a 1905 demi-john. For me this is a bit like a book, every time you go back to it it changes, something very special; the rancio is quite strong, but very different from the 1953; very special for us, and very rare to have it tasted, if at all. Very rare bottle, but this is our first visit to Australia so I really wanted to show it' so sayeth Melanie Tesseron. Bright golden with orange hue. Amazing aromatics; amazing. Incredible to inhale, no higher alcohol burn to turn a head away, but rich, sweet-tinged, spicy and fruity, even. There's the warmth of charred oak, wet logs, sandalwood and dark chocolate too. Feels so very smooth, lathed, slippery and yet insanely deep - triggers of fine woods, fresh honey, light rancio and a kind of liquid-mineral vein, firing in volleys within the contained frame of the Cognac. And while the texture remains supple, there's a long, slow burn of campfire-like embers to close; it glows with a definitive sweetness, and then ebbs away with freshening floral, toffee notes and an almost briny tang. The palate entry is supple, fruity sweet, and ripe; the midpalate stage highlights melded flavors of light caramel, marzipan, and nougat.     The is the whisky now replacing the Glenlivet 12 Year Old, and named in honour of the distillery's founder, George Smith (not to be confused with the 21 Year Old which shares its title). Expect a mild malt, typical of the house style, with other flavours imparted by first-fill American oak. 40% Alc./Vol.

    Tasting note: Bright brassy gold. Fragrant and fruity malt with a toasted marshmallow accent. Medium bodied, clean and nicely defined with delicate poached pear fruitiness. Aperitif styled towards the finish with suggestions of pepper, wood and marshmallow in the aftertaste. Improves on the 12 Year Old, demonstrating that age statements aren't everything! 40% Alc.Vol.

    Since new owners took over at Chateau Lafaurie-Peyraguey in 2014 it has undergone a complete renovation of the cellars and winemaking facilities, along with a decrease in yields to ensure only the best grapes go into their top label. Their renewed attention to detail is also evident in the new bottle design, introduced from the 2013 vintage and featuring a smart engraved logo. The 41 hectare vineyard is planted on clay over limestone soils, with a varietal mix of 93% Semillon, 6% Sauvignon Blanc and 1% Muscadelle.

    The 2015 Lafaurie-Peyraguey is pale lemon-gold in color with gorgeous candied citrus peel, orange marmalade and lemon tart notes with hints of musk perfume and honeycomb. The medium to full-bodied palate is rich and opulent with plenty of spicy notes coming through and a very long finish. Drink 2020 - 2046.

    The 2015 Lafaurie-Peyraguey was picked from September 14 to October 21 at 18hl/ha via four tries, and matured in 65% new French oak for 16 months. There is 131g/L residual sugar. It has a very pure, seductive bouquet of quince and honey; later, pineapple and saffron aromas gently unfold in the glass. I find this has a touch more nuance and complexity than the 2016. The beautifully balanced palate offers superb tension and notes of wild honey, crème brûlée, praline and a hint of ginger. The acidity is brilliantly judged, and there is a sense of swagger on the finish. You could actually commit infanticide and drink it now, although I would prefer to wait at least a decade. It will certainly have a long life and will give a lot of drinking pleasure. Tasted from an ex-château bottle sent to my home. Drink 2023-2060.

    Try to imagine the most beautiful exotic-fruit coulis, and then you have an idea of how this new style of Sauternes smells. Stunning concentration and purity of flavor. The knife-edge acidity electrifies the palate and turns the finish into a fireworks display of fruit and mineral freshness. You could drink this now, but its got enormous aging potential.

    This 36-hectare estate made a stunning Sauternes and the 2015 Château Lafaurie-Peyraguey (mostly Sémillon with 6% Sauvignon Blanc and a splash of Muscadelle) is loaded with notions of caramelized peach, orange marmalade, honey, and citrus oil. Full-bodied, incredibly opulent and rich, yet with good acidity, it’s a big, rich 2015 that has the concentration to keep for two decades or more. Tasted twice. This estate also utilizes Denis Dubourdieu as a consultant. Drink 2018 - 2038.

    2017 Ridge Vineyards Petite Sirah

    The oldest Petite Sirah vines on the Lytton Estate were originally planted in 1901 but it wasn't until 1972 that they made their first wine from the property. In 2002 bottling began with portions of the Petite Sirah made as a separate wine for a limited release offering, before that time it had nearly always been included as part of the Lytton Springs Zinfandel. In 2003 another was made for limited release and it wasn't until 2009, nearly 40 years later, that the wine was finally made available for national release!
    Now, along with all their other wines, it takes pride of place amongst any American offering and continues to set a high benchmark for quality wine production that all wineries should strive to achieve.

    Crushed red and purple wildflowers, blueberries, cassis and leaves, all intermingled. This has a superbly juicy array of fresh and succulent dark plums and blackberries and delivers it all in effortlessly attractive mode. 94% petite sirah and 6% zinfandel.

    The 2017 Petite Syrah Lytton Estate is another superb wine from Ridge's Lytton ranch. Inky dark fruit and expressive savory notes infuse this bombastic, heady Petite with tremendous nuance and surprising freshness. The 2017 is very young at this stage, but it clearly has the structure to age. My impression is that it will be even better once some of the baby fat melts away. Even today, though, the 2017 is superb.

    The inky colored 2017 Petite Sirah Lytton Estate (94% Petite Sirah and 6% Zinfandel) comes all from the Lytton Estate in the Dry Creek Valley. It has a powerful bouquet of spice plums, blackberries, scorched earth, and chocolate that gives way to a medium to full-bodied, ripe, opulent red with the depth and density to keep for 10-15 years. It has plenty of upfront baby fat, so give it a year or two of bottle age.

    Made in a single distillation with the botanicals individually distilled then blended together. Opening round of sniffing detects scents of woody, piney juniper, citrus peel, light coriander and trace anise combined with menthol freshness. Palate flavours are well integrated in a medium-bodied, creamy melting pot of juniper, lemon oregano, thyme and cardamon. Finish sees the oily citrus and pepper notes take charge. Ends lemon lozenge-like, long and perfectly balanced. Non chill filtered, so it may louche. 47.4% Alc./Vol.

    Other reviews... Single Shot or London Dry gins often have a little bite to them. The alcohol is a little more present, and coupled with bottling at 47.4%, this gin packs a punch. Its profile hits all the markers for a classic London Dry, coupled with the use of Australian botanicals, it's an excellent example of a traditional gin being made through the lens of an Australian distiller. Juniper penetrates the whole palate, with cardamon helping to bring out its fresh, green characteristics. The citrus acts more subtly than the MGC Dry Gin, helping to balance out the other botanicals, rather than being a predominant flavour. And, the use of honey instead of more conventional texture-creating botanicals is an excellent decision, not only rounding out the sharper alcohol notes, but giving a unique depth of flavour and richness. 96 points - Jess Clayfield, winecompanion.com.au

    Skye is a new addition to the range as of 2015, named after the beautiful island on which the distillery resides. It follows in the footsteps of an increasing number of distilleries now offering NAS (No Age Statement) bottlings. Matured in a combination of refill and toasted American oak, with a slightly higher proportion of the latter, by all reports, this is a toned down and highly accessible Talisker with a slightly sweet edge. 45.8% Alc./Vol.

    Other reviews... Gorgeously salivating with concentrated, sharp barley; the peat is now more muffled and then vanishes under the toffee. Has some sublime moments on the nose and delivery but eventually vanishes under the weight of the unforgiving caramel. 89 points - Jim Murray's Whisky Bible 2024

    ...The latest release from Talisker is an NAS bottling which contains whisky matured in toasted and refill American oak casks. According to the distiller, this is “An easy-drinking Talisker…more approachable, but still definitely Talisker.” Certainly approachable on the nose, with tangerines, honey, and milk chocolate, before ozone and peat smoke develop. Ginger and a hint of coal tar. Medium-bodied, with citrus fruit and increasingly hot spices, though never overwhelming. Spicy peat, white pepper, and aniseed in a nutty finish. 84 points - whiskyadvocate.com

    ...I have to say the first batches, around 2014 or 2015, did not quite convince me but as they say in rock and roll, you sometimes need tough love… Colour: light gold. Nose: it’s nice-ish, it’s just not very complex, although, could be that they improved the recipe, I’m not too sure. I find less of the straight coconut-and-vanilla elements this time, and more tin, concrete, menthol, camphor and green pepper. Mouth: the oak feels, there’s a drying bitterness, then salt and lemon peel. I find it tough, and god knows I love the 10yo, which shouldn’t be that older. The oak gets louder (sawdust). Finish: medium, gritty and drying. Needs polishing. The aftertaste is a little nicer, read more on smoked brine, but that’s a little late. Comments: duties done, can we have the new 31 Prima & Ultima now? Seriously, there are only two Taliskers which I don’t like a lot, Skye and Port Ruighe. All the others, from Storm to the oldest glories, I really like or love a lot. 77 points - whiskyfun.com

    From a family-run operation out of Le Marcha, a region north of Rome on Italy’s Adriatic coast, this moreish digestif is an infusion of aromatic herbs using a recipe dating back to the turn of the 20th century. The base spirit is said to be distilled from molasses and beetroot, complexed with hints of anise, saffron and violets plus an array of other less subtle spices. The style is softer, rounder and notably less bitter than other Amaros - having said that, there's nothing else lacking, and it's approachability means it's a perfect introduction to the category. We loved it straight over ice or with soda but it also works as a substitute for vermouth in drinks like Manhattans. 32% Alc./Vol.

    Other reviews... The brisk, invigorating scent of this amaro hovers between herbal and medicinal. On the palate, it skews sweeter, with rich caramel and hazelnut flavors and just enough bitterness and baking spice to keep things interesting. 93 points - Kara Newman - winenthusiast

    ...The aroma is sultry, if a touch medicinal and sharp, with notes of bitter orange peel, dried saffron, and violet, although a dark caramel sweetness helps to round some of those edges. The palate is full-bodied and cool with sugary orange slices, cinnamon, dried clove, red licorice, and a garden shop of florals, all brighter notes that nicely contrast the rich molasses and brown sugar at its core. This is definitely a gentle amari, with only a mild bitterness that really doesn’t arrive until the finish, and even then, it doesn’t stick around for long. It’s a great digestivo for those looking for a sweeter way to end the meal. As for cocktails, a little can go a long way with this one, so tread lightly when experimenting with your next Manhattan (a full ounce is probably overdoing it). Simple soda works beautifully and takes advantage of the built-in cola notes. Approachable enough for the novice amaro drinker and an easy recommendation for the home bar. - drinkhacker.com

Entry is soft, silky and lusciously textured with sweet pear juice and delicate cinnamon flavours. Very gently warming spirit.     At the age of 17, Don Julio Gonzalez opened his first tequila distillery in 1942 in Atotonilco el Alto in Jalisco. His name has been synonymous with luxury tequila ever since. The distillery hand selects every one of its blue agaves at the peak of their sweetness and ripeness—waiting up to 12 years before harvesting. Rich clay soils and larger planting spaces help to ensure maximum nutrition and sunlight, resulting a sweeter Agave for premium tequila production. The Agaves are then slowly cooked in masonry ovens at Don Julio's 'La Primavera' Distillery, where the juice that is obtained is subsequently double distilled. Clear in colour, the bouquet evokes Marzipan, baked citrus, brine, dill and green peppercorn aromas (almost like opening a fresh jar of Polish pickles). The semi sweet palate offers spicy, smokey roast pineapple and salty capsicum flavours . Warm, glycerous, silky mouthfeel. Finishes salty and clean with white pepper and citrus aftertaste.     Other reviews... This is how blanco Tequila should smell with unadorned, raw, but fetching peppery/dill-like aromas, scents of lanolin, palm oil, sand, minerals and slate.     Small batch bitters are surely making their mark on the cocktail scene, with cocktail enthusiasts and bartenders rediscovering the long lost recipes of the golden era and coming up with new signature flavours which help create the palate of the New Age Cocktail.

    While living in San Francisco in early 2007, Avery and Janet Glasser used high proof spirit and a variety of herbs, peels and spices to create what would be their prototype recipe for the Xocolatl Mole Bitters and catalyst for their new venture.

    The summer of 2010 marked a dramatic rebirth for Bittermens: winding down previous licensing agreements, striking new partnerships (i.e. The Bitter Truth) developing new products and most importantly, leasing a commercial kitchen. All Bittermens products are now being made by hand at their Brooklyn facility using primarily organic ingredients.

    After the rousing success of their ‘Elemakule Bitters, Bittermans have produced a new bitter that celebrates both the return of summer and their return to Boston after 14 years. It’s citrus, citrus, citrus and more citrus, supported with a heavy dose of chamomile. Try it in your favorite fizz, sour or bright tropical drink. It works extremely well with pisco and scotch as well.

    Dating back to 1660, Mount Gay is one of the oldest estates in the Caribbean and certainly one of the oldest in Barbados. It was established by Dr. William Gay, thought to be a cousin of John Gay who wrote 'The Beggars Opera'. Originally called 'Mount Gilboa', the estate is located in the northern parish of Saint Lucy and was renamed in 1801. There is evidence that there was distilling equipment in the region in 1663, so rum has probably been in production at Mt. Gay since. A tattered little deed confirms that rum production on the estate was well underway in 1703.

    Mount Gay's Extra Old Rum is the pride of the estates Master Blender. Using oak aged single distilled rum and special double distilled rum from the centuries old copper pot still, the rums are blended in order to maximise complexity and length. The recipient of several Gold and Grand Gold awards, Mount Gay Very Old is more refined, lighter and more elegant than its traditional 'heavy' Caribbean counterparts.     The 2015 Châteauneuf-du-Pape Cuvée de Mon Aïeul is another gorgeous wine from this family estate. As always it comes from three Grenache parcels: la Serres, La Crau and La Guigasse (there are 2 hectares in each parcel). In both 2015 and 2016 this cuvée wasn’t destemmed and was brought up mostly in tank, with 15-20% in demi-muids. The 2016 spent a huge 45 days on skins before being pressed to barrel. This beauty offers the fine, finesse-driven style of the vintage, yet has full-bodied depth and richness as well as sensational notes of framboise, crushed flowers, licorice, Christmas fruitcake and spice. It’s in the top handful of wines in the vintage and will benefit from short-term cellaring and have 20+ years of overall longevity.

Fleshy and expansive on the palate, offering concentrated raspberry, cherry and fruitcake flavors and a spicy suggestion of white pepper. Shows excellent focus and a seamless quality on the finish, which is framed by suave, slow-building tannins.

    Classic Cocktail: Singapore Sling
    The Singapore Sling was created at Raffles Hotel at the turn of the century by Hainanese-Chinese bartender, Mr. Ngiam Tong Boon. In the Hotel's museum, visitors may view the safe in which Mr. Ngiam locked away his precious recipe books, as well as the Sling recipe hastily jotted on a bar-chit in 1936 by a visitor to the Hotel who asked the waiter for it. Originally, the Singapore Sling was meant as a woman's drink, hence the attractive pink colour. Today, it is very definitely a drink enjoyed by all, without which any visit to Raffles Hotel is incomplete. The recipe varies from book to book. Robin Kelly O'Connor, the Bordeaux expert, faxed Dale DeGroff of Craft of the Cocktail while he was staying there in 1990 and reports he's never tasted a better version.

    Aquavit(or Akvavit), literally translated as “water of life”, is a traditional pale grape or grain spirit first distilled centuries ago in the pastoral regions of Northern Italy, France, Sweden, Iceland and Denmark. The best known brands are the Swedish O.P. Anderson , the Norweigian Gambol of Linie and the Danish Aarlborg. The drink, traditionally made with carraway and an arak spirit base was supposedly discovered by alchemists searching for the secret of eternal youth and beauty. The akvavit produced for the first two hundred years or so was not particularly attractive however - in fact, it was actually a bit cloudy and coarse. But ever since Aalborg began production in 1840, the golden, crystal-clear drops of this particular beverage have been a pleasure both to look at and to taste. To be at its best, Aquavit should be served in small aquavit glasses and chilled. We discovered this enthusiastic description of how Aquavit should be imbibed in an old Norweigan cook book:

    "There is solemnity in the ceremony of drinking aquavit. One lifts one's glass and holds it with loving patience, while joining with the others in a bacchanal hymn, ending on as high a note as one's voice will reach.Then one makes an all-inclusive sweep with eye and glass, drinks the aquavit in one gulp, finishes the song on an even higher "tra-la-la," and then bites into the herring previously placed on a piece of bread. The second glass is usually served only half filled but is drunk with the same profound ceremony and there is a promise in the song of a third glass."

    Aalborg Jubilæums Akvavit is a fine example of the spirit. It was created in 1946 to celebrate the centenary of AALBORG TAFFEL Akvavit. Golden in colour Aalborg Jubilæums Akvavit posesses simple, elegant aromas. The characteristic flavour of this clean and fruity akvavit is dill in combination with coriander with a trace of star aniseed and citrus. Like most Aquavit, it is perfect for fish - preferably oily fish fried in the pan. Duck and chicken with a light gravy also make a perfect match. Best served chilled. 40% Alc./Vol

    A blend of 96% Shiraz and 4% Cabernet Sauvignon this wine was matured for 18 months in 100% new American oak hogsheads. Deep, dark garnet colour. The nose is a tightly wrapped projection from the glass of dark-berried Barossa fruits coupled with a myriad of barrel ferment complexities. Thereafter, a burst of honey-cured jamon / pancetta aromatically thrust above, with a rich mix of generously basted roasted meats, peat & nutmeg anchored beneath.

    Upon sitting / air these characters descend, revealing beguiling elements of freshly turned volcanic earth and an innocent suggestion of oldgrowth forest floor underlay. On the palate the flavour pool primarily highlights Satsuma plum conserve alongside rhubarb / aniseed / fennel, with liqueur chocolate shyly awaiting mid-palate. Oak absorbed and hidden, not so the muscular tannins, power / extract. Nevertheless balanced, firm, polished.

    Protocol prevented me retasting this wine prior to its release date of 1 May, notwithstanding that no one will have read these words prior to the release of this book in late July. So this is my tasting note from the Rewards of Patience Tasting held in Sept. Colour little different to the 04; tighter, more compact than the 04, yet the fruit line is glossy and smooth, the tannins (and acidity) acting as the brake and giving tightness. These are a different pair, and it will be fascinating to watch their development.

    Dewar’s, for one reason or another has become extremely popular amongst American whisky imbibers. Perhaps it is their preference for lighter tasting beers that extends into their tastes for Scotch? The sixth best-selling scotch in the world, John Dewar was the first to bottle whisky with his own name on the label as a guarantee of quality (circa 1846.) Dewar was also the first to move away from stoneware jars and kegs, to begin selling the product in bottles. As this bought the cost of the product down significantly, the practise soon became the custom. After Dewar died in 1880, his two sons Thomas & John set off abroad, successfully signing up 27 new agencies greatly expanding the business.

    In 1898, the brothers returned to build the Aberfeldy distillery, which to this day remains the primary source of the Dewars blend. Perhaps Dewars most curious claim to fame, however, occurred in the same year when the company hired Thomas Edison to shoot the worlds first ever moving picture advertisement for a commercial product. It featured, not surprisingly, dancing kilted Scots.

    This blend consists of up to 40 different single malt and grain whiskies. Light in colour and body, elegant with aromas and flavours of new oak dominating over a sweet, heathery background. Clean, faintly spicy, slightly drying finish. Dewar’s is a distinctive though subtle drink. As an introduction to Scotch, its unassuming character makes it ideal.

    As a blender for over forty years, the warehouses are where Billy Walker really comes in to his own. Working with casks dating back to the 1970s, Billy has hand selected each barrel to be included in the 18 year old. It's created to 'showcase' the distillery's signature robust spirit "in harmony with heather and butterscotch notes. " As with the rest of the range, this was aged in American oak, Oloroso Sherry and Pedro Ximenez Sherry.

    Tasting note: Brilliant deep gold. Opening aromas of peppermint rock lollies followed by nuances of beeswax, dried fruits, pear and dark chocolate. Air contact finds orange spice cake to the fore. Fabulous purity. More settled and integrated than the younger bottlings, this just gets better and better with time in the glass. A delicious rush of fruity malt (dried pear, apple, vanilla) rounded off with crisp oak and orange zest at the finish. Outstanding balance. Easily the most accessible and elegant of the bunch, but if you like your whisky on the wild side, go with the cask strength or even the 12YO. This is for grown ups.     Dos Maderas, meaning ‘two woods’ references the unusual maturation of this rum. It was initially aged in the Caribbean for 5 years before a second stint in Spain. The final stage finishes the rum in x Pedro Ximénez Sherry casks.

    Tasting note: Brilliant amber-gold ochre dazzles in the glass. Moderate aromas of raisin and date cake, raw sugar, dark chocolate, caramel fudge and aged muscat wine, follows through to a silky, easy, graceful delivery; Flavours of liqueur muscat, raisins and honey finishing moderately viscous and medium-sweet with succulent dried fruit and caramel notes in the aftertaste.     Calle 23 is the brainchild of French Bio-chemist Sophie Decobecq. Her expertise in her studied field has lead her to experiment with various yeast strains, in turn creating a range of distinguishable tequilas. Agave is grown and produced in Zapotlanejo, the highlands of Jalisco where they are slowly cooked in stainless steel autoclaves for a period 7 hours. The cooked agave is then distilled in stainless steel pot stills to approximately 54%. Reposado and Anejo styles are aged for 8 and 16 months respectively in Jack Daniels and Heaven Hill ex-bourbon casks until being bottled with distillery well water. The tequila pours a very pale gold colour. Amidst the initial spices emerge scents of green olive, pine nut, candle wax and faint vegetal notes. The palate shows good concentration with a slightly oily mouthfeel and a spicy overlay. Baked capsicum, green olive and mild chile flavours are followed by fine, drying tannins and a subtle white pepper fade. A vibrant, well rounded, spicy anejo. 40% Alc./Vol.

    Other reviews... Pale golden color. Aromas of olive, flan, spiced nuts, cedar, and golden raisin follow through on a silky entry to a dryish medium-to-full body with excellent liveliness, depth and balance. Finishes with a warming fade of milk chocolate, nuts, and minerals.

    Unlike the Knob Creek bourbons (which are 9 years old), there’s no age statement with this new rye, which tastes relatively younger. It’s bracing, vibrant, and spicy. (The rye contribution is unmistakable.) Cinnamon spice and crisp mint dominate, with charcoal, botanicals, ginger, nutmeg, honeyed fruit, vanilla, and caramel. Warming spice finish.     Simon and Brogan Carr join a small but growing number of inner city suburban distillers servicing Melbourne's Richmond neighborhood. From their bar / distillery set up in an old mechanics workshop, they've created three signature gins: A juniper-forward dry style dubbed Everyday Salvation, a slightly more contemporary style called Evening Light, and a navy strength edition called 'Royal Blood'. Brogan Carr is qualified as a medical laboratory scientist, and says she didn‘t expect to become a distiller. ”I love the precision of science and investigative nature, but working in labs wasn’t enough”. She retrained as a distiller, finishing a Master of Science Brewing & Distilling at Heriot Watt University in Edinburgh, Scotland.

    Brogan’s three gins are designed to appeal to different gin drinkers. Evening Light is a fresh and fruity style, made with mangos and raspberries and organic white grapefruit juice alongside more traditional botanicals. Brogan says it's her 'easy drinker'.

    Tasting note: Creamy scents of cardamom, orris root and chamomile(?) with hints of lemon peel over background juniper and pepper. Light to medium bodied with a soft entry and attractive flavours of grapefruit, delicate juniper and white pepper. Breezy, fresh and warming. Ends satisfyingly crisp, minerally and dry. 42% Alc./Vol.

    This is the fifth and most anticipated flavour-infused expression from Ciroc. Its distinctive blend of pineapple allows for a great range of cocktail creativity, whether mixed with lemon-lime soda, orange juice, or pineapple juice.

    Whereas most vodkas are produced from common starches such as wheat or potatoes, Ciroc is made from Ugni Blanc grapes left on the vine for extended ripening. The fruit is sourced from Gaillac in the Southwest of France, (nestled between Roussillon and the Pyrenees in the South and the Gorges of the Tarn in the East). After harvesting, the juice is pressed, cold fermented then distilled five times - the fifth time using specially-designed, traditional copper pot-stills. 35% Alc./Vol.

    “Smooth, mellow, irresistible” - Baileys is a natural marriage of fresh Irish cream, Irish Whiskey and other spirits. Appearing first in the 1970's it quickly became popular with 'experimental drinkers' due to its mild alcohol level (17% alc/vol). Many imitations followed suit, capitolising on the brands successful formula which prevented the cream curdling with the alcohol.

    Enjoy Baileys straight, on the rocks with ice-cream or in “Irish coffee”. Avoid using Baileys with acidic or citrus drinks and mixers – the cream component of Baileys reacts badly with these. The technical research behind Baileys has provided the product with an acceptable shelf life, however, refrigeration after opening is recommended as is shaking the bottle thoroughly before serving.

    Made from a combination of malts from Loch Lomond's traditional swan-neck pot still and unique straight-neck pot still, this peated expression was matured in re-charred American oak and refill Bourbon casks. The distillery's self-described "soft-smoke-style" still offers a decent hit - on the nose, chilie peppers, chimney soot and lanolin gradually give way to baked orchard fruits. Medium-peat on the palate, with just enough juicy fruit to balance. Creamy, oily and nicely rounded. The aftertaste is moderate, mildly ashy with vanilla, pepper and smoked chocolate. For anyone looking to get acquainted with smoked styles, start here. 46% Alc./Vol. Non-chill filtered.

    Paul John's cask strength variations are sold under his "Select Cask" label. The quality is fabulous - so are the prices. We recommend tasting both straight before adding a tiny amount of water (literally a few drops) in order to get the most out of them. The Classic is a little prickly in the opening sniffs including notes of pepper, honey and sponge cake and a mildly acidic volatility; five minutes softens the bouquet considerably and draws out a superb fruity core of peach, light vanilla and dried coconut. Intense, peppery entry; coats the tongue with a slow-motion wave of spicy, semi-sweet, bristling malt. Finish is mildly bittersweet with warming spirit heat, plus vanilla oak input and hints of biscotti; late fruitiness and tingly peppers carrying the aftertaste. Non chill filtered. 55.2.% Alc./vol.

    ...Sticky, spiced-coconut desserts, grapefruit, clove, allspice, and crispy bacon on the nose of this NAS whisky matured in bourbon casks. Sharp with lime, grapefruit, and lemon zest that settle down to green fruits, Jell-O, and dry spices. Do dilute, as water lets the spices leap from the glass, strips down the acidic attack, and accentuates the fresh apple and cinnamon. It doesn’t need much water, but it’s eminently better with a dash. 84 points

    Like adding vinegar to temper the sweetness and round out the flavour of certain dishes, adding bitters to cocktails provides balance and complexity. But unlike Peychaud’s and Angostura brands, Orange Bitters has been almost impossible to obtain for decades. Now a renewed interest in classic cocktails has brought it out of retirement. The primary ingredient in Fee Bros. Orange Bitter is obtained from the skins of oranges grown in the West Indies. There are many recipes that call for Orange Bitters, however, we suggest you start by trying a dash in your next Martini.

    Oak barrels which aged Old Tom Gin (a traditional, less dry style of gin), take on a second life at Fee Brothers.  They now age Orange Bitters, mingling it with gin-soaked oak. This is a limited edition. 9% Alc./Vol.

    Tequila Fortaleza (meaning “Fortitude”) is the same Tequila released under the “Los Abuelos” label, produced at the distillery of the same name - “Fortaleza” is the export label that developed due to a trademark conflict with a Rum with the name "Abuelos" that was already being distributed in the USA.

    Located in the town of Tequila, Jalisco, Los Abuelos are a quality orientated producer rooted in traditions established centuries ago. Their tequilas are produced from estate grown, 100% stone milled agave. A brick oven with meter thick walls cooks the agave for thirty six hours. The crushed agave is then washed with mountain water from the Volcan de Tequila to separate the pulp from the woody fibres to create the 'mosto'. The woody fibres of the agave are removed at this time, and taken to the fields to use as compost. The agave mosto is then naturally fermented for five days in small wood vats, and then double distilled using small, labor-intensive copper pot stills.

    The distinctive bottles are hand-blown in Tonala, Jalisco by artisan glassmakers and the bottle tops, artisan designed and hand made. They represent the harvested heart of the agave.

    Tasting note: Pale gold with a faint pale green blush. Soft and subdued aroma offers a beeswax opening note followed by hints of crushed eucalypt adding freshness. It takes at least two to three minutes before more substantial notes of grilled capsicum, wet cedar and toasted pine nuts are released. Further exposure really builds the aroma big time as beeswax, menthol and vanillan oak enter the picture. A water like entry builds into a concentrated, mid-weight profile featuring butter menthol lozenge, beeswax and a peppery burst. Finish is clean, dry and perfectly balanced with gentle spices persisting. Aftertaste is prolonged with butter menthol lozenge, beeswax, and hints of vanilla followed by a fresh and delicately peppery fade. Great stuff. 40% Alc./Vol.

    Hamish Nugent and Rachel Reed draw inspiration from their natural surroundings in the Alpine region in North East Victoria - hence, their first limited release gin includes botanicals such as mountain pepper berry, lemon myrtle, eucalyptus and finger lime as well as Shiso, apple, juniper and tea. The distillery is situated in the centre of Bright, replete with a bar and a coffee roastery.

    Tasting note: Batch REM054. Leaps out of the glass with aromas of crushed eucalypt, lemon peel, white pepper and bright piney, sappy notes - one of the most powerful gin bouquets of the year. A viscous, silk-textured delivery, building with flavours of pine, lemon verbena and pepper. Finishes poised, delicate and long with hints of herbal tea, eucalyptus and tea tree leaf in the aftertaste. Very expressive, with the native floras deftly balanced along side traditional botanical notes. 44% Alc./Vol. ​

    Tasting note: Matured for 3 years in Moscatel and Oloroso casks. The pale gold amber colour has some small particles floating in it. Opening sniffs are mildly prickly, waxy and furniture polish-like. Second phase releases vanilla wafer, caramel and sweet cereal notes in a bouquet that's akin to youthful grain spirit with an Irish softness. The palate follows suit with a straightforward vanilla, caramel burst. Youthful spiciness. The finish is a little hollow and detracts from the overall balance. 50% Alc./Vol.

    Burgundy is a place full of personalities at the high end of the passion scale, especially when it comes to food and drink - perhaps none more so than a Belgian who began maturing Scotch Whisky in the heart of the famous wine region. The fellow in question is Michel Couvreur. He had already established a business in the early 1950s in Scotland selling Burgundy wines when in 1978, French friends suggested that he add a top quality Scotch to his portfolio. So began Couvreur’s interest in whisky from which he developed his ultra-traditionalist perspective on oak. He maintains (more radically than others in the industry) that 90% of a whisky’s quality comes from the cask, and only 10% comes from the distillation process. In the 1970s, American bourbon casks gradually replaced port and sherry casks for the maturation of Scotch, a great tragedy, according to Couvreur, as it changed the essence of a product that had European barrels at its core. In something of a personal crusade, Couvreur settled in Bouze-les-Beaune (close to the Burgundian town of Beaune, France), where he opened a customs bonded cellar and began selecting his own Spanish sherry casks (Pedro Ximenez and Palomino). Some readers will be aware, since the 1970's, sherry ceased to be shipped to UK in wood. Whisky producers have now to go and select their casks at sherry bodegas, paying a premium on top of transport costs. It's partly for this reason that Couvreur's cellar is located in Burgundy, half-way between Scotland and Andalusia, with straight motorways from Jerez de la Frontera to Beaune. Courveur's "Scotch" starts out in Scotland as bulk a.k.a.“clearach” (a high proof distillate) which is transferred to his humid cellars to be aged in small sherry casks that have been impregnated with 25 years aging via traditional soleras. Although Couvreur passed away in 2013, his son-in-law Cyril Deschamps and his Cellar Master Jean-Arnaud Frantzen, with the invaluable help of Michel’s devoted wife Marthe and his daughter Alexandra, continue to follow to the letter the original philosophy of the house. Constantly on the search for novel casks (they’ve recently started working with Jura Vin Jaune), total production is about 50,000 bottles annually. All required dilutions are accomplished with bottled water from Scotland and every bottle is hand-corked, hand-waxed and hand-labelled. These artisan whiskies are invariably interesting, sometimes quirky and occasionally magical.

    Marrying an organic un-wooded Chardonnay with native Lemon myrtle, Desert limes, Finger limes and Native Thyme with elderflower, lemongrass, grapefruit and chamomile, this semi-dry vermouth at 80gms sugar per litre (43% less than category standard) lives up to its name. Pair it with grapefruit, pineapple, lemon, lime, rosemary or basil.

    Earlier batch tasted [Semillon based]... Brilliant bright / gold. Moscato-like with moderate aromas enlivened by hints of grapefruit, thyme and sage. Follows through with medium dry, breezy flavours of ripe grapefruit and dried citrus peel and a refreshing, delicately bitter herb and grapefruit aftertaste. 16.5% Alc./Vol. 91 points
