Simon and Brogan Carr join a small but growing number of inner city suburban distillers servicing Melbourne's Richmond neighborhood. From their bar / distillery set up in an old mechanics workshop, they've created three signature gins: A juniper-forward dry style dubbed Everyday Salvation, a slightly more contemporary style called Evening Light, and a navy strength edition called 'Royal Blood'. Brogan Carr is qualified as a medical laboratory scientist, and says she didn‘t expect to become a distiller. ”I love the precision of science and investigative nature, but working in labs wasn’t enough”. She retrained as a distiller, finishing a Master of Science Brewing & Distilling at Heriot Watt University in Edinburgh, Scotland. Brogan’s three gins are designed to appeal to different gin drinkers. Evening Light is a fresh and fruity style, made with mangos and raspberries and organic white grapefruit juice alongside more traditional botanicals. Brogan says it's her 'easy drinker'. Tasting note: Creamy scents of cardamom, orris root and chamomile(?) with hints of lemon peel over background juniper and pepper. Light to medium bodied with a soft entry and attractive flavours of grapefruit, delicate juniper and white pepper. Breezy, fresh and warming. Ends satisfyingly crisp, minerally and dry. 42% Alc./Vol.
