Made in a single distillation with the botanicals individually distilled then blended together. Opening round of sniffing detects scents of woody, piney juniper, citrus peel, light coriander and trace anise combined with menthol freshness. Palate flavours are well integrated in a medium-bodied, creamy melting pot of juniper, lemon oregano, thyme and cardamon. Finish sees the oily citrus and pepper notes take charge. Ends lemon lozenge-like, long and perfectly balanced. Non chill filtered, so it may louche. 47.4% Alc./Vol.

Other reviews... Single Shot or London Dry gins often have a little bite to them. The alcohol is a little more present, and coupled with bottling at 47.4%, this gin packs a punch. Its profile hits all the markers for a classic London Dry, coupled with the use of Australian botanicals, it's an excellent example of a traditional gin being made through the lens of an Australian distiller. Juniper penetrates the whole palate, with cardamon helping to bring out its fresh, green characteristics. The citrus acts more subtly than the MGC Dry Gin, helping to balance out the other botanicals, rather than being a predominant flavour. And, the use of honey instead of more conventional texture-creating botanicals is an excellent decision, not only rounding out the sharper alcohol notes, but giving a unique depth of flavour and richness. 96 points - Jess Clayfield, winecompanion.com.au
