    German born Timo Mayer, along with partner Rhonda Ferguson established Mayer in 1999, on the slopes of Mt Toolebewong, between Healesville & Woori Yallock. They produce a small range of hand crafted, single vineyard wines, believing that wines are made in the vineyard and not the winery. All wines are unfined and unfiltered to show the true expression of the vineyard. Vines are often close-planted, winemaking frequently utilises a generous use of whole bunch but most impressive is Timo's cheerful, amusing nature.

    Silky, satiny, super perfumed. Charisma plus. Vibrant red cherry, touches of maraschino, sweet spice, cola, cranberry, sarsaparilla going on here; kinda explosive, then, in the same breath, this feels tempered with lacy tannins and chalky pucker that extends through the lively squirt of blood orange tang. This has great mojo. It’s not just fun, it pushes an agenda about fine wine in Australia from the variety with its multi-layered vibe. Pleasure zone stuff. Drink 2025 - 2035.

    Amabuki Shuzo, based in Saga Prefecture, is known for its innovative use of flower yeasts and focus on expressive, terroir-driven sake. This Junmai Daiginjo is made using the ancient Omachi rice variety and brewed in the traditional kimoto method, bringing depth and structure to its refined profile. Amabuki’s approach bridges heritage and experimentation, resulting in sake with distinctive character and textural nuance.

    Tasting Note: Pale lemon colour in the glass with a crystalline clarity. Aromatically the nose is immediately engaging, offering pleasing notes of white nougat, green melon, and papaya with a delicate creaminess. The palate leans towards the green fruit spectrum—green melon and edamame—though hints of yellow orchard fruit emerge with warmth. Excellent concentration, finishing long and clean in a dry, pure, and refined style. A versatile sake, well-suited to seafood and vegetable dishes or simply enjoyed on its own towards the end of the night.

    Named after the fossilised gryphées (oyster-like molluscs) embedded in the vineyard's calcaire à gryphées limestone soils, this Trousseau is drawn from just 0.25 ha of vines in the lieux-dits of Côte de Feule and Fonteneille, planted at 390–400 metres elevation. Due to the naturally riper stems and tighter bunches of Trousseau, the wine is fermented entirely as whole clusters in tronconic wooden vats. It is then aged in used oak barrels and bottled without filtration. In 2022, only a single Trousseau cuvée was produced due to small yields; in more generous vintages, the parcels are bottled separately.

    There’s something quietly thrilling about the wines of Cellier Saint Benoit. Based in Arbois Pupillin, Benjamin Benoit’s domaine is still young by any standard, yet the clarity and character of his wines place them firmly among the Jura’s most compelling new voices. After time spent with Charles Lachaux, Amélie Berthaut, and Nicolas Faure in Burgundy, Benoit returned home earlier than planned in 2019 following the sudden passing of his father. That year marked his first vintage, and by 2020, he had full control of the domaine — bringing with him a clear and focused vision rooted in both tradition and precision.

    Rather than blending parcels, Benoit vinifies and bottles his lieux-dits separately, giving each site its own voice. The 6.25 hectares of vines — planted to Chardonnay, Savagnin, Ploussard, Trousseau, and Pinot Noir — are farmed with care, and the cellar work is firmly low-intervention. Inspired by the techniques of Pierre Overnoy, Benoit works with minimal inputs: careful destemming of Ploussard by hand, whole-cluster ferments for Trousseau and Pinot Noir, gentle pressing of whole bunches for the whites, and aging in neutral oak. The use of sulphur is minimal, and in some cuvées, absent altogether. The result is a suite of wines that feel clear-eyed and precise, yet still vibrant and soulful — wines that make you stop and pay attention.

    They’re not inexpensive, but they are important. As the Jura continues to evolve and mature, Benoit’s wines feel like a glimpse of where things are headed, a signpost for the future of Arbois Pupillin, honouring the region’s heritage but elevated by a new generation’s clarity of purpose.

    Sourced from 0.5 ha of Pinot Noir planted on the fossil-rich calcaire à gryphées soils of the Courbes Raies vineyard in Pupillin. The site is west-facing, and the vines—planted by Benjamin Benoit’s father and grandfather—range from the mid-1980s back to approximately 1959. The fruit is vinified as 100% whole bunches in large Grenier tronconic vats, then aged in a mix of 228-litre barrels and 600-litre demi-muids. The site, soils, and older vine material contribute to a structured and mineral style of Jura Pinot Noir, shaped by Burgundian influences in both viticulture and élevage.

    This Chardonnay is grown on Triassic marl soils in the south of Pupillin at 335 metres altitude, on a plateau above Les Charots. The 0.5 ha vineyard is home to 65–70-year-old vines planted by Benjamin’s grandfather. La Marcette ripens earlier than neighbouring sites due to its exposure and elevation, producing concentrated fruit with lower yields. The wine is whole cluster pressed and aged in neutral oak barrels. The resulting expression is broad-shouldered yet structured, shaped by its sunny disposition and deep-rooted vine age.

    From a 0.28 ha parcel of northwest-facing vines on steep (30%) slopes of classic blue marl at higher elevation than Chambines. The 70-year-old Savagnin vines were planted by previous generations and are now farmed for a topped-up, non-oxidative (ouillé) style. The wine was whole cluster pressed, fermented, and aged on lees in a single old 228-litre barrel, then bottled unfiltered. The blue marl soils contribute intensity and salinity, resulting in a complex, site-expressive wine.

    Sourced from Savagnin vines primarily in Les Chambines, on marl soils typical of the Jura. The wine was a barrel selection with preference given to the most restrained and tightly wound example, considered best suited for extended sous voile maturation. Aged for over nine years in a single cask stored in the domaine’s custom attic (rather than humid cellars), allowing the veil of flor to develop under more oxidative and dynamic conditions. This longer aging exceeds the legal minimum of six years, encouraging greater salinity and tertiary development. Bottled unfiltered from a single cask.

    The cool and reticent nose reluctantly but clearly confirms that this could be from nowhere else but Chablis, particularly with the prominent quinine influence on the aromas of lemon confit. The dense, palate soaking and powerful yet refined flavors deliver stunningly good length on the super-sleek and impeccably well-balanced finale. This is terrific and it's not often that Séchet can best a fine Montée de Tonnerre but in 2022, it appears to have done so. Note that at least moderate patience will be necessary and overall, if you can find it, buy it. Drink through 2030+.

    The 2022 Chablis Les Séchets 1er Cru has a potent lime, lemon zest and oyster shell scented bouquet that has plenty of vigor. The palate is very well balanced with a sapid entry, and fine weight. It is the most compact of Billaud's Premier Crus and will therefore require more time in bottle. It will be worth the wait though. Drink 2027-2045.

    A special bottling from vines more than 90 years old: a vineyard marked by a high proportion of stones and old rootstock. Although it ages as well as Montée de Tonnerre, Billaud's Séchet will finish in a different place. Matured only in stainless steel for 18 months on lees with one racking, it's really very classy and long. A great combination of pear fruit, touch of sunny peach on the palate with abundant minerality to finish. Drink 2025 - 2031.

    Brilliant water like colour with a faint greenish tinge around the outskirts. Lifted pear, lime and Granny smith apple scents are trailed by some flinty mineral notes. Vibrant pear, lime and green apple fruits are delivered with plenty of intensity underscored by zingy acidity. Mandarin and flinty mineral elements linger through the long tangy finish.

    Totally opaque black dark red colour with a dark red hue. Elevated blackcurrant aromas mix with some liquorice, earth, vanillin cedar and spice notes. Rich red to black currant fruits flood the mid weighted palate, their well fleshed feel counterpointed by a rustic tannin structure. Some red cherry, earth and spicy dried herb elements ensue. Bright acidity with the tannins extending their grip right through the long finish.

Juicy dark raspberry, cherry and red liquorice fruits carry ample power across a palate which is light on its feet. Vanillin spice, delicate earth and pepper elements lie underneath. Sturdy yet quite polished tannins finishing fresh, succulent and peppery.

The modern era began with the Fratin family, who replanted the vineyard with a vision of recreating a slice of Veneto in Australia. A pivotal moment came with the arrival of Trevor Mast in the 1980s, whose foresight in cool climate Shiraz helped elevate the estate to international acclaim. In 2002, the Rathbone family acquired Mount Langi Ghiran, expanding their premium wine portfolio.     An amply powered yet refined Barossa Shiraz that finishes long, savoury and peppery.

    Bete Noir is a blend of old-vine Shiraz from the Barossa and Eden valleys, specifically, six different parcels from the sub-regions of Moppa, High Eden, Light Pass and the Eastern Foothills. Soils vary across the sites, from thin, skeletal sandy loams in the loftier plots to the classic sand-over-red-clay in the Moppa and Light Pass regions. Vineyard age ranges between 25 and 110 years, with “45 years being a fair average across the blend”, Schell reckons.
    The proportion of whole clusters varied from “everything to nothing” depending on the vineyard, with roughly 35% in the final blend. Maturation occurred in 35% new French barrels―ranging in capacity from 225-litre to 4500-litre―for 20 months before fining without filtration.
    Impenetrable pitch black heart with a deep dark red black tinged hue. Soaring out of the glass are liquorice, dark plum, black cherry and blueberry scents complimented by smoky vanillin cedar, fennel, dried clove and peppered dried meat notes. Rich and succulently fruited, the medium to full bodied palate is layered with black cherry and liquorice flavours which are framed by a sturdy yet nicely integrated tannin structure. Lending complexity across the back half are dark plum, fennel, subtlety smoked vanillin cedar and peppered meat elements. Amply powered yet refined in its feel it finishes long, savoury and peppery.

    Barrel fermented in new French oak barriques with regular lees stirring and matured in the same barrels for a period of 11 months. Brilliant pale straw colour with a greenish tint to the edges and a watery hue. Engulfing the olfactory senses are intense aromas of white peach, pear and nectarine which meld into a dried honey, subtle citrusy crème brulee, delicate cashew and gun flint infused back drop. Rich and layered yet remarkably fresh, enveloping the palate are mouth filling white peach, pear, nectarine and dried honey flavours. Lending further complexity are delicate biscuity oak, almond, citrus, crème brulee and flint elements. Beautifully shaped and refined, it boasts superb power and volume finishing long, texturally full and energetic.

    If you were sitting quietly in a corner, contemplating the vicissitudes of life, and a glass of this exceptional chardonnay came your way, well, all would be very well indeed. And you’d perk up. It’s a wine that tends to be scintillating in youth, driven by all manner of citrus flavours – lemon, pink grapefruit with a dash of lime but also a mille-feuille of leesy lusciousness, oak spices and a moreish savouriness. It seems powerful and explosive with its acidity, drive and energy yet manages to remain classy and complex. Drink by 2032.

    The 2022 season was warm and low-yielding, particularly for Chardonnay, and many of the wines produced in the region this season can be typified by their nuttiness and a distinct chamomile tea/white flower character. Here, the 2022 Art Series Chardonnay is showing both of those characters, neatly wedged into the authoritative profile of Leeuwin Art Series Chardonnay. Today, for perhaps the first time ever in seeing these wines on release, I note that the oak is a key player in the drinking experience—as ever, seamlessly matched to the fruit and an important part of the wine's style and evident here today. There are toasted nuts, yellow fruits, exotic spices and an open fan of acidity/phenolics through the finish. This 2022 will prove to be a powerful and statuesque player in the wider footprint of Art Series Chardonnays. It's one to collect, but for drinking in the short/immediate term, decanting is recommended. Sealed under screw cap.  Drink 2030-2047.

Many tarns are surrounded by ancient peat. It is this peat influence that shapes the smoky, sweet and earthy character of Tomintoul Tarn.     That Boutique-y Whisky Company has been in the indie bottling biz for over a decade, and it's safe to say, they know their stuff when it comes to stalking a prize whisky. Besides a swathe of limited edition single malts and grains that come in 500ml bottles, they're also offering a "core" range (a chance to enjoy some of these treasures on repeat) and in 700ml size bottles.

    This edition is a peated malt from the Scottish Highlands, matured for 18 years in a host of bourbon, oloroso and Pedro Ximénez casks and bottled at a generous 45.8% ABV without chill filtration. Awarded a Gold Medal at the 2024 International Spirits Challenge.

    Notes from the bottlers... Nose: Big bold notes of oak and robust, meaty peat are joined by waves of peach and apricot, grilled pineapple, and toasted vanilla.     Single malt Scotch drinkers will be familiar with this increasingly popular finishing that adds notes of dates, honey and chocolate to whisky: Pedro Ximenez (aka sweet sherry) is now catching on in America, and Whisky Hunt have landed a very nice example. Blended from 8-10 year old sourced whiskeys (both corn heavy), the combination spent its last ten months in an x-sherry barrel. It still tastes like Bourbon, but not quite as you know it. For a start, the nose is thicker, deeper and more layered than most bourbons - closer to a single malt - with dates and caramel over fresher mandarine peel and orange spice cake. The palate mirrors the aromas in a viscous entry; dates and light honey build, followed by drier notes of cinnamon and white pepper. Although the finish is less pronounced, it’s also more nuanced as cocoa and a little bitter peel enter to cap things off. This is well structured - the sherry adding depth and just a little extra sweetness, while the woody and spicy notes you expect from American whiskey remain intact. 156 bottles have been imported at 49.6% Alc./Vol. Tasted from a 30ml sample.

    Notes from the importers... Nose: Aromas of apple, cacao nibs and maple syrup offer a sweet and balanced nose.     It’s no big secret that the prices of Burgundy have skyrocketed in recent years and whilst the wines from Chablis haven’t risen quite as steeply it’s becoming increasingly difficult to even locate sub $50 Petit Chablis. So a $60 Premier Cru Chablis that delivers exceptional quality is indeed a rare find these days.
    Francis Boudin is the third-generation vigneron at Chantemerle and the estate firmly falls in the traditional mould - he despises oak. As the story goes, his grandfather was a cooper and with so much exposure to oak during his formative years he banished it from the family cellars opting for concrete and steel alone.
    Old vine material is the key to the estate’s success. While many in the region during the 1970's were re-planting vineyards to high-yielding material the Boudins were planting with naturally low-yielding vines. Along with careful vineyard management, an informed but gentle touch in the winery and judicious lees work to bring out flesh and texture, Boudin produces supple wines, that speak of place clearly layered with Chablis' prized minerality.

    A beautifully shaped and intensely flavoured Premier Cru Chablis that delivers phenomenal value.

    A blend of 96/1/2/1 per cent shiraz/viognier/marsanne/mataro. Fermented with whole berries and matured in barriques (25 per cent new). A brilliant crimson red. In fact, a brilliant Dry Red Wine No. 2. There's a little reduction when first poured but it doesn't take long for this to reveal a complex amalgam of red and black fruits, iodine, graphite and melted, dark licorice. Fleshier and more refined and seductive than last year's version. Incredibly svelte tannins. Supremely balanced. I reckon Yarra Yering's founder, Dr Bailey Carrodus, would be chuffed with this.     The vines date back to 1969, though there were also plantings in the 1980s and 1990s. It’s a blend of 96% Shiraz, 2% Marsanne, 1.5% Mataro and 0.5% Viognier. I’m going to pull the winemaking specs direct from the Yarra Yering website, because they’re interesting. “Fruit was hand-picked, transferred across a sorting table and destemmed directly to the Yarra Yering half-tonne open-fermenters. As much whole berry as possible is retained to encourage perfume. A small portion of fermenters had frozen Viognier skins; tiny yields this year, added to the bottom. A few more enjoy the inclusion of Marsanne bunches. The wine was aged for 15 months in French oak barriques, 25% new.”
    This wine takes cool and warm climate shiraz styles and straddles them perfectly. It’s a wine that will please shiraz lovers far and wide. It’s spicy, peppery and fractionally reductive but then it’s also a swoon of cherry plum, peppercorn and red licorice fruit flavour. Some rivers are bright and fast; others are deep and slow. This wine is both. Logs of cedarwood are dipped, deftly, into the flow, in support, in complement. It has to be said that the balance, here, is masterful. Drink 2025 - 2035+.

This is a glorious shiraz, bursting with life and what will surely be a 40-year life span, so perfectly framed and balanced are its black cherry and blackberry fruit duo, tannins obediently bending the knee to the fruit.     Underhill is a single block of shiraz on the western side of this heralded Yarra Valley estate. This block was planted in 1973. I’ve slowly been working my way through a fantastic vertical tasting of Underhill Shiraz (1989-2021) held at the estate in 2023, with notes going – here. This 2022 release was not at that tasting; I have it on the bench in front of me now.
    This wine is more complex than your average bear. It clearly has some stalk influence, and it clearly presents an array of smoky, woodsy, peppery characters, as well as flashes of mescal and Campari-like herb notes. The fruit is ripe, deep, fresh and meaty at once, with ultra-long chains of grainy, smoky tannin drawing through. We’re talking red berried fruits with a darkness in their centre. This ripe, juicy Yarra Valley Shiraz has its savoury side in a firm embrace. It’s quite herbal, quite smoky, and quite tannic, all in a positive way. It has a bit of dare to it. In time, it will flourish. Drink 2028 - 2035+.

    A super juicy, silky textured Grenache that’s bursting at the seams with flavour.

    This single vineyard Grenache has been crafted from grapes sourced from a two acre block in the Yalumba Tri-Centenary vineyard. Located in the heart of the Barossa Valley, this block comprises 820 gnarly old bush vines that were planted in 1889.
    Translucent ruby red colour with a very light red tinged hue. Wafting through the nostrils are intense raspberry jube, ripe cherry, red liquorice and plum juice aromas followed by some confectionary and vanillin spice notes. Super juicy, the incredibly moreish palate is bursting with raspberry jube, ripe cherry and red liquorice fruits. Notions of plum, vanillin confectionary and spice follow on. Luscious in it’s feel with silky tannins and outstanding power, it finishes long, fresh and super succulent.

    The NV Champagne Prestige Brut Rosé is 30% Chardonnay, about 20% Meunier, and the rest Pinot Noir, with 12-15% still red wine added from Pinot Noir and the base vintage from 2018. It pours a deep pink color and offers aromas of ripe red cherry, fresh flowers, and blood orange. Full-bodied and juicy all the way through, it is ripe with loads of wild berry fruit and has a long and slightly warming finish. It would be suitable as a wine to end the night or as a juicy aperitif. Drink 2024-2034. 9 grams per liter dosage.

    Mouthfeel, persistence, freshness; Vermentino seems to embrace these words and create a unique, food-friendly style of wine. The fruit here is from the Ricca Terra Farms vineyard in the Riverland. Loving the botanical elements on the nose from this vintage, it grabs your attention from the get-go with hints of elderflower, juniper, chamomile tea with some juicier nectarine and oyster shell notes. This transitions nicely to the palate which is medium bodied but bursting with white peach notes, honeydew melon, sea spray, white almond and juicy lime keeping the wine in balance. Moreish and vibrant in the mouth, I’m tucking into some salty elements here – charcuterie and cheese board with some fried white anchovies to help elevate the wine even more.

On the mid weighted palate ripe dark to black plum, morello cherry and liquorice fruits have a plump feel with earthy vanilla and cinnamon spice elements the undercard.
