Each spring in Normandy, the Alleaume family hangs thousands of empty glass carafes in their apple orchards near Gonneville-sur-Honfleur. Over the summer, a tiny apple grows inside each one. Timing is everything, as the fruit must be introduced at precisely the right moment to fit through the vessel's narrow neck. By September, the carafes are harvested, cleaned, and filled with Calvados. Even after 30+ years of practice, only 40% of carafes hung yield a bottle fit for sale. But as founder Christian Drouin says: "Our first year, the success rate was just 5%. It wasn't zero, so we decided to persevere." As the apple macerates in the spirit, its fresh fruit character melds beautifully with the brandy, resulting in one of the most vibrantly fruity expressions you'll ever taste.
