The distillery's French Oak Second-Fill casks have a history as rich as their flavour. Initially serving as first-fill ex-Tawny casks for an earlier batch of single malt, the best casks are then selected for a second round of maturation, hence the title "Second Fill" or "Re-fill". Because their impact on the flavour profile is muted, refill casks make a good canvas for showing off distillate character. In fact, they're a staff favourite at the distillery for that very reason.

French Oak Second Fill TD0374 was distilled in October of 2012 and decanted in July of 2025 maturing at 12 years and 8 months, in a single 300L French oak ex-tawny cask previously filled with an older batch of Sullivans Cove. The style here is summed up as “...a whisky of contrasts: the nose suggests weight and intensity, while the palate is restrained and delicate. The flavours develop slowly, bridging the gap between the richness of the nose and the softness of the finish. A quietly engaging single cask, where the dark and sweet elements meet in a balanced, evolving way.” The outturn was 531 bottles at 46.3% Alc./Vol. Non chill filtered.

Notes from the producers... Nose: Rich brown sugar, molasses, dark rum, spice, cherry tart and cocoa. Palate: Light, syrupy and subtle, with vanilla cream, bubble gum, watermelon and cotton candy. Finish: Lingering and creamy, carrying strawberry, pink donut, apple turnover and coconut icing.
