A novel Irish gin that's barrel aged in 50 litre juniper wood casks. It uses the same 12 botanicals found in Blackwater No.5, but in a slightly different proportion; orange and the sweeter roots are increased, because, like its berries, juniper timber can be a wee bit astringent. Tasting note: Pale gold. First pass finds an attractive mingling of juniper and wood notes, in particular fresh sawn green pine, balsa wood…later, crushed pine needles, dried lemon peel, thyme, black pepper. Light to medium bodied flavours find juniper framed by citrus peel, drying herbal teas, warming black pepper and fine tannins. Concludes nicely balanced, gently warming and medium long. Distinctive. 46% Alc./Vol.

A very popular addition to our Gin shelf last year was Bluecoat, named after the Bluecoat militia that fought the American War of Independence. Botanicals include organic juniper berries, American citrus peels, coriander and angelica root distilled with third-party sourced grain neutral spirit in a copper pot still made in Scotland by Forsyths of Rothes. This latest expression is finished in charred American oak barrels for a minimum of three months providing a unique, well rounded and complex spirit without compromising the latent botanical notes. Beautifully packaged in a cobalt blue bottle, this will be a great gin alternative to classic cocktails such as the Negroni, Martinez and Old Fashioned. 47% Alc./Vol.

Caol Ila leaves its stamp on the nose: smoked fish, a touch of dill, citrus and light vanillas while gin adds freshness. This gin goes into the same casks as Cotswolds' flagship Single Malt. These include first-fill ex-Bourbon barrels and shaved, toasted and re-charred red wine casks (STRs). Maturation lasts three months. Following that, fresh Valencian orange peel and candied root ginger are soaked in the gin for several weeks. Finally, a touch of honey is added to sweeten before bottling. Tasting note: A golden coloured gin with aromas of ginger chocolates, root beer, orange zest and lime peel over fresh juniper. On entry traditional gin notes arrive with hints of triple sec and subtle oaky astringency, dovetailing into a delicious spice wave. Ends ginger beer-like with budding warmth. Great purity and definition. Superb Winter gin. 46% Alc./Vol. Notes from the producer... Nose: Warm honey and sweet orange notes balance the fresh spicy ginger and piney juniper. Palate: Incredibly rich and luxurious, the ginger warms everything through, with vanilla and red fruit notes from the casks. Finish: A lovely long finish full of dry oak spice and ginger, with lots more honey.

Tasting note: Intense yellow-gold with thick legs. Offers unusual hints of crushed ant and orange cordial in the opening sniff. Second pass finds juniper/menthol freshness infused with hints of lemon thyme and saffron. Feather-light, supple, rounded mouthfeel with delicate cumin / turmeric / saffron-like flavours over refreshing background juniper. Restrained vanilla sweetness enters at the finish.
