1960 Castarede Bas Armagnac (500ml)Armagnac, FRANCE$750. 00Bottle$9000.00 DozenABV: 40%Tasting note: Bottled in 2019, the 1960 Castarede is one of the most elegant Armagnacs we’ve tasted to date. Heading into dessert territory, it opens with sustained, high pitch aromas of sticky date and pecan pie unfolding with hints of salted-caramel chocolate and Grand Muscat. Showing no loss of vitality after six decades in oak, it's seductive and silky with a superb rush of fruit cake, baking spices, rancio and café crèmes framed by super fine tannins and a creamy finish that's briefly succulent and fabulously long. Reference point here is the Dartigalongue house style. It should equally please lovers of Hors d'age Cognac. 40% Alc./Vol. -

As part of their 'Dark Series Experiments in Flavour', Never Never Distilling Co. have released the world’s first Grenache gin. Produced right in the heart of the McLaren Vale wine region, ‘Ginache’ contains Never Never’s award-winning Triple Juniper Gin and Grenache juice from grapes picked from Chalk Hill’s Slate Creek vineyard. The grapes were harvested in March from the Harvey’s family plot, not far from the Willunga township. The plot itself was purchased by John Harvey, patriarch of Chalk Hill and was first planted way back in 1897.
A contemporary take on traditional sloe gin, the spice and bright citrus flavours of this gin work wonderfully with the jammy raspberry brightness of the young Grenache character. It's bursting with red fruits and makes an delicious gin and tonic. Alternatively, simply try it over ice with a slice of orange. 38% Alc./Vol.

Overeem Distillery Sherry Cask Matured Single Malt Whisky (700ml) - 43%Tasmania, AUSTRALIA$199. 99Bottle$2399.88 DozenABV: 43%Aged in French oak sherry casks, this is the leader in the entry-level core range from Overeem. The malt is plump on the nose, infused with wood shavings, white pepper, cinnamon and burgeoning dried fruits. No shortage of flavour as the palate takes a sweeter trajectory that includes toffee apple, caramel fudge, vanilla wafer biscuits and almond biscotti, countered by gentle astringency. The sugars are kept in check, despite hinting at sticky date through the finish. The effect is a seductive sweet-dry balance that has you coming back for seconds. 43% Alc./Vol.
First tasted 2012... Bright gold appearance. Immediately appealing aroma offers pristinely clean barley sugar / butter menthol top notes with a very enticing lift. After aeration, lovely vanilla / malt aromas are detectable followed by heavier Christmas cake / dried fruit scents. Wispy, silky entry leads into a soft, pure, light to medium bodied palate; medium dry flavours of barley sugar and butter menthol repeat accompanied by gentle spices and continue well into the aftertaste. Exhibits a lightness and panache that’s comparable to class Irish. Well done! 91 points 43% Alc/Vol.

Michel Couvreur Blossoming Auld Sherried Single Malt Whisky (700ml)Burgundy, FRANCE$450. 00Bottle$5400.00 DozenABV: 45%Tasting note: The deep mahogany / gold ochre hue stains the sides of the glass and shows good viscosity. Mildly prickly aroma offers suggestions of pancake, dilute maple syrup and mocha. Little variation in the second phase which, if anything sees the intensity drop a notch. Light entry opens to a plush, clean, richly sherried profile; semi sweet Christmas cake flavours, hollowing out at the finish, concluding with vanilla and caramel at the fade. 45% Alc./Vol. Other reviews... Colour: dark amber. Nose: this is much more elegant! Prunes, leather, cigars, old wooden furniture and orange marmalade. Mouth: yes, a much better balance here. Smooth, rounded yet not lumpish at all, all on fruitcake, orange zests, sultanas and notes of aniseed. Plus various spices including cloves. Finish: long and in the same vein. Comments: excellent, classic sherried malt. 88 points - Serge Valentin, whiskyfun.com Burgundy is a place full of personalities at the high end of the passion scale, especially when it comes to food and drink - perhaps none more so than a Belgian who is presently maturing Scotch Whisky in the heart of the famous French wine region. The fellow in question is Michel Couvreur, and he's a man on a mission when it comes to Scotch Whisky. Entering from the wine trade, his is an increasingly familiar story within the whisky industry. He'd already established a business in the early 1950s in Scotland selling Burgundy wines when in 1978, French friends suggested that he add a top quality Scotch to his portfolio. So began Couvreur’s interest in the whisky industry from which he developed his ultra-traditionalist perspective on oak. He maintains (more radically than others in the industry) that 90% of a whisky’s quality comes from the cask, and only 10% of the quality comes from the distillation process. In the 1970s, American bourbon casks gradually replaced port and sherry casks for the maturation of Scotch whisky, a great tragedy, according to Couvreur, as it changed the essence of a product that had European barrels at its core. In a personal crusade, Couvreur settled in Bouze-les-Beaune (close to the Burgundian town of Beaune, France), where he opened a customs bonded cellar and began selecting his own sherry casks (Pedro Ximenez and Palomino) from the Andalusia region of Spain. Some readers will be aware, since the 1970's, sherry ceased to be shipped to UK in wood. Whisky producers have now to go and select their casks at sherry bodegas, paying a premium on top of transport costs. It's partly for this reason that Michel Couvreur's cellar is located in Burgundy, half-way between Scotland and Andalusia, with straight motorways from Jerez de la Frontera to Beaune. Courveur's "Scotch" starts out in Scotland as bulk a.k.a.“clearach” (a high proof distillate) which is transferred to his humid cellar in Bouze-les-Beaune to be aged in small sherry casks that have been impregnated with 25 years aging via traditional soleras. All required dilutions are accomplished with bottled water from Scotland. Total production is about 50,000 bottles or 4,000 cases annually. A small selection of these artisan matured spirits has just arrived in Australia. - Jim Beam Distillers Series No.4 Bourbon Whiskey (700ml)Kentucky, UNITED STATES$174. 99Bottle$2099.88 DozenABV: 37%

Cocchi Americano Aperitif (750ml)Cocconato d'Asti, ITALY$59. 99Bottle$719.88 DozenABV: 16.5%Closure: CorkCocchi (pronounced co-key) Aperitivo Americano falls along the lines of a Bianco Vermouth. Produced since 1891 from moscato d’asti and fortified with a touch of brandy, it’s subsequently flavoured with bittering aromatics like gentian and cinchona bark, along with orange peels and herbs. Toby Cecchini, writing for the New York Times Magazine, comments “...what has cocktail enthusiasts excited about Cocchi is that it is secretly acknowledged to be the most similar product in existence to the old-formula Kina Lillet.”
Lillet Blanc, (formerly Kina Lillet), a product directly imported by Nicks Wine Merchants, was originally a bitter tonic drink, however the quinine content was reduced in 1986, leaving the market bereft of a properly bitter alternative. Though not as intense as Lillet, Cocchi’s product certainly offers a lighter and more bitter aperitif experience that should appeal to any mixologist concerned with historical accuracy.
Tasting note: Bright pale straw / gold appearance. Mildly oxidised, grapey aromas mingle with floral notes. Further inspection yields hints of fresh picked, sweet oregano and ripe quince. A soft, round, semi sweet entry leads into a moderately concentrated mid palate offering flavours of moscato and dried apricot that’s nicely counterpointed by gentle bitterness. Finishes fresh, clean and gently bitter with a quinine, citrus peel aftertaste persisting. Try it in your next Corpse Reviver or Vesper. 16.5% Alc./Vol.

2014 Henschke Mount Edelstone ShirazEden Valley, South Australia, AUSTRALIA$299. 00Bottle$3588.00 DozenABV: 14.5%Closure: StelvinThe Mount Edelstone Vineyard, established in 1912 by Ronald Angas, a descendant of George Fife Angas, features ancient 500-million-year-old geology that has resulted in deep red-brown clay-loam soils. These conditions lead to low yields from the dry-grown, ungrafted centenarian Shiraz vines. First bottled as a single-vineyard wine in 1952 by fourth-generation Cyril Henschke, Mount Edelstone has been crafted by the Henschke family for over 65 years and is considered one of Australia's premier single-vineyard Shiraz wines.
Henschke’s Mount Edelstone was first bottled as a single vineyard wine in 1952. The 2014 has been released ahead of the 2013 which requires more time in bottle. Matured in 92% French and 8% American (28% new, 72% seasoned) hogsheads for 18 months. Alc 14.5%

JamesSuckling.com102yo single vineyard, matured in 92% French and 8% American hogsheads (28% new) for 18 months. Only a fraction of the normal crop, as was the case in many parts of SA and Vic. The colour is that of an 18 month-old (not 36 months) shiraz, the aromas of black fruits, licorice and black pepper, the tannins firm and enduring, yet in balance with the powerful fruit. I remain to be convinced this is suited to drinking while the '13 comes around, the best solution is to leave both to themselves for 5 or so years. Drink by 2044.

2016 Chateau AngelusSaint Emilion, Bordeaux, FRANCE$999. 00Bottle$11988.00 DozenClosure: CorkAs with a lot of properties in Saint-Emilion, Chateau Angelus has had its share of struggles in the mid-late 1900s, but after taking over from his father in 1988 Hubert de Bouard quickly turned around the property, to the point where it was upgraded to Premier Cru Classe A in 2012. The 27 hectare vineyard used for Chateau Angelus is planted to 50% Merlot, 47% Cabernet Franc, and 3% Cabernet Sauvignon. Maturation takes place in 100% new French oak for 18-24 months.
Other Reviews....
The 2016 Angélus is composed of 60% Merlot and 40% Cabernet Franc, aged 18 to 22 months in new barrels and foudres. Deep garnet-purple colored, it drifts effortlessly out of the glass with sensuous notes of lavender, candied violets, garrigue, Ceylon tea and iron ore with a core of warm black cherries, mulberries, ripe plums and aniseed plus wafts of cedar chest and cloves. Medium to full-bodied, the perfumed fruit whispers of great intensity and depth, with the vivacious fruit well knit into the plush, seductive frame of velvety tannins and seamless freshness, finishing long and mineral laced. Still very tightly wound with amazing tension at this stage, it truly needs a good 6-8 more years in bottle to deliver the fully expressed layers that this soft-spoken, profound beauty promises.
98+ points
Lisa Perrotti-Brown - Wine AdvocateThe 2016 Angélus has a very well defined bouquet featuring blackberry, melted tar, pencil box and floral notes, though they are less pronounced than they were from barrel. The palate is medium-bodied with fine-grained tannins. This is well balanced with plenty of freshness and fine grip, and quite dense in the mouth compared to its peers. Notes of blackberry laced with sea salt and a touch of licorice govern the finish to this substantial Angélus, which will benefit from several years in bottle. Patience will be undoubtedly rewarded.
96 points
Neal Martin - VinousThe 2016 Angélus is a total stunner. Despite its late bottling in September 2018, the 2016 is simply magnificent. Soaring aromatics and layers of bright, vibrant fruit are two of the main signatures in the 2016. The tannins, so often hard in young Angélus, are almost impossibly refined. Pomegranate, blood orange, raspberry jam, wild flowers and mocha are some of the many notes that race through the 2016. All the elements fall into place in a memorable, exquisite Saint-Émilion that is clearly one of the wines of the year. Don't miss it!
98 points
Antonio Galloni - VinousSubtle and profound aromas of blackberries, wet earth and sweet tobacco. Hints of spice, too. Full-bodied and so deep. It’s incredibly vertical and long. Just like looking down a well. Firm and powerful tannins, yet polished and balanced. Goes on for minutes. One of the greatest ever. Try after 2025.

James Suckling - Byrrh Aperitif (750ml)FRANCE$38. 99Bottle$467.88 DozenABV: 18%
The new, slightly smaller format of the famous wine-based aperitif also weighs in with a higher ABV. Made mainly from Carignan and Grenache grapes from the hillsides of Roussillon in Southern France, the grape must is macerated with neutral spirit in order to stop the fermentation process. This gives a particularly fruity and syrupy mixture, called "mistelle". After a preliminary ageing, the mistelles are blended with dry red Roussillon wines. The blend is then cold-flavoured with dried crushed quinine bark, and aged for 3 years in large wooden barrels called "foudres".
Simon Violet and a pharmacist friend, both from Thuir, in the Pyrénées invented this new quinine-based aperitif in 1856. Benefiting from the then fashion for quinine tonic wines, Byrrh soon became popular throughout France. Starting in 1903, advertising poster competitions were launched to promote the brand. Boosted by extensive advertising campaigns, Byrrh was a huge hit in the 1930s and by 1935 was the leading aperitif in France, with sales reaching 35 million litres. The brand became part of Pernod Ricard in 1976.

Great Southern Distillery Limeburners Sherry Cask Single Malt Australian Whisky (700ml) - Cask Strength 61%Albany, Western Australia, AUSTRALIA$220. 00Bottle$2640.00 DozenABV: 60%Great Southern Distillery, the first of its kind in Western Australia is located in the picturesque coastal town of Albany. Great Southern's whisky is marketed as 'Limeburners', named after an area nearby the distillery where lime burning took place in convict times.
The present distiller is Albany local, Ben Kagi who joined the company in 2005, putting to work a palate honed over many years as a winemaker and associate judge in wine shows. After initially looking after quality control (yes, Ben gets to spend his days tasting spirits), he's now the main distiller, instrumental in setting the standards for the award winning Limeburners Single Malt and Whisky Liqueur.
We've been following this project for several years, long enough to see a house style developing, typified by brandy-like, dried fruit, fruit mince pie notes. Two expressions are on offer - a cask strength which is generally bottled at 60% ABV and a more affordable, lower proof bottling. Both are worth seeking out.
Note: Due to the limited nature of batches barrel numbers and alcohol percentage will vary. Call us if you'd like to know which batchers are presently on our shelves.
Tasting note: [Barrel M90 tasted, a.k.a. "The Director's Cut"] Brassy, deep polished copper appearance. Mildly prickly aromas include spicy mince fruit pie, brandy cream and dried fruits becoming more keenly raisin-like after aeration. Parching oak and a slightly bittersweet attack develops into attractive dried fruit flavours with a sweet surge finishing dry yet creamy with a long, rich, Christmas-cake-like fade. Balances well at this high ABV. 60% alc./Vol.

This liqueur version represents one of the few pineapple liqueurs currently available on the Australian market. Blended with coconut it creates an exotic, tropical liqueur well suited to warmer climates and ideal for use in a range of fruit based cocktails.

Michel Couvreur The Unique Blended French Whisky (700ml)Burgundy, FRANCE$124. 99Bottle$1499.88 DozenABV: 44%A Couvreur blend of malted and un-malted Scotch whiskies (both Pot-still and Coffey distilled). Matured partly in Scotland and partly in France, after four years in barrel it was reduced with Pentland Hills water. Soft and sweet on the nose with notes of dried grass and straw bail, developing with cream tea biscuits and a little citrus lift. That citrusy, grassy zest is on the palate too, giving a sprightly lift to the sweet malt. Spicy. Tastes its age. Non chill filtered. 44% Alc./Vol.
Michel Couvreur's "Scotch" starts out in Scotland as bulk a.k.a.“clearach” (a high proof distillate) which is transferred to his humid cellar in Bouze-les-Beaune, Burgundy, France to be aged in small sherry casks. Total production is about 50,000 bottles or 4,000 cases annually. From 1978 on, Couvreur made maturing whiskies his life’s work, dedicating research to a process which he once compared to 'cross-fertilisation'. Couvreur passed away in 2013; his son-in-law Cyril Deschamps and his cellar master Jean-Arnaud Frantzen, with the invaluable help of Michel’s devoted wife Marthe and his daughter Alexandra, continue to follow to the letter the original philosophy of the house.
- 23rd Street Distillery Single Malt Australian Whisky (700ml)Renmark, South Australia, AUSTRALIA$119. 99Bottle$1439.88 DozenABV: 46%
There have been several iterations of 23rd Street's single malt, with different labels and ABVs, however this one now looks to be settled as a core range release. The large site housing the 23rd Street Distillery in Renmark was first built in 1914 by Chateau Tanunda, a major brandy producer, but was closed in 2004 until Bickfords Australia along with sister company Vok Beverages invested 6.6 million in the new venture, with help from a government grant. Initially, brandy-focused, vodka and a range of gins are also on offer. Distillate is derived from two pot stills built by Adelaide manufacturers H. Jennings in the 1950s. For the whiskies, x-Bourbon maturations are currently preferred.
Notes from the producers... Elegant aromas of toffee, lifted fruit and delicate vanillin oak trail into an evocative hint of wine cellar. The palate is full and lightly sweet, with citrus and apricot, bedtime malted milk, and a finish of butterscotch oak and lingering warmth. Produced from Kangaroo Island barley and matured in x-Bourbon casks. 46% Alc./Vol.
43% batch tasted... Brilliant gold. Rich, rounded aromas include gobstopper, ripe peach and banana over light vanilla and wood spice. Super pure with a deliciously fruity, off-dry delivery hinting at kumquat, pepper, cocoa and pencil shavings with a late rush of fig and banana confectionary before the oak closes in. Fruity and flavoursome. 91 points

Flor de Cana Centenario Gold 18 Year Old Rum (700ml)Chichigalpa, NICARAGUA$169. 99Bottle$2039.88 DozenABV: 40%"A very serious, dry, and elegant rum. " - tastings.com
One of Latin America's most prestigious marques, Flor de Cana make attractive, lighter styled, column-distilled rums using estate grown molasses. The soils of the fifth generation family farm are enriched by an active volcano, the distillery powered by renewable energy and all the rums are tropically aged. Importantly, Flor de Cana's label now carry true age statements, with “years old” attached to each number on the labels (previously there was only a vague indicator of 'average age', which some considered deceptive). There is no solera system or blending from other ages. The sugar-free 18-year old is one of the high points of the range, issuing soft, plush scents of mocha, vanilla- wafer, buttered raisin toast and bounty bar, echoed in the taste. It shows good concentration at the mid palate stage where a burst of vanilla, crème café and sweet spices covers the tongue. Creamy textured with very gently warming spirit, the finish is finely tannic, on the drier side with subtle golden syrup and vanilla fudge followed by a delicate buttery / nutty fade. It's more opulent than its younger siblings but consistent with the house style which is all about grace and restrained power. Worth noting again, there's zero added sugar or additives of any other kind - relatively unusual for this segment - which makes it a refreshing alternative to competitors from Venezuela, Panama or Guatemala. 40% Alc./Vol.
Other reviews... If you are more familiar with the likes of Diplomatico Reserva Exclusiva and/or Zacapa this might be a way of trying an “undoctored” rum. It’s gentle with a natural and not overpowering sweetness. It’s quite a light, elegant style of rum very enjoyable. I’ve found it nice to return to after buying so many cask strength single cask rums lately. This offers a half way house – it appeals to my sweet tooth whilst retaining plenty genuine rum character. 4/5 stars - thefatrumpirate.com
Look for a copper-penny hue and mild coconut and floral aromas. The palate opens with vanilla and a pleasing violet tinge, fading into walnut, dried fig and espresso, plus a clove tingle. 95 points - wineenthusiast.com

Le Gin de Christian Drouin Calvados Cask Finish Gin (700ml)Normandy, FRANCE$119. 99Bottle$1439.88 DozenABV: 42%Foremost a Calvados producer, Guillaume Drouin has extended his portfolio with a selection of cleverly crafted gins. This one is based on the original "Le Gin" released in 2015. Thirty varieties of cider apples and eight different botanicals are employed. Each botanical is distilled separately before being blended. The gin is then aged for around six months in former 10-year-old Calvados casks. Tasting note: [BATCH 2017-A tasted] Pours brilliant bright gold. Hits the jackpot with a high-pitched bouquet of apple cider, pine needle, menthol, bright juniper and citrus peel. Much like the nose, only more subdued, this offers piney, woody-juniper like flavours with hints of black pepper as well as apple-cinnamon yogurt through the aftertaste. A barrel aged style in which key botanicals remain clearly expressed. 42% Alc./Vol. - Ciroc Snap Frost Vodka (700ml)Gaillac, FRANCE$82. 99Bottle$995.88 DozenABV: 40%
An unusual vodka. Whereas most vodkas are produced from common starches such as wheat or potatoes, Ciroc is made from the Mauzac Blanc and Ugni Blanc grapes left on the vine for extended ripening. The fruit is sourced from Gaillac in the Southwest of France, (nestled between Roussillon and the Pyrenees in the South and the Gorges of the Tarn in the East). After harvesting, the juice is pressed, cold fermented then distilled five times - the fifth time using specially-designed, traditional copper pot-stills.
Tasting note: Crystal clear. The aroma is pronounced by vodka standards with a mixed peel / citrus focus that you’d anticipate from a gin. The citrus theme carries through to the palate which is fresh, medium dry and gently warming. Tails off nicely finishing clean, dry and mildly spicy with juicy grape and sweet citrus notes persisting. Think of a gin less the juniper - the possibilities are endless! 40% Alc./Vol.
Other reviews... Clear. Perfumed aromas of lemon creme and Key Lime pie. A soft, supple entry leads to a glycerous, sweetish medium-to full-bodied palate with creamy vanilla frosting, citrus pie, and mild peppery spice flavours. Finishes with a peppery baked citrus peel fade. More of a citrus flavoured vodka or eau-de-vie (which technically it is) in character, but nice.

The lychee is a rare sub tropical fruit originating in Southern China where the lychee is famed as 'the King of Fruits'. The lychee grows to approximately 3-4 centimetres in size, oval to rounded-heart shaped with a bumpy skin that is red in colour. Once the skin is peeled, the crisp juicy flesh is white or pinkish, translucent and glossy like the consistency of a grape. Lychees have a sub-acid sweetness with a wonderful freshness. The fruit is also high in the antioxidant Vitamin C and the essential mineral Potassium. Soho Lychee liqueur, the pure essence of fresh lychee fruit captured in a light, refreshing, natural tasting liqueur, can be served at room temperature, or slightly chilled with lime & soda, cola, fruit juices or tonic water. This versatile liqueur is becoming increasingly popular in a wide variety of cocktails and after dinner drinks.
Other reviews... The highly perfumed aroma features good smells of lychee with additional layers of fragrances of parchment, palm oil, flowers and sealing wax. The palate entry is gently sweet and properly fruity; the midpalate displays a textured sweetness/ripeness that is delicious and light-to-medium weighted. Wraps up sweet, succulent, and genuinely tasty. 21% Alc./Vol. Rating: 90-95 points. - wineenthusiast.comCocktail: Soh 07

The fruit is sourced from Gaillac in the Southwest of France, (nestled between Roussillon and the Pyrenees in the South and the Gorges of the Tarn in the East). Tasting note: The racehorse in the collection, with more depth and power all round. The spice-shop bouquet evokes curry leaf, cardamom, white pepper and hints of liquorice root through the juniper. Creamy and concentrated attack is also nicely balanced; a melting pot of citrus and cardamom followed by vibrant peppers, a touch of liquorice root and lemon thyme to finish. James Halliday’s Australian Wine Companion - Pernod Anis Liqueur (700ml)FRANCE$58. 99Bottle$707.88 DozenABV: 40%
Since its creation in 1805, Pernod became one of the most celebrated spirits of the 19th century on the terraces of Paris cafes. Many famous artists, poets and writers discovered its charms and their works include references to their taste for this absinthe substitute. The chief feature of Pernod's flavour is derived from the distillation of star anise with select aromatic plants and herbs. Enjoy Pernod as a long drink the French way with cool water and ice. Orange or pineapple juice, cola, lemonade or tonic are recommended as mixers.
Tasting Note: Brilliant electric green. Rich herb, licorice, and citrus spray nose. A smooth, supple entry leads to a lightly sweet, medium- to full-bodied palate with strong anise and fiery white pepper notes. The flavors are much more civil and best expressed with the addition of three parts of water to one part of pernod. 40% alc./vol.

The third release in Macallan's annual wood-focused series called on the talents of Master Perfumer, Roja Dove to provide his remarkable sensory knowledge in describing the distinctive aromas peculiar to oak casks. Whisky maker, Bob Dalgarno subsequently used Roja's articulation of aromas to help shape the final character of Edition No.3. In short, the approach they took was the same as creating a great perfume.
The final result is a combination of six American and European oak casks (first-fill Hudosa butts, American oak; European and American oak refill butts; first-fill Tevasa butts and puncheons made from European oak; first-fill bourbon hogsheads; first-fill Tevesa hogsheads; and first-fill bourbon barrels.) By all reports, this is another excellent addition that promises lifted floral notes and a deliciously, sweet, fruity flavour profile. Bottled at 48.3% Alc./Vol.
Other reviews... The third release in Macallan’s annual Edition series—which focuses on aspects of cask influence—was matured in a mix of European and American oak casks. Figs and apricot jam, vanilla, Jaffa oranges, and cinnamon on the nose. The palate is silky and offers a big citrus fruit hit, Bit-O-Honey, then creamy milk chocolate. Milk chocolate persists through the long, fruity finish, with attendant sweet oak.

Becherovka will be well known amongst visitors to Eastern Europe. Now this Czech specialty has arrived in Australia. Made to a secret herbal recipe reputed to be of ancient origins, this delicious aperitif is served in restaurants and bars in Prague and across Europe.
Josef Becher began producing the liquor in his pharmacy in 1807, selling it as digestive drops under the name of Carlsbader English Bitter. Just before his death, Josef entrusted the recipe for the beverage's production to his son and heir, Johann. Johann Becher soon proved to be a guardian for the recipe but also an excellent businessman. He built a new factory, equipped it with modern machines and, in 1876, commissioned his brother-in-law Karel Laub from Karlovy Vary to design flat bottles with their own labels which are used to this day. At that time, Becherovka was sold under the name of English Bitter or also Becher Bitter. At the end of the 19th century, Johann's son Gustav Becher unified the name and registered the trademark "Johann Becher", the brand being under threat from cheap and imperfect imitations.Rudolf Becher, the next successor to the throne of the family empire, was responsible for the Becherovka repute reaching beyond the borders of the Austro-Hungarian Empire. During this period the drink’s name settled on Becher Bitter, for the first time appearing on the familiar yellow-blue label. Thanks to its supplying the army with special military rations, Becherovka’s popularity and production increased in World War I. The disintegration of the Austro-Hungarian monarchy in 1918 gave birth to an independent Czechoslovakia – and with it the birth of "Becherovka." Between the wars, the market again blossomed and Becherovka survived World War II. In 1945 the family company was nationalized and remained in the state's hands until 1997. Today, the Jan Becher company and its flagship Becherovka are part of Pernod Ricard, the world's third-largest producer of distilled liquors and wine.
Today, only two persons at the Karlovy Vary factory know the whole secret of Becherovka production. Once a week, they prepare the mixture from many kinds of herbs and spices. About three fourths of the herbs and spices come from abroad; some selected kinds grow in the vicinity of Karlovy Vary. The finished mixture is placed into sacks made from natural material and immersed in alcohol for one week. Becherovka matures in the barrels for about two months. Then the contents of the barrels are put together and blended before bottling.
Becherovka is typically mixed with tonic water and a squeeze of lime, tasting something like bitters in tonic water, but, of course, more alcoholic. On its own, chilled over ice, the prominent flavour is cinnamon which lingers with excellent length. While being sweet, Becherovka is not cloying and finishes clean and fresh. 38%Alc./Vol.

Glenfiddich Snow Phoenix Single Malt Scotch Whisky (700ml)Speyside, Highlands, SCOTLAND$1299. 00Bottle$15588.00 DozenABV: 47.6%Note: This has come from a private collection and as such has some minor scuffing/scratches/handling marks to the black tin which are unavoidable. This whisky’s creation was inspired by the collapse of several Glenfiddich distillery roofs in January 2010 following weeks of heavy snow. The exposed casks including Oloroso Sherry and ex-Bourbon barrels were subject to temperatures as low as -19 degree celsius. The end result is a vatting of whiskies ranging from 12 to 30 years of age, bottled in 2010. A must for any whisky collector. Comes packaged in presentation tin as pictured.
Tasting note: Very pale gold colour. Aromas are delicate; attractive nashi pear top note over pastry and pop-corn like scents. Entry is soft and semi sweet with a slow spice power wave building over a nashi pear base. Outstanding length. Superb, silky mouthfeel. Excellent persistence. Delicate peat, honeycomb, sweet cereal aftertaste. A welcome departure from the distillery's house style. Non chill filtered. 47.6% Alc./Vol.
- Glencairn Crystal Cut Whisky GlassUNITED KINGDOM$59. 99Bottle$719.88 Dozen
Champagne, Brandy, Wine... each has its own glass. Yet whisky, arguably the world's most complex spirit can be found served in anything from hiball tumblers to Paris goblets. It's a bit like pouring your vintage champagne into a pint tumbler or your XO brandy into a shot glass!
It will be news to some, but the perfect glass for whisky has been around for some time.
Raymond Davidson conceived it some twenty years ago, but it remained but an idea at the bottom of a filing cabinet. After adequate maturation, his sons Paul and Scott decided to take his design to the people who know best... the master blenders! With their help and support they were able to take the glass around the world and promote it as “the Glass for whisky”, developed by the whisky industry for the whisky industry. Its roots lie in the traditional nosing glasses used by blenders around the world. The unique and stylish shape has been crafted with eminent care, to enhance the enjoyment of whisky. The tapering mouth allows an ease of drinking not associated with traditional nosing glasses whilst capturing the aromas on the nose. The wide bowl allows for the fullest appreciation of the whisky's colour and the solid base is designed to be easy on the hand. Today the Glencairn Glass can be found at every distillery in Scotland, Ireland, Wales as well as most in the USA. It has won accolades from around the world including the Queens Award, the highest award for business in the UK. Of it, the late Michael Jackson, whisky author said 'I hope that it becomes a badge of connoisseurship for fine whiskies in general.'
We’d like to see it become standard in the places it was designed for... the bars!
In the meantime, the good people at Glencairn have created a special cut crystal version of their unique glass, for those who like extra dazzle in their whisky. The mouth blown and hand cut Glencairn Glasses are individually handmade and cut with a 'tartan' pattern, resulting in unique variations that celebrate time-honored artistry. Minute air bubbles, tool marks, or other minor imperfections are natural characteristics of the hand tooled glassmaking process. These inclusions are not considered defects and do not affect the quality of the final product making the Glencairn Crystal Cut Whisky Glass the perfect gift tailored to the whisky enthusiast who thinks they've seen it all. -

2015 Chateau Pontet-CanetPauillac, Bordeaux, FRANCE$330. 00Bottle$3960.00 DozenToday Chateau Pontet Canet is one of the most popular and collectable wines in all of Bordeaux, and much of this success has come from the extraordinary quality of wines made in the last two decades. While ranked as a Fifth Growth in the 1855 Classification, today the property would easily be regarded as a Second Growth as the wines often rival the best in the region. Much of the emphasis at Pontet Canet is in the vineyard, and the property has converted to 100% biodynamics as of 2005. The vineyard is next to Chateau Mouton-Rothschild, and is planted to 65% Cabernet Sauvignon, 30% Merlot, 4% Cabernet Franc, and 1% Petit Verdot.
Other Reviews....
Deep garnet-purple in color, the 2015 Pontet-Canet comes charging out of the glass with fantastically expressive notes of black cherry preserves, black raspberries and blackcurrant pastilles plus touches of kirsch, wilted roses, tobacco, camphor and cinnamon stick with a waft of fragrant soil. Full bodied, the palate is laden with black and red fruit layers, supported by very firm, very finely grained tannins and provocative freshness, finishing with incredible length and stunningly perfumed. Drink 2024-2050.

Lisa Perrotti-Brown - Robert Parker's Wine Advocate (May 2020)Proprietor Alfred Tesseron and winemaker Jean-Michel Comme produced an absolutely stellar Pontet-Canet in 2015. Sumptuous, racy and totally inviting, the 2015 is all class. Super-ripe dark cherry, plum, spice and exotic floral notes build as the 2015 shows off its alluring personality. Even with all of its raciness, the 2015 speaks with authority and power. Fine tannins extend the persistent, highly nuanced finish. The 2015 is 65% Cabernet Sauvignon, 30% Merlot, 3% Cabernet Franc and 2% Petit Verdot aged 50% new oak, 4% in terra cotta and 15% in neutral oak. Tasted three times. Drink 2023-2040.

James Suckling (Jan 2018)The 2015 Pontet Canet is 65% Cabernet Sauvignon, 30% Merlot and the rest Cabernet Franc and Petit Verdot brought up in 50% new oak, and 35% in amphora. With textbook Pauillac notes of lead pencil shavings, tobacco leaf, smoke, and licorice, as well as a core of pure crème de cassis fruit, this beautiful, full-bodied, impeccably balanced is one of the few 2015s that’s going to demand cellaring. The tannin are high, yet sweet, and like its bright acidity, nicely integrated into the wine. Forget bottles for 5-7 years and enjoy over the following three decades. I don’t put this as the level of the 2009 and 2010, but it’s still a beautiful wine. Tasted three times. Drink 2023-2053.

Jeb Dunnuck (Nov 2017)Ruby with a purple rim, no second wine made starting with this vintage. More expressive and opulent aromatics than in 2014, with ripe red and black fruit. The irresistible, juicy palate with creamy texture recalls the 2010, but lacks the same tension and structure. It resembles the 2009, enjoyed over lunch after the morning vertical, but with more focus and fruit purity, including primary blackberry, plum and cassis. Long finish. Aged 50% new oak , 35% amphora. Drink 2021-2060.

Panos Kakaviatos - Decanter (Sep 2021)Deeply colored, initially you notice Cuban cigars, eucalyptus, coffee bean, flowers, blackberries, and cassis. On the palate, the wine is rich, plush, and polished with an opulence to the texture. The fruit is packed and stacked with wave after wave of mouth-coating fruits that paint every nook and cranny of your palate. There is fabulous sweetness, lift, and depth. There is no touch of heat. Even with all of this power, the wine is balanced. Completely effortless to drink, this is already sublime in your glass. But, give it a few more years in the cellar and it is only going to get better and better. An interesting point, 2015 marks the first vintage without a second wine, allowing you to experience the totality of what the entire 81-hectare vineyard produced. The wine blends 65% Cabernet Sauvignon, 30% Merlot, 4% Cabernet Franc and 1% Petit Verdot, 13.5% ABV. Drink from 2025-2060.

Paul John Select Cask Peated Cask Strength Single Malt Indian Whisky (700ml)INDIA$139. 99Bottle$1679.88 DozenABV: 55.5%Fans of all things peaty will find this difficult to resist. Not only brilliant whisky, but a new bargain in its genre.
Located in the tourist region of Goa, John Distilleries have been producing huge volumes of blended whisky since 1992. Original Choice, one of their top brands, sells over one million cases a month. The Distillery entered the single malt scene in 2008 as a ‘pet project’ that like Amrut before it, has quickly gained world wide attention. Distiller Michael John employs local ingredients, although, the peated releases source peated malt from Scotland. The maturation periods in India are reminiscent of those in many Australian distilleries. After only three years, a hogshead has 150 bottles left in it (compared to around 350 in a Scottish equivalent). Not surprising given that the average temperature in Goa is around 31 degrees celsius.
Paul John's cask strength variations are sold under his "Select Cask" label. The quality is fabulous - so are the prices. We recommend tasting both straight before adding a tiny amount of water (literally a few drops) in order to get the most out of them. The Peated starts out with a lovely sweet, cocoa edge to the bouquet; second pass finds wet wool and barley sugar combining to great effect. Further aeration highlights oatmeal and honey interchanging with earthy peat. A farmyardy aspect follows as lucerne mulch and hints of manure, and later still, cough lozenge and faint citrus. Mouthwatering, sweet entry leads into a superbly integrated, concentrated, peppery profile; Winds up with with Fisherman's friend, liquorice root, dried fig and salivating, creamy malt. Peat lingers in the fade. Complex, poised and powerful, this precocious effort seems to only get better each time you taste it - fans of all things peaty will find it difficult to resist. Not only brilliant whisky, but a new bargain in its genre. 55.5% Alc./Vol.

Generous aromas include scents of tomato vine, crushed chile then more beeswax and white pepper after brief exposure. A controversial archaeological mystery, 13 crystal heads have been found in regions around the world, from the American southwest to Tibet. They’re dated between 5,000 and 35,000 years old, and were supposedly polished into shape from solid quartz chunks over a period of several hundred years. Although according to Hewlett Packard engineers, they bear no tool marks to tell us exactly how they were made. The heads are thought to offer spiritual power and enlightenment to those who possess them, and as such stand not as symbols of death, but of life.
Enter Dan Aykroyd, well-known actor, musician, entrepreneur and spiritualist. He’s a believer in what he calls the "invisible world" where otherworldly presences are a "form of reality as valid as our normal reality." Partner and veteran fine artist John Alexander has exhibited extensively in the United States and around the world. Together, they were avid researchers of the legend of the 13 crystal heads. And from this inspiration, an idea was born.
Launched in 2008, Crystal Head Vodka was the fastest penetrating product to all 50 US states in history. The brand has been awarded OU Kosher certification.
Production starts with grains grown in the region of Chatham, Ontario. These grains are then processed and distilled four times to produce a neutral grain spirit at 95% ABV. The raw spirit is then reduced down to 40% alcohol by volume using water sourced from an aquifer in the Newfoundland, Canada countryside. This water seeps to the surface through a bed of porous rock which serves as a natural filter as it has done for many thousands of years.
The vodka is quadruple distilled, then triple charcoal filtered. Finally, every drop is filtered three times through 500-million year-old crystals know as Herkimer Diamonds. These quartz crystals are found in very few places in the world, including Herkimer, New York and regions in Tibet and Afghanistan. Perhaps because they share the raw material from which the original crystal heads were carved, they are thought to have similar spiritual qualities. The production process is carried out at one of the last government owned distilling facilities in the world – The Newfoundland and Labrador Liquor Corporation.
Not just a good story - Crystal Head Vodka was awarded a Double Gold medal at the prestigious San Francisco World Spirits Competition held in May 2011. More than 200 vodkas in total entered the competition; of this, Crystal Head Vodka was one of only a handful of brands to receive a Double Gold Medal in the entire competition.
Tasting notes: Clear. Mineral, powdered milk, shredded wheat, and white pepper aromas follow through on a silky entry to a slightly off-dry light-to-medium body with sweet cream notes. Finishes with a warming peppery spice and mineral ore accented fade. International Review of Spirits Award: Silver Medal

Ardbeg Corryvreckan Cask Strength Single Malt Scotch Whisky (700ml)Islay, SCOTLAND$199. 99Bottle$2399.88 DozenABV: 57.1%A replacement for the discontinued Airigh Nam Beist, 'Cauldron of the speckled sea' (aka Corryvreckan) is a whirlpool located between the Isles of Islay and Jura, and now the name of a whisky. It's base is Ardbeg 10 combined with spirit exclusively matured in French Limousin Virgin oak. We tasted an early batch back in 2011. Dull gold colour with a pale straw hue, it presents an unusual nose for an Ardbeg: Rich chocolate, vanilla, lemon butter and spice above a smoky salty layer, the only evidence that it's Ardbeg is the end note of terracotta/clay/wet charcoal. With time in the glass, fresh smoky characteristics emerge, but do not dominate. The intense palate is initially rich and creamy, quite heavily peated, rich chocolatey flavours mingle harmoniously with the lemon butter before the unusually overt oak grips dry and the peat explodes - softly! The back palate is dry, firm, overtly oaky, and extremely spicy. Excellent balance at cask strength. Warm, tingly, spicy finish. Lemon, dry cocoa, strong spice and gentle smoke dominate the lengthy aftertaste. Unusually dry for Ardbeg, otherwise an utterly brilliant, unique expression of Islay. 57.1% Alc./Vol.
Other reviews.... n23.5 excellent, thick, not entirely un-penetrable - but close - nascent smoke and a vignette of salty, coastal references save the day; t24.5 amazing; here we have Ardbeg nutshelled. Just so many layers of almost unaccountable personalities with perhaps the citrus leading the way in both tart and sweet form and then the oak, in vanilla form, in close proximity. The peat, almost too dense to be seen on the nose, opens out with a fanfare of phenols. it is slumping-in-the-chair stuff, the enormity of the peat taking on the majesty of Cathedral-esque proportions, the notes reverberating around the hollows and recesses and reaching dizzying heights; such is its confidence, this is a malt which says: 'I know where I'm going...!'; f24 long, outwardly laconic but on further investigation just brimming with complexity. Some brown sugary notes help the barley come up trumps late on but it's the uniquely salty shield to the mocha which sets this apart. Simply brilliant and unique in its effortless enormity...even by Ardbeg standards; b25 as famous writers - including the occasional genius film director (stand up wherever you are my heroes Powell and Pressburger) - appear to be attracted to Corryvreckan, the third most violent whirlpool found in the world and just off Islay, to boot, I selected this as my 1,500th whisky tasted for the historic Jim Murray Whisky Bible 2009. I'm so glad I did because many have told me they thought Blasda ahead of this. To me, it's not even a contest. Currently I have only a sample. Soon I shall have a bottle. I doubt if even the feared whirlpool is this deep and perplexing. 57.1% 96.5 points - Jim Murray's Whisky Bible 2009 / 2019
...Powerful, muscular, well-textured, and invigorating. Even within the realm of Ardbeg, this one stands out. The more aggressive notes of coal tar, damp kiln, anise and smoked seaweed are supported by an array of fruit (black raspberry, black cherry, plum), dark chocolate, espresso, molasses, bacon fat, kalamata olive, and warming cinnamon on the finish. Quite stunning! 96 points - John Hansell - whiskyadvocate.com
"Bottled at 114 proof, this spins you right 'round, baby right 'round. Smoky bacon fat turns into seaweed turns into blackberries turns into cigar ash turns into white pepper; such a fun ride, this whisky is. This certainly isn't your old man's Scotch." 93 points - distiller.com

Released in 2003, Jose Cuervo Clasico is silver style “Joven” tequila, double distilled and then married with specially selected oak barrel-mellowed tequilas. Lighter in style than its gold counterparts, the production method culminates in a smoother, more well-balanced tequila with a fresh aroma, a crisp, clean finish & just a touch of sweetness. Classic Cocktail: The Margarita
The Margarita has suffered terribly in modern times. In an effort to make it hip, quick, trendy, and cheap it has been bastardized far worse then any cocktail before it. Whether it is the use of inferior (or just plain wrong) ingredients, or commercially made mixes, the common Margarita these days tastes more like a ‘Limeade’ with a splash of orange juice than it does the delectable cocktail that it once was. A true Margarita is made from three ingredients: Tequila, Cointreau (Triple Sec), and fresh squeezed Lime Juice. Like any cocktail, the true art comes in arriving at the proper ratio of the ingredients in order to present a balance of the flavours. Arguably the best ratio for a Margarita is 3:2:1. Three parts Tequila, 2 parts Cointreau, and 1 part freshly squeezed lime juice.60ml Jose Cuervo Clasico Tequila
40ml Cointreau or other Triple Sec Liqueur
20ml Lime Juice
Method: Shake with ice. Strain into a cocktail glass. Optional: You can prepare the cocktail glasss by miostening the rim with lime juice, and then dipping it into coarse salt. - notes partially sourced from www.drinkboy.com
