Originally known as “wormwood wine”, this aromatized fortified has two basic types: White Vermouth (originally from France and typically drier) and Red Vermouth (dark in colour, sweeter and probably conceived in Italy). Vermouth is making a comeback worldwide, especially in trend struck Barcelona where bars even specialise in this refreshing aperitif. Outside Europe, Australia is producing world class examples. If you're partial to Martinis, Manhattans or Negronis, remember that a cocktail will never be any better than the quality of the cheapest ingredient in it. Good vermouth is key.
