    A huge age statement rarely encountered out of Tennessee. Based on the spelling of "whisky" on the label, we would anticipate it to be from Dickel as opposed to JD which also aligns with previous Cadenheads releases. Early shellac dominates the aromas, so give it five minutes to come good with enticing scents of ginger beer, carpenter's shop and background caramel and vanilla. Those notes translate onto the palate as fruit and cinnamon bread, brown sugar and butterscotch followed by a pleasingly astringent charry oak finish leaving rich vanillas, ginger cake and maple syrup in its wake. This fully mature, stately, elegant Tennessee bottling has the refinement and body of a single malt. Coupled with a serious age statement, it should appeal to collectors and drinkers alike. 46% Alc./Vol. Non chill filtered.

    Notes from the bottlers... Nose: Vanilla pods, salted caramel, honeysuckle. Flavour: Caramel latte, honeycomb, milk chocolate. Finish: Root ginger, sweetened butter, many layers of sweetness. Its soft nature partly due to the Lincoln County process that's required by State law.

    Rumoured to be around five years old, Dickel's addition to the rye category is unashamedly 'high rye' in style, delivering a heavy load of spiced grain character in a 95% rye / 5% malted barley mash bill. Even though it's distilled by MGP, the Dickel brand leaves its mark: The whiskey is chill filtered through sugar maple charcoal and aged at the distillery using char #4 barrels with a #2 head (the same char level used for aging other Dickel labels). Good enough for straight sipping, it's also a great choice for classic cocktails like Old Fashioneds and Manhattans. 45% Alc./Vol.

    Other reviews... Loaded with lime, grapefruit, lemon, and a hint of ripe melon—followed by bold notes of roasted rye grains. A smooth, balanced palate of lemon drops, candied orange slices, deeper berry notes, and spice aplenty. The fruit wins out, creating a soft profile with hints of bitter chocolate and grain.     Other reviews... Able to be appreciated by both new and veteran whiskey drinkers, George Dickel Rye delivers an enjoyable experience at a fantastic price. There’s not much to hate about Dickel’s sole rye whiskey. Sure it may not be the most complex rye you’ll ever sip on, but it will deliver a sip that you want to keep going back to. In fact I found myself going back more and more than I usually do when I review a whiskey. For years I used to pass this on the shelf thinking that I’ll get to it eventually, or telling myself how good can this be for $25.     Tasting note: Copper gold colour. Toasted marshmallow and spicy oak aromas develop with lifted pepper notes. There's more honey and cocoa than the number 8, both on the nose and the palate, which is also plusher, fuller and rounder with flavours of candied peach, cocoa and nicely balanced sweet oak turning lightly smokey at the finish. Full flavoured, easy drinking Tennessee that's priced right. 45% Alc./Vol.

    Other reviews...The most brooding of the three. Not as polished as the Barrel Select, but certainly very entertaining. Shows more depth that the No. 8, with more dry oak intensity and more heft.     Presently run by Master Distiller, John Lunn, who continues the hands on process as set forth by George Dickel and again by Ralph Dupps, Dickel whiskey is produced from a mash of corn, barley and rye. The grains are finely ground at the distillery before being cooked. They are then cooled in mash tubs by pure spring water from Cascade Spring, located about one-half mile up the road from the distillery.

    Fermentation is begun using a proprietory yeast, followed by a double distillation - firstly in a column still, then in a pot-still. The process of charcoal mellowing then occurs, which defines the difference between Tennessee whiskey and bourbon whiskey. In this process, the double-distilled whiskey is filtered through sugar maple charcoal. Dickel's mellowing process is unique in that it is chilled prior to the filtration process. This process of chilling the whiskey resulted from George discovering that the batches of whiskey he tasted during the winter were noticeably smoother than those he tasted during warmer weather. He called this process chill mellowing.

    The first step in the mellowing process is selecting and cutting sugar maple trees. Trees are cut in the winter months when the sugar maple's rich flavour is stored in the trunk of the tree. The trunks are allowed to season and cut into strips. These strips are hand-stacked and set ablaze in the open air. This process allows the smoke's impurities to escape from the resulting hard charcoal. The hard maple charcoal is crushed by hand and packed into one of six mellowing vats located at the distillery. About ten feet of charcoal is packed into each vat.

    Two virgin wool blankets are placed on the top and bottom of the charcoal. The top blanket ensures that the newly chilled whiskey uniformly reaches into the vat, while the bottom blanket keeps the charcoal from escaping as the whiskey leaves the vat. The entire chill charcoal mellowing process takes seven to ten days to complete, and though this extra process is time consuming and expensive, the distillery believes the end result speaks for itself. The whisky is finally aged in new, charred American white oak barrels. Full barrels are aged just up the hill from the distillery in the industry's only single-storied iron-clad warehouses.

    Dickel No.8 received a silver medal in 2005 at the San Francisco World Spirits Competition. More recently it was lauded with the prestigious Gold Medal.

    Tasting notes: Bright topaz. Aromas of toasted toasted marshmallow, sweet corn and vanilla bean as well as hints of rye freshness. A youthful but nicely rounded whiskey with attractive corn, toasty oak, cocoa and peppermint notes leading into a gently spicy finish. Value buy. 40% Alc./Vol.

    Other reviews... A great value. Fully matured and very civilized. Good enough to drink neat, yet inexpensive enough to use as a mixer. Creamy, silky notes of vanilla, caramel, and honeyed corn, along with citrus and pineapple, with a slight dusting of cocoa powder. Gentle finish. 85 points

    Another entry into the Bottled in Bond category, this time from Nicole Austin, the new General Manager and Distiller of Cascade Hollow Distilling Co. She started at George Dickel in 2018. “We wanted George Dickel Bottled in Bond to be rooted in authenticity, quality and truth, reflective of the values we feel are most important when making Tennessee’s finest whisky,” she explains. “The aged whisky stocks we have access to here at Cascade Hollow are absolutely beautiful, and it’s important to me that we create whisky that’s sure to be a great value for the quality you’re getting.”

    Sporting a mashbill of 84% corn, 8% rye and 8% malted barley, Dickel’s edition was distilled during the Spring season of 2007 and matured on site for thirteen years before being bottled at 100 proof (50% ABV). This parcel was reportedly released in the States way back in late 2019. Given it's taken so long to be offered in Australia, we'd expect the next shipment will be the 2008 distillation.

    If you’re unfamiliar with the Bottled in Bond concept, it refers to the Act of 1897 requiring that the whiskey be a product of the grain of a single season, made by one distiller at a single distillery, and aged in a federal government-bonded warehouse. The act came as a response to the widespread adulteration in American whiskey around the late 19th century. It was an attempt by the federal government to act as a guarantor of the spirit's authenticity.

    Other reviews... Old Dickel can sometimes be iffy, so I’m keeping my skeptic’s hat on for the time being. Let’s dig in. The nose features everything you’d want in a bonded bourbon — dark caramel, baking spice galore, and well-integrated barrel char that gives everything a slightly toasty, gently savory note. Everything in that lineup follows through directly on the palate, the barrel char giving way just a bit to let notes of eucalyptus emerge, as well as a richly nutty character, hints of orange peel, and just a touch of cinnamon roll sweetness. There’s a bit of fireplace ash on the finish, but this doesn’t really detract from the experience at all, serving instead to impregnate it with a certain richness and austerity that beg for continued sipping and savoring.     ...The nose is thick, oily, smoky, dense, corn syrupy... it's Jack Daniels. Sweet, fat, chewy, various types of burnt notes: toffee, toast, etc. etc... Quite a sweet, fat and toffeed finale. A quite unique whiskey, at which many American whiskey connoiseurs turn up their noses.     ...Initially, it's earth and fruit. This develops into sawdust, more earth, and bananas. From here, it's green pepper, banana nut bread, and warm corn tortillas over a soft mouthfeel with little complexity.     Bourbon holds a special place in American culture. Its origins are linked to the beginnings of the country. In the late 1700's , settlers streamed westward taking their household arts with them including the art of distilling. They found Kentucky to be ideal for the production of whiskey. Corn was plentiful and pure water gushed from deep underground limestone springs. It is an interesting twist of history then, that the oldest and most well known name in American whiskey production, Jack Daniel's, actually had it's inception in Lynchburg, Tennessee (pop.351) (what'smore, Lynchburg is designated a dry area!)

    Jack Daniels, born in 1846, purchased his own still at the age of 13 and by the time he was twenty, owned his own distillery. His full name was Jasper Newton Daniel, born to a large family (he was the tenth child). Nicknamed 'Jack,' he left home at an early age and learned his craft in whiskey making from Dan Call, a Lutheran preacher In 1904, he entered his whisky in the World Fair in St.Louis and was awarded first prize. Mr. Daniel never married but was seldom without female companionship. Known to be a very kind and generous man, he donated plenty of money to the local churches and charities (and also paid for the musical instruments to start the Original Silver Cornet Band ). When Jack Daniels died after kicking a safe door and contracting gangrene in his foot, the business was successfully carried on by his nephew, Lem Motlow.

    Aged four to six years, the distinctive pungent nose and powerful flavour of Jack Daniel's have made it a favourite around the world; and although some find it too assertive, there can be no denying its quality. Mr.Daniel's promise that 'Every day we make it, we'll make it the best we can' is perpetuated to this day with an almost religious devotion.

    Little known fact... Strictly speaking, Jack Daniel's is not considered a bourbon because it is charcoal-mellowed -- slowly, drop by drop, filtered through sugar-maple charcoal -- prior to aging, which many experts say gives it a different character. The process, called the Lincoln County Process, infuses a sweet and sooty character into the distillate as it removes impurities. Up to and after the charcoal filtering however, the Jack Daniel's production is much the same as any other Bourbon. We'll leave it to you to make up your own mind!

    A blend of Jack Daniel’s flagship old no.7 and special recipe honey liqueur. Smells like dilute maple syrup over banana and pancake - unusual for the genre. Silky, slightly viscous entry leads into mild, quasi-honeyed flavours of golden syrup and creme caramel with the maple syrup making a brief return at the finish. Of several whiskey based honey liqueurs to hit the shelves in recent times this is one of the more interesting examples, but not outstanding. 35% Alc./Vol.

    According to Alastair Smart, writing for the Telegraph, Jack Daniel's whisky was Sinatra's signature drink.
    "He would rarely be seen for long without a tumbler in his hand. The Washington Post even went so far as to nickname him 'The Bourbon Baritone' (apart from 'Ol' Blue Eyes' another popular nickname was 'The Innkeeper'). The signal for party-time at Twin Palms came when Sinatra hoisted a flag bearing the Jack Daniel's logo above the mansion. It was perhaps fitting, then, that Sinatra was buried in 1998 with a bottle of JD slipped into his coat pocket."

    To commemorate the half century association between Frank and Jack, the Jack Daniels Distillery have released this special edition. Packaged in presentation carton with booklet.

    Tasting note: Deep brassy gold. Offers a classic JD sniff with aromas of burnt orange, fresh sawn oak, dilute maple syrup, vanilla fudge and a peppery kick. The extra ABV makes for full bodied Jack. Lovely smokey oak/hickory key notes hover over latent vanilla, cinnamon and caramel. A tad grippy to finish but rounds off with an attractive sweet Bourbon flourish. A definite step up from the 40% ABV bottling. Try this on its own before drenching it with Coke. 45% Alc./Vol.

    Other reviews... This new Jack Daniel’s offering is marketed as being “bold and smooth.” It certainly is bolder when compared to the standard Jack Daniel’s offering, with a mélange of corn, creamy vanilla, toasted caramel, bright citrus, and dry resinous oak spiked with cinnamon. The smoothness ends, however, when the oak grip intensifies on the finish. Adding ice does tame the oak, if that’s your thing. Still, I’d prefer the oak be more restrained.

    A watershed bottling being the brand's first new mash bill in 150 years (70% rye, 18% corn and 12% malted barley). This follows on from what started with an “Unaged Rye” in 2012. Reportedly at least fours years old (though not confirmed) the barrels are aged in the upper regions of the barrel house where they're exposed to broad temperature variations.

    Tasting note: [Barrel 16-7297 tasted] Beaming deep amber colour. Initial whiffs of shellac are subdued by attractive aromas of apple pie, oak shavings, clove and later, peachy fruit in an unusual opening bouquet. Air contact adds dusty cocoa and cool mint. Semi sweet entry leads into a well rounded rye - no sharp edges here, in fact almost buttery in the mouth with gentle spice, glace cherry and peppermint, finishing with Jack Daniel's signature maple-char flavours and cherry notes through the aftertaste. A textural, mid-range style that hits all the right notes. 45% Alc./Vol.

    Other reviews...this rye doesn’t disappoint. Butter-toasted rye bread and vanilla, with hints of herbs and campfire smoke. Then fruit…a lot of fruit: pear, banana, pineapple, followed by a bevy of sweets—caramel, butterscotch, and toffee, mainly—with a delightful cinnamon bread finish.     It was once a privilege reserved for Jack Daniel's Master Distiller. Exploring the nuances of whiskey from a single barrel. Today, connoisseurs around the world can savor this experience on their own. Single barrel is another fairly recent addition to the Jack Daniel's stable. It differs in being the product of one unblended barrel, produced in miniscule quantities, bottled at it's peak. It is a deep amber coloured, full flavoured bourbon, stylistically true to the traditional Jack Daniel's Old No.7. Handsomely packaged in a decanter style bottle. 45%alc./vol.

    Other reviews... Wine & Spirits Magazine wrote: '(Jack Daniel's) Single Barrel is a rich red-amber color. The nose, surprisingly smooth for its proof, is full of wood and peachy fruit. Its dry, woody, taste has a nice glow but no afterbite. Cut with water, the wood and the underlying corn flavors are more pronounced, and it has a lot of strength to the finish.'

    ... The Malt Advocate wrote: 'Jack Daniel's Single Barrel was deliciously rich and with great depth......It was nicely balanced too: not too sweet or dry.'

    .. Nose: Almost stiffly phenolic: you can cut through the sweet roasty, oaky intensity. Palate: You less taste than eat this stuff... lovely oily middle with plenty of trademark burnt liquorice. Finish: The small grains bravely fight their way through, first rye then malt. But the rye returns with the liquorice for the surprisingly refined finale. Comment: Always an interesting brand.

    Further notes... More fruit on this than most Jacks. Still plenty of liquorice and burnt toast. The taste is spicy and immediatly warming. Some real kick to this, with the blows softened by the sweetness of the corn and the surrounding thick oils. Very consistent finish with the sweetness fading, despite some rye input, then oak starting to make a stand.     A recent Jack Daniels design that pays homage to Mr Daniel's history. Mr Jack Daniels opened the White Rabbit saloon in Lynchburg town square over 120 years ago so his friends would have good a local watering hole. The Saloon was closed down because of the Prohibition period and never re-opened.

    First released on the Australian market in 1989, Gentleman Jack is a premium brand from the Jack Daniel's distillery in Lynchburg, Tennessee. The formula is based on early trial work carried out by Jack Daniels himself and is bottled to celebrate his whiskey being awarded a top gold at the St. Louis fair in 1904.

    Gentleman Jack remains consistent with the original Jack Daniel's style, it does however, differ in being a 'single whiskey', not a combination of whiskies blended together. Unlike any other whiskey, Gentlemen Jack is also charcoal mellowed twice though maple wood, once before aging and once again after. The distillery describes this process in their own distinctive way: 'Jack knew what a single journey through the charcoal meant to his exceptional whiskey - how the coarsely ground maple charcoal mellowed out the harsh oils and impurities that threatened the smooth, warm character of the whiskey. Imagine what a second trip would do, he mused. And so, throughout his life, he experimented with charcoal mellowing his whiskey twice. The process proved so painstaking, he never crafted enough of his new whiskey to introduce it to the world. Happily, he saved the recipe. In 1988, we finally put our founder's formula into limited production, and Gentleman Jack became the first new whiskey from the Jack Daniel Distillery in more than 100 years. No, our folks in product development have never been known for speed. We think a good thing is worth waiting for and, in the case of Gentleman Jack, I think you'll agree, we were smart to wait and get it right.' Suffice to say, the result is a particularly smooth, satisfying and individual drink.

    Originally scheduled for Duty Free release only, No. 27 Gold promises a richer expression of the distillery's original Old No. 7. Crafted to the same standards, 'Gold' earns its name from double barreling and double mellowing. In short, this Jack is extra-matured in golden-hued maple barrels and twice charcoal mellowed. Master Distiller, Jeff Arnett says you should expect "...subtle hints of rich, warm maple and toasted oak on entry giving way to a complex medley of fruit." He added that the double charcoal mellowing process provides an “exceedingly smooth” finish that works especially well with the maple barrels. The extra time and attention required to craft this spirit makes it the perfect dessert whiskey, but means No. 27 is unlikely to remain a permanent addition to the portfolio.     ...There’s no mistaking that maple barrel. It’s aggressive on the nose, offering tons of classic maple syrup and a distinct banana aroma that gives it a strange, almost tiki-like bent. A curious fruity-spicy note underneath invokes notes of raisin bread and maraschino cherries. On the palate, a wave of caramel hits, followed by a load of additional maple character. Spices including nutmeg and cinnamon arrive soon after, followed by waves of overripe fruit. This is a very sweet whiskey, and it only gets stronger and stronger as it develops in the glass and on the tongue. The finish finds notes of milk chocolate and more of that banana character, here becoming almost candylike. Did I mention the maple? The impact of that maple barrel is profound and, frankly, a bit too intense for everyday drinking, culminating in a whiskey that ends up dialed a bit too far to the sweet side of things for may tastes.     A Jack that's more robust than most, aged for over four years instead of just three, thus meeting the standards of the 'Bottled in Bond Act of 1897.' The act also requires that the whiskey be a product of the grain of a single season, made by one distiller at a single distillery, and aged in a federal government-bonded warehouse. The act came as a response to the widespread adulteration in American whiskey around the late 19th century. It was an attempt by the federal government to guarantee the spirit's authenticity.

    This also honors the era when Jack began bottling his whiskey in the signature square bottle (1895). As usual, an added Tennessee touch sees the whiskey charcoal mellowed through ten feet of sugar maple, a reminder of Jack Daniel's commitment to quality.

    The most recent bottlings from Uncle Nearest come with refreshed labels, but more importantly, their whiskey is now 100% distilled, aged, and bottled by Nearest Green Distillery instead of being a sourced product. Spirit began ageing in 2017, which at the time of writing makes this at least 4-5 years old. Each batch is curated by fifth generation Nearest Green descendant and Master Blender, Victoria Eady Butler, who was named Master Blender of the Year by Whisky Magazine for two consecutive years in 2021 and 2022, as well as receiving the same honour from The Spirits Business and Vinepair in 2021. Light on aromatics and feather weight on entry, 1884 slowly crescendoes on the palate in a pleasing wave of dried corn, oak shavings, white pepper and subtle dried peach and banana flavours. Although it doesn't taste overtly young - rather softly spoken and elegant - by the finish it is perhaps a little too woody. Late spices add depth. 46.5% Alc./Vol.

    ...The nose immediately falls in the classic bourbon aroma territory with a soft-medium intensity. It’s more than sufficient and while it doesn't have any surprises, it performs well enough. The palate lacks much depth or body, but the flavors are complementary with its amaretto note and medium-thick mouthfeel being its highlights. Finally, the short and simple finish is the whiskey’s biggest letdown. Overall, the whiskey is straightforward and fairly simple. It’s easy drinking, inoffensive, and completely lacks any youthful notes.     Inspired by the whiskey-maker the world never knew: the first African-American Master Distiller on record in the United States, 'Nearest Green'. It's from Uncle Nearest that Jack Daniel was taught about distilling back in the mid-1800s, so he's undoubtedly a vitally important figure in American whiskey history. The present day brand encompasses a premium aged whiskey, an 11 year old single barrel product, and a 7 year old small batch offering, all distilled, aged, bottled and hand-labeled in Tennessee. '1856' is corn and rye based, and like JD, it's put through the Lincoln County Process of charcoal filtering before bottling.

    Other reviews... Cheerful spices infiltrate the liquorice lead; beautifully mouth-filling and rounded from the get go with immediate corn oil and molasses impact. Excellent, lip smacking vanilla layering ensures considerable complexity; the spices continue their excellent work, now teaming up with a far chunkier degree of hickory.     Indie bottlings from the US usually offer something special. This selection (rumoured to be a George Dickel) from UK's Cadenheads was drawn from two barrels yielding 282 bottles. Their tasting notes describe aromas and flavours of "Smokey oak, maple syrup, thick treacle, lots of vanilla, cigar box and honeycombe sweets with more wood smoke and nougat coming through at the finish". Why do we think it's a Dickel? The clue is in the spelling of 'whisky'. Where JD include the 'e', Dickel do not.

    Other reviews… Good, let’s be an a****le for a minute. They state ‘bourbon’ as the wood type, but can it be bourbon since they’re only allowed to fill new oak? Can some bourbon (including Tennessee) be ex-bourbon? Good, stupid moment over… Oh and yes this is Dickel. Colour: amber. Nose: almost luxurious, extremely soft and caramelly, full of popcorn and gingerbread, maize syrup, Cointreau, praline and nougat, then dried coconut, which might be a tad excessive. Mouth: very easy and soft, sweet, on coconut balls, vanilla, preserved apricots, candyfloss and white chocolate. Tends to go towards café latte too. Drops of Cointreau once again, sweet rye bread, then cocoa powder. Finish: rather long, pleasantly dry. Some marmalade and a touch of lavender and caraway in the aftertaste. Comments: very good too. Rather fascinating to be able to compare these babies, thank you Cadenhead! Am I getting American? PS: looks like once a barrel's left the US, you could indeed do whatever you like with it, including finish it in Port (!) while keeping naming it Bourbon or even Kentucky straight Bourbon, as for example Angel's Envy just did. This no age statement release is part of Lim’s “Extra Oldinory” range, so expect it to be at least middle aged.

    Lim explains her Tennessee whisky is spelt without an ”e” because the distillery in in Cascade Hollow. It's high strength, charcoal mellowed and comes from one of the oldest Tennessee producers - and, no, it's not Jack Daniels! 51.5% Alc./Vol.

Rich notes of caramel and vanilla developing in yellow cake batter with dark caramel, brown sugar, leather, toasted pecans, and hints of walnut, smoked apple, and honey. Then red fruit, baking spice, and complex butterscotch over a palate-coating mouthfeel that’s perfectly warm and balanced all over. As good as it is, it could be better with ten more proof points.     George A. Dickel was a successful merchant living in Nashville when he visited Tullahoma with his wife Augusta in 1867. Six miles northeast of Tullahoma, he discovered Cascade Hollow. Nestled on the Highland Rim of the Cumberland Plateau, this tiny town lies about halfway between Nashville and Chattanooga. The ancient limestone shelf of this plateau provides water than runs fresh and clear from the nearby Cascade Springs, and it made the perfect spot to build a distillery. By 1870, George A. Dickel had distilled his first bottle of Tennessee Whisky. The Distillery is presently run by Master Distiller John Lunn who is continuing this handmade process as set forth by George Dickel and again by Ralph Dupps.

    ...The newest member of the portfolio and worth every penny. It’s the distillery’s 'super-premium' offering, produced in small batches and (for now anyway) small quantities. It is my favorite of the three Dickels from a pure taste perspective, with a lushness, roundness, sophistication and grace not often seen in a bourbon or Tennessee whiskey. All of the flavors of the other two Dickels are in here, and they’re in perfect balance and very tight. (Note: my review was from the first bottling, which was a rectangular-shaped bottle with white lettering. There has since been a second bottling, which I have not yet tasted.) 92 points

    This decanter is a limited edition bottling released by the distillery at the end of 2000. It is one of the latest in a collection of bottles celebrating the honours bestowed upon Jack Daniel's whiskey over the years.

    At the 1904 World's Fair in St. Louis, Jack Daniel and his Tennessee Whiskey shocked everyone when they won the coveted Gold Medal. During that time, Mr. Jack befriended one of the judges, a Mr. M. Hoctor of Great Britain, who encouraged him to export his whiskey to Europe. At a competition in Liege, Belgium, the following year, Mr. Jack garnered another Gold Medal. Word of his whiskey's success was beginning to spread. Sadly Mr. Jack passed away six years later. But in 1914, his nephew, Lem Motlow (now running his uncle's operation), received a letter from Mr. Hoctor informing him of another whiskey competition, to be held at the Anglo-American Exposition in London. Without hesitation, Lem shipped a freshly aged batch of Jack Daniel's Tennessee Whiskey across the sea to this prestigious event. Some days later, he received the results; sure enough his uncle's distinctive product had captured yet another Gold Medal as the finest whiskey in the world.

    When whiskey comes off the stills it's uncoloured and smells and tastes different to what it does after it's been charcoal mellowed or matured in oak barrels. Tasting new-make is often an experience reserved for tourists, however, in this case, there's no need to visit Tennessee. JD are giving you access to sample and/or collect their distillate in its rawest form. The art of charcoal mellowing is the old-time process Mr. Daniels insisted on and one that the distillery still uses today, seeping the spirit through ten feet of hard, sugar-maple charcoal for approximately six days. Mellowing imparts the distinctive smoothness and character synonymous with the Jack Daniels style. Tasting the before and after samples serves to illustrate the impact of the process. Without mellowing, the aromas have extra cereal notes and the taste is more harsh and oily. Pour an ounce of the 'after charcoal mellowing' whiskey into a second glass and you’ll notice its nose and taste is smoother and cleaner with the grainy character almost indiscernible.

    Jack Daniels produce two different Single Barrel whiskies - one standard single barrel, and the “Silver Select” bottled at 100 proof and sold only as an export product. Every bottle of Jack Daniels Single Barrel whiskey absorbs its own personality from the charred oak barrel it matures in, which in turn are influenced by thier location in the warehouses around Lynchburg. For instance, the flavour and dark amber colour of such whiskey comes, in part, from the barrels aging in the upper floors of the warehouses where the spirit enjoys a more ‘intense’ maturation.

    Strictly speaking, Jack Daniel's is not considered a bourbon because it is charcoal filtered through sugar-maple charcoal, prior to aging, which gives it a different flavour profile. The process, called the Lincoln County Process, infuses a sweet and sooty character into the distillate as it removes impurities. However, the Silver Select bottling of Jack Daniels Single Barrel has less of this typical Jack Daniels character, being drier, richer, more complex and more traditionally bourbon-like.     ...The nose is thick, oily, smoky, dense, corn syrupy... it's Jack Daniels. Sweet, fat, chewy, various types of burnt notes: toffee, toast, etc. etc... Quite a sweet, fat and toffeed finale. A quite unique whiskey, at which many American whiskey connoiseurs turn up their noses.     ...Initially, it's earth and fruit. This develops into sawdust, more earth, and bananas. From here, it's green pepper, banana nut bread, and warm corn tortillas over a soft mouthfeel with little complexity.     Bourbon holds a special place in American culture. Its origins are linked to the beginnings of the country. In the late 1700's , settlers streamed westward taking their household arts with them including the art of distilling. They found Kentucky to be ideal for the production of whiskey. Corn was plentiful and pure water gushed from deep underground limestone springs. It is an interesting twist of history then, that the oldest and most well known name in American whiskey production, Jack Daniel's, actually had it's inception in Lynchburg, Tennessee (pop.351) (what'smore, Lynchburg is designated a dry area!)

    Jack Daniels, born in 1846, purchased his own still at the age of 13 and by the time he was twenty, owned his own distillery. His full name was Jasper Newton Daniel, born to a large family (he was the tenth child). Nicknamed 'Jack,' he left home at an early age and learned his craft in whiskey making from Dan Call, a Lutheran preacher In 1904, he entered his whisky in the World Fair in St.Louis and was awarded first prize. Mr. Daniel never married but was seldom without female companionship. Known to be a very kind and generous man, he donated plenty of money to the local churches and charities (and also paid for the musical instruments to start the Original Silver Cornet Band ). When Jack Daniels died after kicking a safe door and contracting gangrene in his foot, the business was successfully carried on by his nephew, Lem Motlow.

    Aged four to six years, the distinctive pungent nose and powerful flavour of Jack Daniel's have made it a favourite around the world; and although some find it too assertive, there can be no denying its quality. Mr.Daniel's promise that 'Every day we make it, we'll make it the best we can' is perpetuated to this day with an almost religious devotion.

    Little known fact... Strictly speaking, Jack Daniel's is not considered a bourbon because it is charcoal-mellowed -- slowly, drop by drop, filtered through sugar-maple charcoal -- prior to aging, which many experts say gives it a different character. The process, called the Lincoln County Process, infuses a sweet and sooty character into the distillate as it removes impurities. Up to and after the charcoal filtering however, the Jack Daniel's production is much the same as any other Bourbon. We'll leave it to you to make up your own mind!

    Jack Daniels envisioned that one day his whiskey would be served around the world. In that spirit, owners Brown-Forman have launched a limited edition series. Originally exclusive to Heinemann Duty free, Tennessee Travelers “Sweet & Oaky” features a balanced grain - oak character with medium bodied flavours of caramel, vanilla & toasted oak and a creamy finish, whereas “Bold and Spicy” features the varied flavours derived from mash bill grains, with notes of caramel, dry baking spices and a peppery finish. Both bottled at 53.5% ABV, it's a pair definitely for the more adventurous. Master Distiller Chris Fletcher adds “The demands of home life and the operations of his distillery never allowed Mr. Jack to venture far from Lynchburg, Tennessee, but he did have wide-ranging aspirations for his whiskey and a deep curiosity about other parts of the world... And in between, he created Jack Daniel’s Tennessee Whiskey. 2010 marks the 160th birthday of Jack Daniel and this limited edition bottle is dedicated to him. A town fire destroyed the courthouse records, and conflicting dates on Mr. Jack's and his mother's headstones have left his date of birth in question.     A limited edition bottling released by the distillery at the end of 2000. At the 1904 World's Fair in St. Louis, Jack Daniel and his Tennessee Whiskey shocked everyone when they won the coveted Gold Medal. During that time, Mr. Jack befriended one of the judges, a Mr. M. Hoctor of Great Britain, who encouraged him to export his whiskey to Europe. At a competition in Liege, Belgium, the following year, Mr. Jack garnered another Gold Medal. Word of his whiskey's success was beginning to spread. Sadly Mr. Jack passed away six years later. But in 1914, his nephew, Lem Motlow received a letter from Mr. Hoctor informing him of another whiskey competition, to be held at the Anglo-American Exposition in London. Without hesitation, Lem shipped a freshly aged batch of Jack Daniel's Tennessee Whiskey across the sea to this prestigious event. Some days later, he received the results; sure enough his uncle's distinctive product had captured yet another Gold Medal as the finest whiskey in the world!     The first Gold Medal to be won by the Jack Daniel Distillery was a special one. Mr. Jack Daniel himself traveled to St. Louis, Missouri, for the 1904 World's Fair, and against all odds, he came back to Lynchburg with the 1904 Gold Medal for the world's best whiskey. To commemorate the 100th anniversary of this special honour, JD offered a limited quantity of the reproduction of the original 1904 Gold Medal decanter that Jack Daniel had helped to design.     Released in August 2015 in the US, this new JD offering replaces "Silver Select", but is only scheduled for release in select duty-free airports around the world. There are at least two variants - a 750ml and this, the 700ml bottling. We've managed to source some at a reasonable price for Australian fans. Bottled at 3% higher strength than standard Jack Daniel's Single Barrel (rated 94 points by Wine Enthusiast), expect some extra punch here.

Tennessee whiskey is just that: whiskey distilled and matured in Tennessee. It's essentially Bourbon, however purists will argue it's different due to an additional step in the production process. Before it's put into barrels, the distillate is filtered through maple charcoal, a technique known as the Lincoln County Process, which is claimed to improve the flavour of the spirit.
