When whiskey comes off the stills it's uncoloured and smells and tastes different to what it does after it's been charcoal mellowed or matured in oak barrels. Tasting new-make is often an experience reserved for tourists, however, in this case, there's no need to visit Tennessee. JD are giving you access to sample and/or collect their distillate in its rawest form. The art of charcoal mellowing is the old-time process Mr. Daniels insisted on and one that the distillery still uses today, seeping the spirit through ten feet of hard, sugar-maple charcoal for approximately six days. Mellowing imparts the distinctive smoothness and character synonymous with the Jack Daniels style. Tasting the before and after samples serves to illustrate the impact of the process. Without mellowing, the aromas have extra cereal notes and the taste is more harsh and oily. Pour an ounce of the 'after charcoal mellowing' whiskey into a second glass and you’ll notice its nose and taste is smoother and cleaner with the grainy character almost indiscernible.
