Tasting note: [Batch 2 tasted] Aged in small American oak barrels that previously held Bourbon, then Tasmanian whisky. Pale gold. Opens with aromas of green wood or balsa, filling out with scents of orange peel, coriander and vanilla. 3-4 minutes ups the sweetness while maintaining the orange theme. Light bodied with attractive ripe citrus flavours and warming spirit. Frail aftertaste hints at coriander and pine. Medium long. 43.5% Alc./Vol. Limited run of 338 bottles.

An aged Gin that references the barrels and blood spilt back in the days of prohibition. This project has been quietly maturing since co-founders Adam Carpenter and Wes Heddles opened at the company’s Gilbert St distillery. They had x Bourbon barrels that had recently being emptied of Barossa Shiraz, re-coopered into a smaller format then re-charred to restore their toasty character. The resulting gin is a big, bold, barrel strength style retaining a gentle shiraz note along with a rich oaked rye back note. Following the trade launch, Carpenter commented, "everyone loved the flavour, the complexity and how different it is to anything else out there, it’s not like any other shiraz gin as there’s no fruit contact, but it’s not your average barrel aged either.” Recommended with soda, in a classic Negroni, gin Old Fashioned or Boulevardier. 60% Alc./Vol.

Tasting note: After ten months inside a 300-litre French oak x McLaren Vale Muscat barrel, the result isn't as sweet as you might expect. Fairly traditional aromas arrive with a fresh and fruity lift, like some novel gin cocktail - you also get a little dried fruit character on the palate, moderated by hints of spiced citrus, cough lozenge and lemon chutney. This chardonnay macerated gin has been aged in a Voyager Estate MJW Chardonnay barrel and infused with a unique blend of botanicals from Margaret River. Whole bunches of freshly picked Chardonnay grapes from Voyager Estate have been macerated for three months in a Juniper spirit, before being blended with individual distillations of Christmas Tree flower, Geraldton Wax, Red Samphire, Finger Lime and Coriander. This is the first time Christmas Tree flower been used in a spirit. This ancient bush tucker, which is endemic to the southern parts of Western Australia, has an enticing earthy and honeysuckle undertone. The Geraldton Wax imparts a liveliness with fresh forest aroma that develops with lemongrass and citrus, while there's a warming saltiness from the Red Samphire. The final maturation in a French oak barrique contributes a golden hue. Hand bottled as a run of 350 bottles, this textural gin tastes like Christmas captured in a bottle. It has a complex and feminine bouquet, with vanilla bean and floral notes reminiscent of a Summer’s day. A honeysuckle sweetness, delicate citrus and fresh forest accents linger on the palate, with a warming saltiness and a velvety mouthfeel. Best enjoyed over ice, as a martini, or with a tonic mixer. Garnish with dehydrated grapefruit or orange. 40% Alc./Vol.

Appealing freshness to the bouquet with piney-juniper, sweet oregano, sage and lemon cough lozenge over a subtle vanilla / smokey clove base note. Light and silky entry with early juniper followed by herbal notes - sage and tarragon in particular. More fruit lozenge-like to finish, fading dry, gently peppery and medium long. Marks a subtle change in trajectory from previous batches, with no compromise on quality. 43.8% Alc./Vol. [BATCH 2]...Overall superb and with the balance improved on the first release; some salivating lemon barley sugar moments at the finish round off a beautifully executed barrel-aged statement. Undisputedly one of Australia's very best Gin producers. First tasted : [BATCH 1] Brilliant clarity in the pale straw gold appearance. Lifted opening scents of lemongrass, pine and juniper; more lemon-barley sugar like in the second pass, retaining good freshness through to an unusual salted lime, lemon sorbet, tarragon and coriander profile finishing vibrant, peppery and dry. Fascinating. 90 points Other reviews... Barrel ageing is nothing new in the spirits business, after all it’s how whiskeys and brandies get their depth, colour and character. In the gin world, the US has been barrel-ageing gin for a few years, while in Australia we have Ginnifer Barrel-Aged Gin from Western Australia and Kangeroo Island Spirits also have a barrel aged gin. Four Pillars have “rested” their gin for 6 months in French oak and created a blend using a solera system (the gin is blended from different barrels of varying ages). The result is a gin with a distinct honey colour and an ABV of 43.8%! The orange aroma so prominent in the Rare Dry in hasn’t survived the ageing process, but instead there is a different sweetness altogether, reminiscent of an Old Tom style, but it finishes on spicy, warm notes. I could also taste a connection with the maltier Genever. The gin botanicals have been blended and rounded into another drink entirely, so it’s silly to compare the original with the barrel aged. And that’s the point I guess. Expanding the gin category and pushing the boundaries of what gin should and could be. Tasting note: [Barrel 0001] This is Sullivan's Cove variant on the original Hobart No.4 Gin. Aged for 18 months in a 300 litre French Oak cask previously used to mature Sullivan's Cove single malt whisky, it features expressive aromas of crushed pine buds, peppercorns, menthol and spiced lemon chutney. Keenly balanced oak input combines with flavours of lemon, juniper and pepper. Creamy and deliciously vibrant. Concludes piney, wonderfully fresh, warming and long. 45.6% Alc./Vol. Notes from the producers... Mr. McHenry's current range consists of a 10-year-old single malt under the Three Capes label, plus a triple-distilled vodka and several gin variants. This cask aged gin is their latest expression, finished in 200L x-Wild Turkey Russell's Reserve Bourbon barrels. Botanicals include, citrus peel, star anise, coriander seed, cardamom and orris root, all beautifully balanced with juniper. Tasting note: Very pale straw blush, otherwise waterlike. Opens with fragile scents of lemon myrtle, pine needle and later suggestions of white pepper. Quite sedate, almost waterlike, with attractive cool mint and light juniper flavours. Delicate spices. Concludes gently peppery and with solid length. 40% Alc./Vol.
