Tasting note: This is the distillery's regular gin, aged in ex-whisky casks for over a year, then infused with laminaria seaweed (kombu). The result has a bouquet suggesting green balsa wood, thyme, lemon grass as well as hints of sea breeze, but with a stronger citrus accent in the mouth. In fact, the wood input is slight. Instead, you get flavours of lemon chutney and juniper combined with frail salinity, finishing with a refreshing astringency. Other botanicals include cassia bark, licorice root, lemon peel, bitter orange peel, cubeb berry and grain of paradise. 47% Alc./Vol. Other reviews... Tasting note: Matured in ex-Martinborough Pinot Noir French oak barrels for three months, this amber gold expression slightly tames the herbaceousness of the distillery's 'Native' gin. Thyme, lemon oregano and tarragon feature on the nose along with hints of Summer pudding. There's an appealing cough lozenge character on the palate, with dried herbs and pepper accented at the finish. 42% Alc./Vol. - $105.00 Bottle$1,260.00 Dozen

Tasting note: After ten months inside a 300-litre French oak x McLaren Vale Muscat barrel, the result isn't as sweet as you might expect. Fairly traditional aromas arrive with a fresh and fruity lift, like some novel gin cocktail - you also get a little dried fruit character on the palate, moderated by hints of spiced citrus, cough lozenge and lemon chutney. Over ice, a nice medley of flavours or try it in a Gin New Fashioned. 43.4% Alc./Vol. - South Australia, AUSTRALIA$99.99 Bottle$1,199.88 Dozen

An aged Gin that references the barrels and blood spilt back in the days of prohibition. This project has been quietly maturing since co-founders Adam Carpenter and Wes Heddles opened at the company’s Gilbert St distillery. They had x Bourbon barrels that had recently being emptied of Barossa Shiraz, re-coopered into a smaller format then re-charred to restore their toasty character. The resulting gin is a big, bold, barrel strength style retaining a gentle shiraz note along with a rich oaked rye back note. Following the trade launch, Carpenter commented, "everyone loved the flavour, the complexity and how different it is to anything else out there, it’s not like any other shiraz gin as there’s no fruit contact, but it’s not your average barrel aged either.” Recommended with soda, in a classic Negroni, gin Old Fashioned or Boulevardier. 60% Alc./Vol. -

This Sardinian craft gin from Zeddiani was barrel aged for 12 months in chestnut barrels that previously held Vernaccia di Oristano wine. Besides juniper, myrtle, thyme, fennel, sage and lemon peel are added to the infusion. Tasting note: Pale straw-gold. Crushed pine buds, light thyme and lemon oregano aromas. Oily entry offers hints of anise and dried herbs, building with peppery warmth. Delicate juniper rounds off an elegant and attractive lighter style. 40% Alc./Vol. - $110.00 Bottle$1,320.00 Dozen

Foremost a Calvados producer, Guillaume Drouin has extended his portfolio with a selection of cleverly crafted gins. This one is based on the original "Le Gin" released in 2015. Thirty varieties of cider apples and eight different botanicals are employed. Each botanical is distilled separately before being blended. The gin is then aged for around six months in former 10-year-old Calvados casks. Tasting note: [BATCH 2017-A tasted] Pours brilliant bright gold. Hits the jackpot with a high-pitched bouquet of apple cider, pine needle, menthol, bright juniper and citrus peel. Much like the nose, only more subdued, this offers piney, woody-juniper like flavours with hints of black pepper as well as apple-cinnamon yogurt through the aftertaste. A barrel aged style in which key botanicals remain clearly expressed. 42% Alc./Vol. - $99.99 Bottle$1,199.88 Dozen

Upon its release in 2013, Hernö was officially the first distillery in the world to age gin in casks made out of juniper wood. The spirit is matured for one month in tiny 39.25 litre barrels before being bottled at 47%. Batches typically yield about 500 bottles, each one finished with a natural beeswax seal. Tasting note: [Batch 30 tasted] Very pale straw blush. Herbal / earthy / fresh opening sniffs are also sappy, resiny, peppery and pleasingly dry. 3-4 minutes finds fresh sawn pine, potpourri and hints of eucalyptus. Creamy, with vivacious lemon myrtle, peppery juniper and thyme flavours and a flare of alcohol lifting the finish. Excellent length and balance. Ends tangy, dry, peppery, lipsmacking. Delightful. 47% Alc./Vol. Unfiltered. Other reviews... Gold medal from International Spirits and Wine Competition (IWSC).
