Jeremy Spencer and Jason Chan’s latest effort is this full strength limited edition gin based on traditional botanicals like juniper, orris root, coriander and angelica as well as less typical ingredients like sea parsley, lemon verbena and Margaret River ocean water. It's a great addition to the West Winds stable. The name references the most brazen, aggressive and fearless of naval war tactics where warships released a close-range barrage of firepower from every gun along one side of the hull.
Tasting note: [BATCH 1 tasted] Brilliant crystal clear, noticeably viscous appearance. Generous aroma yields powerful scents of juniper, mixed citrus peel and lemonade gelato followed by hints of white pepper and lavender. Viscous entry leads into an exceptionally concentrated citrus peel accented profile with hints of juniper and pepper. Finishes delicately bitter, vibrant and poised with controlled spices carrying through to a liquoricey / juniper-like fade. Fantastic length and persistence. The balance at 58% ABV is first class.Other reviews... Tasting note: Creamy nose with a nice integration of juniper, coriander, cardamom, liquorice root, citrus and distant vanilla. Fresher after air contact. Lighter in body than the ‘Gypsy’, with an easy-drinking feel. Medium fresh flavours of juniper, citrus and pepper. Ends dry, almost chalky to finish. 42% Alc./Vol.

Tasting note: Clear. Aromas of lemon peel / lemongrass, white pepper and perhaps, a touch of brine or kelp? Follows through to a light and silky entry with a moderate, peppery burst. Some lemon peel and piney juniper. Medium long. Surprisingly, this feels more like 48% than 58% Alc./Vol.
- ABV 58%
Tasting note: In the absence of traditional botanicals, this evokes cinnamon, ginger, curry leaf, paprika and, unusually, hints of sun-dried tomatoes(?) A smooth, light bodied ‘spiced’ gin for warming cocktails. 43% Alc./Vol.

The Sabre is a uniquely Australian take on a traditional London Dry style. The bright, aromatic flavours are led by an undercurrent of citrus with a dominance of juniper, followed by the classic coriander seed. The addition of wattle seed adds a depth to the mid palate and introduces a creamy texture to the gin. Perfect as a classic G&T with lemon to release the intricacies of this uniquely styled gin.Tasting note: Clear, silvery, slightly glycerous appearance. Powerful aromatics show excellent purity; unashamedly juniper focused issuing a classic piney / woody / peppery scent with an underlying incense-like sweetness emerging with time. Exceptionally soft, smooth texture and super clean; again, juniper heavy flavours dominate and are supported by a gentle peppery warmth. Dry, slightly waxy finish. Subtle anise, juniper and pepper fade. A faultless example of the London Dry genre with loads of charm. 40% Alc./Vol. Other reviews... Launched in July 2013, ''MGC'' doffs its hat to the London Dry style with the two major components being juniper berries and coriander seed. There are 11 botanicals in total with the grapefruit peel and rosemary coming from the garden at Gembrook Hill Vineyard. The other botanicals are macadamia, sandalwood, honey lemon myrtle and organic navel orange, all sourced from Australia. The exotics in the mix are angelica root, orris root and cassia bark. Each botanical is distilled separately and then blended to a proprietary recipe – essentially a winemakers approach. They employ a copper pot baine-marie alembic still traditionally used for making perfume. This allows the preservation of the delicate nature of the botanicals. The final component is the water used to break the gin back. MGC use Gembrook rainwater which is pure and fresh and allows the botanicals to shine through. At only 60kms from Melbourne this local source contributes to the definition of the unique “Melbourne Dry Gin” style. The final product is not chill filtered.

"We didn’t want to take out the oils that contribute so much to the aromatics and mouth feel of the gin" comments distiller, Adam Marks. "So when the gin is very cold the oils become slightly insoluble and form a light haze. The French use the word louche to describe this. In a different context someone who is louche is of a shady character! Each bottle is numbered to reflect the small batches in which it is made."
We look forward to tasting this new Aussie gem soon!
Distilled with 13 botanicals, rather than four or five which is more typical, this wonderful new Australian gin includes natives such as lemon and anise myrtle, sage and pepperberry, while the citrus profile is derived from kaffir lime and ruby red grapefruit, which distiller and owner, Kylie Sepos says is a lot softer than using lemon or lime citrus. The signature botanical is native bee sugar bag honey. Kylie has developed cocktail recipes for the gin but her personal favourite is the negroni. “It stands up really well with the Campari,” she says “which can be quite overbearing with a lot of gins, so I wanted to make sure my gin had enough botanical presence that it can stand up to that Campari, which I am really happy to say that it does.” Tasting note: [Batch 10] Fresh juniper and pepperberry aromas over hints of anise, lemon sorbet, grapefruit and white pepper. Vivacious , full bodied and deliciously textural with a superb medley of herbal / citrus / pepperberry and piney juniper flavours. Ends creamy yet vibrant with lime juice, hints of anise, beeswax and pine buds in a lingering, fresh, tangy aftertaste. Great new gin. 48% Alc./Vol.

Tasting note: Dense juniper focus to the nose, mingling with cardamom, peppercorn, evolving liquorice root, coriander and lemon peel. Expansive. The juniper comes laced with Indian spices, accentuating through the finish. Ends liquoricey, menthol-fresh, delicately piney, peppery, long. 57% Alc./Vol.
