Ends bright and spicy with hints of lemon barley sugar and orchard fruits. Great length and mouthfeel. Pristine barley is the focus from start to finish. 46% Alc/Vol. Non chill filtered. ...Impeccable balance from start to finish; clean and structured. The nose is floral and fresh with jasmine, freesia, and apple blossom, plus green pears, lemon, talcum powder, and almond cream. Lemon, coconut, and vanilla form a sweet bright palate that revels in its celebration of malt: Think of apricot jam in a shortbread thumbprint cookie. Sweet and clean finish with persistent lemon, vanilla, and mouthwatering oak.

Bright fino sherry yellow color; impeccable purity. First scents after the pour are all about new saddle leather/leather gloves, sour malted barley, new spirit, grapefruit then the later sniffs detect more of the grapefruit and a touch of lime but the oak remains hidden while the barley dances a jig. Entry reinforces the grapefruit/tropical fruit asset while the midpalate goes more grainy/malty and sap-like, almost but not quite succulent. Finishes medium long, slightly resiny, leathery, lean but not austere and pleasingly youthful and sprightly. 3 Stars / Recommended - spiritsjournal.com

Drinks as a silky, medium bodied amaro with attractive fruitiness countered by a surge of bay leaf, peppermint, citrus peel and delicately bitter, drying, herbal tea-like notes at the finish. Classic Cocktail: Pina Colada
The Piña Colada was originally just the juice of a fresh pineapple served either strained (colada) or unstrained (sin colar). One of the earliest references to a drink called a Piña Colada, containing Rum, Coconut and Pineapple was from the April 16, 1950 edition of the New York Times: 'Drinks in the West Indies range from Martinique's famous rum punch to Cuba's piña colada (rum, pineapple and coconut milk). Key west has a variety of lime swizzles and punches, and Granadians use nutmeg in their rum drinks.' The Pina Colada is a delicious, fragrant and mellow drink in itself -- rapidly shaken up with ice, sugar, lime and white rum in delicate proportions.

Since the Trijol family originally settled as growers and distillers in St Martial Sur Né, in the heart of the Cognac region, they have built on their expertise as growers and producers, becoming full time distillers in 1962. This dual facility maximises quality control throughout the entire production process. Big brand houses (Courvoisier, Hennessy, Martell, and Rémy Martin) do very little distilling themselves. Rather, the 5,000 independent farmers in the region create the majority of Cognac in their own pot stills. The large houses then focus on managing the complex processes of storing, maturation, blending and marketing.
Remaining an independent family firm, Trijol has twenty 2,500 litre charentais pot stills and is now one of the region's biggest distillers, actually supplying many of the larger houses. More recently, the company has concentrated on releasing its own cognacs, which have quickly established a reputation for high quality.

This release is part of Trijol's "Grande Champagne Collection" which includes six cognacs of varying ages. To seal the deal, it comes handsomely presented in a sleek decanter.
Tasting note: Bright topaz. Excellent glass cling. Opens shy but builds opulence with suggestions of dried fig, nectarine, dates, extra-aged muscat and rancio. Air contact and swirling shifts the bouquet towards orange spice cake, light cinnamon and fruit pastry. Medium to full bodied; sweet oak leads, being momentarily lean, finely tannic; Mid palate bursts with dried apple, pear, fig, nectarine and cream. Comes together beautifully at the finish with vibrant white pepper, cinnamon and lingering cigar box. Impressive length. Beautifully composed XO that continues to evolve with extended breathing. 40% Alc./Vol.

Everybody knows that the Russian and Polish national spirit, made from rye malt and often potato starch, is vodka. However, one of the best value premium vodkas on todays market actually comes from Sweden. This superb, neutral vodka first appeared in 1979. Distilled from grain grown in the fields of Southern Sweden, Absolut was conceived as a pure product with its own peculiar Swedish identity. The distinctive bottle design was inspired by an antique medicine bottle, while the minimalist logo and absolutely clear glass emphasise the simplicity and purity of the product.
Flavouring vodka is an age old Swedish tradition. Absolut Raspberri is the latest addition to the Absolut flavoured vodka range. Feel the intense burst of natural raspberry blended with the finest vodka distilled from grain grown in the rich fields of Southern Sweden.
Tasting note: The opening perfume is extremely raspberry-like; aeration tones down the jammy intensity a little as the bouquet turns seed-like. The palate entry is fruity, mildly sweet, ripe and pleasant; at midpalate there's a slight embers-on-the-tongue warmth that accompanies the ripe raspberry flavor. Ends comfortably fruity and acidic.

Created by following an "Italian Bitter of Turin" recipe dating from the 1860s. The recipe was purchased in 1925 by the small Swiss distillery E. Luginbühl, and a version has been produced for mostly local consumption ever since. Tempus Fugit's Gran Classico reverts back to the original recipe and employs a maceration of 25 aromatic herbs and roots including wormwood, gentian, bitter orange peel, rhubarb, and hyssop. A must have in the cocktail armoury for Negronis or as a non-red alternative bitter ingredient.
Tasting note: Beautiful polished copper colour with deep gold edges and thick legs. Sensational aromatic range with the gentian / bitter peel top notes leaping out of the glass over background aromas of pink grapefruit, orange and dried herbs. Creamy textured, semi-sweet mid palate is eclipsed by a juicy, bittersweet cascade of orange peel, grapefruit and gentian-like flavours. Finish demonstrates ideal bitter-sweet balance as the rooty, earthy notes vie against the sugars until the bitterness finally wins out. Superbly crafted. Benchmark in its category. 28% Alc./Vol.

Clairin Sajous is from the village of Saint Michel De L'Attalaye. Third generation member of the family Sajous, Michel Sajous built the small distillery in 2004, located in the middle of a 30 hectare plantation growing different varieties of sugar cane among which is the rediscovered Cristalline. The cane is harvested and then transported to be distilled at the Chelo distillery under the direction of Michel. Diverse yet surprisingly agreeable aromas are moderately caney, raw sugar-like then briney with yeasty scents evoking sour dough and fruit bread. Further air contact turns this grassy-sweet, finally leaning towards toasted marshmallow and beeswax. Amply spicy attack is oily, juicy, semi-sweet with a thrust of warming spirit and flavours of marzipan, dried herbs and white pepper. Ends salty, delectable, super long. Founded in 2006 by German bartenders Stephan Berg and Alexander Hauck, The Bitter Truth Company were one of the first to revive a wide range of classic cocktail bitters on the retail market for modern day mixers. Today they produce a range in excess of ten flavourings, along with the occasional special batch release - their 'Dried Fruit Bitters' special release was commissioned to partake in the "World's most expensive cocktail" served in Dubai.

Today the company enjoy worldwide distribution for what was once a hobby craft, and are considered among the best for true flavourings as evidenced by the accolades attributed to them.

With its origins in Jamaica, Pimento dram is a liqueur made by macerating pimento berries (also known as allspice berries) in rum and then adding sugar. English explorers coined the term allspice because the berry seemed to embody the flavours of cinnamon, nutmeg and clove all at once. Its intense flavour is indispensable in many Tiki drinks where the rich spicy flavours of the pimento berry are used to great effect. Pimento dram can also be used for interesting substitutes in some modern drinks that typically use herbal liqueurs like Benedictine or Jägermeister.

McLain & Kyne is not a distillery, but a 'non-distiller producer' located in Louisville Kentucky. Founded by well known Bourbon historian, Chet and son Trey Zoeller over fifteen years ago (1997), they often source small unique lots of Bourbon which larger distilleries don't find profitable enough to distribute. Roughly 3-4 different bourbon recipes from 8-12 barrels are blended to create the varying ‘very small batch’ Jefferson's labels (Jefferson’s, Reserve, Presidential and Rye) – a miniscule number compared to other ‘small batch’ offerings that often blend up to 200-300 barrels per release.

Other Reviews...The whiskey’s formula has been improved, and now consists of a higher percentage of older whiskies (into the high teens) than the original release (which I rated 81). Peter Bignell is a true renaissance man – farmer, sculptor, engineer, coppersmith, environmentalist and bio-fuel chemist, and now the distiller of Australia’s first 100% Rye spirit. Peter applied his sculpting and engineering nous (the same abilities employed to restore the historic Nant Water Mill) to build his own 500 litre copper pot still, which he direct fires with his homemade bio-diesel (also used to run his tractors and heat his house).
Keeping things on a self sufficient and sustainable course, the rye grain he uses is also from the family’s Bothwell property. Originally planted by Peter at the tender age of fifteen to feed the property’s livestock, the same field now feeds his still, while the remaining dried mash goes to a swine of pigs where the cycle comes full circle as manure.
Peter's rye whisky has now spent several years in barrels ranging in size from 50 litres to 200 litres. This is his inaugural release, along with a cask strength version. The whiskies have not been chill filtered.
Tasting note: [Batch bottled 2.9.2013, 42% Alc./Vol.] Bright gold appearance. Immediately appealing and distinctive with its dill / pickle opening scents. Second pass offers chamomile tea, hints of boiled lolly, cedary oak and peppermint. A light, silky entry follows through to a super smooth and quite delicate profile featuring medium dry flavours of chamomile tea, sour dough bread and unusual notes of dill and caraway. Dry, mildly tannic finish. Aftertaste is subtle but shows good length.

One of Moulin Touchais’ more elegant renditions finishing wonderfully deep and fresh with an almost refined feel.

The wines of Moulin Touchais begin reaching their peak after twenty years, and many of the great vintages will take much longer. Vintages such as the 1953, 1959, 1964, 1969 are still maturing. The 1945, 1947 and 1949 have become classics. Moulin Touchais are the only winemakers in the world who give a century long guarantee on the longevity of their wines (subject to being kept under optimal cellar conditions). Bottles may show some sediment or deposit. One should understand this is due to the traditional filtration process, the main aim being to protect the colour, the bouquet and the depth of flavour of the wine.
Looking decidedly more youthful than the 2009 vintage, the 2002 features a bright yellow straw core with gold tinged edges and a pale straw hue. Springing from the glass are fresh spicy pear, bees wax and ripe peach aromas which mix with flashes of lemon butter, honeyed quince and cinnamon. Rich and lusciously textured yet showing remarkable freshness, this is one of Moulin Touchais’ more elegant renditions. Honeyed peach and quince fruits are featured over notions of dried pineapple, apricot and delicate cinnamon spice. Beautifully balanced it finishes wonderfully deep and fresh with an almost refined feel.

The Irish took out the top prize at the 2019 World Gin Awards. This one comes from Blacks Distillery located in the scenic town of Kinsale in County Cork. Along with the gin, they distill their own rum and whiskey. Thirteen botanicals are used including juniper berries, coriander seeds, licorice, orris and angelica root, refreshingly balanced with citrus and spice.
Tasting note: [20ml sample] Vaguely earthy / rubbery aromas present in the initial pass (latex, rubber band?) ...atypical for gin. Better after 2-3 minutes air contact revealing moderate piney / woodsy / juniper scents as well as coriander, citrus and hints of kelp. Good concentration to the vibrant juniper, liquorice, coriander and orris root-like flavours. Builds definition with sustained freshness. 42% Alc./Vol.

A six year old Bas Armagnac produced from Ugni Blanc and Folle Blanche with a splash of Colombard and Baco. Located in Sorbets d’Armagnac, Château de Laubade is surrounded by 260 acres of vineyard. Since 1998, the third generation have been actively involved making the label a reference in the Armagnac category, with Arnaud and Denis Lesgourgues at the helm.
Tasting note: Bright polished brass. First pass presents mildly green / grassy / vegetal notes as well as roasted herbs; quite lean and peppery for the genre. 3-4 minutes does little to coax beyond a woody, astringent nose-feel. Follows through in a medium bodied, drier-styled brandy with restrained plum and dried fruit notes. Finish brings a vanilla aspect; fades warming, brisk, understated with white pepper and cedary oak through the aftertaste. 40% Alc./Vol.

As the name suggests, this is a port version of Amrut’s Intermediate Sherry. The spirit is matured in both unused casks and bourbon casks, then spends a few months in port pipes, and then returns to bourbon casks. Described by Malt Advocate as a "port pipe sandwich...resulting in a Pink Floyd show of a whisky." A penetrating, gently prickly bouquet offers up aromas reminiscent of prune, pipe tobacco then sweeter scents of dates and dried red berries. Gently bittersweet entry. Peppery with a delicious sweet flourish of fruit cake and dark chocolate rounded off by cigar box through the fade. Huge. Easily one of the most compelling Port-finished whiskies we've tasted to date. 62.1% Alc./Vol.

“Samsara”, meaning ‘rebirth’ represents Bladnoch's inaugural release since new ownership. Aged for a minimum of 8 years, this was matured in first fill ex Bourbon casks and first fill ex Californian Red Wine casks – both American Oak. Light amber-gold, sweet opening aromas of gobstopper and vanilla are followed by fresher notes of lemon mousse / lemon butter, stewed pear and muesli. An easy entry builds to a medium-weight dram with appealing fruit slice flavours, threads of sweet smoke and gentle spice. The finish accents vanilla malt and dunked tea biscuit. Moreish everyday drinking whisky with good body. 46.7% Alc./Vol. Non chill filtered.
Other reviews... Initially slightly savory on the nose, then peaches and cream, and soft spices. The palate is supple and sweet, with vanilla, mango, and passion fruit. The finish is long, with spicy pears. Drier spices emerge and ultimately, light tannins. Pours with a frothy white mousse that holds well. A very persistent and exceptionally fine bead threading its way through a pale straw coloured base that has pale gold edgings. Pear, citrus and yeast lees aromatics combine with baked bread and subtle brioche notes. Quite creamy and airy in its feel the palate is layered with baked pear, yeast lees and citrus flavours with some bready characters and oily toast like nuances in the background. Finishes crisp with a long lacy aftertaste.

'Farigoule', which means 'thyme' in Provence, has been employed to create this wonderful liqueur with which to finish the meal on a light, fragrant and sweet note. Fresh, young, wild thyme is picked at the beginning of summer and combined with other botanicals including angelica and sage. Tasting note: Pours a viscous pale yellow green with a pale straw hue. The top note of fresh cut thyme subsides to reveal nuances of aniseed, peppermint and some faintly resinous notes (beeswax?) making for a complex bouquet. 'Suze' was created in 1889, at the Rousseau, Laurens and Moureaux distillery in the outskirts of Paris. To differentiate his product from the many wine based aperitifs of the day, Fernand Moureaux decided to create an aperitif from the Gentian plant, a yellow Alpine flower with massive roots that dig deeply into the flanks of mountains. It is these same roots that are used to prepare the base material of the liqueur.
Legend has it that Moureaux bought the formula from an old distiller in the Canton de Bern on the Swiss Jura Mountains where Gentian thrives, and where the river Suze flows. Here, Hans Kappeler had been selling "Or des Alpes" to the locals for years as a remedial tonic. Late in his life, sick and almost financially ruined, Kappeler may well have taken the opportunity to sell his creation to the French negociant. The story goes he convinced Moureaux that one day his liqueur "would flow in France like the Suze", in reference to the river passing through the village.
A more prosaic version has it that the aperitif was named after Fernand Moureaux's sister in law, Suzanne Jaspart, who enjoyed the drink during sessions of tennis. Regardless, Suze became a sensation due to its original flavour. A testament to its popularity is the plethora of advertising material that was produced around the brand by illustrious artists including Pablo Picasso, and the nickname it received from fans - "The Yellow Fairy!"
In the present day production of Suze, wild Gentian is still sourced from Jura, but also from Auvergne where other famous brands of Gentian liqueur are still produced. The modern-day Suze is much sweeter than the original recipe, but still includes all of the aromatic plants in its formula, though exactly which remains closely guarded.
The gentle alliance of sweetness and bitterness is the trademark of this aperitif, which continues to be the biggest selling in its category. It also makes it hugely versatile:
- Try it neat or on the rocks: Traditionally enjoyed chilled as a pre-dinner drink. Pour it over a single ice cube, let it dilute slightly to cut the sweetness, and enjoy as the French do.
- Suze Tonic: Mix 1 part Suze with 3 parts premium tonic water over ice, and garnish with a twist of lemon. The quinine accentuates the herbal, medicinal notes of the gentian root, making it a fantastic low-alcohol alternative to a standard Gin & Tonic.
- In a White Negroni: Substitute Campari with Suze in a classic Negroni (mix with gin and dry vermouth) for a lighter, more herbal, and floral cocktail.
- Suze Spritz: Combine 50ml of dry white wine or sparkling wine, 50ml of Suze, and 25ml of soda water over ice with a lemon slice

Tasting note: [Batch 32] First matured in a once-used barrel that matured bourbon for a decade, the Widow Jane team added some fresh cut Applewood staves to the mix. Lighter and more Bourbonesque on the nose than the American oak version, this has mint, rock lollies, and juniper-like freshness to the nose. With air contact, oak shavings and a little caramel enter. Soft and accessible, the palate offers understated applemint and spicy rye flavours, ending fresh and finely tannic. The Giraud family have been growing grapes around France since 1650, yet only decided to produce Cognac under their own name in the 1980s. A long time associate of Giraud informed us "He became frustrated selling his thirty-five year old cognacs to Remy-Martin. His cognac was destined to become a part of the blend, Louis XIII [currently selling for around A$3000.] This was a very brave move during such times - he was one of the first to do so, but we are thankful he did, he paved the way for many more to come."
Produced from Ugni Blanc and Folle Blanche grapes grown on the family's vineyards located in the heart of Grande Champagne, this venerable Cognac has been aged in excess of 25 years.
Tasting note: Pretty gold amber colour. Sauternes-like opening sniff is superbly pure in its dried apricot, honey and candied fruit delivery. Second phase finds no diminution in the stunning honey, cream and apricot aspect with sweet spices (vanilla and clove) entering the mix. Returning to the glass several minutes later introduces rose petal and hints of mandarin peel to round off a dazzling cognac bouquet. Palate is concentrated / full weighted but graces through the mouth with a sense of lightness; dried fig, cedary oak and toasted almond feature. Finishes gently tannic, lip smacking and dry; the yellow fruit phase is again suggested in the aftertaste - in particular apricot - followed by a prolonged, subtle vanilla and toasted almond fade. "The obliteration is total. Only the name remains." So ends the story of Stronachie, a distillery which rose out of the wilderness in the 1890s. Set in a desolate glen on the Perth-Kinross border it stood between bleak hills on an isolated road that toiled its way through the Ochill mountains. Stronachie Distillery produced a traditional Highland-style whisky until 1928 and during its four decades of production A.D. Rattray Ltd represented the brand in Scotland. Rattray is proud to revive the Stronachie name and reproduce this spirit of another time. To replicate the whisky, a bottle of original Stronachie 1904 was purchased at auction - one of only four bottles left in existence. A small sample was drawn, then samples of many Highland malt whiskies were compared to the original Stronachie. Finally, the remote and high altitude Benrinnes was chosen.
There are many, many very positive user reviews on the web for this pale gold, Bourbon cask matured dram. The nose is pristinely clean with malt and vanilla opening sniffs followed by oatmeal biscuit, cocoa and dried fruits. Light and easy on entry, building concentration and balance through the mid palate with lovely vanilla malt and honeyed notes framed by spicy oak. The finish is dry, mildly fruity and soft. So eminently drinkable, you can understand why Stronachie has developed such a loyal following. 43% Alc./Vol.
Other reviews... A quite outstanding 10 y.o. Speyside. I don't remember how I 'found ' Stronachie but boy am I glad I did. For it is simply the best 10 y.o. I have ever tasted, and is in my top five whiskies of all time. I am a tour guide for the American market and visit a lot of distilleries all over Scotland, so although not 'an expert' I have learnt a lot in the last six years. I have repeat ordered this whisky more times than any other and all friends and others who have tasted it agree with my praise of it. Bruichladdich revived the Port Charlotte name after the old Lochindaal distillery (also known as Port Charlotte distillery) - operational between 1829-1929 - in the town of Port Charlotte, only two miles south of the Bruichladdich distillery. Historical accounts from legendary British documentarian Alfred Barnard, knew Lochindaal to produce only heavily peated style malts, which today have been replicated to great success. It started as PC5 with a yearly follow-up. This release of 24,000 bottles has reached 7 years of age. Bottled in 2007 at 61% ABV. One only to sell.

A superb aged Tawny that if tasted alone would be regarded as the ultimate expression of a fortified wine, however, on the day it was tasted alongside the extraordinary Seppelt DP 90 Rare Tawny – which is an absolute must. Very deep orange onion brown colour with deep olive green rim. The nose is distinctive with strong rancio notes followed by walnuts and very fine aged brandy. The palate is mouthfilling with complex layers of walnuts, new leather and spice over a strong rancio background. Exceptional length. Perfect balance – wonderful harmony of flavours followed by an exceptionally long rancio almond and walnut aftertaste.

The nose on this NV Grandfather Rare Tawny (tasted in December 2024) leads with mejool date and blood orange rind, licorice, nutmeg and clove, dark chocolate, raisins and roasted walnuts. It is magnificent. On the palate, this is rich and oxidative, with endless layers of opulent fruit, nuts and spice, with warming spirit through the finish. Winemaker James Godfrey is hailed in Australia for his longstanding and unwavering skill with fortified wine production, and the sleek masterclass that is this wine is testament to that. The acidity is strict on the palate, and this serves to balance the wine through the seemingly endless finish. The drink date seems a little useless, as the wine will drink interminably if stored correctly. 19% alcohol, sealed under natural cork.

A cask strength buying opportunity you won't want to miss.
Launched in early 2015, this bottling marked Tomatin's foray into core-range cask strength malt. Combining Sherry and Bourbon casks, its feisty alter-ego defied the distillery's reputation as the "Softer Side of the Highlands" and its affordability gained traction with value hunters. Sulphur sensitive Jim Murray has tasted several batches since 2017 forming a love/hate relationship: "I could weep: these sherry butts are dripping with juice. But then, sulphur taint leads to the whisky's downfall." Five years later he followed up with "Stunning malt climax on delivery, but always undone by a dull, persistent off note from the cask." Our recent tasting didn't detect much in the way of sulphur, however, at first, the bristling spices do make for an intimidating whisky. It is also one of those surprise drams that require air contact to settle the alcohol - hours, even days - after opening. The flavours start out on the gristy, green, grassy side, only to develop buttery, malty depths with vanilla and crisp oak leaving little less than a trace of sulphur in the aftertaste. It's not geared towards complexity, but it is classic Winter drinking. If you can't handle the heat, you can always add water (it's also great for beefing up lower strength malts in your liquor cabinet). Less than a handful of natural strength bottlings around $100 deliver as much punch and mouthfeel, so grab a few while you can - it may never be this cheap again! 57.5% Alc./Vol. Non chill filtered.

In 1874 M.W. Heron, a bartender, developed Southern Comfort in his bar near La Rue Bourbon in New Orleans and first served it in traditional fashion from a whiskey barrel. In 1934 after a short break in production due to Prohibition, Southern Comfort introduced their current distinctive label featuring the now famous Currier and Ives lithograph of a Southern plantation house on the banks of the Mississippi. Spanish for Bordeaux, "Burdeos" is Patron's super-premium tequila finished in casks from the famous French wine region. The production process is unusual to say the least - after an initial distillation, the spirit spends a year in American and French oak barrels. It's then distilled again, then racked into x-Bordeaux red wine barrels which contribute additional complexity - in particular flavours of vanilla, raisin and dried fruit.
To complete the package the bottle is presented in a gorgeous display case. Apparently, the taste is as impressive as it looks. Be tempted!

This spirit was inspired by the original recipe that made the House of Pernod famous at the beginning of the 19th century.

The Absinthe Story...
Absinthe was invented at Couvet in the Canton of Neuchatel, Switzerland in 1797 by Dr. Pierre Ordinaire. It became popular in the French army in the early part of the 19th century as an antidote to fever. Henri-Louis Pernod later opened the first Absinthe distillery in Switzerland and then moved to a larger premises in Pontarlier, France in 1805. By the 1850's it had become the favourite drink of the upper class. Originally wine based, a blight in 1870's on the vineyards forced manufacturers to use grain alcohol as a base. This increased its affordability and the drink quickly became popular amongst bohemians. Artists and writers like Van Gogh, Baudelaire, and Verlaine, to name a few, believed Absinthe to stimulate creativity. Most days started with a drink of “La fée verte” (the ‘green fairy’ as it became commonly known), and ended with “l'heure verte (the green hour) as one or two (or more) were taken as an apéritif.

However, in the 1850's, there began to be concern about the results of chronic use. Absinthe was believed to produce a syndrome, called absinthism, which was characterized by addiction, hyperexcitability, and hallucinations. This concern over the health effects of absinthe was amplified by the prevailing belief in Lamarckian theories of heredity. In other words, it was believed that any traits acquired by absinthists would be passed on to their children. Absinthe's association with the bohemian lifestyle also worked to compound fears about its effects, much as has happened with marijuana in America. Absinthe was subsequently banned in many countries in the beginning of the 1900's.

The remains some question as to the active component or components of absinth. Alcohol is obviously one main component. However, another primary candidate is thujone, a monoterpene which is considered a convulsant. Thujone's mechanism of action is not known, although structural similarities between thujone and tetrahydrocannabinol (the active component in marijuana) have led some to hypothesize that both substances have the same site of action in the brain. Thujone makes up 40 to 90% (by weight) of the essence of wormwood, from which absinthe is made. Thus, thujone would appear to be a good candidate for a second active component in absinth.

Absinth today has made a fashionable comeback and is now readily available in the U.S., much of Europe and now Australia. Pernod Absinthe is a high octane example of the genre (68% alc./vol.) It has a full, rich mouthfeel blending aniseed and fresh citrus notes. Despite the alcoholic strength, the drink is surprisingly smooth. Pernod with absinthe plant extracts can be prepared in the traditional way by carefully pouring chilled water over a sugar cube held in an openwork spoon, or without sugar, diluted with five to seven parts chilled water.

It is believed that the mirabelle plum was cultivated from a wild fruit grown in Asia Minor. It's identified by its small, oval shape, smooth-textured flesh, and especially by its dark yellow colour which becomes flecked in appearance. They are known for being sweet and full of flavour. The fruit is primarily used in jams and pies, and its juice is commonly fermented for wine or distilled into plum brandy. Ninety percent of mirabelle plums grown commercially are made into either jam (70%) or eau-de-vie (20%) or liqueurs like this. Of course, the plums are also excellent when eaten fresh.

Vedrenne has been making its liqueurs since 1923 in Nuits-Saint-Georges, in the heart of Burgundy in the middle of the Burgundian orchards. The company initially won recognition with the outstanding quality of its Crème de Cassis. Following the huge success of Heaven Hill's Rittenhouse 100 proof Rye, the re-invigorated Pikesville brand has made a similar comeback. First produced in Maryland in the 1890s, Pikesville was shuttered by Prohibition. As the rest of the industry closed up, the brand reemerged to become the last standing Maryland expression. The contemporary iteration is drawn from extra-aged barrels stored in prime warehouse locations. Whether you’re a straight rye fan or simply love the unique flavour it adds to cocktails like the Manhattan or Old-Fashioned, this 110-proof, six-year-old powerhouse will take your pleasure to new heights, beginning with piercing, peppery rye aromas including a minty edge that doesn't give up, complexed by unripe granny-smith, grainy accents and finally, sweeter vanillas. Vibrant, chewy and sustained, the flavours roll out in a text-book, fat, oily rye delivery, the controlled spices tempered by fresh oak and apple mint. This vivacious style clearly builds off Rittenhouse but takes it to the next level. Although the mash bill isn't stated, it's “at least 51% rye,” (corn and barley making up the remainder) and apparently two years older than Rittenhouse BIB - which would account for the step up in refinement. 55% Alc./Vol.
Other reviews... Pikesville finally fills a gap in the marketplace by being a readily available, easy to drink high proof rye with mass appeal that deserves a spot on everyone’s must try list. This is a fantastic addition to Heaven Hill’s rye lineup. While the proof is high, it serves to amplify the fantastic flavor profile rather than impose a lot of burn, making it very enjoyable neat. Additionally, while Pikesville contains a more fruit-forward flavor profile due to the fact that this is most likely a barely-legal rye, the high yet manageable proof helps add to the illusion that this is a spicier rye than it really is. This should allow both bourbon lovers and hardcore rye lovers alike to appreciate it. On paper this may seem simplistic in nature, but in execution, this is one of the best everyday ryes you can currently find on the shelf. ...Heaven Hill’s 80-proof standard Pikesville is a summer favorite, so I was eager to try this. A woody depth to it at 6 years old: 110 proof-hot, stewed plum and horehound candy, and sizzling rye spice behind it. It's a jawbreaker: full and hot in the mouth, with sweet grassy spice, bitter rye grain as it progresses, and crackling sugar near the end, just before it all smooths into a savory layered finish. Chilean Pisco is a distillate mainly of grapes from the Moscatel family, which are grown primarily in the semi-arid "little North" zone of Chile. Chile claims Pisco as its own, protecting its quality through strict adherence to regulations which permit production and processing only in the administrative regions of Coquimbo and Atacama.
Alto del Carmen is produced just outside of Vicuna in the beautiful Elqui Valley. Tucked away in the high altitudes of the Andes, the wine-growing region is renowned for its Muscat grapes. This example is double distilled in small batches, predominantly from Muscat, however Pedro-Ximenez and Torontel grapes may also make the grade. Aged at least six months in American oak barrels, then triple filtered and bottled at 80 proof, expect fresh grape aromas and a satiny textured brandy that's also pleasantly warming. 40% Alc./Vol.

Alfred Labounoux's gentian root liqueur was first created at his family's distillery in the late 1800s. He named this new aperitif after the village of Salers where gentian grows wild on the volcanic slopes of Puy Mary.
'Gentiane Lutea' takes about twenty years before it can be harvested and only flowers every two years. A specialised “devil’s fork” is used to uproot the plants in an arduous process that has defied industrialisation. The roots are washed and crushed while still fresh, then steeped in neutral alcohol for several weeks. After maceration is complete, the roots are distilled to extract additional flavour. The infusion and the distillate are then aged in Limousin oak barrels for two years, tempering the root's characteristic bitterness.
Salers continue to make their Gentiane according to Labounoux’s original recipe, capturing the bright earthiness of gentian with floral, vegetal, and subtle citrus notes. It's recommended in a White Negroni, Grapefruit Spritz, or mixed with crème de cassis and sparkling water for a refreshing aperitif. 16% Alc./Vol.

Established in 2015 on Tassie's East coast by Cam and Suzy Brett, the Spring Bay whiskies are distilled in a 1200 litre locally made copper pot still and employ coastal rainwater which is both soft and sweet.
Tasting note: [10ml sample] Deep copper. A little shy on the nose revealing sweet malt infused with dates and fruit cake. Builds slowly. Controlled sherry input; hints of tea biscuits, fruit'n'nut dark chocolate... finishes brandy-like, dovetailing into a superb thread of ginger snaps and lingering sticky date. Great after dinner malt with textbook balance. 46% Alc./Vol.
Notes from the distillery... Colour: Dark Copper. Nose: Caramel & raisins. Palate: Lifted floral notes, caramel and dried fruit sweetness with some white pepper savory hints. Finish: Delicious long and slightly dry finish which is indicative of some very fine old wood. A slightly smokey note that suggests peat but comes from the heavy cask charring.

Distilled in 1980 and bottled in 2019, this exceptionally old vintage dated release resulted in a limited run of 484 bottles. 40% Alc./Vol.
Since the Trijol family originally settled as growers and distillers in St Martial Sur Né, in the heart of the Cognac region they have built on their expertise as growers and distillers, becoming full time distillers in 1962. An independent family firm, Maxime Trijol has twenty 2,500 litre charentais pot stills and is now one of the largest distillers of cognac supplying many of the larger houses. In recent times the company has concentrated on releasing more of its own cognacs, which have been building a great reputation for quality, including rare vintage bottlings. This example is all the more unusual being produced exclusively from fruit sourced from 'Fins Bois' - a lesser known appellation that surrounds all three of the major crus making it the largest zone in the region (354,200ha). Chalky soils over a hard limestone base produce brandies that are known to peak fairly quickly, around 10-12 years, so they're often used to soften the harder edge of the better Cognacs when young.

What started in the early part of the 20th century as an effort by a handful of enthusiastic entrepreneurs has evolved into a prosperous corporation with international recognition. Today the 'La Nacional' company has an extensive range of products which account for 98% of the domestic spirits market in Guatemala. Their rums marketed under the Ron Zacapa label stand out for two reasons: Instead of molasses, they're produced using sugarcane honey (fresh sugarcane juice condensed and filtered). Secondly, the rums are distilled at sea-level but aged in the town of Quetzaltenango at an elevation of 2300 metres.
Zacapa's top shelf blend of 6-25 year old rums is an exemplary example of the spirit that goes through a similar solera aging process to the popular Solera 23 with one notable exception: after a spell in ex-bourbon, ex-oloroso sherry, and ex-Pedro Ximenez sherry casks, the final blend is finished in French oak casks previously used to age cognac (befitting of the XO moniker, but relatively meaningless in the rum world). It feels like a very old cognac or brandy on the nose with an almost ethereal lift of sticky date, dark chocolate, coffee bean and light golden syrup. The palate delights the senses with a fabulous rush of dates, molasses cake, mocha, honey, super-aged muscat and perfectly balanced spirit. The finish is drying and XO cognac-like. Tasting like a good proportion of seriously old material is in the mix, this is the epitome of elegance in rum with luxe presentation to match. 40% Alc./Vol.

...This rum is a gorgeous, ruddy toffee color, perhaps a shade more amber than the standard 23. The nose, unsurprisingly, evokes more age, as well, with deeper notes of aged wine and seasoned oak that pair well with elements of dried fig, sticky prune, dark roast coffee, and creamy milk chocolate. The palate is still bright with all that citrusy, sherry-driven fruit, although a rich layer of dark brown sugar underpins things, adding a silky depth and gentle complexity. Coffee notes, nutty and lightly spiced, dominate the mid-palate before a reprisal of fruit on the long finish, this time more Cognac-driven with golden stone fruits and some poached pear.
