As the name suggests, this one uses 22 organically grown botanicals from five continents. The still is operated by Martina & Fabian Rohrwasser at Gut Basthorst, just outside of Hamburg. All of the ingredients are distilled simultaneously, as opposed to being mixed later on. This allows their flavours and aromas sufficient time to "get acquainted, mingle, and emerge." The gin's botanical list is diverse featuring ginger and cardamom from Asia, Australian eucalyptus, as well as African guinea pepper and a dose of local lavender leaves resulting in a heady mix of international aromas and flavours. Tasting note: A pungent, spicy bouquet, settling after 2-3 minutes revealing appealing aromas of pine, juniper, lemon cordial and potpourri. Apart from whiskey, three different gins are now being made using a base of corn, wheat, and non-malted barley (the base spirit is actually his new make whiskey), while some of the 11 botanicals used include juniper, citrus (lemon and orange peel), Tahitian vanilla, cassia, grains-of-paradise and homegrown hops.
Wait a minute! Hops in the gin?
It turns out that Hletko’s been home brewing for 20 years and was inspired by New Holland’s 'Hopquila' (a sort of whiskey-tequila hybrid spirit with pronounced hops character). This is his barrel aged expression.Tasting note: Flawless bright gold appearance. Opens with juniper mixed with peppermint infused honey. Short aeration accentuates pine sap and muted white pepper notes. Cough lozenge-like but in the most attractive sense. Medium dry, with firm but controlled spices; shows solid concentration. The wood influence has been judged to perfection as the freshness of the juniper and pepper is never lost. Fisherman’s Friend flourishes on the finale. Excellent persistence. A first rate winter styled gin to enjoy on its own. 46.5% Alc./Vol.

Aromas of pickling spice, acacia honey, spicy roasted apples and pears, and pineapple bread with a supple, fruity-yet-dry medium-to-full body and a long, interplay of spices, herbs, pine, dried fruits, and flowers. "It's the opposite of what I want my spirits to be," says Hletko. "Few Spirits is about quality and flavor, and enjoying a drink. Taking the flavour out of the grain by distilling it into vodka is the opposite of what we want."
The Few distillery is located in Evanston, which was founded as a dry community. In fact it's been free of alcohol for more than one hundred years. Though the city did legalise drinking in the late 1990s, it took the perseverance Hletko to reverse the antiquated liquor laws.
The name F.E.W is a word play around the quantity the distillery started out making (a few bottles). It will probably remain that way for some time as Hletko maintains a grain-to-glass approach and doesn’t buy in neutral grain spirit.
Three different gins are now being made using a base of corn, wheat, and non-malted barley (the base spirit is actually his new make whiskey), while some of the 11 botanicals used include juniper, citrus (lemon and orange peel), Tahitian vanilla, cassia, grains-of-paradise and homegrown hops.

Tasting note: Flawless crystal clear appearance with a silvery blush. Like Few's 'Standard Issue', this is not an overtly 'gin-like' aroma, rather the base spirit makes a significant contribution. It offers up crusty sour dough notes while the juniper / citrus peel / potpourri combination has been integrated with a soft touch. A delicate entry moves on to a light to medium weight profile with subtle flavours of citrus peel, juniper, lavender and tingling spiciness. The aftertaste is clean, dry and floral / rose hip like. What some might categorise as a 'modern' gin, this has few associations with any London Dry style that we've encountered. Try it if you enjoy Genevers. 40% Alc./Vol.

Upon arrival a bottle was immediately opened for tasting.
Tasting Notes: Crystal clear, showing good cling to the glass. Lifted juniper, spearmint and almond essence top notes with mixed citrus peel and star anise below. The palate is rich and oily, very soft, and delivers a moderate burst of the flavours offered by the nose before quietly and quickly vanishing. The spirit is clean, pure and faultless. This is a very well made, 'soft and cuddly' Gin, but one which lacks the punch and interest to be considered among the finest examples. 43% Alc./Vol.

The brand was founded by Andrew Heald, a long-time drinks industry professional inspired by the botanicals of the Suffolk Coast. He told ginfoundary.com “We wanted to make a drink that encapsulates the flavours and diversity of wildlife on the English Coast. One cold and crisp spring morning I was walking along marshes near Southwold on the Suffolk coast, on some of the most beautiful RSPB land in the country and couldn’t believe how many interesting wild plants were growing. I was already involved with drinks production in France and Scotland and wondered how we could use these plants to make something as a tribute to this very English landscape. I immediately thought of gin.” Oxford University botanist, James Firth, was employed to decide which plants showed the most promise, while the team at Adnams Distillery were commissioned to produce the gin using their East Anglian barley base spirit. Apart from the usual suspects, such as juniper, coriander seed, caraway and angelica, more esoteric, coastal and /or foraged botanicals include spignel, wood aven, bog myrtle, rock samphire, wild angelica and wild fennel. Four Pillar's fifth Distiller Series gin takes fresh rhubarb and Yarra Valley apples and combines them with rich brown spices to make a gin that's bright, rich and full of depth. Using freshly pressed rhubarb shipped in from friends at Warner’s Distillery in the UK, this gin is basically apple and rhubarb crumble in a glass, but with a whole lot more freshness and maybe a touch more alcohol!
Post-distillation is where the rhubarb juice from Warner’s comes into play. In fact, three separate liquids are blended into the gin after distillation: rhubarb juice, apple juice and an apple cider spirit. The rhubarb juice is fresh and tangy, the apple juice brings a hint of sweetness and the apple cider spirit (or eau de vie if you’re fancy) adds depth and complexity as well as beautiful perfume aromatics. The artwork on this, the seventh Christmas Gin label was created by the Australian painter, Jane Reynolds. Jane’s art is all about the relationship between colour, form and light. Jane has spent the last twenty years working as an animation artist and producer for visual effects in film and television. In late 2019, she decided to retire from the film industry to focus exclusively on fine art and by 2020 became a fully-fledged painter. For this year’s label, Jane was challenged to come up with one of her signature hyper-real compositions that celebrated the colour and iconography of Christmas. The result is an abstract Christmas tree scene with presents stacked around it, capturing all the elements of Christmas that make us love the festive season so much.
As for what's inside the bottle, once again, Christmas puddings are distilled, with the gin aged for a year in 100-year-old Muscat barrels. The resulting spirit captures aromatics of classic juniper with a hint of cinnamon, backed up by a rich palate and a hint of sweetness from the Muscat. As with previous editions, Four Pillars Christmas Gin starts by distilling Christmas puddings. The gin is then aged in one hundred year old Muscat barrels and a slight tweak of Muscat is added to finish. What you get are aromatics of classic juniper and a hint of cinnamon, backed up with a rich, luscious palate. There's a mild sweetness from the Muscat and extended barrel ageing too. More than ever, it smells like gin and tastes like Christmas! More than just a name, it brings together Spanish botanicals (purchased in Madrid) and native Australian ones with a neutral Australian grape spirit base. According to Four Pillars, the aromatics are bright, savoury and clean with a slight citrus spike. Olive leaf, fresh rosemary and crushed coriander sit above a solid base of juniper. Fascinating. 90 points Other reviews... Barrel ageing is nothing new in the spirits business, after all it’s how whiskeys and brandies get their depth, colour and character. In the gin world, the US has been barrel-ageing gin for a few years, while in Australia we have Ginnifer Barrel-Aged Gin from Western Australia and Kangeroo Island Spirits also have a barrel aged gin. Four Pillars have “rested” their gin for 6 months in French oak and created a blend using a solera system (the gin is blended from different barrels of varying ages). The result is a gin with a distinct honey colour and an ABV of 43.8%! The orange aroma so prominent in the Rare Dry in hasn’t survived the ageing process, but instead there is a different sweetness altogether, reminiscent of an Old Tom style, but it finishes on spicy, warm notes. I could also taste a connection with the maltier Genever. The gin botanicals have been blended and rounded into another drink entirely, so it’s silly to compare the original with the barrel aged. And that’s the point I guess. Expanding the gin category and pushing the boundaries of what gin should and could be. The Four Pillar's Christmas gins are becoming something of an Aussie tradition.
As with previous editions, Cam Mackenzie distills Christmas puddings (made to his mother Wilma's 1968 recipe) with juniper, cinnamon, star anise, coriander and angelica. (Each year Wilma would make her puds on Victoria Derby Day, while the rest of the family listened to the races. To this day, the smell of the house over Christmas cup weekend remains one of Cam's great childhood memories).A portion of Four Pillar's regular gin is barrel aged in a couple of 125-year-old ex-William Grant scotch whisky barrels that had previously stored Rutherglen Muscat for 80 years. Cam then blends this with the Christmas Pudding gin, and to finish he adds a slight tweak of Rutherglen Classic Muscat to round out the palate. There's also a touch of Four Pillar's own muscat that has been sitting in barrels which previously aged Pedro Ximenez. More than ever, it smells like gin and tastes like Christmas!

This is the seventh solera release from Four Pillars' original Chardonnay barrel solera. These barrels were originally used for maturing Yarra Valley Chardonnay for six to eight years prior to being filled with Rare Dry Gin. Originally filled on Christmas Eve 2013 and never fully emptied, the solera has grown from two barrels to nine, and this latest release has had a full year in barrel. The botanical oils have developed and changed dramatically, whilst still remaining distinctively gin. The juniper base has become resiny in texture, while the spices show developed intensity and fragrance. As with previous releases the preserved ginger character (thanks to the cardamom) is amazing and sits nicely with crushed coriander and preserved citrus notes. The oak continues to contribute to colour and sweetness, weight and texture. Four Pillars decided to bottle this in a 500mL format as in their experience, people tend to go through barrel aged gins a bit slower, as they're more of a sipping product. This is a balanced, super sippable drink. When Four Pillars founder, Cameron McKenzie was growing up, his late mum, Wilma would make Christmas Puddings on Derby Day while the rest of the family watched the races. So now each year, on Derby Day, Cam distills Christmas puddings by putting them in the botanical basket and distilling a base of juniper, cinnamon, star anise, coriander seed and angelica over the top of them.
Four Pillars also now have gin ageing in several 100+ year old Muscat barrels, including two 125-year-old ex-William Grants whisky barrels that, prior to arriving at Healesville, stored Rutherglen Muscat for 80 years. Cam blends this gin with the Christmas pudding gin and to finish adds a slight tweak of Classic Rutherglen Muscat to round out the palate and add a touch of richness. For the 2017 release he also added a small amount of Muscat that's been maturing at the distillery in old puncheons that used to hold aged Pedro Ximenez in the Barossa Valley, so this year the gin might be even a little bit richer!

This represents a very limited parcel of barrel aged gin from Four Pillars' sherry cask solera. Composed of 42 ex-sherry barrels, stacked three rows high in an arrangement behind the stills, these vary in age from 15 to 35 years old. The barrels were filled more than a year ago, and this is the first solera release taken only from the bottom row of barrels. True to a traditional solera system, the barrels are never emptied - a small portion from each barrel is taken out, which is then replenished from the row above. Fresh gin is only ever put into the top row of barrels.
This is a rich, intense and layered barrel aged gin. Once again, the botanical oils have developed and changed in barrel. The juniper/ pine oil character underpins some amazing complexity. The residual sherry character has integrated beautifully with the deeper cassia and star anise flavours. Think dried fruits and nuts. The addition of a tiny bit of Spanish Amontillado sherry has added some length and sweetness to the final gin.
Four Pillars decided to bottle this in a 500mL format as in their experience, people tend to go through barrel aged gins a bit slower, as they're more of a sipping product. Try it neat over ice, or try it in a Tuxedo, a classic cocktail made with gin, Sherry and orange bitters.

Mario Huber is better known for his fine brandies, however he's now ventured into gin. It took him more than a year before he perfected the final result, which is made using centuries-old techniques and local botanicals macerated in grain spirit. While the ingredients aren't disclosed, it reportedly strikes a nice balance between fruity-floral-herbal notes. Very distinctively packaged in a stand-out bright blue bottle and bold screw cap resembling a gas bottle top or tap handle. Tasting note: Clear. Lovely integration of Indian spices through the juniper and bright citrus notes – a touch of mint and lemon thyme too. A medium bodied gin with attractive lemon gelato, light juniper and chamomile flavours. G'Vine Nouaison employs nine botanicals including nutmeg, cubeb berries, ginger roots, liquorice, lime, juniper berries, corriander, cassia bark and green grape flower. The botanicals are infused over a two to five day process and distilled in the grape neutral spirit. Small liquor stills are utilized to insure the best quintessence. A fifth and final distillation: the green grape flowers essence, the Ugni Blanc neutral spirit and the botanical spirits are blended in perfect proportion and copper pot distilled one last time for a complete marriage.
Nouaison is one of two aromatic gins available from G'vine. This version approaches a London-Dry style with Juniper becoming a prominant feature along with a higher ABV at 43.9%.
Other reviews: Clear. Intense aromas of cinnamon bark, candied lemon peels, almond bark, and floral juniper follow through on a round, silky entry to a bold dry-yet-fruity medium-full body with with menthol, pine resin, anise, and mineral oil flourishes. Finishes with an interesting interplay of juniper and herb flavors with dried violet and winter mint top notes. A charming, exotic panoply of flavors make this a must try gin for innovative cocktails.

G’Vine is a unique, ultra-premium Gin crafted by Jean Sébastien Robicquet and Bruno de Reilhac, the proprietors, lead oenologists and master distillers of EuroWineGate in the French region of Cognac. It represents an elegant recreation of a cocktail favourite that bridges the gap from Gin to flavoured vodkas by marrying age-old distillation and infusion practices with the introduction of the rare green grape flower.
Once a year, in mid-June, the green grape flowers in Cognac blossom to life. The flower exists for only a short time before maturing into grape berries and, in this succulent state, forms the infusion for G’Vine Gin. The spirit base for the G’Vine infusion process is also unique to the Gin family. Cognac is home to the centuries-old Ugni Blanc grape. In September of each year, the Ugni Blanc fruit is harvested and immediately pressed and converted to wine. The resulting spirit is distilled four times producing a neutral grape spirit. Unlike the traditional grain spirit associated with Gin production, the Ugni Blanc grape spirit tends to be smoother with a heady body and aroma.

Gabriel Boudier Saffron Gin (700ml)Dijon, FRANCE$94. 99Bottle$1139.88 DozenABV: 40%Saffron Gin is a unique recipe discovered in the archives of France's colonial past when England and France both claimed India as their jewel, and Gins rich in exotic botanicals were fashionable. Apart from Saffron which gives this Gin a delicately spicy character, seven other fresh botanicals are used including Juniper, Coriander, Lemon, Orange peel, Angelica seeds, Iris and Fennel. Saffron Gin is only produced in small batches using a traditional pot still, so at this stage availability is limited.
Tasting note: Brilliant deep orange/gold appearance. Semi sweet scents are of orange and mandarine peel over more subtle juniper notes. Delicate spices emerge after time in the glass with suggestions of saffron. A mild entry leads into a light to medium bodied palate that repeats the citrus peel-over-juniper theme. Soft, gently spicy mouth feel. Concludes refreshingly dry followed by a delicate juniper and spice aftertaste. If there’s saffron evident it comes through very late (more texturally than taste wise) and in such a subtle way that if you weren’t looking at the bottle, it wouldn’t enter the flavour equation. Would integrate well into citrus based cocktails but this is definitely not a gin that works well with tonic. 40% Alc./Vol.
Other reviews... The bright orange/new copper appearance is the result I assume in part, of FD&C Yellow #5 coloring agent as stated on the label; no sediment seen; since this gin contains saffron, why artificially bring the color to such an outlandish orange degree? A potential turn-off aspect to bartenders who pay attention and like natural products. Opening sniffs detect plenty of juniper and mild herbal notes upfront; further aeration time doesn’t stimulate more in the way of ginny aromas. Entry is strikingly sweet and seed-like; midpalate focuses on the herbal bittersweet and piney/juniper components but little else. Ends on a pleasant note of coriander, juniper and barely perceptible fennel. The high level of sweetness and the phony looking color might present mixing problems. Sophisticated marketing from relative newcomers and strong support from the bartending community have helped. Gin is no longer perceived as the tipple of eldery dames. Significant advances have also been made in flavour. Innovative efforts to incorporate non-traditional botanicals have reinvigorated the standard juniper heavy ‘London Dry’ profile, leading it in some surprising directions. G’Vine, Citadelle and Hendricks are some of the more successful examples of these. Here is another.
Part time bartender, Jay Hepburn (http://ohgo.sh/) gives a concise and enthusiastic introduction to Geranium Gin, “...the creation of Henrik Hammer, an accredited gin judge who had been pondering the use of geranium in gin for years, knowing that it is regularly combined with ingredients like juniper and angelica in the therapeutic world. Together with his chemist father they chemically analysed geranium and found that the significant oils were those like geraniol formate, rose oxide and citronelol which are present in most fruits, vegetables and spices – therefore theoretically making it a good mixer. The challenge was how to get the oils out of the geranium and in to the gin, but luckily Henrik’s father had worked with essential oils for the perfume and food industry in decades.
Using a small 5 litre still they set about experimenting with using geranium in the botanical mix. Having found the best ways to process and distill the geranium they turned to the Langley Distillery in Birmingham, England, who produce a number of famous gins including Martin Miller’s, to fine tune the recipe for full scale production. The final product is distilled using pure wheat grain alcohol and ten botanicals including juniper, geranium (which is harvested from Denmark and used fresh), lemon, coriander, cassia, orris root, angelica and liquorice which are steeped for 48 hours prior to distillation.
Tasting note: Clear with a silvery appearance. The aroma is true to London Dry style with classic piney/woody/peppery notes (juniper) combining with delicate citrus peel. The palate repeats the aromas; medium dry with good concentration. A peppercorn spiciness adds depth and contributes a gently warming mouthfeel. Finishes wonderfully clean and dry with a delicate rose petal, peppercorn and mineral fade. Nicely done. 44% Alc./Vol.

This release celebrates the fifth anniversary of the brand. Bottled at 55% ABV, it's intended to stand out in cocktails and mixed drinks. It employs the same 10 botanicals as the original version, however it's made using 20% less geranium to prevent it from becoming too perfumed at the higher alcoholic strength.
Part time bartender, Jay Hepburn gives a concise and enthusiastic introduction to Geranium Gin, “...the creation of Henrik Hammer, an accredited gin judge who had been pondering the use of geranium in gin for years, knowing that it is regularly combined with ingredients like juniper and angelica in the therapeutic world. Together with his chemist father they chemically analysed geranium and found that the significant oils were those like geraniol formate, rose oxide and citronelol which are present in most fruits, vegetables and spices – therefore theoretically making it a good mixer. The challenge was how to get the oils out of the geranium and in to the gin, but luckily Henrik’s father had worked with essential oils for the perfume and food industry in decades."
Using a small 5 litre still they set about experimenting with using geranium in the botanical mix. Having found the best ways to process and distill the geranium they turned to the Langley Distillery in Birmingham, England, who produce a number of famous gins including Martin Miller’s, to fine tune the recipe for full scale production. The final product is distilled using pure wheat grain alcohol and ten botanicals including juniper, geranium (which is harvested from Denmark and used fresh), lemon, coriander, cassia, orris root, angelica and liquorice which are steeped for 48 hours prior to distillation.

Gin differs from spirits such as rum, brandy and whisky in that whereas these derive their flavours from the raw materials from which they are distilled, gin is produced by removing the flavour and impurities by rectification and then imparting a new flavour (usually using a variety of botanicals) to the purified spirit by subsequent distillation in a pot or gin still.Gilbey's is a good everyday drinking/mixing gin for those with a limited budget. 37.2% alc./vol.

Gilt is made from a 100% malted barley base - so it could have been Scotch Whisky - distilled in the Vale of Leven near Loch Lomond. Distiller, Ricky Christie, comments, "We have centuries of distilling expertise and after all those years making Scotch there is no reason why we can't make an excellent gin".
