As with previous editions, Four Pillars Christmas Gin starts by distilling Christmas puddings. The gin is then aged in one hundred year old Muscat barrels and a slight tweak of Muscat is added to finish. What you get are aromatics of classic juniper and a hint of cinnamon, backed up with a rich, luscious palate. There's a mild sweetness from the Muscat and extended barrel ageing too. More than ever, it smells like gin and tastes like Christmas! Whole bunches of freshly picked Chardonnay grapes from Voyager Estate have been macerated for three months in a Juniper spirit, before being blended with individual distillations of Christmas Tree flower, Geraldton Wax, Red Samphire, Finger Lime and Coriander. This is the first time Christmas Tree flower been used in a spirit. This ancient bush tucker, which is endemic to the southern parts of Western Australia, has an enticing earthy and honeysuckle undertone. The Geraldton Wax imparts a liveliness with fresh forest aroma that develops with lemongrass and citrus, while there's a warming saltiness from the Red Samphire. The final maturation in a French oak barrique contributes a golden hue. Hand bottled as a run of 350 bottles, this textural gin tastes like Christmas captured in a bottle. It has a complex and feminine bouquet, with vanilla bean and floral notes reminiscent of a Summer’s day. We then played around with some blow-your-head-off Gentian Root, Roasted Wattleseed, Cloves, Earl Grey Tea, Double-Dose of Fresh Valencia Orange Peel - then we tightened the nuts and bolts on this baby with some Green Cardamom, Pepperberry - and the rug that tied the room together? Beefeater Burrough's Reserve Oak Rested Gin (700ml)London, UNITED KINGDOM$135. 00 Bottle$1620.00 DozenABV: 43%Launched in 2013, this marks an unusual departure for such a large Gin producer, although given the present trend towards diversification, it doesn't really come as a surprise. What is truly novel here is the use of x-wine barrels. This expression is rested in French oak barrels that previously held "Lillet Aperitif", and by all reports, it definitely comes through in the flavour. Current master distiller Desmond Payne, has recreated the gin from Burrough’s original recipe. “After 45 years in the drinks industry, I wanted to create something truly unique that celebrated the distilling heritage of Beefeater,” said Payne. “I had been interested in resting gin for a while and knew that if the cask was right, we could make a really exciting new gin that changed people’s perceptions of the spirit. I felt that the use of Jean de Lillet casks and Still Number 12 would introduce a new character to the gin, elevating it to a place that had not been explored before. No additional sweeteners are added. Recommended in a G&T with a slice of strawberry and a crack of black pepper. Tasting note: The largest botanical component in this gin are the berries which also contribute a subtle pink blush. Medium dry aromas hint at strawberry milk or berry tart, the juniper just peeking through. Some orris root perhaps, then sweeter floral notes. Chamomile? Light to medium bodied and nicely textured with delicately expressed botanicals and a flourish of spice through the finish. Trace strawberry repeats in the aftertaste. First pass finds an attractive mingling of juniper and wood notes, in particular fresh sawn green pine, balsa wood…later, crushed pine needles, dried lemon peel, thyme, black pepper. Light to medium bodied flavours find juniper framed by citrus peel, drying herbal teas, warming black pepper and fine tannins. Concludes nicely balanced, gently warming and medium long. Caol Ila leaves its stamp on the nose: smoked fish, a touch of dill, citrus and light vanillas while gin adds freshness. Its success encouraged Alexandre Gabriel to continue the series with this 2017 release - "Wild Blossom" gin. Employing the same base as the original Citadelle, this offers an even more floral profile with a new infusion of wild cherry blossom petals and a total of twenty botanicals including iris, cubeb, violets, grains of paradise and nutmeg. Its character is accentuated by a five month ageing process in sweet cherry wood barrels, a species of wood characterized by red fruits and fresh hazelnut. Notes from the producer: Color : Pale gold. Nose : Fresh and very fruity. Prominent juniper berry blending with almond, cherry and grapefruit. A floral note evolves with jasmine and ylang-ylang, followed by musky and smoky notes. These include first-fill ex-Bourbon barrels and shaved, toasted and re-charred red wine casks (STRs). Maturation lasts three months. Following that, fresh Valencian orange peel and candied root ginger are soaked in the gin for several weeks. Finally, a touch of honey is added to sweeten before bottling. Tasting note: A golden coloured gin with aromas of ginger chocolates, root beer, orange zest and lime peel over fresh juniper. On entry traditional gin notes arrive with hints of triple sec and subtle oaky astringency, dovetailing into a delicious spice wave. Ends ginger beer-like with budding warmth. The base spirit for this gin is made from a neutral spirit distilled up to five times from sugar cane. The berries, botanicals, spices and citrus peels are combined with the ageing process which takes place over 35 weeks in oak barrels previously used to age Dictador rums. Apart from whiskey, three different gins are now being made using a base of corn, wheat, and non-malted barley (the base spirit is actually his new make whiskey), while some of the 11 botanicals used include juniper, citrus (lemon and orange peel), Tahitian vanilla, cassia, grains-of-paradise and homegrown hops.

It turns out that Hletko’s been home brewing for 20 years and was inspired by New Holland’s 'Hopquila' (a sort of whiskey-tequila hybrid spirit with pronounced hops character). This is his barrel aged expression.
Tasting note: Flawless bright gold appearance. Opens with juniper mixed with peppermint infused honey. Short aeration accentuates pine sap and muted white pepper notes. Cough lozenge-like but in the most attractive sense. Medium dry, with firm but controlled spices; shows solid concentration. The wood influence has been judged to perfection as the freshness of the juniper and pepper is never lost. Fisherman’s Friend flourishes on the finale. Excellent persistence. Following maceration, Finn's is re-distilled to recover the clear gin spirit. The barrel aged version sees the gin finished in a combination of virgin & ex bourbon casks for a 1-3 month period. Slightly subdued but with pleasing scents of pencil shavings and saw dust alongside subtle notes of apple sauce, cinnamon, lemon meringue and woody juniper. Fascinating. 90 points Other reviews... Barrel ageing is nothing new in the spirits business, after all it’s how whiskeys and brandies get their depth, colour and character. In the gin world, the US has been barrel-ageing gin for a few years, while in Australia we have Ginnifer Barrel-Aged Gin from Western Australia and Kangeroo Island Spirits also have a barrel aged gin. Four Pillars have “rested” their gin for 6 months in French oak and created a blend using a solera system (the gin is blended from different barrels of varying ages). The result is a gin with a distinct honey colour and an ABV of 43.8%! The orange aroma so prominent in the Rare Dry in hasn’t survived the ageing process, but instead there is a different sweetness altogether, reminiscent of an Old Tom style, but it finishes on spicy, warm notes. I could also taste a connection with the maltier Genever. The gin botanicals have been blended and rounded into another drink entirely, so it’s silly to compare the original with the barrel aged. And that’s the point I guess. Expanding the gin category and pushing the boundaries of what gin should and could be. Limited to one bottle per customer.This is the seventh solera release from Four Pillars' original Chardonnay barrel solera. These barrels were originally used for maturing Yarra Valley Chardonnay for six to eight years prior to being filled with Rare Dry Gin. Originally filled on Christmas Eve 2013 and never fully emptied, the solera has grown from two barrels to nine, and this latest release has had a full year in barrel. The botanical oils have developed and changed dramatically, whilst still remaining distinctively gin. The juniper base has become resiny in texture, while the spices show developed intensity and fragrance. As with previous releases the preserved ginger character (thanks to the cardamom) is amazing and sits nicely with crushed coriander and preserved citrus notes. The oak continues to contribute to colour and sweetness, weight and texture. Four Pillars decided to bottle this in a 500mL format as in their experience, people tend to go through barrel aged gins a bit slower, as they're more of a sipping product. This is a balanced, super sippable drink. Enjoy it neat or on the rocks - it’s delicious over one large ice cube with a drop of honey and a small sprig of rosemary.

Limited to one bottle per customer.This represents a very limited parcel of barrel aged gin from Four Pillars' sherry cask solera. Composed of 42 ex-sherry barrels, stacked three rows high in an arrangement behind the stills, these vary in age from 15 to 35 years old. The barrels were filled more than a year ago, and this is the first solera release taken only from the bottom row of barrels. True to a traditional solera system, the barrels are never emptied - a small portion from each barrel is taken out, which is then replenished from the row above. Fresh gin is only ever put into the top row of barrels. This is a rich, intense and layered barrel aged gin. Once again, the botanical oils have developed and changed in barrel. The juniper/ pine oil character underpins some amazing complexity. The residual sherry character has integrated beautifully with the deeper cassia and star anise flavours. Think dried fruits and nuts. The addition of a tiny bit of Spanish Amontillado sherry has added some length and sweetness to the final gin. Four Pillars decided to bottle this in a 500mL format as in their experience, people tend to go through barrel aged gins a bit slower, as they're more of a sipping product. A new spirit from the producers of Limeburner's Single Malt Whisky. This unusual Gin is the result of nine botanicals, including Meen, a native tree of the Southern Coast of Western Australia. Before bottling the spirit was matured in French oak barriques giving this Gin its golden tone.
Tasting note: Very pale gold colour with a water like hue. A juniper/aniseed top note mingles with heavier scents of fenugreek, chamomile, peppermint and hot peppers that penetrate deep into the nostrils. The medium dry, full bodied palate yields mild fennel and juniper flavours delivered through a slightly hot, prickly spirit. Very peppery on the back palate, in fact, the strong pepperiness throughout knocks the flavour profile out of balance. Concludes a little short with pepper and pine wood notes followed by a delicate juniper fade. For those who like it hot, consider this Gin’s equivalent to pepper Vodka. 49% Alc./Vol.

Herbal / earthy / fresh opening sniffs are also sappy, resiny, peppery and pleasingly dry. 3-4 minutes finds fresh sawn pine, potpourri and hints of eucalyptus. Creamy, with vivacious lemon myrtle, peppery juniper and thyme flavours and a flare of alcohol lifting the finish. Excellent length and balance. Ends tangy, dry, peppery, lipsmacking. Now ranked amongst the world's most collectible spirits, individual bottles continue to sell for remarkable prices. Kyoto's ninth release sees the gin aged in an x Karuizawa sherry butt. Filled at a high strength, the gin was carefully monitored during the maturation to ensure the optimum balance between the botanical flavours and the influence of the wood. Each release is scheduled for different markets. No.9 was originally exclusive to Sexy Fish in London and part of Asia with the outturn limited to 829 bottles. This recently won Gold at the 2016 The Gin Masters (The Spirits Business). The distillers suggest using it in an Old Fashioned for a Summery alternative to the cocktail. Tasting note: Bright gold with a pale straw hue. Appealing aromas of lemon cough lozenge, distant juniper and later hints of vanilla and sweet oregano. Wonderful mouthfeel with flavours of butter menthol lozenge, juniper, rye sour dough and a prolonged herbal, white pepper, cough lozenge and spearmint finish. Complex, classy and lively with the barrel input artfully managed. 42.6% Alc./Vol.
