      Audemus Spirits Umami Gin (500ml)
      Cognac, FRANCE
      $89. 99 Bottle
      $1079.88 Dozen
      ABV: 42%
Tasting note: A gin named after the fifth basic taste, ('umami' is also known as 'savoury'). The concept is to provide the perfect base spirit for a Martini. Produced using hand picked Sicilian capers, parmesan and two other savoury ingredients combined with neutral wheat spirit, then briefly barrel aged, it's wonderfully scented with a keynote of fresh capers, plus hints of white pepper and green capsicum, ending on a spicy note of fresh-sliced chillies. Evocative and unique. Experiment with dry, savoury cocktails. 42% Alc./Vol.
Throws a natural sediment. This is not a production fault.
Bluecoat Barrel Reserve American Dry Gin (700ml)
        Philadelphia, Pennsylvania, UNITED STATES
        $110. 00 Bottle
        $1320.00 Dozen
        ABV: 47%
A very popular addition to our Gin shelf last year was Bluecoat, named after the Bluecoat militia that fought the American War of Independence. Botanicals include organic juniper berries, American citrus peels, coriander and angelica root distilled with third-party sourced grain neutral spirit in a copper pot still made in Scotland by Forsyths of Rothes.

This latest expression is finished in charred American oak barrels for a minimum of three months providing a unique, well rounded and complex spirit without compromising the latent botanical notes. Beautifully packaged in a cobalt blue bottle, this will be a great gin alternative to classic cocktails such as the Negroni, Martinez and Old Fashioned. 47% Alc./Vol.

Beautifully presented with the inevitable Tom Cat included on the label. Very small allocation for Australia.

Tasting note: Pale gold. Nicely integrated herbal-juniper freshness over underlying notes of vanilla, lemon cough lozenge and pepper. Follows through with an oily, semi-sweet profile including flavours of cough lozenge, lemon iced tea, candied pineapple and a warming, delicate peppermint / juniper finish. Concludes more like a London dry. Complex and beautifully textured. 46% Alc./Vol. 6500 bottles produced.

              ABV: 52%
Tasting note: [2019 edition] This takes barrel aging one step further by blending gins matured in three types of oak for twelve months. Fourteen botanicals are included in the pot distilled rye spirit which was finally finished in Rum casks. Fresh aromas of pine buds, lemon lozenges, light vanilla and curry leaf develop on the nose. Soft on entry but builds with a spicy crescendo including crushed curry leaves, white pepper, cough lozenge and late juniper. The finish is gently astringent, lively, warming and long. Try it in spicy cocktails or on its own as a Winter sipper. 52% Alc./Vol. 4000 bottles.

As with previous editions, Four Pillars Christmas Gin starts by distilling Christmas puddings. The gin is then aged in one hundred year old Muscat barrels and a slight tweak of Muscat is added to finish. What you get are aromatics of classic juniper and a hint of cinnamon, backed up with a rich, luscious palate. There's a mild sweetness from the Muscat and extended barrel ageing too. More than ever, it smells like gin and tastes like Christmas! Sip it on ice (it’s dangerously drinkable), mix it with ginger ale or beer, or try it in some great cocktails like the Christmas Cobbler (below). 43.8% Alc./Vol.

Upon its release in 2013, Hernö was officially the first distillery in the world to age gin in casks made out of juniper wood. The spirit is matured for one month in tiny 39.25 litre barrels before being bottled at 47%. Batches typically yield about 500 bottles, each one finished with a natural beeswax seal.

Tasting note: [Batch 30 tasted] Very pale straw blush. Herbal / earthy / fresh opening sniffs are also sappy, resiny, peppery and pleasingly dry. 3-4 minutes finds fresh sawn pine, potpourri and hints of eucalyptus. Creamy, with vivacious lemon myrtle, peppery juniper and thyme flavours and a flare of alcohol lifting the finish. Excellent length and balance. Ends tangy, dry, peppery, lipsmacking. Delightful. 47% Alc./Vol. Unfiltered.

A follow-up to Koval Dry Gin which debuted in 2015, this expression includes the same botanicals (rosehip, juniper, angelica root and coriander), but adds a new level of depth from the spirit's six months resting in Koval's x-whiskey barrels (Bourbon, mostly). Like its sibling, this comes brilliantly packaged with argyle die-cutting and bronze foil patterns through the label.

Tasting note: Brilliant pale gold. Beams from the glass. Excellent aromatic lift with pine sap and rooty / white pepper notes combined with peppermint chocolate and muted cough lozenge sweetness. Middle-weighted with a silky, woody-juniper entry followed by butter menthol lozenge and hints of vanilla in the finish. Beautifully composed, very elegant barrel aged gin. 47% Alc./Vol.

Foremost a Calvados producer, Guillaume Drouin has extended his portfolio with a selection of cleverly crafted gins. This one is based on the original "Le Gin" released in 2015. Thirty varieties of cider apples and eight different botanicals are employed. Each botanical is distilled separately before being blended. The gin is then aged for around six months in former 10-year-old Calvados casks.

Tasting note: [BATCH 2017-A tasted] Pours brilliant bright gold. Hits the jackpot with a high-pitched bouquet of apple cider, pine needle, menthol, bright juniper and citrus peel. Much like the nose, only more subdued, this offers piney, woody-juniper like flavours with hints of black pepper as well as apple-cinnamon yogurt through the aftertaste. A barrel aged style in which key botanicals remain clearly expressed. 42% Alc./Vol.

An aged Gin that references the barrels and blood spilt back in the days of prohibition. This project has been quietly maturing since co-founders Adam Carpenter and Wes Heddles opened at the company’s Gilbert St distillery. They had x Bourbon barrels that had recently being emptied of Barossa Shiraz, re-coopered into a smaller format then re-charred to restore their toasty character.

The resulting gin is a big, bold, barrel strength style retaining a gentle shiraz note along with a rich oaked rye back note. Following the trade launch, Carpenter commented, "everyone loved the flavour, the complexity and how different it is to anything else out there, it’s not like any other shiraz gin as there’s no fruit contact, but it’s not your average barrel aged either.”

Recommended with soda, in a classic Negroni, gin Old Fashioned or Boulevardier. 60% Alc./Vol.

This chardonnay macerated gin has been aged in a Voyager Estate MJW Chardonnay barrel and infused with a unique blend of botanicals from Margaret River. Whole bunches of freshly picked Chardonnay grapes from Voyager Estate have been macerated for three months in a Juniper spirit, before being blended with individual distillations of Christmas Tree flower, Geraldton Wax, Red Samphire, Finger Lime and Coriander.

This is the first time Christmas Tree flower been used in a spirit. This ancient bush tucker, which is endemic to the southern parts of Western Australia, has an enticing earthy and honeysuckle undertone. The Geraldton Wax imparts a liveliness with fresh forest aroma that develops with lemongrass and citrus, while there's a warming saltiness from the Red Samphire. The final maturation in a French oak barrique contributes a golden hue.

Hand bottled as a run of 350 bottles, this textural gin tastes like Christmas captured in a bottle. It has a complex and feminine bouquet, with vanilla bean and floral notes reminiscent of a Summer’s day. A honeysuckle sweetness, delicate citrus and fresh forest accents linger on the palate, with a warming saltiness and a velvety mouthfeel. Best enjoyed over ice, as a martini, or with a tonic mixer. Garnish with dehydrated grapefruit or orange. 40% Alc./Vol.

Tasting note: This is the distillery's regular gin, aged in ex-whisky casks for over a year, then infused with laminaria seaweed (kombu). The result has a bouquet suggesting green balsa wood, thyme, lemon grass as well as hints of sea breeze, but with a stronger citrus accent in the mouth. In fact, the wood input is slight. Instead, you get flavours of lemon chutney and juniper combined with frail salinity, finishing with a refreshing astringency. Other botanicals include cassia bark, licorice root, lemon peel, bitter orange peel, cubeb berry and grain of paradise. 47% Alc./Vol.

In Applewood’s words: ”We wanted to focus on what makes a Gin 'rich' - like - really rich...stupidly rich...like mother's milk...so of course - a double dose of Juniper (as per all our limited editions) was mandatory. We then played around with some blow-your-head-off Gentian Root, Roasted Wattleseed, Cloves, Earl Grey Tea, Double-Dose of Fresh Valencia Orange Peel - then we tightened the nuts and bolts on this baby with some Green Cardamom, Pepperberry - and the rug that tied the room together? Some Almonds and the allusive Orris Root.

"But we didn't stop there. We then raided the distillery for some barrel aged brandy-base - and settled on an experimental spirit that we spiced with Chai herbs from the folks out at Quo Chai - which we matured for 18 months in some American octave (80L) casks that held some of Australia's richest, most expensive Shiraz for 4 years - blending the spirits together for some serious weight and presence."

Tasting note: Bright gold / dazzles in the glass. Lots of cardamom to the nose with light pepper warmth, clove, developing juniper and ripe citrus freshness. 2-3 minutes air contact offers a mixed bag of Indian spices. Fabulous texture with silky-yet-vibrant flavours of juniper, cardamom and pepper building delicate citrus oils through the finish. The mouthfeel is a delight. Enjoy this neat. 43% Alc./Vol.

Launched in 2013, this marks an unusual departure for such a large Gin producer, although given the present trend towards diversification, it doesn't really come as a surprise. What is truly novel here is the use of x-wine barrels. This expression is rested in French oak barrels that previously held "Lillet Aperitif", and by all reports, it definitely comes through in the flavour. Current master distiller Desmond Payne, has recreated the gin from Burrough’s original recipe.

“After 45 years in the drinks industry, I wanted to create something truly unique that celebrated the distilling heritage of Beefeater,” said Payne. “I had been interested in resting gin for a while and knew that if the cask was right, we could make a really exciting new gin that changed people’s perceptions of the spirit.

I felt that the use of Jean de Lillet casks and Still Number 12 would introduce a new character to the gin, elevating it to a place that had not been explored before.

I expect Burrough’s Reserve to appeal to free thinking individuals who enjoy challenging convention and exploring new sensory experiences with gin.”

Produced only through the summer with all the strawberries used grown locally in Wexford by the Kearns family. No additional sweeteners are added. Recommended in a G&T with a slice of strawberry and a crack of black pepper.

Tasting note: The largest botanical component in this gin are the berries which also contribute a subtle pink blush. Medium dry aromas hint at strawberry milk or berry tart, the juniper just peeking through. Some orris root perhaps, then sweeter floral notes. Chamomile? Light to medium bodied and nicely textured with delicately expressed botanicals and a flourish of spice through the finish. Trace strawberry repeats in the aftertaste. A Summer style gin that strikes a good balance between fruit and traditional notes. 40% Alc./Vol.

A novel Irish gin that's barrel aged in 50 litre juniper wood casks. It uses the same 12 botanicals found in Blackwater No.5, but in a slightly different proportion; orange and the sweeter roots are increased, because, like its berries, juniper timber can be a wee bit astringent.

Tasting note: Pale gold. First pass finds an attractive mingling of juniper and wood notes, in particular fresh sawn green pine, balsa wood…later, crushed pine needles, dried lemon peel, thyme, black pepper. Light to medium bodied flavours find juniper framed by citrus peel, drying herbal teas, warming black pepper and fine tannins. Concludes nicely balanced, gently warming and medium long. Distinctive. 46% Alc./Vol.

Tasting note: Pale straw gold. Caol Ila leaves its stamp on the nose: smoked fish, a touch of dill, citrus and light vanillas while gin adds freshness. The herbal / briney / smokey attack replete with piney juniper and tangy citrus is a stroke of genius. Wow! Peated aquavit comes to mind. An absolute treat. 55% Alc./Vol. 342 bottles produced.

Tasting note: Bright gold. Aromatically more rum than gin: Sweet yet fresh with the botanicals retained. Employing the same base as the original Citadelle, this offers an even more floral profile with a new infusion of wild cherry blossom petals and a total of twenty botanicals including iris, cubeb, violets, grains of paradise and nutmeg. Its character is accentuated by a five month ageing process in sweet cherry wood barrels, a species of wood characterized by red fruits and fresh hazelnut.

Notes from the producer: Color : Pale gold. Nose : Fresh and very fruity. Prominent juniper berry blending with almond, cherry and grapefruit. A floral note evolves with jasmine and ylang-ylang, followed by musky and smoky notes. Palate : Rich, opulent, with a sweet and sour profile of preserved lemon rind, green grape and cubeb pepper. It evolves into cocoa with very precise notes of violet and rose. Finish : Very long cumin note, evolving into cherry and grenadine. 42.6%

This gin goes into the same casks as Cotswolds' flagship Single Malt. These include first-fill ex-Bourbon barrels and shaved, toasted and re-charred red wine casks (STRs). Maturation lasts three months. Following that, fresh Valencian orange peel and candied root ginger are soaked in the gin for several weeks. Finally, a touch of honey is added to sweeten before bottling.

Tasting note: A golden coloured gin with aromas of ginger chocolates, root beer, orange zest and lime peel over fresh juniper. On entry traditional gin notes arrive with hints of triple sec and subtle oaky astringency, dovetailing into a delicious spice wave. Ends ginger beer-like with budding warmth. Great purity and definition. Superb Winter gin. 46% Alc./Vol.

Notes from the producer... Nose: Warm honey and sweet orange notes balance the fresh spicy ginger and piney juniper. Palate: Incredibly rich and luxurious, the ginger warms everything through, with vanilla and red fruit notes from the casks. Finish: A lovely long finish full of dry oak spice and ginger, with lots more honey.

The base spirit for this gin is made from a neutral spirit distilled up to five times from sugar cane. The berries, botanicals, spices and citrus peels are combined with the ageing process which takes place over 35 weeks in oak barrels previously used to age Dictador rums. The combination of the balance of the exotic citrus peel and the time spent in barrels gives the gin freshness and texture.

Tasting note: Frail straw-gold colour is almost water like. Super pure aromas include high pitch juniper, grapefruit and low key vanilla. Air contact turns this attractively herb-like evolving notes of thyme, lavender and cardamom. Quite relaxed given the ABV; flavours of peel heavy marmalade, citrus oils and piney-juniper. Spices up momentarily becoming softer to finish as trace juniper, dried herbs and hints of anise enter. Keenly tuned barrel input with all the right notes retained. Outstanding. 52% Alc./Vol.

Paul Hletko, who launched 'Few Spirits' in 2011 is a man in pursuit of flavour. Hence, his new micro distillery is perhaps best defined by what it doesn't make - vodka.

Apart from whiskey, three different gins are now being made using a base of corn, wheat, and non-malted barley (the base spirit is actually his new make whiskey), while some of the 11 botanicals used include juniper, citrus (lemon and orange peel), Tahitian vanilla, cassia, grains-of-paradise and homegrown hops.
Wait a minute! Hops in the gin?
It turns out that Hletko’s been home brewing for 20 years and was inspired by New Holland’s 'Hopquila' (a sort of whiskey-tequila hybrid spirit with pronounced hops character). This is his barrel aged expression.

Tasting note: Flawless bright gold appearance. Opens with juniper mixed with peppermint infused honey. Short aeration accentuates pine sap and muted white pepper notes. Cough lozenge-like but in the most attractive sense. Medium dry, with firm but controlled spices; shows solid concentration. The wood influence has been judged to perfection as the freshness of the juniper and pepper is never lost. Fisherman’s Friend flourishes on the finale. Excellent persistence. A first rate winter styled gin to enjoy on its own. 46.5% Alc./Vol.

Produced by the Chicago Distilling Company (founded in 2010), Finn's gin is made from a corn based neutral spirit which they buy in to macerate botanicals such as Sichuan peppercorn, dried orange peel, green cardamom, hibiscus, juniper, coriander, cassia and cubeb. Following maceration, Finn's is re-distilled to recover the clear gin spirit.

The barrel aged version sees the gin finished in a combination of virgin & ex bourbon casks for a 1-3 month period.

Tasting note: The deep brassy gold colour is bright and clear. Slightly subdued but with pleasing scents of pencil shavings and saw dust alongside subtle notes of apple sauce, cinnamon, lemon meringue and woody juniper. Silky, medium bodied delivery offering delicious flavours of apple strudel, cinnamon and ripe juniper followed by a delicate pine and menthol lozenge finish. Excellent length. Appealing freshness to the bouquet with piney-juniper, sweet oregano, sage and lemon cough lozenge over a subtle vanilla / smokey clove base note. Light and silky entry with early juniper followed by herbal notes - sage and tarragon in particular. More fruit lozenge-like to finish, fading dry, gently peppery and medium long. Marks a subtle change in trajectory from previous batches, with no compromise on quality. 43.8% Alc./Vol.

Undisputedly one of Australia's very best Gin producers.

First tasted : [BATCH 1] Brilliant clarity in the pale straw gold appearance. Lifted opening scents of lemongrass, pine and juniper; more lemon-barley sugar like in the second pass, retaining good freshness through to an unusual salted lime, lemon sorbet, tarragon and coriander profile finishing vibrant, peppery and dry. Fascinating. 90 points

Other reviews... Barrel ageing is nothing new in the spirits business, after all it’s how whiskeys and brandies get their depth, colour and character. In the gin world, the US has been barrel-ageing gin for a few years, while in Australia we have Ginnifer Barrel-Aged Gin from Western Australia and Kangeroo Island Spirits also have a barrel aged gin. Four Pillars have “rested” their gin for 6 months in French oak and created a blend using a solera system (the gin is blended from different barrels of varying ages). The result is a gin with a distinct honey colour and an ABV of 43.8%! The orange aroma so prominent in the Rare Dry in hasn’t survived the ageing process, but instead there is a different sweetness altogether, reminiscent of an Old Tom style, but it finishes on spicy, warm notes. I could also taste a connection with the maltier Genever. The gin botanicals have been blended and rounded into another drink entirely, so it’s silly to compare the original with the barrel aged. And that’s the point I guess. Expanding the gin category and pushing the boundaries of what gin should and could be. Over ice it is smooth and easy to drink and I made a very fine Martinez with Four Pillars Barrel Aged Gin... - http://theginqueen.com/

This is the seventh solera release from Four Pillars' original Chardonnay barrel solera. These barrels were originally used for maturing Yarra Valley Chardonnay for six to eight years prior to being filled with Rare Dry Gin. Originally filled on Christmas Eve 2013 and never fully emptied, the solera has grown from two barrels to nine, and this latest release has had a full year in barrel. The botanical oils have developed and changed dramatically, whilst still remaining distinctively gin. The juniper base has become resiny in texture, while the spices show developed intensity and fragrance. As with previous releases the preserved ginger character (thanks to the cardamom) is amazing and sits nicely with crushed coriander and preserved citrus notes. The oak continues to contribute to colour and sweetness, weight and texture.

Four Pillars decided to bottle this in a 500mL format as in their experience, people tend to go through barrel aged gins a bit slower, as they're more of a sipping product. This is a balanced, super sippable drink. Enjoy it neat or on the rocks - it’s delicious over one large ice cube with a drop of honey and a small sprig of rosemary.

Limited to one bottle per customer.

This represents a very limited parcel of barrel aged gin from Four Pillars' sherry cask solera. Composed of 42 ex-sherry barrels, stacked three rows high in an arrangement behind the stills, these vary in age from 15 to 35 years old. The barrels were filled more than a year ago, and this is the first solera release taken only from the bottom row of barrels. True to a traditional solera system, the barrels are never emptied - a small portion from each barrel is taken out, which is then replenished from the row above. Fresh gin is only ever put into the top row of barrels.

This is a rich, intense and layered barrel aged gin. Once again, the botanical oils have developed and changed in barrel. The juniper/ pine oil character underpins some amazing complexity. The residual sherry character has integrated beautifully with the deeper cassia and star anise flavours. Think dried fruits and nuts. The addition of a tiny bit of Spanish Amontillado sherry has added some length and sweetness to the final gin.

Four Pillars decided to bottle this in a 500mL format as in their experience, people tend to go through barrel aged gins a bit slower, as they're more of a sipping product. Try it neat over ice, or try it in a Tuxedo, a classic cocktail made with gin, Sherry and orange bitters.

This unusual Gin is the result of nine botanicals, including Meen, a native tree of the Southern Coast of Western Australia. Before bottling the spirit was matured in French oak barriques giving this Gin its golden tone.

Tasting note: Very pale gold colour with a water like hue. A juniper/aniseed top note mingles with heavier scents of fenugreek, chamomile, peppermint and hot peppers that penetrate deep into the nostrils. The medium dry, full bodied palate yields mild fennel and juniper flavours delivered through a slightly hot, prickly spirit. Very peppery on the back palate, in fact, the strong pepperiness throughout knocks the flavour profile out of balance. Concludes a little short with pepper and pine wood notes followed by a delicate juniper fade. For those who like it hot, consider this Gin’s equivalent to pepper Vodka. 49% Alc./Vol.

Quite concentrated with a piney/juniper, peppery off-dry attack and a creamy, lingering, dryish citrus peel and juniper finish. A robust and classically styled London dry. 41.3% Alc./Vol.

Similar to the standard gin, only softer and more sedate on the nose, accenting lemon cheese cake, pine buds and a touch of menthol. The barrel character adds a delicate sweetness to the flavours of lemon cough lozenge and muted juniper. While the spices are toned down, it retains nice vibrancy and length. 40% Alc./Vol.
