    Doorly's 12 Year Old Rum (700ml)
    BARBADOS
    $130. 00
    Bottle
    $1560.00 Dozen
    ABV: 43%
Launched in 2015, Doorly's 12 Year Old is considered by many to be the new top of the line for the brand. Previously exclusive to the Foursquare distillery 'cellar door' in Barbados, like others in the range, it comes in that classic bulbed, stumpy bottle featuring a bird on the label, this time it's a Spinx Macaw - thought to be extinct. The rum is a combination of pot and column still rums, approximately 90% of which was aged for twelve years in x Bourbon barrels, with the remainder matured for twelve years in Madeira casks before being blended together. The consensus is it's another solid result from the talented Richard Searle - the only downside being the ABV could have been a little higher.

Other reviews... In the bottle, the Doorly’s 12 has an inviting dark mahogany hue. The nose is subtle, primarily vanilla and oak. Much like the first sip of a fine Scotch, the Doorly’s 12 immediately lets you know you’re tasting something exceptional. Oak, vanilla, fruit, and spice are in ideal harmony -- all present but none dominating, and the finish lingers for quite a while. The finish is pleasing, dry and free of any sugar like you may find in many “premium” rums at a much higher price. The flavors continue to evolve the longer it spends breathing, so take your time with it. This is a rum that you’ll want to enjoy neat while pondering how you might sneak it into a fancy whiskey tasting lineup to see who you can fool. The only “complaint” is that this should be at a slightly higher proof." 90 points - distiller.com

What I like about Doorly’s 12 is that it is noticeably different to Rum Sixty Six. It is slightly drier, more oaked and not as sweet as that rum or the Port Cask Finish. It also should be noted the [fair] price of these rums.... If you are fan of Bajan style rum, then for me any offering from the Foursquare Distillery is well worth investing in. They simply do not make bad rum. This rum offers all the complexity a good aged rum should offer to the sipper. As usual it is expertly blended and it shows yet again that rum can be produced, which is “smooth” and doesn’t exhibit any notably strong alcohol notes, without loading it with sugar and other additives. 4.5 stars - thefatrumpirate.com

Admiral Rodney HMS Formidable St. Lucia Rum (700ml)
    SAINT LUCIA
    $169. 99
    Bottle
    $2039.88 Dozen
    ABV: 40%

There are now three regular editions of Admiral Rodney available (from youngest to oldest) – HMS Princessa, HMS Royal Oak and this, named after the HMS Formidable, Admiral Rodney’s flagship in the famous Battle of the Saints. Formidable was in the center of the British fleet and took advantage of a sudden change of wind to “break the line” and sail into the French fleet unleashing her 98 guns on Admiral de Grasse’s ships.

While all the rums in the series are column distilled, this edition contains rums sourced exclusively from the lowest portion of the Coffey still resulting in a much heavier and more flavoursome rum - "certainly more characterful than most column distilled rums could ever hope to be", according to thefatrumpirate.com. Aged for 9-12 years in x-Bourbon casks and expertly blended, it promises honeyed raisin fruit, spices and vanilla in a complex palate of luscious sweet dried fruits. 40% Alc./Vol.

Tasting note: Bright copper colour gleams in the glass. Some minor sediment evident. Evokes aromas of café-crème, molasses-drizzled pancakes, dried mango, cinnamon and vanilla. Silky and graceful on the palate; a delicious harmony of honey and grated chocolate flavours delivered with a flourish of cinnamon warmth. Finishes gently spicy, vanilla-heavy yet not overly sweet. Appleton Estate Nassau Valley Casks 21 Year Old Rum (700ml)
    JAMAICA
    $240. 00
    Bottle
    $2880.00 Dozen
    ABV: 43%

This is the new version of the 21 year old classic from Appleton, arriving in an updated bottle and box presentation. First launched in 1996 and named after the heart of Jamaica, the Nassau Valley, the reimagined expression reveals "...a floral scent that develops into a unique mature nutty bouquet, with notes of vanilla, orange peel, nutmeg, almond, coffee and cocoa for a long, dry and luscious finish."

The blend of rare and hand-selected pot and column still rums have all been tropically aged for a minimum of 21 years. Jamaica’s Nassau Valley, 400 ft above sea level, surrounded by limestone hills ranging up to 2,000 ft, provides beautifully filtered waters to the Estate-harvested cane.

“Jamaica is a place unlike anywhere else in the world,” notes Master Blender, Joy Spence. “With Appleton Estate 21 Year Old Nassau Valley Casks, we wanted to celebrate our home in an elevated, modern way with a new sleek, sophisticated version...”

Rooted in traditions that go past the American Revolution, not much has changed at Appleton since the 18th century: water is still sourced from a spring on the estate, small batch pot distillation remains the norm, done on-site using a proprietary yeast strain propagated from the estate-grown cane. The estate's versatile blends have been quietly changing the perception of rum, with homes and bars across the country embracing the rum renaissance. 43% Alc./Vol.

Appleton Estate 12 Year Old Rum (700ml)
    JAMAICA
    $99. 99
    Bottle
    $1199.88 Dozen
    ABV: 43%
Aged for a minimum of 12 years and distilled, blended and bottled on the Estate since 1749, Appleton 12 is generally considered a classic expression of the rum-maker's art.

Tasting note: Beaming bright bronze copper colour. Issues powerful aromas of spiced apple, lean molasses and buttered fruit toast. Air contact adds banana confectionary, rancio and nutty, grilled corn-like notes. Ideal sweet/dry balance with the spicy, fruity, brown sugar flavours countered by hints of banana cake and fine tuned astringency. Fades with walnut fudge, oaky vanilla and understated molasses at the last. Remains a clinic on poise in the mid-tier rum category. 43% Alc./Vol.

Other reviews.... The first nosing passes find tight notes of molasses and walnut; aeration time releases bigger scents of nutmeg and spiced apple. The palate entry is wonderfully warm and spicy; at midpalate the taste turns cocoa- and vanilla-like, creamy and honeyed. Concludes creamy and delicious. 98 points - wineenthusiast.com

"Complexity, finesse and power are apt words to describe this excellent aged Jamaican rum. The colour of this aged rum is exceptional. It has an amber hue with a reddish tone that is very lively, and it gives a greenish tint around the rim of the glass that confirms the long ageing in oak casks. This aged rum's wooded smell and taste are perfectly balanced. The aroma is intense but delicate and complex with a predominantly spicy bouquet mixed with nuts, nutmeg and a hint of orange peel. Its powerful flavour has a harmonious, mellow alcohol taste with good length and complexity." - Alain Belanger - Meilleur Sommelier Du Canada 1997.

Black Tot Master Blender's Reserve Cask Strength Rum (700ml) - 2021 Limited Edition
    $260. 00
    Bottle
    $3120.00 Dozen
    ABV: 54.5%

Another first class blending achievement, this time with an Australian twist.

While comparisons with the inaugural release are inevitable, the Master Blender's Reserve is not simply a slightly older version of last year's 50th Anniversary rum, but a different composition altogether. Different countries, still types and ages have contributed with Head Blender, Oliver Chilton opting for a 'fruitier' expression. It also celebrates the 100th Anniversary of the last rum ration given to the Australian Navy after separating from the Royal Navy, although Australians serving on British ships could still receive rum - in 1921 this was also forbidden. Adding substance to the sentiment, 6.7% of the blend is from Beenleigh Distillery (ten years aged in Queensland and four years continentally).

At its heart is the 'perpetual' base spirit (14% of last year’s 50th Anniversary release), re-casked into ex-sherry butts and blended with rums between 9 and 24 years old from Guyana, Barbados, Trinidad, Jamaica. These make up the majority of the blend. Even from a 20ml sample they come through powerfully on the nose which has a drier, well-aged Demerara-like feel, developing dense aromas of fruit cake, bush honey and zesty peel matched by nutmeg, vanilla, ginger and cinnamon. Stay with it longer and you'll discover even more. The early palate stages are a little understated - call it elegant (this is anything but an overly-sweet contemporary style). Off-dry flavours of liquorice, roast nut, coffee, brown sugar, dried banana, leather and spice dovetail into a long, fanning flourish of intense, estery complexity. That sensational late burst seems to be Chilton's signature, and it unfolds in slow motion, drawn out with molasses cake, warming cinnamon and bittersweet dark chocolate as well as hints of exotic fruits. The alcohol is less and less discernible with each sip, inverse to the stunning persistence of flavour. 6000 bottles are available globally, however Australia's allocation will be closer to several hundred. Decanted from the casks with zero added sugar and no chill filtration, for full transparency, refer to the details and ratios of the blend below. 54.5% Alc./Vol.

Other reviews... I'm always finding it rather moving when very altruistic distillers and master blenders accept to part with their own reserves. By the way, for the first time distinguished Master Blender Oliver Chilton has added some Australian rum to the Black Tot composition; could that be Beenleigh? Other than that, it's all a 'British' rum with Guyana, Jamaica, Barbados and Trinidad. Colour: gold. Nose: you would almost believe you could read through this one on the nose, finding the Jamaican(s), Trinidadian, Bajan… It's pretty estery, diesely, with some meatiness (bacon) and quite some liquorice and star anise, then overripe bananas and fermenting pineapples. Touches of olives, which I always find very Jamaican (although I've never checked if they were growing olives in Jamaica) and a handful of raisins. With water: gets drier, on many herbal teas and even more liquorice (sticks). Very fresh allspice mix. Mouth (neat): ultra-classic rich British-style rum, with heavy liquorice, petrol and rotting topical fruits, and a spiciness that may stem from the Australian. Just a very wild and silly guess. With water: very good, a notch lighter perhaps (Barbados?) with those raisins coming to the front and a few violet sweets in the background. But liquorice keeps running the show. Finish: rather long and quite salty. A little more pipe tobacco, molasses, prunes and raisins. Comments: excellently constructed and very 'British Navy' indeed.  Why not also do a French Marine Nationale rhum, one of these days? 87 points - whiskyfun.com

...The length on the finish is just right and the flavours linger for long after the liquid has evaporated. As mentioned already this is quite an intense rum so you will probably take time between each sip to savour the finish. I certainly have anyway. As is often the way my previous years bottling is long gone. So I can’t do a head to head comparison. I do know that this is definitely in the same league as the 50th Anniversary and I really have no hesitation in giving a rum as good as this full marks. Another great addition to the Black Tot cannon. Great stuff. 5 stars - thefatrumpirate.com

Notes from the bottlers... Cinnamon sticks, cooking in brown butter, with nutmeg and cloves. Overripe mangoes and baked bananas, with dusty dark chocolate. More citrus notes build in the glass - satsumas and freshly squeezed navel oranges blend with juicy nectarine and cooked honey. In the background, a dense oily note complements the zesty flavours and merges with herbaceous notes of mint and lemon thyme. Taste: At first, a huge hit of concentrated orange and mango juice, with fresh mint and golden brown caster sugar. The sweetness evolves into milk chocolate and salted caramel, while the fruit seems to become denser, bringing in flavours of guava and passion fruit. Another sip brings orange blossom, balanced by runny honey. Finish: Clementine and mandarin make up a citrus salad, evolving with a pleasing dryness reminiscent of thyme and oregano. Right at the very end, a hint of diesel oil.

315 Years of British Naval History

On July 31st 1970 a 300 year-old Royal Naval tradition ended at precisely 6 bells in the forenoon watch (11am) when the last rum ration was issued aboard ships of the Royal Navy - a day to be forever remembered as Black Tot Day.

With the withdrawal of the rum ration, the Royal Navy had little use for the remaining rum stocks which were filled into wicker clad stone flagons and transferred to HM bonded warehouses where it remained undisturbed, being only broached for use on State Occasions and Royal Weddings until now.

The precise makeup or age of the rum cannot be specified but records support that it was probably distilled in the 1950’s and was imported from the West Indies. Nevertheless, a slice of history is up for grabs, the likes of which we couldn't imagine ever being seen again!

Tasting note: Pours a deep copper/mahogany colour with some minor sediment evident. Perfumed aromatics exude layers of molasses, brown sugar, liquorice all sorts and new leather. Entry is semi sweet and soft, building with exceptional concentration. Mid palate is off dry with a momentary burst of date and raisin, becoming dry, spicy and fruit cake like. Stunning length as the flavours repeat in waves. Finish is progressively drier as delicate, powdery tannins enter. Impeccable balance. Concludes super fine and dry with notes of charry oak, sarsaparilla and cigar box. The persistence of flavour is nothing short of remarkable as the aftertaste reverberates in the mouth for ten minutes plus. An exhilarating rum experience. 54.3% Alc./Vol.

Other reviews... The Colour - Bright, yet deep mahogany cut with flashes of ruby.
The Nose - Initial treacle notes precede dark chocolate with super-ripe black fruits, muscovado sugar and walnuts. A drop of water releases notes of black banana, liquorice root, tamarind paste with and exotic edge of balsamic.
The Palate - Starts off thick and sweet, becoming light and oaky before a burst of cassis / creme de mures then espresso & cacao.
The Finish - Very long with light scented wood, black fruits and cigar tobacco.
The Strength - Remarkably, after 40 years Black Tot will be introduced at 54.3% (94.2° proof), almost exactly original issuing strength." - David Broom

Note: the cork is susceptible to breaking when removing the stopper from this product. You may need a cork screw to remove the remaining cork from the neck of the bottle. Have a substitute cork or stopper on standby.

Matured for three years in first-fill Bourbon barrels and released at an eye-watering strength - as it was traditionally shipped to the Royal Navy victualling yards in Deptford, Gosport, and Devonport for blending and dilution. The nose opens with pungent Indian spices and evolves to molasses-drenched fruit cake, papaya, peel-heavy marmalade, dates, coffee beans and dark chocolate in a punchy but classic Demerara whiff that's ultimately Armagnac-like. Tasted without dilution, the flavours are intense, alcohol-charged, bittersweet, tropical, estery, resiny and complex. Tactile and almost unctuous to finish, striking a deeply satisfying balance in spite of the extreme ABV, this high-octane, gorilla of a rum guarantees to blast tropical cocktails into the stratosphere. Nothing has been added before bottling. (We recommend tasting, but not drinking it straight). 75.5% Alc./Vol.

Rum and the sea are inseparable, and no rum is more akin to the sea and the seaman than is British Navy Pusser’s Rum. For more than 300 years, sailors of Great Britain’s Royal Navy were issued a daily ration of rum by the Purser (corrupted to 'Pusser' by the Jack Tars). From 1655 until the traditions termination on August 1st 1970, 'Pusser’s Rum' was one of the few daily comforts afforded those early seamen of Britain's Navy as they fought across the globe to keep the Empire intact and its sea lanes open. British Navy Pusser’s Rum is the same blend of six West Indian rums as discovered during the Navy’s expeditions and served on board Their Majesties’ ships for three centuries. Today, it is still blended in accordance with the Admiralty’s exacting specifications of 1810. Pusser’s Rum was never sold or offered to the public, and if a rum connoisseur managed to acquire a tot or two, he saved it for a very special occasion.

British Navy Pusser’s Rum is expertly blended from some of the world's finest Caribbean rums. Amongst x-seamen, the consensus is that Pusser's is about as close to the authentic British Royal Navy Rum as one can obtain. Spirit connoisseurs claim Pusser's to be more like a fine brandy than a rum, with a full, rich flavour and a rare smoothness - a true sailor's delight! This is essentially a sipping rum, however its unmistakably full, rich flavour will shine through anything you care to mix it with.

Tasting note: [42% Alc./Vol batch tasted] Deep gold / copper colour with a gold hue. The nose is restrained at first offering woody, resinous scents, but is worth spending some time with to cajole out the complex aromas of liquorice all sorts, brown sugar, citrus zest and pine nuts. The rich, spicy palate offers flavours of clove, vanilla bean, juicy raisins, honey and nutmeg. Pure, smooth and gently warming. Long aftertaste of honeycomb, toffee and liquorice all sorts with a subtle, drying cocoa fade. A well poised dark rum - full flavoured without becoming over-sweet or fat.

Other reviews... Deep amber color. Rubber sap, marinated vinegar, caramel taffy, ad brown spice aromas. A round entry leads to a glycerous off-dry medium-to full bodied palate with sherried brown spices, mineral spirits, roasted Brazil nuts, cedar, and toffee. Finishes with a touch of shellac, exotic peppercorn, and very spicy heat. A very hearty, traditional navy rum.

Bundaberg Master Distillers Collection Solera Rum (700ml)

    $199. 00
    Bottle
    $2388.00 Dozen
    ABV: 40%

Winner: Best dark rum at the World Rum Awards 2017.

The crowning masterpiece in the Bundaberg Master Distillers' Collection is also Bundaberg's finest and most intricate rum to date. Made using a complex solera process, it begins with their best reserves, carefully matured in selected rich Port, Bourbon and Sweet Sherry barrels and ends in a rum that can go toe to toe with premium South Americans and Carribeans. Delivering a palate that's rich in age, combined with sweetness and notes of vanilla, fruitcake, butterscotch and oak, more than a few lifetime Bundy fans have declared it the best thing the distillery has ever produced. Comes impressively packaged in a heavyweight, rectangular decanter and premium presentation box. 40% Alc./Vol.

Other reviews... For All the gimmicky limited editions and well overpriced rums with little age or pedigree they have finally managed to make one good rum. I was very sceptical when finding out about the world drink awards they had won and purchased a 3 pack of their award winners directly. Containing one mdc, one small batch and the solera. The first 2 would taste fine drowned in cola like every rum they have made to date but then there is the solera. I have multiple rums at twice the price that are nowhere near as good as this. At under 200 aud a bottle this is one to stock up on. A very UN Bundy kind of rum. A smooth sipper, expertly blended no doubt, sweet molasses, vanilla and Christmas pudding. Totally unexpected. A real credit to who ever blended this. It's about as good as it gets. Around the same price as zacapa xo but this has the edge as far as $170+ soleras go. If I blind tasted this I would expect a much higher price. - rumratings.com

Using the ingenuity that Aussies are famous for, the Bundaberg distilling team have created an incredibly smooth rum, using a unique red gum filtration process. The rum goes through a similar double distillation and aging process as standard Bundy UP, but then goes through three separate filtration processes which create an incredibly smooth profile. This process removes some of the stronger flavour compounds which exist in the regular Bundaberg UP, and allows some of the more subtle flavours to shine through. 37% Alc./Vol.

    GRENADA
    $240. 00
    Bottle
    $2880.00 Dozen
    ABV: 46%

312 bottles of this venerable column distilled rum are on offer from Cadenheads, and that's about all that's known. We believe there are only four distilleries on Grenada: Renegade (the new kid on the block since 2021), Westerhall, Rivers Antoine and Clarke’s Court, the last of which was formed in 1937, operating under the umbrella of the Grenada Sugar Factory (the largest on the island), however that doesn't help to narrow it down by much. Cadenhead's notes suggest a decadent experience including flavours of “toffee, peaches in syrup, apricots, white chocolate with cashew nuts, bananas and peppercorns.” Sounds a bit like a very old single grain whisky... 46% Alc./Vol. Non chill filtered.

    $220. 00

    $2640.00 Dozen
    ABV: 46%

Cadenhead's Green Label series are usually single-country blends, sometimes mashed together from multiple distilleries (or stills, or both), mostly from around the Caribbean and Central/South America. The labels offer less detail than the cask strength “Dated Distillation” bottlings, hence, the exact source of this rum remains undisclosed. One can only guess based on the taste as there are three distilleries on the island: Angostura, Fernandes and Trinidad Distillers. This is noteworthy for carrying a significant age statement. 672 bottles produced. 46% Alc./Vol. Non-chill filtered.

Notes from the bottlers... “Fresh and floral with minty notes and a constant sweetness. An interesting and characterful rum that kept the panel wanting more.  Mango, herbal, mint leaves, bay leaves. Floral, peppermint, raw Manuka honey”.

    ANTIGUA AND BARBUDA
    $170. 00
    Bottle
    $2040.00 Dozen
    ABV: 50%

Dead Reckoning's latest offering features 'rum royalty' from the legendary Antigua Distillery. Located in English Harbour (home of the ‘English Harbour Rum’ brand), the rum is copper pot distilled from a molasses wash, matured for two years in x-Bourbon wood, then finished in Australia for two years in a first-fill Apera cask before bottlling at 50%. 355 bottles are available.

Little-known to rum lovers, Antigua Distillers Limited was formed in 1932 by eight local businessmen and by 1933 they had established their own distillery on Rat Island (named because of its shape – the authorities didn’t want a distillery on the mainland due to the potential smell and noise). Originally equipped with a multi-column Savalle still, it was replaced in 1991 with a three-column still from John Dore & Co. made entirely out of copper – bolts included. That was subsequently modified into a five-column still making it shorter, apparently due to the danger of tropical storms in the area. While the distillery's website does talk about a yeast and fermentation process that “adds a level of flavour to the liquid in the tank, and it also produces a number of compounds that contribute directly to the complex flavours and aromas of the final product”, the wash is distilled to 95% ABV making it pretty much neutral in taste. Most of the flavours are said to come from the maturation process which typically employs charred 200 litre ex-Bourbon casks, so this bottling adds a bit of a twist. Reportedly, nothing has been added.

Other reviews... Nose: A sweet cacophony of chewy dried figs, juicy lunchbox sultanas, toffee apples, dried banana chips and desiccated coconut. Palate: Crisp, clean and dry on the pallet with granny smith apples and vanilla custard chased around by stewed fruits and ginger-y spices. Finish: Not a lot of length to the finish, but it’s a fun ride whilst its there!  – espresso coffee, dark chocolate and more sultanas with a mild white pepper salute right on the tail. Wow – this is quite a textbook mix of bourbon and sherry (ok, ok… Apera) cask characteristics – floral apple and vanilla notes from the bourbon and the dark stewed fruit and pepper from the Apera cask. The characteristic column still ‘crispness’ is also there to complete the lesson. - rumtribe.com.au

Notes from the bottlers... Toffee, caramel, roasted coffee, chestnut & a hint of black pepper. Whilst working in the mega yacht industry, I was fortunate to spend several months a year living in English harbour in Antigua. Nelson’s dockyard was the location of many a party with fellow crew members.  It is also place where Lord Horatio Nelson spent time. This is where my love for this Rum developed as it was a daily staple for all yachting crew. In the past English Harbour rums did have slight adulteration, but I believe they have now changed their formula so no longer will you see sugar added to any of their rums.

The Dictador company was founded in 1913. This molasses-based rum is produced via continuous column distillation and aged in pre-used oak barrels via the solera method. The deep gold appearance is accompanied by liqueur port-like aromas, then more familiar rum notes of sticky date pudding, raisin, cocoa and vanilla making for a decadent sniff. Aeration brings the rum full circle with the superb sweet, fruity fortified wine notes accented again. Entry is surprisingly light and agile compared to the richness of the aroma - almost oloroso sherry-like in style; mid palate crescendos with a medium dry sherry-like burst that’s rich and nutty, followed by subtle cafe-creme and molasses flavours. Concludes tangy and light with a nutty, vanilla, cocoa and dilute molasses aftertaste. Impressive - especially given this is the company's entry-level standard. Tasted from a 25ml sample. 40% Alc./vol.

Other reviews... This is quite an unusual rum, heavy on the nose with notes of walnut nougat, marshmallow, and vanilla. That complexity continues into the palate, where a heavy, Demerara sugar-fueled sweetness awaits. Notes of sweet cream and cinnamon stick give this a decadence usually only seen in ice cream or Mexican desserts, unctuous and becoming almost gaudy with its sweetness from the moment it hits the tongue to the long, mouth-coating finish. It’s an epic rum, and that’s both a good and a bad thing. On its own, Dictador 12 is a bit overwhelming, but in a cocktail its unyielding boldness of flavor can add a surprising dimension to a cocktail. - drinkhacker.com

...Dictador Solero isn’t anywhere near as dark as the bottle might lead you to believe. Its a lightly brown coloured rum which is quite transparent in the glass.  It’s a very intense, pungent smelling rum similar to Pampero Anniversaro.  The taste of the Dictador initially is very much of coffee.  If you sip this rum then that will be the taste you will definitely get the most, cold coffee.  I suppose it being Colombian that kind of makes sense.  For the record this isn’t a criticism its really very nice sipped.  With a little cola the rum really comes to the forefront giving an intense smoky flavour. I found this rum to be very moreish (the darkness of the bottle hides the fact I’ve drank most of the bottle).  If you like rums which are a little different to the norm and enjoy a complex dark aged rum you will enjoy this rum.  It still has a fruity taste but it has a lot more going on that just being sweet... If you want to try something different then give this a try.  It is also available in a few 20 year old versions.  They too have reviewed well online though I’m yet to try any of the more expensive one’s. - thefatrumpirate.com

If you haven't been inspired to try the aged rums of the Caribbean then you’ve got a lot to look forward to. This applies not only to those who’ve never moved beyond Bundaberg and Coke since high school, but more so to those who are serious about wine, whisky and brandy - in short, those of us who are passionate about ‘flavour’. Quality Caribbean rum has as many permutations of aromas, tastes, textures and strengths as any group of wines or spirits. The rum market in Australia has increased exponentially and the overall quality is superb. We now have access to many small and large producers who are vying for attention and the very reasonable prices mean rum is not just a passing fad.

Aside from the familiar Caribbean island groups, more and more people are becoming aware of a ‘mainland’ rum tradition. Think Nicaragua, Gautemala, Panama or Venezuela. The latter, already famous as the spiritual home of the rum based medicinal bitters, Angostura, is now finding its rums eclipsing that legacy. The country has a number of highly regarded offerings, but those from the Distilerias Unidas in La Miel on the northern slopes of the Andes lift the bar highest.
Their Diplomatico label is the international reference.

We prefer to let what’s inside the bottle do the talking, but it is impossible to overlook this venture’s remarkable accumulation of twenty plus international awards since 2007 (54 medals in contests worldwide), including the SIP Awards, San Francisco World Spirits Competition, Miami Rum XP, Monde Selection and other big guns. Even if the show circuit is irrelevant to you, a different kind of achievement came in October 2011 when the company’s Maestro, Tito Cordero, was honoured at the Golden Rum Barrels Awards as the World’s Best Master Blender. He was the first Venezuelan to receive the award. Given that so much depends on how the distiller and blender create their product, this was the rum world's supreme commendation of Cordero's skill and outright quality fanaticism.

A reinvigorated project that stemmed from an early Seagrams investment in the 1950s, passed on to Diageo, and is now in the custody of the Ballesteros family, the distillery is adjacent to the Hacienda Saruro, where much of the sugar cane is grown. Average daytime temperatures of 30-31C drop by 6-7C at night, a differential which when coupled with high humidity benefits cane growth: it concentrates the sugars and favours the ageing process. Different varieties are grown to make sugar honey and molasses. Molasses is preferred for the light rums, sugar cane honey for the heavy. While many producers are struggling to get molasses with a sugar content above 45%, Diplomatico are ahead of the pack before they even begin. Venezuela regularly achieves upwards of 60%.

Not unlike other distilleries, here pot stills are for richness and weight, column stills for adding freshness and elegance. Between the two are batch kettles that carry out secondary distillations of semi-heavy rums. Varying proportions of each create a hierarchy of styles. Barrel regimes vary, including ex-bourbon with some re-filled single malt whisky casks. Sherry casks are now being experimented with to great effect, as the 2000 Vintage release bears testimony. Finishing departs from the mainstream, as most Diplomatico rums are given only a delicate filtration prior to bottling - gentle enough to maintain fatty acids and maximum mouthfeel - then filtered using 3 micron-thick filter pads. It is minimal interference by world standards, Cordero considering it a formality to ensure the rums retain their clarity and brilliance when exported to cooler climates.

Diplomatico's flagship cuvee is aged for up to twelve years and typically blended from around 80% pot still rums; the remaining 20% are lighter styles from column stills. Cordero mixes a little cane sugar prior to blending which is another reason why the flavour seems amplified compared to some others in the stable. Stylistically this edges Ron Zacapa 23 for satisfaction and sheer saturation and is the one that many of our customers measure other rums by. Those whose taste preferences tend towards the savory may misunderstand what is an unashamedly dessert / quasi- liqueur styled effort that falls into a sub-category of its own. Almost as decadent as a rum can get without cloying the mouth and falling out of balance - there are more complex rums around, but not near this price, nor do they have the same uncanny ability to incite superlatives. The packaging depicts Don Juancho Nieto Melendez, who was a noted rum enthusiast in the town close to the distillery. It's reported that, being something of a globe trotter, over many years "...he amassed a large collection of rums which he took great pleasure in offering his guests at the lavish dinner parties he held at his house."

Tasting note: Brilliant copper with a gold hue. Heady and decadent scents of creme caramel, fresh coffee, chocolate fudge, vanilla and spice. A silky, creamy mouthfeel yields a plush array of dried fruits, raisins and coffee-caramel, counterpointed by a gently warming spirit heat. Perfect balance, seamless integration. Very long, mouth coating aftertaste of vanilla and liquorice strap with a subtle dark chocolate finale. Avoids the too sweet trap. A stunning rum that will instantly convert many a Muscat or PX Sherry drinker. This remains one of the most re-purchased spirits on our shelves. 40% Alc./Vol.

Doorly's rums are made at the Foursquare Distillery, one of Barbados' oldest trading companies. Currently owned and operated by the 4th generation of the Seale family, Richard Seale remains the Master Distiller & blender. The distillery is situated in the south eastern quarter of the island in St. Phillip and built on the site of a former sugar factory dating back to the 1650s. This blend of pot and column still rums was aged in ex-bourbon casks, with a smaller portion matured in ex-Madeira casks. While it's not quite cask strength, at 48% it definitely promises more oomph than the entry level Doorly’s. No sugar or other sweeteners are added, which will also please purists.

Other reviews... The mid palate shows more of the Madeira influence. Notes of red wine and blackberries mingle alongside dark chocolate and some faint notes of marmalade. Finish wise we are left with a spicy and slightly heated end to the rum – white pepper and lots of ginger and a trace of cinnamon. The finish is very long and the rum lingers for a long time in the mouth. Lots of barrel char like flavour. Further sips seem to temper the more bitter and woody notes. More fruitiness becomes apparent. Once the palate adjusts the rum has a much better balance than the initial sip might lead you to believe. The extra ABV means this is a rum worth sitting down and spending some time with. Doorly’s XO you can almost swig straight from the bottle – you don’t want to do that with this. Sit down with it and appreciate it in small sips... For most other producers this would be the jewel in the crown. There best efforts. for Foursquare it’s just another great rum....The only people who would be disappointed with this rum are the nuggets that think Bumbu or Plantation XO are great Barbados rums. 4 Stars - thefatrumpirate.com

...Doorly's is one of Foursquare's brands. Colour: amber. Nose: not the first time that I have the impression that by using molasses and blending column and pot still, they often manage (not saying that was their goal) to create some kind of 'agricole' rum. This one's got the same kind of waxy polishes, slightly salty, almost olive-y touches, the slightly heady floralness, the crème brûlée, the tarte tatin, these slightly 'burnt' touches, this earthiness… Now, yes I know Barbadian rum existed way before the French started to make agricole rum, thanks to Napo and the British navy (or the other way 'round). Mouth: excellent, bold, salty, full of liquorice and smoke, cigars, burnt caramel, varnish and olives, some lavender (sweets), aniseed, caraway and cloves… I'm wondering if you wouldn't achieve some rather similar results if you would let some yellow chartreuse age for a decade or so in active wood. Like, in a proper ex-solera manzanilla butt. Seriously, I find this Doorly's just perfect and, perhaps, a little 'funkier' than the Foursquares. But not too sure about that part… Finish: long, with a little pepper, one olive, some orange juice and some caraway. Comments: I even like the blue parrot on the label. Is that an ara? What would the rum world do without parrots? In any case, this Doorly's was extremely convincing. 89 points - whiskyfun.com

Dos Maderas, meaning ‘two woods’ references the unusual maturation of this rum. It was initially aged in the Caribbean for 5 years before a second stint in Spain. The latter takes place at Williams & Humbert's facilities in Jerez with the rum transferred to casks that previously contained “Dos Cortados” (Palo Cortado Sherry). The final stage finishes the rum in x Pedro Ximénez Sherry casks.

Tasting note: Brilliant amber-gold ochre dazzles in the glass. Moderate aromas of raisin and date cake, raw sugar, dark chocolate, caramel fudge and aged muscat wine, follows through to a silky, easy, graceful delivery; Flavours of liqueur muscat, raisins and honey finishing moderately viscous and medium-sweet with succulent dried fruit and caramel notes in the aftertaste. A medium bodied, semi-sweet profile suggesting milk chocolate, caramel fudge, vanilla and raisin cake. Excellent sweet-dry balance. Finishes with late rancio and marzipan in the aftertaste. Stemming from Mexico, El Ron Prohibido is matured in a 12-year old solera composed of barrels that previously held sweet raisin wine. The story goes that this rum used to be served to sailors in Mexico, but they all got so drunk that the captains made it illegal to serve! Hence the name 'El prohibido' - the forbidden rum. Nosing finds hints of balsamic over richer scents of candied orange, choc-chip cookie, praline, chico lollies and dilute molasses. Five minutes sweetens the aroma and shifts the emphasis to sticky date pudding. Light to medium bodied, off-dry delivery. Coffee milk, caramel fudge and lingering mocha flavours are nicely counterpointed by subtle bitter chocolate in the aftertaste. An atypical style with a likeable cocoa / mocha accent. Would work well with dessert cocktails. 40% Alc./Vol.

Notes from the bottler: “In 1700, Spanish ships arrived to the colonies in the New World loaded with products from Spain. One popular product was sweet wine stored in barrels, which were later emptied after use. These empty barrels were filled with Chinguirito, which is rum that was produced in Mexico and shipped back to Spain, it absorbed wood flavours and aroma from the sweet wine barrels, which gave it very special characteristics. The resulting product became very popular in Spain and local producers saw it as a threat to the sales of their products. Consequently, the King of Spain prohibited the production of this rum in the New World. Chinguirito was also known as Habanero because the last stop on the way back to Spain from the New World was Habana, Cuba.”

Nicaragua is an often neglected producer of medium-bodied Rums from column stills that lend themselves well to aging. Thanks to the exceptional quality maintained by distillers like Flor de Cana, the region's rums have begun to gain well deserved international recognition. Flor de Cana is owned and produced by Compañía Licorera de Nicaragua, which was founded in 1890. Although the brand was not marketed commercially until 1937, it is today considered one of Latin America's most prestigious rums, and has won 72 awards, medals and commendations in the last five years.

Sourced from a single estate with the sugar cane grown on the distillery's own plantations in the Chichigalpa, then five times distilled, Flor de Cana 25 is a pinnacle of the range with only a small number of bottles allocated to the Australian market each year.

Tasting note: Bright polished copper. Seductive scents of light golden syrup, crème caramel and vanilla custard with later inhalations offering dates, fruit’n’nut chocolate, beeswax, pineapple pudding and more. Glides across the tongue with a graceful parade of sugars: crème caramel, vanilla wafer and dates followed by hints of caramelised pineapple and new leather. Retains a sense of vibrancy and freshness throughout. Deceptively long. Easily the most luxurious of the collection, without sacrificing complexity or elegance. 40% Alc./Vol.

A family business for over two centuries, Gosling's was founded in 1806 by James Gosling and is Bermuda's oldest business house and largest exporter of locally made product. Originally called 'Old Rum', the company's flagship 'Black Seal Rum' was not sold by the bottle until after World War One, when it was packaged in Champagne bottles (the most widely available bottle at the time) and sealed with black wax, hence the name which has stuck. Over the years, Black Seal Rum has become synonymous with the Bermuda region - it is an essential ingredient in the local fish chowder, adds the island flavour to the 'Bermuda Rum Swizzle', as well as being the tempest in Bermuda's favorite cocktail, the 'Dark 'n Stormy'.

At the World Spirits Championships, the largest international spirits judging in North America, Black Seal scored 96 out of a possible 100 points and was awarded the Platinum Medal. Havana Club Anejo Especial Rum (700ml)
    Havana, CUBA
    $68. 99
    Bottle
    $827.88 Dozen
    ABV: 40%

Havana Club is produced according to careful Cuban tradition from sugar cane of the highest quality. After fermentation of the molasses, called mieles in Cuba (literally honey), an extremely slow distillation process in columns specially designed for Havana Club produces a powerful and aromatic liquor known as aguardiente. This young liquor is aged in white oak casks and then blended with fresh sugarcane distillate to produce ron fresco (fresh rum) which is then successively aged and blended again several times until the maestros roneros (master blenders) are satisfied. The choice of barrels is crucial, as the wood gives colour, aroma and complexity to the liquor. The entire range of Havana Club is aged naturally, with no artificial acceleration – the best guarantee of excellent quality. This is a versatile aged rum making it perfect for the most genuinely Cuban “Cuba Libre” cocktail. Anejo Especial is elaborated with rums aged in oak barrels and perfectly balanced by the Maestro Ronero, who selects the barrels for the final blending.

Tasting note: Bright gold colour. Nosing yields powerful aroma of coffee bean, vanilla wafer biscuit and cream. The palate is sweet and medium to full-bodied with honey, nuts and butterscotch flavours. Turns dry at mid palate balancing nicely before the sweetness kicks in again with a subtle brown sugar, mocha aftertaste. Sweet and straightforward. Good choice for mixing with citrus juices. 40% Alc./Vol.

Cuba has a long tradition of rum-making dating back to when Christopher Columbus introduced sugar cane to the island. The crop flourished in the favourable climate and fertile soil. Production of sugar soon followed and by 1620 there were 50 sugar refineries in Cuba. By the 1800s, the rum-making process had been refined with the introduction of copper stills and the concept of ageing the spirit in pots buried in the earth and wooden barrels. The second half of the 19th century saw the production of a lighter, more delicate rum, aged in white oak casks, developed initially “for the elite” on the instruction of the Spanish Crown.

The Seven Year Old is the pride of the Havana Club portfolio, its quality the result of strict adherence to traditional processes. Composed of rums aged for a minimum of 7 years, some substantially older, it's appreciated as a slow sipping rum and a perfect compliment to its Cuban brother, the Havana cigar.

For a long time reserved for CSR's Board of Directors, this is the 'new formula' Green Dot, considered a significantly better rum than its predecessor. Rather than being distilled in Fiji, it's now produced at the Beenleigh distillery. The colour is amber gold. Attractive aromas hint at cream sponge cake, honey crackles, vanilla wafer and light molasses. Entry is gently bittersweet with near zero burn. Middle stage offers appealing coffee, raw sugar and vanilla flavours. Ends clean, delicate, warming and medium long. Very accessible at natural strength. 57.2% Alc./Vol.

Mount Gay The Port Cask Expression Cask Strength Rum (700ml)
    BARBADOS
    $399. 00
    Bottle
    $4788.00 Dozen
    ABV: 55%

It's good to see other Caribbean producers following the lead of bottlers like Velier with unadulterated, high strength rums. Mount Gay's 'The Port Cask Expression' is the third release in the Master Blender Collection that began in 2018 with an unusual Islay whisky cask-finished rum. Once again, Trudiann Branker is behind the composition and this time she’s employed Port casks, primarily because they're rarely used at the distillery. In fact, at least one report suggests that this is the first time in Mount Gay’s long history that they’ve used Port casks for aging. Specifically, the rum is a combination of Port-aged and Port-finished liquid, distilled on a traditional column still and aged for five years in Tawny Port casks, blended with pot still rums, aged for 14 years, and then finished in Tawny Port casks for a final twelve months. The exact percentages of each aren’t specified. Apart from having nothing added, it also comes non-chill filtered for maximum flavour and mouthfeel. 6570 bottles are available globally. If you like your rum neat, this is recommended with a piece of dark chocolate. 55% Alc./Vol.

Other reviews... The Port influence isn’t immediately evident on the nose. It’s rich with baking spice, some stewed orchard fruit, and plenty of classic rum esters from the pot still. As it opens, more dried red fruits emerge with a bit of marzipan in the mix, but on the whole, it’s not nearly as jammy or fruit forward as some other wine-finished rums I’ve encountered. The palate isn’t as restrained, but the Port is still not the only star of this show. The same sweet apple notes that dominated Trudiann’s first Master Blender release shine through with the Port overtaking some of the traditional vegetal sugarcane notes and injecting currants, juicy prunes, and black cherry in their stead. At cask strength, there’s still that classic Mount Gay dryness and spice, despite the syrupy and sweet Tawny addition. It’s a velvety and beautifully balanced rum that finishes as rich as it starts with the Port influence on full display in a lingering rinse of raisin and cherry juice. - drinkhacker.com

    Mount Gay XO Rum (700ml)
    St. Micheal, BARBADOS
    $104. 99
    Bottle
    $1259.88 Dozen
    ABV: 43%

Dating back to 1660, Mount Gay is one of the oldest estates in the Caribbean and certainly one of the oldest in Barbados. It was established by Dr. William Gay, thought to be a cousin of John Gay who wrote 'The Beggars Opera'. Originally called 'Mount Gilboa', the estate is located in the northern parish of Saint Lucy and was renamed in 1801. There is evidence that there was distilling equipment in the region in 1663, so rum has probably been in production at Mt. Gay since. A tattered little deed confirms that rum production on the estate was well underway in 1703.

Mount Gay's Extra Old Rum is the pride of the estates Master Blender. Using oak aged single distilled rum and special double distilled rum from the centuries old copper pot still, the rums are blended in order to maximise complexity and length. The recipient of several Gold and Grand Gold awards, Mount Gay Very Old is more refined, lighter and more elegant than its traditional 'heavy' Caribbean counterparts. Enjoy neat or with a splash of soda.

Other reviews... Deep amber hue. Toasty caramel and banana nut fudge aromas are deep and flavorful. A supple round entry leads to a medium to full-bodied palate of roasted nuts, bananas and orange peel, dark caramel, brown spice, and mocha. Finishes with a long, multidimensional fade. A beautifully balanced and deeply flavored benchmark aged Caribbean rum. 43%alc.vol.

Other reviews... The initial aroma includes scents of treacle, spice and flower garden; further aeration brings out aromas of black pepper, cola nut, dried red fruit, and molasses. The palate entry is long and toffee-like; at midpalate honeyed, apple butter-like, and creamy flavors add zesty spice to the aftertaste. 90-95

Mount Gay Black Barrel Rum (700ml)
    St. Micheal, BARBADOS
    $87. 99
    Bottle
    $1055.88 Dozen
    ABV: 43%
Dating back to 1660, Mount Gay is one of the oldest estates in the Caribbean and certainly one of the oldest in Barbados. In fact, in 2013 it will be celebrating its 310th anniversary.

Like all the other rums in the Mount Gay range, Black Barrel is made from double pot and single column distillates that are aged separately in x-Bourbon barrels. "What makes Mount Gay Black Barrel different is that when rums have matured, Master Blender Allen Smith selects and blends aged single and double distillates with a higher proportion of double distillates than in the Eclipse blend," comments Suntory Australia brand manager, Jeremy Church.

"The Black Barrel blend is then aged a second time, in deeply charred bourbon barrels, hence its name."

Tasting note: [40% ABV bottling circa 2013] Deep brass / polished copper appearance. A rich aroma offers up scents of dilute molasses along side banana cake and hints of over ripe pineapple. A silky, light opening builds into a light to medium bodied rum profile with semi sweet spice and banana cake flavours followed by a hint of menthol towards the finish. Ends light, less sweet with a subtle dried banana aftertaste.

This rather quaint, unpretentious brand is a spirits icon in its homeland. Launched in 1954, it's garnered a massive following despite little to no advertising. Indeed, word of mouth and a loyal customer base has seen it maintain its title as one of the leading dark rums in the world. Beyond India, Old Monk is now widely exported - from Africa to the Middle East and now, good news for homesick Indians - a small volume has finally made it to Australia! Other reviews... We've tried a 5 'Grande Réserve' that had been really too sweet, but that was ten years ago. Colour: light gold. Nose: a lot of burnt hay, or garden bonfire, that's not unpleasant at all. Whiffs of fresh-pressed cane juice too, even if this is not 'cane juice rum'. In short, a most pleasant caney nose, with notes of pistachio syrup in the background. Fine!  Mouth: things are getting tougher. Read 'sugary'. It may not be as offensive as it used to, but you still have the impression of having swallowed five sugar cubes at once or drunk a litre of Coca Zero/Light or equivalent. Finish: short and sugary. Sugarcane syrup and pineapple liqueur. Comments: do you think you could rather add stevia to your rums? What's good is that you could make a Ti punch or a Daiquiri without having to add any sugarcane syrup. This with hugs to all mixologists in the world. 65 points - whiskyfun.com

    Plantation O.F.T.D. Overproof Rum (1000ml)
    Caribbean,
    $140. 00
    Bottle
    $1680.00 Dozen
    ABV: 69%
A blend of rums from Barbados, Guyana and Jamaica in the overproof dark style. This replaces Plantation’s 'Original Dark Overproof' Rum which was a Trinidad exclusive.
"O.F.T.D." stands for "Old Fashioned Traditional Dark". In its conception, Alexandre Gabriel, Master Blender for Plantation Rum, brought together six rum luminaries. After many tasting and blending sessions, they formulated a rum ideally suited for use in top-shelf Tiki and tropical cocktails.

Tasting note: Deep topaz, beams from the glass. Super aromatics, with banana fritter, dried mango, dates and molasses up front. Air contact adds pipe tobacco, balsa wood and dark chocolate. Intensely caney / grassy entry followed by raw sugar, liquorice strap, fruit mince pie and all-spice. The alcohol is kept in check. A keenly balanced overproof rum with profound depth and staying power. 69% Alc./Vol.

Other reviews... Some of the world’s best rums are being made by a man who cut his teeth on Cognac, Alexandre Gabriel, owner of Maison Ferrand. Not long after reviving that brandy house, Gabriel turned his attention to rum, creating Plantation and endowing it with a Cognac distiller’s sense of balance, elegance and variety. OFTD (Old-Fashioned Traditional Dark), created with input from rum specialists including cocktail historian David Wondrich and tiki expert Martin Cate, is a blockbuster. Earlier Plantation dark rums had relied exclusively on Trinidadian stocks, but OFTD instead blends Jamaican rum’s oily funk with Guyana’s focused intensity and Barbados’s lithe grace—all in a powerhouse package at 138 proof. This is a mixing rum that will stand up to even the stoutest of punches. - www.wineandspiritsmagazine.com

    Cognac meets the Caribbean.

The Caribbean is undeniably the epicenter of world Rum production, a  fact celebrated by seven artisanal vintage rums and three blends marketed under the ‘Plantation’ label, a new venture from highly commended ‘Cognac Ferrand’, makers of 'Pierre Ferrand Cognac', 'Citadelle Gin' and several other high quality spirits.

The Pierre Ferrand company has had relationships with a number of the Caribbean’s top rum producers for many years via the supply of x-Cognac casks. These are prized by certain distillers for the maturation of their best rums and generally reserved to ‘give style’ to blended rums. Presented with the opportunity to taste the fruits of his trade, Ferrand’s owner/director, Alexandre Gabriel, visited the Caribbean and was blown away. The experience ignited a love affair with Rum and he immediately commenced negotiations to secure his own stocks, launching the Plantation labels around 2005.

The driving concept behind these rums is essentially one of ‘terroir’ - each aims to express ‘the characteristics and flavour of its place of origin’. One might argue that if there are definite regional differences that contribute to rum styles in the Caribbean, these are largely obscured by the fact that there are virtually no regulations with regard to the production of rum. Instead, a myriad of production variations ensue, making Ferrand’s claim a difficult marketing line to maintain. We recently tasted the Plantation collection for ourselves. While there is indeed a remarkable diversity to be found, there’s also a common house style. Most of the Plantation Rums possess in varying degrees, a remarkable mid palate opulence and buttery texture, balanced by a tannic dryness - a combination that results in flavour profiles one would usually associate with fine wines or brandies.
Ignoring the marketing speels, one cannot ignore the fact that these rums demonstrate that carefully selected estate or single-island rums can offer a range of aromas and flavours that compete with the depth and complexity of great Cognac or Whisky.

No doubt one of the key influences is Ferrand’s unique finishing process. When their maturation period in the Caribbean is deemed complete, the rums are transported at natural strength to Chateau du Bonbonnet, the historic Ferrand estate in France and then ‘finished’ for several more months in small French x-Ferrand Cognac barrels. This process was used extensively in the 18th and 19th centuries.
Gabriel explains, 'Ninety-nine percent of rums are aged in barrels that once held bourbon. We found that adding an aging process in a French oak cask that once held Cognac adds extra complexity to the rum. This is a practice that was done more commonly in the past but has almost disappeared now. We thought who better than Ferrand, with our knowhow and exceptional casks, to resurrect this ancient technique. It is a very difficult thing to get right, but when done well, it's paradise.' Gabriel concludes, 'In the Caribbean, Plantation Rums are rare treasures. At Ferrand they become jewels.'

As of 2015, a relaunch of Plantation Original Dark Rum has taken place with a new recipe, blending rums from both Trinidad and Jamaica.

Tasting note:  (Trinidad bottling) A blend of Trinidad dark rums originally matured in x-Bourbon casks.
Gold with pale gold hue. Praline, toffee and clove aromas. A soft palate entry leads into a powerful, off dry and rather broad flavour profile of dried tropical fruits, confectionary and spice. Drying tannin. Gentle spirit tingle. Relatively short and understated aftertaste of passionfruit and vanillan oak.
A good entry level rum. One for cocktails.
