London Dry

Applied to Gin, the term "London" originally signified Gin produced in or near the city, where most English Gin has traditionally been distilled. Today the term is adopted by Gin producers the world over, and no longer indicates any specific geographical association. Generally speaking, they are juniper-forward, drier styled gins with a range of supporting botanicals.

    Twenty Third Street Distillery is the new incarnation of a century-old landmark at Renmark, in South Australia’s Riverland. Originally built by Chateau Tanunda in 1914 to take advantage of burgeoning local grape harvests, the distillery had a roller-coaster history, surviving a series of takeovers and mergers until it ceased production in 2002.

    When a pair of disused, South Australian-built copper pot stills were found at Berri Estate, a small team became determined to bring them back to life. The 7,500 litre capacity stills had their own story to tell, being x Hardy’s - at one stage responsible for producing the iconic Black Bottle brandy. Years of hard work running restorations and relocations has found these antiques once again fully operational at the original 23rd St premises producing brandy, whisky and gin.

    Tasting note: Made using ten botanicals including locally grown mandarines. Dazzling clarity with a brilliant silvery blush. Nosing finds medium-fresh aromas of juniper, lemon gelato, peppercorns and dried herbs. A light bodied, soft-textured gin with brisk flavours of piney-juniper, citrus peel, white pepper, liquorice root and suggestions of lime juice in the aftertaste. Clean but short.     Founded in 2015 by four friends, Animus Distillery soon outgrew its Fitzroy origins and is now located in central Victoria. Triple filtered, 100% Australian grain spirit is used and many of the botanicals (all vapour pressed in a 50L copper still) are grown on the property. During production botanical baskets are changed every few litres and the final ABV is kept relatively high in order to maximise flavours.

    Tasting note: Clear. Opening sniffs are moderately peppery / spirity with floral-yet-earthy scents of dried herbs (tarragon / lavender / thyme?) and white pepper over background citrus oils. Air contact adds green juniper and lime peel to the mix. A lively, concentrated, resinous delivery includes early juniper followed by an alluring mixed herb / pepper combo with distinct lime peel, subtle smokey cardamom, cinnamon and saffron at the finish. Concludes mildly oily, tongue tingling and medium long. A robust, full bodied style with a touch of Asia to it. 50% Alc./Vol.

    Launched in 2017 and created by Master Distiller, Arko Ryynänen and Michelin starred chef, Jaakko Sorsa, the Arctic Blue Gin range is distilled at Nordic Premium Beverages Distillery located in the small village of Ilomantsi in Eastern Finland. The company behind the operation is also the country's oldest winery. Produced using botanicals from the freezing northern regions of Finland, Arctic Blue has been described as "like walking through a wild bilberry forest on a misty morning." Boasting powerful aromas of juniper, liquorice root, grapefruit and tart red berries, it's a medium to full-bodied, vibrant, warming gin with piney juniper, coriander seed, citrus zest and a burst of white pepper adding length and depth to the palate. Wild berries from the forests of North-Karelia are key botanicals, and the berry notes are amplified with minimal water (or tonic), which also turns the gin cloudy white. Non-chill filtered. 46.2% Alc./Vol. Batch #33 tasted from a 30ml sample.

    ...Arctic Blue Gin delivers an abundance of Nordic character with fragrant pine notes, subtly fruity bilberry and delicate florals. These three pillars of the flavour profile are beautifully supported with undertones of cardamom, coriander seeds and anise, and the mouthfeel is smooth, full and crisp. With Tonic Water, the piney juniper notes are elevated further alongside floral rose, while the bilberry character brings a very gentle sweetness that lingers enjoyably.     A unique partnership between Lee Medoff and Christian Krogstad of House Spirits Distilling in Portland, Oregon, and mixologist Ryan Magarian of Liquid Kitchen in Seattle. Believed to be the first collaboration of its kind, the gin employs a traditional Dutch copper pot still all-Rye grain base, which brings it's own zest, spiciness and weight compared to corn or wheat base counterparts, combined with a more even handed blending approach (i.e.- less juniper than a London Dry Gin). Other botanicals include cardamom, coriander, lavender, aniseed, saraparilla and dried orange peel.

    Chris Carllson of Spiritsreview.com commented: "While taking an old style genever or American style base they have added a deft sense of blending, maceration and distillation to create a truly outstanding Gin.     Tasting note: Clear. A sweet star anise top note descends the liquorice octave to fennel and sarsaparilla over hints of dill, caraway and rye bread. Soft, glycerous entry leads into a broad, semi sweet rye, caraway, anise flavour profile with citrus zest adding freshness. Excellent balance.     An Australian gin from a company better known for world class brandies - Angoves. Made using hand harvested, organically grown botanicals including juniper berries, coriander root, angelica root and summer savory, all distilled together in a traditional small still to create an aromatic infusion in organic wheat spirit. As of 2023, this gin sports a new recipe and the label now states "London Dry". An increase in the citrus component provides more lift on the nose and palate. The aromas are pure and true to style with juniper, citrus peel, white pepper and a slightly nutty character following in a medium bodied, creamy delivery, echoing the bouquet and building spicy warmth as it goes. Coriander seed, pepper and tangy peel round off a fresh, lip smacking finish, with piney juniper and more citrus oils in tow. If you're curious about the name, in the 1920’s Prohibition Era a “Blind Tiger” was an establishment known to illegally sell alcohol.     First batch tasted 2015... Clear. Opens with restrained, drier styled aromas of juniper, lemonade and hints of blackpepper.     Released in the late 1980's, Bombay Sapphire was the first London Dry to be marketed as a 'super premium' Gin.

    While most gins take their flavour from four or five botanicals, most notably, the juniper berry, Bombay Sapphire uses no less than ten, achieving an altogether more balanced and refined taste. Furthermore, the distilling process is unique. Most other gins boil up the botanicals with the spirit. But with Bombay Sapphire, the spirit is distilled alone. Thus it is in vapour form when it passes through the perforated copper botanicals basket. This process allows each delicate aroma to be absorbed from each respective botanical. These include almonds, lemon peel, liquorice, juniper berries, orris, angelica, cassia bark, cubeb berries and coriander. Bombay's character is more complex and herbal than other gins and its price is indicative of its quality.

    Simon and Brogan Carr join a small but growing number of inner city suburban distillers servicing Melbourne's Richmond neighborhood. From their bar / distillery set up in an old mechanics workshop, they've created three signature gins: A juniper-forward dry style dubbed Everyday Salvation, a slightly more contemporary style called Evening Light, and a navy strength edition called 'Royal Blood'. Brogan Carr is qualified as a medical laboratory scientist, and says she didn‘t expect to become a distiller. ”I love the precision of science and investigative nature, but working in labs wasn’t enough”. She retrained as a distiller, finishing a Master of Science Brewing & Distilling at Heriot Watt University in Edinburgh, Scotland.

    Brogan’s three gins are designed to appeal to different gin drinkers. Evening Light is a fresh and fruity style, made with mangos and raspberries and organic white grapefruit juice alongside more traditional botanicals. Brogan says it's her 'easy drinker'.

    Tasting note: Creamy scents of cardamom, orris root and chamomile(?) with hints of lemon peel over background juniper and pepper.     A relative newcomer to the premium Gin scene. Bulldog is a London dry Gin produced using old-time methods where neutral grain spirit is quadruple distilled utilising copper pot stills. The raw spirit is then steeped in an array of botanicals including: dragon eye, poppy, lotus leaves, lemon, almond, cassia, lavender, orris, liquorice, juniper, angelica, and coriander.

    Tasting note: Clear. Lovely fresh citrus peel aromas combine with caraway, talc and juniper notes. The palate is quite concentrated, medium dry and gently warming with spice, citrus, caraway and pine flavours leading into a tingly, spicy back palate. Exceptionally persistent, drying aftertaste with a subtle mineral / anise fade. 40% Alc/.Vol.

    Gloucestershire based distiller, Barney Wilczak, is meticulous in selecting, growing and harvesting his own botanicals. 34 are included in this gin, including fresh Sicilian blood orange and flowers from Tillia cordata, a particular variety of small-leaved lime tree native to Britain. Wilczak employs a custom copper still heated by a naked flame, clothed in a water bath, removing the risk of scorching. Runs are limited to 200 bottles, so expect some flavour variation between batches.

    Tasting note: [Batch 24 tasted] Clear. Packed with lifted lemon peel in the opening inhalations; later sniffs detect tangerine, orange blossom, orris root, white pepper and woody juniper. Five minutes air contact heightens the orange with no diminution in overall freshness. Medium to full bodied with flavours of orange sherbet, citrus zest and fresh juniper. Tangy and textural to finish. Pith and peel extend the aftertaste. A delightfully fragrant, citrus-led alternative to classic London Drys. 47% Alc./Vol. Non chill filtered.

    The Cardrona Distillery is a family-owned and managed distillery nestled high in the Cardrona Valley between Wanaka and Queenstown. Their gin is produced from both copper pot and column distillation and employs local Cardrona botanicals including juniper, coriander seed, angelica root, lemon and orange zest. Seasonal rose hip, first brought to the district by the Chinese, is also used.

    Tasting note: [Batch 0002 tasted] Brilliant clarity. Penetrating aromas excite the senses with intense juniper, menthol and crushed eucalyptus leaf freshness followed by white pepper, coriander seed and lemon peel. Five minutes air contact accents celery leaf and subtle cardamom. Neutral entry builds to a concentrated, medium-dry, peppery, lemon sorbet attack. Finish is textural, zesty, drying and citrus peel-fresh; Aftertaste sees juniper and lively spices trailing off in a pure, pine-wood/juniper and mineral farewell. Structured and complex.     Triple distilled from wheat, Citadelle Gin includes 19 botanicals: “coriander from Morocco; orange peel from Mexico; cardamom and nutmeg from India; liquorice from China; cubeb pepper from Java; juniper, savoury, violet and star anise from France; fennel from the Mediterranean; iris from Italy; cinnamon from Sri Lanka; almonds and lemon rind from Spain; cassia from Indochina; angelica from Germany; grains of paradise from West Africa; and cumin from Holland.” Technically, Citadelle is classified as a London Dry gin, however, the method of production is unusual with its use of the Charentais pot still, (a form of still made popular in the 16th century for the production of Cognac, which utilizes a naked flame as opposed to team for its heat source).

    Based on a 70-year-old-recipe that took Tanqueray No.7 as its inspiration, Colombo No.7 was conceived at a time when many traditional botanicals were difficult to procure due to trade blockades during World War II. Alternatives were found in locally grown cinnamon, ginger and curry leaf. On working on the recreation of the original recipe, the grandson of the founder, Amal de Silva Wijeyeratne commented: “We did try to see if we could enhance it and tried adding other botanicals and spices. We tried lemon grass, turmeric, cardamom etc., but somehow we always found that more spices didn’t necessarily make it better and seemed to take it out of balance." He adds, "My grandfather was always a perfectionist, and Colombo No.7 was already perfect. We didn’t change a thing, and in about two months the gin was ready.”
    The gin is presently distilled and bottled in England using a 100% grain spirit base.

    Tasting note: Powerful aromas of pine needle, curry leaf and citrus peel with air contact releasing more of the former. A pure, relaxed delivery with attractive tangy citrus, restrained juniper, white pepper, and a medium long dried herbal finish with trace curry leaf heat in the aftertaste.     Other reviews… Colombo No.7 has landed at a funny time in our gin drinking history; when it was first made 70 years ago it would have been unimaginably alien with its citrus absence and curry leaf presence, but tasted next to gins created in the last couple of years it almost cries of tradition. Juniper leads the way to taste, with liquorice and angelica lending an earthy, almost dusty sweetness and a soft mouth. Cinnamon sings loud and bright, though doesn’t whip at the tongue in a typically barbarous manner, instead conspiring with the ginger and curry leaf to bring a fragrant warmth and depth.     …Having read the list of botanicals, I was expecting something a bit weird tasting, and possibly over spiced. I am not a fan of cinnamon either. So It was a relief to discover that Colombo No. 7 is a properly balanced gin. Juniper and citrus aromas and flavours abound, followed by subtle cinnamon. The finish has great white pepper notes. In case you were wondering it doesn’t taste of curry! Pretty much a perfect G&T, crisp with juniper and citrus with the curry leaves coming through on the finish. I used their suggested garnish of curry leaves which was delicious, but there are plenty of other garnishes that could work well like ginger, lime or mango… - theginqueen.com

    Four Pillars worked with QANTAS and the Rockpool mixology team to create an Asian-inspired Modern Australian style. The bartenders were aiming for a gin with nice spicy complexity and mixability – something to create a tasty G&T, or classic dry martini. Plus, with all that spice it also makes a spot-on Red Snapper.

    Red and green Szechuan give it a lovely warm mouthfeel while the macadamia nuts give it softness and an almost creamy palate. Fresh Rose Glow apples, tangelos, grapefruit peel and dry native quandong add fruity notes.

    Tasting note: Clear. Spicy feel to the bouquet offering lifted scents of peppercorn and coriander seed over fresh juniper and citrus. A full bodied, creamy, oily textured gin suggesting flavours of green cardamom, juniper and liquorice root with intensifying peppers towards the finish.     One of Australia's latest distilling ventures is located in the Yarra Valley. Their first spirit is a modern Australian Gin; possessing an equal mix of local and exotic botanicals including Juniper Berries, Coriander Seeds, Cardamom Pods, Tasmanian Pepperberry Leaf, Cinnamon, Lavender, Angelica, Star Anise, Lemon Myrtle and Fresh Oranges.

    The distiller's state, "In terms of our ambition for our first gin, we didn't want a London Dry Gin but we couldn't ignore juniper. The way we have approached it is that the juniper is the canvas and the other botanicals paint the picture. The Tassie pepper is brilliant on the palate, giving us warmth rather than heat. Lemon myrtle is a beautiful, complex and unique alternative to lemon peel. Perhaps most interesting is our use of whole oranges. It’s unusual to use fresh produce in gin but Australian citrus is highly aromatic and supports the spicier botanicals like coriander, cardamom and star anise. 

    Tasting notes: [BATCH No.2 tasted] Clear. Vibrant, lifted aroma is citrus focussed with its distinct lemon peel top note hovering over peppery, woody, piney, juniper notes. Second pass sees the aroma turn creamy and more lemon-meringue like. Hints of eucalyptus emerge in the final inspection to round off a very appealing gin bouquet. An unassuming entry leads into a concentrated, creamy yet spicy, medium dry profile featuring citrus peel, juniper and pepper. Excellent balance.     G'Vine Nouaison employs nine botanicals including nutmeg, cubeb berries, ginger roots, liquorice, lime, juniper berries, corriander, cassia bark and green grape flower. The botanicals are infused over a two to five day process and distilled in the grape neutral spirit. Small liquor stills are utilized to insure the best quintessence. A fifth and final distillation: the green grape flowers essence, the Ugni Blanc neutral spirit and the botanical spirits are blended in perfect proportion and copper pot distilled one last time for a complete marriage.

    Nouaison is one of two aromatic gins available from G'vine. This version approaches a London-Dry style with Juniper becoming a prominant feature along with a higher ABV at 43.9%.

    Saffron Gin is a unique recipe discovered in the archives of France's colonial past when England and France both claimed India as their jewel, and Gins rich in exotic botanicals were fashionable. Apart from Saffron which gives this Gin a delicately spicy character, seven other fresh botanicals are used including Juniper, Coriander, Lemon, Orange peel, Angelica seeds, Iris and Fennel. Saffron Gin is only produced in small batches using a traditional pot still, so at this stage availability is limited.

    Tasting note: Brilliant deep orange/gold appearance. Semi sweet scents are of orange and mandarine peel over more subtle juniper notes. Delicate spices emerge after time in the glass with suggestions of saffron. A mild entry leads into a light to medium bodied palate that repeats the citrus peel-over-juniper theme. Soft, gently spicy mouth feel. Concludes refreshingly dry followed by a delicate juniper and spice aftertaste. If there’s saffron evident it comes through very late (more texturally than taste wise) and in such a subtle way that if you weren’t looking at the bottle, it wouldn’t enter the flavour equation. Would integrate well into citrus based cocktails but this is definitely not a gin that works well with tonic. 40% Alc./Vol.

    Other reviews... The bright orange/new copper appearance is the result I assume in part, of FD&C Yellow #5 coloring agent as stated on the label; no sediment seen; since this gin contains saffron, why artificially bring the color to such an outlandish orange degree? A potential turn-off aspect to bartenders who pay attention and like natural products. Opening sniffs detect plenty of juniper and mild herbal notes upfront; further aeration time doesn’t stimulate more in the way of ginny aromas. Entry is strikingly sweet and seed-like; midpalate focuses on the herbal bittersweet and piney/juniper components but little else. Ends on a pleasant note of coriander, juniper and barely perceptible fennel. The high level of sweetness and the phony looking color might present mixing problems.     Note: the title of this product has changed from 'Distillery Botanica' to 'Garden Grown Gin'. It's the same liquid, produced in the same way, to the same recipe, by the same people.

    Garden Grown Gin is produced at Distillery Botanica and employs a process known as enfleurage, a thousand-year-old technique. Traditionally it applies to flower petals - these are placed on glass trays containing a wax or animal fat called a 'corps'. This corps which is highly purified with no odour or water remaining absorbs the flavour and fragrance from the flowers. Every 24 hours the petals are removed from the tray and replaced with fresh ones. This may be repeated dozens of times per tray. The trays are stacked so that the tray on the top can trap the rising fragrance from the flowers on the tray below.

    Once saturated with aromatics, the corps is referred to as the "pomade" (the most highly saturated pomade is called "pomade No. 36" because the frames have been charged with fresh flowers 36 times, the maximum during enfleurage). The next step is to break up the pomade in the presence of high strength neutral spirit which takes up the natural flower oils and leaves the spent fat behind.

    At Garden Grown Gin, the aim is to extract the purest perfume from their chief botanical, Murraya, without the use of heat. This makes the delicate flower come alive with cues of jasmine, honeysuckle and orange blossom.

    Distiller, Phillip Moore adds, "the gin also includes a rose enfleurage using an old fashioned Tea Rose from our garden. It is known as the Duchess de Brabant. Our garden also supplies Chamomile flowers which when distilled immediately on picking have a delicious apple character with a delightful bitter finish. To carry on the perfume allusion of enfleurage we also use orris root which is used in Chanel No 5. In perfume and gin orris is a fixative which creates harmony and also slows down the evaporation of the more volatile aromas. Orris has its own violet aroma. It enters the palate very sweetly and adds a richness and viscosity all over. On the finish it contributes a high quality bitter and an earthiness which is almost pastry like".

    Tasting note: Crystal clear, shows good viscosity. Pure and ultra fresh with a juniper and black pepper base overlaid by sweet floral top notes. Aeration offers suggestions of orange blossom, rose petal and muted lavender and later hints of incense candles. Creamy yet vibrant entry with a seamless integration of juniper / herbal / floral / wax-like notes. Concludes tongue tingling, peppery, fresh, long. Delicate and multi-layered.     Old Tom Gin is the last remaining example of the original lightly sweetened Gins that were so popular in 18th and 19th century England. The name comes from what may be the first example of a beverage vending machine. In the 1700's some pubs in England would have a wooden plaque shaped like a black cat (an 'Old Tom') mounted on the outside wall. Thirsty passersby would deposit a penny in the cat's mouth and place their lips around a small tube between the cat's paws. The bartender inside would then pour a shot of Gin through the tube and into the customer's waiting mouth. Until fairly recently limited quantities of Old Tom-style Gin were still being made by a few British distillers, but they were, at best, curiosity items. Hayman's Old Tom Gin is an exception.

    The original company of Hayman Distillers was founded in the 1800’s by James Burrough, the great Grandfather of the current Chairman, Christopher Hayman. James Burrough created the world renowned Beefeater Gin. Although Beefeater Gin and James Burrough Limited were sold to Whitbread in 1987, the Hayman family retained part of the business and continued the tradition of distilling and blending Gin and other white spirits.

    Following the 18th Century tradition, Hayman's Old Tom Gin is a botanically-intensive and lightly sweetened style of gin distilled from 100% grain. In comparison to London Dry Gin, the Old Tom style delivers a more rounded taste experience with depth.     Tasting note: [Batch 199 tasted] Clear. Leaps from the glass with piney juniper, dried coriander and peppercorn aromas over sweeter, citrus base notes. Very pure with fine-tuned juniper / cool-mint freshness followed by a vibrant, delicately tingling, lemon mousse, white pepper and dried herbal finish. Entry level ABV but no lack of flavour. 40.5% Alc./Vol.

    One of the most beautifully presented gins to come our way in years arrives all the way from the Hebrides in Scotland. Sugar kelp is key to the subtle coastal notes in this beauty - hand-harvested by a local diver from the deep underwater forests of the Outer Hebrides.

    Managing Director, Simon Erlanger explains, “We worked with an ethnobotanist recommended to us by our Chairman’s daughter, who we commissioned to explore our island’s flora, to see what is sustainable to harvest and what sort of properties they might bring to our gin. After looking on land, she finally turned to the sea and that’s where we found our answers.”

    This sustainable ingredient completes the wider aspects of the gin's flavour profile, with other botanicals being Juniper, Coriander, Angelica Root, Orris Root, Cubeb, Bitter Orange Peel, Liquorice and Cassia Bark. It's all captured in a striking glass bottle, ribbed and rippled like the seas of Luskentyre. There are subtle imperfections, dimples and dips to hold it safely while you pour. The label is simple, though no two are quite alike, each individually flecked with fragments of copper leaf and Sugar Kelp. Strong reviews all round with what reads as a premium London Dry with a maritime twist. We received a 30ml sample. The nose has excellent purity with juniper, light menthol, brine and vaguely sappy / resiny notes. Air contact accents orange oils and citrus cough lozenge. The palate follows through with vibrant, peppery flavours suggestive of lemon sherbet and juniper with a zesty mouthfeel, a warming finish and all-round excellent balance. 45% Alc./Vol.

    Other reviews... Tasted neat the lead is a strong floral and piney juniper. This is quickly followed by dry spice almost like fresh nutmeg (this must be a combination of the citrus peel and cassia) rounding out in the linger to a full sweetness with grapefruit notes...The distiller set out to capture the elemental and maritime nature of the Isle of Harris and this gin, from the bottle to the glass, does just that. A genuine sweet-savoury gin, which is quite rare if not unique.     Nose: A well-defined juniper note with pine needles, immediately followed by the fresh citrus notes of bitter orange, lime and grapefruit. Develops a complex floral note of rose and wallflowers with crushed green herbs, coriander and gooseberry all underpinned by mixed spice. Sugar kelp adds to the complexity and richness and gives a dry maritime note.

    Palate: Refreshing gin with good balance between the bitter juniper and pine and the sweet fruit flavours of mango, grapefruit and orange. A green herb flavour has developed of crushed coriander. Distinctive and smooth with a dry, flinty taste.

    Finish: Overall a long, clean finish. As the juniper and citrus fade away, sweet vanilla and black pepper remain with a gentle reminder of the sea.

    The world’s first, truly 100% Japanese gin, from the inside out.

    The Kyoto Distillery is the brainchild of whisky exporters, David Croll and Marcin Miller (founders of the Number One Drinks Co). The gin they produce is distilled, blended and bottled in Kyoto and is reportedly the nation’s first craft gin.

    Made in a dry style but with a distinct Japanese accent, indigenous botanicals are what separate Kinobi from the pack. “We had originally started experimenting with 50 to 60 ingredients, but that gave us a gin that tasted too classic,” says The Kyoto Distillery’s head distiller Alex Davies, who had previously run England’s Cotswalds Distillery. “We wanted ours to have a clearly defined Japanese character, so we narrowed it down to a handful of core flavors.”

    These include yellow yuzu from the north of Kyoto Prefecture, hinoki wood chips (Japanese cypress), bamboo, gyokuro tea from the Uji region and green sanshō (Japanese peppercorn) berries. To add a further touch, the gin is produced in copper pot stills from a rice spirit with water sourced in the famous sake–brewing district of Fushimi. A second smaller still is used for herbal distillations.

    The local input extends to the packaging: The glass bottles are hand-blown by craftsmen in Osaka. The screen-printed label was designed in association with Kyoto’s oldest maker of karakami (woodblock prints). A must have for any collection (or for followers of Obi-Wan Kenobi) - the name actually translates to ‘The Beauty of the Seasons’. Very limited.

    Tasting note: Nicely integrated aromas of pine sap and lemon oregano with peppercorn and wasabi-like warmth. Follows through with a concentrated, piney-woody, herbal entry becoming linear, elegant and finely balanced towards the finish. Subtle aftertaste combines creamy juniper, delicate heat and citrus freshness. Excellent persistence. Quite nuanced. Reserve for martinis. 45% Alc./Vol.
