    Kurayoshi are one of a few Japanese small-scale craft (or Ji) whiskies to be released in Australia. Created in the shadow of Mt Daisen, at the Matsui Distillery, the whiskies benefit from the mountain’s crystal clear waters and over a century of expertise. The blenders here often combine malt whisky from Scotland with locally produced whisky. This is not an uncommon practice in Japan, and the exact breakdown typically remains undisclosed.

    Tasting note: Polished copper. Not vastly different to the 8 year old, showing the same subtle Summer yellow fruits, only softer again and with delicious succulence, a bigger finish and better length. It's delicately oily with cocoa-dusted stewed fruits and buzzing spices through the finish. The balance is perfect here, and it feels older than it actually is. Pick of the bunch. 43% Alc./Vol. Non chill filtered.

    Other reviews… This one’s ‘made in Japan’ according to the label, maybe that’s why the latter is deep purple (no, not particularly proud of that one). But what does ‘made in Japan’ really mean in Japan? Colour: straw. Nose: hold on, this is a very nice nose. Well, if they do indeed produce this in a certain ‘Matsui Distillery’, meaning that it would be actually distilled and matured there, well, kudos to them. If they’re simply independent bottlers in disguise, well, same, because this is nice, rather mineral and grassy at first, then with pears and apples, as well as a little sweet ale. It is William-Granty. With water: porridge, mud, and barley. Scottish. Mouth (neat): good, malty and sweet, with peaches and a citrusy development, with touches of peat this time. This is really good. With water: easy apple juice and muesli. Finish: medium, a little weaker now. Sweet barley. Comments: works.

    Since its establishment in 1864, Fee Brothers continue to expand with a portfolio boasting over 80 drink mix products. The company presently has six different bitters. Up until now, some of these ingredients have been difficult to find despite being essential for many classic cocktail recipes which are returning to popularity. In general, we've found the Fee Bros range of bitters to be more pungent than other bitters on the market, so they offer fantastic value for money by being used sparingly.

    In addition to its medicinal properties and quality source of hard wood; the Black walnut, not to be confused with its Persian or English counterpart, is a natural choice for Bitters formulation due to its high tannin content. It will in turn contribute a robust, earthy and nutty character to your cocktails.

    Engulfing rich fruit with a firm, muscular tannin structure leading into a finish that’s dry, grippy and rustic.

    Dense inky black in colour with a deep dark red black hue. Intense liquorice, blackberry and black cherry aromas waft through the nostrils followed by toasty vanillin oak, scorched earth, subtle leather and peppered fennel notes. Rich blackberry and liquorice fruits swamp the mouth with a firm, muscular tannin structure then moving in. Spicy vanillin cedar, scorched earth, leather and peppered fennel elements are also evident. Robust feel finishing dry, grippy and rustic.

    Black cherries and black olives mark the nose of the 2015 The Dead Arm Shiraz, d'Arenberg's flagship bottling. It's a blend of older and younger vines from different sites, depending on what the fruit has to offer. Full-bodied, concentrated and firmly structured, it's nevertheless velvety on the long finish, picking up hints of licorice and tarragon. It should be approachable sooner than The Coppermine Road Cabernet, but it still deserves a couple of years in the cellar. Drink 2020-2035.

    Joe Czerwinski – Robert Parker’s The Wine Advocate

    A great opportunity to enjoy an aged release of a topnotch McLaren Vale Shiraz, at a price that many current releases exceed. Great colour here, despite the age – deep, dark reds. Notes of aniseed, tobacco leaves, black fruits, soy, espresso and chocolate are evident. The wine appears to be still very youthful and vibrant, and it seems to really need even more time, over which, expect it to continue to improve. An attractive wine, well balanced and with abundant tannins, all rather fine. Showing impressive length in a fine style, this still has a good ten years ahead of it. Drink 2024-2034.

    This is an imitation of the original Goldwasser produced in 1598 by the German firm, "Danzig". The recipe did not always include gold flakes. These were added when it became thought that gold was valuable in the treatment of certain diseases. Gold is of course totally inert - it is quite harmless to use in food products and has since been found not to impart the benefits the alchemists attributed to it. Tiny flecks of beaten gold are still added purely for the appearance and to maintain tradition. There also exists or existed Danzig Silberwasser, however it is unknown if the liqueur remains in production.

    Originally produced from aniseed and caraway, this version from Goldschlager tastes like a butterscotch schnapps with a distinct cinnamon background. Always serve chilled.

    A traditional digestif from the French Alps that started life as a medical elixir capable of "remedying over 46 diseases". Joseph Chavasse, founder of La Maison Dolin, saved the recipe from oblivion and decided to market it under the name "Suédois Dolin" in memory of the doctor who first used it to help his patients.

    Tasting note: Impenetrable and thick raw umber with sienna brown edges. Bitter aromatics are earthy / herbal, hinting at gentian, raw root vegetables plus hints of dried peel. Creamy and sweet; mid palate introduces the bitter herbal edge of the bouquet; finishes faintly bitter with quinine, dried peel and late added sweetness. 30% Alc./Vol.

    Established in 1948 by Radhakrishna N Jagdale under the initial name of Amrut Laboratories (a company which produced various alcoholic beverages for the Indian armed forces as well as the general market during the 50's and 60's, namely rum and brandy.)

    The company was later passed on in 1976 to Radhakrishnas son, Neelakant Jagdale who initiated the production of malt whisky during the 1980's. At that time, whisky production in India was constituted by vague and permissive laws which saw almost 90% of the product consisting of molasses. Blended malt styles often contained as little as 4% actual malt whisky.

    Over the years, Amrut turned this approach on its head, intent on creating a world class whisky that would compete with the likes of whisky from Scotland, and ironically with guidance from the Scots, they came to perfect the process. Award winning malts, such as the highly acclaimed ‘Amrut Fusion’ are the result.

    The distillery itself is situated in Bangalore, India, 3000 ft above sea level with the water and barley being sourced from the Himalayan Mountains. Though the maturation takes place high up above the city, the warmer, tropical climate matures Amrut spirits far more quickly than in Scotland. Most Amrut whiskies are reportedly less than 6 years old. Along with award winning whiskies, the distillery also produces brandy, rum, vodka and gin.

    Amrut peated malt is made with barley peated and malted in Scotland, but distilled in Bangalore and aged in a combination of new and old American oak barrels. This version packs a punch at full strength. A little water will go a long way in taming this beast. Not for the faint hearted!

    Tasting Notes... Pale gold colour. The high spirit prickles the nostrils. Powerful aromatics include damp earth, terracotta, biscuit, manuka honey and lanolin. In the mouth, achingly intense spices compete with off dry, earthy peat; some burnt toffee apple sweetness enters, but the intense spices are relentless to the point of being mouth numbing. As the spice gradually subsides, kippery, Fishermen’s Friend flavours complete what is a stupendous whisky experience by any measure; ultimately invigorating, though the spice might be too much for those with an aversion to factor 5 curries. The careful addition of water would improve the overall balance, unfortunately our sample was too small to permit experimentation. 62.8%

    A pineapple-infused libation built on Plantation's Original Dark and 3-star white rums. Aromas of fresh-sliced pineapple take centre stage maintaining excellent clarity and lift even after ample air contact. Medium-bodied, with upfront ripe pineapple, the finish adds gentle acidity achieving an impressive sweet/dry balance. Hints of dried banana and golden syrup evoke rum in the aftertaste, but the keynote throughout is pineapple, pineapple and pineapple - in the best possible way. Use it as a base for tropical cocktails. 40% Alc./Vol.

    Other reviews... not an artificially flavored alcoholic beverage; it's infused with real pineapple rinds. It's a nuanced, delightful sipper, with Trinidad's Plantation Original Dark and Plantation Three Star White as its base spirits, and Queen Victoria pineapples infused therein...Their infusion method, however, is rather modern. The rinds (where essential oils reside) of Queen Victoria pineapples—widely considered the best—are infused with the white and dark rum (separately) for three weeks. The white rum concoction then gets distilled in pot stills, and is married with the dark rum infusion in barrels for three months. The result is entirely tropical, with pronounced pineapple flavor accenting the spiciness of the rum. However, it's not fruity in the way that overly sugary fruit-based cocktails are.     While the other Malfy Gins showcase varieties of Italian citrus (lemon, grapefruit and blood orange), 'Originale' offers a more traditional gin profile. The keynote here is wild Italian juniper along with five other botanicals combined with Monviso mountain water extracted at the village of Crissolo. Established in 1906, the family run distillery is in Moncalieri, just outside the city of Torino - an area famed for its fine wines and spirits. Carlo, his wife Piera and their children Rita and Valter run the show. Beppe Ronco and Denis Muni are the Master Distillers.     Having been imported from London in the 1930s, Vickers has been produced under license in Geelong since the 40s, to this day "inspired" by the original recipe.

    The English word 'gin' is derived from the French word 'genievre', meaning juniper, the original herb used by the ancient distillers to make their medicines. It must still be the most prominent flavour in gin under EC regulations. London Dry gin is a style of gin and not a geographical description. The term 'dry' is a reference from the old days when the most popular gin was 'Old Tom', which was sweetened with sugar and glycerine. Dry gin was so named to distinguish it from the sweet version.

    Tasting note: Crystal clear. An initial whiff of dried juniper, lemon peel and pine needle is followed by sweet, caramel like scents. Neither fresh nor distinctive as gin should be. Palate is faintly fruity in a blanco tequila kind of way and on the sweeter side with hints of marshmallow and little juniper to speak of. Warm, spicy mouthfeel. Meek citrus and juniper are followed by a peppery, citrus and pine needle aftertaste. With so many wonderful gins now available, it's a wonder why anyone would bother with this. 37% Alc./Vol.

    Led by savoury and light salty notes creating a umami finish, 'Daring Dry' marries organic Sauvignon Blanc with native Anise Myrtle, Quandong and Native Thyme and follows with white pepper, gentian, olive leaf and juniper giving this an earthy, salty and very herbaceous character. At 25gms sugar per litre, this is classified as an 'Extra Dry' style. Try pairing it with caper berries, olives, pickles, cucumber, thyme, oregano or sage.

Impressive aromatic lift; drops a notch in the second pass offering scents of lemon cordial, thyme, sweet oregano and grapefruit-like notes.     Chilean Pisco is a distillate mainly of grapes from the Moscatel family, which are grown primarily in the semi-arid "little North" zone of Chile. Chile claims Pisco as its own, protecting its quality through strict adherence to regulations which permit production and processing only in the administrative regions of Coquimbo and Atacama.

    Alto del Carmen is produced just outside of Vicuna in the beautiful Elqui Valley. This example is made from hand harvested muscat grapes, distilled in copper pot stills then rested in American oak barrels. Expect an easy-drinking, lightly fruity Pisco that's endlessly mixable. 35% Alc./Vol.

    The Thomson Family Shiraz is produced from Henry Best’s original 1867 Shiraz plantings, and is only produced in exceptional years with yields typically at less than two tonnes per acre.

    Tasted early 2001: Outstanding opaque purple, crimson mauve colour. Magnificent nose with intense aroma of vanilla, violets, spice and blackberries, followed by hints of marzipan and liquorice. This is a rare sniff, that finds the aromas resting high in the temples and staying there. On the palate, the flavours are totally mouthfilling, refined elegant and concentrated, with a remarkable degree of persistence. Flavours of black pepper, vanilla and confectionery are seamlessly welded together and enwrapped by velvet smooth tannins. This is a very special taste experience. Perfect balance, with a profoundly long aftertaste, lasting over 5 minutes.

    Warenghem distillery is located in Lannion in the north of Brittany. Originally the company produced a herbal elixir (still available today) then moved on to fruit liqueurs. They began making blended whiskeys in 1987 and then tackled the single malt category in 1998, an unusual move. It has paid off in spades as they've won several awards in a short time. The cornerstone of the range, Armorik Classic, brings together the best from the warehouse in a marriage of sherry and bourbon casks of different ages. Non chill filtered.

    Tasting note: Pale straw gold. Pure and attractive scents of gobstopper, marshmallow and sweet malt. Aeration adds a whiff of pepper. Seamlessly integrates flavours of cocoa, lightly peppered malt and sooty peat followed by hints of beeswax, dried banana and almond biscotti in the finish. Outstanding purity and poise. 46% Alc./Vol.

    Other reviews... Armorik is made by Distilleries Warenghem in the Brittany region of Northern France and you expect something gutsy and rugged. This is nothing of the sort, though the relatively high strength and the fact that it's non-chill filtered ensure plenty of taste, including a scattering of spices that tickle and tingle the palate at the finish.     BACKGROUND
    Madeira is produced on the Portuguese island of Madeira. Henriques and Henriques is the largest independent shipper on the island. The company is focused on the premium end of the Madeira market and enjoys a 15% market share. The company takes its name from the two sons of Joao Joaquim Henriques, a descendent of the first King of Portugal.

    LAND HOLDINGS
    Vineyard holdings on the island are small, with 4000 growers owning an average 0.5ha each - which by local standards is extensive. Henriques and Henriques also have their own vineyards, 6 hectares at Camara de Lobos (located on the south coast). The company also has 10 hectares at Quista Grande.

    SOIL TYPES
    The soils of Madeira are basically volcanic, however, the best soils are a stony decomposed red tufa which is known locally as SAIBRO. The vineyards are planted on very steep terraced slopes.

    GRAPE VARIETIES
    The grape varieties are unusual for Australians and include TINTA NEGRA MOLE, TERRANTEL BASTARDO, and either SERCIAL, VERDELHO BUAL or MALVASIA.

    VINIFICATION
    The vintage on the Island of Madeira is said to be the longest in the world, starting in mid August with the Malvasia grapes being picked on the lower slopes and slowly progressing through the other grape varieties of BUAL, VERDELHO and SERCIAL. Vintage in the highest vineyards is completed in early November.
    The fermentation takes place in temperature controlled, stainless steel tanks. Malvasia and Bual are fermented with limited skin contact, whilst for Verdelho and Sercial, only the pressed juice is used. Fortification takes place with the addition of grape brandy, the amount used and the timing of the fortification depends on the style of Madeira that is being produced.
    The majority of young Madeira undergo the "EUSTUFAGEM". This process consists of storing the wine for 3 months in hot conditions with temperatures 45°C. The effect is to mimic the long sea voyages that were a part of the traditional aging process. The best wines are left to age 10 years and more in warm cellars which creates that unique "Maderised" fruit quality.

    TASTING NOTE:This is the 'biggest' of the 5 year old Madeira's. Deep onion brown colour, with olive green hue. Aroma of orange rind, toffee and caramel followed by a strong rancio end note. The palate if full bodied, with pronounced rancio flavours. Warm, spicy spirit, perfectly balanced with very long aftertaste of hazelnut, spice, orange rind and rancio.

    Recipe: Milky Way Martini

    75ml Dooley's Toffee Liqueur
    30ml Mozart Chocolate Liqueur
    15ml Vodka

    Shake well over ice and strain into chilled glass

    Recipe: Dooley's Toffee Liqueur Cheesecake

    Ingredients:

    15 chocolate chocolate biscuits crushed
    3 tablespoons butter, melted
    4 packages cream cheese
    1 1/2 cups white sugar
    3/4 cup Dooleys toffee liqueur
    4 eggs 1 cup sour cream
    1 tablespoon vanilla extract
    1/4 cup all-purpose flour
    1 package Heath Bar crunch bits

    Directions:

    1. Preheat oven to 175 degrees C. Grease a 20cm springform pan.
    2. In a medium bowl, mix biscuits with melted butter. Press onto bottom of springform pan.
    3. In a large bowl, mix cream cheese with sugar until smooth. Blend in Dooley's, and then mix in the eggs one at a  time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into crust.
    4. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Sprinkle Health Bar crunch on top and press into sides of cake. Drizzle some extra Dooley's lightly over top! Chill in refrigerator until hard.

    Tignanello is a famous Italian red table wine produced from a blend of 80% Sangiovese, 15% Cabernet Sauvignon and 5% Cabernet Franc. It broke new ground in Tuscany during the mid 1970’s and early 1980’s being first Sangiovese to be aged in barriques, the first modern styled red wine blended with non-traditional varieties like Cabernet, and one of the first red wines in Chianti not to use white grapes. Tignanello's grappa is produced from the pomace of its namesake.

    Tasting note: Clear, brilliant silvery appearance. Perfumed aromas are waxy (candlewax, crayons), then spicy, fruity notes emerge, in particular raisin and plum. Becomes more bread and pastry like with aeration. A soft light entry builds into a mouthfilling, spicy profile that’s medium to full bodied, dryish, with spicy dried fruits (especially plum). The Famous Grouse is testimony to the unsurpassed blending experience of six generations of this family, which accounts for the consistent quality and smooth character of the blend. Like so many early whisky companies, Matthew Gloag & Son Ltd., has its origins in the early 19th century, when the founder established himself as a grocer and wine merchant in Perth. Matthew Gloag bought malt whiskies from distilleries around Scotland and built up a reputation for his cellars.

    Finest malt whiskies, such as The Macallan and Highland Park, are married with exceptional grain whiskies for an unusually long period in fully seasoned oak casks to create the Famous Grouse blend. The product takes its name from the Red Grouse, a native wild game bird of Scotland.

    Based in Pessac-Leognan on the Left Bank of Bordeaux, Chateau Haut-Bailly has 30 hectares under vine planted to 60% Cabernet Sauvignon, 34% Merlot, 3% Cabernet Franc, and 3% Petit Verdot. As it is only recently that the wines have truly excelled, with knock out wines in 2005/2009/2010 & 2015, they are one of the best values in Bordeaux, but also one of the hardest to find.

    Composed of 60% Cabernet Sauvignon, 36% Merlot and 4% Petit Verdot, the deep garnet-purple colored 2015 Haut-Bailly offers up a tantalizingly savory nose of smoked meats, chargrill, tapenade, unsmoked cigars and black truffles with a core of black currants, black cherries and wild blueberries plus wafts of iron ore and bouquet garni. Medium to full-bodied, very firm and yet wonderfully plush with a powerful core of fruit—this vintage is truly an iron fist in a velvet glove. The finish goes on and on with persistent earthy/minerally notes and savory/sweet fruit. Although it is tempting and indeed delicious right now, the wine still possesses many restrained layers and should handsomely reward the patient. Drink 2024-2050.

    The 2015 Haut Bailly was first tasted at the Farr Vintners tasting, although I felt that this bottle did not show as well. Another at the Vinous Icons event in New York is more representative. Vibrant red berry fruit intermixes with blueberry and cassis on the nose. The palate is medium-bodied and retains a bit of puppy fat. Rich for the vintage, yet very well balanced, it delivers lovely black truffle and tobacco notes on the finish. This is very fine, but it needs further age in bottle. Drink 2028-2048.

    Reminding me of the 2009, the 2015 Château Haut-Bailly has a riper, sunny, sexy style that nevertheless stays nicely grounded and elegant, with ample classic Haut-Bailly character. Sweet crème de cassis, smoked tobacco, loads of spicy, loamy earth, and cedar pencil, full-bodied richness, ripe, velvety tannins, and flawless balance all characterize this incredible wine. It actually already offers pleasure today given its texture, balance, and purity, but it’s going to evolve for 30+ years. Drink 2023-2054.

    The aromatic complexity of this wine strikes you from the very first moment - this has got to be one of the greatest Haut Baillys I have ever tasted. The 2015 has a touch of Petit Verdot for the first time (not including the mixed fruit from the century-old grapevines that Haut Bailly always uses), from three year old vines. This has a balance and grip that lifts from underneath the fruit, with incredibly precise tannins. Slate, pencil lead and curls of tobacco lead the persistent waves of flavour coming at you, expressing a lightness than deceives you until you feel the layers begin to deftly build up over the course of the tasting. This is utterly delicious, showing all the complexity that you expect from a great wine, together with the supreme confidence that they don't need to trick you with a push of oak (they use 50% new barrels).     The peak of the Glen Scotia range was 21 Years, but now the distillery has confirmed they've enough stocks to make a 25 year old an ongoing expression - that's despite recent closure between 1994 and 1999. Bottled at 48.8% abv and non-chill-filtered, this was matured in American oak barrels before being married in first-fill ex-Bourbon casks for 12 months. It comes packaged in a handsome oak case engraved with the Campbeltown co-ordinates.

    “I created the 25 year old with the history of Campbeltown in mind,” says master blender Michael Henry. “For many years, trade has come through this port town bringing fruits and spices from all over the world on its salty sea breezes. I wanted the liquid to reflect this. The signature nose has hints of vanilla oak, interwoven with subtle notes of sea spray and spicy aromatic fruits. On the palate, it boasts tangy orange and juicy red apples mixed with a caramel sweetness. Its finish is a long lingering taste of sea salt with a spicy note of ground ginger.”

    Other reviews... Lemon, ginger, pine resin, and a hint of sea salt on the nose, then banoffee pie develops. Luscious on the palate, with subtle spice, a touch of ashy smoke, and principally big orchard fruit notes. Drying in the lengthy finish, with a wisp of smoke, brine, and peppery oak.     Galway Pipe is named after Governor Sir Henry Galway, governor of South Australia from 1914 - 1920. Governor Galway was a frequent visitor to the Yalumba winery and on each visit he would conduct a tasting of the finest 'pipes' (500 litre Barrels) of port. Whichever pipe was most to his liking was inscribed with "Galway's Pipe" and the particular blend was used exclusively at Governor House.The many components of Galway Pipe have an average age of 12 years - the same average age the port has had since Galway's day. On the palate the wine has a high level of sweetness complemented by a relatively low pH and therefore a good level of fresh acidity. This results in a wine that has pronounced aged character but maintains a freshness and a long dry finish - avoiding any cloying character. Quality brandy spirit has added to the complexity on the palate and the wine has a high level of sweetness. 18.5% alcohol volume.

    A welcome (albeit limited) addition to the Brookies range, is this "Slow" gin, in the style of English sloe. The point of difference here is that Davidson Plums are used instead of sloe berries. Considered a bush delicacy, the plum is indigenous to the Byron region and is packed with vitamins and minerals.The plums are steeped in Brookie’s Gin for several months. The maceration is diluted to 26% ABV with Mount Warning spring water.

    Tasting note: Brilliant copper. Attractive, medium dry aromas suggesting quince paste, plum jam and raisins over muted juniper and white pepper. A juicy-yet-dry, pleasantly tart, plum and red berry flavoured gin with trace pepper in the finish. Delicious Summer sipping, but would be even better at a higher ABV. Keep it simple with soda or just ice. 26% Alc./Vol.

    Other reviews... While 'slow' gin is not an official gin category, this lovely gin cordial pays homage to the much-loved 'sloe' gin style. In a nod to the style's distinctive plum flavours, Brookie's Slow utilises Davidson Plums to recreate the style. The plums themselves, native to the Byron and the surrounding area, are fruits naturally low in residual sugars, making them tarter than a typical plum. The months-long steeping process, coupled with the lower sugar content, means that while the gin develops the concentrated fruit flavour, it doesn't overwhelm the gin itself. Rhubarb and an earthy hibiscus are encapsulated in this gin.     By the turn of the century Angostura had ventured into the rum market, at first just in bottling bulk rum from other distillers. After years of intensive research into fermentation and distillation processes, the Company installed a state-of-the-art distillery in 1945 heralding its entry into the production of rum on a major scale. By the end of 1960, the Company had extended distribution of its products to over 140 countries across the world, becoming well known internationally for its high quality rums in addition to the now world famous Angostura aromatic bitters. This is a marvelous anejo (aged) rum made from a blend of light and heavy molasses-based rums aged in charred American oak bourbon barrels. Angostura 1919 rum possesses a rich, golden-amber hue with excellent clarity. The rum exudes a complex bouquet brimming over with aromas of cocoa, molasses, caramel and vanilla. It is remarkably soft and well rounded as the rum glides over the plate without a hint of harshness or biting edge. Within moments it opens up, revealing a generous and long-lasting array of toasty flavours.

    Tasting note: Pale gold with pale straw hue. The moderately aromatic nose delivers a complex sniff with very ripe banana, brown sugar and honeycomb first evident followed by some heavier undertones of molasses, dark chocolate and liquorice strap. Luxurious palate entry kicks off a silky, off dry flavour wave of spice, boiled lollies, honeycomb and toasty oak. Superb balance. Long, subtle aftertaste of vanilla bean, dates and mocha.

    Oranges, the exotic fruit that forms the basis of all Triple Sec, were originally from the Indies and China. The crusades introduced them to Europe from Palestine via Portugal. The original orange “curacao” was made with fruit from the Island of Curacao. However, the term now embraces a wide variety of liqueurs made from oranges and other produce as well. Amsterdam Curacaos are perhaps the most famous and highly regarded. (The Bols company comes to mind.)Water white and highly rectified, White Curacao Triple Sec is created using only the peel of the orange, soaking it in water followed by distillation and rectification. The Baitz White Curacao is a finely balanced citrus liqueur with a spicy background. The aroma is of bitter orange, while the flavour is full and juicy but drier than its orange counterpart. Baitz White Curacao has an alcohol content of 26%.

    Labels often refer to noteworthy historical figures to reflect one or another aspect of their product. In this case, St.Agnes was a young girl of great riches and beauty who denying all her suitors, suffered martyrdom for the Christian faith. She was put to death by sword in 303 a.d. and is the patron saint of purity. But how does all this relate to a bottle of brandy? It's the Saint's ‘pure, clean perfection’, that the makers, Angoves, strive to emulate in this product. First distilled in South Australia in 1925 and in continuous production since, it’s longevity in the market place is testimony to the brandy's quality and value.

    Other reviews... This is a richly coloured, medium bodied brandy. The nose shows a range of spirit fractions from the higher aromatic to the lower heart fractions. The palate is spirity with good depth and complexity. Maturation in traditional oak barrels has imparted soft, slightly sweet oak after-flavours that complement the full flavoured palate. Most notably, this brandy is delicately clean and dry, whilst retaining a complexity that ensures it can be enjoyed neat or over ice. 37% Alc/Vol

    The 12 year old blended malt sourced from two of Nikka's distilleries, Yoichi and Miyagikyo, named after the company's founder, Masataka Taketsuru. An NAS (no age statement) Taketsuru bottling has recently been released (2016) in Australia at an increased price.

    Other reviews... “At last!” they cry. Anchor Distilling is bringing in whiskies from Nikka. I taunted you with the first of the initial brace in 2010, the exemplary Yoichi 15 year old (a hefty 95 points). The second is the firm’s vatted malt, Taketsuru 12 year old. A mix of Yoichi and Miyagikyo distillates, it is the latter which is to the fore here: a honey-laden mix of cut flowers, persimmon, vanilla, and apple. More are on their way. 81 points

    The unabashedly briny opening bouquet is all peat, sea salt and salted focaccia; time in the glass serves to bring out a refined Sherry scent.     Apart from familiar names like Suntory or Nikka, there are less known distilleries now hitting our shores, and just as worthy of consideration. Perhaps the least known of Japan’s whisky producers is White Oak, but it has a legitimate claim to be the country’s oldest with a license to make whisky granted in 1919 — four years before Yamazaki was built. It's located in the city of Akashi in Hyogo Prefecture, west of Kobe, facing the Seto Inland Sea. The distillery was founded by Eigashima Shuzo in 1888 to produce sake. Eigashima Shuzo obtained a license to manufacture whisky in 1919, but it was when the company moved to their current facilities in 1984 that White Oak Distillery was born.

    White Oak’s whisky stills are only in operation for one month every year and so their production is very small. It's unclear whether this is a mixture of single malts only or whether grain whisky is also included in Tokinoka, (an intriguing word that translates as "fragrance of time" in Japanese).     The first documented modern Martini recipe actually specified Plymouth Gin. It appeared in 1896 in 'Stuart's Fancy Drinks & How to Mix them.'     Plymouth Gin owes its distinctive taste to a blend of ingredients that avoid the use of too much juniper or bitter botanicals, thus giving it a remarkably smooth, integrated palate.     Few people will be aware that as well as being home to the famous rum based medicinal bitters, Angostura, Venezuela makes a number of well-respected barrel-aged golden and dark rums. Local producers say the combination of tropical humidity and cool winds that bathe Venezuela's sugar-cane fields helps to age the rum faster than in other countries. As José Mandry, president of the Venezuelan Alcohols Chamber that groups most of the country's rum makers says, 'Venezuela is a blessed land situated at the north of South America where the winds don't tear us up but gently rock us, and gently rock our rums.' The change in temperature from day to night stimulates interaction between the alcohol distilled from cane juice and the barrels, enhancing the taste.

    Produced at the Licorero del Centro distillery in Caracas, Pampero Blanco is crafted using three stills (Column, Kettle Batch and Copper Pot) giving the Rum Master a mixture of light, heavy and semi-heavy spirits to work with. Blended and aged for around two years in x-Scotch whisky casks then charcoal filtered to remove the colour before bottling, the result is a rum where the flavours are delicate yet confident enough to mix with others, be it in a rum & coke or as a “supporting actor” in a cocktail, such as the classic Mojito.

    Other reviews... The nose is complex and rich with touches of citrus fruits, honey, and muted spices. The spices come alive on the palate with intense notes of cinnamon and allspice complemented nicely by apple cobbler, vanilla, and honey. The finish is long and well-balanced as the cinnamon spiciness fades away gently while lingering apple and honey notes tickle the back of the throat. Excellent!

Today they produce a range in excess of ten flavourings, along with the occasional special batch release - their 'Dried Fruit Bitters' special release was commissioned to partake in the "World's most expensive cocktail" served in Dubai.

    Today the company enjoy worldwide distribution for what was once a hobby craft, and are considered among the best for true flavourings as evidenced by the accolades attributed to them.

    Missing from the market for many years, Crème de Violette is finally making a resurgence allowing for faithful recreations of classic cocktails such as the 'Aviation' and 'Blue Moon'. The Bitter Truth Crème de Violette is made using wild violet blossoms grown in the Alps, macerated in the finest grain alcohol. While the colour is a deep, intense purple, the liqueur is quite elegant showing delicate and fresh violet aromas.

    Other reviews... The dense color is hypnotic: an impressively deep, dark, inky violet blue. Luckily, the flavor is less intense. Instead, it’s sweet and light bodied, with a distinctive violet flavor that pulls back before it becomes too perfumy or overpowering, with a delicate, clean finish.     Usually available at Duty Free stores only, Old Parr is named after Tom Parr (pictured on the label), once reputed to be the oldest man in England. Launched in 1909, the brand later found success in export markets such as Japan, Mexico and South America where it was easily identified in its distinctive dimpled and rounded square bottle. The basis of the blend today is Cragganmore, however Glendullan has also been a major component since World War II.

    Tasting note: Deep gold / bright copper penny colour. An attractive mix of cocoa, vanilla and breakfast fruit toast with exposure drawing out a fruit'n'nut chocolate aspect. Concentrated for the genre, with a spicy backbone that includes muesli, dried grass and light stewed fruit flavours, ending honeyed yet fresh, grainy, peppery and with excellent length. Quite richly styled. Gets better each time you taste it.40% Alc./Vol.

    In our experience of tasting wines and spirits from all corners of the world, there are some common lessons to be learnt. Firstly, big name brands do not necessarily translate into better quality. Many of our most exciting discoveries have come from producers that take an understated approach to marketing, letting the quality of the product sell itself. Which is why we search far and wide to find the best examples rather than waiting for the latest 'hot' reviews or distributor catalogues. We attempt to taste anything and everything where possible, regardless of price or pedigree - which is why when we discover a hidden 'gem' we're all the more excited.

    Secondly, we've observed that the best outcomes are achieved when experienced people are growing grapes in the best terroir. Similarly, when it comes to fine spirit production, maturation in high quality oak is paramount. Pioneering research into the processes of spirit maturation has been taking place in Scotland for some time. Following a recent meeting with Glenmorangie & Ardbeg's Head of Distilling and Whisky Creation, Dr Bill Lumsden, we learned that Glenmorangie use only first and second fill barrels. After the second fill, the barrels are sold off to other distilleries, intent on cutting costs, or broken down to be used as planters. Lumsden attributes the 'bright and fresh' characteristics in his whiskies - regardless of age, to this staunch but costly practice.

    Another famous whisky example; Glenlivet 12 Year Old, in which a less obsessive approach to oak selection yields a spirit that seems 'muted' or even dull, by comparison the Glenlivet Nadurra 16 Year Old which is matured in first-fill casks and despite being four years older than the twelve is remarkably bright, fresh and lively.

    By now you must be wondering how all of this relates to Cognac. The Cognac of Francois Voyer is produced on the Voyer family's estate, planted to just 28 hectares, located inbetween Verrières and Ambleville, in Cognac's best appellation, Grande Champagne. Not surprisingly, given the quality of the company's fifteen year old expression, maturation has taken place in top quality, new Limousin French oak casks. It presents a lifted nose, revealing dried flowers, ripe peach above mixed peel and marmalade, hints of cigar box and spice and follows with full bodied flavours of fresh ripe stone fruits over a strong spicy background with hints of creamy vanilla and toasted almond emerging. Luscious and ripe, yet retains a degree of focus thanks to a sense of fine dry tannin and fresh acidity, not dissimilar to that experienced in a well balanced wine - again, a direct relationship with the land on which the grapes are grown. The aftertaste is very soft, smooth and creamy, showing flavours of ripe peach and toasted almond. Wonderful cognac. "Napoleon" is comparable to XO , meaning the youngest eau-de-vie in the blend needs to have aged for at least 10 years in oak barrels. The origin of this unofficial age designation goes back to the French Emperor Napoleon and the Cognac House Courvoisier. 40.0% Alc./Vol.

    Absinthe (or Absinth) is an alcoholic drink made with the pounded leaves and flowering tops of one species of wormwood plant (Artemisia absinthium) together with other herbs such as angelica root, fennel, nettles, parsley, balm, sweet flag root and hyssop. Emerald green in colour and usually very bitter, Abisinthe is traditionally poured over a perforated spoonful of sugar into a glass of water – or vice versa. The drink then turns into an opaque white as the essential oils precipitate out of the alcoholic solution.

    Tasting note: Pale turquoise colour with a water like hue. A flat, straightforward nose reveals mild aromas of spearmint confectionary and issues a tingling sensation within the nostrils. A trace of eucalypt is evident. Very concentrated, hot and prickly mouth feel covers the tongue with flavours of semi-sweet spearmint confectionary. Simple and one dimensional, the palate drys the mouth quickly leaving a green peppercorn like flavour. Short, spicy, drying, mint aftertaste with the tingling sensation persisting longer than the flavours. A very basic Absinthe. 40% Alc./Vol.

    Other reviews... Neon blue/green color; excellent purity. Opening inhalations encounter industrial alcohol aromas with bits and pieces of cardboard-like flavorings and nothing really botanical, meaning woodsy, root-like, or herbal; the second whiffs following additional time in the glass does turn up a few hints of things like mint and leaves, but not enough to be viable in a crowded field. Entry is gooey, syrupy, meagerly botantical, and a waste of my time; midpalate is industrial, absinthe-by-the-numbers, and poor. This producer doesn’t have the vaguest clue of what absinthe is or how it should smell, feel, and taste. Clueless.

A quality brandy like sniff with an intense bouquet of dried apricot and fig followed by a delightful array of sweet spices (cinnamon, nutmeg, vanilla) Exposure teases out dried grass and hints of mixed grain and woodshed. A terrific nose. Amazing balance is evident from the creamy entry, following through with delicious gently bittersweet cocoa, date and honeyed cereal flavours. Lozenge and vanilla reverberate with surprising length. What a whisky! A hedonistic effort from Larks that will take you by surprise. 58% Alc/Vol. 96 points

    One of the superstars of Barsac, the wines are typically noted for their elegance and style rather than weight and richness. At 38.5 hectares in size, Coutet is one of the largest vineyards in the region, with plantings consisting of 75% Semillon, 23% Sauvignon Blanc and 2% Muscadelle. Fermentation takes place in barrel of which 50% are new with further ageing in oak for 18 months.

    The 2015 Coutet is pale lemon colored with intense grapefruit, lemon pie and pineapple notes with touches of crushed rocks, honeycomb and lime zest plus a waft of orange blossoms. Rich, opulent and layered with loads of tropical and citrus notes, it has wonderful freshness, finishing long. Drink 2018-2048.

    The 2015 Coutet is a little reduced on the nose and lacks the flair of some of its peers. Pinched at the moment - maybe going through a sulky phase? The palate is well balanced and very harmonious, viscous in texture with perfectly matched acidity and fine delineation and precision toward the finish. Once the bouquet awakens this should be a seriously fine Barsac/Sauternes. Tasted blind at the Southwold 2015 Bordeaux tasting. Drink 2022-2050.

    A heavenly dessert wine, the 2015 Château Coutet boasts a huge nose of caramelized citrus, crème brûlée, tangerine, and honeysuckle. With huge richness and sweetness, moderate acidity, a thick, fat mouthfeel and a blockbuster finish, it’s borderline over the top yet holds it together. It will be interesting to see how this evolves, but it’s undeniably gorgeous today. Drink 2018-2038.

    A brand produced by the Bladnoch Distillery in the lowlands, launched to celebrate their 200th anniversary. Bright gold. Moderate scents of vanilla, clove and light fruit cake. Second pass suggests stewed fruits. Light'n'easy in the mouth with pleasant mocha and muesli-like flavours rounded out by a soft flurry of spice. Ends drying, brisk and woody with subtle grains in the aftertaste. 40% Alc./Vol.

    Other reviews... The main dresser should be Bladnoch but there is also some Islay and some Speyside, as well as some grain whisky. Let's hope this baby is Bladnoch-driven, and not just some kind of anonymous blandola (going a bit too far once more, S.) Colour: gold. Nose: it's malty, it's cakey, it is pleasantly waxy (beeswax), it's got a little wood smoke, some earl grey tea, lillies, honeysuckle, touches of earth… Well, imagine all blends would be like this! Couldn't the industry pull this off? Mouth: huge success despite the low strength. Same flavours as on the nose, plus more citrus, perhaps from Bladnoch's malt. This is a perfect blend – you don't even feel the grain whiskies. We're not far from Johnnie Walker's Blue Label, to tell you the truth. Exactly. Finish: perfect fresh and honeyed finish, with this lovely citrusy signature in the end. Comments: surprised and impressed, I am, which wasn't the case when I tried an earlier version leisurely.     A family business for over two centuries, Gosling's was founded in 1806 by James Gosling and is Bermuda's oldest business house and largest exporter of locally made product. Originally called 'Old Rum', the company's flagship 'Black Seal Rum' was not sold by the bottle until after World War One, when it was packaged in Champagne bottles (the most widely available bottle at the time) and sealed with black wax, hence the name which has stuck. Over the years, Black Seal Rum has become synonymous with the Bermuda region - it is an essential ingredient in the local fish chowder, adds the island flavour to the 'Bermuda Rum Swizzle', as well as being the tempest in Bermuda's favorite cocktail, the 'Dark 'n Stormy'.

    Goslings currently produce rums at three different proofs. Despite the 75.5% of Gosling's Black Seal 151, this is remarkably smooth.

    Other reviews... Don't be afraid of the 151 on the label. This is actually a delicious sipper, with the same chocolate and port wine flavors as its 80 proof sibling. It also works wonders in Zombies and Jet Pilots. - rumratings.com

    Like the 'Cuartillo' in Glengoyne's new Travel Retail exclusive series, Balbaína is also named in tribute to a Jerez neighborhood where the barrels were sourced. Matured in first-fill European oak oloroso casks, expect notes of "caramel, dried apple, and cloves". Big one litre format.

    Tasting note: Bright copper. Light, but more aromatic depth than the ‘Cuartillo’, accenting dried fruits (prunes, apricots) as well as bitter dark chocolate, orange spice cake and hints of cinnamon. A medium bodied whisky with a burst of sherry in the middle stage, trailed by warming cinnamon, cocoa and fruit spice cake. Lacks momentum but compensates with sheer purity and poise. Eminently drinkable. 43% Alc./Vol.

    Other reviews... a funny name, a finish in sherry, and a travel retail exclusive. What could (cough, cough) go wrong? No we won’t try to check what Balbaina means, perhaps someone’s first girlfriend? Colour: gold. Nose: well, nothing really wrong here, it’s a classic malty dram, with touches of burnt raisins and cakes, some vanilla, hints of roasted nuts and a spoonful of good marmalade. Nice citrus (pink grapefruit, perhaps?) Mouth: I find it really good, and again, extremely classic, with raisins, dried figs, bananas and pears, a bit of toasted oak, the obligatory walnuts, a mild spiciness that would rather involve cinnamon and cloves this time, and more toasted cake. Pancakes and maple syrup. Finish: quite long, rather toffee-ish and caramely. They seem to have pushed the oak a bit. Comments: all good, I think, one that won’t disappoint air travellers.
