    Bunnahabhain's unpeated style has gained a reputation as the most gentle single malt produced on an island famed for its massively flavoured whiskies. Water is piped in from from Margadale Springs and the whisky is distilled twice in the distillery's unusual pear-shaped pot stills. We were treated to tiny sample of the 18 year old which offered up hints of furniture wax, light molasses, raisin cake and spice on the nose, with the palate following in a delicious fruit and wood burst. Apple and vanilla round out in a beautifully balanced sweet / dry delivery which also shows some light coastal character. This whisky is more expressive in the mouth. Solely matured in ex-sherry casks stored within the distillery’s sea-facing warehouses. 46.3% Alc./Vol. Non chill filtered.

Oloroso bulging with toasted, slightly singed currants, a sliver of kumquat and topped by thick vanilla.     ...Last time I tried the 18 – excuse me, the XVIII – that was still a 43%-version. But they’ve upped their game… Colour: pale gold. Nose: ooh, shoe polish! Something that I always enjoy a lot, reminds of both the best Alsatian rieslings and my time as a corporal in the French army (when we still had conscription). So shoe polish, then menthol, then nuts roasted with mint and honey, then a kind of lemony sea breeze. Yes, oysters and lemon, and finally, cigar boxes and sandalwood. Even balsa wood, remember when we were building those wee planes? Mouth: very, very good, they’ve upped their game indeed. Chestnut purée again, carrot cake, walnut wine, tobacco, and guess what, the same pistachios as in the Claxton’s. Some sides remind me of the early official 12s, those were superb. Finish: medium, and just perfect. Chestnut cake with drizzles of lemon juice and pinches of sea salt. Love the maltier and oloroso-ier (hey!?) aftertaste. Comments: I wouldn’t say it’s a surprise, since back in 2009, I had thought the 18 at 43% vol. was worth 88 points.     ...Creamier than the 12-bigger too, with broader shoulders and greater depth. Fairly sweet up front, with vanilla-laced malt, chewy toffee, and ripe fruit. Almond fudge and a hint of espresso add intrigue, while dry wood spice on the finish underpins the whisky's characteristic sweetness.     Another chance to snap up the World's Best Whisky for 2016 in a one litre format.

    The Gimli Distillery situated on the shores of Lake Winnipeg in central Canada is one of the world’s most remote distilleries, as well as being home to the Crown Royal brand. Although Canadian whisky is commonly known as rye, this new CR edition is one of only a handful which is actually made from near 100% rye grain. Most others are distilled from corn or wheat with rye and other flavourings added. Jim Murray gave the Northern Harvest Rye a record-qualifying 97.5 out of 100 points in his 2016 Whisky Bible commenting: “Rye, that most eloquent of grains, not just turning up to charm and enthral but to also take us through a routine which reaches new heights of beauty and complexity. To say this is a masterpiece is barely doing it justice.”

    While the whisky was never scheduled for release here, we've managed to secure a small quantity in 1 litre format for Australian whisky lovers. Find out what all the fuss was about!

    Tasting note: Brilliant amber gold. Fabulous purity with whiffs of apple/peach tart and fresh-picked mint over vanilla wafer biscuit, pencil shavings, hints of gum and green banana. Crisp and spicy in the mouth. The rye is assertive, oily, dense. An almost brittle mouthfeel. Finish offers buttered ryvita biscuit, vanilla custard, cocoa, pepper and sustained mint freshness. Long, concentrated and beautifully harmonised. 45% Alc./Vol.

    Other reviews... A blend of 95% rye-grain flavoring whisky with a variety of base whiskies. Its big whisky cocktails will tempt mixers into sipping. Very fruity and floral, with prunes, peaches, red apple skins, and bouquets of spring flowers all boosted by vibrant peppery spices on a slightly oaky base. Crown Royal’s signature balsam resin note and hints of vanilla round it out. The long, spicy finish ends with hints of citrus pith. A complex, tightly woven blend. 91 points

    A combination of rums from Barbados, Trinidad, and Jamaica - hence the name '3 stars'. Some of the rums are unaged, others aged 3 and 12 years, blended and filtered back to clear before being bottled by the French Cognac house, Pierre Ferrand. Light to moderate aromatics yield notes of unripe banana, green olive and peppercorn, becoming more subdued and waxy with aeration. Starts off light and easy in the mouth but crescendos enough by mid palate to gain a point in concentration. Almost a fine grappa-like profile with subtle fruity / unripe banana flavours leading into a mildly creamy, waxy, grassy finish. Concludes pleasantly spicy, crisp and precise. Not the driest on the market but one of the best. 41.2% Alc./Vol.

    Alexandre Gabriel, proprietor of Cognac Ferrand, comments, “…Our desire was to develop a rum that shows character, elegance, complexity and a great finish – the ideal rum for cocktails … beginning with a 3-year aged Trinidad rum, carbon filtered to maintain its white colour and to remove the heavier tannins while preserving the aromatics developed and refined by aging. Un-aged rums from Barbados and Jamaica are blended, along with a 12 year old rum from Jamaica. The Jamaican rum is an expensive ingredient but key to the taste of the overall blend. Trinidad brings elegance and refinement, Barbados brings character and aromatics with fruit notes without being too heavy and Jamaican brings the funk, the touch that makes it a complete product.”

    ...This rum is extremely sugar-forward, a monstrously sweet rum that leaves delicacy behind. We have sourced a small quantity of these relatively unknown expressions just to showcase what this distillery capable of. 

    Other Reviews... Fruitier, sweeter, and more straightforward than the new 16 year old. Ripe tangerine, orchard fruit, and caramel apples, all on a bed of nutty toffee. Underlying notes of cinnamon, nutmeg, and ginger, with a dusting of dark chocolate. After the sweetness fades away, there’s lingering spice and oak resin on the finish. A good alternative to Macallan 12 year old or Glenfarclas 12 year old.

    Back in 2015, Nikka announced they were discontinuing their age statement and No Age Statement (NAS) releases for the Yoichi and Miyagikyo labels and consolidating them into two new bottlings. These whiskies have now arrived in Australia. Two NAS versions that differ slightly to the previous versions now represent the entire portfolio. It was yet another move that triggered a buying rush. Reports have it that Tokyo is now pretty much out of age statement Japanese whiskies, unless you visit bars or auction houses.

    Nikka's reasons for the radical new strategy are now familiar. They simply have no old stocks to sell.
    Decades ago, both local and world demand for Japanese malts was low, so few barrels were being laid down for extended periods.

    Stefan Van Eycken, writing for www.nonjatta.com explains "...there were years, at both Yoichi and Miyagikyo distillery, when the barrels laid down for maturation could be counted on the fingers of one hand. The ‘stock shortage’ is not an excuse or a PR stunt – it’s very real. Sources within Nikka have said that it is ‘likely’ that age-statement single malts will be brought back in 5 or 6 years’ time. No official statement to that effect has been made for the simple reason that doing so – in Japan – would be interpreted as a promise (which could come back to haunt them in 6 years’ time)."

    The dropping of age statements doesn't always translate into a drop in quality. Early reviews for both new releases have been very positive. Evidently, Chief blender Tadashi Sakuma has risen to the challenge of creating a great assemblage from a restricted inventory.

    Other reviews... Yoichi age statements are gone for now, but if the whisky stays this good, I can live with that. Black earthy peat, smoldering fires, a turned-out pocket of briny seashells, whole lime, lemon twist, sugared orange, ground ginger, and licorice. Silky smooth, with light, fruity sweetness developing into tangy Spangles, kiwi, and lime juice. The smoky peat is the weft woven through the fruit structure’s warp. The finish is insanely long: menthol, peat, and leather.

    Gamboge/flax/chardonnay color; unblemished clarity. In the first nosing passes I pick up all sorts of malty scents, from nougat to candied almond to malted milk balls to milk chocolate to maple; secondary whiffs after more aeration discover salted butter, lightly smoked, toasty aromas that are basically dry, but also nicely rounded and supple. Entry is savory, bittersweet, grainy, toasted bread-like, nutty; midpalate features a medium full texture that caresses the palate while the dry-leaning flavor profile highlights the malty grain and wood resins, especially the tannic acid which dries out the flavor so that by the finish it’s squeaky clean and tight. A really tasty, well-made malt.

    Since Cooley Distillery resurrected the traditional Irish custom of peating, their Connemara label has gone from strength to strength. This 12 year old is a perfect introduction to the style. Muted and mildly fruity aromas yield attractive grape / cantaloupe / pear notes followed by hints of dried grass, grains and vanilla. The flavours seem to float over the tongue, such is the initial sensation of lightness. Fresh and delicate, a subtle fruitiness repeats, building moderate concentration with a kippery note towards the finish. The peat never really asserts itself and the aftertaste is somewhat fleeting (we're told the smokiness can vary from batch to batch). Regardless, this seduces with its soft touch. American oak matured. 40% Alc./Vol.

    ...Connemara’s wild west coast landscape is a world away from this peated whiskey’s production at Cooley Distillery on Ireland’s east coast.     Tasting note: Brilliant amber / polished copper colour. Nutty and fruity overtones with hints of unripe cantaloupe amid the wood. Everything seems to be in similar measure; Difficult to pin down. Firm and peppery with almost crunchy, grainy malt ; drying oak to finish plus understated, sooty peat and a touch of vapo-rub. Moderate length. Skillfully balanced and more complex than first impressions suggest. 46% Alc./Vol.

    Other reviews... Armorik has been making whisky for more than twelve years; it's growing in confidence, and the quality is improving. There's peat in the malt here, and it gives the whisky a feisty and earthy quality. The spirit is matured first in Armorik oak barrels and then transferred to sherry. Sherry and peat is a tough trick to pull off and this just about gets away with it, with coastal brine and lemon rubbing up against wood smoke, barley, and honey. 81 points

    A blend of rums from the original Wooden Enmore Coffey still, the original metal Diamond Coffey still, as well as from the Port Mourant Double Wooden Pot Still. Bright burnished copper colour. Opens with rich aromas of roasted nuts, vanilla bean, cafe creme and raw sugar. A creamy entry is followed by a plush, intense, sticky date, creme caramel extravaganza with lively spices adding depth and vibrancy. Creamy vanilla, liquorice bullet finale. Concludes satisfying, warming, long. Luxe mixing rum at a budget price. 40% Alc./Vol.

    Other reviews... Having written all the above, what would I recommend? Truth to tell, I’d use this as a high end mixer for sure, and if looking for a premium sipper, just go up to the 15, or blow a hundred for the 21.  But as a general all rounder for a lower price, this one is hard to beat – it deserves a place on your shelf for all those visitors to your rooms or houses or apartments who want to try something a bit richer than Bacardi, Appleton V/X, Lamb’s or Mount Gay (those standard staples of the young), but don’t want to bust the bank doing it. - thelonecaner.com

    Glenrothes’ owners The Edrington Group are instigating some significant changes at the distillery. An upgrade is scheduled in the coming years and the marketing emphasis has already taken a dramatic shift towards 'ultra premium' bottlings. The ten and twelve-year-olds as well as the Whisky Maker's Cut are all discontinued, at least in Australia, with the range now starting at 18 years. However alternative reports suggest they’ve stopped making them altogether, which is supported by the fact that these products are now archived on the Glenrothes website and listed as sold out at major UK retailers. Whatever the case, knowing the strong following for this distillery, we’ve bought up big and negotiated Australia’s best deals. Opportunity knocks! 

    In and out of the country over the last few years and at variable pricing, the Whisky Maker's Cut was originally exclusive to an Australian Whisky Club where it sold for $125; elsewhere it's been selling for up to AU$140. We've secured an even better price again with a scoop buy on the last domestic stocks. Matured in first-fill sherry casks, bottled at the Master Distiller's preferred strength and rated 95 points by Jim Murray, this will attract drinkers more than collectors. The aroma wavers to and fro from sweeter notes of fresh prunes, dried apricots and candied orange peel to drier scents of leather handbag, cocoa and light prickles of alcohol. Early oak and baking spice flavours develop before dates and wisps of vanilla. Extra kick from the higher strength adds depth, especially with the spike of intensity at the finish. The final stages turn leaner and spicier, but the balance is good. In short, plenty for Sherry heads to enjoy - and at a very reasonable price. As the undisputed bargain of the Soleo collection, expect it to go fast. 48.8% Alc./Vol.

    ...The nose offers rich fruit—plums and sultanas—with milk chocolate and new leather. The palate is silky and luxurious, with medium-sweet sherry, vanilla, blackcurrants, and treacle.     No age statement, but a considerably higher abv here. That higher alcohol level really makes the sherry pop on the nose, although I also get a bit of a smoky kick here that I didn’t find in any of the other whiskies. On the palate, that smoky element lingers, giving the body a peppery, beefy note that is slightly at odds with the citrus-driven sherry notes.     Tobermory closed in 2017 for two years for an equipment upgrade. When work was finally finished, the distillery released this new flagship 12-year-old. Replacing the legendary 10, the new Tober' was welcomed by the whisky community as a big step up from 'old school' Tober', that could sometimes be a bit 'dirty' and polarising. This is not a sherry bomb and certainly nothing as extreme or smokey as its alter-ego, 'Ledaig'. Created to be more cohesive and self-confident while remaining at the same price as its younger predecessor, it offers the perfect introduction to the island's style: Smooth and rounded, sweet, but also dry, with orange and citrus notes on the nose and rich oak followed by sweet orange and creamy caramel flavours over hints of spice. Some reports have it that this retains a subtly briney / salty edge, too. Welcome back Tobermory! Matured in first fill American oak and x Bourbon casks. 46.3% Alc./vol. Non-chill filtered.

    Other reviews... Nose: Quite earthy with a hint of sweet malt and vanilla custard, but also some orange zest. Just a tinge of copper coins and plenty of minerality. Finally a whiff of honey and subtle stone fruits. Taste: Nice barley notes accompanied by pretty vibrant citrus flavours, quickly followed by a hit of oak shavings and spices — this is were the virgin oak makes its presence known. The whisky becomes slightly herbal and vegetal after. Finish: Herbal, spicy and drying. Medium in length. Rather rich and pretty well put together, this Tobermory is a wonderful introduction to the distillery. Less dirty than I’ve known Tobermory to be in the past, but that’s probably a good thing for me. - wordsofwhisky.com

    Legacy was introduced in 2014 as a replacement for Ardmore Traditional. The combination of 80% peated and 20% unpeated malt promises a medium bodied Speysider with smoky, spicy edge.

    Tasting note: Gold / pale straw hue. Pedestrian aromas include tea biscuits, light vanilla and haystack. A featherweight entry leads into a medium bodied, grassy, grainy mid palate. Finish is woody, thin, grippy and medium long followed by a moderate aftertaste. The peat is barely discernible. No-thrills entry level malt. Best with a little water. 40% Alc./Vol.

    Founded in 1898, Ardmore have an unshakable belief in traditional distilling methods and insist that their Traditional Cask bottling uses the aromatic smoke from natural, Highland peat fires to dry their malted barley. The high cost of this procedure has meant that Ardmore is now the only Highland distillery that still routinely fully ‘peats’ its standard malt. Traditional methods also extend to the maturation. Casks for Ardmore's standard bottling for example, are double matured, first in the more usual oak barrels and then in much smaller ‘quarter casks’, delivering a unique integration of flavours. In common use in the 19th century, quarter casks have also become too costly for most distillers to employ today (The system has been used to spectacular success at Laphroaig).

    Pierre Peters is a benchmark grower Champagne based in Le Mesnil-sur-Oger, founded in 1929 by Camille Peters and today run by Rodolphe Peters, farming around 20 hectares of predominantly Chardonnay across Le Mesnil (the core), with additional holdings in Oger, Avize and Cramant, including the famed Les Chetillons parcel acquired in 1930. Viticulture is meticulous, with replanting based on the estate's own massal selections, while vinification is largely in stainless steel (reserve wines held in a mix of steel, large oak and concrete) with partial malolactic fermentation and an emphasis on extended lees ageing to build texture and depth. The range moves from the non-vintage Blanc de Blancs Cuvee de Reserve and vintage L'Esprit through to the single-vineyard Le Mesnil bottlings Les Chetillons and Les Montjolys, and concludes with premium multi-vintage cuvees such as Reserve Oubliee (from a perpetual blend dating back to 1988) and L'Etonnant Monsieur Victor, with the house's hallmark being pure, chalk-driven Cote des Blancs Chardonnay built for serious ageing.

    Once the lacy white mousse dissipates it reveals a pale straw coloured base that has shades of gold to the edges. The bead is fine and profuse. Refined yeast lees, citrus and baked bread aromas are followed by light notions of oyster shell and cashew. Possessing good richness and fine airy feel, there’s a faint creaminess to the oily bread, yeast lees and citrus flavours which are backed by a subtle toastiness and some brioche. Finishes dry and finely textured with stimulating acidity and a long savoury aftertaste.
    Drink over the next 4-5 years.

    Based on the 2019 vintage (which Péters declares "the best of the decade") and disgorged this year, the NV Brut Blanc de Blancs Grand Cru Cuvée de Réserve bursts with aromas of crisp stone fruit, orange zest, freshly baked bread and beeswax.     Made up, half and half, of base wine from the sunny 2018 harvest, and reserve wine from Rodolphe’s Perpetual Reserve which goes back to 1988, this is one of the most consistently excellent NV wines on the market. Its current iteration is especially impressive, floral, chalky, upstanding, and very complex; the palate sharing notes of dried apricot, plum and lemon pith with more developed intimations of sour honey and patisserie.     Small volumes of this sought after American Rye continue to trickle into the country. The super-high rye content combined with up to 18 months finishing in x-Plantation Barbados rum casks makes it all the more exotic. The mashbill will sound familiar to rye completionists - 95% rye and 5% malted barley - the signature blend you’ll find in ryes from Bulleit, Dickel, and just about everyone else in the business who’s sourcing whiskey from Indiana. It's also well known that Angel's Envy have a reputation for trail blazing and innovation. This edition is no exception. Master Distiller, Lincoln Henderson's artful barrelling turns what might have been just another six year old into something quite special. Bottled at 100 proof for extra punch, you'll find it different to almost every other rye on the market.

    ...That spin in rum casks really does a number on what would likely otherwise be a perfectly drinkable yet undistinguished rye. It starts with a nose of intense baking spices — gingerbread, cinnamon, and coconut notes. The body has more where that came from. Sip and you’ll get chewy vanilla caramels, banana, marshmallow, and just the barest hints of spicy rye grains on the back end. It’s very sweet, but not overpowering, a good balance of the more dessert-like flavors you’ll find in both rum and whiskey.     We first tasted Eagle Rare in 2006 when it was labelled 'Single Barrel'. As of 2019, that changed to a multi-barrel blend with a ten year old age statement. It remains a standout value - an American whiskey with the unusual credentials of maintaining a reputation for exceptional quality while being relatively easy to come by. The profile confirms a #1 Mashbill from Buffalo Trace, which is reported to be low rye (10% or less), yielding notes of caramel, new charred oak, liquorice bullets, cocoa and peppermint rock lollies plus cinnamon in support. The complexity grows with time. Re-tasted from a 20ml sample, it's lean on entry, but fills out beautifully into a medium-bodied, chewy whiskey with muted rye spices before vanilla and Bounty Bar flood the finish, the sugars checked by balancing oak and more creamy vanillas. Ever reliable and better than many Bourbons at twice its price, Eagle Rare remains hard to beat. 45% Alc./Vol.

    ...Right from the start, this whiskey shows itself as fresh, balanced, and restrained. Aromas of citrus and apple kick things off, with plenty of rye-driven baking spice filling in the cracks. There’s plenty of vanilla and caramel in the mix, too — all hallmarks of well-aged (but not overly old) bourbon. The palate is lightly sweet and soothing — almost soft, despite its 45% abv — with butterscotch and caramel apple notes dominant. A very light oak influence pervades, though again this feels restrained and well-integrated with the rest of the experience. The finish folds in a note of chocolate banana cream, and concludes on a rolling, lingering, and lightly fruity note with plenty of baking spice in the mix.     Lagavulin have released several odd age statements of late, including a nine and an eleven year old. This one debuted in mid 2019 and was exclusive to travel retail operator 'Dufry'. Matured in x-Bourbon and freshly-charred casks, the former add sweetness while the rejuvenated (STR) casks add spicy, woody notes.

    Tasting note: Like Caol Ila, youth is a good thing when it comes to Lagavulin. The style here is closer to the cask strength 12 year old than the standard 16, showing a similar 'mineral' dryness. Powerful aromas of seashore, kelp, a little iodine, baked citrus, oatmeal, light vanilla sweetness, cured meats and white pepper follow through with the kind of complexity and length you associate with this distillery: Fresh, peppery and unmistakably maritime, finishing with a dash of creamy vanilla before the aftertaste turns austere and minerally with lingering smoke. Classic, and with decent intensity at 43%. If you follow Islay, don't miss it.

    Notes from distillery... Backed by an elusive softly fruity tang of bruised pears or mature white wine the top notes are naturally powerfully peaty and fresh-clean, with peat smoke, wood tar and antiseptic cream. Maritime hints that seem to emerge from within them suggest a walk on the beach in a fresh, salty sea breeze, with wafts of sweet seaweed and hemp rope. A drop of water suppresses the fruity notes and introduces the clean, fresh aromas of a mineral oil or a salt water rock pool. Spicy, smoky, warming and drying, with a deep intensity. There’s a pleasingly smoky aftertaste with a warming spiciness, which is calmed by the addition of water.

    A rich though youthful golden hue, the NV Champagne Special Cuvée Brut is classic and ripe with lush, rounded, and complex aromas of golden apricot, hazelnut, wet stone, and black cherry. Made with 45% of the wine coming from the 2019 vintage, with 55% reserve wine, it’s full-bodied yet elegant and light on its feet, with a ripe and luxurious feel and just a hint of warmth on the finish. The mousse is refined and rounded. Long on the palate, it's inviting now but will have plenty of life ahead of it if stored property. This exceptional cuvée with its distinctive personality continues to be one of the best entry wines to the range from this house and is a benchmark wine for them.

    This expression of Ardbeg celebrates a period in Scottish history which saw Islay as the stronghold of Somerled, the Lord of the Isles. At 25 years old, this malt embodies the richness, depth and sweetness of all the Ardbegs, however, it also contrasts in style. Delicacy and sweetness abound, while the smoky, heavy peat Ardbeg lovers are accustomed to remains understated. Add to that some uncharacteristic brine character and pleasing nutiness thanks to the sherry influence. Bottled at 46% and non chill filtered, allowing the `natural` flavours and aromas of Ardbeg to develop, this now uber-rare malt is interestingly packaged in a moss green, coffin-like presentation box.

    I must confess I only ever tried the earlier batches of the Lord of The Isles - I think it all started around the year 2000. Colour: pale gold. Nose: it's an easier whisky than the 1966, with more fruits and herbs and less sooty/tarry notes. Typical good Ardbeg from the years when the output wasn't hugely peated, not too far from the well-known official 1978s, only with more kick. Quite some burning grass, apples and fresh walnuts... Then hints of clay and maybe touches of curry. No monster despite the coffin it was delivered in. Mouth: starts relatively easy, almost smooth, but the peat blast is soon to happen. It's not very complex, but it's very complete (right, try again S.) with a sooty peatiness, fresh almonds, some lemon, green apples, touches of salt and a little pine resin. Gets rather more briny and kippery after that. Finish: it's long, saltier and more lemony. Almond and pine resin the the aftertaste. Comments: it's not a hugely complex old Ardbeg but other than that everything's totally perfect here.

    Produced at the Depaz Rhum Chateau & Estate on the French West Indies Isle of Martinique this is an exclusively agricole product, the signature ingredient of which is estate-produced blue cane. Considered the costliest and most difficult cane to grow, Depaz Estate claim their blue cane "...delivers the ideal balance of sugars for maximum flavour and character delivering a superb floral nose and a smooth, flavorful and refined character to the rhum. Even within Martinique, very few locations are suited to produce blue cane at the quality level and quantity necessary for developing a luxury rhum".

    Tasting note: Matured for 12 years. Brilliant amber / gold hue. Powerful scents of golden syrup are complexed by secondary notes of nutmeg, cinnamon, palm oil and leather. A bracing spirit carries flavours of cocoa-dusted banana cake with fruit sorbet and marzipan / honey entering late before the grassy characteristics return into the lengthy, drying fade. 50% Alc./Vol.

Previously labelled as Brut Reserve, the team at Billecart, have made a number of quality improvements to the core elements of this Cuvee and have rebranded it ‘Le Reserve’. The key changes being as follows:-
    - Extended aging on lees, increased from an average of 30 months to 50 months.
    - Reduced dosage (extra brut, 3g/l) for greater purity and expression of terroir.
    - More depth with 15 different vintages in the bottle
    - Larger proportion of wines vinified in barrels, adding richness and density.

    A rich, mouthfilling yet tense and stimulating Champagne that delivers remarkable complexity for the price.

    A blend of 43% Meunier, 29% Chardonnay and 28% Pinot Noir with over 50% reserve wines included in the blend. A buoyant, satiny mousse floats over a pale straw to straw coloured base that has pale gold tinged edges. Fine, nimble bead with alluring aromas of baked bread, yeast lees, oily toast, citrus and brioche wafting through the nostrils. Rich and mouth filling yet simultaneously tense and stimulating, the palate is laden with baked bread, yeast lees and citrus flavours which sit over an oily toast and almond back drop. Crisp acidity finishing very dry, long and remarkably complex for a house non vintage cuvee. A definite step up on its previous incarnation.

    Cedar Fox is a new start up micro distillery located in the Northern Suburbs of Melbourne.     One of the most impressive (and affordable) Japanese whiskies to have ever hit the Australian market. "I have been drinking this for a very long time - and still can't remember a bottle that's ever let me down." - Jim Murray.

    Today, most of the malt whisky produced in Japan is for blending but Japanese distillers generally don't trade casks in the manner that Scottish distillers do. Consequently, it's up to each distillery to produce a diversity of styles that will form the base components of 'house blends' that offer unique and complex flavour profiles.

    Nikka Straight from the barrel is no exception. Composed of blended single malts from both the Miyagikyo and Yoichi distilleries along with an element of grain whisky that's all matured in first-fill bourbon casks. Good reviews are not hard to come by, with web based whisky enthusiasts describing this as an excellent value Japanese blend and all round great introduction to the Nikka style. Jim Murray's also a fan, stating "I have been drinking this for a very long time - and still can't remember a bottle that's ever let me down."

    Tasting note: [Batch 24J12B] Deep gold / bright copper appearance. The aroma is pristinely clean and reminiscent of some class sherry bottlings, there's suggestions of biscuity malt, vanilla and juicy dried fruits. At the same time it frustrates - even after extended time in the glass it’s shy to reveal better definition. In the mouth, soft, gentle spices unfold a blanket of sweet, nutty, chewy malt and dried fruit flavours. A hint of smoke in here too? Clean, slightly tingly mouth feel as the spices increase, but overall this shows good balance at +50%. Finishes as it began - with the spices more settled and drying as the delicate malt lingers through the aftertaste. 51.4% Alc./Vol.

    Previous tastings... [Batch 04J080] Deep, bright gold appearance. Aromas include toasty cereals, straw, cocoa, pear and spices beautifully intertwined. A huge, spicy entry is semi sweet with stewed pear, dried apricot and a chewy texture. Very well balanced at cask strength. Drying pear, spice and vanilla aftertaste. In all a little bit like a rye heavy Bourbon. Certainly one of the most impressive and affordable Japanese whiskies to arrive on the Australian market. 51.4% 94 points

    Other Reviews... A high-strength blend that takes no prisoners. The color is full gold and the first thing that hits the nose is a complex mix of restrained smoke (sandalwood, cigar), fennel, and celery before semi-dried tropical fruits and orange peel take over.     2020 marks the 17th edition of Jim Murray's controversial Whisky Bible. This year Kentucky claims a triple crown: The “World Whisky of the Year” goes to the 1792 Full Proof Kentucky Straight Bourbon from the Barton 1792 distillery, a whiskey Jim Murray describes as “melodious, mysterious and slightly exotic” with a nose of “near-perfect proportions” and with an “unfaltering” finish.

    Runners-up are both Buffalo Trace brands: William Larue Weller 125.7 proof Bourbon and Thomas Handy Sazerac Rye 127.2 proof.

    Closer to home, the Southern Hemisphere Whisky of the Year goes to Bakery Hill's Peated Cask Strength edition. Congratulations David Baker!

    Initially matured in traditional bourbon and sherry casks for a period of 9-12 years, this unusual Irish was finished for an additional year in first fill, hand selected sherry butts seasoned with Oloroso sherry sourced from the prestigious Bodegas Lustau in Jerez. On the nose, the pot still character gets an added injection of sherried richness: Fruit cake, toasted marshmallow and muted cinnamon follow through on the palate with dense dried fruits augmenting the barley. Excellent balance; plump, but never overly sweet, the distillery character shining through on the finish. 46% Alc./Vol.

    The 120 year old sherry house Lustau originally operated as an almacenista, but now produces a broad portfolio of wine styles in Jerez. The nose is intensely fragrant, bursting with fat dates and squidgy prunes, red apple and Battenburg cake. It’s fruity, yet bone dry, with oak, walnut, and spices. This is full-bodied yet refined Redbreast: the Spanish oak sherry butts shaping the red berry fruits, apples, marzipan, and creamy yet oily consistency. Clean, sweet oloroso finish.     While most of Craigellachie’s production is still channeled into Dewar’s blends, there’s been consistent efforts to showcase the distillery via official bottlings. First came a 13 year old. The 17 year old and a 23 year old shortly followed. Then a duty free exclusive 19 and a world beating 31 year old. Part of Craigellachie’s charm is that it still uses old-fashioned worm tubs, said to add extra flavour while also resulting in whiskies that “taste older than they are”. The house style is typically robust, spicy, warming and slightly oily in texture with citrus and American oak to the fore.
    Like previous releases, the 17 Year Old comes handsomely packaged with a 'retro' label and an impressive heavy set bottle.

    Golden, lifted, and aromatic. The fleshy ripeness of the 13 year old is still there, but that little sulfur edge has now gone, revealing the ripe fruits massing underneath. Now you find pineapple and light chalk. The flowers have become daffodils and bluebells rather than lily, along with a soft, vanilla ice cream plumpness. Sweet and full, and just a shade lighter than the 13 year old. Muscly, but sweet; that’s the paradox of the Craigellachie character.

    Compared with other Diageo owned brands, Oban hasn’t been given much attention. With the recent success of NAS releases from several other distilleries (such as Talisker), it seems the marketing team now have their eyes on this West Highland gem. Surprisingly for some, the general consensus is that 'Little Bay' is as good as (or even better) than the ubiquitous 14 year old age statement! Married in the smallest casks available at the distillery (200-litre ex-bourbon barrels) for extra richness, the aromas are borderline floral with a wonderful medley of ripe summer stone fruits (peach / nectarine / apricot) combined with beeswax and a whiff of maritime freshness. Air contact introduces notes of ginger snaps, muted white pepper and juicy malt. This has a real peaches'n'cream delivery; Butter-textured with flavours of honey drizzled weet-bix, beeswax and pepper as purring spices add depth and vibrancy. The finish is tangy, salted cracker-like with the fruity-malt thread seamlessly integrated through the final stages. A treat from a distillery that's been otherwise limited to just two bottlings. Sign us up for more! 43% Alc./Vol.

A rich, fruity, malty nose showcases dried apricot, dark chocolate, and salt. On the palate, Little Bay explodes with flavour, combining malt with orange, chocolate, and blackberry. Clove and oak spice join the party in the mid-palate, which shows superb balance and integration. A long, slightly dry, citrusy spice finish caps off a stunning whisky.

The end result mixes vanilla and fresh apple aromas, though neither carries forward to the palate.     The unblemished purity is showcased by the richness of the bronze color; a very pretty malt. First nosings detect a smattering of marine saltiness that is almost smoky but eventually is more like salted caramel; secondary passes after more aeration discover sea breeze, sweet grain, malted milk, root beer, and oaky sawdust. Entry is succulent, ripe, fruity, candy shop-like in its toffee leaning; midpalate highlights the sweet maltiness that’s accented by a controlled saline aspect that carries the flavor profile deep into the roasted meat-like finish that flashes a touch of tomato paste.     Just over five years ago there were only four distilleries in Ireland with mature whiskey stocks, and four new distilleries in operation whose stocks are not yet fully matured. Meanwhile, the popularity of Irish whiskey is growing at an unprecedented rate. Ireland's Minister for Agriculture and Food, Simon Coveney, said "Irish whiskey brands now represent the fastest growing spirit globally, with investment of €1 billion planned over a 10-year period". In fact, there are around twenty distilleries either being planned or being built in Ireland to cater for the expected 300% growth by 2030. The mammoth demand has inevitably led some to conclude that a supply shortage is imminent. Will Ireland follow the same path as Japan and Scotland, repositioning its prestige labels as reduced age / NAS (no age statement) releases? Are Irish classics destined to be compromised by a disproportionate inclusion of younger material? Time will tell...

    This single pot still incarnation of Powers is named for the now-defunct old Powers distillery. Using a pot still distillate which is true to the original style of John's Lane, the whiskey has been matured for not less than 12 years, mainly in first fill American bourbon casks, with a small contribution from whiskies matured in Oloroso sherry butts.

    Tasting note: The brilliant, brassy gold colour is visual pleasure. Typically robust, Irish pot still bouquet is oily and rich; gorgeously lifted, sweet, floral-soft scents develop followed by apple / pear fruitiness and vanilla wafer. Sublime. Svelte-smooth entry builds into a superb, fruity, semi-sweet palate: Ripe pear, vanilla wafer and gently pulsing spices are delivered with dazzling purity and balance. The finish is clean, juicy and fresh, like biting into perfectly ripened nashi pear. The aftertaste buzzes with staying power, trailing off with dried coconut, cocoa and vanilla. Just so pure and poised. A must-try Irish whiskey experience. 46% Alc./Vol.

    Other reviews... Wow! Could this be the greatest comeback since Rocky climbed back in the ring and showed the young upstarts who was the boss? It’s taken Irish Distillers a long time to respond to the pounding it’s taken from Cooley but it’s back in the ring with two wonderful pot still whiskeys. This is the better of the two, a whopping oily, woody package of classic pot still Irishness. The green fruits tumble over tannin and spice like frisky puppies.     There's 'Storm' and then there's 'Dark Storm': One is ubiquitous, the other frustratingly difficult to find yet generally considered the most desirable NAS expression from a distillery that excels in youth. Judging by the success of previous shipments, we know Dark Storm is a favourite of many who otherwise would have to be traveling internationally to buy it. The peatiest whisky Talisker produce, maturation in heavily charred casks imparts even more smoke and pepper to an already intense malt. The result is extreme yet balanced. We've managed to secure another parcel while maintaining the sharpest price possible. One litre duty free exclusive bottling. 45.8% Alc./Vol.

    Other reviews... some pretty chunky peat and spice is blown around the glass, certainly big enough to take the muscovado sugars head on...the sugars on the nose appear to multiply on delivery, as does the bourbon-style tannin-led liquorice and hickory...all is fresh and balanced enough to come good, even with some very late spices; much more like it!     ...Dark Storm is exclusive to Travel Retail outlets, and maturation has taken place in deeply charred casks. Rich, fruity spices on the nose, quite citric, with brine and aromatic smoke. The smoke elbows its way to the fore in time. Full, sweet, fruity flavors on the palate, some vanilla, then smoke, licorice, and spice hit home. A classic Talisker smoke and chili finish, but cranked up a notch or two!

    ...Liked this baby when it first came out, although the 10 always reigned supreme in my book. Colour: gold. Nose: it does nose young, but not immature. It’s big Talisker, rather emphatic and even slightly ‘in your face’, with nice notes of fermenting leaves and fruits, dried kelp (more dried kelp than on an inaccessible beach), a very grassy/leafy smokiness, and not that many pencil shavings, while earliest version had more of that. Notes of bitter marmalade. Mouth: seriously, this is super good, if a tad cloying. They seem to have pushed the ashes and the drying parts, and lowered the fruits. Tends to become a little bitter, on Fernet Branca, various artichoke liqueurs, ginger, heavy cinnamon… The wood sure has a lot to say here. Finish: long, drying, very smoky and extremely spicy. Some oak in the aftertaste. Comments: a comedian that goes a little overboard, but it’s still one of my favourite young Taliskers.     Apart from Single Malts, Suntory also produce a premium series of blended whiskies under the label 'Hibiki' (meaning 'harmony'), usually containing a high proportion of Single Malt (upwards of 50% according to one of the company's blenders). Thirty different malts are employed from Suntory's three distilleries, most with an age well above 21 years.

    For many, this is as good as Hibiki gets and stands as one of the towering achievements of the Japanese blender's art. Hibiki 21 was named World's Best Blended Whisky at the 2014 World Whiskies Awards and was awarded 96 points in Jim Murray's 2014 Whisky Bible who summed it up commenting "...it's hard to raise the bar much higher than this. Stunning."

    Those familiar with Mitchell & Son's superb 'Green Spot' Irish Whiskey will be happy to know about the return of 'Yellow Spot'. The unusual naming convention has a basis in reality. The different colours refer to the practice of marking casks with a specific colour after determining the ageing potential of a whiskey: Blue spot was an 8 year old, Green Spot a 10 year old, Yellow Spot a 12 and Red spot a 15.

    Mitchells would buy casks of port, sherry and Malaga out of the Iberian peninsula to sell on the local markets. They would fill them up with whiskey from the neighbouring Jameson distillery as soon as they were depleted from their original nectars. In keeping with this tradition, Mitchells reintroduced Yellow Spot, a brand that disappeared in the early 1960s. It has a 12 year maturation and a cooperage mix of ex Bourbon, Spanish sherry and Spanish Malaga casks. It's enough for only 500 cases of the resulting whiskey, and there's no plans to increase production as far as we're informed.

    The distinctive feature of Yellow Spot resides in the use of the Malaga casks: Think Jameson 12 with the heady scent of Moscatel and the sweetness of Pedro Ximenez grapes. It's a combination that makes for a rich Irish experience. As you'd expect, our allocation of Yellow Spot is miniscule so if you're keen to try it, don't delay.

    Tasting note: Bright gold / brass appearance. Gorgeous aromatics with notes of wild honey, custard, creme caramel and almond flan. Given a little time sees some lovely fruits emerge, namely apple peel / pear. Entry is oily / buttery in turn as the spices develop in a double wave. Flavours of vanilla custard tart feature enlivened by soft spices. Outstanding length and balance concluding with impressive persistence. 46% Alc./Vol. Non chill filtered.

    Opaque purple dark crimson colour with purple crimson hue. The nose is a little restrained displaying aromas of liquorice, blackberry, marzipan and very fine brandy spirit. The palate displays strong concentrated flavours of liquorice, marzipan and aniseed with a fine brandy spirit background that’s beautifully integrated. Excellent length with aftertaste of liquorice, aniseed, marzipan and spice.

    In 2015, Nikka announced they were discontinuing their age statement and No Age Statement (NAS) releases for the Yoichi and Miyagikyo labels and consolidating them into two new NAS versions that differ slightly to the previous versions. Nikka's reasons for the radical new strategy are now familiar. They simply have no old stocks to sell. Decades ago, both local and world demand for Japanese malts was low, so few barrels were being laid down for extended periods. Stefan Van Eycken, writing for nonjatta.com explains "...there were years, at both Yoichi and Miyagikyo distillery, when the barrels laid down for maturation could be counted on the fingers of one hand. The ‘stock shortage’ is not an excuse or a PR stunt – it’s very real. Sources within Nikka have said that it is ‘likely’ that age-statement single malts will be brought back in 5 or 6 years’ time. No official statement to that effect has been made for the simple reason that doing so – in Japan – would be interpreted as a promise (which could come back to haunt them in 6 years’ time)."

    The dropping of age statements doesn't always translate into a drop in quality. Early reviews for both releases have been very positive. Evidently, Chief blender Tadashi Sakuma has risen to the challenge of creating a great assemblage from a restricted inventory.

    One for no age statement naysayers. An eloquent expression of sweet osmanthus, baked lemon, yuzu, violin resin, rich malts, and bonfire aromas on a favorite woolen jumper. It glides across the tongue with sweet barley sugar, but attests to greater depths; grapefruit, spicy ginger, and mandarin developing milk chocolate-coated, candied lemon flavors. A firm finish: green cardamom spices slowly releasing their grip on the front of the palate, leaving clingy vanilla.     ...Marigold/deep straw color; superb purity. Immediate smells after the pour are grainy, malty, and like brown rice, with background touches of baking spices (allspice, mace), tofu, and soy sauce; secondary inhalations encounter “greener”, more vegetal aromas that eclipse the baking spices. Entry is subtle, keenly spicy (the baking spices make a big return), desert dry, and moderately malty; midpalate features a delightfully and satisfying crisp flavor profile that borders on being astringent and edgy as the maltiness merges nicely with the resiny oak, providing a tightly focused taste experience that’s clean and intensely grainy. Finishes a little too short, deeply malty, and even now a touch peppery. Had the aftertaste not dropped off too abruptly, I’d have given this single malt a fifth rating star.     We’ve always been impressed with the skewed sense of value to be found in what is perhaps one of Speyside's most underrated distilleries - Glenfarclas. Like much of their range, the 17 year old is 100% Oloroso matured, however the distillery curates first-fill and refill barrels to create contrasting profiles and differentiate the various age statements. The style of the 17 year old suggests more second or third fill casks, so there's less overt sherry impact, and a softer texture with more finesse - especially compared to the relatively brawny 15 year old. The nose opens with beautifully integrated aromas of honey, stewed pear, beeswax and fresh, pure malt, the second pass finding hints of bounty bar and cigar box. Firm and full bodied, the delivery is buttery, almost oily, with more orchard fruitiness and spice entering (almost like apple danish and cinnamon). The balance is notable, rounding off with late barley sugar and fine, drying tannins, ending as appealingly as it began. 15-17 years is clearly a tipping point for the distillery, which perhaps explains why Glenfarclas persist with this unusual age statement. 43% Alc./Vol.

    Weighty and deep. Instantly seductive: vanilla pod, rich fruits, the smell of fur coats. A femme fatale of a malt. A base of crisp malt mixes with oak to give balance and structure.     Followers of our direct import Laphroaigs will know that this distillery has been very keen on experimentation when it comes to different wood regimes – including everything from Port barrels to a 'Triple cask' bottling. This one tops the lot! As the name suggests, four different casks are used in the maturation - ex-bourbon barrels, small quarter casks, virgin American oak barrels and larger European Oak hogsheads. According to the distillery, the result is an extraordinary fusion of flavours including “…sandalwood, pine, fir and willow.” Launched in 2017 as a travel retail exclusive.

    Tasting note: Brilliant gold. Whiffs of mezcal with suggestions of damp cedar and mechanic’s workshop; later inhalations find the bouquet steeped in vanilla and char, soot and baked citrus. Some menthol too. Nice complexity. Light and creamy on entry with a burst of vanilla, peppermint and sweet maritime smoke (peaty ice cream?) Feather-weight towards the finish, with delicate mint and menthol infusions through the peat. Remarkably domesticated for this distillery. Laphroaig in black tie. 40% Alc./Vol.

    Triple aged in ex-Bourbon barrels, quarter casks and Pedro Ximénez sherry butts, this deeply coloured Laphroaig opens with a PX top note almost overwhelming the expected distillery aromas. Brandy soaked raisins and dark chocolate amid flashes of sweet peat and pepper give way to smouldering cedar, cigar box and hints of elastoplast, accenting fruit cake in later inspections. Terrific balance in the sweet, smokey-malt mid palate; vanilla and Christmas cake add richness to the finish. Prolonged and lozenge-like with Laphroaig's trademark medicinal edge and pepperiness breaking through late, finally checked by the sherry. A big PX influence here but it's deftly handled - think of it as drunken Christmas pudding, Islay-style. 48% Alc./Vol. Normally travel retail exclusive.

    Other reviews... This ultra sweet wine is often paired with smokey malt, often with disastrous consequences. Here it has worked, but only because the PX has been controlled itself by absolutely outstanding oak. And the ability of the smoke to take on several roles and personas simultaneously.     ...truly is excellent stuff, that sweet Pedro Ximenez sherry finish has added just enough fruit & spice to balance the oak and smoke. If the sweetness was just a tad more subdued, and it stated on the label if it was chill filtered, it likely would have scored even higher!     An intriguing Japanese release, part of a movement towards non-age statement whiskies, this one with a noticeable difference; It's a mix of malts varying in age and cask type, originating from ex-red wine casks matured for approximately three years, older Sherry matured malts approximately twenty years in age and Mizunara casks, otherwise known as Japanese oak, around 12 years old. The result offers understated, pure aromas of vanilla, cocoa dusted malt and honeyed cereals; later hints of fruit cake here too then more stewed pear with air contact. The medium dry, fresh delivery offers a spicy, orchard fruit, vanilla and juicy malt burst. Succulent and fruity to finish. Almost a floral delicacy to the aftertaste. Love the mouthfeel here. A gorgeous harmony of flavour and texture. 43% Alc./Vol.

    This is the World's Best Rye! - World Whisky Awards 2020

    Dave Withers has preferenced malted rye (and malted barley) over the far more commonly used unmalted rye to create a 'halfway' style. Why? "Using malted rye creates a more mellow rye flavour." explains Withers. "Some American rye whiskies [which use unmalted rye] are really big spice bombs. We wanted to bring that back a little bit and make something that sat between a single malt and something with that big, spicy intensity. We call this a ‘rye-malt whisky’ because it’s halfway between the two.”

    Matured in custom-made, virgin American oak casks, the wood used here is air dried, meaning the cut timber is left in the open for three years in order to break down some of the harshness. "It gives this really lovely, integrated oak flavour” says Withers. Sydney's wide diurnal temperature range works the casks hard, so the whisky achieves near perfect balance at a relatively young age - around 2.5 years.

    While Wither's admits rye is a pain in the neck to work with - difficult to mash and difficult to distil - he's adamant there's something special about it. Instant success has encouraged further batches, so expect this to be an ongoing series.

    Franz Scheurer, of Australian Gourmet Pages and Gourmet Traveller Wine magazine describes the new whisky as “Layered and complex and a pure joy to drink. The best bloody rye whisky in today’s world.” We received a small sample of Batch #6. It has the mouthfeel of a single malt, but with a Bourbonesque profile. There are gorgeous aromas of Castlemaine Rock (peppermint & honeycomb), vanillan oak and honey cornflake crackles. Mouth coating and moreish; Lots of wood pick up too, but in the best possible way; buttery, long, perfectly balanced. Hints of caraway and dark bread, then whisps of toasty oak and oily grains ring through the aftertaste. Normally aggressive rye spices are tamed, so this is softer and sweeter than traditional styles - somewhere between old-school rye and a rich Speyside single malt. It's already won a host of awards, not least, World's Best Rye at the World Whisky Awards in London 2020. Critical acclaim continues to roll in. 46% Alc./Vol.

    ...Unless you have access to some very unusual whiskies I can guarantee that this is unlike any rye you have tasted before. It is like a mix of 3/4 crisp, clean, sherried scotch and 1/4 soft bourbon, with just a hint of rye. It has virtually no prickle, sharpness or spice but it is far from bland. It's a sweetly elegant rye with no bombast and it is bottled at moderate abv. The mashbill is a secret but the creamy, honeyed tones it displays are not due to minimal rye content, but rather the fact that they use malted rye instead of an unmalted rye mash. This is effectively a single malt whisky made with a mixture of Australian La Trobe barley and lightly kilned German rye, and it's absolutely delicious. I'd go so far as to say it is one of the best Aussie whiskies I've tasted and considering the reasonable price I'd highly recommend it. - distiller.com

    ...No shrinking violet here; this is a big, powerful Bourbon, with a finish that just won’t quit. The honey-colored spirit has a sweet, heavy caramel aroma with a deep, somber espresso note. Look for a round burnt-orange flavor and lots of cinnamon and nutmeg on the dry, elongated finish. Temper the alcohol sting with ice water—it’s 100 proof, after all.     Considered "the easy-going one" in the Laphroaig line-up, the repackaged Oak Select is created from selected casks from each of the distillery's key styles (Quarter Cask, PX, Triple Wood, and 10 year old) with one exception - the heart of the spirit is reportedly sourced from a final maturation in virgin American oak. Seasoned whisky drinkers will be aware that new wood is rarely used in Scotch Whisky maturation. Instead, almost all whisky is put into casks that have previously held other beverages, usually Bourbon or Sherry. New wood tends to stamp its inherent flavours into the whisky in a definitive way. Can we expect this to be a battle between peat reek and coconut?

    ...The nose is reminiscent of freshly-treated decking, before some classic iodine creeps in. Water brings out geranium, pollen, and damp leather. The palate is simple, clean, and mild (and smoky), with bay leaf, light dried fruit, and that oily wood. Undoubtedly there's a lot going on, but it’s not married, and 40% means it lacks the necessary wallop.

    An intriguing NAS whisky from the ever-consistent Hakushu distillery. The Distiller's Reserve combines young, lightly peated and older, heavily peated malts rumoured to be up to eighteen years in age. Like it or not, these NAS releases have been crucial for the ongoing presence of Japanese distilleries on the shelves, allowing continued market access by marrying dwindling older barrels with younger stock coming online. Executed by expert blenders, the results can be distinctive and sometimes outstanding. If mixing is more your thing, this is said to make a fantastic Highball.

    Other reviews... On smelling the whisky, I found it had a grassy scent that struck me as different to other Japanese whiskies I’ve tasted in the past. After tasting the drink, I picked up flavours of mint, cucumber and fruit. Each flavour unfurled on my tongue, building up slowly over time. I also enjoyed the fact that the Distiller’s Reserve was so easy to drink. It had a smooth quality that chimed well with the ice in my glass. Whereas some whiskies leave behind a fiery aftertaste, the Hakushu went down as easily as a bottle of Peroni.  Another important note was the clean sensation. I found the drink gave my palate a sense of freshness that I’ve not experienced before with whisky. In conclusion, the Hakushu Distiller’s Reserve is a highly herbaceous single malt whisky that’s easy to drink, fresh to the taste and packed with fruity flavour. 2019 review - yamatomagazine.home.blog/

    Retasted Nov 2016... Subtle, with light wafts of fresh sawn American oak, gobstopper and stewed pear. Air contact draws out hints of granita biscuit. More presence in the mouth than the nose suggests with a nicely rounded, fresh delivery that's peppermint lozenge-like followed by cool mint confectionery melting in the aftertaste. Unexpected and quite delightful. 43% Alc./Vol. 90 points

    First tasted 2013 Pale straw gold colour. Moderately intense, grassy and mildly fruity aromatics combine with a malty-vanilla base and a soft, round, light to medium weighted delivery with cereal and vanilla flavours, nicely balanced alongside the gently buzzing spices that carry well into the aftertaste.     One of the last available releases from Diageo's dwindling series.

    "Awkroisk" or "Ouchroisk"? Despite a name that's notoriously difficult to pronounce, this relatively new distillery (built in 1974) has garnered a quiet following. It's unusual to find because most of it disappears into the J&B blends. Single malts are rare, and were originally labelled as 'Singleton of Auchroisk'. Debuting in 2001, this is one of the only official bottlings (there have been less than a dozen in the distillery's history). It is arguably the most controversial of the Flora and Fauna series, and amongst the very last still doing the rounds via a small number of retailers globally. Over the years, some tasters have described 'off notes', others praise it for its subtle complexity that includes crème anglaise, cut grass, a delectable nuttiness and an unusual salty tang (sounds like your typical Auchroisk profile). Batch variation almost certainly plays a part. Future supply is not guaranteed, so if you're willing to take a punt on a new everyday drinker at a reasonable price, go for it!

    ...bready, softly salted. Simple but rounded and cohesive flavour. When I say it’s salty it’s a very integrated salt-crusted-bread sort of vibe – not brine or the intense alcoholic ‘saltiness’ you see in many whiskies. Pitched at a perfect level. Nicely put together, as most of the Flora and Fauna range are. I realise I haven’t said much to describe the flavour, which is a symptom of this whisky having such a subtle and cohesive one. You have to dig so hard to find the sweet liquorice, apple pie (crust-heavy), subtle spices, light woody nuances out of the semi-sweet, semi-dry, semi-salty whole. Gorgeous actually. 'Tickers' of any foods naturally gravitate towards the big bold flavours, but you have to appreciate something as nuanced, balanced, soft and simply as well-made as this while it’s in front of you.     By the end of the 18th century, doctor Pierre Ordinaire, native of the Doubs, but exiled in the canton of Neuchatel in Switzerland, invented the absinthe elixir, composed of aromatic plants from which he claimed had curative powers. At his death, he bequeathed the secret of this elixir to his housekeeper who was supposed to have sold it to the Henriot sisters at Couvet. Those women cultivated by themselves the plants that they distilled in a little still; the liqueur was then distributed by hawkers. Not managing to keep up with demand, they sold the recipe in 1797 to Major Dubied, who, with his son, settled the first absinthe distillery in Couvet. From a once medicinal potion, absinthe was soon being consumed for pleasure. Since its growing success, a second distillery was created and absinthe soon became known through the whole of France thanks to commercial travellers. At this time, around 1825, other distilleries were founded in Haute-Saône and in Doubs, and later, in the South of France, as well as in the region of Paris. One such distillery was Lemerciers. Before 1800, the Lemerciers were an important farming family, living in Grand-Fahys, a hamlet in the district of Fougerolles. In addition to their farm land, they also owned several orchards from which they produced Kirsch and Plum Brandy. However, little by little, their production of brandies greatly exceeded their personal requirements and they became professional distillers.

    Only relatively recently has the Lemercier company commenced commercial production of Absinthe, a spirit containing wormwood plants. This sugarless aperitive is obtained thanks to a traditional process, and still follows the same recipe which was used by the Lemercier’s ancestors. Numerous plants enter in its composition: wormwood (big absinthe), green anise, star anise, fennel, gentian and armoise amongst others. After a maceration of several hours in alcohol, the seeds and plants are distilled, followed by an infusion of plants which are added to create colour. Then a maturation of nine months is necessary to make the aromas of the various plants and seeds develop. The essential oil of the big wormwood (absinthe) contains more than fourty components. The thujone is the main element incriminated in the toxicity of absinthe. (Thujone is also found in other plants such as salvia, some varieties of lavender, and “achillée millefeuilles”.)The thujone levels in absinthe are too small to be of any real risk, as with other beverages which also contain thujone such as vermouths, “génépi” liqueurs and the famous “Chartreuse”.

    In 1988, a directive from the European Council lay down the content to be respected regarding the differents products which are used in the making of food products. The thujone content to be respected is 10 mg/kg for alcoholic beverages titrating more than 25 % proof in volume and 35 mg/kg for specific alcoholic beverages.     100% Chardonnay Champagne from the Laherte family's chalkiest soils in Chavot and Épernay. These vineyards are all biodynamically farmed and are not only rich in chalk and chalky clay (marl) but there is also flint and schist. It has been aged for just over two years in bottle following a first fermentation in barrique, foudre and tronconique cask. No dosage. A creamy white mousse sits gracefully above a pale straw coloured base that’s finely threaded by a very persistent bead. Pronounced pear and citrus aromas stand out from the glass with baked bread and yeast lees characters then taking over. Finishes off with some lightly honeyed toast notes. Sculptured mouthfeel with energetic acidity racing through the elegant yeast lees, toast and citrus flavours. Some light brioche and almond nuances are also evident. Finishes bone dry, tense and crisp with a refined citrus, oily toast, yeast lees and chalk tinged aftertaste.

    The NV Brut Nature Blanc de Blancs marries power with energy to a degree I have not seen before here. In this edition, the Brut Nature is decidedly powerful and broad, with less of the tension seen in some previous releases. It's as if all the Chardonnay flavors have been turned up to the maximum. Orange peel, apricot, chamomile and spice are some of the many notes that fill out the layers. The current release is based on 2017, with reserve wines from 2016 and 2015, all done in neutral oak.
