Bundaberg rum has been an integral part of Australia’s heritage since 1888, born out of the canefields of Queensland. In 1907 a disastrous fire ravaged the Bundaberg Distillery. Despite courageous efforts local fire fighters were unable to prevent extensive damage. The origin of the fire remains a mystery. One hundred and one years later, Bundaberg 101 has been released to commemorate the event - a rich dark rum with a hint of smoke. A number of super-premium Uji teas have been specially selected to form the heart of the gin. Tencha and Gyokuro provide intense aromas and depth of flavour with a wonderful sweetness. Leaves harvested in the Okunoyama tea yard dating back to 1300’s are also used, carefully blended with a secret botanical recipe. Tasting note: Fruity and creamy aromas evoke mango yogurt, kumquat jam and hints of elderflower(?). Drier than the nose suggests with exotic plantain and mango lassi flavours. White pepper and juniper led finish. Ends clean and crisp. Ruby Port is a delicious style of young and fruity fortified. Aged for an average of three years, Niepoort sources grapes for this wine from old vineyards in Cima Corgo region of Douro Valley. Ruby keeps well for several years, although the wine will not improve with age. Decanting is not necessary since the wine contains no sediment. Serve after a meal, by itself or with soft cheese.

Other reviews... Very mature and quite rich on the nose with thick toffee, molasses, maple syrup, suggestions of Pedro Ximinez sherry, deep sappy oak notes and background spices. Similar on palate entry, too-a mouthful of rich, chewy whiskey-but the whiskey then unfortunately turns very dry, with oak and leather notes that dominate. Three bourbons, at 17, 21 and 23 years old, and two ryes, at 21 and 23 years old, are available under the “Vintage” label, all coming from some of the oldest barrels KBD have in their warehouses. A number of other bottlings on test here also come from the KBD warehouses, including Black Maple Hill and The Bitter Truth, so it will be interesting to see how these whiskeys compare.
There’s no hiding the Vintage 23 has spent twenty three years in oak… from the first sniff you get a heavy dose of woody notes as well as some zest and cinnamon. In the mouth the woodiness continues, but you also get a lot more zest and fruit than is present in the 21 year old. The whiskey certainly isn’t over mellowed though, there is plenty of peppery spice and a fairly hot finish on the back of the throat. Adding ice tones down the finish a little, but the Vintage 23 still has a strong pepper note. For sipping the wood and pepper notes can sometimes be a little much, but the strong flavours make me excited to see how this compares in something like an Old Fashioned. Interesting to note how different the Vintage 23 is to the Black Maple Hill 23, two ostensibly similar whiskeys from the same distilleries stocks.47% Alc./Vol.

Blood oranges are a prized variety in Sicily, harvested in November when their rich red color develops in the cool Mediterranean nights. The peels are steeped in alcohol and pressed in a basket press. The infusion is then blended with juniper and other botanicals before being distilled in a stainless steel vacuum still. Expect refreshing citrus with a touch of vanilla. Tart grapefruit and juniper balance the orange sweetness. Try it in a G&T with fresh fruit for garnish. 41% Alc./Vol.

Pascal Agrapart Terroirs Blanc de Blancs Extra Brut Champagne Grand CruChampagne, FRANCE$220. 00Bottle$2640.00 DozenABV: 12%Closure: Diam CorkUnlike most so-called prestige cuvées, Terroirs is produced from only great sites and is 100% Grand Cru. The fruit comes from four villages in the Côte des Blancs: Avize, Cramant, Oger, and Oiry. The vines average 40 years of age, and Agrapart uses between 50-60% reserve wine. After a natural fermentation, half of the wine is matured in large format, neutral oak and then spends up to 48 months on lees. Dosage is limited to 5g/l and disgorgement is carried out by hand.
A plentiful mousse sits comfortably over a pale straw coloured base that has pale gold edges and is finely threaded by a delicate bead that shows great persistence as it rises to the surface. The nose exemplifies a classic Champagne sniff featuring rich, toasty notes of oily baked bread, yeast lees, honeyed cashew, roast almonds and hints of citrus. Remarkably fresh and possessing an elegant creaminess, mouthfilling toasty baked bread, yeast lees and citrus flavours show great richness over a back drop of light oily characters, traces of honeyed cashew and roasted almonds. Dry crisp finish with a long oily toast, baked bread, yeast lees, citrus and roasted almond aftertaste.

The NV Extra Brut Blanc de Blancs Grand Cru Terroirs is an excellent introduction to the estate’s Chardonnays. Disgorged in August 2024 with three grams per liter dosage, it’s composed of 20% from the 2021 vintage (vinified in tank), 50% from 2020 and 30% from 2019, with half of the reserve wines aged on the lees in approximately 30-year-old demi-muids. Heavily based on Oger (around 40% of the blend), with the remainder coming from Oiry, Cramant and Avize, it’s already expressive, offering aromas of honeysuckle, nectarine, bread and fresh hazelnut. Medium to full-bodied with bright acidity and complemented by a pillowy mousse, it concludes with a long, sapid finish.

Another new batch to FEWs line up is a majority-rye married with the sweetness of corn for a 'softer' interpretation. First encountered back in 2015, this is now pretty seamless as far as ryes go: All the signatures of the grain are clearly expressed, from the wisps of apple and mint through the nose, to the juicy mouthfeel and pepper streak through the finish. The texture is fabulous, the length sustained by oily rye and peppermint chocolate. It's an impressive new batch, and a seriously solid rye by any measure. 46.5% Alc./Vol.
First tasted 2015: Pale gold colour is slightly turbid. Offers up scents of beeswax over stewed apple and cinnamon. Time in the glass yields hints of white pepper and cut grass however the focus remains on the mouth watering, apple strudel like qualities. Light, supple entry develops into a concentrated, juicy, beeswax profile framed by firm rye spices accentuating towards the finish which is momentarily rye bread-like, trailing off beeswaxy, dry and closing a little short. Quite compelling. 91 points

...Reviewing craft-distilled American whiskeys is still a matter of degrees, especially when the craft distillers venture into the stylistic territory staked out so strongly by the established traditional distillers. The benchmarks of bourbon and rye are well-known, and to openly declare your competition with them is to invite direct comparison. I call it the “Evan Williams Test”: is this craft whiskey good enough that I’d buy a bottle of it instead of yet another $14 bottle of the reliably well-made Evan Williams Black? Only the very best craft whiskeys can stand up to that. By that test, Few Spirits Rye is clearly in the top tier of current craft whiskeys. Although it’s young, the whiskey is well-made and clean in character, not funky and flawed, which still counts for a lot these days. As I said in my review (an 89 score), “Straightforward rye crisps out of the glass in no-nonsense style; dry grain, sweet grass, and light but insistent anise almost wholly drown out the barrel character.” It’s backed up on the palate, where you’ll get more rye, some tarragon and dry mint spice, and then some oak in the warming finish. That light barrel character is hardly surprising in a young rye, and we’re not going to see much but young whiskey out of craft distillers for a while yet. Personally selected by Master Blender, Rachel Barrie, from some of the most extraordinary and remarkable Spanish oak sherry casks from 1990, 1992 and 1993, it promises a typically super-complex and full-bodied whisky for which the distillery has become famous. Presented in a handsome wooden case. Expect an utterly luxurious sensory experience. Notes from Glendronach... NOSE: A carefully woven tapestry of stone fruit, baked quince and glazed cherries on a seductive bed of sandalwood, roast chestnuts and subtle musk- scented leather. The freshness of oak balsam lifts and lengthens throughout, sustaining the exceptional balance and complexity. PALATE: An elegant, deep and perfectly integrated palate combines a myriad of sherry cask tastes in each sip; an initial burst of rich sherry-laced fruitcake intriguingly opens up to reveal baked orange, sultana and luscious black cherries. CONCLUSION: As time slowly passes, the taste lengthens and deepens towards an elegant dark chocolate mint, raisin and angelica root velvet finish. 48.7% Alc./Vol. Non chill filtered.

Intense juniper with warming spices...peppercorns, saffron and coriander seed to the fore with time the glass accenting paprika heat and light citrus. Feather light on entry, but builds with a dramatic burst of pepper, paprika and coriander over a piney/earthy juniper base. Very intense, with excellent length. Here's one for the whisky diehards - Springbank fully matured in fresh and refill sherry oak and at cask strength. Only 9,120 bottle produced worldwide.In Cadenhead's words, "A winter warmer. Dark orange chocolate, Christmas cake and brandy snaps. Honey and spices develop over time."
Tasting note: Bright brassy gold. Clean, ripe and fruity opening aroma is also mildly spirity; second pass reveals Marie biscuit, hints of kumquat and a refreshing though subtle orange peel/menthol lozenge aspect. Punchy malt delivered with lovely sweet/dry balance, spicing up towards the finish where delicately bittersweet dried fruit, paprika and muesli bar flavours combine. Ends more woody, warming yet well balanced with subtle cocoa and peat notes in the aftertaste. Obvious sherry input, but not over the top. 52.3% Alc./Vol.
Other reviews... Released in February 2015, this cask strength expression of 17 year old Springbank has been entirely matured in sherry casks. 9,120 bottles are available globally. The nose offers sea spray, blood orange, ginger, and discreet sherry. Finally, some peat. The sherry really makes its presence felt on the palate, which is full and slightly oily, with rich fruitcake flavors, soft toffee, coffee, and ripe cherries. The finish is lengthy, slightly peaty, with more sherry, treacle toffee, and trademark Springbank ozone.

That has happened here with both the malt and grape cancelling each other out...Soft and easy drinking with an excellent early delivery spike of intensity. A ripe but cool and restrained nose features relatively elegant violet and rose petal aromas as well as those of earthy red cherry liqueur and spice nuances. Here too there is terrific concentration to the intense, palate staining and perceptively muscular flavors that again coat the mouth with dry extract while offering a superbly persistent finish that is blatantly structured but not particularly austere; indeed this could even be approached young. Drink 2034+.

Allen Meadows - BurghoundHealthy dark red with ruby tones. Black cherry and licorice aromas are lifted by a violet topnote. Tight and minty on entry, then a bit more pliant in the middle, conveying an impression of medicinal reserve to its dark flavors of black cherry, spices and minerals. Finishes with substantial tooth- and tongue-dusting tannins. This wine also had a late malo and comes off as very backward today, in need of more élevage to gain in flesh and sweetness.

This method of combining barley from different sources has been employed with outstanding results by Australian distilleries, Bakery Hill and Hellyer's Road.
A superb whisky.
Tasting Notes: Brilliant pale gold with a subtle green blush. Powerful, near perfumed aromas offers an abundance of barley and honey, judiciously harmonised against delicate, lanolin like peat (reminds one of certain bottlings from Highland Park). The palate is rich, warm and plush; sweet barley flavours invade every crevice of the mouth, followed by waves of spice front to back, though the balance is nothing short of perfection given the high ABV. Dark chocolate, drying, earthy peat kicks into the after taste while the spices persist. Seriously good whisky! 50% Alc/Vol.

The vital components, wormwood and wine, are plucked fresh from Victoria. Other key ingredients include strawberry gum, river mint, sea parsley and wattle seed.Shaun has been tinkering behind the bar of Melbourne martini haven Gin Palace for over 5 years. This has helped him nurture his interest in capturing and enhancing natural flavours, arising in house-made concoctions and a sophisticated understanding of palates.
Born of a French wine family, Gilles has wine flowing through his veins. He crossed the globe to take over the position of Winemaker at the dynamic Sutton Grange Winery.
The two were bought together by their love of Vermouth; Gilles bringing with him the traditional alchemy of pastoral Europe to complement Shaun’s knowledge of the vibrant food and drink culture of Australia’s young cities.
Tasting note: Deep copper / mahogany colour. A powerful aroma reveals scents of clove, bay leaf and cherry with hints of anise adding freshness. A slightly tart, bitter entry leads into a medium bodied, almost off-dry profile of stewed fruits and sweet spices counterpointed by pleasantly bitter, herbal, earthy, root like flavours and cleansing acidity. Excellent balance. Spicy blackberry finish. Concludes clean, fresh and mildly tart with bay leaf and clove persisting. A moreish aperitif. 16% Alc./Vol.

Thanks to the exceptional quality maintained by distillers like Flor de Cana, the region's rums have begun to gain well deserved international recognition. Flor de Cana is owned and produced by Compañía Licorera de Nicaragua, which was founded in 1890. Although the brand was not marketed commercially until 1937, it is today considered one of Latin America's most prestigious rums, and has won 72 awards, medals and commendations in the last five years.
Produced from molasses, Flor de Cana White spends four years mellowing in American Oak before being filtered clear.
Tasting note: Brilliant, rainwater clear. Understated scents of dried coconut, creamy soda and pineapple pudding. The story goes that this rum used to be served to sailors in Mexico, but they all got so drunk that the captains made it illegal to serve! Hence the name 'El prohibido' - the forbidden rum. Nosing finds hints of balsamic over richer scents of candied orange, choc-chip cookie, praline, chico lollies and dilute molasses. Five minutes sweetens the aroma and shifts the emphasis to sticky date pudding. Light to medium bodied, off-dry delivery. Coffee milk, caramel fudge and lingering mocha flavours are nicely counterpointed by subtle bitter chocolate in the aftertaste. An atypical style with a likeable cocoa / mocha accent. Notes from the bottler: “In 1700, Spanish ships arrived to the colonies in the New World loaded with products from Spain. One popular product was sweet wine stored in barrels, which were later emptied after use. These empty barrels were filled with Chinguirito, which is rum that was produced in Mexico and shipped back to Spain, it absorbed wood flavours and aroma from the sweet wine barrels, which gave it very special characteristics. The resulting product became very popular in Spain and local producers saw it as a threat to the sales of their products. Consequently, the King of Spain prohibited the production of this rum in the New World. Chinguirito was also known as Habanero because the last stop on the way back to Spain from the New World was Habana, Cuba.”

Great in a G&T, a perfect match with Vermouth in a Dry Martini or Negroni, and the spices in Anther emerge in citrus cocktails like the White Lady or Southside. Created by Suntory Chief Master Blender Shinji Fukuyo, this latest Yamazaki bottling blends several single malts from the distillery. Beautifully packaged, the bottle features imagery of Yamazaki’s pot stills and the kanji characters for Yamazaki in gold.
One of the whiskies in the composition was aged in x red wine casks (or sherry casks, depending on your source) for over 20 years; another was aged in port wine casks for a similar period. The younger part of the assemblage was matured in ex bourbon casks. No tasting notes available.

A hint of what's to come... Tsunuki is a new Mars distillery, located on a historic site in Kagoshima. With this second operation, Shinshu's owner, Hombo Shuzo will continue to expand his portfolio which presently includes the Komagatake single malts, Iwai Tradition, Twin Alps, Tsunagu blended whiskies and the Cosmo labels. Opened in 2016, the heart of the Tsunuki facility is located just next to the family home of the descendant of the founder of the brand (now transformed into a tasting bar and shop). Cask no 5113 yielded just over 200 bottles at a cask strength of 59% Alc./Vol. Extremely limited.

The spirit has been in demand in Australia for some time and many bars are now experimenting with its light, clean and versatile flavour. Sagatiba's Pura is a benchmark for the genre.
Tasting note: Clear, burnished silver appearance. Powerful scents include white pepper, green capsicum and dill. Medium dry, the palate bursts with mustard seed, white pepper and green capsicum flavours. Slightly oily mouthfeel. Spice and green capsicum persist into the long aftertaste. Like any classic cocktail, the Caipirinha (roughly translated as 'little peasant girl') has a traditional method of mixing which requires a certain attention to detail. Cut a lime into eight pieces, place in a glass, add 1-2 tea spoons of granulated cane sugar to taste. The proportion of sugar can vary but its sweetness should balance the acidity of the limes.
A wooden muddler can be used to grind the sugar and lime in order to release the oils in the skin as well as the juice in the flesh of the limes. Fill the glass with crushed ice. Add 30-60ml of Cachaca, stir and it’s ready!
In recent years, some bartenders have developed the humble Caipirinha by adding fresh fruit such as blackberries during the muddling (crushing) stage to create new flavours, thus creating for example a 'Black berry Caipirinha.' Cachaça also lends a certain Brazilian exoticism to other drinks such as cola and orange juice. -

Here’s another: Green Spot Chateau Montelena brings together Irish traditions from both County Cork and the Napa Valley of California. An Irishman by the name of Barrett purchased the struggling Chateau Montelena winery in the 1970s, hence the association. Distilled from malted and unmalted barley, it's composed of whiskeys that are 7 to 10 years old, aged an additional twelve months in French oak Zinfandel casks from Chateau Montelena. Other reviews… From Calistoga, California to County Cork, this zinfandel-finished whiskey has bramble, damson jam, red apple, and glacé cherry, with cake mix, flaked almonds, and a steel-tipped edge of spice. Red apple, lemon peel, pithy orange, and crunchy red apple, teasing spice, with just a suggestion of mint mingled into the dry, spicy finish. Other reviews... the HC 3 YO has its strengths and plays to those and stays firmly within its wheelhouse: ambition is not its thing and the rum doesn’t seek to change the world. Personally, having sipped it solo and then had it in a mix (I’m not a cocktail making swami by any stretch, so that duty is Mrs. Caner’s, because she really is), I think that while individually the elements of nose, palate and finish seem to be at odds and growl at each other here and there, in aggregate they cohere quite nicely. By that standard, it’s really quite a decent piece of work, one that deserves its “bartender classic” status….though to repeat, a neat pour is not really its forte, or my own preference in this instance. - the lonecaner.com

Sometimes described as one of Speyside's "Best kept Secrets", and no wonder given the sheer class vs scale of the operation: Benromach is managed by just two workers and runs at a maximum capacity of a mere half million litres annually. Prior to this, in 1983 it was mothballed and it wasn't until a decade later that the distillery was acquired from United Distillers by Gordon and MacPhail. Production recommenced in 1998 with whiskies peated slightly higher than other Speysiders at around 8-12ppm. Since that time there have been myriad releases and an output that consistently receives high praise. According to whisky writer, Dave Broom, G&M’s aim has been to make a classic pre-1960s Speyside style: across the range, the integration of the smoke and malt is seamless and judicious, allowing the fruity spirit to shine through. Always some of our most liked Speyside whiskies at tastings, the entry level 10 year old is where the fun starts, recently awarded Best Speyside Single Malt 12 Years and Under at the World Whisky Awards 2017. Move up from there to sophisticated wood finishes, a world-first organic malt and a cracking cask strength expression. Whatever your preference you’re guaranteed to find something to love here, else stop drinking whisky!This is 80% ex-Bourbon / 20% ex-Sherry matured for 9 years, followed by 12 months in an Oloroso Sherry cask for the tenth year.
Tasting notes: Pale gold appearance. Gorgeous aromatics with a sultry amalgam of poached pear, dried fruits, dark chocolate and the gentlest wafts of peat. Aeration draws out hints of baked apple and sweet spices. A clean, crisp malt delivery supported by lively spices; fine threads of smoke and a delicious fruity edge; sweet barley dovetails into grassy, citrus freshness at the finish while light pepper warmth and sooty peat round out the aftertaste. Superb purity. One of a handful of 10 year olds that really engages, and with a price that places it in the top 3 or 4 values in its category.

The first 10 year old release containing whisky produced entirely by the new owners. I love the interplay here between the malt, sherry, and smoke, with all getting a chance to shine. A rich vanilla-tinged malty foundation, deep caramel, rhum agricole, an array of lush fruit and dark chocolate, along with grassy/hay notes, honeysuckle, subtle spice (cinnamon, anise), and lingering earthy smoke. A vast improvement from the “Origins” release last year. I would only make three changes to make this whisky even better (and elevate it to 90+ status): a couple more years on oak, bottling at 46%, and not chill-filtering it. A 1970s bottling of the now legendary malt. Reading the review from whiskyfun below, you can expect some decent sherry input. One only.Other reviews... Colour: straw. Nose: this is completely different from the younger 12, much, much fruitier and even sort of sugary, on tinned pineapples, marshmallows and, well, ‘a newly opened box of Turkish delights’. Also a faint mouldiness and finally the same kind of smokiness as in the other 12 (used matches, smoked tea.) The two oldies converge after a good fifteen minutes but this one never gets as majestic as the ‘Original’. Very nice, still. Mouth: starts excellently, on various fruit jams (quinces, plums) and orange marmalade, with quite some spices coming to the front after that (cinnamon, white pepper.) It does not really get any more complex and stays on these notes after that, which isn’t a problem as it’s beautiful whisky. Maybe more ripe apples and juts a little mint. Finish: medium long, on ripe apples and cinnamon. Comments: once again, this is very good but a little less complex than the ‘Original’.

Crème de Cacao or chocolate liqueur is manufactured by maceration or percolation of cacao (cocoa)beans followed by distillation and sweetening. As with coffee, the best results are obtained by blending beans from different areas. It is available as either a colourless or brown liquid, the brown version often containing vanilla.
The history of cocoa and chocolate is well known to date back to the Aztecs of South America. The ‘plumed serpent’ is said to have bought it back from the ‘Lost Paradise.’ By consuming it one attained universal knowledge and wisdom. It came into vogue in Europe as a liqueur from the seventeenth century on, often being drunk through a thick layer of cream floating on the surface.

- Picon Amer Aperitif (1000ml)BELGIUM$69. 99Bottle$839.88 DozenABV: 21%A much desired cocktail ingredient but generally hard to find is Picon Amer, with distribution for a long time limited to France. Despite being produced since 1837, making it a bar standard in early cocktail guides, it remains elusive outside of Europe. The proprietary recipe has no doubt changed slightly over the years, as has the ABV. However, orange remains the dominant flavour. Quinine, cinchona and gentian are also known ingredients (not surprising as "Amer" translates to "bitter".) Although it was popularised as a key element in cocktails like the "Liberal", the "Brooklyn" and the "Picon Punch", Amer is traditionally enjoyed straight up or over ice as an aperitif. It reportedly has more bitterness than Picon Club and Picon Biere. While bartenders often cite alternatives, such as Amaros, cross tastings suggest nothing quite equates to the distinctive taste of Picon Amer - if you can find it! 21% Alc./Vol.

It is always a treat to taste Australia’s most famous wine, Penfolds’ Grange cuvee (the word Hermitage has been dropped because of legal issues). The 2001 Grange is one of the few vintages of this cuvee to be composed of 100% Shiraz (the others being 1951, 1952, 1963, 1999, and 2000). Aged 17 months in 100% American oak, and tipping the scales at 14.5% alcohol, the 2001 is undeniably one of the top examples of this wine. At this stage, it appears to eclipse the 1998 and 1996. Inky/blue/purple to the rim, with a stunning perfume of blueberries, blackberries, chocolate, graphite, and earth, it boasts good acidity, huge tannins, magnificent concentration, and a multilayered, textured mouthfeel. It is a big, but impeccably well-balanced Shiraz that should shed some of its structure and tannin over the next 4-5 years, and be at its best between 2010-2030+.

Very fine and profuse bead. On the nose refined yeast lees and baked bread aromas merge into some citrus shaded by dried honey and toast. Light, fresh and inviting the palate has flavours of baked bread and citrus which link up with some yeast lees characters over a background of subtle toast and cashew. Clean dry finish with a slight creaminess to the mouthfeel. Aftertaste of citrus, yeast lees, bready characters and faint notions of cashew and toast.
