    An Outstanding Example of Rutherglen Muscat! All Saints Estate is one of Australia's original wineries, established in 1864, by two enterprising Scots, George Sutherland Smith and John Banks. The winery has fortified material up to 80 years old which form the basis of many blends.

    Very deep walnut brown colour with deep olive, walnut hue - showing considerable bottle age. Superb nose of toffee, raisin, rancio, and raisin cake. Complex, mouthfilling, luscious palate. Flavours of orange marmalade, honey and raisins, filling the palate with the viscous texture of oil. Clean finish. Very long aftertaste of honey, raisins and toffee.

    'Cuesta' is a brand owned by the prestigious Sherry house, 'Lustau', produced and bottled from a selection of butts in the Lustau Bodega. The concept is to offer high quality sherries under a separate brand in markets where Lustau is already represented. Yet given the exceptional standard set by the Cuesta PX, one has to wonder whether they've shot themselves in the foot. Aged for a minimum of ten years, this superb solera is produced from sun dried Pedro Ximenez grapes.

    A seriously good example of PX and an absolute steal at this direct import price.

    Pours a viscous sienna brown colour with a deep green olive tinged hue. Potent scents of raisins, honey and Christmas cake engulfs the nostrils with hints of toffee, marmalade and walnut also present. Exceptionally concentrated and rich, a thick luscious dollop of raisin, honey and Christmas cake like flavours are draped across the palate with notions of marmalade, toffee and subtle dried nuts the back drop. Warm, mellow spirit with an oil like consistency to the mouthfeel. Long sweet, textured aftertaste. An ideal match with vanilla ice cream and Christmas pudding.

    The Victoria Topaque (aka Tokay) is a blend of younger material, from the vineyards of the Swan Hill winegrowing region. The Tokay style is a little lighter in flavour intensity when compared with the better known fortifieds such as Muscat and Tawny. For this reason it offers an interesting alternative dessert wine to round off a fine meal.

    Maturation in old oak casks for many years has changed this wine from bright red to the tawny hues it exhibits today. With this slow transformation in colour has come also a change in flavour to the complex, rich and satisfying characters of a mature tawny. This wine is blended from stocks of many vintages held at Bullers Rutherglen cellars. The aim of blending is to provide a balance between the ‘rancio’ characters of an old wine and the freshness of younger wines.

    Deep tawny/red colour with red/orange tints. On the nose there are developed toffee/rancio characters. The palate is complex with rich spicy fruit flavours. Hints of toffee. The middle palate is redolent of ripe fruit with chocolate/liquorice notes. 18% alcohol volume.

    The NV ‘Isabella’ Rare Tokay offers a deep brown color with the slightest edge of green. The nose is complex with earthy loam and girolle aromas giving way to treacle, toasted hazelnuts and toffee. The palate is unbelievably sweet and viscous but there is also jaw-clenching acidity that perfectly balances that extreme unctuousness. Very long in the finish with layers of nut and spices really developing for those that can actually wait before taking another sip of this gorgeous nectar.
    These fortified wines are all bottled to drink now. The extended solera aging process has rendered them relatively stable to changes and they can be stored for a good number of years.

    Drinks writer, David A.Embury stresses that a cocktail will never be any better than the quality of the cheapest ingredient in it, and hence he proselytizes constantly for the highest quality spirits, liqueurs, cordials, and modifiers (fresh squeezed lemons, etc.) It's a philosophy we completely agree with. At Nicks Wine Merchants, we take great pride in our amazing collection of the best spirits and liqueurs from all corners of the world. However, good quality Sweet Vermouth has remained elusive, that is until we discovered Antica Formula. Bearing the name of the Italian distiller, Antonio Carpano the man most famous for inventing Vermouth, this is arguably the finest example of the style available today - an artisan product, produced in tiny quantities from the very finest ingredients.

    To use a frank analogy - to go to the effort of making a great cocktail that requires sweet vermouth, without using Antica Formula is like wearing thongs with a tuxedo. Classic cocktails such as the Manhattan, Negroni, Bronx or Corpse Reviver will be taken to new heights, while its bitter-sweet balance and generous, silky mouthfeel, means it can also be consumed neat as an aperitif or with desserts.     Vermouth is the most widely used aperitif. The first known branded vermouth was “Carpano” produced at Turin, Italy in 1786. This was a rich, sweet red style. Rosso, or red vermouth is traditionally made using red wine. Today however, virtually all red vermouth is produced using white wine and blended with caramel to receive its distinctive red or amber colour. This dark, more richly flavoured Italian variety is imperative in many cocktails, but can be drunk alone, with cassis or as an aperitif, or mixed with lemonade, tonic or orange juice.

    Ingredients in Cinzano Rosso include marjoram, thyme, musk yarrow and an alpine herb called ‘Achillea Moscata.

    The house of Cocchi (pronounced co-key) is a Torino winery known for an array of still, sparkling and fortified wines. In 2011 as part of Cocchi's 120th birthday celebrations, they revived their house vermouth (originally produced in 1891), resulting in the first genuine Vermouth di Torino (protected designation of origin).

    Tasting notes: Copper / sienna brown colour with a bright copper hue. Moderate scents of cocoa, followed by ripe citrus (blood orange?) making for a nuanced jaffa-like profile. Mildly bitter herbal notes, including sarsaparilla keep the sweetness muted. Light to medium bodied and bitter-sweet, the palate offers flavours of citrus peel, spiced raisins and sarsaparilla. Concludes gently bitter with an aftertaste of quinine, citrus peel and cocoa.     First there was "Dry". Now there's "Extra Dry." Released in the year of Cocchi’s 130th anniversary, this classic-style vermouth is based on a Piedmontese recipe using local ingredients. The base wine is Cortese, the same grape used for Gavi DOCG. The Artemisia Absinthium is entirely harvested from the Piemonte mountains. The aromatic profile is characterized by Menta di Pancalieri, a local variety of peppermint, and lemon, traditionally used to garnish vermouth in the region. Other botanicals include angelica, coriander and cardamom for a fragrant and balanced character. This vermouth will enhance classic cocktails such as the Martini or the Bamboo (40ml Cocchi Extra Dry stirred with 40ml Dry sherry, garnished with lime zest or basil leaf), but it also shines when served with tonic water (elderflower tonic is the preferred choice) or simply sipped over ice.     The production of Vernaccia in the lower Valley of the Tirso in Sardinia, has its roots in very ancient times.  Maturation takes place in chestnut barrels which are oxygenated, and the wine develops a flor, a natural, native yeast growth which acts as a protective layer, while also imparting certain flavours and aromas to the wine. Sherry is also made with a similar production method, and the resulting wine is not unlike a full-bodied fino Sherry.
    Bright amber colour with rose gold tinged edges. The nose offers up a fino sherry like aromatic profile lead by an assortment of nuts including hazelnut and almonds with some salty saline like notes also present. Well rounded and silken in its feel the palate is laden with hazelnut, roasted almond and salted cashew flavours. Finishes bone dry with a salty hazelnut aftertaste.

    Manzanilla Sherries stay in their blending soleras for at least 3 years and often 5 or more, yet this remarkable amount of care and costly maturation doesn’t translate into higher prices. Unlike 'Grand Cru' Champagne for example, world class Manzanillas are accessible even to those on a modest income. Delagado Zuleta is the oldest family-run Bodega in Sanlúcar de Barrameda, established in 1744. The La Goya brand was created in 1918 when famous Flamenco dancer and Caple singer, Aurora Jauffre, allowed the winery to use her artistic name of 'La Goya' for their best Manzanilla sherry.

    Pale straw colour with greenish tinged edges and a watery hue. Nosing evokes aromas of flor yeast, a light nuttiness, bready characters and traces of sea spray as an end note. Light, very fine and fresh with a bone dry finish the palate is elegantly flavoured with dried nuts, flor yeast and a subtle oily breadiness. Dry, lightly salted finish with a medium to long salted nut and flor yeast aftertaste.

    A powerful, salty fino made from the Palimino grape. Only the most delicate soleras that remain under flor are bottled as fino. Bright deep straw colour with pale gold hue. Magnificent nose with aroma of nuts, flor yeast and salted roast almonds. The palate is a delight with very distinctive flavours that make this sherry a superb aperitif. The taste of salt hits the palate first and is beautifully integrated by background flavours of flor yeast and almonds. Excellent length, followed by a crisp acid finish and a very long salted almond aftertaste.

    Cool temperatures and relatively high humidity ensure the development of flor yeast cells which protect the underlying Palomino base wine. As the flor dies, the wine slowly develops into Amontillado.
    Golden tawny, caramel colour with olive green edge. Wonderful nose with aroma of walnut & hazelnut over a background of flor yeast. The palate is drier than the more commercial Amontillado styles with a distinct nut and salt flavour with walnut and almonds being most defined. Excellent depth and concentration of flavours with the saltiness continuing, followed by a strong flor yeast and hazelnut aftertaste.

    The new bottling of the extraordinary saga of old Manzanilla Pasada 10, 30, 59 and 90 is the NV La Bota de Manzanilla Pasada 110 Capataz Cabo, from a solera filled with wine from Sanlúcar, mostly from the Pago Miraflores, that averages 10 years under flor and a further five years topped up with wine taken from all or most of the barrels in the solera. This bottling has resulted in a very balanced wine with intensity, freshness, complexity and drinkability, very difficult attributes to combine. This is the most complex and nuanced of Manzanilla Pasada before turning into Amontillado. It has gobsmacking precision and purity, defined and clean, laser cut like a diamond. This could be the most elegant and precise of all the bottlings of this wine. Cuts like a knife? No, cuts like a scalpel! 3,200 bottles produced. It was bottled in February 2022. Drink 2022 - 2032.

    Editions 87, 88 and 89 are spirits, so we jump to the extraordinary NV La Bota de Manzanilla Pasada 90 Capataz Cabo, a wine that comes from a solera filled with wine from Sanlúcar, mostly from the Pago Miraflores, that averages ten years under flor and a further five years topped up. This is a blend of different casks, as it was done in editions 10, 30 and 59. These wines are bottled in 750-milliliter bottles, which is different from the single-cask ones, which are put in half-liter bottles. This is nuttier than the regular Manzanilla and even nuttier than the majority of Manzanilla Pasada, keeping the saline and marine character, hints of iodine and low tide, but also something floral and more ethereal. The palate is super expressive and explosive, pungent and nuanced, with very pure and long-lasting flavors. Really impressive. It should be bottled by the time this report comes out. This is truly impressive and should make a monumental wine. 2,500 bottles to be produced.

    Golden colour. Wonderfully intense and honeyed nose but not sweet, the wild grasses of the Fino, a salty intense richness on the nose, sour apricot, a Pandora’s box of aromas that you cannot disentangle sufficiently to describe. The intensity here is quite remarkable but it has not got to the stage where sherry can be almost too intense and too sour. This is smoky, so dry, precise and powerful, almost sweaty on the finish. Utterly saliva-provoking. Stunning length and complexity.

    Magnificent colour displaying an impenetrable inky black core with an equally dense hue. Still a touch reticent the nose slowly opens to reveal alluring liquorice and confectionary scents which meld into a mix of morello cherry, well integrated spirit and spice notes. Rich, luscious morello cherry and liquorice flavours are backed by rugged, muscly tannins which lend firmness and structure for the long haul. Marzipan, infusions of vanilla and spice ensue. Exceptionally intense and powerful it finishes long, dense and robust.

    The 2017 Vintage Port, not quite bottled when seen but the final blend, is a field blend (with typical grapes like Touriga Nacional, Touriga Francesca, Tinto Cão, Tinta Roriz and Tinta Barroca) aged for approximately 20 months in used French oak. It comes in with 98 grams of residual sugar, a little drier on paper than its Taylor sibling this year. Sappy and sensational in flavor and fruit, this seemingly has moderate tannins around the edges on first taste, velvety texture and a long finish. Despite the first impression of moderation, there is plenty of power here. As it got some aeration, it showed nothing but power and closed down fairly hard. The combination of great fruit and fine structure makes this a potentially great Fonseca, but right now it is obviously immature and not showing everything it has. I'd recommend some patience here.

    Picking began at Quinta do Panascal on September 6, the two other quintas in Pinhão that form the 2017 Fonseca Vintage Port, Cruzeiro and Santo António picked on 10 and 17 September respectively. One of the deepest, most opaque color amongst the new Port alumni, it has one of the most backward, almost recalcitrant noses that demands a lot of aeration. It gradually opens to reveal blackberry, melted tar, thyme, clove and violet aromas that are well defined, if maybe just missing the same breeding as Taylor’s. The palate is medium-bodied with supple tannin. This is fresh and detailed, a slightly more structured Fonseca than expected, quite strict at first with good grip and a lightly spiced, precise finish. Powerful and long on the aftertaste, you can feel this Fonseca 60 seconds after the wine has exited. It deserves 10-15 years in bottle. Excellent, but patience required. The most enigmatic of the 2017 Vintage Ports. Total production is 8,100 cases.

The wild, spirited finish shows cast iron, licorice snap and roasted alder elements, delivering a decidedly chewy feel. A big, old-school, throwback Port that will age at a glacial pace.     Already beautifully integrated, this is showing great purity and poise. It's open and in its first bloom of youth, with lovely aromatic red berry fruit and floral aromas, plus a touch of leafiness. It's soft and fleshy initially, seemingly not as big as its stablemate Taylor's - and not quite so deep in colour - though with dark chocolate concentration and mid-palate firmness. Lovely full, ripe tannins mass in the mouth, well defined, with fresh berry fruit remerging on the broad, expansive finish.

    Deepest purple. Wild, perfectly ripe small black berries like elderberry but also the lush sweetness of ripe blackberries plus a stony, rocky edge and just a touch charry. Lush, plush and exotic on the palate, deep-pile, compact, smooth tannins, just enough freshness to balance the rich generosity. The finish is beautifully dry-tasting, the tannins melting on the long finish.

    Fonseca was founded in 1822, when Manuel Pedro Guimaraens acquired control of the Fonseca & Monteiro Company through the purchase of the majority of the Fonseca holdings. As a condition of the sale of his shares to Guimaraens, the departing Fonseca stipulated that his name be retained with the brand.

    For political reasons, not long after this purchase, Manoel Pedro Guimaraens was forced to flee Portugal hidden in an empty port wine barrel. He settled in England, where his company remained based until 1927, when the headquarters of the firm returned to Portugal. There remains a remarkable continuity of winemaking within this prestigious house, with Guimaraen's great-great-great grand son, David Guimaraens now responsible for the wines.

    Semi translucent deep onion brown colour with onion brown olive green hue. The nose displays a superb refined old brandy spirit top note followed by rancio characters and complexing almond and hazelnut end notes. On the palate there’s flavours of dried raisins, Christmas cake and marzipan followed by some walnut and hazelnut characters with a strong rancio, old brandy spirit overlay. Dry finish with superb spirit integration and an exceptionally long nutty rancio, Christmas cake and marzipan aftertaste.

    Galway Pipe is named after Governor Sir Henry Galway, governor of South Australia from 1914 - 1920. Governor Galway was a frequent visitor to the Yalumba winery and on each visit he would conduct a tasting of the finest 'pipes' (500 litre Barrels) of port. Whichever pipe was most to his liking was inscribed with "Galway's Pipe" and the particular blend was used exclusively at Governor House.The many components of Galway Pipe have an average age of 12 years - the same average age the port has had since Galway's day. On the palate the wine has a high level of sweetness complemented by a relatively low pH and therefore a good level of fresh acidity. This results in a wine that has pronounced aged character but maintains a freshness and a long dry finish - avoiding any cloying character. Quality brandy spirit has added to the complexity on the palate and the wine has a high level of sweetness. 18.5% alcohol volume.

    Alfonso Oloroso Sherry is produced from the second pressing of Palomino grapes to allow for more structure and body. Following fermentation to roughly 11% alcohol the wine is fortified to 18% alcohol where it then enters the Alfonso solera. The barrels are only filled two thirds of the way to allow for intentional oxidation. The wine remains in barrel for an average time of 8 years as part of the traditional Solera system. Alfonso Oloroso is golden amber in colour, flavourful and structured on the palate, and features walnuts, vanilla, and spiced notes with a long and complex finish.

    From the producers of Tio Pepe, Elegante Fino Sherry is produced from the second pressing of Palomino grapes, grown in the chalky Albariza soils of Jerez. Following fermentation to roughly 11% alcohol the wine is fortified to 15.5% alcohol where it then enters the Elegante Fino solera. The humidity and cool temperature in the cellars then allow a layer of flor yeast to form on the surface of the wine, creating the wine's distinctive aroma and character. The wine remains in barrel for a minimum of 3 years as part of the traditional Solera system. Elegante fino is pale golden in colour, crisp and dry on the palate, and features floral pear aromas with a subtle refreshing finish.
