    If this wine auditioned for a role in the film adaptation of 'Remains of the Day' it would get the part in a heartbeat. It's just so exquisitely well mannered. Ultrafine tannin, perfectly ripened fruit, the line of acidity placed just so. Even the oak wraps smokily around the herb notes, as if to ensure that they don't appear too loud. This mid-weight cabernet would make the perfect butler to the finest of meals. Drink by 2034.

    Still family owned and operated, this small Coonawarra vineyard has been evolving over the past 40+ years and now involves their daughter, Emma who has taken on the winemaking role whilst Doug is looking after the viticultural side of things. The Estate consists of 33 hectares of vines planted on the prized Coonawarra Terra Rosa soils. Established in 1972, the first vintage in 1975 was greeted with considerable enthusiasm.

    Established by Captain Stentiford in 1893 the Laira Vineyards was purchased by Eric Brand and his wife Nancy in 1950. Throughout the 1950’s and 1960’s they sold their fruit to larger wineries before releasing the first Brand's Laira wine in 1966. Eric and his sons continued to produce wine at Brand’s Laira until 1994 when the McWilliam’s family purchased the property. Casella wines now own the vineyard.

Drifting through the nostrils are red to black currant and mulberry scents which intermingle with some subtle cedary tobacco and spicy bay leaf notes.     Lots of positive changes are afoot at Cape Mentelle, and I've a feeling it’s regaining its crown in the region. Nothing broken, just fine-tuning. A glass of this and all’s well. Fragrant with mulberries, cassis, nori and baking spices, the medium-bodied palate is superfine and long with textural tannins adding to the pleasure. Drink by 2038.

Deep garnet-purple colored, it prances out of the glass with gregarious notions of warm cassis, black cherries and wild blueberries, followed by emerging earth scents with a tobacco and garrigue undercurrent. Medium to full-bodied, gracefully styled and refreshing, the vibrant black and blue-fruited palate offers a wonderfully fine-grained texture and bags of energy, finishing long with a skip in its step. 5,107 cases were made.     The 2018 Cardinale Cabernet Sauvignon is rich and sumptuous right out of the gate. Soaring aromatics and silky tannins add finesse to the dark mountain fruit. It's hard to remember a vintage with this much sheer appeal in the early going. As always, Cardinale is a blend of choice hillside blocks. In 2018, the core is built around Stags Leap, Atlas Peak and St. Helena. Winemaker Chris Carpenter has backed off some of the overtness of the past years, and that is a huge benefit in allowing the wine to be more natural, more relaxed. The 2018 spent 21 months in 80-90% new oak, and clearly has the stuffing to handle the oak. It is one of the most refined Cardinales I can remember tasting. Drink 2026 - 2043.

    The 2018 Cabernet Sauvignon is based on a blend of 90% Cabernet Sauvignon and 10% Merlot that spent 22 months in 81% new French oak. It’s a wonderfully complete, borderline perfect wine that shows the class of this estate as well as the vintage, revealing a seamless, full-bodied style that carries lots of blackcurrant, graphite, lead pencil, and tobacco aromatics, a deep, layered mid-palate, ultra-fine tannins, and flawless balance. As with most of Chris’s 2018s, it’s a wine that builds slowly with time in the glass, offering a layered, singular character. It’s a gorgeous 2018 that can be drunk today with ample pleasure, but it will ideally be given 4-6 years of bottle age, at which point it should evolve gracefully for 30-40 years. Drink 2025 - 2066.

    Chateau Margaux has an impressive history of producing the best wines of Bordeaux, with winemaking on the property dating back to the 12th century. In the 1700’s Thomas Jefferson included Margaux in his list of the greatest four wines of Bordeaux, and this was later vindicated when Chateau Margaux was awarded First Growth status in the 1855 Classification.

    Traditional in style, Chateau Margaux is a wine of finesse and purity, but also one with richness and aromatic complexity, with an enviable history of cellaring potential.     The 1996 Chateau Margaux, a blend of 82% Cabernet Sauvignon, 12% Merlot, 4% Petit Verdot and 2% Cabernet Franc, must be a strong contender for wine of the vintage. It offers everything you desire from this First Growth. It is blessed with breathtaking delineation and freshness on the nose, understated at first and then blossoming with mineral-infused black fruit, hints of blueberry, crushed stone and violet. The palate is perfectly balanced with filigree tannin, perfect acidity, a wine where everything seems to be in its right place. Blackberry, crushed stone at the front of the mouth, just a touch of spice towards the finish that shows supreme control. This is a Margaux that seems to light up the senses. It was outstanding in its youth...something that has not changed one bit over the intervening two decades. This may well turn out to be the Left Bank pinnacle of the 1990s. Drink 2016 - 2050.

    While the 1996 Château Margaux has been closed and difficult to read for the past decade, it showed beautifully on this occasion, with its hallmark elegance and purity paired with a dense, powerful profile. Still youthfully ruby-hued with notes of pure crème de cassis, unsmoked tobacco, incense, and chocolate, it hits the palate with full-bodied richness, building yet seamless tannins, and an awesome finish. This is pure class as well as a quintessential Margaux! To be on the safe side, give bottles another 4-5 years and it’s going to keep for 50-75 years. Drink 2024 - 2099.

    Softly spoken, fine tannins, pencil lead and leather, with truffle, earth, campfire and spice. Long drawn out finish, achingly slow, crushed stone, tobacco and dried roses. As with the 2001, the generosity and beauty of the aromatics tells you that this is absolutely ready to drink - although in many ways it feels like it will last longer than the 2001, as the tannins are still holding everything in place. This got the audience award on the night, and no question it is a stunning wine that is still giving so much pleasure at 25 years old. The 1996 has really grown into itself - it was a late harvest at the time after a burst of rain at the end of September that they decided to wait through before picking, and were rewarded with beautifully ripe Cabernet that was high in dense tannins and a little surly at first, but that has turned into one of the greatest vintages of the 1990s (rivaled only by the 1990 itself in my opinion). 2% Cabernet Franc completes the blend, 100% new oak. Drink 2021 - 2040.

    Long considered one of the leading producers of McLaren Vale, Coriole was founded by the Lloyd family in 1967 who pioneered the planting of many Italian and French varieties. Long before it was fashionable Mark Lloyd developed vineyards of Sangiovese, Picpoul, Chenin Blanc and Nero d’Avola. Coriole’s Cabernet Sauvignon is sourced from estate vineyards that are approximately 30-40 years old. Soils are terra rossa – red, brown earth over limestone, which have proven to be ideal for growing cabernet in McLaren Vale. 
    Matured for 18 months in French oak. Magnificent inky black colour with a very deep black dark red hue. Elevated red to black currant and mulberry aromas meld into a vanillin cedar, tobacco and spicy bay leaf back drop. Rich red to black currant and mulberry fruits drive the medium to full bodied palate with some vanillin cedar, tobacco, earth and bay leaf characters scattered across the back half.     From the original 1987 plantings in Yallingup, with a bit from the Abbey Vale Vineyard. I finished school in 1987, which now seems like a different age. Far less rules, and a lot more stonewashed jeans. I kind of prefer, for the most part, the Cabernets from 2019 over 2018, as they seem a bit more ‘minerally’ and serious.
    Dark chocolate, peppermint tea, violet and black fruit, bay leaf, some spice and pencil oak. It’s dense and tight in gravelly tannin, a boysenberry crunch to acidity, tea and tobacco, plenty of purple and black fruit, and a tannic finish sporting crisp acidity, plenty of tannin, and excellent length.     A green-bell-pepper and Szechaun-pepper hit on the nose before broadening into more savoury aromas of leather, game meat and beef stock. This is front-loaded with umami and tastes as if there has been quite a bit of vigorous extraction. Prunes, blackcurrant extract in clove oil, pine resin through a loose mesh of dry (but –just– not drying) tannins. Some red and purple wine-gums fruitiness before a very minty-menthol finish that becomes more and more earthy and a little bitter. Just a little on the heavy, dour side in terms of flavour.     The 2020 Reserve Cabernet Sauvignon was just (one week ago at the time of writing) awarded "Best in Show" at the 2022 Decanter World Wine Awards. Not bad for a little winery in Western Australia's southwest. The wine is not little, though. It is birthed of a warm, low-yielding vintage that produced lushly fruited, abundantly tannic wines that are as powerful as they are attractive. Perhaps that extra swathe of tannins puts it in a different class, however the fruit remains pure and, although plentiful, is expertly wedged into every nook and cranny in the mouth. This is a superb wine. A brilliant example of Margaret River Cabernet in a great year. Drink 2022 - 2042.

This wine is not inexpensive but, it could easily be argued, it’s worth every cent, relative to its competitors, from here and abroad. In short, it’s a fantastic red wine, full-bodied and rock solid.     The 2018 vintage of the Cyril Henschke Cabernet Sauvignon marks the 38th release of this wine. The 3.2-hectare single vineyard from which the fruit hails is planted on a combination of sandy loam and clay, over a bedrock of mica schist. The 2018 Cyril Henschke Cabernet Sauvignon is a blend of 97% Cabernet Sauvignon, 2% Merlot and 1% Cabernet Franc, matured in a combination of new (10%) and seasoned (the balance) French oak hogsheads for 18 months prior to blending and bottling. On the nose, tobacco leaf, blackberry, resin/tar, salted licorice and vanilla pod rise to the fore. In the mouth, the wine is fluid, pretty and composed, with a restrained outlay of flavors across the long finish. I had thought initially that the wine displayed aromatically as quite green; a glance at the numbers told me this might be unlikely (14.5% alcohol, pH 3.56, total acidity 6.5 gram per liter); however, there are certainly inflections in the mouth that support this notion. This is very elegant. The cassis is revealed as the wine opens. Give it time. As an avid proponent of the screw-cap closure, it is important to note that, upon opening, all wines in this release looked cramped and closed. With time in the glass (and no small amount of vigorous swirling), the wines opened up beautifully. A decant prior to drinking is highly recommended, especially if you are going to be drinking them early (i.e., anytime from 2023 - 2033).

    The 40th anniversary of the first vintage of this wine, named after Stephen Henschke's father, fourth-generation winemaker Cyril, who first planted this Cabernet Sauvignon vineyard in 1969. And in warmer years, like 2018, the 'solar panel' slopes of this cooler site shows what fully ripened Eden Valley Cabernet can offer. Rich purple and inky blue fruits soar from the glass: cassis, mulberry, violets and an almost pine forest-like ozone freshness that brings lift and clarity to the sumptuous palate. Beautiful length, elegance and purity, with smooth graphite-like tannins and vibrant acidity. With no 2017 produced, this is worth the wait; a fitting toast to Cyril. Drink 2023 - 2040.

Sailing out of the glass is a mix of ripe blackcurrant, subtle red liquorice and tobacco scents followed by dried herbs and spicy vanillin cedar. Medium to full in body the palate is loaded with rich blackcurrant fruits which overlay a tobacco, dried herb, dusty earth, black olive and spicy cedar back drop. A masculine tannin structure lending some firmness to the long deeply fruited finish.

He vowed to reunite the various parcels of land, along with the historic Chateau, and restore the reputation Inglenook enjoyed earlier in its life. With input from esteemed Bordeaux consultant Stephane Derenoncourt, and Philippe Bascaules (Chateau Margaux), Inglenook is now firmly one of the leading properties in Napa Valley.

    Inglenook’s flagship wine the Rubicon is made from a blend of 86% Cabernet Sauvignon, 10% Merlot and 4% Cabernet Franc. Impenetrable inky black in colour with a deep bright dark red black tinged hue. Ripe blackcurrant and liquorice scents are sent sailing out of the glass followed by hints of blueberry, vanillin cedar, subtle dark chocolate, traces of scorched earth and spicy dried herbs. Full in body yet possessing plenty of the estates hallmark freshness, rich blackcurrant, dark to black cherry and liquorice fruits adorn the palate, carried by a polished yet firm matrix of tannins. Tightly knit finish with elements of vanillin cedar, subtle dusty earth, faint black olive and spice also evident. Concludes long and very refined.

    The 2017 Cabernet Sauvignon Rubicon is another wine that has turned out very well. In this vintage, the Cabernet Sauvignon and Rubicon aren't that materially different. Red fruit, cedar, sweet pipe tobacco, menthol and licorice all develop in the glass. Here, too, I am quite impressed with the wine's freshness.

    The proprietary red, the 2014 Rubicon (96% Cabernet Sauvignon and the rest Merlot and Petit Verdot) has a saturated black/purple color and a nose of blackberry and cassis with some camphor and charcoal. Chewy, rich and full-bodied, with exceptional precision and personality, this is a stunningly delicious and complex wine with a good 25-30 years of further potential. It is the antithesis of the rustic, somewhat coarse reds that were made under the Rubicon moniker when Francis Ford Coppola first acquired the Inglenook estate. Kudos to him for making dramatic improvements. Approachable already, this wine won’t hit its stride for another decade and will last 30 or more years.

    Inglenook's 2014 Cabernet Sauvignon Rubicon is dark and quite potent. Inky blue/purplish fruit, spice, chocolate, menthol, licorice and plum give the wine its deep, unctuous personality. Stylistically, the Rubicon is darker, inkier and more voluptuous than the straight Cabernet. Soft tannins and silky contours add to the wine's considerable appeal.

Cabernet Sauvignon came early to Australia around 1831, forming part of James Busby's collection. Canes were imported from Chateau Lafite by Paul de Castella for his Lilydale vineyard in the 1940s. Today, several superstar Aussie Cabernets have become international wine icons including Mount Mary, Cullen and Moss Wood. Low yielding, fully ripened fruit is vital if one wishes to capture Cabernet's classic blackcurrant flavour and avoid the green, vegetal / leafy / methoxypyrazine characteristics that come from over-cropped, under-ripe fruit. The best examples are austere and structured in youth, with a core of fruit emerging after extended cellaring. They can be exceptionally long lived.

Cooler climates like the Yarra Valley, Coonawarra and Margaret River vie for the title of Australia’s leading Cabernet regions. However, several less obvious South Australian efforts rank among the country's most prized, including the exuberant Penfolds Bin 707. The reality is Cabernet performs well in almost all regions, and retains its popularity as a contrast to Shiraz, with a more food-focused approach. Also look out for South American Cabernets, particularly those from Argentina and Chile. Of course, it goes without saying, Bordeaux remains the inspiration for them all.
