    At $400 less than the official cask strength bottling, cask #10493 delivers a cracking value in venerable Islay. Out of a single bourbon barrel yielding 171 bottles it's said to be "big, bold and clean", "A bit of a poor man's Port Ellen." (whiskybase.com). Serge Valentin from whiskyfun tasted a sister cask (review below) and was surprised to find the hogshead was remarkably sherry-like. This should be similar. Only a few bottles imported. 54.3% Alc./Vol. Non chill filtered.

    Other reviews... Nose: Bottled was left to evolve after opening it for 2+ months. Nice & Rounded. Fresh green cardamoms, aniseed & bonfire. Dried lemon peels, bay leaves & sage. Iodine & some sea spray. Reminds me of a young Kilchoman, the nose. Fresh. Some white pepper, kafir lime, white asparagus. Palate: A good sting. Pepper. Lime. Peat. Luscious. A bit of cool mint. Honestly I tried this whisky 5-6 times and every time I feel its a bit cooler when it touches the palate. Wonderful this. Sooty, ashy, and quite farmy. Lot of freshness. A bit of poor man’s Port Ellen. Rhubarb. Rock salt. Beautiful. A proper Laphroaig bourbon cask. Heavy. Not elegant. Not sophisticated. But enjoyable Laphroaig. 88-89 should be the score but this is of the good modern Laphroaig I have tried. Some yellow fruits but not too much. Finish: Sweet peat, salty, rhubarb, rock salt and kafir lime all the way but with a stinging pepperish note. A big, bold, but clean Laphroaig. - whiskybase.com

    [Sister cask #3372 tasted / notes indicative only] This one's very dark for an ex-BB malt, but as we used to say in math (and malt) class, there are more exceptions than rules. Colour: full gold with copper hues. Nose: charcoal at first, old fireplace, guns, then meats and dried fish. Beef jerky, soot, coal dust, waxed papers, cigars, Aperol Spritz (apologies), eucalyptus wood… I find it curiously thick and 'sherried' for a bourbon hogshead, but we shan't complain as this one too is 'vastly superior'. With water: this kind of nutty and salty style that's rather to be found in deep-sherried Laphroaigs. Cherry liqueur, kirschwasser… Seriously, loving this, but what happened? Mouth (neat): beautifully weird, with some 7-up, lemonade, even Schweppes, then seawater, oysters, tobacco, liquorice wood… It is certainly not your average ex-bourbon Laphroaig. With water: no, this cannot be. If this was indeed a 'simple' bourbon cask, I'll eat a whole family-size Hawaiian pizza from Domino's, but I'll need proof. Finish: long, extremely good, with black raisins and loads of smoke. Comments: am I losing my mind? Or is someone gently pulling my leg? Ex-bourbon, really? 90 points - whiskyfun.com

    Mr. Symington clearly likes his malts matured in First Fill Oloroso butts. Given Auchentoshan's slightly lighter triple distilled spirit, we reckon this will be a 'cask driven' malt (read sherry bomb). Cask No.4 had an outturn of 689 bottles at 55.6% Alc./.Vol. Non chill filtered.

    This is the first time we've seen Edradour included in Signatory's black-tinned cask strength series. To be precise, it's actually part of a range under the "Symington's Choice" sub-label, celebrating 35 years since the founding of Signatory Vintage in 1988 by Andrew Symington. Needless to say, the direct import pricing compares extremely well against big-brand sherry bombs. A small number have landed, decanted from a single first-fill oloroso sherry butt (cask #3151). The yield was 656 bottles at 56.2% Alc./Vol. Non chill filtered.

    Other reviews... A beautifully balanced sherry bomb. It is full of sweet woody notes, spices, sherry and dried fruit. The only flaw is that the alcohol is too strong. However, it is not at all evident in the aroma or taste, but only in the aftertaste. - whiskybase.com

    Quite a 'dirty' or 'farmyardy' expression of Ledaig according to some tasters and so a bottling that may not suit everyone's tastes, but then, taking coastal flavours to an extreme is what this make is all about. If you like Longrow, Lediag should be on your short list. Matured in a first-fill sherry butt, cask #900158 had an outturn of 593 bottles. 54.1% Alc./Vol. Non chill filtered.

    ...The whisky has a lot of power, which is never unpleasant. The dirty smoke becomes increasingly "cleaner" in the finish and becomes lingering campfire smoke that lingers on the cheeks with oak spice and a slight sweetness. I personally like it very much. - whiskybase.com

    Signatory’s founder, Andrew Symington was working at the prestigious Prestonfield House Hotel when he bought his first cask of whisky: a 1968 Glenlivet. Today, his good taste has transpired as a series in itself, highlighting his favourite casks from the vast selection housed in the enormous warehouses at Edradour in Pitlochry. The first Symington’s Choice selections were released in 2023 with a focus on heavily sherried single casks aged between 20-35 years old. It's these whiskies that (mostly) make up the current shipment. Subsequent releases will be a little younger, generally 15-20 years old, though still predominantly from first fill sherry casks. Apart from the expected quality, there is a 'wow factor' to the prices that makes each and every one worthy of consideration.

    Obviously matured in a first-fill Oloroso sherry butt, you'd have to go back to the 1980s to discover Macallans as deep and dark as this. We have a small number of bottles from cask 12/3. Serge Valentin from whiskyfun tasted sister cask 12/4 and was impressed. Expections would be similar here. 649 bottles produced. 54.8% Alc./vol. Non chill filtered.

    Notes from a sister cask 12/4... The whisky is almost as dark as the label! Here is a brand new range from Signatory, very high-end, with some pretty extraordinary names like Laphroaig, Bowmore, and indeed, Macallan. The prices seem high, but I'm sure it's worth it and not just marketing hype. At least it's not another NAS with a fancy name and story, straight from ChatGPT or Wikipedia. Colour: coffee. Nose: a pretty wonderful dry sherry, full of Havana tobacco, prunes, dried dates, old walnuts, and hoisin sauce, with an extraordinary fermentary and even slightly acetic side (old balsamic vinegar). We're a bit in the territory of a very old Ténarèze, or of the best of the Macallan 'Gran Reserva' from back in the day. With water: it becomes rather more elegant, almost slightly austere, with a very "grand chocolate from a great house" side. I always find it amusing to hear my Swiss, Belgian, Italian, Spanish or French friends claim that they make the best chocolates in the world. What if it were the Scots, perhaps even Scots from Pitlochry? Mouth (neat): creamy, goes down easily! Well, almost, there's still a lot of thickness, a syrupy texture, liquorice and pipe tobacco, a bit of tar, lots of dried prunes, Corinth raisins, precious molasses (if it existed), then peppermint and very chocolatey toffee... With water: it peacocks and goes fractal, with lots of spices, dried fruits, organic matter, and various old liqueurs. Alright, let's finish it, we don't have all day... Finish: long as a day without bread and indeed, rather on very damp pumpernickel, chocolate, and competition fruitcake (we have the winner). Comments: a real hit, after Signatory's sublime range of '30th Anniversary Bottlings' of three or five years ago. Come on, let's store it in its bottle for twenty more years to try to reach 95/100, then we'll talk about it again. What's sure is that this is Macallan as in 'Macallan', that is to say In compliance with what is written on the label of the bottle that follows... 93 points - whiskyfun.com

    You don't often see Glen Keith pop up, even from independents. One of the younger distilleries in Scotland, having only been founded in 1957 by the Chivas Brothers, in 2000 the distillery was mothballed but fired up again thirteen years later. Finding mature stocks like this is a rarity. Matured in a second fill oloroso sherry butt, Cask No.7 yielded 635 bottles at a natural strength of 58% alc./vol. Non chill filtered.

    Other reviews... The second fill oloroso butt used to mature this Glen Keith did a hell of a job. Men! Kicks off with a fine dose of oranges and slight sour raspberries. But there’s more of those orange fruits, like peaches and apricots, they really stand out. An excellent balance between distillate and wood. Added in a nice fudgey sweetness, some tobacco and obligatory spices. Good neat, better with a teaspoon of water. I enjoyed this Glen Keith very mucho - recommended! - whiskybase.com

    You won't be arguing about the price/age ratio here! Symington has chosen a solid age statement but it will need time to breath to get beyond basic woody notes. Says one taster, "Of course it’s all sherry. I find it rather old school though. As a sherry bomb I like it! Dark berries and rich leather. Cocoa powder." (whiskybase.com). 612 bottles were filled from a first-fill sherry butt at 52.4% Alc./Vol. Non chill filtered.

    A plump and juicy GSM blend.

    A blend of 77% Grenache, 19% Shiraz and 4% Mourvedre. Dark red core with black shaded edges and a red hue. Black raspberry, liquorice and dark cherry aromas leap out of the glass followed by some scorched earth and peppered dried herb notes. Rich and juicy, the mid weighted palate is awash with black raspberry, liquorice and ripe dark cherry fruits. Opulently textured, it sees notions of scorched earth, subtle dried herbs and pepper unfold across the back half. Slightly chewy tannins lead into a long plump finish.

    The pale hue in the glass hints at the grenache dominance (77%), which came off 40-year-old vines on the home Bracken vineyard in Blewitt Springs, with the shiraz (19%) and mataro (4%) from the Wait vineyard. Those smaller components structure and add a little brood and dried herb, but they are backup singers to the redcurrant, cherry, wild raspberry, rose petal and cranberry of the main act. It’s a good arrangement, with upfront appeal and a mineral-inflected structure on a medium-framed but impactful wine. Drink by 2028.

    Totally opaque black dark red colour with a vibrant dark red hue. The wonderfully fragrant nose is blessed with gorgeous dark raspberry, violet, red plum, red liquorice, dried herb, earth and delicate spicy incense like aromas. Bright and juicy, the delicious mid weighted palate is decorated with dark raspberry, red liquorice and blueberry fruits. Earthy incense like infusions and spice add further interest. Vibrant acidity and slightly chalky tannins lead into a long energetic finish that has a light tang to it.

    Pitch black core with a deep dark red black tinged hue. Intense black cherry, blackberry and liquorice aromas infused with blackpepper sail out of the glass followed by some toasty cedar, earth and meaty clove like notes. Rich, dense and concentrated a tidal wave of blackberry, liquorice and black cherry fruits engulf the mouth. Scorched earth, vanillin cedar and peppered dried meat elements ensue. Counterpointing the opulence of fruit is a youthful freshness. A polished yet sculptured tannin structure imparts some firmness onto the long deeply fruited conclusion.

    Sourced from blocks planted by Trevor Mast in the 1990s. Maturation in French barriques (40% new) for 15 months. It is a constant that Talus is immediately understated, elegant and yet it builds and builds in the glass. Lifted florals, acacia, sage, black pepper mix with dark berries and woodsy scented oak. The pepper factor, while supple and fresh, runs long and lingering. Ditto fine tannins. Very MLG. Drink by 2036.

    Vividly fragrant, featuring notes of black pepper and crushed dark fruit. It has a more pronounced tannin structure than is characteristic of Langi’s single vineyards. Tightly wound, it displays subtle blue fruit character and an austere, compact finish. While drinkable now, it will become significantly more expressive with some bottle age. Drink from 2025.     A brilliant and bright Shiraz shows the elegance and sleek style of this region. Spicy cherry and plummy characters emerge on the nose with just a little black pepper character. The super fine and elegantly structured palate is the highlight. The spicy fruits with their lightly dried herb and bright berry characters are immediately captivating. Fine chalky tannins and oak, of which 40% was new, strike a perfect supporting balance. Terrific wine. Drink 2024-2037.

    A gorgeously finessed and beautifully structured Cabernet that finishes long and eloquent.

    A joint venture between Heathcote winemakers and friends, Tobias Ansted and Simon Osicka, this Cabernet Sauvignon comes from the original Balgownie plantings at Maiden Gully, Bendigo planted in 1970. Maturation taking place in tight grained French Oak (about 25% new).
    Totally opaque black dark red core with a dark red hue. Wonderfully refined nose with red to black currant and mulberry scents show ample intensity out of the glass followed by some cedary tobacco, dark chocolate, subtle earthy black olive and bay leaf notes. Rich yet gorgeously finessed, the mid weighted palate is graced with red to black currant and mulberry fruits. Spicy cedar, tobacco, dusty earth, traces of dark chocolate and bay leaf elements lend further complexity. Seamlessly integrated tannin structure with no shortage of power and freshness to the long eloquent finish.

    Sadly now destined for development, the original Balgownie vineyard planted by Stuart Anderson in '70 made another stunning wine in '24 in the hands of Heathcote winemakers Tobias Ansted, former Balgownie winemaker, and Simon Osicka. Gives Bendigo cabernet some TLC which sets it soaring. Revels in the kind of complexity that old vines bring with deep, concentrated black fruits with a full spectrum of cabernet characters: cassis, blackberry, loganberry, dark olive, tilled earth, leaf, clove and herbs balanced perfectly in fine tannins laid out against a gentle cedary oak background. Gets the pulse racing, it's that good. A wine for posterity. Drink by 2040.

    Does what the label says. What an awesome opportunity to see this significant site through another lens. And such a worthy one. This is a complete schooling in cabernet.
    It’s quite the feat to do depth of flavour, concentration, and then silky drawl, freshness, finesse and persistence. A coolness to this wine and then the onslaught of dark cherry, ripe plum, fig and date, brambles and dried leaves, choc mint and dried herbs, all with the volume up, and then vacuum pack it all into a svelte, muscular and fine frame. Silky texture, a firmness and pliancy here – this feel is superb above so much on show here. This is a wine for hearty drinking, huge enjoyment, and yet there’s so much contemplation to lean into here. My word. Drink 2025-2040.

    First released in 1995 to celebrate the company's 200th birthday, José Cuervo Reserva de la Familia pioneered the category of extended age Tequila. Matured for a minimum of two years in a combination of American and French oak barrels, some of the reserve components are up to thirty years old. The tequila itself which has been described as "rich and brandy-like" doesn't change much from year to year. And just as consistency has become its hallmark, so too has been its high praise. What does change annually is the packaging, with a different Mexican artist making each release a collector’s item. 

    In 2023 the box has been designed by artists Rolando Flores and Gabriel Cázares of the Mexico-based Tercerunquinto Collective. The custom art titled “Structuring a Landscape”, features a geometric abstraction of the landscape of Jalisco.

    [2017 edition tasted from a 20ml sample] Pale copper gold. The bouquet combines blanco-like vibrancy with the kind of depth you'd expect from XO cognac - brine, charred capsicum, smoldering eucalyptus, beeswax, vanilla and menthol... with air contact, it also presents a drier, woody aspect including cigar box, cedar and white pepper. Likewise the silky delivery matches sappy agave and butter menthol lozenge-like flavours against drying astringency. It's delicate and somewhat fleeting through the finish, trailing off with black tea, potpourri, white pepper, hints of grilled pineapple, vanilla and trace beeswax. The overall effect strikes a fine balance between young and old. [40% Alc./Vol. tasted]

    Brilliant very pale straw colour with a watery hue. Pear and red apple scents sail out of the glass followed by whiffs of light musk and wet stone. Delicious pear and red apple fruits are layered across the palate with a river stone like feel. Delicate infusions of musk and stony mineral elements lie underneath. Brisk acidity with a long refreshing finish.

    Rich, voluptuously textured and flamboyant.

    Fruit was sourced from McLaren Vale and Langhorne Creek with maturation taking place in 100% American oak of which 40% was new and the rest one year old.
    Impenetrable inky black heart with a deep dark red black tinged hue. Heady liquorice and dark plum scents engulf the nostrils followed by trailing notes of dark chocolate, vanillin oak and spicy fennel. The rich, voluptuously textured palate is flooded with plush dark plum, liquorice and blackberry fruits which are interwoven with toasty vanillin oak, dark chocolate and spicy fennel characters.     Supple and moreish, this is seductive Yarra Valley Pinot at it’s best.

    Situated in the picturesque Yarra Valley, Coldstream Hills was established in 1985 by James and Suzanne Halliday. The fruit for this wine was sourced from low yielding vineyards in the Lower and Upper Yarra Valley with a variety of handling and fermentation techniques, including the use of whole bunches employed. Maturation took place in a combination of seasoned and new French oak for a period of 8 months.
    Dark red core with black shaded edges and a red to dark red hue. Perfumed like nose with aromas of violet, dark cherry, strawberry and anise followed by hints of spicy cedar, dried herbs and forest floor. Moreish red to dark cherry, strawberry and subtle anise flavours are supplely draped across the palate. Spicy vanillin cedar, delicate dried herb infusions and forest floor elements extend across the back half. Expansive and possessing more than ample power, it has velvet smooth tannins and a long seductive finish.

That it's so well priced is the icing on the cake. Drink by 2031.

    The quirky name has some context to it, the wine sourced from two vineyards in different regions, one in Kersbrook (Adelaide Hills) and the other in Blewitt Springs (McLaren Vale), both of which sit under a larger official appellation known as the Adelaide zone. The name also refers to winemaker Ben Riggs’s love of the Montepulciano in Italy’s Abruzzo region, and his desire to create a worthy South Australian reflection. That he has – a vibrant wine nose to tail, of sun-kissed violet flowers with an underlayer of dusty cellars, toast and blackberry conserve, the palate echoing its aromatics, rich yet balanced, an exotic spicy feel threaded within the flavour profile. My advice is to drink with food now, or wait another six to 12 months for the wine to open up and soften a little. Drink by 2028.

The name is derived from the Whitlaw Hills which are not far from the distillery. Elsewhere selling for around $125 in Australia, the price is an absolute steal for quality HP! Matured in re-char barrels for the full ten years before bottling at 46% Alc./Vol.

    Other reviews... Yes, it needs a little time to get out of the rut, then there are a lot more red fruits; the HP orange is also there. Plus mandarin and a dash of lemon. I'm imagining heather smoke knowing that it's an HP... but the style is unmistakably distinctive. Typical sherry spices and aromas, albeit rather subliminal, but an Italian herb garden is there.     Located 70km south of Normandy, Manoir du Kinkiz produce cider from twenty one varieties of apples grown on 30ha of orchards just outside Quimper, a commune in Brittany. This is a fantastic introduction to 'serious' cider, as it displays the characteristics that distinguish traditional, quality French cider from Australian commercial cider while remaining approachable. The style is semi-sweet, somewhat astringent, and some find it has a 'funky' character comparable to some blue cheese. 5% Alc./Vol.

A beautiful clear amber color, this pearling bubbly beaut from Manoir Kinkiz is footy on the nose with notes of barnyard and wet hay, but it’s also full of overripe apple and leather aromas.     Food matches: Norman gastronomes have long known cider works brilliantly with a surprising variety of dishes. Consider the classic match of roast pork with crackling and apple sauce, braised pork or rabbit deglazed with cider or roast duck served with red cabbage and apples. Goats cheeses, especially chevre styles work particularly well with cider. Slightly sweeter styles of cider, such as those produced from pears will accompany desserts like apple pie, tarte tartin, or quince flavoured ice cream.

    Sourced from a first-fill Oloroso sherry butt and released in celebration of Signatory`s 35th birthday, this 32-year-old promises an HP of a very high standard, balanced and complex, combining delicate oranges and dark chocolate complementing the sooty peat. One taster commented, "It's unbelievable how much smoke a Highland Park can still have after so long in the barrel. I would have blindly put it on Islay. Impressive dram!" (whiskybase.com). Pay nearly twice the price for the official 30 year old! The yield was 557 bottles at 53.4% Alc./vol. Non chill filtered. Extremely limited.

    Other reviews... To my generation of whisky enthusiasts, so the youngsters, right, Signatory was and remains a very seminal bottler. The whisky world would be completely different without Signatory, perhaps still full of caramel and heavily cold-filtered uisge beatha. We owe a lot to Andrew and Signatory. Colour: deep gold. Nose: starts with a little cider or Sauternes-sulphur, with some hops, leaves, walnut skins, some gunpowder, then we have oil paint, clay, mushrooms, mustard à l'ancienne, pickled gherkins… I have to say this is a little intriguing and rather very Andalusian. Let's see how it evolves… With water:  cigars, cedarwood, figs and forgotten vegetable gratin. Parsnip, swede, cardoon… Mouth (neat): walnuts roasted in honey sauce and quite some gunpowder again. Chocolate, white truffles, touch of pointed cabbage and bok choy. Some demerara sugar. With water: awesome salted praline and nougat, earth, walnut liqueur, amaro… Finish: long and rather all on walnut wine. A little mustard, grapefruit, roasted chestnuts and pecans in the aftertaste. Comment: there is a commendable ruggedness in this old Highland Park. It seems like a real sherry cask, which held actual sherry, actually intended for human consumption.     This family cidery was established in 1943 and is now run by third generation family members. Using organically grown, fresh local apples, their 'Dry' style is described as having a nice roundness, nice acidity and slight bitterness. Refreshing on its own or match it with savoury dishes such as meats and savoury pancakes. Silver medalist in 2009 and Gold Medal in 2010 and 2011 at the general Agricole de Paris competition. 4.5% Alc./Vol.

    For those new to French cider or just looking for something different from the sweeter, mass-produced ciders common in Australia, Manoir Kinkiz 'Fouesnant' is the place to start. Older apple varieties are harvested from orchards located in Pays Fousnantais. Pressing is done when the fruit is fully ripe, from late September to December. Fermentation is slow, ending with natural fermentation in the bottle for about two and a half months, infusing a fine bubble. Recognised for its pleasant bitterness, roundness and persistent aromas of fresh apple, fresh butter and hazelnut, this 'semi-dry' expression is most commonly enjoyed as an aperitif or with light snacks. 5% Alc./Vol.

Initially sweet taste of candy apples, with moderate acidity; soon to be replaced with a strong tannic bite of apple skins and cores. Finish is sweetish again, but of fainter apples, before another bout of tannins hit in the aftertaste, combined with apples and orchard leaves. A bit over-carbonated, otherwise extremely fruity, very moderately acidic and clean. No farmyard funk in this one. - ciderexpert.com

    Rich and plush with velvety tannins and a long juicy finish that has ample freshness.

    Aged for 18 months in American oak. Pitch black in colour with a deep dark red black tinged hue. Ripe black cherry, dark plum and liquorice aromas are married to toasty vanillin oak, earthy fennel and spicy pepper notes. Rich and plush, the full bodied palate is awash with dark plum, liquorice and black cherry fruits. Excellent concentration with notions of toasty vanillin oak, earthy fennel and pepper lying underneath. Velvety tannins with a long juicy finish that has ample freshness.
    Drink over the next 5-6 years.

    This is the other wine in the new range of Old Vines and what a cracker it is. After gentle basket pressing, this wine went to American oak barrels for a year and a half. It has given the final wine a sleek, plush and generous nature which works wonderfully well. A deep red hue, there is real concentration here. We have notes of raspberries, truffles, plums, black fruits, leather and cocoa powder. A wine of power, focus and concentration, this really needs a few years in the cellar before opening (not that you won’t enjoy it earlier if patience is not your thing). After that, it will drink beautifully for the following ten to twelve years. A very long finish with fine, silky tannins, the palate sees the emergence of notes of soy and beef stock. Terrific stuff and in comparison, with some prestige releases from the region, brilliant value.
