Roselle is the common name for Hibiscus Sabdariffa. The bright red calyx at the base of its bloom adds colour and flavour to Maidenii’s new bitter. These vibrant colours and flavour are blended with 23 other botanicals including Australian natives, such as Strawberry Gum, Tasmanian pepper berry and Salt Bush. The bitterness comes from various roots, in particular gentian from Aubrac in the centre of France.
Roselle’s wine-base is Heathcote-grown Nebbiolo and Mourvèdre fermented as rosé, which is fortified with the unique blend of botanical tinctures. Sugars are entirely residual from the grapes, at around 100 g/l. The dryer, aperitivo style of bitter produced lends itself to a variety of pours. Serve neat as a digestif, with soda or try a local twist on the Negroni. 22% Alc./Vol.

Looking like small grapefruits, the Asian Yuzu fruit has been the inspiration for several Japanese gins, aiming to retain its delicious sweet, sour and bitter flavours in harmony with the freshness of juniper. This is not the first time Four Pillars have experimented with the fruit. A limited edition collaborative bottling was launched in 2017. It was followed in 2019 with the Distiller Series 'Changing Seasons Gin' made with help from Japan's Kyoto Distillery. As of 2022, Four Pillars are including 'Fresh Yuzu Gin' as a permanent addition to their core range.
Mountain Yuzu, from the nearby Ovens Valley supply the Healesville-based distillery with fresh yuzus. Describing the flavour of the new gin, Co-founder and Distiller Cam Mackenzie comments, “Yuzu brings amazing aromatics that are a mix of lemon, mandarin, cumquat and grapefruit – all bright and fresh citrus notes – while the addition of finger lime adds some deeper citrus character. We’ve also learnt a lot (from the best) in our adventures making gin with Japanese friends, so in our take on Yuzu gin, we’ve used ginger, turmeric and sencha genmaicha, a Japanese green tea with roasted brown rice, for depth of flavour. A canvas of strong pine-needle juniper and a bit of lemon myrtle add a touch of lemon curd.”
Drink it however you like to drink your favourite gin, but it’s at its best in a Highball with plenty of ice, soda or light tonic and any kind of citrus garnish (best of all would be fresh yuzu, if you can find it!) 41.8% Alc./Vol.

This is the new version of the 21 year old classic from Appleton, arriving in an updated bottle and box presentation. First launched in 1996 and named after the heart of Jamaica, the Nassau Valley, the reimagined expression reveals "...a floral scent that develops into a unique mature nutty bouquet, with notes of vanilla, orange peel, nutmeg, almond, coffee and cocoa for a long, dry and luscious finish."
The blend of rare and hand-selected pot and column still rums have all been tropically aged for a minimum of 21 years. Jamaica’s Nassau Valley, 400 ft above sea level, surrounded by limestone hills ranging up to 2,000 ft, provides beautifully filtered waters to the Estate-harvested cane.
“Jamaica is a place unlike anywhere else in the world,” notes Master Blender, Joy Spence. “With Appleton Estate 21 Year Old Nassau Valley Casks, we wanted to celebrate our home in an elevated, modern way with a new sleek, sophisticated version...”
Rooted in traditions that go past the American Revolution, not much has changed at Appleton since the 18th century: water is still sourced from a spring on the estate, small batch pot distillation remains the norm, done on-site using a proprietary yeast strain propagated from the estate-grown cane. Here there is no reductive funk as there is a lovely purity to the super-fresh and quite floral nose of red currants, spice and newly turned earth. There is an almost painful intensity to the highly energetic and tautly muscular broad-shouldered flavors that already offer impressive depth and sneaky good length. Despite having reasonable size and weight, this is not an especially big Bonnes Mares though it is one allied with plenty of power and punch. Drink 2036+.

The 2019 Bonnes-Mares Grand Cru comes from two parcels and contains 100% whole-bunch fruit. That stem addition is noticeable on the nose but combines well with the broody black fruit, white pepper and wild mint aromas. The palate is medium-bodied with fine definition, nice focus and a sappy finish that lacks a little persistence and grip. Just needs to show more sophistication. Drink 2024 - 2042.

100% whole bunch vinification. Pretty pink purple, no especial depth, and doesn’t need it. Another sublime bouquet coupling the floral with the purity of clean berry fruit. Leaner and tenser than the Charmes. Excellent fruit and acid balance, the whole bunch aspect remains an integral but not too overt part of the wine. Very long.

Once again, the amphore demonstrates its advantages in very ripe vintages as the nose is appealingly fresh with an even spicier array of plum, violet, anise and cinnamon scents. The delicious middle weight flavors possess a gorgeous texture if perhaps not quite the same complexity on the balanced and overtly stony finish. I suspect that more depth will progressively develop over time. Drink 2031+.

Medium deep crimson purple, the bouquet is soft and ripe, at this stage I think I may be preferring the barrel. Sweetness comes through then a drier note, this is still a gorgeous wine, but without quite the same chiselled limestone note which demonstrated the authority of the barrel-aged Clos des 60 Ouvrées.

The sleeker and more refined medium-bodied flavors flash more evident minerality though decidedly less power and muscle on the super-saline infused finish. An impressive showing, the 2019 Saint Joseph Sainte-Epine features aromas and flavors of blueberries and black cherries, plus hints of violets, peppery spice and black olives. It's full-bodied, but it carries its labeled 15% alcohol well, with no sign at all of alcoholic warmth, while supple tannins give a welcome sense of gentle structure and add a softly dusty feel to the long finish. Merlot doesn’t often appear as a YY varietal bottling – the last was in 2012. While somewhat closed, this is starting to reveal itself as a wine of note. Raspberries and blackcurrants doused with cocoa and a vibrancy throughout. There's a plushness across the palate, with woodsy spices and a slight green cardamom taste that's unusual but appealing. Vincent Paris is a native of Cornas, a Northern Rhône appellation famous for its steep, granite, terraced slopes. Vincent’s first vintage was in 1997, having inherited vineyards from his grandfather and purchased some from his uncle, legendary Cornas vigneron Robert Michel, on his retirement in 2006. The biodynamically farmed vineyards are located in various parcels along the southeast facing Cornas slope. Vincent’s Granit 30 and Granit 60 take their names from the slope and gradient of the vineyards and average vine age respectively. Vincent’s famed 100+ year old, 1.3 hectare La Geynale parcel, in the Reynard area of Cornas and owned by his family for four generations, is comprised of old vines planted by his great-grandfather in 1910.

Consumers loath to explore Cornas because of ever-increasing prices should consider Vincent Paris's 2020 Cornas Granit 30 when it is released. Hints of violets, crushed stone, licorice and cassis all appear on the nose of Paris's entry-level cuvée, providing ample complexity. A strong effort, it's full-bodied, ripe and silky in texture, with a lingering finish. It may not be classic, put-hair-on-your-chest rustic Cornas, but it's a delicious mouthful of Syrah that's true to its granitic origins. Drink 2023 - 2032.

Starting with what could be considered the entry level cuvée, the 2020 Cornas Granit 30 comes from further down the slope, from vines closer to the village. That's obviously not a bad thing, since this plump, full-bodied, beautifully textured Cornas has remarkable purity and elegance as well as richness. Blackberries, blueberries, subtle smoke, graphite, and violets all emerge from the glass, and it has a seamless, incredibly elegant texture.

Ao Yun is the realisation of a dream to produce world class, Bordeaux-style wine from China. Commissioned by Moët Hennessy, Dr. Tony Jordan embarked on a four year long mission to scour the terrain of China for an ideal climate to produce top class Cabernet Sauvignon. Settling in the foothills of the Himalayas, to the north of the Yunnan province, Ao Yun hails from the legendary and remote village of Shangri-La. Sitting at an altitude ranging between 2,200 and 2,600 metres above sea level, the estate is named after the magnificent clouds that gather above the permanently snow-capped mountain ranges: in Mandarin, “Ao Yun” means “flying above the clouds”.
Farming is handled by local families across the 28 hectares of vineyards, divided among 314 blocks with 727 tiny sub-parcels. Organic viticulture is practiced in the vineyards, while everything is done by hand with no machinery. The 2018 Ao Yun is a blend of 60% Cabernet Sauvignon, 19% Cabernet Franc, 10% Merlot, 7% Syrah and 4% Petit Verdot.

I love the depth and complexity of the nose, which brings you down deeply into the wine, showing blackberry, ink, tar, earth, incense, cloves, and black licorice. Thyme, too. The purity of the fruit, including cassis, is the real thing. This is full-bodied, but remains so fresh and vertical on the palate. The tannins are so fine and integrated, producing a millefeuille-like layering of tannin and cool, blue fruit. Incredible wine. The greatest wine made in China so far. 60% cabernet sauvignon, 19% cabernet franc, 10% merlot, 7% syrah and 4% petit verdot. 26,000 bottles made. Drinkable now, but will be so much better in four or five years.

Having tasted the 2018 Ao Yun for the first time in May 2021 at high altitude in the village of Adong (where the Ao Yun winery is located), it was fascinating to retaste this vintage much closer to sea level in Beijing on December 2, 2021. This proved to be a useful comparative opportunity too, having only a few hours earlier shown the 2017 vintage in a tasting of various Shangri-La wines in Beijing the evening before. The 2018 Ao Yun is a blend of 60% Cabernet Sauvignon, 19% Cabernet Franc, 10% Merlot, 7% Syrah and 4% Petit Verdot. As observed in my note from May, this blend shows increased confidence in some of the other varieties coming more online in Ao Yun’s four village sites of Xidang, Sinong, Shuori and Adong (with Merlot playing an increased role). The 2018 Ao Yun maintains its very deep purple appearance. On the nose, albeit youthful, there is already open and abundant super-ripe cassis, black cherry, mulberry, blueberry and black plum fruit with less pyrazine observable in this bottle (although this becomes more overt on the palate). That core of fruit is complemented by subtle new oak notes of clove, toast and smoke. On the palate, the 2018 Ao Yun has abundant, fine-grained and coating tannins with some lively acidity and well-integrated 14.5% alcohol, these structural elements being well-knitted together with the vibrant core of fruit, touch of herbaceous character (sage, mint) and subtle new oak notes. With its long length and marked concentration, although youthful, the 2018, tasted closer to sea level, has the kind of approachability similar to some Napa Cabernet blends. But it is unquestionably super youthful and is taking on entirely its own identity as the very best blend of these four remarkable village vineyard sites (each at different altitudes). The 2018 is just nudging ahead of the 2017 and 2015 in terms of quality. It will be fascinating to see its evolution in bottle. Drink 2023 - 2033.

Gorgeously seductive nose, this is rich and abundant, aromas bursting out the glass, smells sweet and spicy, five spice fragrance with sweet blackcurrant and black cherry aromas. Mouthcoating and invigorating on the palate, totally harmonious and balanced with the salinity and wet stone nuances coming through backed by ripe, but so well defined, fruit flavors. Such purity on both the nose and palate. This is seriously refined, aromatics are preserved, balancing power with excellent acidity, so you get these bright and energetic flavours but still with structure. Seductive but this also has a sense of classicism. Lovely saline elements and cooling touch at the end with all the flavours lingering long in the mouth. Will be interesting to see how it ages. Drinking Window 2029 - 2045.

Polished, smooth and ripe tannins that have plenty of movement in them. Ao Yun has been a wine with confidence and personality since its first vintage of 2013, and here balances concentrated damson and black cherry fruits with fragrant black tea, mandarin peel and sage together with earthier smoked cumin and saffran spice. 2018 was a late harvest through to November 15 (beginning September 7) and ripening under cooler, dry skies in November has translated into drawn out sculpted flavours that reflect the mountain site, and low yields of 21hl/h. Initial ageing took place in 50% Chinese earthenware jars and 50% oak barrels for five months, then a further 10 months in 30% new oak barrels. The team introduced village crus in this year also, drawing them from the four villages where the vines are located, and keeping 54% of overall production for Ao Yun itself - just another clue to the ambitions at this briliant estate. You'll have to wait until 2021 for this release, but it absolutely will reward your patience. What an exceptionally fine creation this is, the 2015 Barolo Vite Talin. It is soft and generous, with great concentration, and the dark fruit shows more fleshiness in the mouth. The tannins have become softer in the 2015 edition. While the 2014 could be described as wild and robust with its spicy, herbal and meaty notes, this Barolo Vite Talin is all about elegance. It is simply beautiful, a feather in any cellar's cap. A mere 2,200 bottles were made. Drink 2024 - 2050.

The 2015 Barolo Vite Talin has really shut down since I tasted it last year, which is probably a very good thing for its long-term prospects. Radiant and lush on the palate, the 2015 marries fruit intensity with structure to great effect. Far from an easygoing Barolo, the 2015 is going to need the better part of a decade to be at its best and most expressive; but still, the 2015 is super impressive today. Drink 2023 - 2040.

The 2011 Barolo Cannubi Boschis is super impressive. Early signs of aromatic nuance have started to develop, but just barely. More than anything else, the 2011 impresses for its body and pure depth, both of which the 2011 has in spades. Black cherry, plum, chocolate, licorice and spice all build as this dramatic Barolo shows off its allure. The 2011 has aged beautifully. I would prefer to drink it over the next decade. This is a re-release from the winery. Drink 2021 - 2031.

While based in Morey-Saint-Denis, Domaine Taupenot-Merme has collection of prime vineyards across both the Cote de Nuits and the Cote de Beaune. A significant proportion of their 13 hectare holdings are in premier and grand cru plots, including the grands crus Clos des Lambrays, Charmes-Chambertin, Corton-Rognet and Mazoyères-Chambertin. Much of these vineyards contain old vines which have been supplemented with newer plantings from massale selections of their strongest vines.
Seventh-generation Romain Taupenot is in charge of winemaking, aided by his sister Virginie. Organic farming has been practiced since 2001, and once harvested grapes are 100% de-stemmed before a cold soak and indigenous fermentation. Oak use is also sympathetic with only 25% new oak used for the village wines and up to 40% for the grand and premier cru. While the wines can carry a healthy degree of richness, they are always balanced by freshness so as to be a pure and faithful representation of their origin.
La Riotte is one of Morey's leading premiers crus, with mostly very old vines and the same geology as Mazoyères containing calcareous soil rich in clay. Taupenot-Merme has a 0.57ha parcel and the estate’s vines are more than 60 years old on average.

Earthier and less elegant though still pretty aromas are composed by notes of plum and dark berries laced with hints of spice and floral, especially violet. There is again very good verve and freshness to the delicious and caressing yet quite punchy medium-bodied flavors that possess a seductive texture thanks to the sappy dry extract that also serves to buffer the moderately firm tannic spine shaping the slightly longer and more complex finale. This is one to consider, especially for aging over the mid to even longer-term. Drink 2029+.

The 2019 Morey-Saint-Denis La Riotte 1er Cru is stubborn and austere on the nose at the moment, red berry fruit and damp loam aromas/woodland scents gradually unfurling, hints of cepes. Classic in style, nicely focused, this builds in the mouth and exerts good grip on the finish with impressive length on the aftertaste. Great potential but will benefit from cellaring. A significant proportion of their 13 hectare holdings are in premier and grand cru plots, including the grands crus Clos des Lambrays, Charmes-Chambertin, Corton-Rognet and Mazoyères-Chambertin. Much of these vineyards contain old vines which have been supplemented with newer plantings from massale selections of their strongest vines.

Other reviews... Although creating a 'classic' gin is deceptively tricky, refraining from using too many botanicals and including saltbush works wonders for Hickson House. They've created a sophisticated, almost steely-in-character gin. The saltbush complements the gin well, enhancing the green spice notes found in juniper and the drier coriander seed notes, which create the atmosphere of an early morning stroll along the beach. They're the founders of the award-winning Barrelhouse Group – the team behind 'The Duke of Clarence' and 'The Barber Shop', the latter announced as The World’s Best Gin Bar by the UK’s prestigious Gin Magazine in 2020. They're also the creative force behind this new Sydney start-up. Situated at 6 Hickson Road, The Rocks, in the heritage-listed Metcalfe Bond Stores, they're joined by Head Distiller, Tim Stones, ex-Manly Spirits and Global Brand Ambassador for Beefeater Gin, where he learnt his craft under Master Distiller, Desmond Payne. There are several gins currently on offer under the Hickson House label. The 'Australian Dry' comes packed full of the usual suspects - juniper, orange peel, coriander and liquorice root along with a good dose of Australian native thyme, myrtle and finger lime. The latter comes through strongly on the nose, backed up by more traditional gin notes, though overall the aromas remain on the fresh, fruity side. At 42%, this is a light-to-medium bodied style with dried lime peel, lime confectionary, native potpourri and a subtle saline note through the zesty finish. It fades dry and minerally with faint citrus in tow. Recommended for lively Martinis.

If you loved the extra depth of flavour of Glenfiddich's hugely popular 50% ABV 'Distillery Edition', then this beauty from Glen Grant promises similar pleasures. Made by Dennis Malcolm, the longest serving Master Distiller in Scotland (born at Glen Grant Distillery in 1946), Jim Murray was blown away with the quality (review below), while it was the "Editor's Pick" at Whisky Advocate in 2021. Originally released for the American market, this is all about showcasing Glen Grant's superbly fruity distillate (think apples and pears). Taste-wise it's a sister style to high-strength Glenfiddichs or Glenlivets (lightly honeyed and fruity). A proper ABV and what seems like minimal chill filtration make it stand out from the mainstream Speyside pack. Also awarded a Double Gold at the San Francisco World Spirits Competition - if you needed more convincing.
Other reviews... A mesmerising display of juicy barley tones which gradually integrate with and then embrace the fragile tannins. Just a little extra buttery oil from the upped strength aids in the longevity of these sensations and gives the mid ground far more weight and substance than you might have expected... though the salivation levels are still high... Long , languid, lilting and lush right to the very end with a little lime blossom honey lightened the Lunjek marzipan... What a malt this has now become! A premium craft vodka made from 100 percent Japanese white rice. Although the word "haku" literally means "white," the subtlety of the Japanese language often gives characters several meanings. While "haku" is rooted in the word "hakumai," meaning white rice, the nuanced meaning can also be translated as "junpaku," which means an untainted brilliance. The distillers feel it speaks of Haku's clear, clean and luminous flavour.
The vodka begins its distillation process in Kagoshima, Kyushu, a region well-known for rice spirit making. The process includes a meticulous mill and polish, where 100 percent Japanese white rice is fermented to create a mash. The mash is distilled through pot stills to create a rice spirit, and then distilled a second time through two different processes. This liquid is then blended and filtered through bamboo charcoal in Osaka, Japan. This process, unique to Suntory, preserves and enhances the rice's delicately sweet and subtle flavours. A vintage-dated Old Pulteney that has some similarities to Highland Park's style. 'Flotilla' here simply refers to a small fleet of boats, appropriate as this is a maritime malt matured next to the sea. Hand-selected first fill ex-bourbon barrels held the whisky for ten years before being bottled for the West European market. The profile promises vanilla sweetness with hints of zesty lemon and green apples, rounded off with a distinct maritime note, typical of Pulteney. 46% Alc./Vol.

Ten years old, a well-behaved wood, and a rather pure distillate, that’s the recipe for a winner in my book. Shall we call this baby ‘the HP 10 of the mainland’? Lovely sunflower oil, williams pear, gooseberries, candlewax, artisan cider, ale, bread, seaweed… What’s not to like? Mouth: yeeppie! Sure it’s a little on ripe pears and juicy sultanas, so perhaps a tad ‘too easy’, but let's not deny ourselves our joy, this is excellent. Reminds me of those ripe jujubes that they sell in Chinese food markets (no, not next to pangolin meat). So loads of pears, but also vanilla, barley syrup, the said jujubes, a touch of turmeric and ginger… What I’m missing is a little more coastalness at this point, but there, it’s a fine dram. William Grant & Sons have released a series of age statement grains, the inaugurual release being this 25 Year Old, scheduled as a UK exclusive. The original Girvan Patent Still was built by William Grant's great-grandson, Charles Gordon, in 1963. Comes handsomely presented in a tall decorated box with metal badges and side panels. 42% Alc./Vol.
Other reviews... William Grant is making pioneering efforts to develop Girvan as a single grain whisky brand, with more to come. The aromas beckon with masses of buttery vanilla notes, fresh apple, cinnamon stick bundles, dark peel, and chocolate pralines. The creamy, unctuous texture packs in white chocolate, citrus, lime, chewy caramels, and pineapple, with soft American oak characteristics. Long finish of vanilla, ground cinnamon, and mint. One of the tastiest grains on the market: expensive, but still, it’s patently very good.

...A controversial new bottling because of many factors, first its very high price (£250 for some middle-aged grain, imagine) and second the fact that it’s been reduced down to 42%, while grains are usually filled in wood at around 70% or more if I’m not mistaken. Not to mention the absence of vintage, but I’m not sure vintages make much sense with grain whisky. Colour: straw. Nose: starts with some solvent and grass, remarkably un-fruity and un-marshmallowy for grain whisky. Rather some fresh oak and more and more cut grass, then cinnamon, lager beer and only faint touches of vanilla. How dry and even austere! Mouth: feels more than 42% vol. Some oak, some thick banana juice, a very creamy mouth feel indeed, some orange liqueur and some kind of cinnamon cake. Always a grassiness in the background. Finish: of medium length, on more or les the same aromas. A little banana liqueur, some white chocolate, a rather oaky aftertaste. Comments: not quite my cup of malt – obviously. Other reviews... I think Doorly’s is the most famous brand by Foursquare Distillery, and I believe it’s a blend of pot still and column rums. I had liked their Doorly’s XO a lot a few years back (WF 85). Colour: gold. Nose: vanilla and raisins plus Swiss milk chocolate and notes of cane juice at first nosing, then deeper, albeit tiny notes of earth and leaves. Oranges coming out after just two minutes, while the whole remains rather ‘easy’ and even a notch light. It’s a gentleman. Mouth: very good, bright, with oranges and cane juice, you’d almost think this is a readymade dry cocktail at high strength. Sips very well, even if it’s not a very complex rum. A wee touch of coconut – but can you say ‘wee’ about rum? Finish: medium, clean, cane-y. A little tobacco and more oranges in the aftertaste, as well as mangos. Comments: feels natural. ...When compared to the likes of the similarly priced Appleton V/X or Chairmans Reserve, it is a lot more refined and less edgy. In terms of mellowness it reminds me more of Appleton Reserve 8. ...It’s not the same taste wise but in terms of heat and spice. It’s pretty sophisticated. I’d say it has a lot more going on than the English Harbour 5 year old, for example. It is certainly a step up from Mount Gay Eclipse and even Cockspur Fine Rum... This is a serious contender for best rum in its price bracket. It really is a great introduction to Bajan style rums. ...I tried the 5yo after the 8yo and expected a younger (obvious) harsher rum but it is actually easier and sweeter (for a 100% dry rum) than the 8yo. Less complex, less oaky, less sophisticated but also fruitier and more sweet notes make the 5yo a really pleasant, very affordable enjoyable sipper. On the nose it is very inviting with some vanilla, a touch of smokey oak, sweet oranges and some alcohol. On the palate the orange and vanilla combine to a fruity fudge-like sweetness (again, it is really a dry rum) with a pinch of pepper. The oak is much more in the background than with the 8 yo Doorly's. Very well balanced and nothing out of tune. Lovely little rum and at this pricepoint very hard to beat. The story of Teodoro Negro’s Toccasana has deep historical roots in the Asti area, where herbal knowledge and domestic pharmacopoeia have always been widespread. Teodoro Negro was born two months premature and the seventh of 12 children, on 22 February 1910, in Cessole (AT). According to popular tradition, babies born during the 7th month of pregnancy are endowed with extraordinary sensitivity and Teodoro was no exception: his uncommon empathy enabled him to establish a deep connection with people and identify their problems at a glance. Fond of herbs, he began to study them, collecting them and compiling detailed catalogues, until he opened an herbalist shop of his own. With the aim to learn more about the healing properties of herbs, he began training at the monastery of the Priarist Fathers in Carcare, and then continued his studies at the University of Pavia, where he obtained his herbalist diploma in 1940. Back home, he started developing the blend that would eventually lead him to produce Toccasana in 1970.

The brand name goes some way to suggesting the provenance of these whiskies, as does the background story. Belgrove's Peter Bignell, backed by a consortium, acquired a number of barrels from a failed investment scheme and vatted them into this single malt release. If you're searching for more clues, here's the text from the back label: "A little over ten years ago [redacted] started a scheme to help finance growth of his fledgling whisky company [redacted]. It is possible in those early days that [redacted] intentions were good but it wasn’t long before [redacted], given a big endorsement by Whisky Bible author Jim Murray, was in financial trouble and [redacted] was selling empty barrels and stealing from other barrels to bottle and sell. Fast forward a little and those investors left with the remnant of the failure were stuck between a rock and a hard place due to [redacted] refusal to fulfil [redacted] contracts in place with investors. Enter Peter Bignell of Belgrove Rye Whisky fame and his hastily formed consortium. Peter, a gentleman if ever there was one, felt the pain of the [redacted] investors and put together a rescue deal to purchase the barrels and set out to blend and bottle the whisky that almost never saw the light of day."

The Savoie region is nestled within the French Alps, not far from Chambéry. Once one powerful wine region with 20,000 hectares planted on the complex slopes of the mountain, it's now a small region, totalling 3,000 hectares. Most of the vineyards have been replanted on the flat, where the machines can find their way but not the quality. However, in 1998, one very special slope called "Coteau de Cevins" abandoned for decades was brought back to life by the Mayor of the area Denis Perroux and Michel Grisard, one of the pioneers of biodynamics in Savoie. The Coteau de Cevins once produced some of the most exciting wines of France.
The Coteau de Cevins was replanted in 1998 with the original, very qualitative vines of Persan and Mondeuse noire (red) as well as Altesse, Roussanne , Mondeuse blanche, Malvoisie and Jacquère (white). The slope reaches 60% of inclination, and the vines are planted on terrasses of very old, complex mica schists, loam and sand. With 8,000 vines planted per hectare and 25 hectolitres per hectare produced, it is the Grand Cru hill of Savoie. Out of this magnificent hill, three wines are produced, called Quartz, Schiste and Améthyste. The first real crop was harvested in 2002. In 2005, Brice Omont was appointed wine grower and director of Domaine des Ardoisières, to pursue the work Michel Grisard had started.
In addition to the Coteau de Cevins, Brice Omont started to rent a vineyard on the Coteau de St Pierre de Soucy in 2008 in order to produce wines from clay and limestone soils and schist. The two Cuvée Argile white and red were born. In 2015, Brice Omont started to rent another vineyard of great quality Jacquère to produce Silice, a highly addictive cuvée of white alpine wine.
The Améthyste Rouge is a blend of two quintessential Savoie varieties, Persan and Mondeuse. It was fermented with wild yeasts and aged in neutral French oak for 18 months. It's concentrated and structured, with dense red and black fruits, licorice, and subtle pepper, finishing with brisk acidity and firm, gravelly tannins.

Other reviews... Decidedly un-gimmicky. Downright delicious, actually. The aroma shows that classic, sherried Macallan core with new leather, dried citrus, honey, and almond paste, but atop all that sits a unique wood-driven layer that does indeed evoke chocolate, err cacao, although not in an incredibly obvious way. It’s more subtle than the name implies with well-balanced notes of cocoa nibs, dry baking chocolate, and a bit of milky coffee. The palate is where the confections really show off with deeper, darker notes of chocolate that become almost fudgy into the finish. There’s a creaminess here, as well, which works beautifully to complement notes of dark vanilla bean, juicy dates, and baking spice. It’s reminiscent of a holiday fruit cake, if that fruit cake had chunks of chocolate in it — which may sound a bit strange but not in this dram. Yet I confess that's how I felt upon tasting Rostaing's 2019 Cote Rotie la Cote Blonde—perhaps a victim of my own overly high expectations? It was a bit closed on the nose, only to explode with vibrant red raspberries and cherries in the mouth. Full-bodied, concentrated and plush, with a long, mocha-tinged finish, it did begin to show a bit more aromatic range and complexity as it sat in the glass, so perhaps I'm being too tough on it. Lindores Abbey is the officially recognised site of the first recorded distillation of Scotch whisky. It was back in 1494 that King James IV commissioned Brother John Cor at Lindores Abbey to make aqua vitae with eight bolls of malt. For more than 100 years, the preservation of the ruined abbey has fallen to Drew McKenzie-Smith and his family. Several years ago he learned of the abbey’s significance to the industry after visiting a website called Connoisseur Scotland. Further inspiration came when he was shown a copy of the late Michael Jackson’s book, 'Scotland and Its Whiskies.' In it, Jackson wrote of Lindores, “For the whisky lover it is a pilgrimage”. Following fifteen years of careful planning, construction work began on a new distillery that would not only capitalise on this whisky connection but also provide the means with which to preserve the abbey for future generations. In 2017, after five centuries of silence, the stills at Lindores Abbey began flowing again.
There are actually two releases now in Australia: Lindores MCDXCIV and the MCDXCIV Commemorative First Release. They're essentially the same liquid, distinguished by a subtle notation on the label. Both come aged in a combination of ex-bourbon, ex-sherry and STR red wine barriques from Burgundy. Both are three and a half year old Lowlanders. You might expect Lindores to be on the lighter side, however it's more like a young Speysider, nicely balanced and not shy on flavour. There's even a nod to Linkwood on the nose where the aromas show surprising weight; Cream tea biscuits, pear drops, light beeswax, cocoa and citrus are echoed with impressive purity, depth and texture of the palate. A fine astringency checks the length, but it's auspicious as far as inaugural releases go - all that's needed is more time to add further layers of complexity. 46% Alc./Vol. Tasted from a 15ml sample.
Other reviews... From bourbon, sherry and wine barrique. Either the great folks at Lindores would like to stress some kind of Roman heritage with the name, which I doubt, or the name refers to 1494, which was the year when the Exchequer Rolls of James IV of Scotland recorded the granting of malt to friar John Cor in order to make the first 'official' water of life in Scotland, at Lindores Abbey in the Lowlands. Those Exchequer Rolls, in their great wisdom, did not mention any kind of PX or red wine casks, but I'm sure that's been done parsimoniously here. Colour: straw. Nose: starts with rather a lot of weissbeer, some porridge, then sourdough and leaven bread, buckwheat crepes, just grist… Then more lemon juice, fresh cider and a few drops of wine vinegar. I believe you can't do it any more natural. The barriques have been very civilised, I find no merlot and no cabernet whatsoever. Phew. Mouth: pretty good indeed, very much on grains and breads, with only a drop of lemon juice, bitter ale, then really a lot pf pepper and nutmeg from the oak. Perhaps not totally integrated and balanced yet, but that should come. Finish: anecdotal, with some bitterish oak and notes of eggplant and artichoke. Comments: not sure it's totally ready yet, but when the base is nicely bready like this, beyond the oak, the future should be bright. 78 points - whiskyfun.com

Palate: Smooth with a creamy texture and a perfect balance of mellow vanilla, dried fruits, citrus touches with a hint of spice. Finish: Medium length, delicate but lingering finish. Non chill filtered.
