"I wish I had a twenty pound note for each time I had been told in recent years how much someone enjoys a single grain" says Jim Murray, "The ones the connoisseurs die for are the older versions." Grain whisky is distilled in a column still from a variety of cereals like corn or wheat with a touch of malted barley for good measure. It's wood matured and, yes, it's classified as genuine whisky. Just like single malts, grain whiskies have their own style and signature. But because they've been almost entirely reserved for the blended whisky market, they've been much harder to find. It's only in the last decade that more and more single grain whiskies are being offered to flaunt the fact that they can be stunning in their own right - and some with prices as big as their age statements!

    Based in Glasgow, the historic Port Dundas distillery closed after Diageo moved the majority of its grain whisky production to Cameronbridge. It traditionally contributed to blends, including Bell's, Black & White, Haig, J&B, Johnnie Walker, Vat 69 and White Horse. This is a fabulous example from indie bottlers, "North Star", bottled at just the right strength.

    Tasting note: Drawn from a Bourbon hogshead. Flawless bright gold, beams from the glass. A complex and shifting bouquet hinting at dried grass, rice crackers and pepper along with suggestions of semi ripe banana, dried apricot, Indian spices and liquorice root. Surprisingly light on its feet. Waxy, oily, grain and toasted marshmallow flavours arrive with a mild flare of alcohol. Trace anise rounds off a prolonged, poised finish. The perfect opportunity to experience Port Dundas. 58.8% Alc./Vol. Non chill filtered. Approx. 300 bottles.

    A luxurious Irish-meets-Bourbon-meets-Rum style that's a landmark release for the Single Grain category.

    One of the highlights of the 2017 collection that takes Single Grain whisky to the next level.
    Based in Glasgow, the historic Port Dundas distillery was a big contributor to blends like Bell's, Black & White, Haig, J&B and Johnnie Walker, amongst others. It closed in 2009 after Diageo moved the majority of its grain whisky production to Cameronbridge.

    For historical context, this remarkable bottling was distilled and filled to barrel in 1964 - the same year the Beatles exploded, the Rolling Stones launched, Cassius Clay won the Boxing World heavyweight championship and the Vietnam War escalated. Limited to just over 700 bottles worldwide with major UK retailers now sold out, it is the oldest Port Dundas on record, as well as one of the oldest single grains ever bottled as well as being the oldest whisky to ever be included in the Special Release series (surpassing the Glenury Royal 50 Year Old from 2003). A collector's must.

    Tasting note: Matured in refill American oak hogsheads. Deep polished brass colour / forms great legs. Stunning depths to the bouquet, redolent of dried coconut / bounty bar in the opening phase; Swirling and air contact develops further richness, drawing out apple strudel, caramelised peaches, cup cakes and vanilla wafer. A luxurious Irish-meets-Bourbon-meets-Rum style evocative of oak shavings, crème caramel and ripe stone fruits with a nectarine-like succulence, the sweetness perfectly countered by drying oak, coconut and delicate spices in a knockout finish. The sustained, high-pitched caramel-vanilla fudge top note is simply sublime. Extremely limited. 44.6% Alc./Vol. 752 bottles.

    Other reviews… This 1964 distillate has a nose of rich toffee, weighty oak, allspice, antique hardback books, dried apple, cracker bread, and banana chips. A fairy tale taste of red apple perfection, as if Snow White polished it on her skirt. This ripens to encompass gumdrops and lollipops. Golden syrup, lime zest, caramel, and vanilla bleed into a conclusion of nutmeg, oak, and apple peel. An auspicious moment for grain whisky. 90 points

    One year up on a previous shipment, this young but very, very affordable bottling is a second opportunity to experience Port Dundas on a limited budget. Although it closed its doors in 2010, indies continue to offer glimpses into the glorious past of one of Scotland’s most respected and historic grain distilleries. Normally Port Dundas is marketed at 20 years plus, making this Signatory release all the more unusual. It comes matured in Bourbon barrels and bottled at 43%.

At a going rate of under $14 dollars per year of maturation, we'd say this is very reasonable buying. It's also unusual as Signatory have matured it in a refill sherry butt, emptied in 2021 with an outturn of 454 bottles. 57.8% Alc./Vol. Non chill filtered.

    A very fair price on a cask strength, double-decade Port Dundas. We've sold plenty of these in the past (there's only one or two others on or shelves at the time of writing). The distillery needs no introduction, having closed its doors forever in 2010. Slowly but surely prices are increasing as awareness of its limited nature and generally good to excellent quality gains ground. Our experience with older Port Dundas is of a luxurious Irish-meets-Bourbon-meets-Rum style evocative of oak shavings, crème caramel and ripe stone fruits. Matured in a single hogshead, this one comes with a potent ABV of 58.1%. Non chill filtered. 236 bottles.

    Ever since Diageo debuted 'The Cally' as part of their Special Releases in 2015, well-aged examples have been selling out at a steady rate. Clearly more and more single grain chasers are catching on to the quality and value this ghost distillery can offer. The situation won't last as stocks diminish and prices increase. Considering the official 40 year old will set you back around $1500 (if you can find one), Signatory's thirty year old cask strength release is a bargain. Bottled in 2017 from a single hogshead yielding 142 bottles. 49.7% Alc./Vol. Non chill filtered.

    It's been noted by at least one whisky writer that your best chances of securing new bottlings of old malts from closed distilleries are Caperdonich, Convalmore, Dallas Dhu, Imperial, Ladyburn, Littlemill and Pittyvaich. As independent releases become more erratic, the remainder have become the realm of whisky auctioneers. Several single grains including Carsebridge surely fall into the latter category. To our knowledge, this is only the fourth time an example has made it to Australian shores. Given that Diageo's 48 year old Special Release 2018 edition opened at well over AU$1000, this will be a no-brainer for collectors. Carsebridge closed in 1983 and was subsequently demolished. Although it was a large operation for its time, remaining stocks are now running low. This edition was bottled in 2017 from a single refill sherry hogshead yielding 168 bottles. 48.8% Alc./Vol. Non chill filtered.

    For reasons unknown, the origins of this single grain are not disclosed, instead it's simply labelled 'Ayrshire' (the location of Girvan distillery). Some have described the edition as 'breakfast whisky', probably due to its pronounced cereal character. It's another chapter in Signatory's Single Grain Selection, with bourbon casks filled in 1998, individually selected and bottled at 43% in 2017.

    Single grain whisky in this form is a most unusual sight, even on the shelves of passionate whisky retailers like ourselves. The style can be produced from almost any type of grain, however the most commonly used examples are from wheat and corn. The resulting whisky is usually used to stretch out blends. Not surprisingly, in comparison to single malts, single grains are much maligned.

     

    This peculiar bottling comes from the North British distillery, located just outside of Edinburgh. The distillery supplies famous blends such as J&B, Cutty Sark, The Famous Grouse and Johnnie Walker. North British never bottle whisky under their own label. So whilst almost any whisky lover would have tried a whisky to which North British has contributed, very few would have had the opportunity to taste it on its own.

     

    This release from the reputable Signatory Vintage range was distilled in May 1997 and bottled in September 2015. If the remarkable price/age ratio isn't enough to tempt you, perhaps Murray's review will.

     

    Other reviews... surprisingly hefty: looks like an ex Islay cask has been involved somewhere: the mocha has a puff of smoke in there; beautiful delivery aided by the softest of oils coating the palate with a thin layer of ulmo honey and vanilla; ...the vague, distant smokiness adds further intrigue to a fine grain whisky. 43% Alc./Vol.

A significant recent release was a $1K+ 40-year-old offered by Diageo in 2016. A roller coaster history that started in the early 19th century finally came to a close in 1993 as part of Diageo’s infrastructure reorganisation. In 2011, the distilling equipment was removed and Cambus was converted to a warehouse and cooperage, consolidating nearby Carsebridge and Dundashill in Glasgow.     The perfect opportunity to acquire a closed distillery bottling for your collection.

    From the closed Cambus Distillery comes this independently bottled Boutique-y gem. After a quarter of a century of patient maturation, the whisky was decanted at 50.1% ABV - which we assume is cask strength, however it's not stated on the label. Batch 14 is a release of 462 bottles. Founded back in the early 1800s, Cambus produced whisky until 1913 when a fire halted production and forced the distillery to close until 1938. The doors of Cambus were open once again until 1993, when they shut for their final time. If you’re into your grains, you'll be able to pick out all the subtle historical references found on the label. The laymen will see a snowy scene with a snow family and cheerful little robins dotting the picture, plus lots of barrels! Collectable.

    Notes from the bottlers... Nose: Vanilla sponge, jam tarts, and red chilli flake. Palate: Cooked apple, brown sugar, maple syrup, a good touch of oily oak. Finish: Baking spice, vanilla blossom, and more orchard fruit.

    That Boutique-y Whisky Company is a new generation bottler of single malt whisky, single grains, blended malts and blends, launched by UK-based fine spirits producer and retailer, Master of Malt. Colourful, hand illustrated labels often incorporate whisky industry 'in-jokes'.

    The second batch of Cambus single grain Scotch whisky is the first to carry an age statement (which will be the norm for all subsequent Boutique-y releases). Since batch 1, a robin redbreast has entered the snowy scene by the Cambus iron bridge, giving this label a festive feel.

    Diageo-owned Cambus has been marketed at various ages, as well as a no-age-statement. In 2011, the distilling equipment was removed and the operation was converted to a warehouse and cooperage. Tall column stills were used in place of copper pot stills to create this whisky, the former resulting in a light, clean and fruity spirit. Sometimes maligned by malt snobs, older grain whiskies can be quite exceptional (Jim Murray gave the previous batch from Boutique-y a whopping 94 points!) Given that Diageo's 2016 ODB of Cambus was launched for well over $1000 in Australia, this indie expression seems a very reasonable proposition. The bottlers say to expect "White pepper and spiced oak from the outset, followed by waves of butter, waxy citrus and chocolate pralines." 319 bottles.

    Wow! An exceptionally old grain whisky at an unbelievable price! In fact, you'd be mad to let this one slip.

    For a short while, there was a malt whisky distillery in the same complex as Invergordon (est. 1960), but these days the plant produces top quality single grain. Now a part of Whyte & Mackay, Invergordon used to be home to some beautiful Coffey stills, so the Boutique-y boys and girls thought to include a technical diagram of a Coffey still on the label. It's a very technical, scientific and completely accurate diagram. Sort of. 48% Alc.Vol. 665 bottles.

    40 year old whisky. Closed distillery. An incredible opportunity to purchase one of the oldest and most expensive Grain Whiskies ever released.


    The Cally (as the locals called it) makes its debut as part of Diageo's Special Releases in 2015. This extraordinary 40 year old is also one of the oldest expressions ever offered from this dark horse distillery, otherwise known as "The Caledonian", based in Edinburgh and closed in 1988. Not surprisingly, bottlings of any kind are rare. This edition was distilled in 1974 (likely from majority corn) followed by maturation in refill American oak hogsheads. Bottled at natural strength, just over 5000 bottles are available worldwide.

    Tasting note: Bright brassy gold. Impressive lift with dense, sweet opening aromas reminiscent of rock lolly / dark chocolate / toffee apple. Big vanilla / cinnamon / sponge cake delivery framed by vibrant spices; mildly oily to finish with salivating malt and cascading sugars. Luxurious grain. If your glass is half full, you will relish sweet toffee popcorn, coconut, fresh fruits, linseed oil, and some spicy and nutty notes. Makes sense, as South African white maize was heavily used in the production in the early 1970s. It’s mouth filling, dark and brooding, with plenty of chocolate, oak tannins, char, and layered spice.     Lovely half-pre-Castro-Cuban, half-Alfred-Barnard-era label. The whisky industry will soon call a guy named Gutenberg at the current rate ;-). Nah, Da Vinci’s too expensive. More seriously, we haven’t tried many Caledonians so far, let’s simply remember that the Haymarket distillery (Edinburgh) was closed in 1987. So, as far as grains are concerned, this is a historical bottling. Colour: gold. Nose: ha, now we’re talking! And we’re talking… Irish. Seriously, you’d think this is pure pot still whiskey, with overripe apples, butterscotch, and this very peculiar metallic side that just works in this context. And of course there’s plenty of vanilla and coconut. Fresh and vibrant, certainly not ’40 years’. I quite like this so far. With water: I like it even more. Some kind of softer bourbon, perhaps. No rye, though. Mouth (neat): very good, I think. It’s not malt whisky, obviously, but it’s got depth and structure, and all this tropical stuff (Irish indeed) just works. Mango chutney covered with buttered caramel and coconut liqueur, plus mandarin liqueur and perhaps Turkish delights. Goody good, and the oak never comes in the way. Meringue. With water: really very good. No oaky ventures, only stewed fruits and various pastries, including oriental ones. Finish: quite short, as expected, but clean, fruity, and praline-like. Comments: I haven’t checked the price, but if it’s fair(ish), it’s a good bottle to own to show your friends that grain whisky’s not always only oak-flavoured ethanol. It’s lip-tingling at cask strength; the lemon and molten honey tussling with the effervescence of the Dib Dabs before golden syrup pours over the tongue.     William Grant & Sons have released a series of age statement grains, the inaugurual release being this 25 Year Old, scheduled as a UK exclusive. The original Girvan Patent Still was built by William Grant's great-grandson, Charles Gordon, in 1963. Comes handsomely presented in a tall decorated box with metal badges and side panels. 42% Alc./Vol.

    Other reviews... William Grant is making pioneering efforts to develop Girvan as a single grain whisky brand, with more to come. The aromas beckon with masses of buttery vanilla notes, fresh apple, cinnamon stick bundles, dark peel, and chocolate pralines. The creamy, unctuous texture packs in white chocolate, citrus, lime, chewy caramels, and pineapple, with soft American oak characteristics. Long finish of vanilla, ground cinnamon, and mint. One of the tastiest grains on the market: expensive, but still, it’s patently very good.

    ...A controversial new bottling because of many factors, first its very high price (£250 for some middle-aged grain, imagine) and second the fact that it’s been reduced down to 42%, while grains are usually filled in wood at around 70% or more if I’m not mistaken. Not to mention the absence of vintage, but I’m not sure vintages make much sense with grain whisky. Colour: straw. Nose: starts with some solvent and grass, remarkably un-fruity and un-marshmallowy for grain whisky. Rather some fresh oak and more and more cut grass, then cinnamon, lager beer and only faint touches of vanilla. How dry and even austere! Mouth: feels more than 42% vol. Some oak, some thick banana juice, a very creamy mouth feel indeed, some orange liqueur and some kind of cinnamon cake. Always a grassiness in the background. Finish: of medium length, on more or les the same aromas. A little banana liqueur, some white chocolate, a rather oaky aftertaste. Comments: not quite my cup of malt – obviously.     A price/age ratio like this is rarely found. It's not stated where this was distilled, but we do know that it spent its two decades in bourbon casks, eventually being bottled for the Signature Series at 40% ABV. It promises lots of grain sweetness and creamy cask influence.

    Notes from the bottlers... Nose: White chocolate and summer berries, with lemon cheesecake. Palate: Pink marshmallow and dark chocolate, with creamy vanilla and buttered toast. Finish: Vanilla fudge and dusty cocoa.

    Owned by Pernod Ricard, this indie bottling from the Lowland Strathclyde grain distillery was finished in an ex-oloroso cask (#129501). The sherry seems lost in what is a fairly typical, if slightly disjointed grain profile with aromas and flavours of dried coconut, caramel, American oak shavings and spice. It handles the ABV well, with sticky date adding weight and richness to the finish, followed by hints of Bourbon and bubble gum. The sweetness of the grain wins out. 253 bottles available. 55.2% Alc./Vol. Non chill filtered.

    Notes from the bottlers... Expect a nose of polished oak, caramel shortbread and ripe red forest fruits. The palate is bright for it's age with redcurrant jam, spearmint toffees, lychees and salted caramel. The finish is a very long and lingering with a touch of spice and red fruits.

Think vanilla wafers, buttery soft white bread and gentle spices and you get a sense of Invergordon's house style. This one offers restrained opening aromas, building with caramel, vanilla wafer and hints of Bounty Bar. It's simple but deliciously textural grain where the emphasis is on vanilla slice and caramel fudge. Hints of sticky date enter at the finish. A gentle prickle reminds you it's natural strength. Balance, texture and unmistakable grain character - a barrel pick that gets two thumbs up. 48.6% Alc./Vol. Non chill filtered.

    A second extremely old grain from the Wu Dram Clan has landed and is similarly limited. Reports from whiskyfun.com suggest this is seriously good, with more than enough body and personality to woo single malt drinkers. Yes, 40.2% is cask strength.

    Other reviews... This is well cask strength, mind you. Probably a little fragility in there… Colour: straw. Incredibly pale at 46. Nose: hold on. Who poured a few bottles of 1960s Bowmore into this hogshead? Where do these mangos and pink bananas come from? And the sunflower oil? The marzipan? The viognier? The white asparagus? The wee pineapples? The lilac and the wisteria? All this is extremely soft, perhaps a little fragile indeed, but just wonderful. In the old days, some absent-minded tasters may have described this one as 'being a little feminine'. Mouth: phew! No excessive tea-ness, no sawdust, rather these tropical fruits once again (just the same ones) and a sumptuous floralness. Zucchini flowers and honeysuckle, rose petals, proper Turkish delights, flower beignets… Almost a liquid miracle, how did this one survive this beautifully? Finish: sure it isn't very long, but what a wonderful herbal and floral freshness. Mango syrup in the aftertaste! Comments: one of the most floral whiskies I've ever tried, chamber whisky as in chamber music. An utter miracle. Single grain whiskies - more than just a background canvas for blends.

We love a good single grain whisky, but they're an unusual sight even on the shelves of passionate whisky retailers like ourselves. In Scotland the style can be produced from almost any type of grain, with the resulting whisky mostly used to stretch out blends. Not surprisingly, single grains are much maligned by malt snobs. Yet this underdog category is has its place. For whisky nerds or completionists, extra matured bottlings are well worth tasting. 30 or even 50 year old expressions can be surprisingly affordable. Older examples from Cameronbridge, Cambus and Girvan are all worth seeking out.

Making Single Grain Whisky.

Today there are seven grain distilleries operating in Scotland. They're large, functional, industrial style buildings with little of the colourful history and romance that attracts throngs of tourists to the charming Single Malt distilleries. The creation of single grain whiskies is broadly similar to that of malt whisky, only the raw materials and the equipment are different. The mash from which grain whisky is made uses unmalted cereals - usually wheat or maize, it doesn't matter which, so distilleries can buy at the best price - together with a small amount of 'green' malt (barley which has germinated but not been kilned). Usually about 16% of malt is added: it has to be there to convert the starches in the other cereals into sugar, so it can be turned into alcohol by the yeast. Tall column stills are used in place of copper pot stills, the former resulting in a light, clean and fruity spirit that works as a catalyst when blended, releasing the flavours of the malts.

Add first-fill Bourbon casks to the mix, and you have an elegant, semi-sweet whisky which can develop layers of flavour and sophistication as it ages. Nikka's Coffey grain is a great young example. At 30 or 40 years, these whiskies can deliver a unique experience bordering on hedonism: Complex and shifting bouquets matched by luxurious textures and sumptuous flavours falling somewhere between the finest gold Rums or Bourbons or the very, very best Irish. For almost any wood-aged spirit category (bar Armagnac) the price / age ratios are frequently astonishing.
