Tasted early 2001: Outstanding opaque purple, crimson mauve colour. Magnificent nose with intense aroma of vanilla, violets, spice and blackberries, followed by hints of marzipan and liquorice. This is a rare sniff, that finds the aromas resting high in the temples and staying there. On the palate, the flavours are totally mouthfilling, refined elegant and concentrated, with a remarkable degree of persistence. Flavours of black pepper, vanilla and confectionery are seamlessly welded together and enwrapped by velvet smooth tannins. This is a very special taste experience. Perfect balance, with a profoundly long aftertaste, lasting over 5 minutes.

Originally the company produced a herbal elixir (still available today) then moved on to fruit liqueurs. They began making blended whiskeys in 1987 and then tackled the single malt category in 1998, an unusual move. It has paid off in spades as they've won several awards in a short time. The cornerstone of the range, Armorik Classic, brings together the best from the warehouse in a marriage of sherry and bourbon casks of different ages. Non chill filtered. Tasting note: Pale straw gold. Pure and attractive scents of gobstopper, marshmallow and sweet malt. Aeration adds a whiff of pepper. Seamlessly integrates flavours of cocoa, lightly peppered malt and sooty peat followed by hints of beeswax, dried banana and almond biscotti in the finish. Outstanding purity and poise. 46% Alc./Vol. Other reviews... Armorik is made by Distilleries Warenghem in the Brittany region of Northern France and you expect something gutsy and rugged. This is nothing of the sort, though the relatively high strength and the fact that it's non-chill filtered ensure plenty of taste, including a scattering of spices that tickle and tingle the palate at the finish. Before then, though, the key flavors are vanilla, honeyed cereal, overripe melon, and banana. Madeira is produced on the Portuguese island of Madeira. Henriques and Henriques is the largest independent shipper on the island. The company is focused on the premium end of the Madeira market and enjoys a 15% market share. The company takes its name from the two sons of Joao Joaquim Henriques, a descendent of the first King of Portugal.LAND HOLDINGS
Vineyard holdings on the island are small, with 4000 growers owning an average 0.5ha each - which by local standards is extensive. Henriques and Henriques also have their own vineyards, 6 hectares at Camara de Lobos (located on the south coast). The company also has 10 hectares at Quista Grande.SOIL TYPES
The soils of Madeira are basically volcanic, however, the best soils are a stony decomposed red tufa which is known locally as SAIBRO. The vineyards are planted on very steep terraced slopes.GRAPE VARIETIES
The grape varieties are unusual for Australians and include TINTA NEGRA MOLE, TERRANTEL BASTARDO, and either SERCIAL, VERDELHO BUAL or MALVASIA.VINIFICATION
The vintage on the Island of Madeira is said to be the longest in the world, starting in mid August with the Malvasia grapes being picked on the lower slopes and slowly progressing through the other grape varieties of BUAL, VERDELHO and SERCIAL. Vintage in the highest vineyards is completed in early November.
The fermentation takes place in temperature controlled, stainless steel tanks. Malvasia and Bual are fermented with limited skin contact, whilst for Verdelho and Sercial, only the pressed juice is used. Fortification takes place with the addition of grape brandy, the amount used and the timing of the fortification depends on the style of Madeira that is being produced.
The majority of young Madeira undergo the "EUSTUFAGEM". This process consists of storing the wine for 3 months in hot conditions with temperatures 45°C. The effect is to mimic the long sea voyages that were a part of the traditional aging process. The best wines are left to age 10 years and more in warm cellars which creates that unique "Maderised" fruit quality.TASTING NOTE:This is the 'biggest' of the 5 year old Madeira's. Deep onion brown colour, with olive green hue. Aroma of orange rind, toffee and caramel followed by a strong rancio end note. The palate if full bodied, with pronounced rancio flavours. Warm, spicy spirit, perfectly balanced with very long aftertaste of hazelnut, spice, orange rind and rancio.

15ml VodkaShake well over ice and strain into chilled glass
Recipe: Dooley's Toffee Liqueur Cheesecake
Ingredients:15 chocolate chocolate biscuits crushed
3 tablespoons butter, melted
4 packages cream cheese
1 1/2 cups white sugar
3/4 cup Dooleys toffee liqueur
4 eggs 1 cup sour cream
1 tablespoon vanilla extract
1/4 cup all-purpose flour
1 package Heath Bar crunch bitsDirections:
1. Preheat oven to 175 degrees C. Grease a 20cm springform pan.
2. In a medium bowl, mix biscuits with melted butter. Press onto bottom of springform pan.
3. In a large bowl, mix cream cheese with sugar until smooth. Blend in Dooley's, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into crust.
4. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Sprinkle Health Bar crunch on top and press into sides of cake. Drizzle some extra Dooley's lightly over top! Antinori Tignanello Grappa (500ml)Tuscany, ITALY$110. 00Bottle$1320.00 DozenABV: 42%Tignanello is a famous Italian red table wine produced from a blend of 80% Sangiovese, 15% Cabernet Sauvignon and 5% Cabernet Franc. It broke new ground in Tuscany during the mid 1970’s and early 1980’s being first Sangiovese to be aged in barriques, the first modern styled red wine blended with non-traditional varieties like Cabernet, and one of the first red wines in Chianti not to use white grapes. Tignanello's grappa is produced from the pomace of its namesake.
Tasting note: Clear, brilliant silvery appearance. Perfumed aromas are waxy (candlewax, crayons), then spicy, fruity notes emerge, in particular raisin and plum. Becomes more bread and pastry like with aeration. A soft light entry builds into a mouthfilling, spicy profile that’s medium to full bodied, dryish, with spicy dried fruits (especially plum). Finishes dry, light and oily. Aftertaste of sultana followed by a faint cocoa fade. 42% Alc./Vol.

The Famous Grouse is testimony to the unsurpassed blending experience of six generations of this family, which accounts for the consistent quality and smooth character of the blend. Like so many early whisky companies, Matthew Gloag & Son Ltd., has its origins in the early 19th century, when the founder established himself as a grocer and wine merchant in Perth. Matthew Gloag bought malt whiskies from distilleries around Scotland and built up a reputation for his cellars.
Finest malt whiskies, such as The Macallan and Highland Park, are married with exceptional grain whiskies for an unusually long period in fully seasoned oak casks to create the Famous Grouse blend. The product takes its name from the Red Grouse, a native wild game bird of Scotland.
Other reviews…Remains sexy, elegant and refined with a stunning opening on the palate. But can’t help feeling that caramel has recently replaced some of the crisper notes, especially on the finish.

2015 Chateau Haut-BaillyPessac Leognan, Bordeaux, FRANCE$299. 00Bottle$3588.00 DozenABV: 14%Closure: CorkBased in Pessac-Leognan on the Left Bank of Bordeaux, Chateau Haut-Bailly has 30 hectares under vine planted to 60% Cabernet Sauvignon, 34% Merlot, 3% Cabernet Franc, and 3% Petit Verdot. As it is only recently that the wines have truly excelled, with knock out wines in 2005/2009/2010 & 2015, they are one of the best values in Bordeaux, but also one of the hardest to find.

Composed of 60% Cabernet Sauvignon, 36% Merlot and 4% Petit Verdot, the deep garnet-purple colored 2015 Haut-Bailly offers up a tantalizingly savory nose of smoked meats, chargrill, tapenade, unsmoked cigars and black truffles with a core of black currants, black cherries and wild blueberries plus wafts of iron ore and bouquet garni. Medium to full-bodied, very firm and yet wonderfully plush with a powerful core of fruit—this vintage is truly an iron fist in a velvet glove. The finish goes on and on with persistent earthy/minerally notes and savory/sweet fruit. Although it is tempting and indeed delicious right now, the wine still possesses many restrained layers and should handsomely reward the patient. Drink 2024-2050.

Lisa Perrotti-Brown – Robert Parker’s Wine Advocate (Feb 2019)The 2015 Haut Bailly was first tasted at the Farr Vintners tasting, although I felt that this bottle did not show as well. Another at the Vinous Icons event in New York is more representative. Vibrant red berry fruit intermixes with blueberry and cassis on the nose. The palate is medium-bodied and retains a bit of puppy fat. Rich for the vintage, yet very well balanced, it delivers lovely black truffle and tobacco notes on the finish. This is very fine, but it needs further age in bottle. Drink 2028-2048.

James Suckling (Jan 2018)Reminding me of the 2009, the 2015 Château Haut-Bailly has a riper, sunny, sexy style that nevertheless stays nicely grounded and elegant, with ample classic Haut-Bailly character. Sweet crème de cassis, smoked tobacco, loads of spicy, loamy earth, and cedar pencil, full-bodied richness, ripe, velvety tannins, and flawless balance all characterize this incredible wine. It actually already offers pleasure today given its texture, balance, and purity, but it’s going to evolve for 30+ years. Drink 2023-2054.

Jeb Dunnuck (Oct 2023)The aromatic complexity of this wine strikes you from the very first moment - this has got to be one of the greatest Haut Baillys I have ever tasted. The 2015 has a touch of Petit Verdot for the first time (not including the mixed fruit from the century-old grapevines that Haut Bailly always uses), from three year old vines. This has a balance and grip that lifts from underneath the fruit, with incredibly precise tannins. Slate, pencil lead and curls of tobacco lead the persistent waves of flavour coming at you, expressing a lightness than deceives you until you feel the layers begin to deftly build up over the course of the tasting. This is utterly delicious, showing all the complexity that you expect from a great wine, together with the supreme confidence that they don't need to trick you with a push of oak (they use 50% new barrels). Drink 2023-2040.

The peak of the Glen Scotia range was 21 Years, but now the distillery has confirmed they've enough stocks to make a 25 year old an ongoing expression - that's despite recent closure between 1994 and 1999. Bottled at 48.8% abv and non-chill-filtered, this was matured in American oak barrels before being married in first-fill ex-Bourbon casks for 12 months. It comes packaged in a handsome oak case engraved with the Campbeltown co-ordinates.“I created the 25 year old with the history of Campbeltown in mind,” says master blender Michael Henry. “For many years, trade has come through this port town bringing fruits and spices from all over the world on its salty sea breezes. I wanted the liquid to reflect this. The signature nose has hints of vanilla oak, interwoven with subtle notes of sea spray and spicy aromatic fruits. On the palate, it boasts tangy orange and juicy red apples mixed with a caramel sweetness. Its finish is a long lingering taste of sea salt with a spicy note of ground ginger.”
Other reviews... Lemon, ginger, pine resin, and a hint of sea salt on the nose, then banoffee pie develops. Luscious on the palate, with subtle spice, a touch of ashy smoke, and principally big orchard fruit notes. Drying in the lengthy finish, with a wisp of smoke, brine, and peppery oak. Glen Scotia at its characterful best.

Galway Pipe is named after Governor Sir Henry Galway, governor of South Australia from 1914 - 1920. Governor Galway was a frequent visitor to the Yalumba winery and on each visit he would conduct a tasting of the finest 'pipes' (500 litre Barrels) of port. Whichever pipe was most to his liking was inscribed with "Galway's Pipe" and the particular blend was used exclusively at Governor House.The many components of Galway Pipe have an average age of 12 years - the same average age the port has had since Galway's day. On the palate the wine has a high level of sweetness complemented by a relatively low pH and therefore a good level of fresh acidity. This results in a wine that has pronounced aged character but maintains a freshness and a long dry finish - avoiding any cloying character. Quality brandy spirit has added to the complexity on the palate and the wine has a high level of sweetness. 18.5% alcohol volume.

Brookies Byron Slow Gin (700ml)New South Wales, AUSTRALIA$74. 99Bottle$899.88 DozenABV: 26%A welcome (albeit limited) addition to the Brookies range, is this "Slow" gin, in the style of English sloe. The point of difference here is that Davidson Plums are used instead of sloe berries. Considered a bush delicacy, the plum is indigenous to the Byron region and is packed with vitamins and minerals.The plums are steeped in Brookie’s Gin for several months. The maceration is diluted to 26% ABV with Mount Warning spring water.
Tasting note: Brilliant copper. Attractive, medium dry aromas suggesting quince paste, plum jam and raisins over muted juniper and white pepper. A juicy-yet-dry, pleasantly tart, plum and red berry flavoured gin with trace pepper in the finish. Delicious Summer sipping, but would be even better at a higher ABV. Keep it simple with soda or just ice. 26% Alc./Vol.
Other reviews... While 'slow' gin is not an official gin category, this lovely gin cordial pays homage to the much-loved 'sloe' gin style. In a nod to the style's distinctive plum flavours, Brookie's Slow utilises Davidson Plums to recreate the style. The plums themselves, native to the Byron and the surrounding area, are fruits naturally low in residual sugars, making them tarter than a typical plum. The months-long steeping process, coupled with the lower sugar content, means that while the gin develops the concentrated fruit flavour, it doesn't overwhelm the gin itself. Rhubarb and an earthy hibiscus are encapsulated in this gin. Don Julio Tequila is named after its founder, Don Julio Gonzalez Estrada, one of Mexico's most renowned premium tequila makers. His 100% Agave Tequilas have been produced in the same way since 1942 and continue to be Don Julio's passion and masterwork. Double distilled and aged for eight months in oak, Don Julio Reposado is now available in Australia along with the highly rated 'Blanco'.
Other reviews... The understated bouquet keeps unfolding with time in the glass with evolving dill and caramel scents. The palate entry is mild, moderately vanilla-like and semisweet; the midpalate is long, biscuity sweet and only slightly dill-like. Angostura 1919 Deluxe Aged Blend Premium Gold Rum (700ml)TRINIDAD AND TOBAGO$86. 99Bottle$1043.88 DozenABV: 40%By the turn of the century Angostura had ventured into the rum market, at first just in bottling bulk rum from other distillers. After years of intensive research into fermentation and distillation processes, the Company installed a state-of-the-art distillery in 1945 heralding its entry into the production of rum on a major scale. By the end of 1960, the Company had extended distribution of its products to over 140 countries across the world, becoming well known internationally for its high quality rums in addition to the now world famous Angostura aromatic bitters. This is a marvelous anejo (aged) rum made from a blend of light and heavy molasses-based rums aged in charred American oak bourbon barrels. Angostura 1919 rum possesses a rich, golden-amber hue with excellent clarity. The rum exudes a complex bouquet brimming over with aromas of cocoa, molasses, caramel and vanilla. It is remarkably soft and well rounded as the rum glides over the plate without a hint of harshness or biting edge. Within moments it opens up, revealing a generous and long-lasting array of toasty flavours.
Tasting note: Pale gold with pale straw hue. The moderately aromatic nose delivers a complex sniff with very ripe banana, brown sugar and honeycomb first evident followed by some heavier undertones of molasses, dark chocolate and liquorice strap. Luxurious palate entry kicks off a silky, off dry flavour wave of spice, boiled lollies, honeycomb and toasty oak. Superb balance. The crusades introduced them to Europe from Palestine via Portugal. The original orange “curacao” was made with fruit from the Island of Curacao. However, the term now embraces a wide variety of liqueurs made from oranges and other produce as well. Amsterdam Curacaos are perhaps the most famous and highly regarded. (The Bols company comes to mind.)Water white and highly rectified, White Curacao Triple Sec is created using only the peel of the orange, soaking it in water followed by distillation and rectification. The Baitz White Curacao is a finely balanced citrus liqueur with a spicy background. The aroma is of bitter orange, while the flavour is full and juicy but drier than its orange counterpart. Baitz White Curacao has an alcohol content of 26%.

Labels often refer to noteworthy historical figures to reflect one or another aspect of their product. In this case, St.Agnes was a young girl of great riches and beauty who denying all her suitors, suffered martyrdom for the Christian faith. She was put to death by sword in 303 a.d. and is the patron saint of purity. But how does all this relate to a bottle of brandy? It's the Saint's ‘pure, clean perfection’, that the makers, Angoves, strive to emulate in this product. First distilled in South Australia in 1925 and in continuous production since, it’s longevity in the market place is testimony to the brandy's quality and value.

The palate is spirity with good depth and complexity. Maturation in traditional oak barrels has imparted soft, slightly sweet oak after-flavours that complement the full flavoured palate. Most notably, this brandy is delicately clean and dry, whilst retaining a complexity that ensures it can be enjoyed neat or over ice. 37% Alc/Vol

The 12 year old blended malt sourced from two of Nikka's distilleries, Yoichi and Miyagikyo, named after the company's founder, Masataka Taketsuru. An NAS (no age statement) Taketsuru bottling has recently been released (2016) in Australia at an increased price.
Other reviews... “At last!” they cry. Anchor Distilling is bringing in whiskies from Nikka. I taunted you with the first of the initial brace in 2010, the exemplary Yoichi 15 year old (a hefty 95 points). The second is the firm’s vatted malt, Taketsuru 12 year old. A mix of Yoichi and Miyagikyo distillates, it is the latter which is to the fore here: a honey-laden mix of cut flowers, persimmon, vanilla, and apple. More are on their way. 81 points

Nose: Emphatic burnt grass. Peaty. Soft smokiness. Palate: Fragrant smokiness seems to waft against an oily, earthy, background. Some seaweed. Some sherry. Finish: Not only is the smokiness sustained all the way through, it surges in the finish. Lots of salt, too. Comment: Glad to see a Bowmore with an age rather than a brand-name. 8.5/10 - whiskymag.com
The unabashedly briny opening bouquet is all peat, sea salt and salted focaccia; time in the glass serves to bring out a refined Sherry scent. In the mouth, it’s lean, surprisingly sweet and acutely resiny. Perhaps the least known of Japan’s whisky producers is White Oak, but it has a legitimate claim to be the country’s oldest with a license to make whisky granted in 1919 — four years before Yamazaki was built. It's located in the city of Akashi in Hyogo Prefecture, west of Kobe, facing the Seto Inland Sea. The distillery was founded by Eigashima Shuzo in 1888 to produce sake. Eigashima Shuzo obtained a license to manufacture whisky in 1919, but it was when the company moved to their current facilities in 1984 that White Oak Distillery was born. White Oak’s whisky stills are only in operation for one month every year and so their production is very small. It's unclear whether this is a mixture of single malts only or whether grain whisky is also included in Tokinoka, (an intriguing word that translates as "fragrance of time" in Japanese). Few people will be aware that as well as being home to the famous rum based medicinal bitters, Angostura, Venezuela makes a number of well-respected barrel-aged golden and dark rums. Local producers say the combination of tropical humidity and cool winds that bathe Venezuela's sugar-cane fields helps to age the rum faster than in other countries. As José Mandry, president of the Venezuelan Alcohols Chamber that groups most of the country's rum makers says, 'Venezuela is a blessed land situated at the north of South America where the winds don't tear us up but gently rock us, and gently rock our rums.' The change in temperature from day to night stimulates interaction between the alcohol distilled from cane juice and the barrels, enhancing the taste.
Produced at the Licorero del Centro distillery in Caracas, Pampero Blanco is crafted using three stills (Column, Kettle Batch and Copper Pot) giving the Rum Master a mixture of light, heavy and semi-heavy spirits to work with. Blended and aged for around two years in x-Scotch whisky casks then charcoal filtered to remove the colour before bottling, the result is a rum where the flavours are delicate yet confident enough to mix with others, be it in a rum & coke or as a “supporting actor” in a cocktail, such as the classic Mojito.

The nose is complex and rich with touches of citrus fruits, honey, and muted spices. The spices come alive on the palate with intense notes of cinnamon and allspice complemented nicely by apple cobbler, vanilla, and honey. The finish is long and well-balanced as the cinnamon spiciness fades away gently while lingering apple and honey notes tickle the back of the throat. Excellent!

Founded in 2006 by German bartenders Stephan Berg and Alexander Hauck, The Bitter Truth Company were one of the first to revive a wide range of classic cocktail bitters on the retail market for modern day mixers. Today they produce a range in excess of ten flavourings, along with the occasional special batch release - their 'Dried Fruit Bitters' special release was commissioned to partake in the "World's most expensive cocktail" served in Dubai.
Today the company enjoy worldwide distribution for what was once a hobby craft, and are considered among the best for true flavourings as evidenced by the accolades attributed to them.
Missing from the market for many years, Crème de Violette is finally making a resurgence allowing for faithful recreations of classic cocktails such as the 'Aviation' and 'Blue Moon'. The Bitter Truth Crème de Violette is made using wild violet blossoms grown in the Alps, macerated in the finest grain alcohol. While the colour is a deep, intense purple, the liqueur is quite elegant showing delicate and fresh violet aromas.
Other reviews... The dense color is hypnotic: an impressively deep, dark, inky violet blue. Luckily, the flavor is less intense. Instead, it’s sweet and light bodied, with a distinctive violet flavor that pulls back before it becomes too perfumy or overpowering, with a delicate, clean finish. In Jim Murray's words, "blending Parr excellence!" Usually available at Duty Free stores only, Old Parr is named after Tom Parr (pictured on the label), once reputed to be the oldest man in England. Launched in 1909, the brand later found success in export markets such as Japan, Mexico and South America where it was easily identified in its distinctive dimpled and rounded square bottle. The basis of the blend today is Cragganmore, however Glendullan has also been a major component since World War II.
Tasting note: Deep gold / bright copper penny colour. An attractive mix of cocoa, vanilla and breakfast fruit toast with exposure drawing out a fruit'n'nut chocolate aspect. Concentrated for the genre, with a spicy backbone that includes muesli, dried grass and light stewed fruit flavours, ending honeyed yet fresh, grainy, peppery and with excellent length. Quite richly styled. Gets better each time you taste it.40% Alc./Vol.

In our experience of tasting wines and spirits from all corners of the world, there are some common lessons to be learnt. Firstly, big name brands do not necessarily translate into better quality. Many of our most exciting discoveries have come from producers that take an understated approach to marketing, letting the quality of the product sell itself. Which is why we search far and wide to find the best examples rather than waiting for the latest 'hot' reviews or distributor catalogues. We attempt to taste anything and everything where possible, regardless of price or pedigree - which is why when we discover a hidden 'gem' we're all the more excited.
Secondly, we've observed that the best outcomes are achieved when experienced people are growing grapes in the best terroir. Similarly, when it comes to fine spirit production, maturation in high quality oak is paramount. Pioneering research into the processes of spirit maturation has been taking place in Scotland for some time. Following a recent meeting with Glenmorangie & Ardbeg's Head of Distilling and Whisky Creation, Dr Bill Lumsden, we learned that Glenmorangie use only first and second fill barrels. After the second fill, the barrels are sold off to other distilleries, intent on cutting costs, or broken down to be used as planters. Lumsden attributes the 'bright and fresh' characteristics in his whiskies - regardless of age, to this staunch but costly practice.
Another famous whisky example; Glenlivet 12 Year Old, in which a less obsessive approach to oak selection yields a spirit that seems 'muted' or even dull, by comparison the Glenlivet Nadurra 16 Year Old which is matured in first-fill casks and despite being four years older than the twelve is remarkably bright, fresh and lively.
By now you must be wondering how all of this relates to Cognac. The Cognac of Francois Voyer is produced on the Voyer family's estate, planted to just 28 hectares, located inbetween Verrières and Ambleville, in Cognac's best appellation, Grande Champagne. Not surprisingly, given the quality of the company's fifteen year old expression, maturation has taken place in top quality, new Limousin French oak casks. It presents a lifted nose, revealing dried flowers, ripe peach above mixed peel and marmalade, hints of cigar box and spice and follows with full bodied flavours of fresh ripe stone fruits over a strong spicy background with hints of creamy vanilla and toasted almond emerging. Luscious and ripe, yet retains a degree of focus thanks to a sense of fine dry tannin and fresh acidity, not dissimilar to that experienced in a well balanced wine - again, a direct relationship with the land on which the grapes are grown. The aftertaste is very soft, smooth and creamy, showing flavours of ripe peach and toasted almond. Wonderful cognac. "Napoleon" is comparable to XO , meaning the youngest eau-de-vie in the blend needs to have aged for at least 10 years in oak barrels. The origin of this unofficial age designation goes back to the French Emperor Napoleon and the Cognac House Courvoisier. 40.0% Alc./Vol.

Green Fairy Absinth (Absinthe) 500mlCZECH REPUBLIC$69. 99Bottle$839.88 DozenABV: 40%Closure: CorkAbsinthe (or Absinth) is an alcoholic drink made with the pounded leaves and flowering tops of one species of wormwood plant (Artemisia absinthium) together with other herbs such as angelica root, fennel, nettles, parsley, balm, sweet flag root and hyssop. Emerald green in colour and usually very bitter, Abisinthe is traditionally poured over a perforated spoonful of sugar into a glass of water – or vice versa. The drink then turns into an opaque white as the essential oils precipitate out of the alcoholic solution.
Tasting note: Pale turquoise colour with a water like hue. A flat, straightforward nose reveals mild aromas of spearmint confectionary and issues a tingling sensation within the nostrils. A trace of eucalypt is evident. Very concentrated, hot and prickly mouth feel covers the tongue with flavours of semi-sweet spearmint confectionary. Simple and one dimensional, the palate drys the mouth quickly leaving a green peppercorn like flavour. Short, spicy, drying, mint aftertaste with the tingling sensation persisting longer than the flavours. A very basic Absinthe. 40% Alc./Vol.
Other reviews... Neon blue/green color; excellent purity. Opening inhalations encounter industrial alcohol aromas with bits and pieces of cardboard-like flavorings and nothing really botanical, meaning woodsy, root-like, or herbal; the second whiffs following additional time in the glass does turn up a few hints of things like mint and leaves, but not enough to be viable in a crowded field. Entry is gooey, syrupy, meagerly botantical, and a waste of my time; midpalate is industrial, absinthe-by-the-numbers, and poor. This producer doesn’t have the vaguest clue of what absinthe is or how it should smell, feel, and taste. Clueless.

A terrific nose. Amazing balance is evident from the creamy entry, following through with delicious gently bittersweet cocoa, date and honeyed cereal flavours. Lozenge and vanilla reverberate with surprising length. What a whisky! A hedonistic effort from Larks that will take you by surprise. 58% Alc/Vol. 96 points

2015 Chateau CoutetBarsac, Bordeaux, FRANCE$120. 00Bottle$1440.00 DozenOne of the superstars of Barsac, the wines are typically noted for their elegance and style rather than weight and richness. At 38.5 hectares in size, Coutet is one of the largest vineyards in the region, with plantings consisting of 75% Semillon, 23% Sauvignon Blanc and 2% Muscadelle. Fermentation takes place in barrel of which 50% are new with further ageing in oak for 18 months.

The 2015 Coutet is pale lemon colored with intense grapefruit, lemon pie and pineapple notes with touches of crushed rocks, honeycomb and lime zest plus a waft of orange blossoms. The palate is well balanced and very harmonious, viscous in texture with perfectly matched acidity and fine delineation and precision toward the finish. Once the bouquet awakens this should be a seriously fine Barsac/Sauternes. Tasted blind at the Southwold 2015 Bordeaux tasting. Drink 2022-2050.

Neal Martin - Vinous (Jan 2019)A heavenly dessert wine, the 2015 Château Coutet boasts a huge nose of caramelized citrus, crème brûlée, tangerine, and honeysuckle. With huge richness and sweetness, moderate acidity, a thick, fat mouthfeel and a blockbuster finish, it’s borderline over the top yet holds it together. It will be interesting to see how this evolves, but it’s undeniably gorgeous today. Drink 2018-2038.

Light'n'easy in the mouth with pleasant mocha and muesli-like flavours rounded out by a soft flurry of spice. Ends drying, brisk and woody with subtle grains in the aftertaste. 40% Alc./Vol.
Other reviews... The main dresser should be Bladnoch but there is also some Islay and some Speyside, as well as some grain whisky. Let's hope this baby is Bladnoch-driven, and not just some kind of anonymous blandola (going a bit too far once more, S.) Colour: gold. Nose: it's malty, it's cakey, it is pleasantly waxy (beeswax), it's got a little wood smoke, some earl grey tea, lillies, honeysuckle, touches of earth… Well, imagine all blends would be like this! Couldn't the industry pull this off? Mouth: huge success despite the low strength. Same flavours as on the nose, plus more citrus, perhaps from Bladnoch's malt. This is a perfect blend – you don't even feel the grain whiskies. We're not far from Johnnie Walker's Blue Label, to tell you the truth. Exactly. Finish: perfect fresh and honeyed finish, with this lovely citrusy signature in the end. Comments: surprised and impressed, I am, which wasn't the case when I tried an earlier version leisurely. Goslings Black Seal 151 Proof Rum (700ml)BERMUDAReduced from $144.99$119. 99Bottle$1439.88 DozenABV: 75.5%A family business for over two centuries, Gosling's was founded in 1806 by James Gosling and is Bermuda's oldest business house and largest exporter of locally made product. Originally called 'Old Rum', the company's flagship 'Black Seal Rum' was not sold by the bottle until after World War One, when it was packaged in Champagne bottles (the most widely available bottle at the time) and sealed with black wax, hence the name which has stuck. Over the years, Black Seal Rum has become synonymous with the Bermuda region - it is an essential ingredient in the local fish chowder, adds the island flavour to the 'Bermuda Rum Swizzle', as well as being the tempest in Bermuda's favorite cocktail, the 'Dark 'n Stormy'.
Goslings currently produce rums at three different proofs. Despite the 75.5% of Gosling's Black Seal 151, this is remarkably smooth.

Matured in first-fill European oak oloroso casks, expect notes of "caramel, dried apple, and cloves". Big one litre format. Tasting note: Bright copper. Light, but more aromatic depth than the ‘Cuartillo’, accenting dried fruits (prunes, apricots) as well as bitter dark chocolate, orange spice cake and hints of cinnamon. A medium bodied whisky with a burst of sherry in the middle stage, trailed by warming cinnamon, cocoa and fruit spice cake. Lacks momentum but compensates with sheer purity and poise. Eminently drinkable. 43% Alc./Vol. Other reviews... a funny name, a finish in sherry, and a travel retail exclusive. What could (cough, cough) go wrong? No we won’t try to check what Balbaina means, perhaps someone’s first girlfriend? Colour: gold. Nose: well, nothing really wrong here, it’s a classic malty dram, with touches of burnt raisins and cakes, some vanilla, hints of roasted nuts and a spoonful of good marmalade. Nice citrus (pink grapefruit, perhaps?) Mouth: I find it really good, and again, extremely classic, with raisins, dried figs, bananas and pears, a bit of toasted oak, the obligatory walnuts, a mild spiciness that would rather involve cinnamon and cloves this time, and more toasted cake. Pancakes and maple syrup. Finish: quite long, rather toffee-ish and caramely. They seem to have pushed the oak a bit. Comments: all good, I think, one that won’t disappoint air travellers. Now they're extending the line into new categories with the launch of a new gin and vodka, both based on their Coffey distillate. While Nikka have a long history of distilling white spirits for the local market, it was only in 2014 that Chief Blender, Tadashi Sakuma, created the first prototype of “Coffey” gin, following a trend in Japanese spirits producers who were moving into the category. Nikka's version is produced with eleven botanicals, including yuzu, sansho pepper, kabosu, amanatsu, and shequasar, a native citrus. Other botanicals include juniper, angelica, coriander, lemon peel, orange peel, and apple juice. Bunnahabhain's unpeated style has gained a reputation as the most gentle single malt produced on an island famed for its massively flavoured whiskies. Water is piped in from from Margadale Springs and the whisky is distilled twice in the distillery's unusual pear-shaped pot stills. We were treated to tiny sample of the 18 year old which offered up hints of furniture wax, light molasses, raisin cake and spice on the nose, with the palate following in a delicious fruit and wood burst. Apple and vanilla round out in a beautifully balanced sweet / dry delivery which also shows some light coastal character. This whisky is more expressive in the mouth. Solely matured in ex-sherry casks stored within the distillery’s sea-facing warehouses. 46.3% Alc./Vol. Non chill filtered.

...Last time I tried the 18 – excuse me, the XVIII – that was still a 43%-version. But they’ve upped their game… Colour: pale gold. Nose: ooh, shoe polish! Something that I always enjoy a lot, reminds of both the best Alsatian rieslings and my time as a corporal in the French army (when we still had conscription). So shoe polish, then menthol, then nuts roasted with mint and honey, then a kind of lemony sea breeze. Yes, oysters and lemon, and finally, cigar boxes and sandalwood. Even balsa wood, remember when we were building those wee planes? Mouth: very, very good, they’ve upped their game indeed. Chestnut purée again, carrot cake, walnut wine, tobacco, and guess what, the same pistachios as in the Claxton’s. Some sides remind me of the early official 12s, those were superb. Finish: medium, and just perfect. Chestnut cake with drizzles of lemon juice and pinches of sea salt. Love the maltier and oloroso-ier (hey!?) aftertaste. Comments: I wouldn’t say it’s a surprise, since back in 2009, I had thought the 18 at 43% vol. was worth 88 points. ...Creamier than the 12-bigger too, with broader shoulders and greater depth. Fairly sweet up front, with vanilla-laced malt, chewy toffee, and ripe fruit. Almond fudge and a hint of espresso add intrigue, while dry wood spice on the finish underpins the whisky's characteristic sweetness. The Gimli Distillery situated on the shores of Lake Winnipeg in central Canada is one of the world’s most remote distilleries, as well as being home to the Crown Royal brand. Although Canadian whisky is commonly known as rye, this new CR edition is one of only a handful which is actually made from near 100% rye grain. Most others are distilled from corn or wheat with rye and other flavourings added. Jim Murray gave the Northern Harvest Rye a record-qualifying 97.5 out of 100 points in his 2016 Whisky Bible commenting: “Rye, that most eloquent of grains, not just turning up to charm and enthral but to also take us through a routine which reaches new heights of beauty and complexity. To say this is a masterpiece is barely doing it justice.”

Tasting note: Brilliant amber gold. Fabulous purity with whiffs of apple/peach tart and fresh-picked mint over vanilla wafer biscuit, pencil shavings, hints of gum and green banana. Crisp and spicy in the mouth. The rye is assertive, oily, dense. An almost brittle mouthfeel. Finish offers buttered ryvita biscuit, vanilla custard, cocoa, pepper and sustained mint freshness. Long, concentrated and beautifully harmonised. 45% Alc./Vol.
Other reviews... A blend of 95% rye-grain flavoring whisky with a variety of base whiskies. Its big whisky cocktails will tempt mixers into sipping. Very fruity and floral, with prunes, peaches, red apple skins, and bouquets of spring flowers all boosted by vibrant peppery spices on a slightly oaky base. Crown Royal’s signature balsam resin note and hints of vanilla round it out. The long, spicy finish ends with hints of citrus pith. A complex, tightly woven blend. 91 points

A combination of rums from Barbados, Trinidad, and Jamaica - hence the name '3 stars'. Some of the rums are unaged, others aged 3 and 12 years, blended and filtered back to clear before being bottled by the French Cognac house, Pierre Ferrand. Light to moderate aromatics yield notes of unripe banana, green olive and peppercorn, becoming more subdued and waxy with aeration. Starts off light and easy in the mouth but crescendos enough by mid palate to gain a point in concentration. Almost a fine grappa-like profile with subtle fruity / unripe banana flavours leading into a mildly creamy, waxy, grassy finish. Concludes pleasantly spicy, crisp and precise. Not the driest on the market but one of the best. 41.2% Alc./Vol.
Alexandre Gabriel, proprietor of Cognac Ferrand, comments, “…Our desire was to develop a rum that shows character, elegance, complexity and a great finish – the ideal rum for cocktails … beginning with a 3-year aged Trinidad rum, carbon filtered to maintain its white colour and to remove the heavier tannins while preserving the aromatics developed and refined by aging. Un-aged rums from Barbados and Jamaica are blended, along with a 12 year old rum from Jamaica. The Jamaican rum is an expensive ingredient but key to the taste of the overall blend. Trinidad brings elegance and refinement, Barbados brings character and aromatics with fruit notes without being too heavy and Jamaican brings the funk, the touch that makes it a complete product.”

...This rum is extremely sugar-forward, a monstrously sweet rum that leaves delicacy behind. Big tropical notes — mango and especially banana — hit you after the raw sugar cane fades, and that old Jamaican rum, pot-distilled for sure, brings a touch of hoary funk to the finish. As a blender for over forty years, the warehouses are where Billy Walker really comes in to his own. Working with casks dating back to the 1970s, he's created an updated expression of the pinnacle core range offering, marked by a new presentation and a slightly different oak regime: x-bourbon maturation followed by a lengthy spell in oloroso casks. Despite that, it's hardly a sherry bomb, however the style here is more settled and integrated than the younger bottlings, and just gets better and better with time in the glass. A delicious rush of fruity malt (dried pear, apple, vanilla) comes rounded off by crisp oak and orange zest; the balance is outstanding, making this easily the most accessible and elegant whisky in the current line up. That said, if you prefer your Glenallachie on the wild side, stick with the cask strength or even the 12YO. Leave this for the grown ups. 46% Alc./Vol. Non chill filtered.

[c.2024 tasting] ...The label proudly states it’s ‘overflowing with their signature heather honey charm’, which does sound a bit Highland Park-esque, doesn’t it? We weren’t particularly fond of the ‘previous new 18’ about six years ago, but as DJT would say, some stuff must have been fixed, very much so. Colour: dark amber with reddish hues. Nose: prune juice, plum wine, figs, milk chocolate, PX sherry, molasses, peonies, jasmine, and spearmint. That said, it’s far from heavy or overbearing. Mouth: absolutely nothing like that former 18-year-old. We do quickly arrive at notes of aged wood, deeply steeped black tea, rocket leaves, and dark tobacco. There is a drying quality, but it stays within pleasant bounds. Hints of cold espresso. Finish: sherry that behaves itself, alongside orange marmalade with pepper, cinnamon, and ginger. Comments: not my favourite of the range so far, but there’s no denying it’s very well-crafted. It has a touch of that old M style, just before FO arrived, if that rings a bell. Other Reviews... Fruitier, sweeter, and more straightforward than the new 16 year old. Ripe tangerine, orchard fruit, and caramel apples, all on a bed of nutty toffee. Underlying notes of cinnamon, nutmeg, and ginger, with a dusting of dark chocolate. After the sweetness fades away, there’s lingering spice and oak resin on the finish. A good alternative to Macallan 12 year old or Glenfarclas 12 year old.

Nikka Yoichi Single Malt Japanese Whisky (700ml)Hokkaido, JAPANReduced from $159.99$139. 99Bottle$1679.88 DozenABV: 45%Back in 2015, Nikka announced they were discontinuing their age statement and No Age Statement (NAS) releases for the Yoichi and Miyagikyo labels and consolidating them into two new bottlings. These whiskies have now arrived in Australia. Two NAS versions that differ slightly to the previous versions now represent the entire portfolio. It was yet another move that triggered a buying rush. Reports have it that Tokyo is now pretty much out of age statement Japanese whiskies, unless you visit bars or auction houses.
Nikka's reasons for the radical new strategy are now familiar. They simply have no old stocks to sell.
Decades ago, both local and world demand for Japanese malts was low, so few barrels were being laid down for extended periods.Stefan Van Eycken, writing for www.nonjatta.com explains "...there were years, at both Yoichi and Miyagikyo distillery, when the barrels laid down for maturation could be counted on the fingers of one hand. The ‘stock shortage’ is not an excuse or a PR stunt – it’s very real. Sources within Nikka have said that it is ‘likely’ that age-statement single malts will be brought back in 5 or 6 years’ time. No official statement to that effect has been made for the simple reason that doing so – in Japan – would be interpreted as a promise (which could come back to haunt them in 6 years’ time)."
The dropping of age statements doesn't always translate into a drop in quality. Early reviews for both new releases have been very positive. Evidently, Chief blender Tadashi Sakuma has risen to the challenge of creating a great assemblage from a restricted inventory.
Other reviews... Yoichi age statements are gone for now, but if the whisky stays this good, I can live with that. Black earthy peat, smoldering fires, a turned-out pocket of briny seashells, whole lime, lemon twist, sugared orange, ground ginger, and licorice. Silky smooth, with light, fruity sweetness developing into tangy Spangles, kiwi, and lime juice. The smoky peat is the weft woven through the fruit structure’s warp. The finish is insanely long: menthol, peat, and leather.

In the first nosing passes I pick up all sorts of malty scents, from nougat to candied almond to malted milk balls to milk chocolate to maple; secondary whiffs after more aeration discover salted butter, lightly smoked, toasty aromas that are basically dry, but also nicely rounded and supple. Entry is savory, bittersweet, grainy, toasted bread-like, nutty; midpalate features a medium full texture that caresses the palate while the dry-leaning flavor profile highlights the malty grain and wood resins, especially the tannic acid which dries out the flavor so that by the finish it’s squeaky clean and tight. A really tasty, well-made malt.

Connemara 12 Year Old Single Malt Irish Whiskey (700ml)County Louth, IRELANDReduced from $159.99$139. 99Bottle$1679.88 DozenABV: 40%Since Cooley Distillery resurrected the traditional Irish custom of peating, their Connemara label has gone from strength to strength. This 12 year old is a perfect introduction to the style. Muted and mildly fruity aromas yield attractive grape / cantaloupe / pear notes followed by hints of dried grass, grains and vanilla. The flavours seem to float over the tongue, such is the initial sensation of lightness. Fresh and delicate, a subtle fruitiness repeats, building moderate concentration with a kippery note towards the finish. The peat never really asserts itself and the aftertaste is somewhat fleeting (we're told the smokiness can vary from batch to batch). Regardless, this seduces with its soft touch. American oak matured. 40% Alc./Vol.

Nutty and fruity overtones with hints of unripe cantaloupe amid the wood. Everything seems to be in similar measure; Difficult to pin down. Firm and peppery with almost crunchy, grainy malt ; drying oak to finish plus understated, sooty peat and a touch of vapo-rub. Moderate length. Skillfully balanced and more complex than first impressions suggest. 46% Alc./Vol. Other reviews... Armorik has been making whisky for more than twelve years; it's growing in confidence, and the quality is improving. There's peat in the malt here, and it gives the whisky a feisty and earthy quality. The spirit is matured first in Armorik oak barrels and then transferred to sherry. Sherry and peat is a tough trick to pull off and this just about gets away with it, with coastal brine and lemon rubbing up against wood smoke, barley, and honey. 81 points

A creamy entry is followed by a plush, intense, sticky date, creme caramel extravaganza with lively spices adding depth and vibrancy. Creamy vanilla, liquorice bullet finale. Concludes satisfying, warming, long. Luxe mixing rum at a budget price. 40% Alc./Vol.

Truth to tell, I’d use this as a high end mixer for sure, and if looking for a premium sipper, just go up to the 15, or blow a hundred for the 21. When work was finally finished, the distillery released this new flagship 12-year-old. Replacing the legendary 10, the new Tober' was welcomed by the whisky community as a big step up from 'old school' Tober', that could sometimes be a bit 'dirty' and polarising. This is not a sherry bomb and certainly nothing as extreme or smokey as its alter-ego, 'Ledaig'. Created to be more cohesive and self-confident while remaining at the same price as its younger predecessor, it offers the perfect introduction to the island's style: Smooth and rounded, sweet, but also dry, with orange and citrus notes on the nose and rich oak followed by sweet orange and creamy caramel flavours over hints of spice. Some reports have it that this retains a subtly briney / salty edge, too. Welcome back Tobermory! Matured in first fill American oak and x Bourbon casks. 46.3% Alc./vol. Non-chill filtered.
Other reviews... Nose: Quite earthy with a hint of sweet malt and vanilla custard, but also some orange zest. Just a tinge of copper coins and plenty of minerality. Finally a whiff of honey and subtle stone fruits. Taste: Nice barley notes accompanied by pretty vibrant citrus flavours, quickly followed by a hit of oak shavings and spices — this is were the virgin oak makes its presence known. The whisky becomes slightly herbal and vegetal after. Finish: Herbal, spicy and drying. Medium in length. Rather rich and pretty well put together, this Tobermory is a wonderful introduction to the distillery. The combination of 80% peated and 20% unpeated malt promises a medium bodied Speysider with smoky, spicy edge. Tasting note: Gold / pale straw hue. Pedestrian aromas include tea biscuits, light vanilla and haystack. A featherweight entry leads into a medium bodied, grassy, grainy mid palate. Finish is woody, thin, grippy and medium long followed by a moderate aftertaste. The peat is barely discernible. No-thrills entry level malt. Best with a little water. 40% Alc./Vol. Founded in 1898, Ardmore have an unshakable belief in traditional distilling methods and insist that their Traditional Cask bottling uses the aromatic smoke from natural, Highland peat fires to dry their malted barley. The high cost of this procedure has meant that Ardmore is now the only Highland distillery that still routinely fully ‘peats’ its standard malt. Traditional methods also extend to the maturation. Casks for Ardmore's standard bottling for example, are double matured, first in the more usual oak barrels and then in much smaller ‘quarter casks’, delivering a unique integration of flavours. In common use in the 19th century, quarter casks have also become too costly for most distillers to employ today (The system has been used to spectacular success at Laphroaig). -

Viticulture is meticulous, with replanting based on the estate's own massal selections, while vinification is largely in stainless steel (reserve wines held in a mix of steel, large oak and concrete) with partial malolactic fermentation and an emphasis on extended lees ageing to build texture and depth. The range moves from the non-vintage Blanc de Blancs Cuvee de Reserve and vintage L'Esprit through to the single-vineyard Le Mesnil bottlings Les Chetillons and Les Montjolys, and concludes with premium multi-vintage cuvees such as Reserve Oubliee (from a perpetual blend dating back to 1988) and L'Etonnant Monsieur Victor, with the house's hallmark being pure, chalk-driven Cote des Blancs Chardonnay built for serious ageing.
Once the lacy white mousse dissipates it reveals a pale straw coloured base that has shades of gold to the edges. The bead is fine and profuse. Refined yeast lees, citrus and baked bread aromas are followed by light notions of oyster shell and cashew. Possessing good richness and fine airy feel, there’s a faint creaminess to the oily bread, yeast lees and citrus flavours which are backed by a subtle toastiness and some brioche. Finishes dry and finely textured with stimulating acidity and a long savoury aftertaste.
Drink over the next 4-5 years.

Based on the 2019 vintage (which Péters declares "the best of the decade") and disgorged this year, the NV Brut Blanc de Blancs Grand Cru Cuvée de Réserve bursts with aromas of crisp stone fruit, orange zest, freshly baked bread and beeswax. Medium-bodied, ample and pillowy, with a fleshy core of fruit, racy acids and a saline finish, it's animated by an attractive pinpoint mousse. Drink 2022 - 2032.

Citrus, jasmine, mint and crushed rocks are some of the many nuances that race out of the glass. Simon Field MW - DecanterThis elegant Champagne is powered by intense acidity, wrapping its racy frame in a cloak fashioned from the plush and creamy mousse as it carries flavors of ripe mirabelle plum and fig fruit, chopped hazelnut and preserved lemon, with an underlying tang of salinity.
