    Launched in 1927 and easily recognised by its frosted green bottle, Rémy Martin's VSOP contains hundreds of blend components ranging from four to twelve years in age. Classified as a 'Fine Champagne' cognac, fruit is sourced from the region's two best crus: Grand Champagne (55%) and Petit Champagne (45%). Ninety seven percent of the eaux-de-vie is distilled from Ugni Blanc, the remainder from Colombard and Folle Blanche.

    The highly regarded Jacopo Poli distillery is an artisan operation solely owned by the Poli family, founded in 1898 in Schiavon, near Bassano del Grappa, in the hearth of Veneto, the most typical region for grappa production.

    Tasting note: Produced from muscat grapes. Crystal clear with a glossy, silvery appearance. Perfumed opening aromas are sweet and fruity, at first reminiscent of young muscat. Aeration intensifies the aromas as they take on an unexpectedly tropical fruit edge that’s one part lychee and one part passionfruit / feijoa with a slice of banana thrown in. Wow! Entry is soft and semi sweet, mildly glycerous. The mid palate develops with terrific length, as pear tart, lychee and feijoa flavours are accompanied by a spicy flourish. Finishes exceptionally clean, dry and fantastically long. Poli hits the jackpot here. 40% Alc./Vol

    This superb example from Castaredes has been produced from Ugni blanc, Folle Blanche, Colombard and Baco 22 varietals and aged in excess of 20 years.

    Tasting note: Deep polished copper / mahogany colour is bright and shows ideal clarity. Gradually builds, issuing a mild nose prickle as it releases vanilla, mocha and date to open. Returning 5-8 minutes later finds the accent shifted towards mocha, brown sugar and brittle toffee-apple. Clean, fresh, concentrated and beautifully balanced, it offers semi sweet flavours of coffee, cocoa and prunes; hints of black pepper accentuate towards the finish delivering a pleasant heat to conclude satisfying, dry and woody with a cafe-creme, hazelnut fade. 40% Alc./Vol.

    This is the diluted version of "Solist", the cask strength ex Sherry matured whisky produced by Kavalan.

    Tasting note: Impressive polished mahogany / copper colour. Fleeting flashes of sulphur are dissolved into layers of dried fruits as fig, apricot and vanilla vie for attention; levels into a lower-key fruit cake focussed bouquet in the later passes. A light entry leads into a mildly tannic fruit cake-like profile, with the sweetness tempered by balancing spices and drying oak. Tannins reassert at the finish as the fruit cake flavours subside. Nice textural qualities and plenty of ‘old school’ sherry influence here. Think GlenDronach in mid to late teens and you get the picture. 46% Alc./Vol.

    Other reviews... Two out of three ain't bad. While Kavalan doesn't quite pull off the hat trick, this is no album filler either (can we still say that?). It is Karaoke Kavalan, Taiwanese X Factor whisky: a perfect reproduction of a big, plummy, pruney, tannin-soaked rich fruit compote with late fall damp forest notes. It says a lot about this distillery that five years ago we'd have marveled at this. Today, and by its own standards, it's Kavalan doing an Aerosmith ballad.

    New Canadian whiskies are a rarity in Australia. This one arrives with an unusual pedigree, succintly explained by Davin de Kergommeaux, a certified Malt Maniac and trained sommelier who has been enthusing about whisky as an independent commentator for more than a dozen years - in particular, Canadian Whisky.     "Caribou Crossing is the first single-barrel Canadian Whisky produced by a major whisky company since the 19th century. That was the time when people would arrive at Canadian distilleries with jugs to be filled straight from the barrel. The now infamous Bush Pilot’s, from the late 1990s, was also bottled one barrel at a time, a fact that contributed to its legendary status among the whisky cognoscenti. Caribou Crossing Single Barrel, from the Sazerac Company/Buffalo Trace, now advances this concept further, drawing its very best whisky from an inventory of over 200,000 barrels produced for it by several prominent Canadian distilleries.

    For Caribou Crossing, Sazerac’s Master Blender Drew Mayville selected the most mature and flavour-rich of these barrels and oversaw the bottling of each individual barrel. Each barrel has its own unique subtleties so identifying each barrel with a number on the package would help whisky lovers find bottles from different barrels and be able to compare them. Since this is single-barrel bottling, there are no laser codes on the bottle to help the more obsessive find different batches.

    “Our goal was to put forth the highest-quality whisky available and to give consumers a new way to look at Canadian Whisky,” Mayville said when he introduced Caribou Crossing earlier this year. “We are very proud of the end result and hope these new products will foster a greater appreciation among consumers for what Canadian whisky can be.” If market acceptance is any indication, Mayville seems to have achieved his goal quite nicely. Not only has Caribou Crossing won accolades from prominent whisky writers, it has sold well enough that a second batch was soon required to replenish empty shelves".

    And Davin's thoughts on the whisky? In short, "Creamy vanilla, a dusting of rye spices, bursts of citrus and a veritable tsunami of fresh-cut wood. Soft Corn. Very Highly Recommended.5 stars".

    Bottled in Kentucky, Caribou Crossing comes beautifully packaged in a 'Rock Hill Farms' style decanter bottle with a Blanton's-type wax sealed stopper.

    Tasting note: Burnished copper / brass appearance. Appealing bouquet includes notes of charry oak, toasted marshmallow and vanilla. Time in the glass draws out more cocoa and distinct spicy rye. Entry is silky, leading into a light to medium bodied profile of vanilla, sweet cereals and drying oak. Exceptionally soft. A touch of spice and rye emerges on the finish. Overall quite delicate and definitely drier than most Canadians. Mild aftertaste of toasted marshmellow. 40% Alc./Vol.

    Other reviews... For those of you who think Canadian whiskies are thin and bland, you might want to give this whisky a try. No, it’s not a new concept in Canadian whisky, like Forty Creek. It’s still very much a “traditional” Canadian whisky. But, when compared to most traditional Canadian whiskies, it richer, creamier, and velvety smooth. The flavors are straightforward—primarily vanilla, with some crème brulee, toasted marshmallow, tangerine, peaches & cream, and gentle rye spice—but they are clean and well-balanced. A delicious, lighter-style whisky just in time for warm weather. Two additional notes: This is single barrel whisky. There’s no way of identifying the cask, as far as I know. I’m hoping that all the barrels taste as good as the one I have, but I just wanted to make you aware of this. Advanced Malt Advocate magazine rating: 93 points. - John Hansell, www.maltadvocate.com

Rich toasty aniseed flavours meet up with notions of clove, scorched earth and spice. The toasty clove characters quite prominent leaving a touch of bitterness on the finish. Plush mid palate with velvety tannins and a medium length aftertaste.

A very fine bead shows good persistence. Rich yeast lees and baked bread aromatics are married to pear, citrus and honeyed toast like notes. Mouthfilling flavours of oily baked bread, yeast lees and honeyed cashew embellish the palate with richness over a pear and toast back drop. Creamy textural feel finishing dry with refreshing acidity. Medium to long baked bread, pear, yeast lees, toast and subtle cashew aftertaste.
    Drink over the next 4-5 years.

    This is essentially the same gin as Hernö's standard issue which employs eight botanicals, except Old Tom has extra British Meadowsweet added during the distillation. Following dilution a touch of honey is also included. Sweetening tends to lift the floral notes, releasing the juniper and making for an even smoother mouth feel.

    Since its release in September 2014, Herno Old Tom has received a total of four Master medals at the Global Gin Masters and also a Gold / Outstanding at the International Wine and Spirits Competition (IWSC) 2015.

    Tasting note: [Batch 33 tasted] Clear. Intensely aromatic with no shortage of pepper through the juniper, vanilla and floral citrus. Cinnamon too. Air contact emphasises lemon peel and coriander freshness. A creamy, gently tingling delivery featuring elderflower gelato, marzipan, trace vanilla and juicy juniper to finish. Wonderfully textural with excellent sweet-dry balance. 43% Alc./Vol. Unfiltered.

    Tasting note: Bright gold. Muted marshmallow and bubblegum in the opening whiffs. Slowly builds with added vanilla and stone fruits continuing through to a initially lean, then well rounded fruity/malty mid palate featuring stewed pear and sweet spices. Lovely vibrancy and balance with firm, drying oak closing and the vanilla / fresh orchard fruitiness lingering. Style wise akin to bottlings of Aberfedly or Glen Grant when the wood selection is at its best. 46% Alc./Vol.

    Other reviews... Surprise, surprise. This is like the school's best pitcher, who then steps onto the football team and throws for a game-winning touchdown. This is a whole new side to Kavalan. Remember Faith No More doing “Easy”? Having out-sherried and out-bourboned us with kickass rock-n-roll whisky, Kavalan goes for gentle and croony, with vanilla and honey. The coup de grace? Apple pie and cream morph into licorice and menthol. Exquisite.

    The Tatiarra Trademark Shiraz was created from a desire by winemaker Ben Riggs to produce a new Australian wine icon, which could be compared favourably with other great Australian wine icons such as Grange and Hill of Grace. The rationale was to bring together the juxtaposing qualities of Heathcote Shiraz and McLaren Vale Shiraz which would reflect each region’s terroir in a new and exceptional way. The Shiraz from Heathcote, which like the top Shiraz from McLaren Vale has incredibly inky black colour, the underlying difference between the two regions is fruit flavour and palate structure. The wines of McLaren Vale tend to be more voluptuous, almost pure fruit bombs but do not have the finesse and tannin structure that the wines from Heathcote deliver. The pure concentration of the black pepper and red berry flavours of Heathcote compliment the rich “joosy” character of the McLaren Vale. The result of Ben’s dream is Trademark Shiraz.

    Opaque black crimson colour with very deep dark red hue. The nose is quite perfumed with alluring aromas of violets, blackberry, liquorice and confectionary followed by some vanillin oak end notes. Rich and opulent possessing tremendous depth and persistence the palate delivers flavours of blackberry, liquorice and spicy dark plum followed by some confectionary with a strong black pepper back palate. Velvet smooth tannins, perfectly balanced with very long persistent aftertaste of blackberry, liquorice and blackpepper.

    First Tasted June 2004
    Totally opaque black crimson colour, which clings to the walls of theglass like paint. Wonderful lifted nose with violet top notes, followedby blackberry, plum, cedar and vanilla. The palate is mouthfilling, butwhen compared with a 100% McLaren Vale Red, showing more restrainedstructure and fine grained perfectly balance tannins. Flavours ofliquorice, plum, cedar and violets are supported by a black pepper backpalate which continues to evolve in a power wave that delivers aprofoundly lasting aftertaste.

    Other reviews... The nose features smoky caramel, dates, citrus fruits, and quite dry sherry. Dark chocolate and cocktail cherries on the rich malty palate, with peat smoke and a hint of dry oak balancing the sweet fruitiness.     For more than ten years, Glenmorangie, renowned Scottish malt whiskey distiller, has been pioneering the use of different types of casks in which to finish the maturation of malt whisky. Their quest is to find the ultimate aging nuance. With the release of the Margaux finish, they may well have accomplished that.

    The unique marriage of grape and grain offers flavours from both the wine absorbed in the maturation barracks and the unique characteristics of the wood itself. Chateau Margaux, the famous Bordeaux First Growth wine producer, sources barrels made from the Tronçais oak forest in central France, originally planted in the 17th century by Louis XIV. The climate in this region produces trees of smaller diameter which provide a fine grain and high tannin content. Powerful wood-derived flavours have been imparted into the floral, fruity complexity of the whisky. Master distiller, Mr. Bill Lumsden describes the whisky in the following words: "Zesty orange, apple and ginger wine notes flood through before deeper hints of spicy black pepper and cinnamon intertwine to give an overall combination of boldness and subtlety that perfectly captures the spirited essence of Scotland and the passionate soul of France.” Realize that Margaux Hemmingway was conceived over a bottle of Chateau Margaux, the wine. Approach this whisky with similar caution!

    Only 3511 bottles were ever produced of this 1987 vintage which marries the finest French winemaking heritage with one of Scotland’s favourite malt whiskies. Packed like the Crown Jewels in a clear acrylic display case standing on a black plinth, with each bottle accompanied by a booklet that tells the story of the journey taken to create this exciting whisky. Each bottle is hand numbered and signed by Bill Lumsden, Glenmorangie Master Distiller. Very rare.

    Notes from Glenmorangie... Autumn gold with russet highlights. Marshmallow, creamy fudge and milk chocolate. Fruit emerged as toffee apples and caramelised oranges. With water, clementines, tangerines, a tang of sherbet, pineapples, passion fruit, peaches and rich double cream. Full mouthfeel, brambles, blackcurrants, melon, spicy notes of gingerbread with dark bitter chocolate and hints of espresso. Long, lingering slightly dry finish. 46% Alc./Vol.

    Small batch bitters are surely making their mark on the cocktail scene, with cocktail enthusiasts and bartenders rediscovering the long lost recipes of the golden era and coming up with new signature flavours which help create the palate of the New Age Cocktail.

    While living in San Francisco in early 2007, Avery and Janet Glasser used high proof spirit and a variety of herbs, peels and spices to create what would be their prototype recipe for the Xocolatl Mole Bitters and catalyst for their new venture.

    The summer of 2010 marked a dramatic rebirth for Bittermens: winding down previous licensing agreements, striking new partnerships (i.e. The Bitter Truth) developing new products and most importantly, leasing a commercial kitchen. All Bittermens products are now being made by hand at their Brooklyn facility using primarily organic ingredients.

    Avid beer drinkers may be aware that certain varieties of hops, when used in high concentration, deliver a strong grapefruit flavor. Bittermans have decided to use the grapefruity quality of high alpha-acid hops along with grapefruit peel to create a concoction with layer upon layer of vegetal bitterness aptly named Hopped Grapefruit Bitters. This style of bitters is designed to enhance young (white/silver) rums, tequilas and mezcal, the grapefruit bitters play well with most cocktails where you need a little citrus punch. Try it in a daiquiri, gimlet, or even a gin and tonic (with a splash of maraschino).

    Aultmore of the Foggie Moss 12 Year Old Single Malt Scotch Whisky (700ml)

    Aultmore is located in Keith, Banffshire. Its name is a derived from the phrase 'An t-Allt Mòr'', Gaelic for big burn, referring to its water source, the Auchinderran burn. It was founded in 1895 by Alexander Edward, then owner of the Benrinnes distillery. In 1998, after a patchy history, the distillery was sold to Bacardi subsidiary, Dewars, which had previously owned Aultmore between 1923 and 1925. Aultmore produced their first official bottling, a 12 year old, in 2004. The house style is typically light and fruity with most of the wood employed being American oak.

    Tasting note: Pale gold. Minor sediment. Ripe pear and apple tart followed by hints of hay; the aroma is partly obscured by the tingly spirit lift. Almost the concentration of a cask strength with big beefy malt and a peppery attack. A little thin and acidic towards the finish, but nice underlying drier styled malt peeks through. Some light water biscuit and dried grass notes in the aftertaste. 46% Alc./Vol.

    Other reviews...The youngest bottling in Dewar’s new line up of malts from its Aultmore distillery, near Keith, this expression offers a nose of peaches and lemonade, freshly-mown grass, linseed and milky coffee.     At the 2010 World Whisky Awards, whiskies from Japan won prizes in two of the top three categories for Scottish-styles. It was a turning point of sorts, yet those in the know weren't surprised; Japanese whiskies have been snapping up awards at international competitions for decades. The problem has been keeping up with international demand (the majority has traditionally been consumed within Japan). The situation has now changed with Suntory significantly increasing exports. A key role is played by their Hakushu distillery (pronounced "Hack-shoo"), one of the largest malt whisky distilleries not only in Japan, but in the world. Built in 1973 coinciding with Suntory's 50th anniversary, it's set amidst spectacular pine forests close to the Japanese Alps. Suntory also purchased the distillery surrounds to protect water quality and conserve the local environment. In fact, water from the district is considered the best in Japan, something Suntory have capitalised on by bottling and selling it throughout the country. Barley required for single malt production is reportedly imported from Scotland or elsewhere (including countries like France, England and Australia). Due to the height above sea level (700m), low pressure distillation occurs naturally, said to contribute to the light, fruity style. The latest renovations mean a variety of stills with different shapes, sizes, lyne arm orientations, heating methods and condenser types are geared towards diversity and quality rather than quantity. The resulting whiskies make a significant contribution to Suntory's large number of malts and blends.

    The 12 year old Hakushu is considered a fine introduction to Japanese styles for those who enjoy smokey malts, though the degree of smokiness is said to vary from batch to batch. Our tasting from 2014 found a bright gold coloured whisky with restrained aromatics yielding faint suggestions of toast and honey. Several minutes adds muted scents of sponge cake without budging the intensity. The whisky tastes semi-sweet with a juicy feel and a lipsmacking, biscuity mid-palate hollowing towards the finish with some late sweetness and delicate oils entering. It's clean and crisp making for a nice aperitif; you could also describe it as youthful and vibrant, but not peaty. See Whisky Advocate's notes below for notes on a more recent bottling.

Smells of sawdust and pecans in the opening sniffs, plus a bit of summer flower garden (carnation) and spice (nutmeg); there’s an acute nuttiness to the aerated bouquet that becomes more like candle wax with further exposure to air; intriguing and unique. Entry taste is cocoa-like, bittersweet and nicely textured, almost oily (a plus); midpalate stage reveals an intensely grainy core flavor that’s both astringent, slightly sweet and caramel-like. The fruity malt seems more Bourbon-soaked than the nose. After the initial attack, Oloroso peeks through in a thick, oily, warming, gently bitter surge. After a riot of bright fruits, paradise slice, nutmeg, cinnamon, dates, and raisin, the palate becomes awash with apple and rose hip, though the strength makes it a wild ride, the tongue is conquered into submission.     'Cuesta' is a brand owned by the prestigious Sherry house, 'Lustau', produced and bottled from a selection of butts in the Lustau Bodega. The concept is to offer high quality sherries under a separate brand in markets where Lustau is already represented. Yet given the exceptional standard set by the Cuesta PX, one has to wonder whether they've shot themselves in the foot. Aged for a minimum of ten years, this superb solera is produced from sun dried Pedro Ximenez grapes.

    A seriously good example of PX and an absolute steal at this direct import price.

    Pours a viscous sienna brown colour with a deep green olive tinged hue. Potent scents of raisins, honey and Christmas cake engulfs the nostrils with hints of toffee, marmalade and walnut also present. Exceptionally concentrated and rich, a thick luscious dollop of raisin, honey and Christmas cake like flavours are draped across the palate with notions of marmalade, toffee and subtle dried nuts the back drop. Warm, mellow spirit with an oil like consistency to the mouthfeel. Long sweet, textured aftertaste. An ideal match with vanilla ice cream and Christmas pudding.

    Maxwell Wines of McLaren Vale's Honey Mead is made by fermenting pure Australian Honey, creating a bouquet of beeswax, citrus and stonefruit. Drinks in a similar way to a full bodied white wine.     Make Syrup using Mead

    Combine 5 table spoons of sugar with 2 table spoons of water in a saucepan and stir over medium heat until sugar dissolves.
    Bring to a boil and cook without stirring until pale golden (approx. 5 minutes).
    Remove from heat and stir in 1/4 cup of boiling water, then 1/4 cup Mead, then pour gently over cake.
    Any remaining syrup can be served warm over slices with whipped cream.
    Liqueur Mead can be substituted in the syrup.

    Tasting notes: Bright gold with a gold ochre hue. The nose is a virtual merry go round of spice and fruit with pineapple and banana between flashes of spicy rye, vanilla and creme caramel. Imagine your favourite American Rye, only slimmed down, smooth and ultra sexy. This is seductive stuff from the get go and the palate doesn’t let up. Sweet baked apple and custard like flavours are served up in a gently warming, spicy wrap with impeccable balance. Long, subtle aftertaste of toffee apple, spice and creme caramel,  finally finishing dry with a dusty cocoa fade. It's Canadian whisky as most will never have experienced it. Palate: rock-hard and crisp mouth arrival thanks to the early rye, softens for the corn and then the rye sends some fruity shockwaves around the palate. Finish: bitter and booming, big controlled oak finale on gentle oil. This has definitely changed in the last seven or eight years as all blends must.     A homage to a gin created in the early 20th century which was said to have been made in a pot still made of gold. At the time, excavation works were taking place in Alsace where a site with antique valuables was found. Amongst them was a gold pot still. After these objects were deemed to have no historical value, they were put on sale. One of the buyers was an amateur distiller, a man who immediately fell in love with the still. He spent years of his life looking for the perfect spirit, finally creating a gin with tangerine and hints of vanilla and almonds. He named this special spirit Gold 999.9 as he considered it to be his liquid gold. Botanicals include juniper, almond, vanilla, cassia bark, gentian violet, poppy, tangerine, coriander, violet flowers and angelica root. The colour is bright gold with pale straw edges. On the nose there's big citrus input; think orange cake or tangerine peel and possibly hints of chamomile. Given more time in the glass and it essentially smells like triple-sec. The entry is light following through to a medium dry, juicy orange cake / citrus peel profile that finishes dry, delicate and gently warming. Call it contemporary, 999.9 is undeniably very orange dominant - to the point of being hard to classify as gin. 40% Alc./Vol.

The palate clearly demonstrates its great age and qualitywith incredible intensity of flavour, viscosity and length matched to elegance and finesse. The wine has a perfect harmony of rich developed fruit flavours, aged rancio complexity and a slightly drying spirit finish. A truly outstanding liqueur tawny that deserves to be recognised as the equal of any fortified wine ever made in Australia.

This brilliant fortified is remarkably light on its feet given its massive richness. Further exposure accents pleasing woody notes (cedar, sandalwood). Fuller and richer than the 3 year old with middle weight flavours of baked apple and light spice, keenly balanced by fresh, cidery acidity.     Born in the Caribbean and raised in New Zealand, Stolen Rum was created after Kiwis Jamie Duff and Roger Holmes, caught in the rum resurgence that was taking place worldwide, ditched their day jobs in favour of developing a world class rum.“Stolen Rum had only been in the market for three weeks when we entered the competition.     Produced from a molasses ferment and a continuous distillation, maturation takes place in Trinidad, the southernmost island of the Caribbean, for a minimum of two years in individually chosen charred American oak bourbon barrels. The results are carefully blended by hand before being carbon filtered to remove any colour.

    Tasting notes: Clear slightly viscous appearance. Offers a strong bouquet combining opening scents of molasses and spice (white pepper and vanilla), before turning more ripe fruit like - specifically very ripe cantaloupe or grapes. A super soft entry accumulates depth as a slow spice wave unfolds delivering excellent length. Medium bodied, semi sweet and mildly fruity-meringue like mid palate.     In 1806, with a ship full of spirits bound for America, Englishman James Gosling ran out of wind and time. With his charter expired, James's ship, the Mercury, put in at the nearest landfall, the island of Bermuda. Knowing a good thing when he saw one, he decided to make the best of an uncertain situation. James opened a shop on the King's Parade, St. George's, in December 1806, and the Gosling Family has been in Bermuda ever since. Today, Gosling Brothers is Bermuda's oldest business and Gosling's Black Seal Rum is Bermuda's number one export. The Gosling family recently decided to expand their portfolio, and have created a distinctive gold rum by blending continuous and double pot distilled rums.

    Gosling's Gold Seal replaces the old 'Goslings Gold'. The rum presents moderate aromatics including faint notes of buckwheat pancake, dilute maple syrup and raw sugar. Better defined on the palate with a semi sweet, relaxed delivery that suggests caramelised fruits, boiled lollies, vanilla bean, mocha and a dry, warming cinnamon finish. Average length.     First released on the Australian market in 1989, Gentleman Jack is a premium JD using a formula based on early trial work carried out by Jack Daniels himself. It's bottled to celebrate his whiskey being awarded a top gold at the St. Louis fair in 1904. While it's consistent with the original Jack Daniel's style, it does however, differ in being a 'single whiskey', not a combination of whiskies blended together. Gentlemen Jack is also charcoal mellowed twice though maple wood, once before aging and once again after. The distillery describes this process in their own distinctive way: 'Jack knew what a single journey through the charcoal meant to his exceptional whiskey - how the coarsely ground maple charcoal mellowed out the harsh oils and impurities that threatened the smooth, warm character of the whiskey. Imagine what a second trip would do, he mused. And so, throughout his life, he experimented with charcoal mellowing his whiskey twice. The process proved so painstaking, he never crafted enough of his new whiskey to introduce it to the world. Happily, he saved the recipe. In 1988, we finally put our founder's formula into limited production, and Gentleman Jack became the first new whiskey from the Jack Daniel Distillery in more than 100 years. No, our folks in product development have never been known for speed. We think a good thing is worth waiting for and, in the case of Gentleman Jack, I think you'll agree, we were smart to wait and get it right.'     ...So what’s Gentleman Jack all about? It is, essentially, Jack Daniel’s that’s been through an additional charcoal filtering process with the goal of making the spirit smoother and mellower. (The distillery even calls it “Charcoal Mellowing.”) And in general, it works. Gentleman Jack is significantly smoother and quite a bit sweeter, taking on a caramel and honey notes and a more gentle smokiness than standard JD.     Crude is North Carolina’s first cocktail bitters company. The first, and currently only bitters company to ever win a Good Food Award!     Why “crude”? The name is in reference to the rudimentary origins of bitters. Exotic (and undocumented) roots, herbs and spices were aged in various liquids and beneficial (and unverified) claims attached to them. Hence, crude. The crude moniker does not reflect their methods. Crude Bitters are crafted in small batches from 100% maceration in alcohol, with no glycerin, chemicals or dyes. Located in Miyazaki, Kyoya Shuzo use a sweet potato base spirit for this Yuzu driven style.     In 1874 M.W. Heron, a bartender, developed Southern Comfort in his bar near La Rue Bourbon in New Orleans and first served it in traditional fashion from a whiskey barrel. In 1934 after a short break in production due to Prohibition, Southern Comfort introduced their current distinctive label featuring the now famous Currier and Ives lithograph of a Southern plantation house on the banks of the Mississippi. The plantation is known as "Woodland Plantation", built in 1834. Southern enthusiasts can visit the newly renovated mansion, which now operates as a nine bedroom country inn.

    Southern's identity as a bourbon lies only in its origins. Its inception was in an awful whisky batch that Heron was attempting to improve. Actually, Southern Comfort was originally a Peach Liqueur, and one of the few peach liqueurs on the market. Produced using neutral spirit and over 100 ingredients, the final liqueur matured for eight months prior to bottling.

    Since then the formula has changed and Southern is now branded a 'whiskey liqueur'. Sweet and rich with a molasses background and faint medicinal flavour, it's America’s “Take it easy Drink”. Enjoy it straight, on the rocks or with cola.
