    Depaz's 'Cuvee de la Montagne' was exclusively harvested from cane growing in the volcanic soils on the slopes of Montagne Pele. The fresh-pressed cane juice was fermented for 48 hours, distilled in a copper column still to 70% ABV, then slowly reduced with water over sixty days. Before bottling, it was rested in stainless steal tanks for at least three months. The result is a floral rum with notes of orange blossom, sweet banana and spice.

    Notes from Depaz... NOSE: fruity, floral and complex aroma, with a specific mineral touch. PALATE: the attack is sweet and honeyed, with a very elegant floral flavours. Sugar cane, orange blossom, banana combined with spicy notes of pepper and tobacco follows. 45% Alc./Vol.

    Produced at the Depaz Rhum Chateau & Estate on the French West Indies Isle of Martinique this is an exclusively agricole product, the signature ingredient of which is estate-produced blue cane. Considered the costliest and most difficult cane to grow, Depaz Estate claim their blue cane "...delivers the ideal balance of sugars for maximum flavour and character delivering a superb floral nose and a smooth, flavorful and refined character to the rhum. Even within Martinique, very few locations are suited to produce blue cane at the quality level and quantity necessary for developing a luxury rhum". This VSOP is seven years old.

    Tasting note: Deep burnished copper. Medium sweet aromas of raisin cake, vanilla, cinnamon, a little clove. Later, greener notes blow through…white pepper, dried grass. An attractive assemblage of vivacious agricole with sweeter, heavier oak notes. Cough lozenges(?), sprinklings of white pepper, golden syrup and raisin cake through the finish. A little short but very tasty. 45% Alc./vol.

    Previous batch tasted 2013: Bright burnished copper / brass colour. The aroma is unusual for gold rum, being slightly grassy, with hints of unripe banana. Exposure brings sweeter, buttery scents of vanilla to the fore followed by a delicious fruitiness (ripe cantaloupe) leaving an overall impression not unlike aged, oaky Chardonnay, though the aroma is obviously much weightier here. Third pass adds bitter chocolate and caramel into the mix. Exceptional complexity. The unexpectedly dry and light entry delivers a rum that's a cross between blanco agricole and typical aged rum. This is drier and slightly greener than most gold rums, though none the less pleasant for that, with unripe banana, cut grass and beeswax flavours, finishing crisp, lean and vibrantly spicy with moderate length. 92 points

    The 'HSE' Rum Company offers a range of rums finished in x Cognac, Whisky and Sherry casks, adopting the same principles of maturation that many innovative Single Malt Scotch whiskies have employed for decades. This blend of three to four year-old rums was mainly aged in x- bourbon barrels. .

    Tasting note: Deep copper. A terrific rum sniff offering dense fruit cake plus cinnamon, chico lolly and later hints of maple syrup. Five minutes in the glass finds the accent shift towards liquorice bullets and brown sugar. Lively and fresh delivery offers up suggestions of dried grass, vanilla, banana cake and much later, a delightful dried mango twist in the aftertaste. Moreish and well rounded agricole. 40% Alc./Vol.

    Rhum Agricole is both a distinctive production methodology and, more recently, an AOC (Appellation of Origin) protected product when produced according to strict criteria in the French protectorates of Martinique and Guadalupe. Primarily the distinction is the use of fresh cane juice instead of molasses or other refined sugar products and column distillation. The results are generally dryer and more aromatic Rums of elegance and refinement.

    HSE's blanco is reputedly the only rhum/rum in the world which is progressively reduced from the 70% distillate down to 50% alcohol over a period of two years, partly via evaporation. Others typically reduce immediately after distillation, and then bottle shortly after or within a few months. The former technique allows the rhum to 'rest' and develop far longer than any other white rum, preserving the delicate aroma and mouth-feel.

    Pere Labat's unaged agricoles come in three variants with differing alcohol strengths, but with similar looking minimalistic labels. Some prefer the '40' because it has all the signature flavours of the Island Proof 59 without the spirit heat. Expect a classically clean and grassy agricole profile with a slightly sweet edge. 40% Alc./Vol.

    Distillerie Poisson (est. c.1860) is the oldest operation of its kind on Marie-Galante and custodian of one of the most venerable stills in the Caribbean. Built in 1916, not much has changed in the last century, but in 2007, Guadeloupe native, Jean-Cedric Brot purchased the distillery and committed to reinvigorating the storied spirits that made it famous. He has named his brand after Père Labat (Father Labat), a multi-talented French Dominican missionary who introduced Charentaise distillation, the same method used to make Cognac. It made for a rum that was more "floral and round instead of sharp and burning". Today, four kinds of cane are used: red, white, blue, and gray. Some are grown on the estate, some are purchased from local growers. All are hand-cut and brought to the distillery by ox-drawn carts. 72 hour fermentations yield a vin de canne at 5% abv. Distillation takes place in one of two copper creole column stills which have eleven stripping plates and four rectifying/enriching plates. The spirit comes off the still between 69% and 71% abv. The Rhum blanc is placed in open top wooden foudres for 10-15 days and demineralized water is added to bring it down to proof.

These Rums are frequently aged in used French brandy casks for a minimum of three years with 'Rhum vieux' (aged Rum) frequently compared to high-quality French brandies.

    J.M rum is distilled on Martinique's smallest estate, located in the northeast in Macouba, where the sugar cane grows on 28-degree vertical slopes in rich volcanic soil at the foot of Mount Pelée. Due to its unique location with sea breezes, rainforest, an intense microclimate, and high cloud cover, Rhum J.M. cuts their sugar later than other distilleries (most cut the cane at the end of February or early March, whereas Rhum J.M. does not cut theirs until late March or early April). This practice, combined with the region's peculiar environment are said to be contributing factors to the unique flavour to this unusual rum.

    Tasting note: Clear. Lemon, meringue, dried fig and mineral aromas with some peppery notes. A soft, silky palate entry explodes into semi sweet flavours of dried fig, green olive and green peppercorns. Slightly prickly, mouthfeel. Long, drying aftertaste of black pepper, green capsicum and boiled confectionary with a subtle mineral fade. A powerful, spicy white rum. 50% Alc./vol.

A lively, silky entry leads to a dry-yet-fruity medium-full body of raisins, figs, nuts, vanilla custard, and banana puree flavors.     Tasting note: Attractive bright polished copper. Issues a prickle in the first inhalations presenting aromas of jelly bean, mocha and muted brown sugar. Aeration yields more in the way of creme caramel and golden syrup with the peppery undertones remaining. Palate is slightly harsh and bittersweet but agreeably balanced by a late sweetness in the form of marzipan, dark chocolate and chico lolly into the fade. 54.5%Alc

    Other reviews... This bright mahogany spirit has a playful, slightly boozy scent, mixing cherry and pineapple with caramel. Meanwhile, the flavor has lots of oak, leather, cigar and dark chocolate, with a lingering finish that plays on and on.     Tasting note: Attractive deep gold ochre appearance. Varnish in the opening sniff blows off to reveal gorgeous and pure scents of buttered toast, sweet tobacco, old books and vanillin oak; several minutes of air contact releases chocolate covered cherries, old leather and dilute maple syrup. Final inspection finds creamy soda alongside hints of dried grass. Outstanding aromatic complexity. Fuller and richer than Damoiseau’s younger bottlings, yet with no compromise on the freshness or purity, it features nougat and dried banana flavours infused through a mildly grassy base note, all brilliantly balanced with restrained sugars and banana peel returning late into the aftertaste.     Tasting note: Bright amber / polished brass appearance shows traces of minor sediment. Wow! Captivates with its powerful scents of mango lahsi then apricot jam, followed by icing sugar and cut grass after further exposure. No loss of focus in this impressive bouquet that maintains its freshness and purity after five minutes in the glass. Mild, almost water like entry carries through to a concentrated, fine tuned and pure delivery; medium dry flavours of coffee, leather and more marzipan towards the finish closing with spicy banana cake and hints of mango in the aftertaste.     In our last shipment from Damoiseau, the cask strength bottlings were the most exciting of the collection - and not necessarily the most expensive.

    Tasting note: Beautiful deep copper penny colour shows medium viscosity. Varnishy openings blow off revealing powerful aromas of sarsaparilla, dried mango, semi-ripe banana, papaya and dried coconut. Slightly hollow entry. Builds into an intense, gently bittersweet, peppery profile featuring dried banana, sarsaparilla, dried grass, liquorice root and a salivating brown sugar, marzipan and tropical fruit aftertaste that seemingly never ends. What makes molasses sweet is reducing it to super-concentrated sugar used for alcohol. Actual sugar, while it’s sweet, is not as sweet as people would perceive. It’s fruity and grassy, and the distillate of rhum agricole is really, truly the cleanest form of that distillate. The pun is horrible, but it’s like grass to glass.”

    You could consider Agricoles as the Caribbean’s equivalent to Bordeaux, not only because they taste more "European", but because Rum Agricole is the only rum to be governed by an AOC (Appellation d’Origine Controllee, the French official label of origin). As they usually manage their own plantations, agricole distillers can harvest at the optimum time, rather than rely on the whim of private growers. They can also crush and begin fermentation immediately (sometimes with indigenous yeasts), a key factor in the category's style. Put simply, these rums taste fresher, not only for what they're made from, but because they are.

    Because agricole's distinctive and diverse characteristics make even entry level expressions of considerable interest, cocktail geeks in the U.S. have been hooked on them for some time. Cask strength, vintage dated and ultra-aged bottlings are frequently nothing short of extraordinary, drawing comparisons with the very best Cognacs or Whiskies on the planet.

    Tasting note: Bright gold / brass appearance. A plush bouquet yields enticing scents of brown sugar, vanilla, clove and banana cake. The palate is immediately much leaner and drier than the nose suggests and shows no indication of the high ABV with amazing balance throughout. Mid palate builds slowly in concentration towards an intense burst of old liquorice strap, leather, dried grass and green peppercorn.     Martinique, Guadeloupe and the adjacent island, Marie-Galante represent the very heart of Rhum Agricole. While they may lack the global footprint of molasses-based rum, rigorous regulations and strict adherence to high-quality production standards make it hard to find anything less than stellar examples out of Martinique and the lesser known Guadeloupe. Velier's Luca Gargano selected this expression from Papa Rouyo distillery (established 2021) located in Goyave in Guadeloupe, and bearing the nickname of Charles Albert Ruscade. Born in 1900, he was the son of a cane planter and became a farmer himself from 1920 until his death in 1980. It's from this heritage that the idea of creating a micro-distillery in his name was born in the minds of three cane planters: Papa Rouyo's great-grandson, Joris Galli, as well as master growers Tim Synésius and Jean-Marie Gobardha.

    According to Velier's classification, this distillate is Pure Single Agricole - that is, from a single distillery, distilled exclusively in pot stills. An ester content of 67.9 g/hlap has been achieved using a variety of cane called Matos (B80.0689) grown on the distillery's original (and historic) four hectare plot named 'Le Moule', situated on the limestone-clay soil of eastern Grande-Terre plateau. Synésius, who is one of the distillery’s “maîtres-canniers”, ensures the canes are hand-harvested before being crushed on-site. A long fermentation and a double distillation allow a particularly intense aromatic extraction, resulting in a pungent and multi-faceted agricole with vegetal notes alongside lime, olive, dried herbs and brine that will add a vivaciousness to cocktails. Nothing was added before bottling, only a reduction was done with Saint-Claude spring water. Distilled in 2021. 62% Alc./Vol. Very limited stocks.

    Martinique is a French island with the largest number of distilleries in the Eastern Caribbean. Both pot and column stills are used. As on other French islands such as Guadeloupe, both rhum agricole (made from sugar cane juice) and rhum industriel (made from molasses) are produced. These Rums are frequently aged in used French brandy casks for a minimum of three years with 'Rhum vieux' (aged Rum) frequently compared to high-quality French brandies.

    J.M rum is distilled on Martinique's smallest estate, located in the northeast in Macouba, where the sugar cane grows on 28-degree vertical slopes in rich volcanic soil at the foot of Mount Pelée. Due to its unique location with sea breezes, rainforest, an intense microclimate, and high cloud cover, Rhum J.M. cuts their sugar later than other distilleries (most cut the cane at the end of February or early March, whereas Rhum J.M. does not cut theirs until late March or early April). This practice, combined with the region's peculiar environment are said to be contributing factors to the unique flavour to this unusual rum.

    Tasting note: [2002 release tasted] Beautiful clarity in the glossy gold / amber colour. Initial whiffs pick up suggestions of icing sugar and coconut oil, developing more substantial notes of sweet dried grass and spicy mince fruit pie after several minutes coaxing. Assertive yet nicely balanced in the mouth with semi-sweet, cane-like, grassy flavours. Dilute golden syrup on the finish. Warming, black jelly bean aftertaste. Yum! 92 points 46.6% Alc./Vol.

    Tasting note: Deep gold ochre / copper penny colour. Prickly fumes of alcohol in the opening stages; further aeration finds hints of latex, buttered raisin bread and vanilla. Five minutes ups the aromatic intensity focussing on raisins, dates and cocoa. Creamy entry leads into an intense attack with bittersweet toffee followed by a medley of sweet spices and flashes of bounty bar in the aftertaste. Excellent balance at 59.8% Alc./Vol.
