    When gin became popular during the Prohibition era of the 1920's, most people in the United States drank the poor quality, homemade spirits found in speakeasies. This alcohol -then called bathtub Gin - was the most popular spirit being made in the United States because it was the easiest to distill. What'smore, gin, unlike whisky, did not require any aging in oak barrels which were expensive and cumbersome to store and conceal.

    Bathtub Gin was made by placing a large quantity of (often dangerously) low-quality, de-natured alcohol in a home bathtub. The poisons were removed from the liquid to recover ethyl alcohol that was then flavoured with juniper berries, diluted and put into bottles. The highly variable quality of the spirit meant that consuming it in any quantity was a dangerous venture that cost some party-goers their lives. It has also being suggested that the many extravagant cocktails of the Jazz era owe their inspiration to disguising the disgusting taste of bathtub Gin. Thankfully, this is that kind of drink by name only...

    Tasting notes: Pours almost water-like with a very pale straw blush and thick legs. Closed at first but opens up with heavy, oily aromas of liquorice root and white pepper in the initial pass with air contact drawing out juniper, smokey cardamom, citrus peel and subtle herbaceous notes. Big, viscous entry leads into an exceptionally concentrated, oily, lemon lozenge, white pepper and dried juniper hit. Fabulous purity and balance. Concludes mouth-numbing, super long and with more than a touch of Fisherman's Friend at the finish. Punchy and about as big as gin gets. 69% Alc./Vol.

    Considered the first ever 100% Asian botanical Gin, Royal Sedang is made using a long maceration of chosen botanicals in order to achieve full extraction of flavour components. The production process is a slow and careful one that can take six to eight weeks. Botanicals include lime, lemongrass, ginger, litchi, jasmine tea, coriander followed by a slow reduction with pure spring water. Aromatically, it's described as "...a meeting of Vietnamese and French cultures, reminiscent of entering into a fresh food market in Vietnam or enjoying a fruit breakfast at a hotel bar".

    Tasting note: Chugoku Jozo is already fairly well known as the company behind the Togouchi brand of Japanese whiskies. They also oversee two gins produced at the Sakurao distillery employing seventeen botanicals from Hiroshima - these include cherry blossom, Japanese juniper (both leaves and berries), Hatsukaichi oyster shells and wasabi.     Taking craft-production to a new scale is 'Hartshorn', a Tasmanian upstart making boutique batches of Vodka and Gin from their farm sheep whey. Ryan Hartshorn and family run what is presently the smallest distillery in Australia: batches of ten bottles are not unusual. The dedicated hands-on approach is extended to the packaging with every label hand painted.

    Botanicals are vapour infused using a 50L glass column still (as opposed to steeped) giving the Gin a more delicate and subtle bouquet. Ryan adds, "Besides the juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). I'm using six Native Australian botanicals with three of them never used before in any other Gin."

    Tasting note: [Batch 1 tasted] Clear. Atypical gin aromas of banana pudding / fruit yoghurt over later scents of citrus peel, rosewater and subtle piney juniper. A creamy, light, floral-soft entry. Medium-dry, low-key flavours of fruit yoghurt, orange spice cake and delicate white pepper / pine-like notes balancing the finish. Hints of rosewater and juniper late in the aftertaste. An eclectic and original arrangement of unusual botanical notes. Unfiltered. 40% Alc./Vol.

    Established in 2014 as a sustainable project, Silent Pool Distillery is named after a nearby natural spring lake which is also the distillery's water source. Located in the southeast of England in the Surrey Hills countryside and produced entirely on site by Cory Mason, the gin employs 24 botanicals including lavender, chamomile, citrus, kaffir lime, local honey and juniper.

    Unlike many other gins, Silent Pool is distilled using a column still. Mason comments, "Through precise control over a series of plates and cooling pipes, we are able to separate the exact flavour we want from each botanical that we use. In this way, we can break down the botanical, and capture only the section of it that we want to use in our gin.

    The operation is run on a reclaimed wood-fired steam boiler from the 1970s, previously used to power a crane on Liverpool docks. Sustainable hardwood is sourced from the local Albury forest and gives the whole operation a very low carbon footprint as well as truly local credentials.

    Tasting note Medium intense, peppery whiffs building with fresh juniper, lemon/lime peel, lavender and chamomile tea. Very piney on entry, with lemon and lime accented through the middle. Finish is drying, with lively spices and gentle cinnamon warmth. Ends pure, fresh and mildly sappy with pine and lavender lingering in the aftertaste. A well balanced sipper for elegant Martinis. 43% Alc./Vol.

    Established in 2009, Sipsmith boast to being the first copper-pot based distillery to start up in London in 189 years. One of only four gin distilleries located within the city limits, it's situated on a residential street in West London on the site of a former microbrewery (also the site which later became the office of famous beer hunter and whisky writer, Michael Jackson). Using an English barley mash created off-site, the company employs a German swan-necked copper-pot still which the proprietors named 'Prudence'. She's caricatured on the brand's labels as a stylised pot-still with a swan’s neck and head.

    Sipsmith's London Dry is made using ten botanicals: Macedonian juniper berries, Bulgarian coriander seed, French angelica root, Spanish liquorice root, Italian orris root, Spanish ground almond, Chinese cassia bark, Madagascan cinnamon, Sevillian orange peel and Spanish lemon peel. If the botanicals seem rather commonplace by contemporary gin standards, the company vouches for their freshness, which is an often underestimated factor in gin production. Quite simply, the fresher the ingredients, the more potent the flavour infusion will be. Companies producing gin on a grand scale, such as Beefeater or Gordon’s simply can’t secure the quantities of botanicals required in fresh form for year round production. Water purity is also considered key. Batches are made 400 bottles at a time.

    Geraldine Coates, who has written books about gin and runs the website ‘Gintime’, also considers the size and flexibility of new micro-distilleries like Sipsmith to be their real point of interest."It means they are producing the equivalent to caviar as opposed to tuna fish," she explains.

    With its fairly classic London Dry botanical bill, Sipsmith's taste is predictable yet satisfying. The nose offers a restrained elegance - fresh juniper is the initial focus followed by hints of citrus peel, lavender and rosemary. A soft entry leads into a light to medium bodied mid palate that's gently spicy, almost creamy in texture and building in concentration with flavours of juniper and citrus lozenge. The balance is perfect, the finish pristine, persistent and refreshingly dry. Altogether an understated and stylish gin straight-up that also adds a creaminess to G&Ts. Recommended. 41.6% Alc./Vol.

    As London Dry gins go, Sipsmith is a quieter, sweeter example. The nose is mild, with the citrus notes easily overwhelming the juniper. The latter is more present on the body, but even there it’s kept in check by cinnamon sugar, some woody root notes, and, surprisingly, those almonds. The finish is more sweet than tart, and the spirit drinks far more sedately than its slightly overproof alcohol level would indicate.     Maxime Chapoutier is part of a family of winemakers who have been working in the Rhone Valley since 1808. When a botanist was enlisted to carry out research on local plants, Maxime was indirectly inspired to conduct plant distillation trials from a specific plot. It led to the creation of Sothis gin, using a base spirit derived from organically grown grapes. Our tasting found low-key aromas of bitter lemon, juniper, light ginger and white pepper that follow into a silky, medium bodied palate hinting at citrus peel, thyme, pine needles and chamomile tea, wrapped up in a peppery, medium long finish. The style here is relatively understated, so avoid heavy mixing. Botanicals include juniper, aced, chamomile, yarrow, everlasting, wild thyme, verbena and sweet clover.     A gin not made, but grown - from Sauvignon Blanc grapes, and arguably the most exciting new gin to come out of New Zealand in some time. It all started when the Giesen brothers of Marlborough’s Giesen Wines were trying to strip the alcohol from sauvignon blanc to produce an alcohol-free product. The resulting liquid “was essentially a sauvignon blanc spirit”, says Rhys Julian, the general manager of Strange Nature. He adds, “At that point the wine-makers were discarding it, but we thought there was a really good opportunity to take that by-product and do something with it, because it retains heaps of those really tasty flavours from Marlborough sauvignon blanc." The team added juniper but then cycled through more than a dozen different botanicals trying to find the best combination. They ended up going back to basics, deciding that juniper and sauvignon blanc stand on their own merit. “Sauvignon blanc is really aromatic, it’s got those layers of grapefruit and tropical herbaceous qualities,” says Julian, “and so we settled on just one botanical, juniper, which is quite unusual and quite strange, hence our name, Strange Nature.”

    Just as you'd expect, Strange Nature retains many of the quintessential notes of New Zealand Sauvignon Blanc - as the producers describe it: Partly tropical and zesty with hints of fresh pineapple, candied grapefruit and a touch of kaffir lime and blood orange; and part savoury and herbaceous with piney juniper, blackcurrant leaf and fresh green pepper. Our tasting from a 30ml sample found powerful aromas of ripe feijoa, also hinting at passionfruit and nectarine with a light pepper overlay. There's a citrus/tropical fruit interplay on the palate too, evoking grapefruit, lime zest, feijoa, crushed pine buds and hints of papaya seed through the fresh, warming finish. It's a full bodied, vibrant and distinctive gin that when tasted neat, maintains a good balance of juniper against the fruitiness of the grape distillate. Mixing with soda is simple yet effective, although too much dilution tends to over-emphasise the varietal character of Marlborough Sauvignon Blanc. Try loading up a highball glass with ice and a spritz of carbonated water garnished with a lime wedge. For a refreshing alternative, use East Imperial Grapefruit soda. Lovers of G&Ts should enjoy a generous pour over ice, topped off with a premium tonic, a lime wedge and a sprig of rosemary or thyme. 44% Alc./Vol.

    The Rangpur lime is not like the lime you'll find at your local fruit and veggie market. It's a unique fruit that blends attributes of other citrus - in fact it’s believed that Rangpur limes are crosses between lemons and tangerines. Orange coloured, they have the zestiness of ordinary limes but they're as juicy as an orange and look similar to a mandarin. The Rangpur tree itself is native to India, and can fruit year round for up to 40 years (be on the look out for these at nurseries - they're also said to be make beautiful ornamental trees). Enter the Tanqueray team who in 2006 decided to produce a new styled Gin with the influence of Rangpur limes. Like all of Tanqueray's gins, it includes the standard Tanq botanicals distilled into the spirit rather than infused. This distinction traps the flavours into the gin in a way that allows them to shine through in a more natural, authentic way that’s impossible with infusions. This time round the results are 'lip-smackingly delicious', and if the blogosphere is any indication, Rangpur is up there with some of the most genuinely exciting Gin innovations of all time.

    The gin pours perfectly clear and follows with a sweet and citrusy perfume of lime and mandarine juice combined with mixed peel. This is no London Dry, with the juniper almost totally eclipsed, becoming apparent only with aeration. The soft entry develops into a gently spicy attack; semi sweet, juicy tangerine & lime flavours are followed by a subtle juniper note on the finish that refreshes and relieves the sweetness. Excellent balance, this gets silkier with every sip. It would make for an intriguing martini moreso than G&Ts. We found it calls for some citrus bitters and demands experimentation. On its own remains undeniably exotic and charming. 41.3% Alc./Vol.

    Gin became popular in the late 17th and early 18th centuries, following the increase in duty on French wine and brandy imposed by William III. Until about the beginning of the present century most gin made in England was sweetened, but sweetened gin then became almost wholly displaced in popular favour by dry gin. One of the finest examples of this style is Tanqueray.

    Charles Tanqueray established his distillery in Finsbury, North London where fresh water was then accessible. The year was 1830. Tanqueray was obsessed with producing a premium product, and after some research and success, he gained substantial recognition for his gin. After merging with Gordons in 1898, the U.S. market opened up and Tanqueray was enjoyed by such personalities as Bob Hope, Frank Sinatra and President Kennedy. The distinctive bottle shape has aided its ongoing market success - its design based on 19th century London fire hydrants.

    In the production of Tanqueray, grain spirit at 96% alc/vol is rectified in pot stills with botanical flavourings. Spirit and botanicals are then boiled, with aromas and flavours infusing in spirit vapours then condensing to form gin. Tanqueray use aged botanicals, maturing wild Tuscan juniper berries for two years before use.     The once mothballed Bruichladdich Distillery on Islay is better known for its idiosyncratic and eclectic range of single malts. Now they’re making a gin that’s the talk of the town.

    Mark Reynier, one of the key instigators in this distillery’s recent revival, explains, “Botanist gin came about because we are curious about distilling.  For us it is not a question of merely pushing buttons, we like to test our distilling skills, we are intrigued.  With Trestaraig and X4 we have explored triple and quadruple distillation, so with a Lomond still that we had liberated from Inverleven in 2003, we were wondering how to use it. It was an experimental still, the first of its kind and now the last”.  

    The resulting gin uses nine of the classic gin aromatics – orris root, cassia bark, coriander seed, etc – and augments these with a heady harvest of 22 wild, native island botanicals, hand-picked by Bruichladdich’s expert foraging team from the windswept hills, peat bogs and atlantic shores of this Hebridean island of Islay. These include wild Islay Juniper, Elderflower, Bog Myrtle, Tansy, Hawthorn Flower, Birch Leaves, White Clover, Sweet Cicely and Lady's Bedstraw, amongst others.

    This truly seasonal and exotic cocktail is then slow "simmer" distilled in the lomond pot-still, nicknamed "ugly betty". Head distiller, Jim McEwan explains, “Betty prefers to work at low-pressure and won’t be rushed. So our precious botanicals are slowly and gently coaxed into releasing their complex, signature aromatics. Jim says he had to "learn a new dance" with Betty, and none of us knew what to expect from that first, achingly-slow 17 hour distillation.

    The result: a highly distinctive, complex, floral gin with outstanding finish and impeccable provenance. In an age of re-badged industrial gins, the Botanist stands out as a truly artisanal, small-batch, hand-crafted labour of love and distiller's art. A breath of botanical Islay in every glass.

Excellent complexity and purity. Medium dry, concentrated profile delivers a creamy-yet-peppery mouthfeel with a nice balance between citrus peel and juniper.     Distilled with 13 botanicals, rather than four or five which is more typical, this wonderful new Australian gin includes natives such as lemon and anise myrtle, sage and pepperberry, while the citrus profile is derived from kaffir lime and ruby red grapefruit, which distiller and owner, Kylie Sepos says is a lot softer than using lemon or lime citrus. The signature botanical is native bee sugar bag honey.

    Kylie has developed cocktail recipes for the gin but her personal favourite is the negroni. “It stands up really well with the Campari,” she says “which can be quite overbearing with a lot of gins, so I wanted to make sure my gin had enough botanical presence that it can stand up to that Campari, which I am really happy to say that it does.”

    Launched in July 2013, ''MGC'' doffs its hat to the London Dry style with the two major components being juniper berries and coriander seed. There are 11 botanicals in total with the grapefruit peel and rosemary coming from the garden at Gembrook Hill Vineyard. The other botanicals are macadamia, sandalwood, honey lemon myrtle and organic navel orange, all sourced from Australia. The exotics in the mix are angelica root, orris root and cassia bark.

    Each botanical is distilled separately and then blended to a proprietary recipe – essentially a winemakers approach. They employ a copper pot baine-marie alembic still traditionally used for making perfume. This allows the preservation of the delicate nature of the botanicals.

    The final component is the water used to break the gin back. MGC use Gembrook rainwater which is pure and fresh and allows the botanicals to shine through. At only 60kms from Melbourne this local source contributes to the definition of the unique “Melbourne Dry Gin” style.

    The final product is not chill filtered.

    "We didn’t want to take out the oils that contribute so much to the aromatics and mouth feel of the gin" comments distiller, Adam Marks. "So when the gin is very cold the oils become slightly insoluble and form a light haze. The French use the word louche to describe this. In a different context someone who is louche is of a shady character! Each bottle is numbered to reflect the small batches in which it is made."

    The English word 'gin' is derived from the French word 'genievre' meaning juniper, the original herb used by the ancient distillers to make their medicines. It must still be the most prominent flavour in gin under EC regulations. London Dry gin is a style of gin and not a geographical description. The term 'dry' is a reference from the old days when the most popular gin was 'Old Tom' which was sweetened with sugar and glycerine. Dry gin was so named to distinguish it from the sweet version.

    Around the globe, gin is commonly made from grain based distillates. However, most Japanese gins are based on shochu. Now long-time brewer, Umegae Shuzo in Nagasaki have bought the past to the present with a new sake-based 'Gin-ovation'. Gin was first made in Japan during the Edo Period in Nagasaki for the Dutch traders living on the island of Dejima. Inspired by this history, the idea to produce gin came from the company President, Tetsuya Nagano. Sake develops an off-smell called hineka over time, so Umegae Shuzō distill it within one week of pressing. They produce gin from autumn to winter, which overlaps with the busy sake brewing season, but Nagano insists that the freshness of rice is key to Yokitsuki’s quality. The first impression is citrus, followed by a fruity sweetness, which makes sense, given Yokitsuki is characterized by non-traditional, locally grown botanicals including loquat, strawberry, lemon, mikan, and Umegae’s namesake, plum branch. Sweet and tart with acidity and intensity of flavour from the fruit, the plum branch provides a pleasant woody foundation upon which the fruity botanicals pop out. The presentation is stunning. The inaugural batch from October 2019 quickly sold out, and a second batch of around the same size in January 2020 followed suit. It takes about 2,700 bottles of sake to make 1,000 bottles of gin, so from a business standpoint, the project is expensive, but it's also demonstrated a new potential for Japan's most famous tipple. 40% Alc./Vol.
