Taking craft-production to a new scale is 'Hartshorn', a Tasmanian upstart making boutique batches of Vodka and Gin from their farm sheep whey. Ryan Hartshorn and family run what is presently the smallest distillery in Australia: batches of ten bottles are not unusual. The dedicated hands-on approach is extended to the packaging with every label hand painted.

Botanicals are vapour infused using a 50L glass column still (as opposed to steeped) giving the Gin a more delicate and subtle bouquet. Ryan adds, "Besides the juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). I'm using six Native Australian botanicals with three of them never used before in any other Gin."

Tasting note: [Batch 1 tasted] Clear. Atypical gin aromas of banana pudding / fruit yoghurt over later scents of citrus peel, rosewater and subtle piney juniper. A creamy, light, floral-soft entry. Medium-dry, low-key flavours of fruit yoghurt, orange spice cake and delicate white pepper / pine-like notes balancing the finish. Hints of rosewater and juniper late in the aftertaste. An eclectic and original arrangement of unusual botanical notes. Unfiltered. 40% Alc./Vol.
