Its basis is a "Malt wine," distilled from a mixture of wheat, corn, rye, and barley. The production of this malt wine mirrors the production of Scotch whisky through the first distillation, which the Scots call "low wines" and the Dutch call "malt wine." An essential ingredient is juniper berries. Distillers make the final product in several stages, using herbs, neutral spirits, and different quantities of juniper berries according to each distilleries secret recipe.
There are two main types of Genever: ‘Oude’ (Old) and ‘Jonge’ (Young). This is not a matter of aging, but of distilling techniques. Around 1900 the Coffey Still (Patent Still) made it possible to produce an almost neutral tasting high-grade alcohol, independent of the origin of the spirit. A worldwide trend towards lighter tasting spirits as well as lower prices, led to blended whisky in Great Britain, and its counterpart in the Netherlands was 'Jonge Genever'. During the World Wars, lack of imported cereals and hence malt, forced the continued promotion of this Gin. People started using the term ‘Oude’ for the old-style Genever and ‘Jonge’ for the new style, while still employing juniper berries, it contains more grain instead of malt and can even contain plain sugar-based alcohol.
Originally a family operated business, Freerk Klazes Bokma gained the rights to establish a distillery in 1894. Later in 1971 Bokma entered into a joint venture with Heineken enhancing its distribution network which enabled Bokma to become one of the Netherlands most beloved spirits.

Jonge Genever can contain no more than 15% malt wine and 10 grams of sugar per litre where Oude Genever must contain at least 15% malt wine but not more than 20 grams of sugar per litre, it is straw-hued, relatively sweet and aromatic.
The Bokma product was originally a family operated business. Tasting note... Clear with very pale green/yellow tinge. Delicate top notes of orange blossom and lavender over heavier scents of almonds, dried citrus peel, caraway and rye bread. Sweet rye bread, caraway and anise flavours build into white pepper wave with good length. Bols Oude Genever Gin (1000ml)Amsterdam, NETHERLANDS$84. 99Bottle$1019.88 DozenABV: 35%We are pleased to import this sought after gin after a long absence from the Australian market. The Very old (Oude) distinction derives its name from the fact that this was the first genever known in Holland, the home of gin. Its robust flavour stands out, being decidedly different in taste than that of the more familiar London Dry Gins – fuller and riper, although similar botanicals are used in its manufacture only in different proportions. The chief point of difference is the spirit base used in Dutch Gin which, unlike its New World counterparts, is not a completely tasteless neutral grain spirit. Rather, 'Zeer Oude Bols' is distilled in a pot still from a mash containing rye, barley and corn which on distillation produces some congeners normally associated with whisky. Dutch Gins are also generally distilled at a lower alcoholic strength than New World types. Bols Genever Gin, consistent with its old world tradition, is bottled in a distinctive stone crock and has an alcohol content of 35 % /vol. Best drunk neat and chilled.

Ingredients

-Dry orange liqueur
-Freshly squeezed lemon juice
-Sugar Syrup (2:1)
-Bitters
-Sparkling water
-Orange WedgeMethod
1. Fill a shaker with ice and add 2 dashes of bitters, 15ml Sugar Syrup,15ml Dry orange liqueur, 30ml freshly squeezed lemon juice and 75ml of Oude Genever.
2. Close the shaker and shake for 10 seconds
3. Double strain: pour the contents of the shaker through a Hawthorn strainer and a fine strain, into the pre-chilled glass.
4. Squeeze an orange wedge over the glass and drop it into the drink.
5. Top up with sparkling water .Serve in a tall glass with an orange wedge and long straw

Bols Corenwyn Genever (1000ml)Amsterdam, NETHERLANDS$94. 99Bottle$1139.88 DozenABV: 38%Corenwyn is an alternative spelling of the generic 'kirenwijn', a high-malt Genever specialty. The style, 'corenwyn' translates as 'grain wine', referring to the high proportion of malt wine (at least 51%) used in the blend. Only Bols is permitted to use Corenwyn as a brand name because it was Lucas Bols himself who first created the drink back in 1575. Then, the term was reserved for the very finest distillations of grain. Today the spirit is distilled in copper pot stills in a four-stage process, the last of which has the spirit pass over juniper berries to extract flavour and aroma. Two years ageing in oak casks bestows a pale gold colour and a nutty, slightly fruity characteristic making for a fine aperitif, but also an excellent accompaniment to cold dishes (especially seafood). Jonge Bols is one of the finest young Genevers of Holland, twice distilled from 100% pure grain. Fourteen ingredients such as, angelica root, aniseed, ginger root, apricot nuts, learwyt seed are then infused for flavouring. Typically consumed out of a shot glass, or, as preferred in Holland, a tulip glass, Jonge Gin is best served chilled. Or try a John Collins, a Cocktail which consists of Genever Gin (or Bourbon), lemon juice, sugar, and sodawater and made in the same way as a Tom Collins. 35% Alc./Vol.
Tasting note: Clear. Mild aromatics reveal top notes of candle wax, talc and mineral over heavier scents of potpourri (especially lavender) citrus peel and juniper. Silky entry slowly builds in concentration offering mild, medium dry flavours of citrus, mineral and chamomile tea. Juniper takes back seat. White pepper back palate. Exceptionally pure, silky and very gently warming mouth feel. Turns dry, with a clean, refreshing aftertaste of citrus peel, mineral and a subtle juniper fade. Released in the late 1980's, Bombay Sapphire was the first London Dry to be marketed as a 'super premium' Gin.
While most gins take their flavour from four or five botanicals, most notably, the juniper berry, Bombay Sapphire uses no less than ten, achieving an altogether more balanced and refined taste. Furthermore, the distilling process is unique. Most other gins boil up the botanicals with the spirit. But with Bombay Sapphire, the spirit is distilled alone. Thus it is in vapour form when it passes through the perforated copper botanicals basket. This process allows each delicate aroma to be absorbed from each respective botanical. These include almonds, lemon peel, liquorice, juniper berries, orris, angelica, cassia bark, cubeb berries and coriander. Bombay's character is more complex and herbal than other gins and its price is indicative of its quality.

McEwan was coaxed out of retirement and joined Eddie and his family to launch Brookie’s gin in Northern New South Wales. Named "Cape Byron Distillery", the operation runs a 2000 liter Tassie-made copper pot still. Brookies employs 26 botanicals, 18 of which are native to Australia: Sunrise finger limes from Byron Bay, kumquat, blood lime, aniseed myrtle, cinnamon myrtle, White Aspen, riberry, the young leaves of the lilly pilly leaf, macadamia nut, native raspberries from Brook Farm, Dorrigo pepper leaf, river mint and native ginger. Traditional botanicals include juniper, coriander, cassia, angelica and orris root. Tasting note: Crystal clear. Pure, rounded aromas of citrus peel and lemon thyme followed by woody juniper, pepper, coriander and minty freshness. Five minutes adds hints of raspberry. Creamy textured with a concentrated yet keenly balanced profile; lively with piney juniper upfront, followed by dried herbs and pepper. Hints of macadamia late in the aftertaste? The point of difference here is that Davidson Plums are used instead of sloe berries. Considered a bush delicacy, the plum is indigenous to the Byron region and is packed with vitamins and minerals.The plums are steeped in Brookie’s Gin for several months. The maceration is diluted to 26% ABV with Mount Warning spring water. Tasting note: Brilliant copper. Attractive, medium dry aromas suggesting quince paste, plum jam and raisins over muted juniper and white pepper. A juicy-yet-dry, pleasantly tart, plum and red berry flavoured gin with trace pepper in the finish. Delicious Summer sipping, but would be even better at a higher ABV. Bulldog is a London dry Gin produced using old-time methods where neutral grain spirit is quadruple distilled utilising copper pot stills. The raw spirit is then steeped in an array of botanicals including: dragon eye, poppy, lotus leaves, lemon, almond, cassia, lavender, orris, liquorice, juniper, angelica, and coriander.
Tasting note: Clear. Lovely fresh citrus peel aromas combine with caraway, talc and juniper notes. The palate is quite concentrated, medium dry and gently warming with spice, citrus, caraway and pine flavours leading into a tingly, spicy back palate. Exceptionally persistent, drying aftertaste with a subtle mineral / anise fade. 40% Alc/.Vol.
Other Reviews: The nosing passes find classic London Dry aromas of juniper with assertive, prickly spirit and citrus. The palate entry is creamy, juniper-heavy and curiously chalky; the taste profile at mid palate is herbal, piney and citrusy. I like this gin a lot but wonder: Would it be even better at 47% abv?

Cadenhead's Old Raj Dry Gin is one of the most intensely flavoured Gins available on the market today. Gin lovers note, while Old Raj is bottled at 55%, and carries some heat, it is in harmony with the extra flavour that Raj offers. No doubt it will be too much for some.
Tasting note: Distinctive, yet very pale straw coloured tinge. Heavy, penetrating aromas exude out of the glass offering an exotic amalgam of coriander seed, saffron, white pepper, tumeric and clove with some citrus zest notes adding freshness. A rich, clean, oily mouth feel delivers an enormous attack of saffron, coriander seed, aniseed and lemon tart carried by a spicy power wave, with the flavour profile reverberating into an exceptionally long, off-dry aftertaste of indian spices and lemon tart. Lovely, complex gin bouquet offers aromas of coriander, juniper, anise, orris root, ground pepper, lemon peel, lead pencil, earth and tree bark. Feather light on entry, but builds with a dramatic burst of pepper, paprika and coriander over a piney/earthy juniper base. Very intense, with excellent length. Distillerie de Lure, founded in 1898 at Forcalquier in Provence has had a succession of owners for nearly 80 years, amongst whom was Henri Bardouin, a man with a passionate interest in plants and herbs. In 1974, Alain Robert and his small team took the helm of the company now known as Distilleries et Domaines de Provence. Their new gin is named in reference to the twelve plants and spices that go into its creation. The style leans towards classic London Drys, characterised by fresh, minty, floral, slightly spicy notes. Taking full advantage of its Haute-Provence terroir, botanicals include thyme, rosemary, basil, eucalyptus, sweet almond and mint which join forces with small juniper berries to express the aromatic equivalent of a stroll through the garrigue. New players are emerging from all quarters. This novel release is made in the "Shed Distillery", Drumshanbo, Co Leitrim which is the first distillery in the West of Ireland in over 101 years. Opened in 2016 by the team of PJ Rigney and his wife Denise (inventors of Sheridan’s Irish Cream and Boru Vodka), the venture is already busy creating a range of spirits, including whiskey and gin. Rigney adds, “The international market is now looking for super-premium brands that stand apart, with unique heritage and unrivalled quality & taste. There’s huge international excitement about this new gin and we already have some pre-orders from China.”
Handcrafted through slow distillation in a gleaming medieval copper pot still fired by steam, Rigney expands on the production process for his gin: "Various oriental fresh citrus and leaves (gunpowder tea) are added into the 3 layer infusion basket, which lies in the vapour pathway between the still and the condenser. Steam is gently applied. The vapour rises through the unique shape of the medieval head, which allows maximum copper contact, which cleans and purifies the spirit. The vapour exits the still and passes into the infusion basket, where it gently extracts the oils and aromas from the citrus and tea. Boiling in the still would extract bitter compounds from these ingredients, whereas vapour infusion only extracts the aromatic oils. The vapour passes into the condenser and is condensed down into our gin at approx. 75%. We take an early cut so as to avoid any harshness that tends to come off further into the distillation. The gin is allowed to rest for a week, which allows the oils and alcohol to infuse and for flavour to develop. It is then diluted to 43% with filtered water and gently filtered for clarity."
The keynote here is 'Gunpowder Tea' (Camellia sinensishis) - a green tea that's been slowly dried then carefully rolled into shiny pellets. The flavour is bold and bright with a slight spicy freshness. Other botanicals include juniper, angelica, orris, caraway, coriander, meadowsweet, cardamom and star anise as well as vapour infused oriental lemon, lime and fresh grapefruit. Nosing finds intense aromas of blackpepper, lemon peel and juniper in the opening pass with later inhalations detecting hints of orris root, cinnamon and chamomile tea. The palate follows through with robust flavours of liquorice root, cardamom, background juniper and a warming, vibrant, peppery finish with late juniper and liquorice through the aftertaste. Other reviews... Dunnet Bay Distillers’ Rock Rose Gin is the latest entry into the increasingly crowded Scottish gin market — where more than 170 different gins are currently in production. The brand dates back to 2014, the result of 55 experiments to find the right botanical blend. The final recipe is an exotic mix that includes juniper, rose root, sea buckthorn, rowan berries (aka mountain ash), blueberries, cardamon, coriander seed, and verbena. As near as I can tell, there’s no difference between this and the Original Edition, save the abv. At 57% alcohol, it’s no joke, and my complaints about the weak body are wholly inapplicable here. Rock Rose Navy Strength is sharp both on the nose and the tongue, which gives the fruitier character more room to shine. The juniper and other herbal notes are pushed more toward the back end, so while the attack lets the citrus shine, the finish of the Navy Strength feels more verdant than the Original Edition. Over time, things get quite bitter as it lingers on the back of the palate. Inspired by the Caithness coastline and is created using locally foraged kelp sourced from the Hebridean Mustard Company, botanicals include Shore Seaweed and salt blended with pure liquorice root and aniseed. Lemon verbena is also in the mix - a perennial woody shrub with a bright citrus flavour. Complemented by tangerine sage and lemon verbena, other botanicals include cassia, liquorice, water-mint and bilberries. Notes from the bottlers... NOSE: Subtle hints of smoke lie underneath zingy citrus notes. PALATE: The clean pine smoke from Lapsang Souchong tea excites the tastebuds and, as it settles, a candied sweet orange rises through. Other reviews... My overwhelming opinion at the end of sampling the Smoked Orange Edition is that this is an effort to truly be applauded. Both pride themselves on using local hand-foraged botanicals alongside exotic ingredients from around the world. It was the inspiration behind their first product: Rock Rose Gin. The early batches sold out in a matter of days! What sets their product apart is that it's the first gin to employ Rhodiola rosea in the mix. This unusual botanical grows on the local cliffs and reportedly gives the gin an earthy, Turkish delight flavour. Italian and Bulgarian juniper berries, rose root, sea buckthorn, rowan berries, blaeberries, cardamom, coriander seed and verbena (many of which are grown in Scotland) are also included. The citrus and floral notes combine with a little sweetness from local berries. It all works together to make a deliciously distinctive gin. 41.5% Alc./Vol. Other reviews... On the nose, Rock Rose has a delicate bouquet of rose, mixed with deeper cardamom and a touch of citrus fused into a mouthwatering mix. Tasted neat – fruity berries merge with the floral nose to give a full-bodied, rounded gin. Bright, slightly sour notes ping as the juniper comes to the fore alongside a warming heat. There’s depth and character a plenty with all the flavours that surround the piney core working in harmony. Crisp citrus, leafy eucoliptic elements, light florals and a resinous underbelly. This is good gin. It’s smooth to finish too. In a Gin & Tonic, the sharpness of the Sea Buckthorn emerges a little more, but once again is counterbalanced by round berries and a juniper heart. Rock Rose is recommended with a rosemary garnish but we tried it with a mint leaf garnish which brought out the freshness. The juniper-infused spirit known as gin has the Netherlands as its spiritual home. Later, England went on to popularise its own 'London Dry', traditionally based on less than a handful of botanicals (juniper, cardamom and coriander). However, the influence of Sri Lanka, Malaysia and other spice islands isn't commonly found, even in contemporary styles. Enter Dutch Gin, founded in 2022 in the Melbourne suburb of Mitcham. Here, botanicals like lemongrass, makrut leaves, chilli, thai basil and ginger are broadening the scope of what gins can taste like. Proprietor, Danny Perera employs a wheat-based spirit which brings a nice smooth mouthfeel to each expression. Step one is to load the still with distillate, then add juniper and dried botanicals to the pot. Once out of the still, the spirits are rested for a couple of weeks to maximise the flavour before diluting to a lower ABV followed by bottling and labelling. Shaken or stirred, Dutch Rules New World Dry gin offers juniper-forward flavours with a citrusy finish for a new everyday favourite. Great in a cocktail or simply with tonic.
