    1800 is a 100% Agave Tequila. To understand how this distinguishes it from other Tequila, it is necessary to know something of the process by which tequila is produced. Although Mexico is famed as the land of the cactus, Tequila is in fact distilled from the fermented juice of the Agave Plant, (not a cactus) otherwise known as the ‘Century plant.’ The Agave plant resembles an unripe, oversized pineapple or spiked cactus which shoots a giant blossom that can take up to twelve years to produce. At maturity, it stands about 5 feet high, is bluish green in colour and has a heart or ‘pina’ . It is these hearts which are actually used in the distillation process, the sweet juice extracted by compression, steaming and washing prior to fermentation & distillation.

    The fermentation stage determines whether the final product will be 100 percent agave or mixed ("mixto"). The highest-quality Tequila is made using only fermented agave juice mixed with some water. Mixto however, is made by fermenting and then distilling a mix of agave juice and other sugars, usually cane sugar with water. Mixtos made and bottled in Mexico can contain up to 40% alcohol derived from other sugars. Mixtos that have been shipped in bulk for bottling overseas may have the agave content further reduced to 51% by the foreign bottler. Mexican law states that all 100% agave or aged Tequila must be bottled in Mexico. 100 percent agave Tequilas are clearly labelled as such. Anything else is classified as a Mixto Tequila, however the term is seldom used on bottle labels.

    Other reviews... The initial aroma is of black pepper and steamed broccoli. Following aeration, a bouquet of succulent scents of Brazil nuts, egg cream and light oak resin appear.     Other reviews... “Rested in oak barrels for a fresh vanilla roundness,” an unusual step for a blanco — though this has apparently been filtered to remove any remaining color. Very sweet on the nose; the “vanilla roundness” is front and center, alongside pastry cream and some strawberry notes. The only the barest hint of agave here, a clear move to appease KUWTK fans who might be put off by a punchy, herbaceous blanco. The palate follows suit: Creamy, with lots of vanilla and more red berry notes. A tinge of earthy greenery on the finish is about as mild as could be. Again quite sweet on the nose, but with a clear chocolate note that adds a bit more nuance to the vanilla bomb of the blanco. That cocoa character continues to the palate, which layers in some cinnamon notes to provide a Mexican chocolate feel, though again it feels heavily dosed with heaping spoonsful of brown sugar.     The Agavero company was founded in 1857 by Lazaro Gallardo. Shortly thereafter, in the heart of the Tequila growing region at the Los Camichines Distillery in Jalisco, Mexico, Gallardo created "Agavero Tequila Liqueur" naming it after the "Blue Agave" plant from which Agavero is made. The production process behind this unique liqueur begins with the gentle baking of the Blue Agave to obtain the aguamiel (honey water), which is then put through natural fermentation and subjected to two slow distillations. This achieves a tequila characterized by its unique softness & natural sweetness. Two different styles of tequila are then produced: Firstly, an Anejo Tequila which is aged eighteen months in white oak casks (six months more than the minimum required by law.) And secondly, a Reposado Tequila which is aged six months to one year in white oak casks. The additional maturation allows for the full benefits of the slightly charred, white oak casks to be blended into the liquid. The Tequilas are then hand blended with Agavero's special ingredient, the essence of Damiana Flower - a flower indigenous to the mountains of Jalisco and a known aphrodisiac. The resulting liqueur can be enjoyed straight or on the rocks with a slice of lime or orange or in a variety of cocktails.

    The wild Maguey cuishe (or cuixe) grows in a cylindrical, stalk-shaped piña, with spreading leaves. It’s often slightly smaller than Maguey madre-cuishe, and yields intensely flavoured mezcals noted for their mineral and spice notes. Depending on its locality, 'cuish' could refer to slightly different varieties, varying in colour, size and shape.

    Sourcing magueys from the arid areas of the Tehuacán Valley and the Central Valleys, Maestro Mezcalero, Juan Hernández, produces this expression in tiny batches. In this case, around 60 bottles. 45% Alc./Vol. Very limited stocks.

    Considered the 'truffle' of the agave world, the Tobala maguey is found growing naturally only in the highest altitude canyons in the shade of oak trees. Its form is different than the maguey Espadin (sword) or maguey Azul (blue). It is smaller and broader leafed. It takes about eight Tobala piñas (agave hearts) to equal one piña from either of the more commonly propagated and cultivated Magueys. Production is limited, being careful to never over harvest the Tobala and allow mother nature to continue a supply. Maestro Mezcalero, Juan Hernández, produces his expression in tiny batches. Agave is grown and produced in Zapotlanejo, the highlands of Jalisco where they are slowly cooked in stainless steel autoclaves for a period 7 hours. The cooked agave is then distilled in stainless steel pot stills to approximately 54%. Reposado and Anejo styles are aged for 8 and 16 months respectively in Jack Daniels and Heaven Hill ex-bourbon casks until being bottled with distillery well water. The tequila pours a very pale gold colour. Amidst the initial spices emerge scents of green olive, pine nut, candle wax and faint vegetal notes. The palate shows good concentration with a slightly oily mouthfeel and a spicy overlay. Baked capsicum, green olive and mild chile flavours are followed by fine, drying tannins and a subtle white pepper fade. A vibrant, well rounded, spicy anejo. 40% Alc./Vol.

    A new celebrity affiliated brand launched by George Clooney and Rande Gerber. The tequila is produced at the same distillery that makes well-known labels 'Avion' and 'Clase Azul'. Casamigos' first advertisement made an impact, featuring Clooney, Cindy Crawford, Kevin Bacon and others found in bed together after a night of imbibing, an image that sums up the 'relaxed' style of the collection. Aged for two months, the blanco pours with a clear / silvery blush. Intense aromas are waxy, peppery in the openings developing crushed chilli, mustard seed, dill pickle and semi-ripe pineapple. Entry is surprisingly rounded, vanilla-accented with beeswax, brine and a sappy agave, peppercorn burst to finish. Pineapple, gelato and light butter menthol lozenge aftertaste. Ends light, keenly balanced and fresh. Very accessible, this edges towards reposado. 40% Alc./Vol.

    Unlike tequila, mezcal has remained closer to its origins as a drink of villagers and artisan producers, persisting with tradition, as only mezcal can be made. It differentiates itself from tequila by a countrified approach taken by the distillers in the Oaxaca region (pronounced 'wa-ha-ka') who today produce around 60% of the total Mezcal output. It achieved Denominacion de Origen status in 2005. Unlike tequila, which employs only the Weber variety from fields around Jalisco, there are eleven types of agave, collectively known as ‘Maguey’ which are permitted in mezcal, such as the widely cultivated ‘Espadin’ or ‘Manso’ varieties and the more sought after wild ‘Tobala’ - the trophy of the mezcal world. Unlike tequila, mezcal is required to be at least 80% pure blue agave (tequila only 51%).

    As awareness for mezcal has slowly grown, commercial opportunities have been harnessed. Keeping pace with demand (which remains insignificant in comparison to tequila), it’s now been made on a more industrial scale too. This has led to some bottlers adding cane alcohol, caramel, colour, sulphates, sweetener and even fertiliser, usually in order to speed up output. Drinking this stuff is like following cheap tequila down a dirty track towards an unforgettably brutal hangover. Don’t consider a worm in the bottle a sign of authenticity or quality either. Real mezcal is of another dimension, and it’s not easy to come by.

    Even now, the only place to sample real Mezcal generally involves a trip to Oaxaca, and then out of town. Away from the big city is where its production remains rustic and unhurried. Initially the process resembles the manner in which primitive tribes cooked food in holes: Agave hearts are cooked in a conical pit in the ground. Stone and charcoal are heated in it and the agaves laid on top, covered with palm leaves, matting and soil, cooked for three to five days, taking on the aromas of smoke and earth. Left to cool for a week, wild fermentation begins following which the baked agaves are crushed. This often happens using horse driven millstones. The pulp is mixed with water and fermentation is completed in large vats. Rather humble copper or clay kettle stills are employed, wood-fired, and rarely more than 100 litres in capacity. Double distillation is the norm. Maturation may range anywhere between one month to over a decade.

    One has to search for artisanal examples of this exotic spirit. That’s what modern day mezcal pioneer, Ron Cooper did. His conversion came about while looking for the best tasting mezcal to Christen a new sculpture with (Cooper is an established American artist). The Oaxaca locals pointed him towards the mountains. In the remote villages and foothills he discovered mezcals that tasted nothing like the ‘rot-gut’ so infamous in the Mexican cities. Yet, as Cooper realised, most people have no idea that these sorts of mezcals exist.

    It was a revelation. He set about bringing the world’s attention to previously unavailable, 100% certified organic, artisanal mezcal produced the original handcrafted way. These mezcals can vary in taste as much as wines, and flavour wise, there’s virtually nothing like them in the world. Perhaps their only natural counterpart is smoky Islay Scotch (interestingly, Japan is one of mezcal's biggest export markets). Indeed, the relationship between mezcal and tequila has been equated to that of Islay malts vs the rest of the whisky world – exotic, assertive, smoky, briny even ‘industrial’ at times – that’s real mezcal.

    In 1995 Cooper acquired a liquor license and established his own label, ‘Del Maguey’ (pronounced 'ma-gay'). His intention is to harness and showcase the varying micro-climates and regional differences that give his mezcals a unique character. No colourings or additives are used. Every product is made by individual family palenqueros (producers) in old-style villages. The villages are between two and eight hours from town. “One bus in and out every Sunday” kind of places, as Cooper says. It’s an approach that’s clearly inspired by European terroir. His is reputedly the first Bodega in more than 400 hundred years of mezcal production that has credited the name of each village where the liquid is made on its labels.

    True to the nature of the spirit itself, Cooper’s venture has remained in keeping with its origins. One of his bigger years yielded all of 12,800 bottles - a miniscule output by world standards. With a dearth of anything but mass produced ‘commercial’ mezcals arriving on our shores, some of which have undoubtedly done the genre a disservice, we can consider ourselves fortunate that a small quantity of these rare heirloom spirits have now made their way into Australia.     Launched in 2010, Del Maguey's Vida Mezcal is considered the most 'mixable' of the range. It's twice distilled and unblended from 100% Agave Espadin. Winner of the 2012 Chariman's Trophy at the 'Ultimate Spirit Challenge'.

    Tasting note: Crystal clear. Opens with assertive scents of vinyl, shellac, car tyre and oil rag. The industrial accent drops a notch after several minutes, adding hessian sack and sweet smokey notes to the aromatic merry-go-round. Entry is light and pleasantly bitter sweet.     Launched in 1994 and named after the men who hand harvest agaves with a razor sharp coa, the Jimador brand is a sister offering to Herradura. The hugely popular Reposado represents 70% of production and is aged for two months in white oak barrels. El Tequileno is an affordable brand founded by Don Jorge Salles Cuervo in 1959 that bills itself as “Mexico’s best-kept secret.” It’s made from blue agave from Los Altos de Jalisco (the Highlands) and volcanic spring water from El Volcan de Tequila. Unusually, this blanco (sometimes billed as Platinum on the label) is rested for 14 days in American oak barrels before bottling. If there’s any color to the finished spirit, it’s virtually impossible to see, coming across as nearly transparent. There’s an earthiness to the nose that makes me think more of Lowlands agave than Highlands, though it also hits with aromas of pepper, charred beef, and a clear salty note. The palate is fairly creamy but quite herbal — not so much vegetal as it is informed by fresh rosemary and sage — with a buttery character tempering any heat on the palate. This chewiness on the tongue seems clearly driven by the two weeks of resting in oak, and a more vanilla-scented, wood-forward note emerges on the lasting finish. I get hints of jasmine and coconut on the back end, if you give it time. It’s solid enough stuff at this price level for a 100% agave tequila, though I have to say the oak resting feels like a bit of a cheat for a blanco. - drinkhacker.com

    The 'El Tequilano' label was launched in 1959 by Jorge Salles Cuervo, a member of the family now most famous as a Tequila brand. Nowadays the company owns agaves in the Jalisco Highlands, near the towns of Atotonilco and Tototlan. Self proclaimed as one of Tequila's 'best kept secrets', the style is described as semi-modern, made using autoclaves and roller mills, but with ferments in open cement tanks. The producers claim wild yeasts from the mango trees surrounding the distillery add additional character to the ferment. 

    Aged for three months in oak, El Tequilano's Reposado offers relatively low-definition aromatics suggesting peppercorns and dried grass. It's reflected on the palate which is light bodied, with a water-like entry and a dry, pure, low-key profile of white pepper and green olive flavours.     Espolon Blanco has a crystal clear, silvery appearance. First pass reveals a perfumed bouquet of herbaceous, green capsicum that gets more like fresh cut horseradish, less the heat. Later, undertones of candle wax and smoke are evident making for an impressively complex aroma. The palate is light to medium bodied and a little broad and sweet. Waxy, briny and with a delicate twist of white pepper. Concludes dry, light and relatively short. Overall the palate lacks the vibrancy and zest we look for in Blanco Tequila. 40% Alc./Vol.

    Tasting note: Pale gold with a faint pale green blush. Soft and subdued aroma offers a beeswax opening note followed by hints of crushed eucalypt adding freshness. It takes at least two to three minutes before more substantial notes of grilled capsicum, wet cedar and toasted pine nuts are released. Further exposure really builds the aroma big time as beeswax, menthol and vanillan oak enter the picture. A water like entry builds into a concentrated, mid-weight profile featuring butter menthol lozenge, beeswax and a peppery burst. Finish is clean, dry and perfectly balanced with gentle spices persisting. Know your Tequila.

Made according to strict government regulations by distilling the fermented juice of stipulated agave varieties, Tequila and Mezcal offer a range of exotic flavours ranging from herbal, fruity, salty, sappy, earthy, smokey and 'funky' or industrial-like notes. Currently there are over 100 registered Tequila distilleries producing around 800 certified brands. It can be bewildering trying to decide which to choose, so it's important to know what to look for to get the best product for your money. In general, Tequila labelled "100% agave" means superior quality, flavour and purity of spirit that has also been approved by a government inspector. Without this label, cane sugars are used in the fermentation process to produce much of the alcohol, but none of the flavour. In addition, such tequila can legally be mixed up to 49 per cent with other colourings and flavourings and still be called Tequila. Mezcal is currently undergoing its own revolution in popularity and like tequila, similar standards for its production have now been established. It differentiates itself from tequila by being typically distilled just once, so retaining many natural chemical compounds in the distillate. Mezcal has remained a drink of villagers and artisan producers in the Oaxaca region (pronounced 'wa-ha-ka') which is responsible for around 60% of the total Mezcal output, achieving Denominacion de Origen status in 2005. Unlike tequila, which employs only the Weber variety from fields around Jalisco, there are eleven types of agave, collectively known as ‘Maguey’ which are permitted in mezcal, such as the widely cultivated ‘Espadin’ or ‘Manso’ varieties and the more sought after wild ‘Tobala’ - the trophy of the mezcal world. Unlike tequila, mezcal is required to be at least 80% pure blue agave (tequila only 51%).
