Chablis

The grape variety that produces arguably the greatest of dry white wines, Chardonnay is the basis upon which the white wines of Chablis & Burgundy, France are produced. Chablis makes a delightful change from heavier styled "New World" Chardonnays. Restrained oak, subtle minerality and subdued but fresh, elegant profiles make for terrific matches with shellfish and seafood in general. We import directly from producers where possible to bring you some of Chablis' best values. When you buy Chablis online from Nicks Wine Merchants, we can ship your wines free of charge to most of Australia.

Nathalie Oudin is one of an exciting crop of young growers in Chablis, whose small, well-priced range is improving with every vintage. This delicious premier cru comes from two parcels totalling 0.75ha on white, limestone-rich soils and is intense, leesy and salty with undertones of fennel and lemon peel and a rich, textured mid palate.

This is also admirably pure and exuberantly floral with its combination of spice and citrus scents that exhibit very good Chablis typicity. There is more volume and richness, as well as notably more power if not the same refinement, to the larger-scaled flavors that deliver excellent length on the firm, austere and bitter lemon rind finish. As is usually true for Les Clos, this is very much built on its minerality and is a wine that should also reward up to a decade of keeping. Drink through 2029+.

The 2021 Chablis Les Clos Grand Cru is aged only in vat, although there might be some wood contact late on. Frankly, I hope it doesn't because this has a sense of fullness and some lovely tropical notes discretely interwoven that would make any oak otiose. The palate is well balanced with a fine bead of acidity, taut and fresh, not amazingly complex, but there is decent substance on the finish. Fine. Drink 2025-2040.

The domaine has one plot of young vines, which were frozen, so grapes were found as an exchange with another. Two barrels in exchange for Montée de Tonnerre. In steel at the moment but may switch one to wood later. Pale colour, extremely promising even if not yet offering much detail. Superb follow through, growing in the mouth, excellent length here and some marine notes to finish. Very youthful but I am expecting something exciting. Drink from 2027-2033.

Moderate wood influence surrounds ripe aromas of green fruit, citrus rind, ocean breeze and discreet nuances of mineral reduction. The round and rich, indeed even plush, medium weight plus flavors coat the palate with sappy dry extract while displaying impressive power on the youthfully austere and long if slightly woody finale. In the context of the 2021 vintage, this is a big, even robust, wine that isn't elegant, but it certainly doesn't lack for personality. Drink through 2028+.

The 2021 Chablis Bougros Grand Cru comes from purchase of juice and represents a couple of barrels (half actually aged in steel). The nose is well defined with fine delineation - hints of white peach and pear emerging. The palate is well balanced, that oak a tad pronounced at the moment, though it will be integrated with time. Fine persistence, this will probably be difficult to find but should give 12-15 years drinking pleasure. Drink 2025-2040.

Purchased juice, two barrels, one wood and one stainless steel. Pale colour with a light lemon tint. More on the chunky side without the wood dominating. Slightly oily texture at the moment, though that is temporary, a little bacon fat reduction, with notable length and correct acidity. Drink from 2026-2030.

A slightly riper array of mineral reduction, essence of poached pear and acacia blossom is nuanced by plenty of typical Chablis elements. The sleek, delicious and solidly dense medium weight flavors also possess good minerality and refinement, all wrapped in an intensely saline-inflected finish that is also borderline painfully intense. This lovely effort is built to repay up to a decade of aging though it should be approachable after only 5-ish years. Drink through 2029+.

The 2021 Chablis Les Blanchots Grand Cru has a well balanced bouquet with touches of Granny Smith apples, gooseberry, flint and a touch of citrus lemon. The palate is promising with a tensile, quite vigorous entry, modest weight, a keen thread of acidity with an attractive, spicy finish. Give this two or three years in bottle. Drink 2025-2039.

Like several of these 2021s post-bottling, there is sufficient reduction and wood influence to push the underlying fruit to the background for now. Otherwise, the sleek, intense and beautifully textured medium-bodied flavors possess a succulent mid-palate that contrasts somewhat with the slightly clipped and short finish that, as the description suggests, isn't entirely harmonious today. Given how well this showed from barrel, and given the obvious quality of its stablemates, I suspect that it will better harmonize with a few years of bottle aging and my rating offers the benefit of the doubt that it will in time. The 2021 Chablis Les Preuses Grand Cru has a well-defined bouquet and perhaps is the most complete of the Grand Crus from the Domaine. The palate is well balanced with a touch more substance than Les Clos, fine acidity, quite taut and harmonious with good grip and energy on the finish. I can see this ageing nicely in bottle. Drink 2025-2045.

A pure and notably more elegant nose offers up its aromas of pear, apple, spice, white flower, iodine and a hint of oyster shell. There is first-rate delineation to the gorgeously textured, even delicate, flavors that exhibit fine cut on the markedly dry, lemony and youthfully austere finale. This beauty could use more depth but given that it should easily repay up to a decade of keeping, improved complexity is all but a given. Drink through 2029+.

Billaud-Simon normally have three plots, but one is currently pulled out. The two remaining are on the reverse slope. The last to be picked and a good crop as safely protected by bougies. All in tank now but will finish off in some demi-muids. Good concentration but on the stricter side and I think the extra air from the wood will do it good. Fine long finish, so this should work out very well. Drink from 2027-2032

Like the Vaillons, this is also quite firmly reduced though there is some wood influence present as well. Subtle but discernible wood blends with ripe yet cool aromas of overtly floral lemon-lime, quinine and oyster shell .The sleek, intense and powerful big-bodied flavors manage to retain a highly appealing refinement along with plenty of minerality that seems to build from the mid-palate to the bitter lemon suffused finale. This could use better depth yet, much like the Valmur, there is sufficient structure and balance to allow this to age well for years. Drink from 2032+.

So cool and delicate, so deep and refined, this Chablis Grand Cru is only just beginning to open up and display its fabulous elegance. Very precise and filigree palate that doesn’t even reach the upper end of medium-bodied, because this kind of chardonnay doesn’t need volume to impress. Such an incredibly elegant finish that pulls you back for more. Drink or hold.

Made from purchased fruit. Mid lemon yellow, lightly grilled hazelnuts, pyrazines, some oak in this which may contribute. The wine behind has plenty of energy but doesn’t compete with Preuses for overall excellence. Still, fine long and ripe with a smoky bacon finish.

Currently showing a bit more oak, this has plenty of weight on the palate. A little more heft than this producer’s Les Preuses, but likely to be more popular. Impressive but, for me, not their top 2020. Sappy on the palate, casks were used here for fermentation and malolactic. Drink 2023 - 2032.

This cuvée comes from almost all round Vaillons with the oldest vines being found in Séchets. Pale colour, a light stoniness backed by a little lemon and plum fruit, faintly lemon scented, a stony and steely central backbone, very typical of the vineyard, though the ripeness removes the most austere aspect of the finish.

From a selection of parcels in Sécher, Chatains, Roncières and Mélinots. Harvested separately and fermented before blending. Bright, very zippy, lemon acidity, crisp, floral, and with nice weight. 50% oak but very subtle, with winemaker Olivier Bailly using 600-litre casks of at least five years’ age for the maturation of Sécher. This is exactly what we expect a Chablis 1er Cru to be. It’s chalky and well structured, but bright and refreshing, the winemaking taking a back-seat to the oyster-shell and fresh lemon-peel character. Delightful balance and purity at the finish. Drink or hold.

The delicious medium weight flavors also possess almost painful intensity along with outstanding minerality that is enhanced by the clean, crisp and strikingly persistent finish. This terrific effort is also going to need at least some forbearance as it's presently very compact. Drink 2031+.

The 2019 Chablis Les Preuses Grand Cru has a slightly leaner but maybe more detailed bouquet than the Vaudésir, offering sea spray and light orchard fruit scents. The fresh, saline palate is well balanced with a fine bead of acidity, and taut and precise on the finish. This is a Les Preuses that should age gracefully in bottle. Drink 2024 - 2045.

From 70 year old vines, which consistently deliver a powerful wine every year. The 2019 has an all-enveloping nose, since this vineyard can carry the sunshine, very complete and the fruit just keeps coming. A touch of sucrosity, but good acidity behind, lemon scented, with a touch of tannin at the back. Long, powerful and balanced.

Subtle but not invisible wood surrounds the softly exotic aromas of both white and yellow orchard that flash solid Chablis character in the form of iodine and oyster shell wisps. The sleek, sophisticated and attractively vibrant middle weight flavors possess good volume before culminating in a balanced, very dry and sneaky long finish. This is a classic and ageworthy Vaudésir of refinement and delicacy. Drink 2029+.

The 2019 Chablis Vaudésir Grand Cru has a slightly muffled nose that needs to muster more delineation. (I did see some improvement after leaving my sample aside for 10 minutes.) The taut, vibrant palate is fresh and vibrant on the entry, with a fine line of acidity. Its pedigree really shows through on the detailed finish. Excellent, but it needs time in bottle. From three plots, vinified in tank and then racked into wood. Olivier found it a bit austere, so wanted to fatten it out and add complexity. Iodine notes starting to be teased out on the nose. This is an excellent expression of the vineyard bolstered by the ripeness of the vintage, but still entirely within limits. Very long pure white fruit aftertaste.

An elegant array is comprised of cool citrus rind, mineral reduction, quinine and white flowers. I very much like the intensity and fine detail to the highly energetic and overtly stony middle weight flavors that terminate in a clean, bone-dry and youthfully austere finale. This is lovely, and I particularly like the balance, though in contrast to the Fourchaume, this is a wine that's going to need at least a few years first. Drink 2027+.

The 2019 Chablis Montée de Tonnerre 1er Cru is well-defined on the nose, offering crushed stone and subtle earthy scents; a faint touch of white flowers emerges with aeration. The palate is well balanced with a fine bead of acidity, taut and linear. A reserved, lightly spiced Chablis with a brisk, quite saline finish. It just needs a little more in the way of persistence. From three plots of, which Pied d’Aloue is the oldest (1935). Clear pale fresh colour. Very intense if quite backward, Steelier than the Mont de Milieu with superb grip at the back. Not just the intensity, but the balance is there. This is a Chablis of enormous power and intensity, which finishes on a crisp marine bedrock. No wood on this one.

This too is reduced though again, it seems clear that the underlying fruit is notably ripe. The lavishly rich medium-bodied flavors possess evident power and good minerality that becomes more apparent as the bitter lemon-inflected finish sits on the palate. This lingering and moderately firm effort also displays a touch of warmth but not so much as to materially impair the balance. Drink 2027+.

4 plots on the Chablis side, but all the way up the slope. Olivier notes that yields are always low from what he describes as ‘tired old, soil’. This is a clean and powerful version that has kept to classic lines without undue exoticism, but the wood adds a little toast to the finish. 14% alcohol, but with low pH and, so fresh acidity saves the day.

From six plots well distributed across Vaillons. For example, they pick the 75 year old vines in Séchets a week before those in Mélinots at the far end of the valley. Notably pale in colour, very reductive, suggestive of fresh mint on the stones. Almost dainty within the context of the vintage, yet with good grip at the back.

A dollop of wood sets off a ripe mix of both white and yellow orchard fruit laced with nuances of iodine and seashore. There is fine mid-palate density to the intense and saline-suffused flavors that terminate in an agreeably clean and dry finish. This is also reduced and toasty on the nose. Otherwise, the rich, powerful and imposingly concentrated larger-scaled flavors brim with both sappy dry extract and minerality on the massively persistent, balanced and agreeably dry finale. More interesting are the sleek, intense and ultra-fresh middleweight plus flavors that possess excellent size, richness and power where the latter suffuses the sappy, muscular and saliva-inducing, moderately dry and compact finale. The 2021 Chablis Les Clos Grand Cru was taken from tank rather than barrel. This was primal on the nose and difficult to read. Once again the nose reflects just enough wood to be worth pointing out though it easily allows the slightly riper if otherwise similar aromas to shine. There is also excellent intensity to the dense, powerful and punchy broad-shouldered and sappy flavors that display outstanding length on the balanced and slightly more persistent finale. Plenty of colour beneath though. This is very pure, less Côte d’Orien than, sometimes, but there is a racy shellfish underlay. Finesse and intensity, not as broad based

Interestingly, this is aromatically quite similar to the Valmur save for the presence of an abundance of floral elements. The super-intense, indeed almost painful, broad-shouldered flavors possess evident minerality and excellent delineation that possess a bracing salinity on the hugely long finale. This too is clearly built for extended cellaring and is going to need at least 5 to 7 before it will be approachable. In a word, excellent.

The 2019 Chablis Les Clos Grand Cru yielded 35hl this year and is matured 50% in new and used barrels and the rest in tank. It has a well-defined bouquet with precise scents of yellow flowers, struck flint and smoke. I may actually prefer this to the Clos des Hospices cuvée. The palate is fresh on the entry with crisp acidity, taut and focused and full of energy. The Clos des Hospices has more depth and intensity on the finish, so overall it has the upper hand, but this is a serious Les Clos that will give 20–25 years of drinking pleasure.

A healthy 45 hl/ha, made with 45% in barrel and 55% in tank, the parts as yet unassembled (though this sample is). Racy, lime and lemon colour with a very pure intense clean, but ripe nose, with a little spice. Very tasty! This has significantly more weight, some toast from the barrel, a little bit of flesh too, good weight as well, but seems to lack a touch of tension. White fruit typicity remerges at the back.

Brilliant pale straw colour with greenish tinged edges and a watery hue. Elevated scents of ripe pear, subtle lime and dried honey fill the nostrils followed by stony mineral notes and light infusions of fresh herbs. Fresh yet supple and fleshy in its feel, the palate is decorated with pear and citrus fruits that show good generosity over light dried honey, wet stone and flinty mineral characters. Dry, well rounded finish with vivid acidity and a delicious aftertaste.

Brilliant pale straw colour with highlights of green around the edges and a watery hue. Pronounced lime, pear and green apple scents are trailed by wet stone and minerally oyster shell like notes. Zippy lime and green apple fruits sit above a wet slate, oyster shell and mineral back drop. Finishes dry with energetic acidity and a lively lemon mineral laced aftertaste.

Bright straw colour with flecks of green to the edges and a watery hue. Aromas of green apple, pear and lime meld into a wet stone, flint and oyster shell like back drop. Nicely rounded river stone like feel with flavours of pear, citrus and green apple overlaying stony mineral and oyster shell elements. Finishes dry with brisk acidity and a stony mid length aftertaste.

Bright pale straw to straw colour with a watery hue. Lifted pear aromas laced with wet slate are trailed by some lime, gun flint and oyster shell like notes. Delicious pear and green apple flavours are enveloped by wet slate with oyster shell and infusions of gun flint in the background. Nicely rounded on the mid palate, it finishes dry with brisk acidity and a lingering slate driven aftertaste that shows good tension.
