Chardonnay produces what is arguably the greatest of dry white wines, forming the basis of Chablis, Burgundy and Champagne. Beyond the simple primary fruit flavours of peach and tropical fruit, skilfully-made barrel-fermented Chardonnays include butterscotch, honeysuckle, fig, cashew, cinnamon, citrus and biscuit notes. Montrachet, Puligny-Montrachet, Chassagne-Montrachet, Meursault and Corton-Charlemagne are some of the most famous names from Burgundy.
