2021 Pierre-Yves Colin-Morey Bourgogne Haut-Cotes de Beaune Blanc Au Bout du Monde
After leaving his family domaine in 2005, Pierre-Yves Colin-Morey has established himself as one of the rising stars of Burgundy. Pierre-Yves has built a strong reputation for crafting exquisite white Burgundy that display energy and vitality. The white wines are whole bunch pressed, fermented with natural yeasts, aged on lees for up to 18 months in mostly in 350 litre barrels with no lees stirring and no filtration. The corks used come from one tiny supplier and are extra long and extra wide (55mm x 25mm) for the village, 1er cru and Grand cru wines and are untreated with no paraffin and the bottles are then sealed with soft wax to ensure no problems with premature oxidation. The resulting wines are built to age classically up to 10 years or more.

A broad-ranging nose features notes of mineral reduction, pear, white flower and hints of wood and zest. The sleek, delicious and more mineral-inflected flavors also terminate in a clean and dry but not especially austere finale. This is very good for its level. Drink through 2025+.

Another success at the generic level is the 2021 Bourgogne Hautes-Côtes de Beaune Au Bout du Monde, a medium-bodied, bright and precise wine evocative of crisp orchard fruit, citrus zest, toasted nuts and white flowers. Combining cut and texture, it's satiny and incisive.

The 2021 Bourgogne Hautes-Côtes de Beaune Au Bout du Monde comes from vines that are between 5- and 12-years-old. It has a fragrant nose with Nashi pear and Granny Smith apple, just a touch of wild fennel in the background. The palate is well balanced with sour lemon on the entry, not quite as creamy in texture as the Bourgogne Blanc but here I discern more complexity and terroir on the finish. Very fine. Drink 2023-2032.

Pale green. Very little bouquet, just something fresh and leafy. Lime juice cordial in the middle, definitely on the vibrant side. Nice in that style. Drink from 2024-2026.

The Hautes-Côtes de Beaune Blanc from PYCM features lovely aromas of grapefruit, lime zest, and fresh white flowers. The texture is light but crisp, and a salty minerality shines through on the palate. The grapes come from three parcels in the Hautes Côtes, named for a nearby nature preserve in Cormot-Vauchignon at over 400 metres elevation—the delayed budbreak at this cool site saved these vines from damage during the frost of 2021. The grapes were fermented in large, older oak casks that have now been racked into tank. Drink 2023 - 2033.
