2021 Pierre-Yves Colin-Morey Saint Aubin
After leaving his family domaine in 2005, Pierre-Yves Colin-Morey has established himself as one of the rising stars of Burgundy. Pierre-Yves has built a strong reputation for crafting exquisite white Burgundy that display energy and vitality. The white wines are whole bunch pressed, fermented with natural yeasts, aged on lees for up to 18 months in mostly in 350 litre barrels with no lees stirring and no filtration. The corks used come from one tiny supplier and are extra long and extra wide (55mm x 25mm) for the village, 1er cru and Grand cru wines and are untreated with no paraffin and the bottles are then sealed with soft wax to ensure no problems with premature oxidation. The resulting wines are built to age classically up to 10 years or more.

Like the Bourgogne, this is also super-fresh with its aromas of just sliced citrus, green apple and wet stone hints. The sleek, energetic and precise middleweight flavors exude ample minerality on the clean, refreshing, very dry and lightly austere finale. Drink through 2026+.

The 2021 Saint-Aubin Village is excellent, exhibiting aromas of pear, green apple, mint, white flowers and hazelnuts. Medium to full-bodied, satiny and layered, with chalky structuring extract and tangy acids, it concludes with a long, precise finish.

The 2021 Saint-Aubin Village comes from three parcels and sports a discrete reduction on the nose. This is nicely focused with plenty of energy. The palate is really convincing with an energetic opening, a seductive mixture of citric acidity intertwined with tropical notes of lime and apricot. Very focused and brimming with life, this will be irresistible in its youth. Drink 2025-2038.

This sample has 50% new oak as those barrels have gone through malolactic first, but the final blend will have less. There are some apple notes which will tone down and a limey finish. Pretty good. Drink from 2024-2027.

Jasper Morris MW - Inside Burgundy
The village-level Saint-Aubin from Domaine Pierre-Yves Colin-Morey features green apple and grapefruit aromas with spice from the cask fermentation. The texture is silky and round, avoiding any tart or acerbic sensations and lingering on the palate. The grapes are a blend of three parcels from his fifty-year-old vines in the south-facing but high-altitude lieu-dit Le Blanc with a parcel in En Choilles. Colin presses the grapes very gently as whole clusters and racks to barrel without settling before fermenting in cask on native yeasts. Drink 2025-2035.
