    Clairin Vaval is sourced from the village of Cavaillon, three hours drive from Port au Prince. A heirloom variety of sugar cane called "Madame Meuze" is the focus here. The fresh cane juice was distilled at the Arawaks distillery under the direction of Fritz Vaval before being bottled at natural strength. Founded after the war by Fritz’s father Danois Vaval, the estate possesses 20 hectares of sugar cane grown without the addition of fertilizers or artificial pesticides.

    Tasting note:[2016 vintage 48.8% Alc./Vol. tasted]Clear with thick legs. A whiff of herbal freshness, also a lovely yeasty / bready / grassy character to the nose. Very pure. Air contact adds hints of varnish, pickle, brine, icing sugar, dilute molasses... Exceptionally soft at this ABV. Medium bodied, dry and fresh with a herbal-bready entry. Sweet pickle flavours, brine and developing oiliness. Ends bone dry, minerally, yeasty with anise / dill freshness lingering. Great stuff.

    Tasting note: Bright gold. Interesting aromas of elderflower cordial / dried apricot / marzipan in the opening sniff followed by medium bodied flavours of dried fruits (mango, apricot), banana cake and a delicious creamy-soda and elderflower finish with lingering vanilla sugars. Amber gold in colour, the sugars are nicely restrained with borderline buttery aromas and flavours of date cake, maple drizzled flap jacks and milk chocolate.     Tasting note: Deep gold. Opens with powerful aromas of creamy soda, fried banana, dried mango, fruit bread and white pepper. Second pass finds raw sugar, hints of white chocolate and banana cake added to the mix. Concentrated yet remarkably smooth and poised given the ABV; gentle bittersweetness at midpalate with banana peel, fruit loaf, white pepper, grassy/pineapple freshness and warming sweet spices lingering at length. Complex and never too sweet. Beautifully done.57% Alc./Vol.

    Don't buy this if your idea of spiced rum is vanilla, vanilla, vanilla. The creators of Dark Matter use fresh ginger, fresh green peppercorn, long pepper and allspice berries, all hand prepared, and it shows. The rum is only very young, so it doesn't stand out in the flavour profile, but the spices are leaping out of the glass.

    Tasting note: Dull copper penny colour shows considerable viscosity. Up front with dense aromas of cinnamon, smoky cardamom, clove, liquorice root and gingery warmth. Follows through with a super silky, creamy, sweet burst of clove, cinnamon, cardamom and vanilla; develops momentum with warming cinnamon and ginger heat. Finishes with sustained intensity. A robust, in-your-face example that's not ashamed to deliver what the label says. 40% Alc./Vol.

    A rum celebrating the legendary ‘Operation Jaywick’ with half the proceeds going to the Commando Welfare Trust. Operation Jaywick was a raid on shipping in Japanese-occupied Singapore harbour between September and October 1943. The raid was carried out by members of Special Operations Australia (SOA) from Z Special Unit. The team comprised of four British soldiers and 11 AIF and Royal Australian Navy personnel, commanded by a British officer, Major Ivan Lyon.

    Disguised as Malay fishermen, Lyon’s team travelled from Exmouth in Western Australia to Subor Island, 11 kilometres from Singapore, in a captured boat, renamed the MV Krait. The Krait was a slow-moving, wooden-hulled vessel about twenty metres long and sporadically suffered engine trouble for the duration of the voyage. On reaching the island three-and-a-half weeks after leaving Australia, the team launched three two-man collapsible canoes (folboats). Lyon and five others then paddled into Singapore harbour. Arriving at night they split up and slipped from ship to ship attaching limpet mines, paddling another 80 kilometres to rendezvous with Krait six days later on 2 October. When the mines exploded, seven ships were sank or badly damaged. The Krait recovered its intrepid but exhausted canoeists and travelled back to Australia, arriving at Exmouth on 19 October 1943.

    This 9 year old rum also has an amazing ‘origin story’ itself. Initially created at the legendary Beenleigh Distillery (a blend of pot and column still) and tropically aged on-site for 4 years in ex-bourbon casks, it was then sold to a ‘European rum buyer’ and sat in a bond-store in Amsterdam for 5 more years of continental ageing. Fortuitously, the importer Justin Boseley, whilst on a "European rum buying trip" came across the said barrels of Beenleigh and scooped them all up to take back home and bottle. Some of this rum was then bottled as ‘Australia 9 Year Old’ for the European market (back on a boat to whence it came!) but a portion was set aside for this special tribute bottling to a special group of Aussies - all of it going into glass at 55% ABV. The aromas are soft yet deep with a spicy lift. Medium dry, the palate builds into intense, juicy flavours of ripe papaya flesh, mango, dried banana and molasses with cinnamon / pepper warmth budding at the finish. This fresh and slightly leaner, estery style could be mistaken for a lighter bodied Jamaican. Tasted from a 50ml sample.

    Other reviews... On the nose (and even before its near my nose) I am getting wafts of vanilla and oak spice. Some walnuts and peanut brittle. It is many ways very typical of an English Style of rum. Think of Foursquare or (non pun intended) English Harbour in particular. There is a lot to be said for a well blended Pot/Column rum. Something which I feel is often overlooked by some rum enthusiasts. Having said that this isn’t a particularly gentle rum. We are not talking about English Harbour 5 Year Old or Doorly’s XO. No the extra ABV certainly gives this more of a punch. So we are more in keeping with a Foursquare ECS or the Velier Antigua bottlings. Another thing which gives this rum a little more “oomph” is the unmistakable hit of molasses which carries over the nose. There is a really nice “treacly” note which I really enjoy. SIpped, initially the rum is quite fiery with the molasses and oak spice taking centre stage. A few sips in and as the palate and throat acclimatise to the rum – we begin to get more of the softer bourbon influenced notes. So the suggested flavours from the nose begin to shine through. Vanilla, light caramel and peanuts all appear. As we move into the mid palate I begin to get the molasses coming back along with a very nice hit of oak and spice. I’m also getting notes of corn flakes and I keep thinking about freshly buttered toast and golden syrup. There is a hint of smokiness. The finish is dry but very long. The molasses and caramel notes stick around for a long time after the sip. As your mouth dries out the oak and spice come out to play again giving a very more-ish feel to this spirit. This is the first time I have sat down properly with a distillate from Beenleigh. I have to say I am highly impressed. This is great stuff. 4.5 stars - thefatrumpirate.com

    Dead Reckoning's latest offering features 'rum royalty' from the legendary Antigua Distillery. Located in English Harbour (home of the ‘English Harbour Rum’ brand), the rum is copper pot distilled from a molasses wash, matured for two years in x-Bourbon wood, then finished in Australia for two years in a first-fill Apera cask before bottlling at 50%. 355 bottles are available.

    Little-known to rum lovers, Antigua Distillers Limited was formed in 1932 by eight local businessmen and by 1933 they had established their own distillery on Rat Island (named because of its shape – the authorities didn’t want a distillery on the mainland due to the potential smell and noise). Originally equipped with a multi-column Savalle still, it was replaced in 1991 with a three-column still from John Dore & Co. made entirely out of copper – bolts included. That was subsequently modified into a five-column still making it shorter, apparently due to the danger of tropical storms in the area. While the distillery's website does talk about a yeast and fermentation process that “adds a level of flavour to the liquid in the tank, and it also produces a number of compounds that contribute directly to the complex flavours and aromas of the final product”, the wash is distilled to 95% ABV making it pretty much neutral in taste. Most of the flavours are said to come from the maturation process which typically employs charred 200 litre ex-Bourbon casks, so this bottling adds a bit of a twist. Reportedly, nothing has been added.

    Other reviews... Nose: A sweet cacophony of chewy dried figs, juicy lunchbox sultanas, toffee apples, dried banana chips and desiccated coconut. Palate: Crisp, clean and dry on the pallet with granny smith apples and vanilla custard chased around by stewed fruits and ginger-y spices. Finish: Not a lot of length to the finish, but it’s a fun ride whilst its there!  – espresso coffee, dark chocolate and more sultanas with a mild white pepper salute right on the tail. Wow – this is quite a textbook mix of bourbon and sherry (ok, ok… Apera) cask characteristics – floral apple and vanilla notes from the bourbon and the dark stewed fruit and pepper from the Apera cask. The characteristic column still ‘crispness’ is also there to complete the lesson. - rumtribe.com.au

    Notes from the bottlers... Toffee, caramel, roasted coffee, chestnut & a hint of black pepper. Whilst working in the mega yacht industry, I was fortunate to spend several months a year living in English harbour in Antigua. Nelson’s dockyard was the location of many a party with fellow crew members.  It is also place where Lord Horatio Nelson spent time. This is where my love for this Rum developed as it was a daily staple for all yachting crew. In the past English Harbour rums did have slight adulteration, but I believe they have now changed their formula so no longer will you see sugar added to any of their rums.

    Depaz's 'Cuvee de la Montagne' was exclusively harvested from cane growing in the volcanic soils on the slopes of Montagne Pele. The fresh-pressed cane juice was fermented for 48 hours, distilled in a copper column still to 70% ABV, then slowly reduced with water over sixty days. Before bottling, it was rested in stainless steal tanks for at least three months. The result is a floral rum with notes of orange blossom, sweet banana and spice.

    Notes from Depaz... NOSE: fruity, floral and complex aroma, with a specific mineral touch. PALATE: the attack is sweet and honeyed, with a very elegant floral flavours. Sugar cane, orange blossom, banana combined with spicy notes of pepper and tobacco follows. 45% Alc./Vol.

    Produced at the Depaz Rhum Chateau & Estate on the French West Indies Isle of Martinique this is an exclusively agricole product, the signature ingredient of which is estate-produced blue cane. Considered the costliest and most difficult cane to grow, Depaz Estate claim their blue cane "...delivers the ideal balance of sugars for maximum flavour and character delivering a superb floral nose and a smooth, flavorful and refined character to the rhum. Even within Martinique, very few locations are suited to produce blue cane at the quality level and quantity necessary for developing a luxury rhum". This VSOP is seven years old.

    Tasting note: Deep burnished copper. Medium sweet aromas of raisin cake, vanilla, cinnamon, a little clove. Later, greener notes blow through…white pepper, dried grass. An attractive assemblage of vivacious agricole with sweeter, heavier oak notes. Cough lozenges(?), sprinklings of white pepper, golden syrup and raisin cake through the finish. A little short but very tasty. 45% Alc./vol.

    Previous batch tasted 2013: Bright burnished copper / brass colour. The aroma is unusual for gold rum, being slightly grassy, with hints of unripe banana. Exposure brings sweeter, buttery scents of vanilla to the fore followed by a delicious fruitiness (ripe cantaloupe) leaving an overall impression not unlike aged, oaky Chardonnay, though the aroma is obviously much weightier here. Third pass adds bitter chocolate and caramel into the mix. Exceptional complexity. The unexpectedly dry and light entry delivers a rum that's a cross between blanco agricole and typical aged rum. This is drier and slightly greener than most gold rums, though none the less pleasant for that, with unripe banana, cut grass and beeswax flavours, finishing crisp, lean and vibrantly spicy with moderate length. 92 points

A bracing spirit carries flavours of cocoa-dusted banana cake with fruit sorbet and marzipan / honey entering late before the grassy characteristics return into the lengthy, drying fade. 50% Alc./Vol.

    Tasting note: Crystal clear with a silvery blush. Offers up notes of icing sugar, fairy floss and vanilla bean. A sweet entry is followed by a wild flare of spirit. Repeats the aromas with lip numbing intensity. Prickly mouthfeel, the finish is bittersweet, with more texture than overt flavour. Reserve for the punch bowl or dynamite cocktails. 75.5% Alc./Vol.

    Dictador's premium offering was distilled partly in copper pot alembics and partly in steel continuous column stills before being aged in a solera system. It's noteworthy that the oldest part of the blend is 20 years old - not the youngest. Tasting the 12 and 20 year old releases side by side, the younger version showed more aromatic personality and better overall length. It will be a question of personal preference as both are nicely balanced examples worthy of a rum lover's attention. In this expression, the bouquet opens with soft, sensuous notes of sticky date pudding, brown sugar and creme caramel with a sense of freshness retained. Entry is light and brisk building into a superb, concentrated profile of roasted nuts, dilute molasses and sweet ginger biscuit and spice trailing off with moderate length.The presentation makes it unmissable on a bar shelf. 40% Alc./Vol.

    The Dictador company was founded in 1913. This molasses-based rum is produced via continuous column distillation and aged in pre-used oak barrels via the solera method. The deep gold appearance is accompanied by liqueur port-like aromas, then more familiar rum notes of sticky date pudding, raisin, cocoa and vanilla making for a decadent sniff. Aeration brings the rum full circle with the superb sweet, fruity fortified wine notes accented again. Entry is surprisingly light and agile compared to the richness of the aroma - almost oloroso sherry-like in style; mid palate crescendos with a medium dry sherry-like burst that’s rich and nutty, followed by subtle cafe-creme and molasses flavours. Concludes tangy and light with a nutty, vanilla, cocoa and dilute molasses aftertaste. Impressive - especially given this is the company's entry-level standard. Tasted from a 25ml sample. 40% Alc./vol.

    Other reviews... This is quite an unusual rum, heavy on the nose with notes of walnut nougat, marshmallow, and vanilla. That complexity continues into the palate, where a heavy, Demerara sugar-fueled sweetness awaits. Notes of sweet cream and cinnamon stick give this a decadence usually only seen in ice cream or Mexican desserts, unctuous and becoming almost gaudy with its sweetness from the moment it hits the tongue to the long, mouth-coating finish. It’s an epic rum, and that’s both a good and a bad thing. On its own, Dictador 12 is a bit overwhelming, but in a cocktail its unyielding boldness of flavor can add a surprising dimension to a cocktail. - drinkhacker.com

    ...Dictador Solero isn’t anywhere near as dark as the bottle might lead you to believe. Its a lightly brown coloured rum which is quite transparent in the glass.  It’s a very intense, pungent smelling rum similar to Pampero Anniversaro.  The taste of the Dictador initially is very much of coffee.  If you sip this rum then that will be the taste you will definitely get the most, cold coffee.  I suppose it being Colombian that kind of makes sense.  For the record this isn’t a criticism its really very nice sipped.  With a little cola the rum really comes to the forefront giving an intense smoky flavour. I found this rum to be very moreish (the darkness of the bottle hides the fact I’ve drank most of the bottle).  If you like rums which are a little different to the norm and enjoy a complex dark aged rum you will enjoy this rum.  It still has a fruity taste but it has a lot more going on that just being sweet... If you want to try something different then give this a try.  It is also available in a few 20 year old versions.  They too have reviewed well online though I’m yet to try any of the more expensive one’s. - thefatrumpirate.com

    Number three in Diplomatico's 'Distillery Collection' is created in the copper pot still that was used at the company's La Miel distillery in 1959, but originally used in Scotland to produce whisky. Today this copper pot still makes rums that are considered at the heart of Diplomatico's unique taste profile. Described as having aromas and flavours of red and tropical fruits with toffee and vanilla, it develops with notes of oak combined with coffee and dark chocolate.     If you haven't been inspired to try the aged rums of the Caribbean then you’ve got a lot to look forward to. This applies not only to those who’ve never moved beyond Bundaberg and Coke since high school, but more so to those who are serious about wine, whisky and brandy - in short, those of us who are passionate about ‘flavour’. Quality Caribbean rum has as many permutations of aromas, tastes, textures and strengths as any group of wines or spirits. The rum market in Australia has increased exponentially and the overall quality is superb. We now have access to many small and large producers who are vying for attention and the very reasonable prices mean rum is not just a passing fad.

    Aside from the familiar Caribbean island groups, more and more people are becoming aware of a ‘mainland’ rum tradition. Think Nicaragua, Gautemala, Panama or Venezuela. The latter, already famous as the spiritual home of the rum based medicinal bitters, Angostura, is now finding its rums eclipsing that legacy. The country has a number of highly regarded offerings, but those from the Distilerias Unidas in La Miel on the northern slopes of the Andes lift the bar highest.
    Their Diplomatico label is the international reference.

    We prefer to let what’s inside the bottle do the talking, but it is impossible to overlook this venture’s remarkable accumulation of twenty plus international awards since 2007 (54 medals in contests worldwide), including the SIP Awards, San Francisco World Spirits Competition, Miami Rum XP, Monde Selection and other big guns. Even if the show circuit is irrelevant to you, a different kind of achievement came in October 2011 when the company’s Maestro, Tito Cordero, was honoured at the Golden Rum Barrels Awards as the World’s Best Master Blender. He was the first Venezuelan to receive the award. Given that so much depends on how the distiller and blender create their product, this was the rum world's supreme commendation of Cordero's skill and outright quality fanaticism.

    A reinvigorated project that stemmed from an early Seagrams investment in the 1950s, passed on to Diageo, and is now in the custody of the Ballesteros family, the distillery is adjacent to the Hacienda Saruro, where much of the sugar cane is grown. Average daytime temperatures of 30-31C drop by 6-7C at night, a differential which when coupled with high humidity benefits cane growth: it concentrates the sugars and favours the ageing process. Different varieties are grown to make sugar honey and molasses. Molasses is preferred for the light rums, sugar cane honey for the heavy. While many producers are struggling to get molasses with a sugar content above 45%, Diplomatico are ahead of the pack before they even begin. Venezuela regularly achieves upwards of 60%. 

    Not unlike other distilleries, here pot stills are for richness and weight, column stills for adding freshness and elegance. Between the two are batch kettles that carry out secondary distillations of semi-heavy rums. Varying proportions of each create a hierarchy of styles. Barrel regimes vary, including ex-bourbon with some re-filled single malt whisky casks. Sherry casks are now being experimented with to great effect, as the 2000 Vintage release bears testimony. Finishing departs from the mainstream, as most Diplomatico rums are given only a delicate filtration prior to bottling - gentle enough to maintain fatty acids and maximum mouthfeel - then filtered using 3 micron-thick filter pads. It is minimal interference by world standards, Cordero considering it a formality to ensure the rums retain their clarity and brilliance when exported to cooler climates.

    Diplomatico's flagship cuvee is aged for up to twelve years and typically blended from around 80% pot still rums; the remaining 20% are lighter styles from column stills. Cordero mixes a little cane sugar prior to blending which is another reason why the flavour seems amplified compared to some others in the stable. Stylistically this edges Ron Zacapa 23 for satisfaction and sheer saturation and is the one that many of our customers measure other rums by. Those whose taste preferences tend towards the savory may misunderstand what is an unashamedly dessert / quasi- liqueur styled effort that falls into a sub-category of its own. Almost as decadent as a rum can get without cloying the mouth and falling out of balance - there are more complex rums around, but not near this price, nor do they have the same uncanny ability to incite superlatives. The packaging depicts Don Juancho Nieto Melendez, who was a noted rum enthusiast in the town close to the distillery. It's reported that, being something of a globe trotter, over many years "...he amassed a large collection of rums which he took great pleasure in offering his guests at the lavish dinner parties he held at his house."

    Tasting note: Brilliant copper with a gold hue. Heady and decadent scents of creme caramel, fresh coffee, chocolate fudge, vanilla and spice. A silky, creamy mouthfeel yields a plush array of dried fruits, raisins and coffee-caramel, counterpointed by a gently warming spirit heat. Perfect balance, seamless integration. Very long, mouth coating aftertaste of vanilla and liquorice strap with a subtle dark chocolate finale. Avoids the too sweet trap.     Other reviews... In the glass Doorly’s 8 year old is a classic reddish/golden brown.  Likely there is some caramel colouring to help with colour consistency. Nosing reveals a light, fruity typical Bajan style of rum.  Classic rum I would say.  It’s beautifully balanced.  It displays all the classic traits of tropical ageing in American oak casks.  Lovely light summer fruits, vanilla and the sweet/sour mash spice of the Bourbon casks. If this was from another producer I would be surprised to be getting such a great balance.  I have said it before and I will say it again.  Foursquare, like Appleton Estate simply do not make bad rum.  An average Foursquare rum, by their high standards will eclipse the best of most rum producer's efforts.  By a mile. Sipping the Doorly’s 8 offers few surprises.  Which on this occasion is no bad thing! Everything that is promised on the nose is delivered when sipped.  Nice oak notes and spicy sweet/sour bourbon mash. You also get sweet fruity notes – a little grape and some coconut.  A slight caramel sweetness as well, a just a touch of toffee.     Other reviews... I think Doorly’s is the most famous brand by Foursquare Distillery, and I believe it’s a blend of pot still and column rums. I had liked their Doorly’s XO a lot a few years back (WF 85). Colour: gold. Nose: vanilla and raisins plus Swiss milk chocolate and notes of cane juice at first nosing, then deeper, albeit tiny notes of earth and leaves. Oranges coming out after just two minutes, while the whole remains rather ‘easy’ and even a notch light. It’s a gentleman. Mouth: very good, bright, with oranges and cane juice, you’d almost think this is a readymade dry cocktail at high strength. Sips very well, even if it’s not a very complex rum. A wee touch of coconut – but can you say ‘wee’ about rum? Finish: medium, clean, cane-y. A little tobacco and more oranges in the aftertaste, as well as mangos. Comments: feels natural. Loved the easy fresh fruits in it, now I think it’s much less ‘phenolic’ than the XO. 80 points - whiskyfun.com

    ...When compared to the likes of the similarly priced Appleton V/X or Chairmans Reserve, it is a lot more refined and less edgy. In terms of mellowness it reminds me more of Appleton Reserve 8.  ...It’s not the same taste wise but in terms of heat and spice. It’s pretty sophisticated. I’d say it has a lot more going on than the English Harbour 5 year old, for example.  It is certainly a step up from Mount Gay Eclipse and even Cockspur Fine Rum... This is a serious contender for best rum in its price bracket.  It really is a great introduction to Bajan style rums. In fact its a good introduction to “real” rum in general. 4 stars - thefatrumpirate.com

    ...I tried the 5yo after the 8yo and expected a younger (obvious) harsher rum but it is actually easier and sweeter (for a 100% dry rum) than the 8yo. Less complex, less oaky, less sophisticated but also fruitier and more sweet notes make the 5yo a really pleasant, very affordable enjoyable sipper. On the nose it is very inviting with some vanilla, a touch of smokey oak, sweet oranges and some alcohol. On the palate the orange and vanilla combine to a fruity fudge-like sweetness (again, it is really a dry rum) with a pinch of pepper. The oak is much more in the background than with the 8 yo Doorly's. Very well balanced and nothing out of tune. Lovely little rum and at this pricepoint very hard to beat.     The Enmore Wooden Continuous Coffey Still was constructed at the Enmore Estate in 1880 and based on an original design from its inventor, Irishman, Aeneas Coffey.     El Dorado 8 Year Old - a product of the worlds oldest and most revered rum stills.

    Sugar was first produced in Guyana in 1658. By 1670 every sugar factory had a small Rum Still attached to it. This was the origin of Demerara, and Demerara Rums. Over a period of time there were steep fluctuation in prices that resulted in the closure of some sugar estates and consolidation of others. Today the associated stills have rationalised into one distillery - Demerara Distillers Limited, the makers of El Dorado. In 1740 Admiral Vernon formalized the rum ration for the Navy, with the rum composed of 82% Demerara and 18% other Caribbean Rums. The Port Mourant double wooden pot still (built in 1732) became the favoured source of Demerera Rum for the British Pursers. Before entering into battle the rations (tots) were doubled and British Navy men, steeled by the liquid courage tore into the enemy. Rum, and the classic stills that produced it, helped make Britain the supreme power at sea, forging an empire and the classic era for this great spirit.

    El Dorado 8 Year Old is a blend of Enmore (built in 1880, the world’s oldest and only wooden, column Coffey still), Port Mourant and the modern Diamond (steel column) stills. It is aged a minimum of 8 years in ex-Bourbon casks.

    Tasting notes: The deep brassy gold colour is flawless and bright. Offers up an attractive, mildly fruity bouquet including scents of dried pineapple and bounty bar. Raisins and dates come to the fore after several minutes in the glass. The aromas are reflected on the palate which is creamy with semi sweet, juicy sultana / date / fruit cake flavours. Concludes balanced, creamy-yet-fresh with mocha and vanilla custard tailing off into a gently spicy fade. Utterly delicious. 40% Alc./Vol.

    The El Dorado rums are created from a combination of eight stills, some of which are the world's oldest in operation. Their different construction and size means each yields different distillates that allow for a maximum range of styles. The 21 year old is produced in three: the Enmore wooden Coffey still, the Versailles single wooden pot still and the Albion Savalle still with an emphasis on the latter. This original, four-column, metal French beauty was inherited from the 18th century Uitvlught Estate on the west coast of Demerara county. The rums it produces are characterised by a pronounced sweet, sugar cane nose combined with a dry medium-bodied flavour. The result is an alternative to the uber-exuberance of the 15 Year Old in which the Port Mourant contributes most. This is no powerhouse, rather you get serious complexity, persistence and a kind of finesse that's almost unmatched in the rum pantheon.     Tasting note:[40% Alc./Vol. batch tasted] A blend of select aged rums between 21 -25 years old. Deep topaz / polished mahogany colour shows moderate viscosity. Drier styled aromas open mildly varnishy, developing with raisin slice, dates, banana cake, cinnamon, raw sugar and apricot brandy over 5-10 minutes; the sweeter notes are countered by woody, resiny aromas suggesting cigar box, cane and wax polish. Final pass accents toffee, rock lollies and heightens the dried fruit notes. Entry is light, dry, woody, unfolding with understated elegance, coating the mouth with a film of banana cake, dates, light molasses, caramel and vanilla. Builds in slow motion, peaking with a superb crescendo of sugars and zero burn, closing with liquorice allsorts and residual molasses through the aftertaste. Resonates and rebounds in the mouth over several minutes, the wood contributing almost as much as the spirit, the whole coming together in a way that sets it apart from almost any other rum. If you hurry this, frankly you'll be wasting your money. Demands extended breathing to reveal its best. One to savour.

    El Dorado's somewhat quaint, maritime label belies what is a very sophisticated wood-aged spirit. A go-to rum for anyone in the know, this extra-aged blend which is at least 15 years old, (though some components are much older) delivers the kind of class and complexity you'd expect to pay much, much more for. The distillery combines the most up-to-date equipment with a wealth of traditional expertise, including old-style Demerara pot stills and patent rum and alcohol stills. The last fully operating rectangular wooden Coffey still in the Western world continues to be used for the production of the company's finest spirits. This is certainly one.

    Tasting note: [43% Alc./Vol. Batch Tasted] Very deep copper penny colour. Momentary varnish blows off to reveal a stunning amalgam of dried banana and baking spice that's sweet yet fresh; brief exposure adds complexing notes of mango tart, pistachio nut, raisin cake and molasses.     Stemming from Mexico, El Ron Prohibido is matured in a 12-year old solera composed of barrels that previously held sweet raisin wine. The story goes that this rum used to be served to sailors in Mexico, but they all got so drunk that the captains made it illegal to serve! Hence the name 'El prohibido' - the forbidden rum. Nosing finds hints of balsamic over richer scents of candied orange, choc-chip cookie, praline, chico lollies and dilute molasses. Five minutes sweetens the aroma and shifts the emphasis to sticky date pudding. Light to medium bodied, off-dry delivery. Coffee milk, caramel fudge and lingering mocha flavours are nicely counterpointed by subtle bitter chocolate in the aftertaste. An atypical style with a likeable cocoa / mocha accent.     Notes from the bottler: “In 1700, Spanish ships arrived to the colonies in the New World loaded with products from Spain. One popular product was sweet wine stored in barrels, which were later emptied after use. These empty barrels were filled with Chinguirito, which is rum that was produced in Mexico and shipped back to Spain, it absorbed wood flavours and aroma from the sweet wine barrels, which gave it very special characteristics. The resulting product became very popular in Spain and local producers saw it as a threat to the sales of their products. Consequently, the King of Spain prohibited the production of this rum in the New World. Chinguirito was also known as Habanero because the last stop on the way back to Spain from the New World was Habana, Cuba.”

    Located off the coast of Madagascar, the island of Mauritius is a relative newcomer to the global rum scene. Sugar cane was introduced from Java during the Dutch period (1598-1710), mainly to produce an alcoholic drink. During his service in the 18th century, the French Governor, Bertrand-François Mahé de Labourdonnais, was the first to support the development of the rum industry in Mauritius. From 1810, the country became a British colony and gradually transformed itself into a plantation economy with sugarcane as the primary crop. Later, in 1852, Dr Pierre Charles François Harel saw opportunities to create quality rums on the island. Today, it's home to six distilleries and remains one of the few countries to offer both Traditional and Agricultural style rums, dark, light and spiced, the latter usually infused with the island's abundant local crops of spices and coffee.

    The Germana distillery was founded in 1912 by Sergio Caetano in the town of Nova Uniao in the state of Rondonia. Distilled from fermented sugar cane broth, Germana 'Traditional' was aged for two years in French oak barrels. Each bottle comes wrapped in banana-plant leaves. Expect a slightly tangy, oaky, woody style with hints of grape must and honey, plus a little vanilla sweetness. Drink neat or in rum cocktails. 40% Alc./Vol.

    Produced as early as 1532, Cachaca is considered a national drink amongst Brazilians who consume an astonishing two billion litres a year. Added to this figure are annual exports of around 9.3 million litres which ranks Chacaca as one of the largest selling spirits in the world. It is the basis of the Caipirinha (pronounced Kaay-peer-REEN-ya), which became one of the world’s most popular cocktails towards the end of the millennium leading to a world Cachaca shortage. The spirit has been in demand in Australia for some time with many bars using white rum as a substitute. While Cachaca is also a sugar cane distillate, and so similar to white rum, it is not distilled from molasses but from the juice of unrefined sugar cane of which only the first pressings are used. A maturation process of several weeks (or longer) in wooden vats allows the flavour to soften, making the taste lighter and smoother than many white rums.
