    La Valdotaine is a tiny mountain distillery that runs small batches through old copper stills using indigenous grapes such as Petit Rouge, Vien de Nus, Cornalin and Premetta. Pomace is sourced from high altitude vineyards throughout the valley on both sides of the Dora Baltea river. This expression is made from majority Petit Rouge and aged in oak barrels. Its vibrant, diverse aromas evoke sour cherries, spiced raisins, mustard powder, dried dill and hints of brine.     Laird's Applejack is a spirit new to Australia, but was first made in 1686 by Scotsman William Laird. Applejack was traditionally produced using 'freeze' distillation. A process that involved putting a barrel of cider outside to allow the bulk of the liquid to freeze, then collecting the unfrozen material. Considering most alcohols freeze at temperatures far lower than water, this process works very well in theory. The unfortunate flaw in the method was the collection fusel oils and alcohols other than ethanol, almost guaranteeing a rotten hangover for the early drinkers of Laird's. Still, this didn't stop George Washington, who himself was a distiller of renown. In fact, he personally requested the recipe after receiving the Laird family, and subsequently introduced Applejack to the rest of the Virginia colony.

    Today, Laird's Applejack is made by blending 35% apple brandy with 65% grain neutral spirit. Rest assured, the distilling methods have evolved considerably since the late 1600s, though the immunity from the hangover cannot be guaranteed, especially if Applejack is consumed in the traditional "stonewall" cocktail, one that combines 1 part dark rum, 1 part Applejack and 4 parts hard cider.

    They say that to be Mediterranean is to have a different attitude. Certainly this claim is reflected in Metaxa. When speaking of this unique spirit, we should not merely consider it a brandy, for while it is produced from grapes, its similarities to brandy end there. Metaxa was first created by a silk trader named Spyros Metaxas who in 1882 built a distillation's factory in the city Chyphisia in the Attica region near Athens. A blend of Savatiano, Sultanina and Black Corinth grapes are employed in its production. These are twice distilled to 60% Alc./Vol., then reduced with aged muscat wine from Samos & Lemnos. Further blending continues utilising a mix of botanicals including anise and rose-petals. Then finally, the spirit is married in limousine oak casks. Metaxa is generally available in three versions: Three Star, Five Star, and Seven Star. Each star represents one year spent in oak. The product has earned world recognition for its quality, colour and taste and is distinguished as the most famous Greek spirit worldwide, over and above ouzo.

    Now in Australia, a selection of Super Premium Metaxa bottlings are available including the much sought after Private Reserve.     Made in the traditional full bodied Greek style dating back to 1888. Metaxa starts out like a brandy, with a variety of distillates from white varietals from different parts of Greece. After periods of ageing in French oak casks, the distillates are blended and mixed with a small amount of muscat wine from the Greek Aegean Islands of Samos and Limnos. Finally, Mediterranean herb and floral extracts are added – a secret recipe - apart from rose petals. The brandy's trademark smoothness is primarily derived from the Muscat wines.

    Tasting note: Deep copper appearance is slightly subdued in the glass. Perfumed opening sniffs offer an amalgam of sweet scents from creme caramel to cocoa and dates. Aeration draws out hints of Turkish Delight then liquorice bullets, the latter partially relieving the sugars. Initially light and semi sweet in the mouth; mid palate shows extra depth offering spicy caramel flavours and hints of dried fruits towards the finish. Ends flabby with moderate length as the sweet spices linger. The genteel spirit and glossy texture don’t really compliment the sweetness. Overall, somewhat broad and flat. 40% Alc./Vol.

    Chilean Pisco is a distillate mainly of grapes from the Moscatel family, which are grown primarily in the semi-arid "little North" zone of Chile. Chile claims Pisco as its own, protecting its quality through strict adherence to regulations which permit production and processing only in the administrative regions of Coquimbo and Atacama.

    This reservado is aged in American oak barrels giving the product an amber color and a soft wood flavour and aroma. The main grape varieties used are Pedro Ximénez and Muscat of Alexandria.     The Nonino family have devoted themselves to the art of distillation since 1897 and each generation has been consistently improving and innovating to change the perception of this ancient Friulian distillate. In 1973 Nonino became the first producer to create a single varietal Grappa from the indigenous Picolit grape, setting a trend which the rest of Italy’s distillers would follow. Nonino has tirelessly campaigned for the preservation of local varieties, establishing the ‘Risit d’Aur’ (Golden Rootstock) Award in 1975, which is awarded annually to Friulian growers who preserve and propagate native vine material. In 1984 Nonino again set the standard with ‘ÙE’, distilling from whole grapes to preserve their unique aromas and flavours and softness on the palate. And in 2000, the Noninos created Gioiello, a pure honey distillate to complement a range that few producers can rival for quality.

They are very different expressions but equally deserving of attention. Fermented in one hundred year old oak and aged in separate barrels for a minimum of 30 years, venerable apple brandies like this can be shape-shifting spirits - which ups the complexity and enjoyment: In the initial pour, aromas leap from the glass with pure, perfectly mature whiffs of poached pear and baked red apples over cigar box, cinnamon and fruit pastries. In later passes, the accent remains on shellac and vanillin oak. Even at thirty years old, when most are overburdened by tannin, this feels fine-tuned delivering impressive fruit intensity with acidity and oak in support; The finish adds an almost crunchy acidity and delicate astringency that's like biting into a piece of fresh fruit. The aftertaste leaves a final impression of rusticity - fermier cider, half-ripened pears, quince paste and hints of soft cheese rind combine with a salivating freshness. It's a gorgeous Calvados experience that boasts a range and depth that only great age brings, while keeping true to the orchards that conceived it.     Pierre Huet is one of the oldest Calvados estates in France, having begun production in the 1800s. The house is situated in the Pays d'Auge region and is led by Francois-Xavier Huet who has modernized the operation, introducing sustainable practices such as replacing the oil used to heat the stills with wood chips from the estate. Two stills operate: a pot still for the AOC Pays d'Auge production and a column still for the Calvados AOC production. Hot water from the distillation heats the visitor centre in winter. Combining the robustness and strength of a Hors d’Age with the length and sweetness of an ancestral Calvados, 'Tradition' fills a gap in the category with a well-aged apple brandy that retains good fruit definition without being overly woody or tannic. The bouquet opens with baked apple, pear and cinnamon, and although it loses steam after air contact, the palate makes amends in a succulent combination of ripe pear, sweet apple cider and vanilla notes that make this easy to like. The supple texture is a delight, while the spicy lift and gentle astringency through the finish add the necessary balance. Huet has assembled this blend using brandies aged at least fifteen years, however, some casks are considerably older. 40% Alc./Vol.

    Nestled in the Ica Valley in the south of Peru, amidst the foothills of the Andes, lies the oldest distillery in the Americas – Hacienda La Caravedo – established in 1684. Here Pisco continues to be handcrafted using centuries old production methods.

    Now owned by an American family, the Kallops, the distillery employs Johnny Schuler, Peru’s most celebrated authority on pisco who's both the ambassador and master distiller. Their product remains the country's No.1 Pisco export.

    Portón uses only the mosto verde method of distilling from partially fermented grape juice known as 'green must'. They let it rest for a full year in glass silos before it's bottled.

    Distilled to strength in copper pot stills from a blend of three grape varieties (Quebranta, Torontel and Albilla), this is unaged and unaltered, nothing (not even water) is added to the finished product. Most other spirit makers distill to high alcohol levels and then add water to dilute to a desired proof.

    Tasting note:Ideal clarity. Impressive bouquet highlights scents of crunchie bar and beeswax. Second pass drops a notch in sweetness offering more subdued ripe grape / unripe apricot-like notes. Very pleasurable. Creamy mouthfeel with initial vibrant pepper and fruit bread flavours. Slightly sweeter to finish with vanilla, honeycomb and beeswax to the fore. Excellent length.     The Groult family orchards are planted on fine silty soil, over flint clay. The estate has been in the family’s hands for five generations, and has been producing Calvados from estate fruit and neighbouring growers since the 1890s. Traditional techniques are employed to ensure that reputation created by the Groult family for consistent quality is maintained.

    Tasting note: Polished bronze / topaz colour. Cognac-like elegance with lovely depth and integration to the bouquet; apple flan, pear tart and sweet baking spices, in particular, cinnamon. 4-5 minutes of swirling introduces notes of ripe red apples and vanilla. This shows beautiful fruit and oak integration; more baked orchard fruits, nutmeg and nuances of bitter dark chocolate through the finish. Concludes elegant, long, mature.     A Pays d’Auge Calvados produced from around twenty varieties of cider apples: sweet, bitter-sweet, bitter and acidulous including Bisquet, Binet Rouge, Noel des Champs and Egyptia. Distilled over a wood fire in three small traditional pot stills, this was initially matured in 300 litre barrels allowing a greater contact of the spirit to wood.

    Tasting note: Pale gold. The bouquet is fresh, bright and crisp with aromas of cider, baked green apples / pears as well as cinnamon and hints of clove. Follows through in a light to medium bodied Calvados developing with flavours of ripe apple, pear cider and lively acidity. Trails off mildly varnishy, warming, dry, spicy. Medium long.     New as of 2017, another of Groult's experiments in brandy maturation is this whisky cask finish. Suitably, the barrels were sourced from a distillery in Brittany, France with the finishing period lasting just a few months.

    Tasting note: Deep gold. Orchard fruits are evident, but the aroma seems smothered rather than enhanced by the finishing. Extra vanilla? Possibly a touch of smoke? On the palate it's more typical, with baked apple and late hints of cider, but pulls up short. 46% Alc./Vol.

    Tasting note: Brilliant deep gold. Only slightly less perfumed than its younger sibling; Green apples, cider, roasted chestnuts with lively acid lift. Further exposure accents pleasing woody notes (cedar, sandalwood). Fuller and richer than the 3 year old with middle weight flavours of baked apple and light spice, keenly balanced by fresh, cidery acidity.     A brandy aged for over eight years and produced from 'Ente Plums' - a variety typically used for the production of prunes. The result is something in between Calvados and Cognac but different again. This regularly wins the highest honors at Parisian agricultural shows, and it's easy to understand why. A superb bouquet of prunes, dried figs and grape must gives way to sweeter scents of marzipan, dates and Turkish Delight. Vibrant, fresh and flavour-packed; fruit cake and prune are followed by a fresh, piney, peppery surge with hints of Turkish Delight, beeswax, sweet spice and a rush of dried fruits that seemingly never ends.     A spirit fermented and distilled from grapes, Pisco was initially developed by Spanish settlers in Peru around the sixteenth century as a cheaper alternative to their imported national spirit, ‘Orujo’ (a transparent spirit obtained from the distillation of the pomace of the grape, usually bottled at roughly 50% alc/vol). Pisco is produced in the wine making regions of both Chile and Peru; however, questions persist as to their points of difference. Generally speaking, Peruvian Pisco is considered to be superior. Its focus is on utilizing traditional methods to produce an artisanal product which pre-dates Pisco produced in Chile. Chilean Pisco, on the other hand, is the big corporate brother of the Peruvian, with an industry geared for high end production and export. In summary, although both styles are essentially forms of grape spirit, the end product is markedly different.

    Defining Peruvian Pisco are particular methods of production, provenance, establishment of vines, the use of specific varietals and storage techniques. In all, it involves a series of considerations more comparable to the production of a fine wine. The Ica Valley is one of Peru’s best Pisco producing regions. The desert conditions are ideal for varietals such as Quebranta, Common Black, Mollar, Italia, Muscat, Albilla and Torontel to thrive. Famous distilleries located in the Ica Valley include Tacama, and the featured Quierolo brand.

    There are four traditional styles of Pisco produced:

    1. Pura (Pure): Made from using only a single grape variety, these usually include non-aromatic varieties such as Quebranta or Common Black. Famous for producing the ideal Pisco Sour.

    2. Aromatic: Made from Moscatel varietals, these include Muscat, Torontel and Italia.

    3. Mosto Verde (Green Must): Distilled from partially fermented must, this must be distilled before the fermentation process has completely transformed the sugars into alcohol.

    4. Acholado: Blended from the must of several grape varietals.

    Prior to distillation, the wine is placed into large containers known as ‘botijas’, (also known as pisqueras). These are made of clay, sand, manure and water, lined with a fibrous material such as straw to shape. These containers are placed outside whereby the heat of the sun acts as catalyst for fermentation. Oppose this to the Chilean styles which are matured in oak, producing a toastier spirit which is bottled at varying strengths according to the style. Peruvian Pisco must be bottled at the natural strength off the still.

    Other reviews... An initial rush of oak is balanced by fruit, some spice, and ample vanilla coming on strong. (Roudaut mentions coconut, but I don’t really catch much of that.) The palate is intensely fruity, apples and pears leading to lighter notes of dried raisins. Plenty of sweet vanilla here, the brandy becoming more candylike as it lingers on the palate. As the finish arrives, notes of milk chocolate arrive. The finish is spun sugar and Starburst, gentle notes of linen and incense lingering on the conclusion. There’s a lot of flavor in Signature but it’s not dramatic in complexity, nor is it really intended to be at this price level.     From Cornwall in the early 1880’s came Dr. W.T.Angove with his young family to settle at Tea Tree Gully in South Australia. He established a practise as a country doctor and planted vines as a recreation. That venture into viticulture grew into wine making and then into distilling. It was in 1910 when that young enterprise extended to Renmark in the Murray River Valley where the sun and soil grow grapes particularly suited to making fine brandy. St.Agnes X.O. is twice distilled by the time honoured pot still method and then matured in oak wood casks. The blend of spirits is no older than its youngest part and by Australian law, for a brandy to be designated “Very Old” that youngest part must have been matured in oak wood casks for at least 10 years. By this rule, St.Agnes X.O. is more than 20 years old: in the blend some portion is up to 50 years old. The age is revealed in St.Agnes’s deep amber colour, sweet vanillin nose and its rich, complex, liqueur-like palate. Australia’s answer to Cognac!

    Tasting note: Slightly glycerous, deep brassy / burnished copper appearance. The aromatics are heavy, sweet and sensuous revealing a superb amalgam of vanilla, honey, creme caramel with some fresh orange / raisin fruit cake notes underlying. Entry is soft and silky with a plush, semi sweet profile that includes dates, dark chocolate and cinnamon. Very gently warming spirit.     Spain's Venerable National Treasure to Rival Cognac.

    In the last century Cognac has marketed its way to the top of the brandy hierarchy. Some Cognac houses have even entered the pantheon of popular culture. If other lengthy distilling traditions appear in a state of obscurity compared, it only affirms the success of Cognac’s campaign and its ubiquity as the brandy of 'preference'.

    Australia and South Africa are two to be left in the wake of the French. Spain is another. Due credit must be given to Cognac, but the world’s other great grape based spirit discoveries can be made elsewhere. Readers are reminded that Australia still produces some stunning XO brandies, and a single estate South African bottling from KWV was honored as “Best Brandy in the World’ at the London International Spirits Competition in 2010.

    Spain remains a major player in the brandy field, and is second only to Cognac in production.

    It’s no surprise when one considers that thanks to their absorption of Arab culture around the early 8th century, Spaniards were amongst the first Europeans to learn the art of distillation. For a long time most of their output was sold off to the Dutch as raw spirit, until phylloxera hit Cognac in the early 1880s. At that point in history, Spanish brandy hit a golden age, if only briefly it became a desirable and readily available alternative to Cognac.

    In present day Spain there are two regions with Denominacion Origin (DO) controlled brandy production and the spirit must be aged in the Jerez region in Andalucía, or the Penedès region in Catalonia to qualify for certification. For the former, most of the grapes grown are Airen and Palomino and distillation actually takes place in La Mancha, after which the distillate is transported via tanker trucks for maturation in Jerez.

    Brandy from Jerez is a national favourite and anyone visiting Spain is bound to come across it. Here the Sherry bodegas mature the lions share of it which makes sense, as they already own the barrels to do it. Ageing usually takes place in 500 litre American oak casks, previously having contained any type of Sherry wine for at least three years.

    Just like Scotch Whisky production which traditionally favoured maturation in x Sherry casks, these barrels also make a significant flavour contribution to the ageing process of brandy. Thus, Fino casks will produce brandy which is paler, typically featuring vanilla, fresh fruits and grilled nut characteristics; oloroso casks may lend aromas of walnut, plum, and figs; Pedro Ximenez casks will infuse sweet dried fruit notes and impart a darker colour, and so on. Solera systems are the norm. (More on this below).

    While nine out of ten bottles of Brandy sold in Spain contain Brandy des Jerez, the contents of the tenth bottle is the result of those taking the road less traveled.

    Brandies from Penedès are amongst those differentiated from the brandies of Jerez - both geographically and stylistically. Here in Catalonia, in the northeast corner of Spain near Barcelona you’ll find an approach that's more aligned with the classic model of Cognac. Regional grapes are used but so is locally-grown Ugni Blanc, the variety that constitutes about 98% of Cognac plantings. Distillation takes place in pot stills and maturation follows in French Limousin oak.

    Despite this apparent Francophilia, one Penedes producer has not entirely departed from local traditions. This is Torres. This large family run company set up a distillery here in 1928 and has made the decision to retain their soleras, although they do employ French Limousin oak rather than American oak.

    The solera system of aging wines or spirits to maintain a uniform quality will be familiar to sherry enthusiasts. To illustrate this briefly, imagine a pyramid collection of casks arranged with each layer containing brandies of different average age.The rows above the bottom layer are called the criaderas, and contain younger and younger spirit as you ascend. The bottom row is called the solera. It’s here that the brandy is drawn from when required for bottling, after which the casks are replenished with the same volume from the tier above and so on back through the system. Depending on the producer, this process can occur every 4-5 months, or 1-2 years. Because not more than 33% of the volume of each cask can be removed at any one time, this means that there's always a portion of brandy which never leaves the solera.

    Intuition might suggest that adding the younger brandies would dominate the older material. In fact, the opposite happens and the younger stock takes on some of the character of the older one. Rather quaintly, the Spanish put it that the older brandy "teaches" the younger.

    While Torres is a large concern, they clearly have not lost their artisan touch.

    The flavour profile and mouthfeel are not the same as great Cognac, but then, nor should they be. This is not Cognac. Having said that there are resemblances. Overall Torres' style tends towards heavier tones - dessert fruits, Christmas cake in combination with a seductive overlay that comes across like ultra aged Rutherglen muscat, but with the sweetness kept in check. In short, this grandfather of the brandy family should find favour with any one who has enjoyed the finest Australian expressions, but may equally appeal to those who are finding many Cognacs from the larger houses now overly sweet.

    Finally, those who have memories of Barcelona may recognise the bottle as a homage to Gaudí, suitably designed by the architect Tanaka to complete the package.

    Tasting note: Very deep polished mahogany appearance with some particles floating in the glass, however, it should be noted that the sample on offer was a near empty bottle, so some natural sediment would be expected. It issues a profound perfume of dried apricot and fig, clove and cigar box as well as hints of muscat; Several minutes later hints of candied orange peel and vanilla emerge. A soft, svelte like entry leads into a creamy textured mid palate featuring Christmas cake, sweet tobacco and muscat notes, the latter accentuating towards the finish. Perfect balance. Concludes long and mildly tannic as the wood and dried fruit notes interchange into the prolonged aftertaste. Superb. 38% Alc./Vol.

    A brand that dates back to 1845 when it was founded in Cape Town. Brandies from the Van Ryn Distillery have a discernibly South African personality, rich in aroma and flavour, not only the result of the soils and sunshine but a quintessentially South African approach. Chenin blanc and Colombard grapes are distilled in locally designed copper stills, adapted in size and shape from the French prototype then matured in small French oak barrels. The minimum in South Africa is three years (six months over Cognac), but even further ageing brings out the deliciously spicy, vanilla and woody characteristics found in this example. 38% Alc./Vol.

    Other reviews... Pretty, with notes of brown sugar, caramel, golden raisins, and a dusting of baking spice. Classic brandy, with no trace of alcoholic burn (courtesy of the lower proof, I think) but with gentle chocolate notes emerging on the increasingly nutty, spicy finish.     Brandy is big business in South Africa, with the two biggest players being KWV and Van Ryns. Both producers will tell you that their standards and processes are on par, if not better, than the equivalent Cognac standards with the only difference being the location of the vineyards. Chenin and Colombard grapes dominate, and just as in France, they age their distillates for various amounts of time, bottling with alcohols around 38% to 40%. South Africa's commitment to quality is borne out by a slew of awards. In fact, the country has recently dominated at leading international competitions. Van Ryn's 12 year old is a perfect example, winning the trophy for ‘Worldwide Best Brandy’ six times to date - three times at the International Wine & Spirit Competition (IWSC) and three times at the International Spirits Challenge. Said the IWSC judges in their tasting notes, “...an even balance is perfectly displayed with a spectrum of exciting flavours of fruit, spices and herbs... A beautiful, elegant finish lingers long on the palate – true finesse!” Matured on the banks of the Eerste River in Stellenbosch, expect hints of coffee, dried fruits, cinnamon and sweet tobacco. 38% Alc./Vol.

    Other reviews... Aged in small French oak casks, which makes it much more “old world” in style than the other brandies in this family. The nose is more intense, with a slight astringency driven by the wood. Still strong with raisin, well-baked apple, and spice notes, the wood notes grow heavier to the point of overpowering the spirit’s gentle fruit core.     Tasting note: [2005 vintage] Gontier is based in Saint-Georges du Rouellet, deep in the heart of Domfrontais. This bottling is labelled ‘fermier’ or 'farm-made', indicating that it was made entirely on a farm in a traditional way. Deeply coloured, initially varnishy, then dry cider-like on the nose (pears more than apples), it's full and round with ripe spiced pear flavours followed by apple pie, late cinnamon and acacia. It feels less woody than many Pays d'Auge examples, so less tannic at the finish, but also not quite as fresh and vibrant. 40% Alc./Vol.

    Apple brandies from the 'AOC calvados Domfrontais' region in the south of Calvados are uncommon in Australia. The appellation was created in 1997 and reflects the long tradition of pear orchards in Domfrontais due to the region’s clay and limestone soil which is better suited to the strong, deep roots of pear trees. Consequently, Domfrontais Calvados differ from their Pays’d’Auge counterparts by being made from at least 30% pears, as well as the traditional Calvados component of apples. The inclusion of pears makes not only for a lighter-coloured spirit, but also one which emits a more feminine and elegant bouquet. The regulations are otherwise similar to the A.O.C. Calvados and require a three year minimum of ageing in oak barrels; orchards to consist of at least 15% pear trees (25% from the sixteenth harvest) and only the column still is to be used.

    Other reviews... [1997 vintage] Gontier make some real artisan Domfrontais. Colour: gold. Nose: extremely aromatic, with the pears in the front and wonderful notes of artisan poiré (pear cider). Then Turkish delights, Haribo bears, bubblegum, liquorice allsorts and lastly, moss and fern after a heavy September rain ;-). Spectacularly fresh and aromatic. Don’t get me wrong, bubblegum does not suggest immaturity in this context, at all. Mouth: fresh, well on the fruits, very clean, with a saltiness and notes of fresh walnuts plus just a little grapefruit. Not extremely complex but very ‘chiselled’, which makes it dangerously quaffable, not only as a digestif. A calvados that left the ghetto! Finish: not too long but still very clean and easy. Comments: very, very dangerous, and much to my liking. I think this baby would even bear one ice cube later in summer…

    Tasting note: Produced from a blend of Quebranta, Italia and Torontel. Flawless clarity. Fresh and floral with lifted apple and pear juice-like perfume. Hints of musk? Later passes add a dried apricot aspect plus light citrus: Pink grapefruit? Lemon butter? Semi sweet and silky with lemon cough lozenge and orange cake flavours.     Weis Kirsch is a cherry brandy, produced by the same family company for over two hundred years. This dead white, dryish, potent spirit has been popular in Switzerland, Alsace and the German Black Forest for centuries.
    As young man who loved nature and its gifts, at the tender age of fifteen, Georg Weis brought the old family spirit recipes to light again and began to produce clear fruit brandies. Georg delivered his brandies with his motorcycle, and soon they were popular throughout the whole region. What Georg Weis had begun as a second source of income in the difficult times of WWI, soon became the main source of income for the family farm. When he came of age, Georg Weis had long known what his life's work would be: in 1924, the Elz Valley Distillery Georg Weis was officially founded. The traditional farmstead was transformed slowly but surely into a modern company.

    World War II interrupted this development. In 1940, Georg Weis was drafted. The copper pots of the distillery became a victim of the needs of the Wehrmacht, as well as the delivery truck. When Georg Weis returned home in 1945, he had to start over from scratch. With business acumen and daring, he managed to once again get the distillery going as a working enterprise. The complex was continuously enlarged and the circle of customers expanded. In the early seventies, Clemens Weis, the son of the founder, took over the business, and in 1996 he handed over the reins to the third generation of the family. Hansjörg and Christian Weis today run the company with the same "spirit" and passion that drove Georg Weis 85 years ago.

    The distinctive split log bottle used by the Weis company to package its spirits cuts a good figure in every house bar. It's rhomboid form is textured like wood and appears simultaneously natural and refined. The design actually refers back to an old tradition: At one time, wooden forms were used in making glass bottles, which gave the surface of each side of the bottle a special texture. Weis’s split log bottles are of course made with modern industrial techniques. But they are reminiscent of the "good old days" -- the times when many of the recipes for white brandies and liqueurs originated. 40%Alc./Vol.

    Recipe: Cherry Liqueur Strudel

    Ingredients

    250g (8oz) commercial puff pastry
    425g (1lb) can dark cherries
    2 tablespoons melted butter 
    1 cup soft white breadcrumbs 
    1 cup finely chopped walnuts 
    1 tablespoon grated lemon rind
    1 teaspoon ground cinnamon
    2 tablespoons Cherry Brandy or Maraschino Liqueur
    extra melted butter
    Icing sugar

    Preparation: Stone and halve cherries; drain. Roll out pastry on a well floured clean tea towel or plastic pastry sheet to measure 35cm x 50cm (14" x 20"). Work with longest edge of pastry to you. Brush pastry with melted butter to within 5cm (2") of edge. Combine melted butter and breadcrumbs and sprinkle over pastry. Mix walnuts, lemon rind, cinnamon and liqueur and place over buttered crumbs together with cherries. Brush edges with melted butter. Roll strudel carefully and place on greased baking tray. Brush over with melted butter. Bake in a hot oven 230'C (450'F) 10 minutes, then reduce to moderately hot 190'C (375'F) for a further 30 minutes or until golden brown. Brush with melted butter every 10 minutes.

    To Serve: Dust with icing sugar. May be served hot with fruit sauce or cold with whipped cream.

    Fruit Sauce: Add 1 tablespoon Cherry Brandy Liqueur to syrup from canned cherries. Heat and thicken with a little blended Arrowroot. Serve separately.
