    With Fee Brothers producing an already extensive range of bitters, it was only a matter of time before this old recipe saw light once again. Celery Bitters saw its hey day's in the 19th century where it was produced and manufactured by multiple companies.
    Along with other styles of bitters it was initially used for medicinal purposes, over time it's uses have broadened to a common digestive and now, a blending component in cocktails. Recommended uses range from the obvious Bloody Mary, to the not so obvious Dry Martini. A recipe for the Garden & Tonic can be found below. Enjoy!

    Roselle is the common name for Hibiscus Sabdariffa.  The bright red calyx at the base of its bloom adds colour and flavour to Maidenii’s new bitter.  These vibrant colours and flavour are blended with 23 other botanicals including Australian natives, such as Strawberry Gum, Tasmanian pepper berry and Salt Bush.  The bitterness comes from various roots, in particular gentian from Aubrac in the centre of France.

    Roselle’s wine-base is Heathcote-grown Nebbiolo and Mourvèdre fermented as rosé, which is fortified with the unique blend of botanical tinctures.  Sugars are entirely residual from the grapes, at around 100 g/l. The dryer, aperitivo style of bitter produced lends itself to a variety of pours. Serve neat as a digestif, with soda or try a local twist on the Negroni. 22% Alc./Vol.

    A bitters based on M&R founder Luigi Rossi's 19th century recipe, with Master Herbalist, Ivano Tonutti, selecting three rare botanicals (Saffron, Angostura and Columba), to create richness and complexity through different dimensions of bitterness. The colour is derived from the cochineal beetle, as per the original 1872 recipe. It's also rested in the same Tino casks used for M&R Vermouth extracts, and shares the common botanical, Italian Artemisia. Given that the Negroni market in America has spiked in the last five years (currently dominated by Campari and Aperol), Martini recommended it for just that.

    Tasting note: Translucent ruby red. Attractive blood orange peel and grapefruit opening whiffs also offer rooty, earthy, bitter scents suggesting juniper and quinine. Viscous, juicy, medium sweet delivery with the orange notes balanced by grapefruit, quinine and herbal bitterness. Finish is mildly warming with faint quinine and citrus peel lingering. Nicely rounded. Will add mouthfeel and body to cocktails. 28.5% Alc./Vol

    In pre-Prohibition days, a cocktail, by definition, was not a cocktail if it didn’t contain bitters. Which is why mixologists who look back longingly to that golden age for inspiration are in a frenzy over Regans’ Orange Bitters No. 6, cocktails historian Gary Regan’s brand-new elixir. Like adding vinegar to temper the sweetness and round out the flavour of certain dishes, adding bitters to cocktails provides balance and complexity. But unlike Peychaud’s and Angostura brands, orange bitters are hard to come by. So when Regan couldn’t find any to his liking, he decided to cook up a batch of his own. It took six attempts and a trip to a witches’-supply store in Greenwich Village—presumably Kalustyan’s was a bust—before he got the recipe down. The tasty brew of orange zest, cardamom, cinchona, caraway, coriander, gentian, quassia, and a few other occult staples is fast becoming a hot commodity on the mixologist circuit. 45% Alc./Vol.

    Other reviews... Bold celery salt on a poppy seed hot dog bun aroma with turmeric, clay, crayon and a slight ironed fabric note. On the palate, very dimensional and stalky with an earthy, fresh out of the ground, celery quality. In the pisco sour, the effect is to amplify the bitterness of the citrus, the pepperiness of the pisco, and the astringency of the finish. This is a bit of a clash in this cocktail, but it's very pure and earthy celery character should work better in a more savory cocktail.

    Other reviews... Bold cardamom, tree tree oil, and fresh eucalyptus leaf aromas are attractive. Bone-dry on the palate with a fun, warming menthol quality. In the pisco sour cocktail, the effect is a little medicinal and slightly discordant, but very amaro-like. Really transforms the cocktail from citrus driven to pungent lingering herb-driven. Hyper effective and very intense flavor so use carefully and with a well thought out cocktail game plan.

    Other reviews... Very fruity and attractive orange pastry and sorbet aromas with a nice dash of herbs, cinnamon bark, and nutmeg. On the palate, fruity sweetness follows with a mellow, astringent, bitter dandelion greens like finish. In the gin martini cocktail, the orange pastry notes waft on the nose and a delicious candied violet like floral quality emerge from the cocktail. Later a sweet orange gelatin note and finally a honeyed orange zest and delicate minty herb quality. This bitters really transforms the cocktail completely and makes it nearly impossible to put down. Quite a powerful tool for the adroit bartender's arsenal.

    Created by following an "Italian Bitter of Turin" recipe dating from the 1860s. The recipe was purchased in 1925 by the small Swiss distillery E. Luginbühl, and a version has been produced for mostly local consumption ever since. Tempus Fugit's Gran Classico reverts back to the original recipe and employs a maceration of 25 aromatic herbs and roots including wormwood, gentian, bitter orange peel, rhubarb, and hyssop. A must have in the cocktail armoury for Negronis or as a non-red alternative bitter ingredient.

    Tasting note: Beautiful polished copper colour with deep gold edges and thick legs. Sensational aromatic range with the gentian / bitter peel top notes leaping out of the glass over background aromas of pink grapefruit, orange and dried herbs. Creamy textured, semi-sweet mid palate is eclipsed by a juicy, bittersweet cascade of orange peel, grapefruit and gentian-like flavours.     The works of 'Professor' Jerry Thomas would be a staple requirement for those in the business of creating cocktails. He has been credited as the first celebrity bartender, pioneering the art of mixology through publications such as The Bar-Tender’s Guide (alternately titled How to Mix Drinks or The Bon-Vivant’s Companion) all back in the late 19th century!

    Within this book, arose a unique bitters recipe consisting of raisons, various citrus fruits and spices, designed to be served with Caribbean Rum inside a large decanter (hence its name). These bitters were a sensation in its day, so it's not surprising to learn of its reformulation by the folks at the Bitter Truth Company, who have been busy reviving a swag of other old-time classics.

The genesis of many early bitters formulas lay in the requirement for an elixir to combat ailments. Whether it's a wine or spirit that forms the base, the alcohol serves to function as a solvent for botanical extracts (typically gentian, quassia, wormwood, orange peel, etc.), as well as being a preservative. Following the early commercial success of medicinal bitters like Angostura, Orange Bitters was another development that bought bitters into the mainstream as a popular cocktail ingredient.
