2018 Georges Laval Les Chenes Brut Nature ChampagneChampagne, FRANCE$550. 00Bottle$6600.00 DozenABV: 12.5%Closure: CorkWhile the Laval family has been growing vines for four generations, it was not until 1971 that Georges Laval began producing estate-bottled Champagne. Now under the direction of George's son Vincent, this is one of the great under the radar properties in the region. Laval’s vineyard holdings comprise just 2.5 hectares, most in the premier cru village of Cumières. Across the seven parcels the average vine age is over 30 years, with the oldest vines of the estate over 70 years of age. Organic viticulture has been practiced since 1971, and despite the challenges of this approach in Champagne, they are now certified by Ecocert. Laval’s wines are harvested ripe and almost never chaptalized, and fermentation takes place in barrel, with indigenous yeasts. The wines are bottled late, usually about ten months after the harvest, and they are neither fined, filtered nor cold-stabilized.
Les Chenes is Vincent Laval's dense and powerful 100% Chardonnay cuvée from a lieu-dit of the same name, made only in exceptional years. After harvesting fully ripe grapes, the wine spends around 10 months in barrel before another 4 years in bottle prior to disgorgement with zero dosage.

Les Hautes Chevres is a tiny selection of old vine Pinot Meunier planted in 1930, 1947, 1965, and 1971. Unfortunately the 1930 parcel needed to be replaced following the 2014 harvest, yet these are still some of the oldest Meunier vines in the area. Situated at the top of the slope within the Cumieres vineyard, this tiny parcel sits on a layer of fine clay over a firm limestone bedrock base, and produces Meunier with a rich and multi-dimensional profile, further heightened as the wine ages in bottle. This micro-cuvée is one of the rarest and most sought after in the region. Bottled with zero dosage.

Vincent produces one of the most singular expressions of Rosé Champagne, very much in the style of red Burgundy with bubbles. A rough split of 50/50 Pinot Noir and Pinot Meunier are picked as whole bunches and carefully crushed by foot with a healthy amount of skin contact leading to a bold, vibrant red colour. Expect a rich, layered, and unquestionable detailed rosé unlike anything else you will have encountered.

The NV Brut Nature Cumières (2017) makes me feel like I am in the cellar, tasting with Vincent Laval. A Champagne of tremendous purity and nuance, the NV captures all of the flavor intensity, drive and nuance that make the wines of Cumières so alluring. This release, based on 2017, sizzles with nervy energy. Time in the glass brings out layers of perfume and a whole range of red-toned fruits. In a word: terrific. Disgorged: February 21, 2020. The NV Extra-Brut Garennes is rich, ample and inviting, with all of the textural intensity that is the signature of Vincent Laval’s wines. Readers should expect a rich, boisterous Champagne laced with generous Meunier intensity. Dried pear, hazelnut and crushed flowers are some of the many notes that develop with a bit of air. The Garennes bottling continues to gain in complexity. This is the best edition yet. This release is based on 2016, with 40% reserve wines from 2015, 2014 and 2013. Georges Remy is a young, third generation vigneron crafting exciting Champagnes from his base in the Grand Cru village of Bouzy. While his formative years following wine study were spent in Bordeaux, upon returning to his home and making some notable Bouzy Rouge (still red wine), Georges now produces a range of Champagnes from vineyards predominantly located in Bouzy, with a small part in Tauxieres. The dark clay soils here are rich in silica and gypsum, and produces wines with enormous power and complexity. Their vineyards have been certified organic since 2015, and while not prescriptive, Georges does use herbal treatments as well as some biodynamic preparations to minimize the use of sulphites following vinification. Spontaneous fermentation occurs in barrel and after aging on its lees bottling takes place following the lunar cycles.
Les Muits is made from a single parcel of 100% Chardonnay from the Premier Cru village of Tauxieres. While it's rare to find Chardonnay planted here, these specific vines are from a portion of the parcel which sits at the top of the hill planted over a bedrock of pure chalk. Vines here face south-east, and the parcel is made up of two massale selection plantings from 1971 and 1973. Production is a tiny 700 bottles.

While they own 8 hectares of vineyards, three quarters of their production is sold off to Laurent-Perrier, keeping only the best parcels for their own label.
Prisme is a 100% Chardonnay cuvee exclusively from old vine parcels owned by the family, namely Les Bergeries (Cramant, planted in 1984), Le Mont Aigu (Chouilly, planted in 1970 and 1979), and Les Caurés (Chouilly, planted in 1946 and 1988). The emphasis with Prisme is to display the transparent nature that the chalk soils of Cramant and Chouilly lend to these wines. Vinification occurs in 96% stainless steel, with the balance in neutral oak barrels. Following 7 months on lees the wine is assembled and sees a further 44 months on lees in bottle, and 12 months resting in the cellar before release. Dosage is a very low 1.5g/L.

The Weber family of Hofgut Falkenstein have been making ultra-traditional Rieslings in the Saar district of the Mosel region since the mid-eighties; there they farm about 9 hectares in and around the villages of Niedermennig and Krettnach. Erich, the family winzer (winegrower in german) works alongside his middle son Johannes, who has joined him full-time in the vineyards and cellar in recent years. Ever since there has been more of a focus on Rieslings with residual sugar. The emphasis on their work is in the vineyard, where no pesticides, herbicides or fertilizers are employed and cover crops are grown to encourage biodiversity and, when necessary, competition with the vines for water. With their straightforward approach to winemaking the Webers craft light, distinctive and racy Rieslings displaying well-integrated acidity from their low yielding old vines, and are bottled traditionally by the cask.

Anchored by the 2017 vintage, which comprises 67% of the assemblage, it gains its color, texture and character from the addition of 11% still red wine from Aÿ-Champagne and Mutigny, sourced from the 2016 and 2017 vintages. The wine opens with aromas evocative of grapefruit zest, redcurrant and apple pie, intricately mingled with a subtle trace of Sichuan pepper and a whisper of rosewood oil. On the palate, it presents as medium- to full-bodied, vinous and textural—albeit slightly less chiseled than its white counterpart. A deep core of fruit, tangy acidity and a long, perfumed finish with a delicate phenolic grip complete this new release. Drink 2025-2035.

Kristaps Karklins - Robert Parker's Wine AdvocateThe NV Rosé 29ème Édition is bright and effusive in the glass. Cranberry, pink grapefruit, white pepper, chalk and mint race out of the glass. In most releases, the Krug Rosé is more austere. This is an especially textured, open-knit Rosé that will drink well right out of the gate. What a delight. Krug ID: 124021. Drink 2025-2040.

Antonio Galloni - VinousLovely pink color. This is really classy and refined. Quite subtle aromas of peaches, pears and cantaloupe with lavender and heather follow through to a medium body. The tight, focused palate has ultrafine texture and a very long finish. Almost never-ending. Fine bubbles integrate beautifully. Drink or hold.

JamesSuckling.comThe NV Champagne 29th Edition Rose is a bright salmon orange color. It is expressive and offers a decadent and opulent nose, with notes of toasted brioche, fresh nectarine, white strawberries, cardamom, and saline. The previous three editions of the Rose had a darker red pigment, but this returns to the paler style that preceded them. In 2017, they used two years of reserve, as the year was particularly challenging for red wine. It fills the palate with a rounded feel, refreshing acidity, a pillowing mousse, and a clean, chalky texture. It will be released this fall. Drink 2025-2050.

Audrey Frick - jebdunnuck.comKrug's 29ème Édition Rosé is expressive, open and spicy on release, and features 67% of the challenging 2017 base year (although some of the red wines hail from the 2016 vintage). Krug relishes the challenge of difficult vintages, however, turning to its reserve library to help bring about a rosé of immediate depth and vinosity. Red plum, dried red berries and roasted spices make a fleshy, open entry, before a tangy, elongating finish is detailed with light herbal and peppery tones. It is relatively forward already, yet seems poised to develop more spicy and roasted savour in the medium term. Drink 2025 - 2030.

Krug Grande Cuvee 171eme Edition ChampagneChampagne, FRANCEReduced from $525.00$399. 00Bottle$4788.00 DozenABV: 12.5%Closure: CorkSince their inception in 1843, Krug Grande Cuvée has been their signature wine, and the most important wine they produce each year. Crafting Grande Cuvée only once a year, Krug now distinguish each release numerically, and provide great insight into the detailed composition via their Krug iD site. While these Edition wines are non-vintage, Krug prefers to call them multi-vintage given they use a large proportion of reserve wines in the blend, normally over 120 base wines spanning 10+ vintages. The 171eme Edition is a staggering blend of 131 wines from 12 vintages back to 2000, with the base wine hailing from the excellent 2015 vintage. The varietal mix of the base wine is 45% Pinot Noir, 37% Chardonnay and 18% Pinot Meunier, and comprises 58% of the blend, while 42% of reserve wines are used from 11 older vintages stretching back to 2000.
Other Reviews....
Non vintage? Technically so, but in fact there is a new edition every year, this the 171st, based on 131 wines from 12 vintages dating back to 2000. It is composed of 45/37/18% pinot noir, chardonnay and pinot meunier. Krug’s power is an iron fist in a velvet glove, and it’s my favourite champagne.

James Halliday's Top 100 Wines 2023The NV Grande Cuvée 171ème Édition, (2015 base vintage) is bright and focused in the glass, showing notable tension and tons of class. Citrus peel, white flowers, mint and white pepper all lend remarkable brightness to a Grande Cuvée that is built more on linear cut rather than volume. Krug is always among the first houses to pick. The 171 clearly shows that style. The blend is 45% Pinot Noir, 37% Chardonnay and 18% Meunier, vintages 2015 through 2000. Disgorged: Winter 2021-2022. Krug ID: 122003

Antonio Galloni - VinousThe tightness and tension of this is impressive considering the youngest wine from this is 2015 (hot and dry year), with some wines going back to 2000. Ginger and orange zest. Some creme brulee. It's medium-bodied with apple, pie crust and floral character. It's salty and zesty yet, at the same time, complex and gorgeous. Chamomile and other floral teas highlight everything. Turns rich and flavorful at the finish. Terrific release. Really takes off at the end. Drink or hold.

JamesSuckling.comThe NV Grande Cuvée 171ème Edition is a delightful blend of 45% Pinot Noir, 37% Chardonnay and 18% Pinot Meunier and boasts an attractive and captivating aroma of dried fruits, pastry, lemon oil, marzipan, spring flowers and ginger, with hints of almond and vanilla notes that become more pronounced over time. This medium to full-bodied wine is precise and well-structured, with a fleshy core of fruit and a sapid, incisive finish. Crafted around the 2015 vintage, the blend comprises 131 reserve wines from as far back as 2000 (42% of the total blend) and is expected to age beautifully over the next decade. Drink 2023 - 2040.

Alison Napjus - Wine SpectatorSuch a complete wine. It pushes flavour to the corners of the mouth. Complex and detailed. It’s a wholesome experience. Fine gentle mousse but firm enough to keep your palate energised. It smells of salted shortbread, quince and croissant with almond cream. Then nougat and razor-sharp acidity. Crème brûlée and salt flakes. Crunchy almonds and limey acidity. Oyster shell with lemon, the mineral note. Complete balance. And it’s long and delightful. I forgot about sparkling Shiraz for a moment. On that balmy winter day in Sydney. Drink 2023 - 2033+

Kasia Sobiesiak - The Wine FrontDeliciously balanced, this Champagne is impressive. The iconic wine is in its 171st blend, meaning it combines vintages for the best result for each bottling, not a specific vintage. The 171st essence is dry, while also having fine textured fruit. 1988 Krug Collection Vintage ChampagneChampagne, FRANCE$2499. 00Bottle$29988.00 DozenABV: 12.5%Closure: CorkVintage Krug holds a special place among the landscape of prestige cuvée Champagne, over the years having produced some of the most mesmerising and memorable wines of the region. Appearing only when conditions allow, and never at the sacrifice of their number one wine Grande Cuvée, Vintage Krug is cherished and chased by collectors the world over. Knowing that Champagne displays a range of experiences as bottles evolve over time, Krug also holds back a small amount of these vintage wines to be released as they reach a new peak of expression, naming them Krug Collection. These impossibly rare releases of Krug Collection are kept in ideal conditions in the House’s cellars, and after regular tasting and appraisal are finally disgorged to reveal their new personality.
Krug Collection 1988 is part of Krug’s trilogy of three exceptional years (1988, 1989, 1990) with completely different conditions that resulted in Champagnes that are unique. Comprised of 50% Pinot Noir, 32% Chardonnay, 18% Pinot Meunier, Krug Collection 1988 was kept on lees for 29 years before finally receiving its cork in autumn 2017. 1988 is one of the most feted vintages in Champagne, and Krug decided to release the 1988 Collection after both 1989 and 1990 editions.

The 1988 Krug Collection, a 2017 disgorgement, offers an enticing bouquet of grilled walnut, baked bread and a touch of freshly baked gingerbread on the nose, displaying exquisite delineation and focus. A tang of bitterness on the entry refreshes the senses. This champagne is impressive in terms of depth and salinity. Alison Napjus - Wine Spectator (Dec 2019)When Krug 1988 was first released, a few bottles remained stored in the Krug cellars to see how they aged. The result today is a bouquet of incredible complexity, a veritable spice box full of seductive scents including sandalwood, mocha, and leather as well as a waxy note. The palate is perfectly balanced with both ample flesh and breathtaking freshness, and a wide-ranging flavour and textural profile having elements of quince, candied fruit, and spices. A floral freshness takes the upper hand on the long finish of this supremely subtle and light-footed Champagne. Such a beguiling mix of youthful energy with eminent ageworthiness. Readers who can find the 1988 should not hesitate, as it is stellar.

Larmandier-Bernier Latitude Champagne Blanc de Blancs Extra BrutChampagne, FRANCEReduced from $135.00$120. 00Bottle$1440.00 DozenABV: 12.5%Closure: Diam CorkLarmandier-Bernier’s Latitude is a 100% Côte des Blancs Chardonnay from vineyards on the southern side of Vertus. These are vineyards on roughly the same latitude and the name also hints at the breadth of texture that the wines from these sites (having more clay in the soil) tend to offer up. In the cellar Larmandier uses mostly large format casks (almost all the wood now comes from Stockinger in Austria) and less and less steel tanks. The alcoholic and malolactic fermentations take place without inoculation, and there is no fining or filtration. Bottle maturation takes place in the underground cellars over a period of more than two years, and each bottle is disgorged manually, six months before being released and dosed at low, Extra Brut levels.
Once dissipated, the creamy white mousse leaves behind a pale straw coloured base that has a glimmer of gold to the edges. Nibble and exceptionally fine bubbles rising to the surface. On the nose, aromas of pear intermingle with citrus, yeast lees, light baked bread and hints of sherbet. Long, dry and virile, the refreshing palate consists of baked pear, citrus and yeast lees characters over subtle oily toast nuances and faint remanets of biscuit and cashew. The finish is very dry with crisp, mouth watering acidity and a long refined aftertaste.

Larmandier-Bernier Rose de Saignee Premier Cru ChampagneChampagne, FRANCEReduced from $280.00$250. 00Bottle$3000.00 DozenABV: 12.5%Closure: CorkSaignée literally means ‘to bleed’. In winemaking parlance, it means to draw the free-run juice of a grape, off the grape skins typically prior to, or shortly after, the start of fermentation. In this case, the grapes (100% Pinot Noir) are allowed to macerate for several days before the juice is drawn off and it is this ‘soak’ that gives the colour and much of the body and flavour to the wine. This technique is now extremely rare in Champagne—it is a demanding method of vinification that requires grapes with an excellent degree of maturity. Hence most rosé (in Champagne) is made by the addition of a little red wine. This bottling is drawn entirely from what is thought to be the oldest Pinot Noir vines in Vertus, and one of the very last 100% Pinot vineyards. As with all of Larmandier’s wines it’s naturally fermented. Larmandier raises part of this cuvée in a Nomblot concrete egg and partly in stainless steel (and more recently he has been trialling amphora as well).
A fluffy mousse dissipates over a salmon pink coloured base that’s threaded by an exceptionally fine and persistent stream of bubbles. Jumping out of the glass are alluring scents of strawberries, subtle blood orange and raspberry which meld into yeast lees, baked bread and faint cashew notes. Delicious strawberry, raspberry and subtle blood orange fruits have a creamy feel over a back drop of yeast lees, bready characters and traces of sherbet. Dry refreshing finish with mouth watering acidity leading into a long creamed strawberry conclusion.

Wine SpectatorLaurent Perrier first released this rosé in 1968, well before it became fashionable to have a pink-hued Champagne in the portfolio. 100% Pinot Noir is sourced from both the north and south sectors of the Montagne de Reims sub-region, and famously draws its colour from skin contact rather than the more usual addition of red wine. It has striking freshness on the nose, bags of pure, zippy strawberry and raspberry fruit flavours, and satisfying vivacity. It's beautifully balanced with a long finish, and calls for a carpaccio of raw salmon.

Based on the 2020 vintage and pouring a bright straw hue, the NV Champagne Brut Reserve is fresh and lifted with breezy and savory aromas of seashell and fresh pear. 2016 Louis Roederer Cristal ChampagneChampagne, FRANCEReduced from $599.00$530. 00Bottle$6360.00 DozenClosure: Diam CorkThe Champagne of Kings, this somewhat mythical Champagne has a cult following amongst pop and rap stars. Despite the hype this brings it never to fails to live up to it’s legendary status with wine critics, who consistently lavish it with high praise.

This has wonderfully pure fruit aromas, such as peaches, Asian pears and golden apples, alongside lemon curd, gingerbread, chalk and jasmine. Rock salt and oyster shells follow on the palate, which is so seamless that you scarcely notice the super-fine bubbles. It’s concentrated yet gentle at the same time, with impressive resolution and integration of all components. Salty and creamy at the very-long finish. Fantastic! 58% pinot noir and 42% chardonnay. Drink or hold.

JamesSuckling.comThe 2016 Cristal is a gracious, elegant Champagne, as it has always been. Floral accents with light tropical overtones distinguish a Cristal that is especially lifted in style. The 2016 is a delicate, restrained Cristal built more on finesse than power. It's a very fine effort in an extremely difficult year. Saline, chalky notes extend the effortless finish. Dosage is 7 grams per liter. Disgorged: July 2024. Drink 2025-2046.

Antonio Galloni – VinousThe 2016 Champagne Cristal is chalky and pristine, with a crystalline nature and notes of white peach, fresh citrus blossoms, and bright salinity. Tasted for the first time last year, it captures a precise and focused energy that’s unmatched. It boasts the energy and tension of 2002 and the precision of 2008. The wet-stone minerality of fresh chalk texture is profound, opening with medium body, showing pinpoint mousse, and sustaining a weightless energy through the long finish. This is not an obvious wine on opening, but it is by far one of my favorite wines of the year. It is going to require some patience, but it is worth stashing away and should have fantastic longevity. Drink 2027-2050.

Audrey Frick – JebDunnuck.comThe finest rendition since 2013, the 2016 Cristal has turned out beautifully. A vintage that Lecaillon describes as “difficult in the vineyards but beautiful in the cellar,” it had suffered slightly in reputation due to the gloomy mood during the challenging growing season, but the results are indeed impressive. The fifth edition produced entirely from organically farmed and certified fruit, and heavily based on Pinot Noir, the 2016 represents the contemporary quality of Cristal, combining the concentration of 2002 with the precision and cut of 2013. Disgorged in July 2024 with a dosage of seven grams per liter, it opens in the glass to reveal a bouquet of lemon zest, white flowers and peeled almond, framed by youthful reduction. On the palate, it is bright and electric, with a pure core of fruit, pinpoint mousse and a textural attack, concluding with a long, saline finish. Drink it alongside the 2015, and it will illuminate its clarity and integration. Drink 2027-2056

Kristaps Karklins – Robert Parker’s The Wine AdvocateThis leads with pronounced minerality on the nose, but then a bright burst of tangerine, blood orange and Meyer lemon flavors on the palate hold sway, joined by rich hints of crème de cassis, toast point, pastry cream and crystallized honey. Showing beautiful integration and a refined, lacy mousse, this is compact and statuesque, with a sense of restraint and the hint of more to come, while at the same time offering lovely expression in the glass today. Fresh and focused on the persistent finish. Pinot Noir and Chardonnay. Drink now through 2044.

Louis Roederer Collection 246 Brut ChampagneChampagne, FRANCEReduced from $99.99$89. 99Bottle$1079.88 DozenABV: 12.5%Closure: Diam CorkCrisp and sculptured with a long, tense and chalky finish.
Collection 246 is the 6th release of this multi-vintage cuvée which replaces the Brut Premier. The Collection 246 shares the same philosophy as the Jacquesson 7 series and Krug’s Edition wines, which are based on a younger vintage blended with some older reserve wines. A blend of 54% Chardonnay, 35% Pinot Noir and 11% Meunier, it is based on the finest wines from the 2021 harvest (55%) and complemented by 35% of the Perpetual Reserve (2012-2020) and 10% of oak-aged reserve wines sourced from young Cristal vines (2012-2017).
Exuberant mousse with a pale straw coloured base that has luminous pale gold edges and a nimble stream of bubbles coursing through it. Gorgeous, lifted aromatics with baked bread, yeast lees and pear scents trailed by some citrus and subtle roasted almond notes. Lighter and more delicate in style than the 245, mouth watering pear, citrus and yeasty baked bread flavours are sculptured by crisp acidity which provides it with a chiselled feel. Subtle cashew and chalky mineral elements lie underneath. The long, dry finish, tense and chalky.

Other Reviews…..
The NV Brut Collection 246 is positively stellar. It’s a terrific example of where Roederer is going with this cuvée stylistically. Brisk saline notes cut through a core of orchard fruit, mint, white pepper and slate. There are no hard angles or awkward contours. The 246 is based on 2021, an extremely tricky vintage for Champagne. Chef de Caves Jean-Baptiste Lécaillon bumped up the percentage of Chardonnay considerably and focused on Pinots from the Montagne de Reims. About 30% of the lots underwent malolactic fermentation to soften the edges. Twenty-four percent of the wines were fermented in oak, the rest in tank. The 246 is a blend of 55% base 2021 vintage wines described above, plus 30% perpetual reserve going back to 2012 (mostly from Cumières, Vertus and Verzy) in tank and 10% young-vine juice from Cristal plots aged in cask. The final blend is 54% Chardonnay (as opposed to the more typical 44%), 35% Pinot Noir and 11% Meunier. Dosage is 7 grams per liter. More importantly, the 246 is impeccably done and absolutely delicious. Drink 2025-2035.

This has pretty and elegant aromas of pears, apple blossoms, grapefruit and chalk. It’s silky, fresh and beautifully balanced on the palate, with very soft bubbles. Based on 2021, with reserve wine from a perpetual reserve created in 2012, plus reserve wines kept in oak from 2012, 2013, 2014, 2015, 2016 and 2017. Drink now.

JamesSuckling.comThe 2016 Champagne Vintage Brut is the new release and is composed of 70% Pinot Noir from Verzy and the rest Chardonnay from Chouilly. A slightly richer golden straw hue, it has a floral bouquet on the nose and is a very pretty vintage of this wine aromatically. It’s sappy with lemon confit and is salty throughout the palate, revealing the weight of the Pinot Noir but retaining wonderful freshness. This lovely wine is going to take some time to open aromatically, but it’s going to be worth the wait. Drink it over the coming 15 years. It’s a going to be a stunning wine for pairings. 7 gram per liter dosage in this wine and in the collection. Drink 2024-2040.

Marie Courtin Presence (V18) Extra Brut ChampagneChampagne, FRANCE$170. 00Bottle$2040.00 DozenABV: 12%Closure: CorkBased in the tiny hamlet of Polisot in the southern Cote des Bars region of Champagne, Dominique Moreau is producing some of the most dynamic and striking wines of the area. Naming her estate after her grandmother, Marie Courtin, Dominique has set out to craft Champagnes which emphasise how her specific terroir can be expressed in a given vintage. Her wines then are single vineyard and single vintage, made with meticulously grown fruit from biodynamically-grown grapes, see no dosage, and sulfur is used sparingly or not at all.
Présence is a unique blend of 70% Chardonnay and 30% Pinot Blanc from the 2018 harvest. Fermentation and ageing occurs in epoxy lined tank, and this wine sees no sulfur before being disgorged in January 2021 with no dosage.
Other Reviews....
The 2018 Extra Brut Présence Sans Soufre is a blend of Pinot Blanc and Chardonnay, made with no added sulfur and bottled with no dosage. It's a risky approach that Dominique Moreau has really dialed in over the last few years. Bright acids and sweet, floral aromatics cut through a core of citrus and orchard fruit. There are none of the hard edges or angular contours in the 2018. It's a wine that hits so many high notes, starting with its sheer deliciousness. No dosage. Disgorged: July, 2021. Drink 2022 - 2030.

French Champagne is not an everyday luxury for many. Thankfully, over the past few decades the production of Sparkling Wine in Australia has made a quantum leap, and to be fair, much of the increased quality is because of the presence of French know-how. The most prestigious and expensive technique for Sparkling wine production has become known as 'Methode Champenoise' (fermentation in the bottle). As we have all learnt to our joy, sparkling wines produced by Methode Champenoise, as opposed to other techniques, invariably result in a superior drink. But it is a very difficult wine to make - costly, time consuming, even risky.
The two key grape varieties employed are Chardonnay and Pinot Noir, though warmer regions may favour others. Chardonnay gives life, acid, freshness and aging potential to methode champenoise, though care must be taken to avoid excess maturity, particularly in warmer climates, which can produce a dominant, aggressively varietal character. Warm climate Chardonnay cuvees may suffer from a narrow flavour profile, high "melony" aroma notes and lack of freshness, liveliness and length. Additionally, rich fertile soils can cause this variety to produce foliage and grassy aromas. When combined with Pinot Meunier, Chardonnay has a greater capacity to age harmoniously and for a longer time. Pinot Noir adds depth, complexity, backbone, strength, and fullness (what the French call "carpentry") to methode champenoise wines but is seldom used by itself, even in Blanc de Noirs.
