    Aged for 3 years on lees. Subsiding into a pale straw coloured base that has pale gold tinged edges is a buoyant mousse. Flowing through its core is a fine persistent bead. Nosing offers up aromas of pear, baked bread and yeast lees which interact with some citrus and toast notes. Crisp acidity sculpts flavours of citrus and pear with some baked bread, roasted almond and yeast less characters the undercard. Dry and slightly chalky it has a vibrant mineral laced finish.

    The 60/40% chardonnay pinot noir blend is sourced from Pipers River, Tamar Valley and Coal River. It has very good mousse, having spent a minimum of 18 months on yeast lees. It’s mouth-filling, with creamy cashew notes balanced by citrus zest and a dosage of 8.6g/l. Serious non vintage; great value.

    A well frothed mousse subsides to reveal a pale salmon pink coloured base that’s delicately threaded by a fine, persistent bead. Attractive strawberry and raspberry scents emanate from the glass with some musk, subtle yeast lees and chalk notes also evident. Savoury raspberry, strawberry and yeast lees flavours flow across the palate with some peach, light toast and chalky mineral elements lying underneath. Pale salmon in the glass with an energetic bead and mousse, aromas of redcurrants, strawberry and raspberry with hints of berry cream, brioche, rose petals, white flowers and stone. There is a creamy flow on the palate, gentle, pure red fruits and some light autolysis notes as the wine slowly fades away showing a slight tweak of texture and a fine, racy line.

    Pours with a lacy white mousse that slowly fades into a salmon pink coloured base that has a very fine bead flowing through it. Strawberry, peach and raspberry scents blossom out of the glass trailed by some yeast lees and faint baked bread notes. Raspberry and strawberry fruits dominate the stimulating palate with some blood orange and yeasty baked bread elements in the background. Frisky acidity with a gentle tang to the dry finish.

    Pinot noir from the Pipers Brook vineyard in northern Tasmania. The palest of salmon flushes in the glass with a fine, lovely bead. Pure redcurrant and red cherry notes with hints of raspberry pastry, crushed stone and light red blossom hints.     Krug’s NV Rosé 29ème Édition blends 29 wines from five harvests dating back to 2010, and like the Grande Cuvée, each component is selected by Krug’s tasting committee through blind tastings. Anchored by the 2017 vintage, which comprises 67% of the assemblage, it gains its color, texture and character from the addition of 11% still red wine from Aÿ-Champagne and Mutigny, sourced from the 2016 and 2017 vintages. The wine opens with aromas evocative of grapefruit zest, redcurrant and apple pie, intricately mingled with a subtle trace of Sichuan pepper and a whisper of rosewood oil. On the palate, it presents as medium- to full-bodied, vinous and textural—albeit slightly less chiseled than its white counterpart. A deep core of fruit, tangy acidity and a long, perfumed finish with a delicate phenolic grip complete this new release. Drink 2025-2035.

    The NV Champagne 29th Edition Rose is a bright salmon orange color. It is expressive and offers a decadent and opulent nose, with notes of toasted brioche, fresh nectarine, white strawberries, cardamom, and saline. The previous three editions of the Rose had a darker red pigment, but this returns to the paler style that preceded them. In 2017, they used two years of reserve, as the year was particularly challenging for red wine. It fills the palate with a rounded feel, refreshing acidity, a pillowing mousse, and a clean, chalky texture. It will be released this fall. Drink 2025-2050.

    Krug's 29ème Édition Rosé is expressive, open and spicy on release, and features 67% of the challenging 2017 base year (although some of the red wines hail from the 2016 vintage). Krug relishes the challenge of difficult vintages, however, turning to its reserve library to help bring about a rosé of immediate depth and vinosity. Red plum, dried red berries and roasted spices make a fleshy, open entry, before a tangy, elongating finish is detailed with light herbal and peppery tones. It is relatively forward already, yet seems poised to develop more spicy and roasted savour in the medium term. Drink 2025 - 2030.

Appearing only when conditions allow, and never at the sacrifice of their number one wine Grande Cuvée, Vintage Krug is cherished and chased by collectors the world over. Knowing that Champagne displays a range of experiences as bottles evolve over time, Krug also holds back a small amount of these vintage wines to be released as they reach a new peak of expression, naming them Krug Collection. These impossibly rare releases of Krug Collection are kept in ideal conditions in the House’s cellars, and after regular tasting and appraisal are finally disgorged to reveal their new personality.

    Krug Collection 1988 is part of Krug’s trilogy of three exceptional years (1988, 1989, 1990) with completely different conditions that resulted in Champagnes that are unique. Comprised of 50% Pinot Noir, 32% Chardonnay, 18% Pinot Meunier, Krug Collection 1988 was kept on lees for 29 years before finally receiving its cork in autumn 2017. 1988 is one of the most feted vintages in Champagne, and Krug decided to release the 1988 Collection after both 1989 and 1990 editions.

    The 1988 Krug Collection, a 2017 disgorgement, offers an enticing bouquet of grilled walnut, baked bread and a touch of freshly baked gingerbread on the nose, displaying exquisite delineation and focus. A tang of bitterness on the entry refreshes the senses. This champagne is impressive in terms of depth and salinity. Vibrant and bright, it conveys a sense of completeness, so that you can’t help coming back for just one more sip. At its peak? Probably. Drink 2022 - 2035.

    When Krug 1988 was first released, a few bottles remained stored in the Krug cellars to see how they aged. The result today is a bouquet of incredible complexity, a veritable spice box full of seductive scents including sandalwood, mocha, and leather as well as a waxy note. The palate is perfectly balanced with both ample flesh and breathtaking freshness, and a wide-ranging flavour and textural profile having elements of quince, candied fruit, and spices. A floral freshness takes the upper hand on the long finish of this supremely subtle and light-footed Champagne. Such a beguiling mix of youthful energy with eminent ageworthiness. Readers who can find the 1988 should not hesitate, as it is stellar.

Elevated pear and strawberry aromas are followed by some yeast lees, brioche and citrus notes. Quite full and expansive in the mouth the palate features a complex flavour profile of ripe pear, baked bread, yeast lees, strawberry and refreshing citrus. Dry chalk tinged finish with crisp acidity and a highly flavoursome yet focused aftertaste.

    Sweet perfume with just-ripe apricot, coconut, nougat with Parisian almonds in the mix. Pretty. The palate is zesty in bubbles, creamy yet light on with a sense of elegance and freshness writ large. Poised. Good detail of yeasty complexity on green apple with grapefruit pithy coolness and zing. Delightful and feels fancy. Drink 2023-2030.

The wine is fermented and matured in a combination of large format foudres and oak barrels where it undergoes full malolactic fermentation before bottling with zero dosage.

    Aurélien Laherte’s Rose de Meunier is constructed from fruit grown in Côteaux Sud d'Épernay & Vallée De La Marne. 100% Pinot Meunier, grown ecologically on limestone and chalky soils. The base wine is made up of 60% direct pressed white wine, 30% maceration (destemmed fruit is left in contact with the skins for a short while) and 10% red wine, which is fermented and matured in a combination of large format foudres and oak barrels. 
    An exceptionally fine and very persistent bead weaves its way through a strawberry pink coloured base after a well formed frothy white mousse dissipates. Filling the nostrils are enticing strawberry and raspberry aromatics which are complexed by some baked bread, yeast lees and light toast notes. Delightfully sculptured by refreshing acidity, the palate has delicious raspberry and strawberry fruits racing across it with yeast lees, baked bread and chalky tones lending further interest. Finishes nervy, crisp and long.

    The NV Extra Brut Rosé de Meunier is dazzling. Rich yet focused, with superb depth, Laherte's Extra Brut Rosé is a magical Champagne in every way. Orange peel, sweet red berry fruit, cranberry, mint and chalk are some of the many aromas and flavors that develop as this breathtaking Champagne shows off its pedigree. This release is a blend of 2017 and 2016 composed of 60% Meunier (white), 30% Meunier (macerated) and 10% Meunier (still red wine). In a word: magical. Dosage is 2.5 grams per liter.     Aurélien Laherte’s Ultradition showcases vineyards from 8 villages of the Côteaux Sud d'Épernay & Vallée De La Marne. 60% Pinot Meunier, 30% Chardonnay and 10% Pinot Noir grown ecologically on limestone soils. The base wine is vinified in a combination of large format foudres, tanks and oak barrels, where it partially goes through malolactic fermentation. The assemblage contains 40% of reserve wines that have been aged in barrel. Finally, the wine spends 6 months maturing on fine lees in bottle before disgorgement for release. 
    Showing ample buoyancy over a pale straw coloured base is a lacy white mousse. A delicate yet very persistent bead finely threading its way through the wines core. Captivating aromatics of yeast lees and baked bread are followed by some citrus, oily toast like notes and hints of almond. Vividly sculptured the palate combines tension with intensity and richness delivering citrusy yeast lees and toasty baked bread flavours over a stimulating finish of subtle cashew and a chalky minerality. Concludes long and refined with a chiselled feel.

    100% Chardonnay Champagne from the Laherte family's chalkiest soils in Chavot and Épernay. These vineyards are all biodynamically farmed and are not only rich in chalk and chalky clay (marl) but there is also flint and schist. It has been aged for just over two years in bottle following a first fermentation in barrique, foudre and tronconique cask. No dosage. A creamy white mousse sits gracefully above a pale straw coloured base that’s finely threaded by a very persistent bead. Pronounced pear and citrus aromas stand out from the glass with baked bread and yeast lees characters then taking over. Finishes off with some lightly honeyed toast notes. Sculptured mouthfeel with energetic acidity racing through the elegant yeast lees, toast and citrus flavours. Some light brioche and almond nuances are also evident. Finishes bone dry, tense and crisp with a refined citrus, oily toast, yeast lees and chalk tinged aftertaste.

    The NV Brut Nature Blanc de Blancs marries power with energy to a degree I have not seen before here. In this edition, the Brut Nature is decidedly powerful and broad, with less of the tension seen in some previous releases. It's as if all the Chardonnay flavors have been turned up to the maximum. Orange peel, apricot, chamomile and spice are some of the many notes that fill out the layers. The current release is based on 2017, with reserve wines from 2016 and 2015, all done in neutral oak.     The Larmandier-Bernier wines are marked by a feeling of textural intensity and vinous resonance that is quite distinctive. The wines are fermented in wood, mostly larger format foudre with some smaller barrels, with spontaneous fermentations and generally minimal handling. Dosage is on the low side. In recent years, the style here has shifted towards a greater focus on energy and tension than in the past, likely a reflection of a generational change being led by Pierre and Sophie Larmandier’s sons Arthur and Georges. The wines remain compelling.
    The NV Extra Brut Blanc de Blancs Longitude 1er Cru is a powerful, ample wine. The Longitude builds beautifully in the glass, creamy and textured, with tons of resonance.     Scents of just ripe stone fruit, talc, faint honey and toast, a light caramel note too, all adding up to quite subtle and pretty. Creaminess in texture with very fine bead, vivacious and fresh-tasting with lovely salty-chalky feel very present through the wine and to the powdery, lightly puckering finish. Vinous in a way, gently savoury throughout, exceptionally long and runs with so much energy. Beautiful.

    Larmandier-Bernier’s Latitude is a 100% Côte des Blancs Chardonnay from vineyards on the southern side of Vertus. These are vineyards on roughly the same latitude and the name also hints at the breadth of texture that the wines from these sites (having more clay in the soil) tend to offer up. In the cellar Larmandier uses mostly large format casks (almost all the wood now comes from Stockinger in Austria) and less and less steel tanks. The alcoholic and malolactic fermentations take place without inoculation, and there is no fining or filtration. Bottle maturation takes place in the underground cellars over a period of more than two years, and each bottle is disgorged manually, six months before being released and dosed at low, Extra Brut levels.
    Once dissipated, the creamy white mousse leaves behind a pale straw coloured base that has a glimmer of gold to the edges. Nibble and exceptionally fine bubbles rising to the surface. On the nose, aromas of pear intermingle with citrus, yeast lees, light baked bread and hints of sherbet. Long, dry and virile, the refreshing palate consists of baked pear, citrus and yeast lees characters over subtle oily toast nuances and faint remanets of biscuit and cashew. The finish is very dry with crisp, mouth watering acidity and a long refined aftertaste.

    The Larmandier-Bernier wines are marked by a feeling of textural intensity and vinous resonance that is quite distinctive. The wines are fermented in wood, mostly larger format foudre with some smaller barrels, with spontaneous fermentations and generally minimal handling. Dosage is on the low side. In recent years, the style here has shifted towards a greater focus on energy and tension than in the past, likely a reflection of a generational change being led by Pierre and Sophie Larmandier’s sons Arthur and Georges. The wines remain compelling.
    The NV Extra Brut Blanc de Blancs Latitude 1er Cru is bright and beautifully focused. The Latitude contains 40% perpetual reserve wine dating back to 2004. It is usually a bit more approachable on release, but this year's version clearly needs time to soften. Today, citrus, floral and mineral notes abound on the steely finish. Dosage is 3 grams per liter.

    Saignée literally means ‘to bleed’. In winemaking parlance, it means to draw the free-run juice of a grape, off the grape skins typically prior to, or shortly after, the start of fermentation. In this case, the grapes (100% Pinot Noir) are allowed to macerate for several days before the juice is drawn off and it is this ‘soak’ that gives the colour and much of the body and flavour to the wine. This technique is now extremely rare in Champagne—it is a demanding method of vinification that requires grapes with an excellent degree of maturity. Hence most rosé (in Champagne) is made by the addition of a little red wine. This bottling is drawn entirely from what is thought to be the oldest Pinot Noir vines in Vertus, and one of the very last 100% Pinot vineyards. As with all of Larmandier’s wines it’s naturally fermented. Larmandier raises part of this cuvée in a Nomblot concrete egg and partly in stainless steel (and more recently he has been trialling amphora as well).

    Collection 246 is the 6th release of this multi-vintage cuvée which replaces the Brut Premier. The Collection 246 shares the same philosophy as the Jacquesson 7 series and Krug’s Edition wines, which are based on a younger vintage blended with some older reserve wines. A blend of 54% Chardonnay, 35% Pinot Noir and 11% Meunier, it is based on the finest wines from the 2021 harvest (55%) and complemented by 35% of the Perpetual Reserve (2012-2020) and 10% of oak-aged reserve wines sourced from young Cristal vines (2012-2017). 
    Exuberant mousse with a pale straw coloured base that has luminous pale gold edges and a nimble stream of bubbles coursing through it. Gorgeous, lifted aromatics with baked bread, yeast lees and pear scents trailed by some citrus and subtle roasted almond notes. Lighter and more delicate in style than the 245, mouth watering pear, citrus and yeasty baked bread flavours are sculptured by crisp acidity which provides it with a chiselled feel.     The NV Brut Collection 246 is positively stellar. It’s a terrific example of where Roederer is going with this cuvée stylistically. Brisk saline notes cut through a core of orchard fruit, mint, white pepper and slate. There are no hard angles or awkward contours. The 246 is based on 2021, an extremely tricky vintage for Champagne. Chef de Caves Jean-Baptiste Lécaillon bumped up the percentage of Chardonnay considerably and focused on Pinots from the Montagne de Reims. About 30% of the lots underwent malolactic fermentation to soften the edges. Twenty-four percent of the wines were fermented in oak, the rest in tank. The 246 is a blend of 55% base 2021 vintage wines described above, plus 30% perpetual reserve going back to 2012 (mostly from Cumières, Vertus and Verzy) in tank and 10% young-vine juice from Cristal plots aged in cask. The final blend is 54% Chardonnay (as opposed to the more typical 44%), 35% Pinot Noir and 11% Meunier. Dosage is 7 grams per liter. More importantly, the 246 is impeccably done and absolutely delicious. Drink 2025-2035.

    The 2016 Champagne Vintage Brut is the new release and is composed of 70% Pinot Noir from Verzy and the rest Chardonnay from Chouilly. A slightly richer golden straw hue, it has a floral bouquet on the nose and is a very pretty vintage of this wine aromatically. It’s sappy with lemon confit and is salty throughout the palate, revealing the weight of the Pinot Noir but retaining wonderful freshness. This lovely wine is going to take some time to open aromatically, but it’s going to be worth the wait. Drink it over the coming 15 years. It’s a going to be a stunning wine for pairings. 7 gram per liter dosage in this wine and in the collection. Drink 2024-2040.

    Anyone who has spent time in the Dolomites in Italy will know just how chilly it can get and this delightful sparkler, with its nifty name, evokes just that. From a rarely seen combination of varieties – Chardonnay (60%), Pinot Bianco (30%) and Müller Thurgau (10%) – the vineyards are high altitude, between 400 and 800 metres. Reminiscent of a fine Prosecco in many ways, no doubt as it is also produced by the Charmat method. After destemming, crushing and a soft pressing, fermentation is for ten to eleven days at low temperatures, followed by the best part of half a year maturing on lees. The wine is lemon yellow in colour with notes of peaches and other stonefruits, citrus and crisp apples. Florals and even a hint of the tropicals. A fine minerally background. The exuberant fruit bursts forth, along a soft and supple palate with decent length, through to a lifted finish.

    Grand Vintage 2016 sums up the year's strong suits very neatly – beautiful ripeness without heaviness, compact build and fine ageworthiness. It's a characteristically clean-cut, snappy vintage from Moët, with aromas of fresh baguette, satsuma, sweet red apple and strawberry, all framed with the toasty sourdough aromas typical of the house. There's some concentration and vinosity lurking here, even with the house's delicate style and pinpoint, meringue-soft mousse. This seems destined to be one of the top Moët vintages of late.     Some of the learnings for Mouzon Leroux’s biodynamics come from time spent in Senegal, curiously, looking at the local agriculture, and vegetable gardens, where distinct approaches exist to encourage insect and bird life into farming systems are rife. The vigneron has applied this to his farming in Champagne. Verzy chardonnay.
    Electric wine. Bristling, briny acidity in green apple, clove spice, dried pear, Japanese pickled ginger, preserved lemon and pink grapefruit. Tight lines, a juiciness around that, piercing bubbles and a very long, sweet, slick spice finish married to fino sherry notes. Very precise. Refreshing. Crystalline. Brilliant. Drink 2025-2035+.

    L'incandescent is true to its name, displaying a vibrant hue thanks to a short maceration on skins before pressing. The exact time on skins is dependant on taste rather than colour, and varies between 8-36 hours, with the current disgorgement coming in at 22 hours. This is 100% Pinot Noir from the Grand Cru lieu-dit of Les Cumaines, and was vinified entirely in stainless steel, before spending 30 months on lees and disgorged with just 1.5 g/L dosage.

    Very dark coloured and vinous style. Almost like looking at Etna Rosato! Supple texture, almost silky, bubbles are really fine and gentle, almost missing but for lifting the wine brightly and some saline tang alongside all this. Rich, red fruited, some truffle notes, briar and brambles. What a cool wine! Really interesting and complex, is the message. Drink 2023 - 2030.

    L'ascendant is a cuvée based on a solera founded with the 2014 L’Atavique, drawn and topped with a 50% ratio each year. It is approximately 60% Pinot Noir and 40% Chardonnay, raised in old oak, before four years on lees and disgorged with extra brut dosage of under 3g/L.

    Based in Verzy, a lesser sung parish of Champagne but one where up and coming producers like this can farm their eight hecatres of organic farmed grapes in peace. Low dosage, low sulphur winemaking too. Solera here, but a younger one started in 2014 – this one contains 2017, 2016 and 2014, with 50% taken out each year to make room for current vintage.     Complex Champagne, lots of amontillado, Parisian almonds, green cashew and a huge woosh of sea spray. Yes thanks. So saline and briny to taste! Wow. Unreal. Some creamy cashew around that, licks of dried apple, toast, faint honey. Beautiful wine with such incredible energy and zestiness. Stunning wine. Drink 2023 - 2030.

    Moet and Chandon established Chandon Australia in 1985 with the purchase of land in the Yarra Valley and the creation of a sparkling winemaking facility. Their sparkling wines have been consistently excellent, which has in part been due to their ability to source a wide variety of grapes from cool climate growing regions from around Australia.

    Retasted 30/09/2010:
    Grapes for this sparkling are sourced from a range of premium cool climate vineyards in the South Eastern Australia, including the Yarra Valley, Strathbogie, the King and Buffalo Valleys in Victoria, and Coonawarra in South Australia. A blend of Chardonnay and Pinot Noir the wine pours with a good white creamy mousse that’s relatively short lived. Pale straw coloured base wine with very fine bead showing excellent persistence. The nose displays aromas of brioche, yeast lees and biscuit with a lemon sherbet like end note. Clean delicate palate flavours of biscuit, yeast lees and lemon with a light toast overlay. Crisp clean finish. Aftertaste of biscuit and lees with some light toast also emerging.

    Tasting Note: A fuller style N/V Sparkling. Bright straw colour with pale straw hue. Short lived mousse. The bead is quite fine but not profuse. The base wine displays bottle age and multi-cuvee blending. Yeast lees top note, followed by cashew and a hint of hazelnut. Full bodied palate. Creamy texture. Clean finish.

    First Tasted: 9/11/2000. This wine displays a wonderful spectrum of apricot pink hues. Excellent mousse, followed by very fine persistent bead. The nose displays complexity with notes of winter strawberries layered over yeast lees. Creamy texture, with again subtle flavours of strawberries and yeast lees. Clean finish, followed by a very long aftertaste of lees, biscuit and strawberries.

    This has been something that Ray Nadeson, vigneron at Lethbridge, Geelong, has been working on quietly for 13-plus-years. Under some pressure, people asking for the stuff that is, Ray decided to take the wine from a home consumption drink and onto the market. October 2019 is the disgorgement (the first commercial one). Around 75% (chardonnay) is 2017 material that has been in barrel and 25% comes from material blended from a solera (which has chardonnay with pinot noir and pinot meunier dating back to 2003). Fruit comes from Drumborg, Henty. An impressive suite of new sparkling Australian wine.
    Really full, textural and rich sparkling with honey, toast, nutty and very strong saline characters rolling around. Vinous in a way, but full-bodied, a touch of sherbetty lift and light white vinegar tang, a funky kind of fizz with lots of personality, vivacious feel and gentle bubbles. Lots of complexity and interest here. Drink 2020 - 2024.

Light and airy in it’s feel with a steady stream of tiny bubbles flowing through it, citrus, green apple and pear fruits are underscored by crisp acidity. Some subtle sherbet elements also make an appearance through the dry, racy finish.

French Champagne is not an everyday luxury for many. Thankfully, over the past few decades the production of Sparkling Wine in Australia has made a quantum leap, and to be fair, much of the increased quality is because of the presence of French know-how. The most prestigious and expensive technique for Sparkling wine production has become known as 'Methode Champenoise' (fermentation in the bottle). As we have all learnt to our joy, sparkling wines produced by Methode Champenoise, as opposed to other techniques, invariably result in a superior drink. But it is a very difficult wine to make - costly, time consuming, even risky.

The two key grape varieties employed are Chardonnay and Pinot Noir, though warmer regions may favour others. Chardonnay gives life, acid, freshness and aging potential to methode champenoise, though care must be taken to avoid excess maturity, particularly in warmer climates, which can produce a dominant, aggressively varietal character. Warm climate Chardonnay cuvees may suffer from a narrow flavour profile, high "melony" aroma notes and lack of freshness, liveliness and length. Additionally, rich fertile soils can cause this variety to produce foliage and grassy aromas. When combined with Pinot Meunier, Chardonnay has a greater capacity to age harmoniously and for a longer time. Pinot Noir adds depth, complexity, backbone, strength, and fullness (what the French call "carpentry") to methode champenoise wines but is seldom used by itself, even in Blanc de Noirs.
